Bacon Apple Pie

by Kalistae Hine

1 sheet Refrigerated or pre-made pie crust prepped in pan 9 slices Thick applewood-smoked bacon 3 cups Granny Smith apples 1/4 cup Sugar 1/4 tsp Cinnamon 3 tbsp Maple syrup 1 tbsp Unsalted butter, cut into small pieces

-Preheat oven to 400° F -Weave bacon into lattice shape -Bake for about 25-30 minutes, until bacon is brown and slightly crisp. (Check lattice after about 15 minutes. If bacon is cooking too fast on one side, rotate pan or flip over, as needed.) -Dice remaining slices of bacon and fry in a large pan. Cook until bacon is very crisp, rest on paper towels until cool. Reserve one tablespoon of bacon grease in pan. -Once the bacon bits are cool, place two tablespoons in a grinder (use a coffee grinder designated for spices) and run until the bacon is ground to a fine dust. -Reserve remaining bacon. -Preheat the oven to 350°F/175°C -Dice apples and return to the same pan the bacon was cooked in, Saute over medium heat until softened, about 6-8 minutes, then add sugar and cinnamon. Cook for about 3-5 more minutes until mixture becomes syrupy. Remove from heat. -Brush the inside of the piecrust lightly with about one tablespoon maple syrup. Fill the crust with the apple mixture and top with butter. Bake for 15 minutes. - While the pie is baking, coat both sides of the bacon lattice liberally with remaining maple syrup. After 15 minutes, remove the pie, place the lattice over the top and return to the oven. Bake for 15 more minutes. -Allow pie to cool and bacon to recrisp before cutting and serving

Spiced Plum Pie

by Terah Williams

1 sheet Refrigerated or pre-made pie crust prepped in pan 10-12 Large plums, pitted and sliced into eighths 1/4 cup Butter (I use salted) 1/2 cup Granulated or caster sugar 1/2 cup Dark brown sugar 1 tsp Pure vanilla extract 1 tsp Ground cinnamon 1/4 tsp Each of ground ginger, nutmeg, cardamom and salt 1/8 tsp Ground clove 1-3 tbsp Corn starch Zest of 2 Large oranges & a light squeeze of the juice

-Preheat the oven to 350°F/175°C -In a deep sauté pan or cast iron skillet, melt butter. -While butter is melting mix together plums, sugars, vanilla, and orange zest and juice in a l arge bowl. -Combine all spices in a small cup – mix them well. -Once the butter is melted, pour the plum mixture into the pan, scraping down the sides of the bowl. Heat should be medium to medium/high. Cook plums for about two minutes while mixing and fully incorporating the sugars. -Add the spice mixture. Allow filling to cook another few minutes, and then add cornstarch and mix thoroughly. Allow the mixture to come to a boil, then reduce heat and simmer for another 5 minutes. Remove from heat and let the mixture cool and thicken. -Pour Pie Filling into dish and assemble the lattice on top. Bake for 50-60 minutes or until the crust is crisp and done, at 45 minutes brush with an egg wash for a golden brown top. (Note: for additional decorations I used fondant cutters to cut dough and egg ash to adhere to the pie. I also used a fork for the crust edge). For less mess when serving allow to pie to cool completely.

DON'T JUST STUFF YOUR STOMACH FILL YOUR BRAIN WITH A GOOD BOOK 'When Breath Becomes Air,' By Paul Kalanithi If I could sum this book up in five words it would be; ‘See what courage sounds like.’ At 36 and nearing the end of residency as a neurosurgeon at Stanford University Kalanithi was diagnosed with stage 4 metastatic lung cancer. As a young boy, Kalanithi devoured books and had ambitions of becoming a writer, but growing up in a family of physicians, he knew his destiny lie in following along with family tradition. He discovered about the complexity of the brain and wanted to learn more. While practicing as a neurosurgeon Kalanithi witnessed as many deaths under his care, as he did survival, and learned the best way to deal with the traumas and tragedies’ were to distance himself, although in his thoughts he came to wonder where biology, morality, and philosophy intersected. Kalanithi worked 16 hour days, even toward the end, in crippling back pain. He would take a nap in his car before driving a mere 15 minutes home. He would survive on junk food and sodas as he rarely had the time to eat properly without being called for another brain injury emergency. As time went on and Kalanithi’s cancer spread, the pain worsened suddenly he found himself on the flip side. The scans were his and he was dressed in a patient’s gown instead of scrubs. He was in the same room as he had diagnosed cancer, congratulated patients on their own recovery and pronouncing the dead. Once again his thoughts were foremost in his mind now – What makes life worth living amidst the prognosis of death? Kalanithi died March 9, 2015. There was no treatment that could save him. He died with his wife (Lucy), young baby, (Cady) and family surrounding him. His book was posthumously published on January 2016. If you are interested in Paul Kalanithi’s story it is available in both book and audiobook in the RAF Lakenheath Library. -Sandra Fletcher
