St. Louis Home and School hosted their biggest fundraiser on March 2, 2019 featuring the theme A Night in New Orleans. alendars synced and March 5 was decided as the date for the 4Memphis fashion shoot and interview with Marcella Simien (pages 46-52). Little did we all realize it was Fat Tuesday, a bit of serendipity as we feature this Creole beauty. She hails from Lafayette, Louisiana - but since 2009, she has become a full-fledged Memphian and music powerhouse. Marcella moved to the Bluff City after high school to attend the Memphis College of Art. “I applied to SCAD in Savannah, a couple schools in New Orleans, and MCA. I got into them all, but I just really liked the vibe of Memphis. When I visited the college, I just knew this was where I needed to be. Driving through Overton Park, I felt the energy of the city and it just felt right.”

Marcella has been immersed in music her entire life. Her father is two-time Grammy award winning Zydeco artist Terrance Simien, and her mother, Cynthia, is his agent and manager. Marcella would often spend weekends in rural Louisiana with her paternal grandmother and bounty of cousins. “I feel really lucky to have had such a culturally diverse upbringing. Being a Louisiana Creole, we’re a mix of African, Spanish, French, and Native American. You can see that in my cousins: we are shades of every color and a really beautiful group of people.” As the only child of parents in the music business, she often joined them as they traveled and performed. In addition to her own musical DNA, she was surrounded by renowned music legends such as Taj Mahal, David Hidalgo of Los Lobos, and Dr. John. “It really helped to broaden my perspective at a young age,” she recalls. “It was a very enriching way to grow up. It was a family affair - the music was our life.” While Marcella was a student at MCA, she began playing solo gigs, singing and playing her accordion. She began meeting fellow musicians, collaborating, and performing everything from folk to hip hop. “I’ve always had an open mind with creating,” she said, “and I was welcomed into the music community.” Despite her dad playing the accordion, it wasn’t until she moved to Memphis that she began to play “his instrument.” But when she moved to Memphis,

leaving behind her parents and Louisiana, she wanted to bring along a little piece of home - the accordion. “Sitting on the back porch with my dad at my student housing apartment on Tucker, he taught me how to play two Zydeco songs. Then that’s all I really wanted to play! It wasn’t until I moved here that I wanted to; it was like bringing a token of home and my heritage. It’s really beautiful because now that’s what I’m known for here.” While attending school and playing gigs, she was also working as a server for Karen Carrier at her various restaurants, The Beauty Shop, Bar DKDC, Do Sushi, and Mollie Fontaine Lounge. “Karen is just amazing! I call her my Memphis mom,” she laughed. A couple of years post graduation in 2015, Marcella was able to leave the restaurant business and make music for a living. “I’m proud to say that I make the majority of my income here, playing in town,” she shared. “I feel really, really lucky to be able to do that.” Marcella’s voice is a rich blend of Memphis soul and her Creole roots. In her official bio, Memphis producer Boo Mitchell said she is “one of the most soulful artists I’ve heard since the glory days of Memphis soul music. Her sound and stage presence are constant reminders that soul music is still alive and well.” Not only does she have her voice as a powerful instrument, but she is also a very talented musician who plays accordion, guitar, autoharp, bass, and piano. She first learned to play piano when she attended a Montessori school, with art and music both offered daily as part of the regular curriculum. She also began writing poems and songs at a very young age. “That was my way of understanding the world; it helped me to understand myself and grow. The writing is a primary part of my experience as an artist and musician.” Marcella has coined the term “Swamp Soul Memphis,” and it perfectly sums up this Creole girl, brimming with Memphis soul. M
emphis Fashion Week’s (MFW) Emerging Memphis Designer Project (EMDP) was built out of a need in the Memphis community for local emerging designers to present their pieces to a wider audience. Memphis Fashion Week works with selected designers through a seven month process to fine tune designs, pick fabrics, fit models and complete designs for the runway. At the end of the process MFW hopes to see their designers grow their skills, promote their businesses and enhance the design industry in Memphis.

MFW issued a call for sketches of Spring/Summer 2019 designs in the fall. Completed designs are judged based on construction, creativitiy and relevancy. Top designs are invited to present on the runway at the Saddle Creek Emerging Designer Shows at Memphis College of Art, Saturday, April 13th. Memphis Fashion Week is proud to be part of Memphis’ bicentennial moment, ushering in a New Century of Fashion and celebrating creatives across the city and county. Designs walking the runway will be eligible for The New Century of Fashion prize and a Memphis Fashion Design Network membership. Winners are decided by audience choice ballots at the runway show. Join us to see the most fashion forward desginers in Memphis as they present their 2019 Spring/ Summer collections on the runway.

April is a treasure horde of arts experiences. There is almost too much to do, and I’m afraid we’re going to have you start using a tiny font if this keeps up! No, we are simply blessed as a city and region with performers, creators, promoters, and supporters that allow this wondrous outpouring of opportunity. Shall we say something for everybody? Jazz shows, art shows, fashion runway shows, historic home tours, lectures, Shakespeare to Sedaris. Rising to that top of this exciting list is the premiere of a new, written-in-Memphis opera called The Falling and the

Rising (see what I did there). Poor word play aside, this is a poignant and important work created from compiled interviews with returning soldiers at Walter Reed National Medical Center, Arlington Cemetery, and Fort Meade. The Falling and the Rising is an inspirational story of service, sacrifice, and connection inside uncertainty - and it is just one of many experiences offered by our Midtown Opera Festival. ½ cup salted butter, room temperature 3 tablespoons vegetable oil 2 large eggs 1 cup granulated sugar 1 teaspoon lemon zest 2 tablespoons rosewater 1 teaspoon lemon juice 1 ½ cups all-purpose flour ½ cup almond flour 2 teaspoons cardamom Place egg whites in a mixing bowl of an electric mixer with the whip attachment. Combine sugar and water in a medium pot and stir over medium heat until 240 degrees. Whip egg whites to a soft peak and add in the sugar mixture. Add in all remaining ingredients to mixture after sugar is incorporated. Add in the butter last, at ½ tablespoon increments. Use immediately or store refrigerated in an airtight container.

Put whipped cream in bowl; fold in lemon juice slowly.

Put in bowl, stir, and let set overnight.
W H I T E C H O C O L AT E B I S C U I T S : 5 pounds biscuit mix 7 cups whole milk 2 pounds frozen, shaved butter 4 cups sugar 4 cups white chocolate chips 1/8 cup vanilla extract
In a mixing bowl, mix all ingredients together; roll out and cut into biscuits. Bake biscuits at 350 degrees for 15-20 minutes until soft and golden brown. Assemble individual shortcakes with 1 white chocolate biscuit, 4 ounces strawberry mixture, 2 ounces lemon whipped cream, and garnish with fresh mint.
OWEN BRENNAN'S BREAD PUDDING
Take 3 loaves of stale bread and cube into ½ inch pieces. In a pot, mix 1 cup of buttermilk, 1 cup of heavy cream, ½ cup of sugar and seasonal spices; heat until simmering. In a mixing bowl, put 2 whole eggs and 2 egg yolks. Temper the eggs while adding the cream mixture. Once the liquids are mixed, pour over the cubed bread. Line a baking pan with parchment paper and spray with a nonstick cooking spray. Bake for 20 minutes and cool down before cutting.
RUM SAUCE:
2 tablespoons butter 1 tablespoon cornstarch 1/2 cup sugar 1 cup milk 3 tablespoons dark rum Melt butter in a small saucepan over medium heat. Mix together the sugar and cornstarch, and stir into the butter. Pour in milk, and cook stirring frequently until the mixture begins to boil. Continue cooking until thick, stirring constantly. Remove from heat and stir in rum. Serve warm.

2 cups fresh blueberries, divided 1 ½ tablespoons lemon juice
C R U S T:
6 ounces cinnamon graham crackers 1 tablespoon sugar 3 tablespoons unsalted butter, melted and cooled
FILLING:
8 ounces white chocolate, finely chopped 2 8 ounces pkgs cream cheese, softened 2 tablespoons sugar Zest from 1 lemon, divided 2 large eggs, room temperature ½ tablespoon vanilla 1 ½ teaspoons fresh lemon juice

Place a fine-mesh strainer over a small bowl and push the puree though, leaving any skin/large chunks behind. Allow mixture to cool completely before using. For the crust, finely grind the graham crackers and sugar together in a food processor to fine crumbs. Add butter and process just until moist clumps form – you may not need all of the butter; the mixture should be like wet sand. Line 2 muffin tins with liners and gently press a spoonful of the crumb mixture in the bottom of each cup. Set aside. Over a double boiler, melt white chocolate. Cool to lukewarm, stirring occasionally.
Preheat oven to 300 degrees.

Set aside ½ cup of the berries. In a small saucepan combine blueberries and lemon juice; bring to a simmer over medium heat and cook, stirring constantly and gently smashing the blueberries smooth, until thickened into a deep, dark blueberry reduction, about 10 minutes. Remove from heat.

Using an electric mixer, beat the cream cheese, sugar and half of the lemon zest together until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until just combined after each addition. Beat in vanilla and lemon juice. Carefully spoon the filling into the prepared cups. Spoon ½ teaspoon of the cooled berry reduction into the centers of the cakes, swirling with a knife but taking care to not drag along the bottom. Bake until the cakes are slightly puffed, about 15-20 minutes. Remove the pan from the oven and cool on a rack for 3 minutes, then carefully remove the cups and transfer to a cookie sheet. Refrigerate to cool completely before serving. Mix the reserved fresh berries in the berry reduction and spoon over the cooled cakes; garnish with the remaining lemon zest.

½ pound honey ¼ ounce vanilla 2 ounces bourbon 1 ¼ cup powdered sugar 4 eggs, whole 3 egg yolks 2 cup chopped pecans
Mix together honey, vanilla, bourbon, powdered sugar, and eggs. Place pecans in bottom of pie crust; pour filling over pecans. Bake at 250 degrees for 2-1/2 to 3 hours.
JUDYPOUNDCAKES One of Judy Douglass’ first memories is getting shooed out of the kitchen by her mother. While most children might have been deterred, this only piqued her curiosity. “My mom was known around town for her amazing cooking, “ she says. “Everyone knew her.” Born and raised in Jackson, Mississippi, Judy says she grew up wanting to do something, anything, but she couldn’t quite find her calling. A smart cookie, for sure, she graduated from Millsaps College, but couldn’t find where her passion lay. “I didn’t know what my talent was,” she said. “I couldn’t sing, draw or dance.” Crestfallen, Judy turned to her mom, who espoused this advice: Just be good to your friends and make good food for them. “This wisdom drove me,” she says. “It gave me a true purpose as it sparked my love for something.” With this in mind, Judy learned how to make pocket yeast rolls with her mom in her early 20s. This time around, Judy was impressing her mother by skipping steps and making the process easier. Her first business foray was selling yeast rolls. But at $3 a bag, the work was laborious and she wasn’t making any profit. While she enjoyed baking, she needed to find a product she could sell that was cost-effective.
"Just be good to your friends and make good food for them." Judy thought back to her mom’s specialty: Cinnamon Pecan pound cake. “I used to bring it as a teenager to my friends’ houses and they would just flip out over it,” she says. Judy tinkered with her mom’s recipe and expanded on the flavors – her newest, Just Coconut, launched a few weeks ago. She also carries mini cakes. It was a cold morning on Friday, March 1, when St. Agnes students got dressed and packed their lunches to go to school. As they began to gather in the hallways, chatter started about the day ahead of them. However, this wasn’t the typical talk about weekend plans or test grades, but rather about the many nonprofit organizations around Memphis that they were going to serve. Every year the St. Agnes Academy upper school holds their Day of Caring, in which the entire high school student body and teachers work with over twenty different organizations in the Memphis area to serve the community. This year, service sites included places such as Hope House, Page Robbins Adult Day Center, War Horses for Heroes, Madonna Learning Center, and the Saint Vincent de Paul Soup Kitchen. By working with the many unique nonprofits, the students were able to gain meaningful service experiences beyond bringing canned goods to a food drive in order to truly connect with the young, elderly, disabled, and impoverished across the city.

As a junior, this was my third Day of Caring and I went to a preschool with a small group of girls and our teacher group leader. As soon as we walked through the door we were greeted by the welcoming, smiling faces of kindergarteners and teachers alike who were eager to get to know us throughout the day as we helped with tasks around the school and played in the classroom. Immediately, a little boy with round glasses asked to be my buddy for the day. We became fast friends as I read him stories, helped him with crafts, and played “monsters” with him on the playground. When the day was over and it was time to leave, I was sad to say goodbye, but I was happy that I had made him smile and been able to connect with someone who would otherwise be a stranger to me. Day of Caring has been a St. Agnes tradition for over ten years and continues as an annual event that is looked forward to by the students to not only share kindness to our community, but also receive the joy of serving others.

Memphis School Mascots
Since the 19th century, it has been a tradition for schools to be represented by mascots. We usually refer to these mascots in relation to competitions and athletic events; however, if we were to be asked what our school mascots meant, would we really know? Each school’s mascots contains meaning that often displays the role the students were intended to play in representing the school, and the history behind each mascot brings to life the goals from its founders. Here we have investigated into the history of our high school mascots in Memphis.

BRIARCREST
ST. AGNES
On January 3, 1973, the Education Survey Committee recommended the establishment of a private, church-sponsored school. The property that was purchased was previously named Briarpatch Estate by its owners. Mrs. Maxine Ford, a member of the church, suggested the school name as Briarcrest by using the word “briar” from the original name and “crest” because the founders fully expected to have the top school in the area. The school colors were selected by Pastor Allen because his alma mater, Central High School, had the colors green and gold. The mascot, a St. Bernard dog, was adopted in accordance with the student body who was known as the Saints to reference to the school’s Christian beliefs.
Originally, St. Agnes’s mascot was the school colors, Blue and White. Then, in the early 1980s a former alum and present staff member was looking at the St. Agnes logo and inside the logo were stars. Upon this recognition, Casey Tidwell encouraged the administration to consider the idea of adding the mascot for the St. Agnes girls to be the stars, and the St. Dominic boys to be the suns. The board voted and approved of the St. Agnes Stars.
COLLIERVILLE Until 1905, when Shelby County schools merged Collierville Male Academy with Bellevue Female College to become Collierville High School, the students were dubbed the ‘Maroons’ in relation to their school colors. The school colors maroon and white were selected by the principle in reference to his favored college, Mississippi State. However, upon the consolidation of both campuses the school adopted the Tiger as the official school mascot. Yet this would all change in 1934 when the girls’ basketball coach Maurice Moore decided to make them the “Dragons” following a successful win at the State Championships. Till this day the beloved Collierville Dragon also known as ‘Blister the Dragon’ continues to represent the ambitious and driven faculty and student body of Collierville High School.
Mus Owl Mascot
ST. GEORGES
MUS In 1893, the owl was selected as the mascot for Memphis University School. In keeping with the school’s academic focus, the owl was chosen because of its association with wisdom and intelligence. Sometime after 1955, the MUS mascot was lovingly dubbed Lloyd Owl. However, Lloyd is not the only mascot that represents the school. In 1970, a group of students concluded that an owl lacked the intimidation factor and commissioned the painting of a buzzard on the gym wall. Subsequently, the buzzard was adopted by the basketball team as well as the lacrosse team and many a rec. basketball squad.
In the beginning, St. George’s mascot had been the dragons since its foundation in 1959; however in 2002 when they created the Collierville campus, they countered a problem: the local public school in Collierville’s mascot was also the dragons. As a result, they were forced to choose a new mascot, so St. George’s became the Gryphons, a legendary creature that represents both the strength of a lion and the intelligence of an eagle. This mascot was chosen to portray the ideals St. George’s wishes to instill in its students.

LOCAL ARTIST MOLLY O’CONNOR By: Laila Travilion

Molly O’Connor is a young self- taught artist and a student at Collierville High School. She was initially introduced to art in elementary school by her father and became more interested throughout middle school. Currently, she does original work and commissions ranging from Abstract to Impressionist styles. Along with these styles, she specializes in a variety of mediums including acrylics, oils, watercolors, and pencils. She has become more intrigued by the abilities of famous artists, which led her to study and imitate their techniques to further develop as an artist. “I love the way Van Gogh and Monet can abstract images while still retaining the essence of their subject,” said O’Connor. “Their works are light and uplifting while still maintaining a high degree of complexity.” O’Connor’s artwork has been displayed across the midsouth including the Morton Museum and the Collierville Town Hall. She has also had a piece in the Scholastic Art Awards competition at the Brooks Art Museum and was recognized as ‘Artist of the Month’ at the Collierville Burch Library. “I want to pursue art for fun without any particular aim in mind,” said Molly. “I plan to continue painting and experimenting, and I can’t wait to see where it takes me.” 72
