The “Party of the Century” was held on the 100 year anniversary of the founding of Methodist Le Bonheur Healthcare, and celebrated this wonderful institution. The festive evening featured special guest Magic Johnson, live music, a silent disco, gourmet food, cocktails and special indoor and outdoor activities overlooking beautiful Hyde Lake at Shelby Farms Park. Proceeds from the party benefited the Methodist Le Bonheur Healthcare mission and its next 100 years of care for Memphis and the Mid-South.

Author Spotlight: Rush by Lisa Patton Fannie Flagg rarely boasts about other humorous storytellers but she gives high praise to one of Memphis’s own. “There’s not a better Southern author writing today than Lisa Patton. Her delightful new book is a modern look at what is perhaps the most sacred of all Southern rituals: sorority rush at the University of Mississippi, ‘Ole Miss’. And happily for us, Miss Patton captures to absolute perfection the hilarity, hysteria and heartbreak of it all. Funny, touching, and full of twists and turns. I couldn’t have loved it more.” Humor abounds in Rush, as Lisa uses her trademark wit to poke fun at elaborate dorm room décor, rush wardrobes, helicopter moms, and elegant Grove parties. Though a graduate of the University of Alabama, Lisa explained why she chose Ole Miss for the setting. “The simple answer is that everyone loves Ole Miss, and Oxford provided a more charming and colorful backdrop for the story. Besides, the Tide wins too much,” she added with a wink and a smile. “But in truth Rush could have been told on any SEC campus.” Rush, Lisa’s fourth novel, was inspired after she returned to Tuscaloosa for the dedication of her sorority’s new, 40,000 square-foot house, and a chance encounter with one of the housekeepers. Their long conversation resulted in Lisa’s discovery that most sorority and fraternity houses in the South do not offer staff benefits. “When I attended college back in the late 70s, my sorority sisters and I dearly loved the ladies on our House staff,” Lisa recalled. “It never once crossed my mind, neither as a college student nor as an alum, to ask if they had healthcare or retirement benefits. And I was betting it had never crossed the minds of my other sorority friends.” Lisa made phone calls and did quite a bit of research. She learned that the lack of benefits was not just the norm at her sorority house, but at the majority of sorority and fraternity houses on campus. “A very few houses in the SEC, I learned, do provide health insurance only, but, like many jobs, the staff is required to pay a percentage of the premium, which often precludes them from participating.” That’s when the idea for Rush began to form. But it is not just any contemporary southern fiction. It is a call for change. “Sororities are known for excellence in leadership and philanthropy,” Lisa said. “Today’s world inspires us to a take sharp look at old traditions and ask ourselves how we, as sorority members and alumnae, can take a stand and lead our chapters into fair and beneficial opportunities. There is an old saying: ‘The shortest distance between the human heart and truth is a story.’ My hope was to create a fictional world where my readers fell in love with the characters, and once they turned the final page would be moved to act.” Sorority member or not, Rush is a must-read, and hopefully the beginning of a change for better. Lisa Patton speaks about Rush at Novel Bookstore on August 21st at 6PM and at Books A Million in Jackson on August 22nd at 6PM.

The lovely dinner celebrated Paul, and many of the speakers spoke about Paul's community service and accomplishments as lawyer, historian, gentleman, farmer and family man. HIP HIP HOORAY! The 87th Anniversary year of Carnival Memphis was another great success,raising money for the community and having fun doing so. Led by the organization’s first female President, Ginger Collier. King Jim Taylor and Queen Ellen Horn presided over a Royal Court consisting of thirty Princesses, including Ladies of the Realm from as far away as Chicago, IL. The Carnival Junior Court celebrated

its third year of community service by providing hands on experiences to almost forty 7th, 8th and 9th graders at daytime stops during Carnival Week. Accompanied by King Jim, Queen Ellen, President Ginger and the Boll Weevils, these young Memphians helped brighten the day for some of the youngest and most seasoned community members. The ten Grand Krewes of Carnival held their royal coronation balls and fundraisers during the season and for the second year in a row, Krewes for Kids presented by nexAir, set financial records. This year’s Business & Industry Salute Luncheon celebrated the Mid-South Fashion Apparel Industry and was another success. The parties and other events highlight the purpose of today’s Carnival – to raise funds for local children’s charities. Started in 1999, the Carnival Memphis Children’s Charity Initiative (CCI) assists those who improve the quality of life for children throughout the community by selecting three charities each year. This year’s charities: Agape Child & Family Services, Emmanuel Center and Memphis Athletic Ministries received a combined total of $330,000 with matching funds. Since the inception of the CCI over $2,830,000 with matching funds has been donated to local children’s charities.

Bleu Restaurant & Lounge Pan Seared Snapper
4-8 ounces snapper fillet with skin on Salt and pepper to taste Olive oil as needed Preheat oven to 350 degrees. Heat a sauté pan and add the olive oil. With a paper towel, dry the skin side of the snapper, add salt and pepper, then place in sauté pan skin side down. Cook about 2-3 minutes or until the skin is crispy and golden brown. Then place in the oven for 7-10 minutes or until fish is done, depending on thickness. Remove from the oven, top with Coconut Beurre Blanc and serve with your favorite side and seasonal vegetables. Coconut Beurre Blanc: 3 small shallots, peeled and cut in half 1 cup Mirin sweet rice cooking wine 1 12 ounce can unsweetened coconut milk 12 ounces cold butter, cubed 12 ounces fresh ginger root In a saucepan, place the shallots, ginger and mirin; cook until reduced to 25% of its original content. Add the coconut milk, bring to a boil, and turn off. Add the cold

Owen Brennan's Shrimp Po'Boy
1 ½ pounds large shrimp, peeled and deveined ¾ cup flour ¼ cup corn meal 2 teaspoons garlic powder 2 teaspoons onion powder ½ - 1 teaspoon cayenne pepper 1 teaspoon white or black pepper
¾ - 1 teaspoon salt ¾ cup buttermilk 1 large egg 3-4 Gambino rolls 2 cups shredded lettuce 2 medium tomatoes, sliced Sliced dill pickles
Preheat a deep-fryer to 350 degrees. In a large bowl, mix together cornmeal, flour, garlic and onion powder, cayenne, salt and pepper. Mix buttermilk and eggs. Set aside. Dip shrimp in buttermilk mixture and lightly dip into the flour mixture. Fry shrimp a few at a time until slightly brown and crispy, about 2 minutes (or more depending on the size). 8 to 12 medium sized shrimp, peeled and deveined 2 cloves garlic, sliced 1 shallot minced 1 tablespoon blackened seasoning 1/2 bunch fresh parsley, chopped juice of 1 lemon 1/2 cup white wine 4 tablespoons butter 2 tablespoons olive oil 1/2 teaspoon red pepper flakes salt and pepper to taste August 2018
Combine shrimp, blackened seasoning, and pepper flakes in a bowl and mix well. Set a saute pan over mediumhigh heat. Once hot, add oil and shrimp. Saute for 2 to 3 minutes, or until shrimp is cooked. Remove shrimp from pan and set aside. Add shallots and garlic to the pan and saute until translucent, about 1 minute. Deglaze pan with white wine, and let bubble for 30 seconds to burn off the alcohol. Add lemon juice and butter and remove from heat. Swirl pan until butter is emulsified and melted into the wine. Season with salt and pepper. Return shrimp to the pan, add parsley and mix well. Serve shrimp as an appetizer, or serve over salad or pasta. A simple, quick, light and easy summer dish.

Kooky Canuck Strawberry Mojito
7-9 mint leaves 2 ounces frozen, sweetened strawberries 4 ounces light run 2 ounces triple sec 2.5 ounces fresh lime juice 2.5 ounces simple syrup Lemon-lime soda Muddle strawberries and mint leaves in a shaker tin. Add ice to shaker along with remaining ingredients; shake until completely mixed. Pour shaker contents into a tall glass (add more ice if necessary), top with soda and garnish with additional mint and lime wedge.
An easy recipe is whisk 2 cups heavy cream, 1 cup whole milk, 1 cup sugar and 1 tablespoon vanilla extract together until the sugar is dissolved, and chill until cold. Process in your ice cream machine and enjoy! Feel free to jazz it up with different extracts, pureed fruits or mix-ins. Adding chocolate chips or nuts? Make sure to add those near the end of the freezing time to ensure that they’re suspended within the ice cream and don’t just sink to the bottom.

SALUD! at Whole Foods Market, Poplar Avenue Watermelon and Grilled Chicken Toast 4 slices bread, thick cut Olive oil, as needed For Salad and assembly: 3 cup watermelon, cut into ¼ inch thick bite size pieces 1/4 cup red onion, finely minced 2 teaspoons jalapeno, seeded and minced (opt) 1 tablespoon white balsamic vinegar 1 ½ teaspoons sugar 1 ½ Tbsp olive oil ½ teaspoon kosher salt ½ teaspoon cracked black pepper 4 oz goat cheese, softened to spread more easily 2 oz arugula 1 precooked grilled chicken breast, thinly sliced or 2 c. rotisserie chicken meat, pulled 2 tablespoons chives, chopped Preheat the broiler. Arrange bread slices on a sheet pan and drizzle with olive oil. Broil until lightly toasted, then flip and drizzle opposite side with more olive oil. Broil on other side until toasted. Set aside to cool. For the watermelon salad, combine the watermelon, onion, jalapeno, vinegar, sugar, olive oil, salt and pepper. Stir to combine, and adjust seasoning to taste. To assemble, gently spread about 1 oz of the goat cheese on top of the toasted bread and top with a small handful of the arugula. Gently spoon some of the accumulated juice/onions/jalapeno on top of the arugula. Shingle the chicken slices on top before spooning some of the watermelon salad over the chicken. Garnish with a drizzle of olive oil, more cracked black pepper and fresh chives.

The musicians who helped make Memphis famous for its music would make the trek to this expansive hideaway now known as For The Kingdom Camp. The property in Raleigh was once owned by STAX Studio's founder Jim Stewart, and while it was only about 30 minutes away from the STAX studio in South Memphis, it was world's away from the city. The 8,000 square-foot estate that once stood on 49 rolling acres boasted all the tools and toys for the soul stars including three swimming pools, a tennis court, a lake, a barn, a stable, and a helicopter pad. The record label filed for bankruptcy, the IRS came calling, and eventually, the property was auctioned and fell into disrepair. While the glory days seemed over for the bucolic setting in the suburbs, they were just beginning but this time, it was for the glory of God. The estate was acquired by Becky and Eddie Cunningham, who converted it into a camp for kids, and For The Kingdom Camp (FTK) began operating in the early 1990s. Operating first as a day camp, the property was steadily developed through the generous sponsorships of area churches to build cabins and a dining hall. With the option to have campers stay overnight also came the opportunity to fully immerse urban youth into a different way of thinking for an entire week, not just short snippets of time. "Places change when people change, and that starts with how they think. The renewal of minds and thinking has the power to transform a city," said Ray Arechiga, Chief Executive Officer at FTK.

As a young man, Ray fell into the trap of many urban kids. He made bad choices, he hung out with the wrong crowd, and served a jail sentence. His good friend also made many of the same choices, and when they got back together after Ray was released from jail, he could see a difference in his friend. The difference was Christ. Ray began attending church, enrolled in college, and created a renewed life for himself that began with a change in his thoughts. He also began working at Kids Across America Camp. He had experiences he never had growing up in the inner-city such as canoeing, archery, and the calm of sitting beside a campfire. "These were things I never knew I liked, but I loved it. I knew I wanted to do these things the rest of my life!" Ray said.
Ray explained how important it is for youth to have an entire week of camp because it gives kids a chance to fully disengage. "No phones allowed!" he said. While some kids might go to church on a regular basis, but it is only for an hour or two at a time, then they are back in the same environments and situations. The camp setting and disengaging from daily life in distressed communities for an extended period of time really makes an impact for changing hearts and minds. Plus they have fun at For The Kingdom while learning positive life skills such as team building and self-confidence. They are also encouraged and cheered while tackling the challenges of a climbing wall and ropes course.

The kids who attend FTK often participate in other faith-based groups such as Las America, Oasis of Hope, The Ark, Memphis Athletic Ministries, Red Zone, Downtown Church, and others. These organizations all are working together to change the thinking and the destructive behavior patterns plaguing inner-city youth. "Bad company creates bad character and corrupts good morals," Ray said. These organizations strive to give kids positive role models and mentoring.
Twelve cabins are spread out across the property, and each cabin sleeps ten kids. This year, FTK offered three weeks of overnight camps, welcoming 120 kids each week. Campers are divided according to school age, and groups of high school, middle school, and elementary kids form friendships regardless of the zip code where they live or the school they attend. For this week, they are FTK Campers, and hopefully, the attitude of friendship and love is carried back to their individual communities. The cost per camper per week is $545; donors offset the cost with $400 sponsorships, and the remaining $145 is paid by the camper. For many, that is a daunting amount, and they work throughout the year to raise the funds to attend. FTK is now looking for generous donors to fund its 2019 camping season by sponsoring a child for $400.
For The Kingdom seeks to "connect youth to Christ and to each other to positively affect their community." In addition to camping and overnight facilities, For The Kingdom is available to adult groups for meetings, conferences, and retreats. It is very important to FTK that they are open and inclusive to all, and do not discriminate against any religion. "We welcome people of ANY faith to FTK! We share the Gospel without words by serving and encouraging everyone with dignity, love and kindness," Ray said.
For The Kingdom seeks to "connect youth to Christ and to each other to positively affect their community." Ray's vision for the future of FTK is that ten weeks per summer, rather than the current three weeks, will be offered to serve Memphis' urban youth. Because it begins with one glorious week at camp, minds are renewed and refreshed, then distressed communities can be changed, one child at a time.

We all know that as summer begins to wind down and school is quickly approaching, things can tend to become stressful! As a beauty staff, we are always trying to find ways to help you reduce stress levels and feel and look as good as possible. This month, Mary Adair and I had to opportunity to test out facials at Eden Spa and Laser. I had the signature facial and it was amazing. The calming atmosphere helped me to be completely relaxed for the entirety of the facial.
