Grit and Grind Memphis Ecclesiastes 3:1–10 1 There is a time for everything, and a season for every activity under the heaven: 2 A time to be born and a time to die, a time to plant and a time to uproot, 3 …a time to tear down and a time to build, 4 a time to be weep and a time to laugh, a time to mourn and a time to dance, 5 a time to scatter stones and a time to gather them, a time to embrace and a time to refrain, 6 a time to search and a time to give up, a time to keep and a time to throw away, 7 a time to tear and a time to mend, a time to be silent and a time to speak, 8 a time to love and a time to hate… 9 What does a worker gain from his toil? 10 I have seen the burden God has laid on man. 11 He has made everything beautiful in its time. The first draft of this letter was written after the final game of the Memphis Grizzlies’ Playoff run. It is obvious to say that no Grizzlies fan was happy about losing game six to the Warriors, but I also don’t know a single Memphian who wasn’t proud and grateful for the efforts the entire team put into the 2014/2015 season. The end of the season gave us all a feeling of disappointment and pride, two emotions that aren’t normally experienced at the same time. I frequently go to the third chapter of Ecclesiastes during times of success or disappointments. In times of success it reminds me to appreciate the joy that the time of success brings. The passage also serves to keep one humble and to be grateful for the blessings you are enjoying, because it is a reminder that your circumstances can change, or it sharpens your awareness of others around you who are struggling with disappointment.

favorable day. The end of the 2014/2105 season, after a period of rest, makes way for the 2015/2016 season and a team that is healthy and ready to play once again. I am writing the final draft of this letter from vacation. Memphis in May has come to a close, the long-awaited Bass Pro Shop at the Pyramid has opened, the school year has ended; the busyness of exams, graduation and closing ceremonies have been replaced with a moment to rest and begin summer vacation. It is a time to enjoy family and friends, a season that offers a break from our more traditional routine and responsibility. Solomon, the author of Ecclesiastes, in his opening line of Chapter One declares everything in life to be “Meaningless,” and in the first two chapters of Ecclesiastes, Solomon writes of all his accomplishments only to express his disappointments that the fame and riches did not bring him happiness. Solomon discovers that the secret to life is the ups and downs, thus giving life purpose and meaning with those God brings in and out of our lives. Solomon’s message from Ecclesiastes Chapter Three is a Grit and Grind message. He proclaims in verse 11, “He has made everything beautiful in its time,” and so it is with Memphis. We work together, we fight for respect, we cry with disappointment, we celebrate together, and in the end we work together to make what we have been given beautiful! . Claudia Haltom served as a juvenile court judge for 17 years. During her tenure, it was her job to take children away from their parents and put them in state custody. “Removing kids from their parents was the hardest job I have ever done. But over and over, I saw families that had mothers that wanted to be good mothers, but they were drowning.” These women, according to Claudia, were being overwhelmed by having children too early or not spacing their pregnancies out. “I would ask these women what their plans more children were, and most young women would reply, ‘Well I am on the pill.’ Then I would ask, ‘Have you taken it this morning?’ in 17 years, not one woman answered ‘yes’ to that question.” These women were not usually shunning responsibility; many had just lost benefits or had been put out of her apartment. “If she was in front of me, it was not a good day for her. But when you have an unexpected pregnancy, no matter your socioeconomic standing, your entire life changes, and very often not for the better.”

In addition to her time as a judge, Claudia served as attorney for the Shelby County Health Department. She visited the family clinics and discovered that the most effective methods of birth control are the long acting reversible methods like an IUD (intrauterine device). There is a ten year IUD that is made of copper and contains no hormones, a 5 year IUD with light hormones, and there is an implant that is a straw implanted into the arm. These “get it and forget it” methods have a less than one percent failure rate. However, these were not available in free clinics, and it was difficult for young women without private doctors or insurance to get them. “These methods are great for girls headed off to college who can barely remember to brush their teeth during exams, or for new mothers who are sleep deprived and have irregular schedules,” notes Claudia. The realization that these methods could mean salvation for young women prompted Claudia to come out of retirement and start A Step Ahead Foundation. Founded and chartered in 2011, A Step Ahead Foundation (ASAF) offers women of Memphis and Shelby County free long-acting reversible contraception (LARC), which are the most effective reversible methods of birth control. ASAF now has 19 partner clinics, and the process is refreshingly simple for young women. First, she calls the 24/7 hotline 901-320-STEP and speaks to a female operator who asks only her zip code. Next, the operator assists in making an appointment (which is usually within two weeks) for her to her closest clinic that offers LARCs. Finally, A Step Ahead will send a free cab to take the woman to and from her appointment. No insurance is necessary. The clinics are reimbursed by ASAF, and there is no charge to the young lady. They do not offer any sterilization, but they offer free and anonymous assistance in helping young women take control of their futures. Finally, down the road, when the young lady decides to start a family and have her IUD removed, The Step Ahead Foundation covers those costs, too. The organization is headed to the Crosstown building soon, and will be right next to The Church Health Center. Their target audience is teenagers, and their programming provides outlined information on how to grow into the young woman they desire to be. In 2012-2013, A Step Ahead Foundation assisted 1, 238 women in birth control procedures. However, in Shelby County’s 38127 (Frayser) zip code alone, there were 921 births in 2012. The majority of women (73%) for whom ASAF was the payer of
birth control method had been pregnant at least once before the procedure. When asked, it is rare that a young woman will answer “I want to be a teenage mother” when inquiring about their future plans. However, many young ladies neglect considering their “life plan” when engaging in sexual activity. A Step Ahead Foundation, at its core, wants to give young women their opportunity to achieve their dreams. Belinda Simpson, Director of Community Outreach at ASAF, has gone so far as to make a questionnaire for women about their life plans, asking questions like “Where do you want to live?” and “How much money would you like to make?” and on to “When do you want to have kids?” and “What would be difficult to do if you become a parent?” and finally “What would happen to your plan if you found out you were pregnant tomorrow?” Reminding young women of their dreams and how little room for an unplanned pregnancy there is in those plans can offer as a big realization for them. ASAF volunteers pass out flyers and hits the street at places like the welfare offices, Department of Human Services, and child support offices. Belinda note, “The women that are just sitting there gives us a good opportunity to approach them and as, ‘Do you know anyone who could use free birth control?’” A Step Ahead Foundation also has an event they call Girl Talks: an event at community centers and after-school facilities that encourages women to start planning their lives while equipping them with information that they may need to be child-free until they are ready for children. They educate women on healthy relationships, abstinence, and pursing their education. ASAF is always seeking volunteers to help with their Girl Talks and other programming; however, their biggest need is more young women taking charge of their future by taking advantage of their services. Helping each young lady outline her goals is the first step in creating a healthy and happier home in the Mid-South. “We always tell them,” says Claudia, “that at the end of the day, at some point in your life, we hope you get married to Mr. Wonderful, and planning for your children will help you both have a more successful life.” For their services and dedication to the young women of Memphis, A Step Ahead Foundation is the recipient of this month’s Memphis Love Challenge. Faces of the Street Street Ministries Photography by Mark O. Ramirez On April 23rd, Streets Ministries held a surprise tribute at Bridges to honor founder Ken Bennett. Ken started Streets 28 years ago with the personal calling to love the children of the Foote and Cleaborn Homes area of Memphis. Ken and the audience were treated to stories of the early days for the ministry. These stories were told by adults who were once living on these streets of these economically struggling areas and were able to break the cycle of economic and spiritual poverty. In addition to the children’s stories, several of Street Ministries’ original Board Members shared Ken’s early passion for this seemingly impossible task that led them to join him in creating Streets Ministry. The audience celebrated the Bennett family’s heart and trust of God that has resulted in a Ministry that operates two neighbor facilities and are making a difference in the lives of thousands of Memphis’s children.

I
t’s been 35 years in the dreaming. When the Blues Foundation was formed in 1980, a Blues Hall of Fame was on the wish-list for the international organization headquartered in Memphis. With dedication, fundraising, and the leadership of CEO Jay Sieleman, the project was brought to brick and mortar fruition. On May 8th, the Blues Hall of Fame opened their doors to the genre’s faithful fans and filled a gaping void in Memphis’ cultural tourism offerings.

Little Milton Statue Dedication The Blues Hall of Fame (BHOF) differs from a museum in the telling of the blues story. The BHOF focuses on the people who influenced the blues and is a retrospective of the artists, producers, djs, and others who have made blues music history. Only one week after the grand opening, the blues community lost their king with the passing of B.B. King. With this loss of the venerable blues guitarist, the long-anticipated opening of the Blues Hall of Fame is even more significant because in the Home of the Blues, we now have a facility to celebrate the men and women who shaped American music history. Built directly across the street from the National Civil Rights Museum, there could not be a more ideal location for the BHOF. The African-Americans who were at the epicenter of the Civil Rights Movement created the blues music, and of the 130 Hall of Famers who are performers, 120 of them are AfricanAmerican. The National Civil Rights Museum and the BHOF seem to be harmonizing on South Main to tell the stories of the blues and African-American people.

The newly renovated space is a beautiful and artful addition to the South Main Arts District. The street-level floor of the building was transformed into an open, light-filled, multi-function space. The Blues Foundation offices line the back wall, accessed by a frosted glass catwalk. A large gallery exhibit space begins the Hall of Fame experience. No, that is not entirely true. The experience begins out front with a blue tinted sidewalk, etched
The blues style of music may be rooted in the Southern states, but it has spread around the globe and inspired countless musicians in rock, soul, r&b, and funk music. With the opening of the Blues Hall of Fame, these legendary inductees are honored, and their blues music is preserved for the next generation.
The gallery is sponsored by the Legendary Rhythm and Blues Cruise, and the inaugural exhibit is a display of Dick Waterman portrait and concert photography. The Oxford, Mississippi, resident is a renowned photographer and himself an inductee in the BHOF. Exhibits in the gallery are free and will rotate twice per year with blues-themed original artwork. A wide stairway descends to the Blues Hall of Fame exhibit area. Personal memorabilia and artifacts are displayed in sleek cases, and range from W.C. Handy hand-written lyric sheets to an Otis Spann electric piano to a KoKo Taylor sequined stage costume. Technology is a vital part of the exhibits, too, with interactive components that at the touch of a button play songs, recordings, and interviews of the hall of famers.

Photography by James Wessels | Blurred Image Photography Little Milton, a blues musician from Inverness, Mississippi, is memorialized with a bronze statue in front of the Blues Hall of Fame. Pat Campbell, Little Milton’s widow, was at the unveiling and very moved at the beautiful tribute to her mate of over 40 years. “Every time I come see it, it takes my breath away,” she said. The statue was inspired by Little Milton’s last studio album entitled “Think of Me.” The cover photo features Little Milton sitting on a bench in Tom Lee Park, holding his Gibson guitar, gazing over the Mississippi River. The statue was sculpted by Andrea Holmes Lugar and cast at Lugar Foundry. The bench, where the Little Milton statue sits and gazes over South Main, has plenty of room to share with BHOF visitors. The legs of the bench are in the shape of gar fish and were crafted at the National Ornamental Metal Museum. Little Milton said it best: “Hey, hey the blues is alright.”

The annual Blues Music Awards extravaganza kicked off at 5:30pm in the lobby of the Cook Convention Center and moved upstairs to the ballroom for dinner and awards show and presentations. The music played until well past midnight with performances by industry greats and Grammy winners including Charlie Musselwhite and John Hammond, Keb’ Mo’, and Elvin Bishop.

Honey Pecan & Goat Cheese Stuffed Tomatoes Itta Bena
4 large tomatoes 4 oz goat cheese 3 Tbl panko bread crumbs 1/4 c pecan pieces 2 tsp fresh chopped chives
2 Tbl olive oil 2 Tbl honey Kosher salt and cracked black pepper to taste
Preheat oven to 400째. Cut a thin slice off the top of each tomato, and scoop out the pulp. Combine goat cheese, pecans, bread crumbs, chives, oil, salt and pepper in a bowl and mix well. Stuff each tomato with cheese mixture, and bake 6 to 8 minutes. Drizzle each tomato with honey and serve with fresh salad greens.

For the Thai Chili Honey Sauce 1/2 c Wolf River honey 1/2 tsp minced garlic 1/2 c of water
2 oz Sirachi sauce 1 hot chile, minced
Mix ingredients and set to the side. For the Fried Chicken Canola or peanut oil, for frying 1 1/4 c all-purpose flour 2 Tbl cornstarch 1 tsp cayenne pepper 1 tsp red pepper flakes
1 Tbl dried Italian herb seasoning 2 tsp salt 1 tsp freshly ground black pepper 1 1/2 lbs chicken tenders, cut into bitesize (about 1-inch) pieces
In a shallow dish, whisk together flour, cornstarch, cayenne pepper, red pepper flakes, Italian herb seasoning, salt and pepper. Heat oil in a medium skillet over

1 lb Clarkville Fields fresh Brussel sprouts 1/4 c smoked applwood bacon, chopped 1/4 c diced red bell pepper 1/2 c Feta cheese crumbles 1/4 c buttermilk dressing 1 Tbl black pepper Steam Brussel Sprouts 6 minutes in a conventional steamer or on your stove top. Remove Brussel sprouts and toss with dressing and Feta cheese crumbles. Next, top with red bell pepper and bacon. Finish with black pepper and enjoy!

Mix all dry ingredients together using a large whisk, in a separate bowl, mix the wet ingredients together. Gently combine but don’t overmix. Cook as your waffle maker directs. Cut in small squares. Assemble by placing freshly fried chicken on top of the waffle and drizzle with your Thai Chili Honey sauce and garnish with green onions. Serve and party!

Salud! Cooking School at Whole Foods Market 1 Tbl olive oil 1 large onion, julienned 1 carrot, fine julienne 3/4 lb zucchini (about 2-3) 1 lb yellow squash (about 2-3) 2-3 large tomatoes
2 tsp fresh rosemary, minced 2 tsp fresh thyme, minced 2 tsp fresh basil, chiffonade 2 cloves garlic, minced 1 tsp white wine vinegar 1 tsp salt
Preheat oven to 375F. In a medium skillet, heat olive oil over medium high heat. SautĂŠ onion for 2 minutes then add carrot, cooking until the onion is translucent, lightly caramelized and the carrot is cooked through, about 5 minutes. Pour into a 2 quart shallow baking dish, spreading evenly over the bottom. Using a mandolin or food processor, thinly slice the zucchini and yellow squash into thin rounds. Slice the tomatoes by hand or with a mandolin, also to the same thickness. In a small bowl, mix together the fresh herbs, reserving 2 tsp of the herb mixture for garnish. Combine the remaining herbs, garlic, vinegar, salt and pepper in a

Process all ingredients in a food processor and run until smooth consistency. Rub down the belly with salt mix and allow to sit for 36 hours. Once cured, rinse salt and place into a container large enough to hold pork and fat enough to cover. Heat oven to 200 degree Fahrenheit and cook pork for 12 hours. Remove from fat and weight top to press belly. Prepare with your favorite breakfast accompaniment

Increase the temperature to 425F and remove the foil. Cook for an additional 7-10 minutes until the edges of the vegetables are slightly crisp and caramelized. Ingredients (using as many local vegetables as possible) 2 oz baby carrots 2 oz Green beans 2 oz Spinach Black Thai rice 2 oz Shiitake mushrooms 1.5 oz Kent Walker Artisan Cheese Feta from 2 oz Squash Little Rock
1 lb Claybrook Farms ground chuck 1 Tbl extra virgin olive oil 1 lb onion, diced 2/3 c celery, minced 2/3 c carrots, minced 2 tsp garlic, minced 1 tsp dried basil 1/2 tsp chopped parsley 2 tsp Italian seasoning

Boil water oil garlic, add flour, whisk, pour into pan and cool, cut into triangles and quickly grill. Garnish with fried leeks.

Sauté chuck meat in olive oil. Next, sauté the veggetables separately. Add the chuck and spices together and cook for 3 hours over low heat. Stir from the bottom every 15 minutes and then add to your favorite lasagna or pasta dish. The sauce is also available at Lucchesi’s Pasta and Ravioli!
Creole Pork Tenderloin Owen Brennan’s 1 pork tenderloin 2 Tbl olive oil 2 Tbl butter 1/2 cup diced yellow onions 12 oz chicken stock 1/2 lb “The Original Grit Girl” grits 1 c heavy cream 8 oz shredded cheddar cheese
1/4 c minced shallots 1/4 c bourbon 1/4 cup brown sugar 2 Tbl Worcestershire 1/4 c granulated sugar 2 Tbl Creole mustard 2 Tbl Cajun seasoning 1/4 c apple juice Salt and white pepper to taste
For the Tenderloin Remove tenderloin from package and trim excess fat and silver skin. Place in brine for 6 hours. Remove from brine and place on drip pan to dry for approximately 30 minutes. Once dried, rub tenderloin with olive oil and then apply seasoning liberally to coat the exterior of the meat. Preheat a large skillet, add 1 ounce of olive oil and allow to heat (approximately 30-45 seconds). Place the tenderloin in the skillet and sear the outside, turning the tenderloin every 2 minutes until the entire outside has been seared. Remove tenderloin from skillet and place on a baking sheet, place in a pre-heated 350 degree oven for 25 to 30 minutes or until the internal temperature reaches 145 degrees. Remove from oven and allow to rest for 5 minutes. Transfer tenderloin to a hot char grill and using a pastry brush, apply the Creole glaze to the outside of the meat. Cook for 3 minutes, flip the meat and apply the glaze to the other side for an additional 3 minutes. Remove from grill and place on a clean cutting board. Slice into ½ inch pieces.
For the Smoked Cheddar Grits Sautee 2 Tbl. Butter and ½ cup diced yellow onions for 5 minutes. Add 12 oz. chicken stock and allow to come to a simmer. Slowly add ½ lb. “The Original Grit Girl” grits while stirring not allowing to clump. Let cook for 15 minutes, stirring continually so they do not scorch. Add 1 cup heavy cream and continue to cook while stirring for an additional 5 minutes. Add 8 oz. of shredded smoked cheddar cheese and continue to cook while stirring for an additional 5 to 8 minutes. Add salt and white pepper to taste.

The church and its members have played a critical role in supporting many of Memphis most dynamic mercy ministries: Bethany Christian Services, The Church Health Center, Streets Ministry, Neighborhood Christian Centers, Jonah’s Journey and Palmer Home for Children. The Third Annual Wesberry Golf Classic was held at Spring Creek Ranch on April 20 benefitting SRVS and more than 1,000 people with disabilities. The event grossed more than $39,000 in support of SRVS’ programs, ranging from employment and community living, to children’s services and elder care. SRVS is the largest comprehensive service provider in Tennessee and one of the largest private employers in Memphis with more than 900 employees.

The golf tournament was comprised of a 4-person scramble and 23 teams participated. Anne Wesberry welcomed the golfers as they headed out to the exclusive golf course in Collierville, Tennessee. I
n a mashup marketing effort involving Tennessee Department of Tourist Development, Southwest Airlines and band The Black Cadillacs, a plane full of a few journalists and the otherwise unsuspecting passengers found ourselves 35,000 feet in the air, adult beverages in hand, and listening to a live acoustic five-piece performance. A lucky few experienced what is known as #Liveat35 series, this one happening during the new Southwest Airlines route between Dallas and Memphis. What is seemingly a clouded correlation, Southwest Airlines, TDTD and The Black Cadillacs nailed a modern way of conveying a long-standing message: Memphis has deep-rooted cultural relevance.
4Memphis and Spin Magazine were invited on Southwest Airlines flight 3664 from Dallas headed to Memphis. The non-media passengers were unaware that rising act The Black Cadillacs would be performing an acoustic version of their song “Fracture”: a song written in and about Memphis. The band’s original three members include Memphians Will Horton, Matthew Hyrka and Philip Anderson, and they later added Guitarist John Phillips and drummer Adam Bonomo to the group when they moved to Knoxville to attend the University of Tennessee. So when the band found themselves in a creative funk and desperate to write a new song, they hoofed it to Memphis to find inspiration, and they instantly experienced what thousands of other musicians before them felt, collectively agreeing, “People talk about roots of music, but this [Memphis] is really it, stripped down.” The Black Cadillacs reveled in full-tilt Memphis excursions, including local haunts Gus’ Fried Chicken, Kozy Korner, Goner Records, Beale Street and St. Blues Guitar, just to name a few. The guys had a tour of Sun Studios, with Will Horton gushing, “I’m standing in a room where Elvis stood and recorded. It’ll give you chills.” Their appreciation of Memphis as a musically and culturally significant destination only heightened when the band visited Stax Museum, or “Soulsville, USA.” The guys, like other music aficionados around the globe, did not realize that Memphis held greats like Al Green and Otis Redding: two of dozens of the soul and R&B superstars represented in the space. And no one can visit Memphis without a trip down to Graceland, where guitarist John Phillips enthused about Elvis’ longevity and longstanding relevance even today in the world-music landscape. 84 / 4Memphis
The Black Cadillacs took their inspiration and mixed magic at Ardent Studio. “Fracture” is a single inspired and reflective of Memphis, with hints of Elvis-inspired rock-a-billy, soulful harmonizing, and down-home grit. On the heels of exciting city revitalization, a new mega Bass Pro Shop opening its doors, and commercial airline Southwest Airlines stretching its legs in Memphis, the agency VML saw an opportunity to merge two of their clients’ initiatives into one marketing adventure worthy of an encore. VML represents TDTD as well as Southwest Airlines, and when SW announced their newest leg from Dallas to Memphis, VML saw the chance to incorporate some Memphis-inspired indie-rock as more than a just background music. That is how #Liveat35 with The Black Cadillacs and the documentary Last Song to Memphis was born, and you can watch the video at tnvacation.com/last-songmemphis. Taking their new single “Fracture” up 35,000 feet in a plane and performing to unsuspecting and otherwise unsubscribing listeners was a gamble that paid out for TDTD, Southwest Airlines and The Black Cadillacs. The band landed to a huge round of applause, and then wrapped at a packed-out show at BB Kings on Beale. Sadly, BB King was not on hand to hear how the boys were inspired by a city in which he found so much musical inspiration. In fact, BB King passed away a few weeks later and was mourned not only by Memphis, but by The Black Cadillacs as well. The band collectively stated that Memphis lost another legend, but his legacy along with all the musical birthright Memphis deserves will continue to live and inspire for decades to come.
