enteel Augusta, approximately the size of Chattanooga, Tennessee, is tucked into the eastern edge of Georgia bordering South Carolina. But for one week in April, unassuming Augusta is transformed into an international golfing industry extravaganza via the Masters Tournament. Masters tickets are some of the most elusive in all of sport’s major events, except for a fortunate few who, by supporting Memphis Goodwill, attend the Masters in first-class fashion: a chartered jet, a police escort to Augusta National, a cook-out before leaving and a full day of watching golf legends practice on this storied course.
The one day jaunt starts early, at 5:15am. The gathering of primarily men mills around Concourse A at Memphis International seeking either Starbucks or a Bloody Mary. There is plenty of chatter about golf stats and the National Championship NCAA tourney that ended just hours earlier. It is easy to spot fellow travelers; while most passengers at this hour are wearing business attire and are totting a laptop, this bunch is wearing shorts and ball caps with a light scent of sunscreen. The chartered Miami Air flight taxis to Gate A-27; Chick-Fil-A chicken biscuits are handed out, and the 155 excited travelers board the jet for a full day of golf, friends and Goodwill.

The day is hosted by Memphis Goodwill executives and board members including President and CEO Tony Martini, VP of Corporate and Community Relations Henry Brenner and Board Member and former NBA great Anfernee “Penny” Hardaway. These Goodwill leaders are passionate about the mission of Goodwill, and this day of “friendraising” is an opportunity to share the story that is only getting started with the thousands of donations. Goodwill Industries began in 1927, and today, the Memphis region is one of 165 nationwide territories that work together to prosper and to promote the central mission of Goodwill. If you are thinking that Goodwill is only about thifty shopping, please know that is a common misconception. Yes, the stores are a vital piece of the business, but the stores are a means to support the true mission - jobs. The 25 Attended Donation Centers across the area collect “gently used items” to be sold in the nine retail locations, but it is so much more than shopping for a bargain or a vintage tchotchke. It is about jobs for 750+ employees who have struggled with employment, and ultimately, their sense of accomplishment and self-worth that also comes with a paycheck. For the Masters guests, in addition to the world-class golf being played on the grounds of the former Fruitland Nursery now known as Augusta National, it is the business of golf that is the hole-in-one for the city of Augusta. Once inside the Augusta National complex, the merchandise stalls are bustling with proprietary Masters goodies. All manner of items for every taste (needlepoint flasks) and price-point (Tervis cups) sport the iconic Masters logo with the distinctive hunter green US map accented with the yellow flag. The industry that is the Masters spills out, literally, onto the sidewalks surrounding the course and beyond. The three buses filled with the Memphis contingency are parked in a prime reserved parking spot and a 5-minute walk to the course entrance. It is a short walk, but the economic importance is evident in just the few blocks to the course. Schools are closed for the week, so lone teenagers to various church groups and scout troops are selling items including hang tags and lanyards for tickets, parking spots or bottled water. A luxury car dealer offers a putting green and a chance to win a new car. Augusta buzzes
with commerce generated by the Tournament, and for a significant portion of Augusta natives, the economic impact comes in the form of a job. This one week can be the difference between red or black ink for the year for a small business or college tuition for a young entrepreneur. Similarly, Goodwill recognizes the impact of a job and strives to make a difference for Memphians who struggle with barriers to employment, whether that barrier is intellectual development, education or other circumstance because quite simply, jobs change lives. Tony Martini easily admits that he has Goodwill “in my heart,” and with that spirit he has guided this territory from the brink of financial disaster with a tarnished public perception to a vital non-profit organization with revenues surpassing $22 million. Next on the horizon for Memphis Goodwill is the Excel Center: an adult charter school in the Crosstown building. Adults who have dropped out of high school will be able to have the chance to graduate with an actual diploma, not a GED, and ultimately in the fulfillment of the Goodwill mission, the graduates will get a job and opportunity to live a better life. The Masters Experience is organized by Henry Brenner, and it takes several months of planning to orchestrate this one flawless day. The trip is a tangible example of the commitment and passion he has for sharing the Goodwill story in his role in corporate/ community relations. “The Masters trip has become synonymous with Memphis Goodwill. We’ve used this forum first as a friend-raiser, and second as a fundraiser. This year, 2014 was the best one so far,” Henry reports. This jaunt is just one of the ways that he promotes Goodwill, and quite often he is making presentations and speeches to civic groups and business executive organizations who want to know more about the mission of Goodwill. Watching golf legends, experiencing the magnificent Masters and supporting the benevolent mission of Memphis Goodwill…it is all in a day’s work. How many times have you loaded the family in the car and headed out to Little Rock, knowing you could be in the on-airport parking garage in exactly two hours and fifteen minutes, and on a Southwest Airlines flight quickly thereafter? Yep, that’s what we thought – almost every one of you reading this article. For years, many of us were resigned, but willing, to make that drive to Little Rock, knowing the savings on a cheapie Southwest flight for a family of four – or even a couple – was well worth the drive.
flight to Houston will be added in early November. Best of all, fares from Memphis on all the carriers serving the city have dropped almost 11% in the fourth quarter of 2013 – thanks to the so-called ‘Southwest effect’, in which the airline’s arrival in a new city pushes down ticket prices. Southwest is also working to grow its philanthropic presence in Memphis. This year, St. Jude Children’s Research Hospital is a beneficiary of the carrier’s Medical Transportation Grant Program, which provides free airline tickets to the hospital to distribute to select patients. In 2013, the local Ronald McDonald House was one of the recipients of the airline’s annual employee golf tournament.
But no longer does one have to drive out of state to take advantage of a well-priced Southwest flight. Seven months after fully entering the Memphis market, Southwest Airlines is increasing its presence and daily flight schedule from Memphis International Airport. Right now, the number of daily flights is six – one flight each day to Houston, Orlando, Tampa and Baltimore, and two to Chicago. A second daily
“We see so much opportunity in Memphis,” says Southwest spokesperson Michelle Agnew, who attributes the early success of Southwest’s schedule to the solid operation AirTran had established at Memphis International. AirTran was acquired by Southwest in 2010. “Our service is doing well and we have a great operation” in Memphis, Agnew says.
Quick Escapes, Famous Festivals The cities served by Southwest with direct flights from Memphis are similar in the vibrancy of their offerings; we particularly love the ease of flying into Chicago’s Midway (it’s a 20-minute cab ride to the Gold Coast) and Houston’s Hobby (an even quicker cab ride to downtown Houston). And, they ship – heaven! Sleep: The ultra-charming Inn at Perry Cabin – just a short drive from Baltimore – has the Eastern Shore’s only four-star restaurant, and is the perfect romantic hideaway.

Roasted Venison Chops
Whiskey Braised Elk Sandwich
2 lb venison rack Salt and pepper 1 T minced garlic
6 Elk shanks 3 C whiskey 2 T olive oil 1 onion, diced 1 large carrot, diced

Rub the venison with olive oil, rosemary, and garlic then season generously with salt and pepper. Grill the meat for 10 minutes crosshatching your grill marks, then place in a 500 degree oven until mid-rare. Remove the meat, cover with foil and let rest on a cutting board for at least 5 minutes. Sweet Potato Succotash 1 cup diced sweet potato 1 cup butter beans 4 fresh okra, sliced with ends discarded ½ cup roasted tomatoes ½ diced onion
1 clove minced garlic 2 fl oz clarified butter 1 tsp chopped oregano 1 tsp chopped thyme 1 tbl chopped parsley Salt and pepper to taste
Blanch the sweet potatoes and butter beans separately until tender but still firm. Heat butter in a sauté pan and cook down onions, garlic, and okra until tender and caramelized. Add sweet potatoes, beans, and tomatoes then finish with fresh herbs, salt, and pepper. Plate venison and ladle the port wine sauce generously around the plate. Slice the meat between the rib bones and place crossed over the sweet potato succotash. 28 / 4Memphis

Cover the bottom of a large braising pot with oil, and set over medium-high heat. Saute elk shanks until browned. Add diced onions, carrots, and celery and continue to saute until caramelized. Deglaze with whiskey, and cook 5 to 8 minutes. Add remaining ingredients and cover with water. Place in 300 degree oven and cook 3 to 4 hours, or until meat falls off the bone. Serve elk on french baguette, with swiss cheese, caramelized onions, and roasted red peppers; garnish with micro greens.

Strano! Sicilian Kitchen 1 duck quarter, with the skin still on 2 oz extra virgin olive oil 4 cups blood orange juice 3 roasted garlic cloves
3 oz caramelized onion 2 oz candid orange zest 5 oz cous cous 3 oz mixed vegetables, diced
Brine duck for 24 hours. Begin by searing the duck, skin down in a hot skillet with oil, then finish the duck in the oven to render
all of its fat. Meanwhile heat up some vegetable stock and add diced vegetables and cous cous. Place caramelized onions on the plate with the rendered fat and crisp duck quarter on top. Add seasoned cous cous to the plate with the duck. Add blood orange juice and garlic to the pan drippings and reduce until the liquid coats the back of the spoon. Pour over duck and enjoy!

Fried Gator Roulade Local on the Square 4 oz gator tail, pounded into thin strips 1/4 cup cream cheese 1/4 cup goat cheese 2 oz crawfish tails, rough chopped
Creole seasoning 1/4 cup fresh basil, julienne Panko Eggwash Seasoned flour
Tenderize (pound out), gator tail. Season liberally with creole seasoning. Mix crawfish, cream cheese, basil, and goat cheese. Place about 2-3 tablespoons of mixture on the tenderized gator. Roll up carefully pinching the sides inward to seal well. Place 2-3 bamboo picks to secure the roulade. Roll in seasoned flour, then eggwash, then panko, back into the eggwash and

back into the panko once more. Deep fry at 350 degrees until golden in color on the outside, around 5-8 minutes. Green Tomato Chow-Chow 2 green tomatoes, diced 2 cups apple cider vinegar 1/2 cup brown sugar 1 red pepper, roasted and diced
1 T yellow mustard seeds 1 T kosher salt 1 T ground garlic 1 shallot, sliced thin
Bring all ingredients except the green tomatoes to a boil. Add green tomatos and simmer for 10 min or until green tomato is soft. Cool and refrigerate overnight.

Sear on both sides and roast in oven to desired level of doneness. Due to the minimal level of fat, anything beyond medium and the meat becomes quite tough.

Duck or bacon fat 1 cup cider vinegar
Melt fat and sugar together, add vinegar and cabbage and cook until cabbage is completely tender. Season with salt and pepper.

Top Atlanta Restaurants Two short years ago, Mississippi attorney Stan Little bought a private airplane. However, he did not anticipate that purchase would lead to the launch of a Memphis-based passenger air service. Now Stan has parlayed his small fleet of aircraft into what he claims to be a model for air travel that will become the “future of short haul air travel in America.” Relocated from Memphis into Olive Branch, Southern Airways Express has reached its one year anniversary and has become one preferred way for Memphians to commute to the Emerald Coast beaches, and now perhaps, beyond. The idea for Southern Airways began while Stan was vacationing in the Bahamas. Flying from Memphis to Bimini with friends, Stan’s private pilot made the off-hand comment, “Wouldn’t it be great if everybody could travel like this?” Like most welldeveloped plans, the idea emerged from a tiki bar meeting. Stan sketched the first route map on a cocktail napkin, and the idea of a private executive-style air service was born. Over the next several months, Stan dove into researching regulations and building a team. One of his first phone calls was to friend and former business associate, Keith Sisson. Keith was living on the Mississippi Coast and working as a contractor in travel and tourism. “When Stan called, he said he had an idea for a new business. He wanted to run it past me and to know when I could make it up to the Memphis area. I told him I could be there is a few hours.” Several weeks later, it was decided that Sisson would move to Memphis and become the COO. “My knowledge in aviation was limited, but my experience in the tourism industry carried over quite well. People like to travel: if you make it fun, easy and affordable, you will be successful.” Southern Airways operates a fleet of Cessna Caravan 208’s, a turbo-prop airplane that has been outfitted with ultra-luxury, executive-style seating. “We cater to a high-end demographic, we must have a high level of style and comfort,” Keith continues, “We are seeing a great number of private plane and jet owners leave their own planes behind and fly with us on our Destin routes.” During its first year, Southern Airways tested routes from Memphis that included Destin, Panama City Beach, Gulf Shores, New Orleans, Birmingham and Atlanta. Acting on the knowledge that Memphis is home to avid SEC fans, they also flew a number of scheduled service flights to college football games in the fall. As it is for any new business, the first year provides a learning curve: the first winter was challenging for the new business, “We had no research to go by,” Keith explains. “Looking back, I suppose it was obvious that people didn’t want to go to Destin and watch it snow on the beach, but we thought we would have some commuter traffic.” Suspending its leisure beach service for the winter, Southern took back to skies in March. With the help of a loyal customer
base and the popularity of the region’s most prevalent spring and summer destination, Southern Airways found it was a seamless transition from the one of the coldest winters in recent history. This summer, Southern is flying all of its Memphis-based flights from Olive Branch. Branded “The Olive,” Southern is the only scheduled service that operates from the convenient airport. In addition to daily beach service, Southern has just launched daily service to Atlanta’s DeKalb Peachtree Airport, know as PDK throughout north Atlanta. “It was important for us to find a business route out of Memphis that we could develop prior to the winter. The North Atlanta airport in Dekalb County is perfect due to its proximity of Atlanta’s business centers and the ease of getting in and out,” says Keith. “Any Memphian needing to do business in Atlanta will love this new route. It is far more like a private business charter than anything that would go in and out of the big Atlanta airport.” A chartered flight to Atlanta with Southern Airways is not only affordable but a very quick flight. “This is a great option for business travel, as well as people who want to do a day shopping trip or quick holiday travel,” says Keith. Southern Airways operates morning flights to Atlanta every weekday with an evening return on every weekday except Thursday. “From the South’s best shopping and some of the region’s most popular attractions, Atlanta is a major tourist destination.” In addition to the business traveler working in Buckhead, Southern Airways expects to cash in on families going to the aquarium, attending a Braves game, or sampling some of the unique soft drink flavors at the Coca-Cola Museum. With the convenience, the private plane flying experience, the luxury, and the savings on time, one would think Southern would be more expensive than the legacy carriers. However, Southern’s prices range from $198 to $298 each way. “Gone are the days of a walk-up fare to Atlanta being $700-$1,000. Our top price in only $298.” And for those who never seem to have enough time in their schedules, the convenience of showing up to the airport twenty minutes prior to the flight is a huge selling point. Travelers also do not pay for parking, and there are no baggage fees and no TSA hassles: “Bring all the shampoo you want,” laughs Keith. Entering year two, the future looks bright for Southern Airways. Expansion plans may even include servicing more destinations out of “The Olive”; cities like Knoxville or Chattanooga may get routes soon. They are also interested in bringing back service to the downtown Memphis airport, Dewitt Spain, with possible flights to St. Louis, Fayetteville, South Florida and even Texas. Regardless where they fly, Southern Airways says they will remain loyal to its young roots and its hometown. “Memphis is our home and our hub and no matter where we ever fly or where we may expand. We will not forget that fact,” notes Keith, “and our pilots will always wear blue suede shoes!”

Voted by Travel + Leisure as one of “America’s Best Dim Sum Destinations,” the Brazilian churrascaria meets dim sum style menu changes weekly. Dishes are served on rolling food trays that encircle patrons in the cafeteria-style dining room.
Miller Union This restaurant puts a modern twist on the Southern meat-and-three tradition. Executive Chef and Co-Owner Steven Satterfield focuses on updated regional classics with fresh produce-driven recipes. Check the chalkboard in the lobby to see what local farms provided the day’s ingredients.
Octopus Bar Rub elbows with local chefs in their natural habitat at this cult late-night favorite. Dinner service begins at 10:30 p.m. on So Ba Vietnamese Restaurant’s patio. Chef Angus Brown and Nhan Le serve Vietnamese-inspired eats with an emphasis on seasonal and locally-sourced ingredients. For the early-birds, try Brown and Le’s newest restaurant, Lusca, with dinner and raw bar service beginning at 5:30 p.m.
The General Muir This spot is a tribute to the classic New York Jewish deli with a Southern twist, and led by 2014 James Beard Foundation Best Chef: Southeast Semifinalist, Chef Todd Ginsberg,. Grab the traditional, but critically acclaimed, Rueben sandwich for lunch and come back for dinner on Friday nights for the Fried Chicken. Pull up a chair at the deli counter Wednesday through Friday and join Chef Jarrett Stieber, of Eat Me Speak Me, for a casual pop-up dining experience
The Painted Pin This restaurant is a British pub-inspired entertainment venue that includes 20 bowling lanes, an indoor gaming courtyard to play bocce ball and shuffleboard, and butler service. When it opens later this month, don’t expect regular bowling alley fair. If your stomach is growling right now, it’s probably telling you to pick up Gulp: Adventures on the Alimentary Canal by Mary Roach. Trust me on this: Gulp will be one of the most fascinating books you read this year. The book, a hilarious journey through the digestive system from the author who brought you Stiff: The Curious Lives of Human Cadavers, is a science book for people who aren’t really into science. Yes, the book covers topics that begin with the mouth and end with the…ahem…end. As you would expect, the gross-out stories are aplenty, but Mary Roach has an uncanny ability to avoid total crudeness even when she is cracking a fart joke. Like her book Stiff, Gulp uses humor to disarm us, keeping the goosebumps at bay while we read about taboo topics related to our bodies. She’s reverent towards the subject matter without being boring. She’s a wizard at explaining stuff you know nothing about. Roach is, after all, a layperson like you and me, but with a better vocabulary and a knack for puns.
being about my least favorite subject, was riveting. If the topic sounds disgusting to you, also know that I’m squeamish. Aside from a horrifying story about an eel and a dog, I was able to stomach the book (pun intended). I read all 300 pages in two days, then moved onto two more of her books over a week’s time. My mother was particularly surprised when I gave her a copy of Gulp for Mother’s Day. (“Kevin, why are you giving me a book about my colon?”) I can happily report, though, that she is now as big of a fan as I am.
If a science book doesn’t sound like it would appeal to you, know that science was my least favorite subject in school. (Sorry, Mrs. Gaskill!) This book, despite

I was able to meet Roach at the Arkansas Literary Festival with some of my coworkers from Literacy Mid-South. She spent more than 45 minutes with us, gabbing over beers at a party. She didn’t have to chat with us, as there were plenty more bestselling authors and publishers in the room. She was like talking to an old friend. I felt the same way reading her books. She is as charming and witty and quirky as she seems to be in her writing.
