The passage above from 2nd Samuel would seem to be a strange passage to discuss and promote the peace and prosperity of Memphis, but when 2nd Samuel was written, the inability to have children meant economic ruin and social embarrassment for a woman. Children meant someone to care for you in your old age, children meant social influence and power, and children meant protection. In this passage, David was rejoicing and worshipping the presence of the Lord returning to Jerusalem. His wife, Michal was embarrassed by his outward display of worship, and God denied her children with her husband. It is often said that the weekend worship services are the most segregated days of the week in Memphis. We raise our families while working together in the numerous education, medical, government and business jobs that make our city prosper. We support our sports teams together and work to raise money for the tremendous not-forprofit sector. But in our weekend worship, our city can seem to be a much divided city.

Memphis is blessed to have numerous churches and synagogues where our families worship; these worship services are as diverse in style and teaching methods as we have personalities in this city. On Saturday you will find a small number of Memphis citizens who shut off their phone and electronic devices, as they park their cars and walk to worship God. On Sunday, families all over the city will head to churches, large and small. These churches may have a “high church worship” brought by Anglican and Catholic immigrates to this country hundreds of years ago or they may have a “community celebration worship” whose roots were born out of slavery as they were introduced to a faith that offered freedom. There is a fast growing movement of churches whose members come from a blend of the two; these “contemporary worship” services are drawing people from all walks of faith. My family this past year has been worshipping in just such a contemporary worship service church. My wife and children enjoy the open, free-form of praise music and worship. The story from 2nd Samuel has been my guide as I have learned to enjoy the praise and worship of my new church without judging what I don’t understand. I submit that all of us in Memphis from time to time could learn from the lesson of 2nd Samuel to better appreciate the culturally diverse worship that is taking place every weekend all over the Mid-South and in doing so, we will build a stronger more loving city! “People will stare. Make it worth their while.”- Harry Winston The imagery of a child suffering from a life-threatening illness evokes powerful emotion. We all tear up when Marlo Thomas and the children of St. Jude appear on our televisions and ask for our help. We shutter at the thought of our children and families going through similar trials. We grieve for those patients and their loved ones. Those sentiments are pity. 4Memphis does not want your pity here today for Allie Allen or McKendree Walker. In fact, we are a little tired of it. Allie came to St. Jude Children’s Research Hospital in 2014 to be treated for anaplastic ependymoma, grade 3 brain cancer. She relapsed this year and has since stopped treatment. McKendree was diagnosed with papillary carcinoma in August 2011, relapsed in 2013, and while she is now in remission, she lost her boyfriend to osteosarcoma last year. Allie and McKendree are stunning teenage girls. No, not some derivative version of stunning because they are brave (they are) or they endure suffering with grace (they do). These girls are just pretty, strictly from a physical sense. Both of them could model; they have long lean limbs and expressive faces. They wear the clothes with confidence. Allie and McKendree made great models this month because they enjoyed the process, they looked beautiful, and they are above the hurdles life has placed before them. Allie has lost her hair from treatment, but she has not lost her sense of fashion or beauty: “Sure I have my days of feeling insecure for having no hair, but most days I am able to wake up and do my makeup and say, ‘I am beautiful and that is possible with this horrible disease.’” Likewise,
McKendree has a scar on her neck from her surgeries and treatments, but that does not keep her in turtlenecks or scarves. In fact, the 19-year-old fashionista works in retail and uses fashion as a way to express herself and maintain control of what she looks like and how she feels, saying, “My clothes tell my story, and they hold my memories, and those are not all about cancer, either.” When you see anyone visibly battling a disease or any debilitation, allow yourself one second for pity, and then smile. That does not define that individual. Allie and McKendree are inspiring for their grace under their personal circumstances, but they are also really beautiful girls that love to get glammed up and put on pretty clothes. They have more conversation to offer than their experiences with cancer and loss. They talked with me all day during the shoot about colors, patterns, cuts, and favorite denim. We did not waste more than two minutes on the sad stuff. That is my take away from that day. Pity is a wasted emotion. Inspiration is not. We all experience trials in life that could solicit pity. Why wallow in it? Why not put on pretty clothes and get dolled up. Be shallow, because that is deeper than self-pity. I am reminded of lyrics from a tune from the play La Cage Aux Folles: “So whenever I feel that my place in the world is beginning to crash, I apply one great stroke of mascara to my rather limp upper lash. And I can cope again. Good God, there’s hope again. Keep swiping another coat of mascara. Sometimes girls do not want to search for inner beauty; sometimes girls just want to be plain old beautiful. LES PASSES CABARET BALL
The 2016 Cabaret Ball touted “It’s 5 O’Clock Somewhere” for the annual black tie ball. The Les Passes winter gala and the fall Stock Exchange raises funds to support Kids on the Block and the Harwood Center. Kids on the Block is a troupe of life-sized puppets that educate children about bullying, abuse, drugs and children with disabilities, and the Harwood Center offers classes for pre-school children with developmental delays such as autism and Down’s Syndrome.

REMEMBERING JOHNNY’S PERFORMANCE IN COOPER-YOUNG by Sandi Butler Hughes | Photography by Frank Chin and courtesy of Roy Cash, Jr. Long before there was a boy named Sue, and before the Million Dollar Quartet gathered at the piano, an appliance-selling newlywed entered the side door of a church to play his first paid show. Before the Methodists became united, Galloway Methodist Church, at the corner of Walker Avenue and Cooper Street, hosted a fundraiser in December, 1954, and gave a music legend his start. The entertainment for the fundraiser was J.R. “John” Cash, Marshall Grant and Luther Perkins. In what could have been just another ordinary, long-forgotten little gathering of people doing good, instead became music history.
The show was a fundraiser organized by the Pioneer Class, a ladies Bible class, to fund the work of Methodist missionaries overseas. A church member had seen the musicians practicing at Automobile Sales, what is now Lit Restaurant Supply on Union Avenue. Individually, they weren’t accomplished musicians, but collectively, magic happened when they played. So as they called themselves for the first time that night, John Cash and the Tennessee Two were hired to play. The trio had been brought together by Roy Cash, Sr., John’s brother, and he was there that night to see the boys play their first gig. Roy Sr. also brought along his teenage son to see the show. That son, Roy Cash, Jr. was 14 years old at the time, and he distinctly remembers that night. “My father and I, we didn’t actually go down there with them in the same car, but we met them there. We met Johnny, whom we called J.R., that’s his birth name because he wasn’t even Johnny Cash at that time. He had taken the name but he had not recorded anything yet - we went down to the church, my dad and I.” Roy, Jr. recalls many of the songs played at fundraiser. “It was before Christmas, and Johnny did sing some Christmas songs, ‘Silent Night’ and others. It was mostly gospel songs, and I’m pretty sure he sang songs by Hank Snow and Ernest Tubb. I’m pretty sure he sang Ernest Tubb’s ‘Walking the Floor Over You,’ but it was mostly gospel since it was a fundraiser for the church.” The country songs Johnny played, Roy, Jr. also remembers hearing on the radio. “My father was what you would have to call a fanatic country music fan. In fact, he would not allow the radio to be tuned to any station other than a country music station at home. That’s about all we listened to on the radio. We listened to Bob Neal on WMC and KWAM. It was KWEM before it was KWAM. It was a family culture: country music.” The Galloway Methodist Church congregation formed in 1908, and the building was built in 1925. For decades, it was an anchor in the Cooper-Young community. In a recurring story of inner-city shifting demographics, the congregation dwindled, and Galloway permanently closed in 2008, with a century of dedicated Christian service and fond reminisces of members. While the church was no
more, the striking Romanesque Revival style building and the tremendous history remained. The property was purchased by Lifelink Memphis in late 2008. Ken Steorts and Sam Garrett renamed it Cooper-Walker Place and began restoring the building, and more importantly, preserving the spot of Johnny’s earliest performance. “In 2008, our church was able to buy that church that nobody wanted. There was a lot of ‘deferred maintenance’ as they call it. In other words, it was rotting away,” Ken said. Numerous improvements were made to the sizeable relic of music history, in an effort to save it and create a unique performance space with a storied past. “We are proud of the work we did, bringing it to this point. I’m proud of that and supportive of the future.” In mid-February, the building changed hands again and has been rechristened as Galloway House. The new owner, Mark Lovell has a desire and dedication to preserving this space and Johnny’s Memphis legacy. He also has a passion for the music, and is the man responsible for the first ever Memphis International Rockabilly Festival, held last August in the Edge District, near the rockabilly ground zero of Sun Studios. When he heard the church was up for sale, he acted quickly. “I was fortunate that I was able to get this property. I care about Memphis music, and I’m glad that I can save this building. I would hate to see it torn down to put up a high-rise or something,” Mark said. The red doorway with arched windows on Walker Avenue leads into the Methodist’s Fellowship Hall. It was in that space where a significant event in music history happened. No fanfare, no big spotlight, just an ordinary night when three musicians took a leap of faith, carried their gear through that door, and began their journey to impact music history. A historic marker will be dedicated at Galloway House on May 1st, another important date in the Johnny Cash story. It was on this date in 1956 that “I Walk The Line” was released. Johnny wrote the song as a pledge of devotion to his new bride, and it became his first song to hit number one. Plans are for a plaza with the marker and a seven-foot bronze statue to be erected next year. Eggs Hussarde 1 lb Pork loin Handful Fresh sage ½ gal Water Handful Fresh thyme ½ C Kosher salt 1 Garlic clove, smashed 1 C Sugar ½ gal Ice 1 oz Pink salt Combine all brine ingredients in a pot and bring to a boil to dissolve the sugar and salt. Take off heat and cool in refrigerator. Clean the pork loin of all fat and silver skin. Once brine is completely cool add the pork, weigh it down with a plate, cover and place in refrigeration. Leave in the brine for 48 hours. Pull out of brine, and tray on perforated sheet trays with racks. Pat dry, and place back in the walk in to dry overnight. Hot smoke the pork to an internal temperature of 150 degrees.
Marchand de Vin 1 Tbl Clarified butter 1 Tbl Fresh oregano, chopped ½ C Diced shallots 1 Tbl Fresh thyme, chopped 2 Garlic cloves, minced 1 Qt Veal stock ½ C Diced ham ½ Tbl Arrowroot ½ Qt Button mushrooms, sliced Water as needed 1 C Red wine Salt and pepper, to taste 1 Bay leaf Clean shallots, trimming the ends and discarding outer layer if necessary. Chop shallots and garlic in the bowl of the food processor. Fine dice the ham. Heat oil until hot but not smoking; add vegetables and ham, sauté for 5 minutes until shallots are soft but not browned. Add the mushrooms and cook until water from ham and mushrooms has evaporated. Add the wine and reduce to a quarter of original volume. Add the stock, add the herbs, bring to a boil, reduce heat to a simmer, and simmer for 45 minutes. Make slurry for water and arrowroot. Bring sauce back to a boil and add the slurry as needed until sauce coats the back of a spoon. Take off heat and add salt and pepper to taste. If sauce tastes flat add the juice of one lemon and taste again.

Fried Green Tomatoes 1 Green tomato, cored and sliced ¼” 1 C Corn flour 1 C Bread crumbs 1 tsp Cajun seasoning ½ C Buttermilk 2 Eggs Combine buttermilk and eggs, mix thoroughly to make “egg wash”. Combine corn flour and Cajun seasoning, mix thoroughly. Place sliced tomato in egg wash, drain and roll in corn flour with seasoning. Transfer back to egg wash then roll in bread crumbs. Place breaded tomato in a 350 degrees fryer and cook for 4 minutes or until golden brown. Remove from oil and pat dry with a paper towel.

Cover the bottom of a large oven safe skillet with oil and set over medium high heat. Once hot, lay duck legs skin side down and sear 1 to 2 minutes. Remove legs from pan and set aside. Add vegetables to the same pan and saute until translucent, about 2 minutes. Return duck legs to the pan skin side up. Add chicken stock, and bring to a boil. Transfer pan to a 300 degree oven and cook 45 minutes to 1 hour. Remove duck legs from liquid and set aside. Strain vegetables from liquid. Add vegetables and hoison sauce to a skillet and saute 2 to 3 minutes.

2 Eggs 1 ½ C warm milk 1/3 C butter, melted 1 tsp Vanilla extract
In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

For the Omelet 3 Eggs Pinch salt 1 tsp room temperature butter, plus ½ tsp for finishing omelet Crack eggs into a bowl, add salt and blend with a fork. Heat nonstick pan over medium-high heat. Once the pan is hot, add the butter and brush around the surface of the pan. Pour the eggs into the center of the pan and stir vigorously with a rubber spatula for 5 seconds. As soon as a semi-solid mass begins to form, lift the pan and move it around until the excess liquid pours off into the pan. Using a spatula, move it around the edge of the egg mixture to help shape into a round and loosen the edge. Shake the pan to loosen from the pan. Lift up the far edge of the pan and snap it back toward you. Using your spatula, fold over one-third of the omelet. Slide the omelet onto a plate and fold over so that the omelet is a tri-fold. Coat with the remaining butter and add gravy on top. For the Pheasant Sausage Gravy: 2 link pheasant sausage 4 shallots minced 5 cloves rosted garlic 1 cup demi glace (or similar brown
sauce) 2 tbs olive oil 1 cup black coffee ¼ cup cream
Dice sausage and add with the olive oil, mincing shallot and garlic to a sauté pan. Crisp sausage and brown shallots and garlic in the olive oil for about 5 minutes. Deglaze with black coffee and reduce by half. Add the cream and the brown sauce and bring to a simmer.

Potato, Goat Cheese & Tarragon Frittata 1 ½ Tbl Olive oil 1 large Shallot, thinly sliced 1 Red bliss potato, small diced 1 Red bell pepper, small diced 2 Tbl Fresh spinach, chiffonade
In an oven-safe, nonstick 8 inch skillet, olive oil over medium-high heat. Add in most of the shallot, reserving some for the salad dressing, as well as the potato and red bell pepper. Cook, stirring occasionally, until the potato is tender and cooked through. Add in the spinach and cook briefly until it wilts slightly.

Berry French Toast 2 Eggs 1 Tbl Milk 1 tsp sugar 4 slices Brioche bread 1 C Maple Syrup
6 Eggs ¼ C Milk or heavy cream 2 oz Goat cheese crumbles 2 tsp Fresh tarragon, finely chopped Salt and pepper
½ C Blueberries ½ C Strawberries, finely chopped ¼ C Light brown sugar 1 Tbl Cinnamon
Flatten brioche slices with a rolling pin. Next, add the chopped strawberries to one side of the bread and gently roll up. Stick a toothpick through to hold together. To prepare you batter, beat eggs with the milk and tsp of sugar. Gently coat your roll ups in the batter. Heat a nonstick skillet to medium-high heat and cook roll ups until they have a light crisp on all sides. When the roll ups are finished cooking, coat them in brown sugar and cinnamon. In a separate pan, heat maple syrup until it lightly bubbles and add blueberries. Turn heat off and let the berries steep for 5 minutes. Pour on top of roll ups and enjoy!
In a medium bowl, whisk together the eggs and milk until smooth. Stir in the goat cheese, tarragon and salt and pepper. Carefully pour the egg mixture over top of the vegetables, using a spatula to help spread out the vegetables evenly throughout the mixture. Lightly stir the egg mixture in the pan for 30 seconds then transfer to the oven. Cook for 15-20 minutes or until the eggs are set.
For Salad: 2 tsp White wine vinegar 1 Tbl Honey
1/3 C Olive oil Mixed spinach and arugula salad greens
While the frittata bakes, prepare the salad: finely mince the reserved shallot and place in a small bowl with the vinegar and honey. While whisking constantly, slowly pour in the olive oil in a slow and steady stream. Drizzle over the mixed spinach and arugula. Turn out the frittata on to a plate, cut into wedges and serve alongside the salad.
For the Billionaire’s Bacon: 12 strips thick cut bacon Maple syrup for brushing Light brown sugar Preheat the oven to 400 degrees. Brush the bacon with maple syrup and coat it with some light brown sugar. Arrange the slices on a rack over a baking tray (or a parchment-lined baking tray) and roast until the fat begins to render, 5 to 6 minutes. Rotate the pan and continue roasting until the bacon is crisp and brown, 5 to 10 minutes depending on the thickness of your bacon, then serve. March 2016 / 57

FIT & FAMILY University of Memphis Coach Mike Norvell Moves in as Head of House for Tiger Football By Stephanie Beliles, Photos courtesy of the University of Memphis At 34 years-old, Mike Norvell is an unlikely father of over 100 boys. However, this fledgling patriarch of the University of Memphis Football program is already causing quite the stir in his new hometown, expanding his field family with impressive aptitude. What is his secret? Mike Norvell genuinely loves the game, and more importantly, the guys who play it.

explain the impressive recruiting class he slapped together in his brief two month tenure as head coach. How impressive? The three-star running back Patrick Taylor, Jr., flipped his commitment from Colorado to Memphis, becoming the first running back to join Mike’s inaugural recruiting class as head coach. Atascocita wide receiver Coye Fairman, who has also committed to Memphis, is his first cousin. But the draw to Memphis ran deeper than that to Taylor, with him stating, “I just felt like family, you know? Going on an official (visit) for like two days, I already felt like I was part of the family.” Do not be discouraged that Paxton Lynch has moved on from the University of Memphis. Get excited. Mike remarks that the splash Lynch made last year, along with many returning offensive lineman and a coach who understands offensive coordination, makes Memphis a hugely desirable place for young quarterbacks that want to prove themselves. Memphis football offers a unique opportunity for that, and therefore Tiger football has a talented pen of quarterbacks for the 2016 season, including Riley Ferguson, a junior-college transfer who has already enrolled at Memphis, and David Moore of Milton High School in Alpharetta, Georgia. Add them to the mix of two talented redshirts on the roster, and it will be interesting to see which standout takes the top spot this season.
M
ike Norvell is from Dallas, TX, a place widely known to grow and cultivate the game of football. Like many Texan football fundamentalists, he has played and been obsessed with the sport since he was five. As a youngster, Mike gravitated to his coaches, reminiscing that the men who played for were “in the profession for the right reasons.” Many nights, Mike would spend dinners with his pee wee coaches talking schematics and other nuances of the game. In high school, Mike played under Mike Barber (Houston Oilers alum) at Arlington’s Grace Prep Academy, a high school renowned for winning records. “I knew by high school that I wanted to coach football, and to be a role model like my coaches were for me,” says Mike. He went on to play football for University of Central Arkansas, where he played wide receiver and set the school’s all-time reception record. However, even while playing in college, his ultimate goal was to coach and be the role model he felt destined to be. Mike got his golden opportunity as a graduate assistant, and he got to do it while staying in Conway, AR, at Central Arkansas. A year later, he went to Tulsa as a graduate assistant, where he worked his way up the ranks to a receiver coach and then passing coordinator. He then headed to Pittsburgh and then made his way to Arizona State as the Offensive Coordinator. However, it was when the University of Memphis made an offer to Mike to be the new head coach that the opportunity of his life came knocking. Now, as the new head coach for the University of Memphis, he draws on his ripened love of football logistics for his coaching techniques, and his earnest excitement is palpable. “Football has been the one constant in my life that really instilled my personal values. Many of the principles I have in life come from this game. That’s why I do what I do. And if you took relationships out of this game, I wouldn’t be doing it.” Mike’s love for the relationships, or “X’s and O’s” as he calls it, might 60 / 4Memphis
One of the most shocking (yet satisfying) surprises this year was signing Josh Perry, who committed to the University of Alabama only to sign a letter of intent at the last literal minute to the University of Memphis. Perry, a 6 foot 3 and 195 pounds safety, is the 45th-rated safety in the country and a consensus three star prospect. This valuable snag by Mike and his staff (beating out several Power Five programs) along with a handful of local Memphis standouts, has caused quite the buzz around Memphis. “I told Tim Hart (MUS linebacker committed to U of M) that he won’t experience a feeling like sacking his first quarterback in the Liberty Bowl. It will be electric. People will go crazy. This is his city. This is his support system. This is his home. There is such a huge pool of talent from around the Memphis area, and it excites me for them that these guys can look back 40 years from now and know they impacted their city. They have that achievement and weight on their backs.” Mike has expanded his team at his home as well. He and his wife Maria have a 22-month-old daughter Mila, and they bought a home in east Memphis “big enough to fit the whole team in,” a prerequisite he had during house hunting. A big fan of Memphis culture, Mike said the friendly nature of locals and the diversity in things to do made Memphis an emphatic “yes” for him and his family. Since then, they have fallen in love with Gus’ and Gibson’s, and he claims his figure needs adjusting to Memphis’ food scene. But it is mostly all about business at the Norvell homestead; Mike did not move here just for the barbeque. “When I sit and meet with the leaders and administrators of this school, it truly excites me, because I feel like we are completely on the same page,” beams Mike. This will come as a relief to Tiger fans and players alike that remember the program’s “dark ages,” playing the often-neglected stepchild to the basketball program. However, with new coaching and administration comes a new attitude, and that vitality has permeated through the city. Since the 2015 season, the expectation of what the University of Memphis football program should be has dramatically elevated. That higher bar is no threat to Mike Norvell. He is just excited to be here, and even more enthusiastic about the impression he can make. According to him, watching players graduate, become adults, and see their families grow is what impacts him and keeps him going. Of course, a few W’s would not hurt anything. “I believe that anything in life comes down to fit and family. You have to fit a place. There are great opportunities that just don’t fit. But everything about the University of Memphis and this program, where it’s headed and where we can go, is a perfect fit for me.”
