In Memory of Luis Enrique Aguilar Santos November 18, 1992 – February 14, 2015 Three years ago, my publisher Jim Walker strolled into a production meeting and announced that he had found an intern for me. I asked Jim to describe her to me, imagining a whip-smart, early-twenties fashionista with a BA in communications. Instead, I received the following message: “Well, he’s a nineteen-year-old boy who is majoring in computer science. He is a patient at St. Jude with my daughter. Oh, and he’s Honduran.” My bubble was burst, and I called no less than five people post-meeting to complain about my plight. No, Luis Aguilar is not the name of my ideal employee for a lifestyle magazine. Luis Aguilar is the name of my redeemer. Luis came to Memphis a sick young man. At home in Honduras and at the peak of his collegiate soccer career, he was diagnosed with osteosarcoma. Only by the grace of God, the tenacity of his mother Berta, and the reception of St. Jude did Luis and his family make it to Memphis. Luis’ mischievous smile and relentless positivity won over many hearts, and that includes the heart of Jim’s daughter, McKendree. As fate had it, McKendree was also a St. Jude patient, and together, Luis and McKendree spent their time singing and playing guitar for the younger patients, offering them and their families a ray of optimism in a time where many may see none. Over the next several years, the two became inseparable and formed a bond created by a love for the Lord and the struggles they gracefully endured. Over the years, I graduated to where I not only depended on Luis for magazine support, but for spiritual support as well. Throughout the roller coaster ride of his remissions and relapses, cancer never shook Luis’ faith in God and the absolutism of His plan. It is still remarkable to me that someone so young could be so resolved in their faith. Luis and McKendree were seen praying and praising when others might drift in despair. He never spoke of being slighted. He never questioned God. Instead, he continued in his mission to care for the younger patients at St. Jude, making sure a smile was on every face he encountered. It was powerful not only to me, but to everyone who met him (including Justin Timberlake). Luis quickly became the Big Man on Campus at St. Jude, and I happily shared him with ALSAC as he often made appearances and told his story on behalf of the organization. Luis and his outlook motivated me to undergo the process of my own spiritual makeover. On February 15th, 2013, I had a nasty breakup, and I leaned on Luis for support. He patiently listened, and he helped me piece together my next steps, all the while assuring me that God has a plan for me. What he did not tell me is that only 24 hours earlier, on the 14th of February, his scans from St. Jude came back, and his cancer had returned, having spread to his lungs. He did not want to tell me he was no longer in remission, and so I heard the tragic news elsewhere. You see, Luis was so selfless that he carried his cross silently while letting me further burden him with mine. “Everyone’s hardships are their own, and they are not any better or worse than anyone else’s,” he said. We lost Luis Aguilar on Valentine’s Day, February 14th, 2015, exactly two years later, to his longstanding battle with cancer.
Luis Aguilar embodies the ideals of what 4Memphis is looking to accomplish with the Memphis Love Challenge. He was selfless, often sacrificing time and comfort for those around him. There are countless “Luis Legends”: he personally donated his Christmas gifts to the patients at the children’s hospital in Honduras because they did not have as much. He had meaningful conversation with the children who were frightened at St. Jude, sometimes being the difference between crying all night and a peaceful sleep. He led prayer circles and sing-alongs while hooked up to his chemotherapy. He ignored pain and fatigue to escort his girlfriend to cotillion. Luis’ random acts of kindness were limitless, and his courage inspiring. The effect he has had on the Walker family, the 4Memphis and St. Jude staff, and the Memphis community is too profound to communicate. Luis’ ultimate goal was to really live, even while dying, famously saying, “Where there is a pulse, there is a purpose.” Luis continues to live on in the numerous lives he touched; he is every kind deed, every smile, and every ounce of optimism we put out into the world. I will forever be touched and changed by my young Honduran intern whose enthusiasm and devotion to Christ is one that many will never achieve in their lifetime. We dedicate this issue to the spirit of one of the greatest men to have walked into our lives and taught us how to live. With love as big as Luis’ love, Stephanie Beliles, Editor I am not there. I do not sleep. I am a thousand winds that blow. I am the diamond glints on snow. I am the sunlight on ripened grain. I am the gentle autumn rain. When you awaken in the morning’s hush I am the swift uplifting rush Of quiet birds in circled flight. I am the soft stars that shine at night. Do not stand at my grave and cry; I am not there. Literacy Is Key A Book & Author Affair Photography by Mark O. Ramirez This 5th annual event is a very popular fundraising luncheon that is the local philanthropy of Kappa Kappa Gamma Fraternity. The renowned featured authors at this year’s luncheon were Patti Callahan Henry, Natalie Baszile, and Michael Farris Smith. Over 500 book-loving guests gathered at the U of M Holiday Inn to raise funds to help promote literacy in Memphis. The beneficiaries of the luncheon are First Book and Literacy Mid-South, with over $80,000 being raised in the first four years. Thank you, Kappa Kappa Gamma, for supporting literacy in Memphis.

My 21 Day Challenge with Ultimate Foods By Stephanie Beliles
In Memphis and modern society, people’s time is stretched thin. Many households have two working parents (or one working single parent) that juggle careers and carpool. Even singles feel stretched on time and energy. In a world that is fast-paced and packed with deadlines, nutrition can often take a backseat to itineraries. However, the people of Ultimate Foods in Memphis advertise they have got you covered, no matter how tight your schedule is. They will even deliver your orders to your door! As a busy editor, volunteer and workout enthusiast, I took up Ultimate Foods on their challenge: their 21 Day Challenge, to be exact. Ultimate Foods is Memphis’ one stop shop for healthy eating. They provide you with fresh, premade meals that are sourced from responsible and sometimes even local ingredients. I arrived at their Cordova location on January 28th with a pit in my stomach. I, like most Memphians, have a deep appreciation for food, and that rarely is extended to rabbit or diet food. However, upon entering their storefront and peering into their refrigerated cases, my mind was put at some ease. There was a surplus of variety, all with delicious presentations. Slightly reassured, I sat down with owners Richard McCracken and Nick Harmeier, who say that it all started with a fabulous bowl of low-fat chili. Richard’s famous chili was so popular with friends that he started researching other foods and figuring out ways to make them nutritious and diet-friendly. Those kitchen creations snowballed into his and partner Nick’s startup up company, Ultimate Foods, with locations now in downtown Memphis, Cordova, and a new location opening in East Memphis this month. An avid weight lifter and generally active guy, Richard is conscious of what he eats. However, as a Memphian who loves food, he is also aware that flavor and feeling satisfied is hugely important. “We take food that people here are used to eating and make it healthy,” notes Richard. For example, one of their more popular dishes is the Ultimate Foods lasagna. They use rice noodle pasta rather that wheat pasta, and use only one roll of pasta in the dish’s layers. The other layers consist of summer squash and zucchini, ground turkey and a fresh marinara sauce. Another hearty yet delicious dish is their Buffalo Chicken Wrap. They substitute sour cream with Greek yogurt and use a whole wheat wrap instead of a flour tortilla. Their menu, which can be found on goultimatefoods.com, boasts a bevy of yummy food with creative rethinking of their ingredients. Much of what makes Ultimate Foods a successful tool in dieting and healthy eating is their portions. All meals, including breakfast, lunch and dinner, come

in small and medium portions. They all have their calorie and glycemic information on the side, as well as the date by which to eat them. Like many people, I had no idea what my caloric intake should be in order to be consistent with my goal. Luckily, upon entering the store, the staff has customers step on a high-tech scale that not only measures weight, but body fat percentage, water weight and muscle percentage as well. While that can be intimidating, the knowledge one can gain on his or her body is crucial to success. For example, my goal was not to lose more than a few pounds, but to tone my body. Keeping up with my body fat and muscle percentages is useful in knowing my progress as well as what foods I should be eating. The staff at Ultimate Foods have noticed that people will come in frustrated because they eat very healthy foods but see no results; this is because that while the foods are nutritious, their portions are too large and, therefore, they are eating too many calories. Ultimate Foods is an advocate of the 40-40-20 plan, which is the ideal blend of 40% proteins, 40% carbohydrates and 20% fats. “A lot of times, people will go on a diet, like a low carb diet for example, and deprive their body of the carbohydrates that it needs,” says Richard. “So when they go back to a regular diet, their body rebounds in a way where they will gain back weight super quickly. A 40-40-20 diet is a great blend that is healthy and doesn’t leave your body storing up anything it’s been deprived of.” Basket in hand, I loaded up my first work week’s worth of foods. I grabbed breakfast, lunch, dinner and two snacks for each day, and that looked like a ton of food to me. “Eating five times a day is optimal for weight loss and properly fueling your body,” says Ultimate Foods Marketing Director Shannon Leeke. The body is never shocked by being too full or hungry, and therefore it does not need to store any fat or carbohydrates. During my first week, I found myself not only really enjoying the food (they make chocolate and almond butter cups, for goodness sake!), but I sometimes could not even finish my meals. My energy level sky rocketed, and I was truly able to sleep through the night, something that I have not done in months. My workouts felt better, and my running felt more fluid. Even my skin looked brighter. When I went in for my weekly check-in, I discovered that I had lost three pounds, went down a percentage in body fat, and went up a percentage in muscle tone. I also must admit that I cheated once (ok, twice) due to work dinners. My subsequent weeks resembled that success, too, and I will continue to incorporate Ultimate Foods into my lifestyle. One of the most extravagant parties is the annual Cirque du CMOM, and this year was no exception! Dr. Scott Morris, a family practice physician and an ordained minister, was compelled by his love of medicine and desire to minister to the less fortunate. He researched and compiled information on areas and demographics that most needed affordable health care, and Memphis landed at the top of his list. St. John’s Methodist Church, where Dr. Morris still acts as associate pastor, purchased the Center’s first building: a dilapidated boarding house across the street from the church. St. John’s agreed to lease it to the Center for $1 per year. In 1987, Dr. Morris opened the doors to the Church Health Center, a resource for working uninsured and underprivileged locals. Dr. Morris and one nurse saw 12 patients, and since then the Church Health Center has grown to handle more than 42,000 patient visits at its clinic each year. With the aid of generous medical staff and a motivated group of volunteers, the Church Health Center is on the fast track to expanding the footprint in the years to come. The Church Health Center believes people have a responsibility to take care of the bodies God gave them, and so they have been committed from their start to health education and illness prevention. Dr. Morris realized that the clinical aspect of his mission was not enough to keep Memphians on the right path to health success. Being healthy is a lifestyle, and from the idea, Dr. Morris necessitated an outreach that would help patients continue on their journey to good health. Church Health Center Wellness is a certified Medical Fitness Facility, thus enabling them to provide programs that are safe and effective for people with health conditions like diabetes, hypertension and obesity. They work with doctors to provide the right resources and programming. By taking this approach, they are a supportive community focused on helping the community reach its highest level of wellness. Their wellness ministry offers everything from personalized exercise plans and cooking classes to group exercise classes and activities for children and teens. Church Health Center Wellness is open to the entire community with fees charged on a sliding scale based on family size and income. More than 125,000 member visits are recorded annually.

The Wellness facility is nothing short of a state-of-the-art gym. The indoor pool is pristine. The yoga and group class studios are warm and inviting. The workout room is a huge area with ultramodern equipment, tons of treadmills, elliptical and bikes, and even a full-sized basketball court. However, what really sets the Church Health Centers Wellness facility apart from other gyms (aside from the bargain price) is their staff. Trainers are available for members on every level, whether it is to burn a few extra calories or adjust your workout to your diabetes or neuropathy. Jeff Hulett, Communications Manager for the Church Health Center, says there are countless warm and fuzzy success stories from their organization. However, after a pause, he retells the story of Alene. Alene Henderson started going to the Church Health Center Wellness facility three years ago, spending her Monday through Saturday sitting quietly under a nook beneath the stairs. True, Alene made the first step by walking through the doors, but her day-after-day routine of watching others make use of the Wellness center was not doing her any favors. Alene sat underneath those stairs

for nearly a year before she actually took advantage of the Wellness facility as a resource. Her friend Virgie, the unofficial Wellness facility mascot (and relentless encourager) saw Alene sitting under the stairs in her wheelchair literally watching life pass her by, and she told Alene that her sedentary tendencies were not up to par. Virgie pressed Alene into moving and to finding a way to get out of her wheelchair and reclaim her life. That wheelchair is now collecting dust in Alene’s home, and it serves as a reminder of how far she has come in her health achievements. Alene has now shed over 100 pounds of excess weight by learning about portion control at the Church Health Center Wellness facility. She is versed on utensils and practices in the kitchen that help to reduce her sugar, sodium and fat intake. Alene also thanks her now dear friend Virgie for motivating her to get moving and exercise, saying, “Something lifted up in my body,” Alene says. “It was so strange, but it was a relief. I thought I was crazy at first, but then the next week during my [Exercise and Movement] class, someone told me they felt the same way, and I was like, ‘Whew, Alene ain’t crazy.’” Alene, like many others that take advantage of the Church Health Center, have taken their healthy habits home. In fact, Alene’s husband has lost weight, despite not being a Wellness center frequenter: Alene took her healthy cooking practices home with her. Alene is a testament to the power of the health ministry at work at the Church Health Center. Alene and others now understand that living healthily is more
than counting calories in a vacuum and going that one more compulsory mile on the treadmill. Because of her hard work, the encouragement of her friends, and the support of their donors, the Church Health Center is transforming the face of healthcare in America. The Church Health Center and its different departments, including the Wellness complex, fundraising, dentistry, and their outpatient clinic are currently spread across Memphis in different facilities. However, they are excited to announce that they have inked a deal for a 50,000 square foot space in the new Crosstown building in the Midtown area. Dubbed a “vertical urban village,” Crosstown will host residential space, artists, the Memphis Teacher Residency, and the Church Health Center, thus fulfilling their mission to provide Memphis with arts, education and healthcare all in one space. Having recently celebrated the groundbreaking in February, the Church Health Center is looking to unite their different organizational sects under that roof by early 2017. The Center’s new space will provide wonderful opportunity to a community that needs every healthy handout they can get. The Church Health Center and their commitment to the community is more than deserving of being named the Memphis Love Challenge recipient for March. An Evening with Ben Carson Palmer Home for Children Photography by Mark O. Ramirez It was an exciting evening as supporters of the Palmer Home for Children gathered in late January at the Hilton Hotel to hear about Palmer Home’s entry to the Tennessee Childcare Ministry through Jonah’s Journey. Jonah’s Journey is a private foster care program that raises children whose mothers have been incarcerated in the Tennessee Prison System. In addition to hearing about Palmer’s exciting new ministry, the guests were treated to a night of special entertainment. Jimmy Wayne, a best selling author and country music singer and songwriter, performed. His mission is to bring awareness to kids who “age out” of the foster care system and become homeless, a plight he too once faced. The keynote speaker was renowned Johns Hopkins neurosurgeon and political figure Dr. Ben Carson. He shared his story of being raised in poverty by a hard-working single mother who set the course of his life by insisting that he rise above his background through education and trust in God.

While the western border of our great state of Tennessee is the Mississippi River, it is much more than a geographical placeholder. It is our lifeblood and our identity. From the Indian villages and early settlements to modern day cities, the River has defined our West Tennessee culture, industry, recreation, and tourism. Numerous facets of the River merge and flow together, and with a ripple effect each aspect impacts another. The Mississippi River Corridor-Tennessee was established to collect these diverse River resources into a single, Bootheel-to-the-Delta package. Think of this complex organization as a giant umbrella, covering the entire Tennessee section of the Mississippi River, preserving, enhancing, and promoting our abundant river resources. Like the tributaries that join the flow and combine to form the Mighty Mississippi, these diverse communities create one defining and vital entity: the Mississippi River Corridor-Tennessee.
The Mississippi River Corridor-Tennessee (MRCT) encompasses six counties along the River: Shelby, Tipton, Lauderdale, Dyer, Lake, and Obion. The area is rich with activities and attractions. Many of the assets supported and promoted by the MRCT already exist, and the Corridor organization simply includes them as a part of the whole Corridor package. As we learned in kindergarten, life works better when we work together. So rather than each of these assets and attractions working independently, the MRCT is creating a single “product” to preserve and market our largest - and most lucrative – natural resource on this end of the state.

Diana Threadgill is the visionary, President and Executive Director, of this 501(C) (3) nonprofit organization. After a successful career in the state and local film/ television industries, she brought that passion and experience into the creation of the MRCT in 2005. She sees a collective asset that is good for all, not just a single county or individual destination. “Many of the assets needed to make the Mississippi River Corridor and Great River Road – National Scenic Byway an international tourist destination already exist in West Tennessee. Our challenge has been to create a single brand product in the Corridor for visitors seeking authentic cultural experiences and outdoor recreational opportunities that are easily recognized and located by the user. We believe the addition of Bass Pro at the Pyramid will greatly enhance that unique brand recognition,” she explains.
To understand the scope of the MRCT, it is best to identify the seven project focus categories that fall under their umbrella: First on the list is Economic Development, encompassing tourism, employment opportunities, workforce development and support for locally produced products; 2) Transportation and Infrastructure, including construction of facilities, bridges and the future I-69 interstate connections with new access ramps into the Corridor; 3) Conservation and Environment with protection for wildlife habitat, bluff vista outlooks, trail creation, and reduction of emissions on land and water; 4) Recreation for hikers, bikers, kayakers, bird watchers, and more with options for all; 5) Heritage Development and Cultural Amenities including the Tennessee Civil War National Heritage Area, numerous museums and cultural centers; 6) Health and Wellness with activities related to healthy lifestyles and spiritual renewal ; 7) Education with interpretive River Centers, tours and their alliance/partnership with the Mid-South Outdoor Recreation and Education (MORE) program that teaches school-age children responsible stewardship.

Great River Road National Scenic Byway continues S into Mississippi on US-61
areas. After agriculture, the tourism industry is listed as the 2nd top generator for economic development in the State of Tennessee. According to the Tennessee Department of Tourist Development, 2013 tourism dollars generated a $16.7 billion economic impact to the state’s economy. The MRCT strives to capture and increase this revenue to benefit all communities within their six Corridor counties. By presenting the tourism options that are available as a “single product,” tourists can easily find what fits their desires, whether it is watching migratory birds, kayaking or visiting a museum. A major component of MRCT’s tourism-driven economic development is the designation of the Tennessee segment the Great River Road. The organization wrote the Corridor Management Plan for Tennessee, submitted the plan to the FHWA and the State was awarded the coveted National Scenic Byway designation for the GRR in 2009. (As you drive along Riverside Drive, you may have noticed the signs with a ship’s wheel and riverboat illustration.) The Great River Road is part of the National Scenic Byway program, a collection of state and local roads which follow the course of the Mississippi River through ten states. It is much more than simply a single road focused on getting from Point A to Point B. It encompasses the regions surrounding the Great River Road, and traveling the Road is pretty much the opposite of interstate travel. It really is about the journey as points of historic, natural, and cultural interest encourage stopping and exploring along the route. Local bike riders and cross-country cyclists are also benefiting from the work of the MRCT. Their Shelby County Trail Plan (bike) was produced in partnership with the University of Memphis and the Memphis Regional Design Center. The Trail Plan involved extensive GIS mapping, field survey work and new bike lane recommendations. The Shelby County Trail Plan was formally adopted by the Mississippi River Trail (MRT) route in 2012. Much like the Great River Road for automobiles, this trail

is for bicycle travel (some of the trail also utilizes roads shared with cars). The Mississippi River Trail enters Shelby County near Millington, Tennessee, and currently travels south into the State of Mississippi. The route will be updated to include a cross over to Arkansas when the much anticipated Harahan Bridge project is completed in 2017. Additional highlights in other Tennessee counties supported by the Mississippi River Corridor-Tennessee include: the construction of a new $2M Interpretive Visitors Center at Reelfoot Lake State Park which will serve as a northern gateway and destination point for multistate visitors traveling along the Great River Road; a Lauderdale County Environmental and Economic Plan that makes recommendations for new recreational and eco-tourism destinations in the county; construction of a Dyersburg River Center and boat dock on the Forked Deer River (water trail) to the Mississippi River; design, production and installation of a new lobby exhibition at the Fort Pillow State Historic Park –Visitors Center/Museum. And that was just in 2014! The key project categories that guide the unique project work of the MRCT are broad and diverse, yet interwoven. Threadgill sums up the organization: “The primary objectives of the Mississippi River Corridor-Tennessee (MRCT) are essentially to create environmental public awareness and concern for the health of our Mississippi River, and to strengthen their connectivity (physical and cultural) to the river. We do this by giving residents and visitors places to go along the river, reasons to go there and clear routes to get there.”

Giving toys to sick children is not a solution, but it is certainly a comforting distraction. Along Bunny Lane in Le Bonheur Children’s Hospital, it is a beloved tradition that patients and their parents appreciate tremendously in a time of need. The Le Bonheur Club is the group of volunteers who stock and maintain Bunny Lane, and these dedicated ladies have made an impact on Le Bonheur patients since the very beginning of the hospital. In fact, Le Bonheur Children’s Hospital was founded by the Le Bonheur Club, not the other way around. The club started in 1923, and their first project was sewing for Leath Orphanage. They began to talk and dream of a children’s hospital to serve the Mid-South. In 1944, they began fundraising. In a mere eight years, Le Bonheur Children’s Hospital opened in 1952. For decades the Bunny Room, now Bunny Lane, has been a vital part of the hospital. If you’re not familiar with Bunny Lane, this is how it works: as a child is prepped for surgery and taken to the operating room, they are wheeled through the lane, lined with glass-front cabinets filled with toys. The patient selects their toy, and they are given the toy right then. For younger kids, it is a comfort to hold and cuddle a soft, stuffed animal. For older kids, it is a welcomed distraction from the anxiety of going into surgery. Every child, regardless of their age, receives a toy. Patients, some as old as 18, need a toy and the love represented by the gift, even though their “toys” now often take the form of Amazon or iTunes gift cards. When the children wake up in the recovery area, their toy is right there, waiting on them. Even if you haven’t been to the hospital since you were a kid, the hospital’s changes are still visible as you drive west on Poplar Avenue. In 2010, Le Bonheur expanded their services, and the number of surgeries has tripled since the expansion. Today, there are 80-90 surgeries performed daily (13,000 per year), up from 30 per day before the expansion. And every surgery patient goes through Bunny Lane and chooses a toy. Peggy Lovell is the current President of the club, and she oversees the $90,000 budget it takes to keep Bunny Lane stocked with toys. “Just as the surgeries have tripled, so has the need for toys,” she explained. It may come as a surprise to many Memphians, but Le Bonheur shares their state-of-the-art facility with another local hospital:
St. Jude Children’s Research Hospital. St. Jude patients with brain tumors requiring surgery are treated at Le Bonheur, including the pre-surgery-trip through Bunny Lane. This synergy has also increased the need for toys as all patients choose a toy, regardless of whether they are St. Jude or Le Bonheur patients. In addition to the rise in the number of patients served by Le Bonheur, inflation has come to Bunny Lane too. The price of toys risen significantly. The average price was $7 and is now over $10 per toy. Technology has also changed the toys that are desired, particularly with older patients, and those are more costly too. “Le Bonheur Club, at its core value, we help Le Bonheur help kids. Bunny Lane epitomizes that. It’s what we do best, and it lasts generations,” Peggy says. She shared a story of a recent speaker at a club event. A grown man came to tell his story about his experience as a child at Le Bonheur. For years, that grown man had kept the stuffed animal he had gotten in the Bunny Room. Now as a father himself, that treasured stuffed animal is his child’s favorite! For two weeks before Easter, the Le Bonheur Club is reaching out to the Memphis community. They are holding a City Toy Drive to collect toys for Bunny Lane. They are partnering with the Booksellers at Laurelwood, Cotton Tails, and Social that are generously serving as drop off points for toy donations. (See sidebar for additional information.) For the Le Bonheur Club, these women work diligently to support this time-tested tradition that impacts generations of Mid-South residents. For the young Le Bonheur Children’s Hospital patients, Bunny Lane is about caring and comfort, and that is what makes these playthings so much more than simply toys.

Grilled Chicken Arugula Salad Hard Rock Cafe 4 c Baby arugula lettuce 1 Orange, peeled and segmented ¼ c Spiced pecans ¼ c Dried cranberries
4 tbl Feta cheese 4 oz Chicken breast 2 ½ oz Lemon Balsamic Vinaigrette Dressing
In a large mixing bowl, gently toss all ingredients, reserving some cheese and dressing to add when serving. Once mixed, place salad into a salad bowl, mounding it towards the center. Drizzle ½ oz of Lemon Balsamic Vinaigrette Dressing over the salad and sprinkle Feta cheese over the salad and serve immediately.
Lemon Balsamic Vinaigrette Dressing ¼ c Fresh lemon juice 1 ½ cups White balsamic 2 tbl Lemon zest, grated vinaigrette ¼ c Parsley, chopped In a stainless steel bowl, add ¼ cup of lemon juice, lemon zest, parsley, and add in white balsamic vinaigrette while stirring with wire whip to fully incorporate.

Pan Seared Wild Salmon with Chili Lime Sautéed Vegetables Bleu Restaurant & Lounge 4 6-8oz Wild salmon fillet 1 cup Julienne zucchini 1 cup Julienne yellow squash ½ Julienne bell pepper (or 2 oz Peruvian sweety drop peppers)
3 each Baby bok choy 4 oz Chili lime vinaigrette Salt and pepper to taste 3 oz Sesame oil Chopped green onions for garnish.
Preheat oven to 350 degrees. In a hot skillet, drizzle 2 oz of sesame oil; season salmon with salt and pepper. Place salmon the belly side down in the skillet and place in the oven for about 6-8 minutes until the fillet is to desired temperature. In another hot skillet, add the remaining sesame oil and add the vegetables for about 2 minutes or until al dente. Put vegetables into a bowl and season with salt and pepper, add the chili lime vinaigrette and toss. Top with salmon fillets; sprinkle with green onions for garnish. Chili Lime Sauce 3 tbl Shriacha sauce 1.5 cups Soy sauce 1.5 cups Sweet chili sauce 3 Lemons, zest and juice 3 Limes, zest and juice

In a mixing bowl, mix all the ingredients and use as needed for salads, fish, chicken or vegetables.

Seared Tuna with Shiitake & Heirloom Carrot Kim Chee, Tomato Crab Salad Erling Jensen’s For Sherry Herb Vinaigrette ¼ cup Sherry vinegar 1 tbl Chopped dill 1 tbl Chopped flat leaf parsley
1 tbl Mustard 1 ¼ c Olive oil Mix all ingredients and set aside.
For Confit Tomato Salad 1 Whole tomato 3 oz Lump crab Prepare tomato by scoring the bottom and coring the tomato. Blanch in boiling water until skin blisters, shock in ice water. Remove skin, cut into quarters and remove seeds. Toss with sherry herb vinaigrette and crab. Reserve. For Shiitake and Carrot Kim Chee 1 lb Shiitake mushroom, quartered 1 lb Heirloom baby carrots 1 lb Baby bok choy 1 tbl Pickled ginger, chopped
10 Whole cloves roasted garlic 3 tbl Rice wine vinegar 3 tbl Sesame oil ½ lb Arugula
Prepare the shiitake and carrots with the vinaigrette by mixing the sesame oil with the rice vinegar. Add in the pickled ginger, bok choy and arugula. Let stand in the refrigerator for several hours. Prepare a piece of tuna for searing by seasoning with salt, white pepper, crushed garlic and fresh chopped thyme. Sear on both sides and cook to your desired temperature. Slice and serve over your prepared salads.
Crab & Pecan Encrusted Red Fish with Citrus Salad Itta Bena 1 seven oz red fish filet ¼ c lump crab meat ¼ c pecan halves 1 tbl oil 1 c mesclun greens
1 orange, peeled ¼ c balsamic vinegar ½ c olive oil 1 tsp honey Salt and pepper
Set a saute pan over medium to high heat and cover the bottom with oil. Once hot, carefully lay down red fish filet. Sear about 1 min. Then flip it over. Sprinkle fish with pecans and crab, and place skillet in a 400° oven for 6 to 8 minutes. In a mixing bowl, combine balsamic and honey. Then slowly add olive oil while whisking to emulsify. Add greens and orange wedges and toss. Serve fish over citrus salad.
Greek Island Pita Jim’s Place Grille For the Pita: 1 Eggplant per serving, cubed 1 Zucchini, sliced 1 Red bell pepper, sliced
1 Tomato 1 Swiss cheese slice per serving Fresh Pita bread
Begin with lightly sautéing the vegetables, then char-grill to finish cooking. In the pita, place a slice of Swiss cheese then add hot vegetables to melt the cheese. Top with Jim’s Tzatziki Sauce. For the Jim’s Tzatziki Sauce: 2 cucumbers, peeled, seeded, chopped Juice of 2 lemons fine 1 ½ c sour cream 1 oz fresh dill, chopped 1 c plain Greek yogurt 3 garlic gloves, chopped fine 1 bunch parsley leaves, chopped fine Mix well and chill for at least two hours; top the vegetables in the Greek Island Pita. This sauce can also be served with grilled meats or used as a dip for raw vegetables.

For the Eggplant: 1 Eggplant per serving 1 c Panko bread crumbs
1 c shredded parmesan cheese Egg wash
Peel the skin off the eggplant and slice into medallions (discs). Place the medallions in egg wash and then roll in prepared breading of Panko bread crumbs and parmesan cheese. Fry in a deep fryer until golden brown (approx. 4 minutes at 350 degrees). Place the fried eggplant on a bed of Piquant sauce.
For the Piquant Sauce: 1 tsp olive oil 1 c diced tomatoes 1 c roasted red peppers ¼ red onion (diced) ½ cup Dry Vermouth 1 oz. shrimp base
½ tbl chicken base 2 oz of jumbo lump crab meat Hollandaise sauce to taste dash of Tobasco pinch of Cayenne
Heat the olive oil and sauté onions, garlic, tomatoes, and red pepper. Reduce heat and simmer 20 minutes. Stir in vermouth and bases simmer 10 minutes more. Add Tabasco and cayenne then mix with immersion blender until smooth. Sautee crab meat in butter. Place on top of golden eggplant medallions, and ladle 2 oz. Hollandaise on top of the crab meat. Garnish with fresh basil.

2 five oz turbot fillets 1 cup green beans, trimmed and cut into 1” pieces 5 oz rainbow carrots, julienned 1 small shallot, sliced thin 1 tbl tarragon, minced
1 tbl stone ground mustard 1 ½ tsp white balsamic vinegar ½ tsp fresh ground black pepper, or to taste Lemon Wedges, for serving
Preheat oven to 350 degrees. Cut two rectangles of parchment paper, about 12-13 inches in length. In a medium bowl, whisk together the mustard and vinegar, reserving 2 spoonfuls for the top of the fish. Toss together the green beans, carrots, shallots and tarragon (saving some for garnish). Season with cracked black pepper. Place half of the veggie mixture neat the front half of each parchment sheet. Top with a turbot fillet and spread the reserved mustard mixture on top. Garnish with reserved tarragon and cracked black pepper, if desired. Carefully fold over the parchment sheet over the fish. Working on one side, carefully turn and crimp the edges of the parchment together, forming a pouch. Transfer the pouches to a baking sheet. Bake in the oven for 15-20 minutes (depending on the thickness of the fillet) or until an internal thermometer registers 155F. Serve with whole grain couscous and a squeeze of lemon.

The little things are what you notice the most on a horseback ride in the Cerrillos hills just outside of Santa Fe: the steady clip-clop of horses’ hooves. The whistle of the chilly wind contrasted with the warmth of the New Mexico sun on one’s face. The buttery-suede softness when you stroke a horse’s muzzle. Such simple, authentic, pleasures are everywhere you look here; Santa Fe is the definition of serenity, a town that beckons with the promise of soothing spas and contemplative art, of simple architecture and of stunning natural beauty. It’s easy to disconnect here, both from digital devices and from the stressors of the outside world, and the best way to begin is simply by taking a walk through town. Many of our favorite hotels, including La Posada de Santa Fe, La Fonda and the Inn and Spa at Loretto, and are located within a few blocks of the plaza. The graceful lines of the adobe buildings create a visually peaceful backdrop, their muted colors seemingly the perfect canvas for the shocking pink of blooming flowers and the bright blue of the wide New Mexico sky. A stop at the Loretto Chapel reveals the story of one of Santa Fe’s best-loved stories – the legend of the Loretto staircase. When the Loretto Chapel was completed in 1878, there was no way to access the choir loft twenty-two feet above, and although local carpenters were consulted, none had a solution – other than a ladder. Legend has it that the sisters made a novena to St. Joseph, the patron saint of carpenters, and soon a man appeared at the chapel, looking for work. A beautiful spiral staircase – built with only wooden pegs and with no visible means of support – was finished in a few months. The carpenter disappeared without collecting his pay, and to this day he has never been identified. Small shops line the square and the roads leading off of it (art lovers will have to work a little harder to get to the fine galleries on Canyon Road) and a must-stop is the Georgia O’Keeffe Museum, a matter of a few blocks north and west of the plaza. The permanent collection at the museum includes 94 of O’Keeffe’s paintings, as well as hundreds of other works

in other mediums, plus an array of her personal belongings that document her life. Santa Fe is synonymous with spa-going, and one is hard pressed to find a better spa experience anywhere in the world. Many hotels offer full-service spas and spa & stay packages, and it’s not considered indulgent – but rather healthy – to book multiple treatment days at multiple spas. Ten Thousand Waves is perhaps the most well known of the non-hotel spas, and it’s a treat. Located just outside of town, the Japanesestyle spa features distinctive architecture, shared or private outdoor hot tubs, and an array of traditional Japanese body treatments and skin care. Connecting spa treatments to nature is just what they do at spas in Santa Fe, so oftentimes the windows of a treatment room will be thrown open to draw in the crisp air, or a massage will move outdoors, maybe under a tent but still offering privacy. Like O’Keeffe’s stunning paintings and the locally found natural ingredients in spa products, the lure of nature is everywhere. The Sangre de Cristo mountains rise from the east of Santa Fe, and the Sandia Peak is to the south, closer to Albuquerque, so the opportunity to hike, ski, or geocache are ubiquitous. In the hills of the nearby community of Cerrillos, one of the towns along the Turquoise Trail – the old route that runs between Albuquerque and Santa Fe – there’s no better place for a trail ride. And, there’s nothing more liberating than a trail ride on a Tennessee walking horse; those of us who claim to be experienced trail riders know that a few hours on one of these magnificent creatures can make you look like you were to the saddle born. Broken Saddle is the outfitter in Cerrillos, and it may be the most understated of trail ride operations we’ve ever encountered. But it is also one of the best; the horses are topnotch and each wrangler takes no more than five riders with them, so the experience is truly personalized and the chance to bask in the silence of nature while riding is unmatched.

UTHSC Holiday Party Photography by Thurman Hobson The Chancellor’s Appreciation Holiday Party at the University of Tennessee Health Science Center (UTHSC) on Dec. 18 was a chance to give donors, community leaders and top-level faculty and staff a sneak peek at the newest structure on campus, the Translational Science Research Building at the corner of Union Avenue and Manassas Street. Guests were treated to shrimp, quiche, roasted vegetables, fruit, and other hors d’oeuvres, as well as an array of sweets to thank them for their support of UTHSC.
