I was single with a little extra time on my hands. I paid for and took 20 hours of flight training before I was told to go take my flight physical. I was under the impression that it was a routine physical. I was 30 and healthy and figured that it was a formality before I was allowed to take my first solo flight. The first question the physician asked me was, “do you have any allergies?” I answered yes, and the physician quickly replied that I failed the physical explaining to me that people with allergies sometimes take allergy medicine, which makes them drowsy; therefore, the FAA doesn’t grant licenses to people with allergies.

I took two things away from that experience. The first one, at least in the South, is that all my friends who fly must have been coached by their flight schools to lie on their physicals, since everyone in the South has some form of allergies. The second and most important is a principle that I took away from the training - I was taught that you take off and land by a check list. It
does not matter the number of times you have flown, but you must take off and land by a check list. Failure to perform one item on the check list can lead to a mistake that could cost you and others their lives. The Book of Proverbs has served as a daily check list for thousands of years. It offers wisdom for living with others and wisdom for living a safe, productive life. In the passage from Proverbs above, the author reminds us of the benefits of living according to the wisdom offered by the check list by declaring that we will have no fear of sudden ruin. The author does let us rest in his affirming promise of safety, if we avoid violating the passage’s check list. The author gives us a responsibility to act in the best interest of others if it is in our power to do so. It is not the calling to take care of our friends and family, it is the calling to embrace the community where we live by helping those in need. Memphis is very generous city. The pages of 4Memphis are filled with the efforts of people working on behalf of the less fortunate in our community. It is our prayer that the pages of 4Memphis serve as a check list for all of us to serve our community by reaching out to our neighbors from all walks of life and financial conditions, as we work to improve the quality of life for all those who live in the Mid-South. This Thanksgiving Season, may we stop to reflect on God’s goodness to us all!!! Seek the Peace and Prosperity of Memphis, Jim Walker

As students of the liberal arts, Rhodes College undergraduates will benefit enormously from her perceptive analyses for how success is achieved in today’s society. We look forward to implementing and enhancing many of Students in High Gear strategies through our Career Services work at Rhodes,” stated Dr. Russell Wigginton, Vice President for Office of External Programs at Rhodes. When living in high gear, it is never too early to get started, and why high school students can also benefit from this guidebook. Recently, Amy spoke to the Christian Brothers High School Parents Association meeting, and she discussed how to apply high gear even before college. According to Chris Fay, Principal at Christian Brothers High School, “Students in High Gear is an outstanding playbook for students on how to succeed in our increasingly complex world. Amy and Anne provide some great insight and lived experiences that can help today’s student navigate their way to high gear and the career of their choice.”
Amy sums up high gear with an analogy to compounding interest. “When you make good choices, they add up, like money in the bank. When you volunteer, intern, use your time wisely and don’t procrastinate, it makes a difference in your life.”

Methodist Hospice Residence Red Slipper Tournament Photography by Mark O. Ramirez The largest women-only field of golfers in the history of the event turned out for the Red Slipper Tournament to support the Methodist Hospice Residence. It was a beautiful fall Friday as the ladies took to the links at Windyke Country Club. In addition to the tournament, a Caddie Auction Party was held at the home of Dr. Mike and Liz Neel earlier in the week. Getting into the spirit of the event, each of the 14 caddies up for auction had a nickname, ranging from “Captain America” to another brave soul, “Braveheart”, who wore a kilt. Mike Neel won the award for “highest paid caddie”, in which he raised the most money at the auction. After a hard day of play, all the players received a pair of Dearfoam slippers in their goodie bag.The Methodist Hospice Residence is located at 6416 Quince Road, and this year’s Red Slipper events raised nearly $40,000 for this special place in our community.

Binghampton Christian Academy

Chances are pretty good that you have driven past a small, private school campus along the welltraveled stretch of Tillman Street between Sam Cooper and Walnut Grove; chances are also good that you have never heard about the amazing work happening within the beige complex of buildings you whiz past, en route elsewhere. In the heart of the Binghampton neighborhood, Binghampton Christian Academy offers students not only a great education, but a hopeful future amid the hopelessness that often plagues our inner city children. Founded in 1993 as The Neighborhood School, Mrs. Jo Walt envisioned a private, Christian school for the children in one of the poorest areas of Memphis who face significant barriers in education and in life. Renamed a couple of years ago, Binghampton Christian Academy (BCA) nurtures children who often fall between the cracks in the public education system. In addition to the traditional school environment, BCA offers the only boarding school facility in Memphis.
This is just one of many differences making it a unique, urban oasis. As a private school, students apply for admission to one of the 134 coveted spots in Pre-K through 8th grade. Tari Harris, Head of School at BCA, explains that only children who live in Binghampton are accepted, and most all of the students, once admitted return each year through graduation in the 8th grade.

Tuition at BCA is $100 per semester. “Mrs. Walt wanted families to have a Christian school they could afford, so tuition is $100 per family, not per child. If they could pay, that was fine, and if not, that was fine too,” Tari notes. Sixty percent of BCA students are from the African nation of Sudan, and many do not have an English speaking parent at home who can help them with homework. Without parental support, these children often struggle and would be left behind in the traditional school environment. With language being one of many barriers facing these students, combined with other poverty-related issues such as unstable family situations and homelessness, the BCA boarding program has been essential in helping students overcome these obstacles to learning success. Two dormitories on the property were built to house the students Monday-Thursday. Currently, BCA houses 15 girls and 16 boys on their campus. The students return home each weekend, and during the week parents are welcome to visit at any time. “We are here to fill in the gap and work alongside of the parents,” Tari said. Inside the girl’s dorm, there is a warm, family atmosphere with walls painted a soft yellow and a long farm table in the center of the combination living room/kitchen area. Matching quilts and comforters are neatly made on each of the twin size beds, and inspirational artwork lines the walls, along with family photos and reminders for area high school tour dates. In terms of the typical private school tuition, the $200 annual BCA tuition is meager and does not begin to cover the actual cost of $6,000 per student. It is in this deficit where the true BCA difference is discovered: extensive donations and a multitude of volunteers filling the gap. Just as the school exists for children who would fall between the cracks, the generosity of BCA supporters fill this deficit with both time and money. Over 200 volunteers from area churches and schools are involved at BCA. Groups from Second Presbyterian and Bellevue Loves Memphis Ministries host workdays; students from St. Mary’s, Hutchison and St. George’s are regular volunteers; more volunteers work as tutors for academics or they share an extra-curricular expertise such as ballet or taekwondo; evening meals are provided nightly for the boarding students through Take-Them-A-Meal donations; this is just small sampling of the many ways volunteers serve and

donate to fill the gap. The only federal dollars the school receives are for the school breakfast and lunch programs. According to Shelley Alley, BCA Director of Development, grants account for only a small portion of the funding, while most of the operating expenses are funded by donations, partnerships, and fundraising efforts. When Mrs. Walt founded the school, she envisioned it built on a foundation of prayer. Another special volunteer opportunity is to be a Prayer Partner for a student. Each child has a committed Prayer Partner who prays daily for them, creating a bond rooted in prayer. Tari shares stories of the incredible relationships forged between Prayer Partners and “their” students. Many send encouraging notes, visit them for lunch, and others have had the resources to sponsor “their” student’s high school tuition at places like French Camp Academy and CBHS. In another incredible example of this bond and commitment, a Prayer Partner stepped in to adopt three BCA boys after their father was deported and their mother died from cancer. The foundation of prayer also begins every school morning as the students and teachers meet in Dickens Hall. A multi-purpose space serves as a lunchroom, or a play area on rainy days, or an auditorium for graduation, but each morning, it is where the school gathers for “family time” to share breakfast, a devotion, and pray together. While on our tour of the school, Tari asked the third grade classroom to recite their monthly Bible verse, Philippians 2:1-3 in unison. After the Bible verse, they spread out around the classroom, to have some extra wiggle room to sing “Every Move I Make,” complete with motions. They sang the lyrics “Waves of mercy, waves of grace; everywhere I look I see Your face.” Those lyrics seem embody the essence of Binghampton Christian Academy. Mercy and grace abound, and throughout the campus, the face of God can be seen in every student. Beef Wellington Beef tenderloin, 3 to 5 lb 2 Tbl Dijon mustard 1 Tbl Olive oil 1 lb Button mushrooms 1 Clove garlic 1 Shallot 1 Sprig thyme
1 Package prosciutto I 10 x 15 inch Sheet puff pastry 2 Egg yolks Kosher salt Cracked black pepper
For the Duxelle Combine mushrooms, garlic, shallot and thyme in food processor and chop until fine. Set a saute pan over medium heat. Once it is hot, add in mushroom mixture. Saute 6 to 8 minutes on medium heat until juices have been extracted. Set mixture aside to cool.

Maple Sirloin Prime Rib 30 - 36 oz Flank steak ¾ C Pure maple syrup 2 Tbl Soy sauce 2 Tbsp Salad oil 1 ½ Tbl Lemon juice
½ C Red wine vinegar 2 Tsp Garlic powder 1 Tbl Black pepper Pinch of salt
In a medium bowl, stir together maple syrup, soy sauce, salad oil, lemon juice, red wine vinegar, garlic powder, black pepper, and salt. Place sliced steak into the marinade; cover and refrigerate overnight. Roasts should be brought close to room temperature before they go into the oven, to ensure more even cooking. Preheat your oven to 500°F (or the highest temp your oven reaches less than 500°F). Pat the roast dry with paper towels (pre-salting should have made the roast release some moisture), and sprinkle the roast all over with salt and pepper. After browning the roast at a 500°F temperature in the oven for 15

minutes, reduce the oven temperature to 325°F. To figure out the total cooking time, allow about 13-15 minutes per pound for rare and 15-17 minutes per pound for medium rare. The actual cooking time will depend on the shape of the roast, how chilled your roast still is when it goes into the oven, and your particular oven. A flatter roast will cook more quickly than a thicker one. There are so many variables involved that affect cooking time, this is why you should use a meat thermometer. A prime rib roast is too expensive to “wing it”. Error on the rare side, you can always put the roast back in the oven to cook it more if it is too rare for your taste. Roast in oven until thermometer registers 115°-120°F for rare or 125°-130°F for medium. (The internal temperature of the roast will continue to rise after you take the roast out of the oven.) Check the temperature of the roast using a meat thermometer 30 to 45 minutes before you expect the roast to be done. For example, with a 10 pound roast, you would expect 2 1/2 hours of total cooking time (15 minutes at 500° and 2 1/4 hours at 325°). In this case, check after 1 hour 45 minutes of total cooking time, or 1 hour 30 minutes after you lowered the oven temp to 325. Once the

Remove from pan and brush tenderloin with dijon mustard and allow to cool. Lay out one sheet of heavy duty plastic wrap on a cutting board. On plastic wrap lay out prosciutto slices so that they are overlapping. Then evenly layer your duxelle on top of prosciutto. Lay tenderloin on top of duxelle, and using the plastic wrap, roll the tender loin so that it is entirely wrapped in the duxelle and prosciutto. Tighten the plastic wrap at the ends of the roll to aquire desired shape. Allow to set for 10 minutes in refrigerator to preserve this shape. Lay out another sheet of plastic wrap. Lay the puff pastry sheet on top. Remove cooled tenderloin roll from plastic wrap and lay on top of puff pastry. Repeat plastic wrap rolling process so that the tenderloin is completely covered with puff pastry. Twist the ends and return to refrigerator to preserve shape. Once cooled, remove from plastic wrap. Using the back of a knife, score the top of the wellington for a decorative touch. Brush with egg yolks and bake in a 325 degree oven for 30 to 35 minutes. This should yield a perfect mid rare to medium center. Allow to cool before carving.

Triple Squash Gratin 1 Butternut squash, peeled, seeded and cut into 1/3-inch slices 1 Acorn squash, peeled, seeded and cut into 1/3-inch slices 3 Shallots, chopped 2 C Gruyere cheese, shredded 1 ¾ C Heavy cream
Preheat the oven to 375 F and butter a 9x13 baking dish. Arrange half of the squash slices in the bottom of the baking dish and top with the shallots and half of the cheese. Cover with the remaining squash, finishing with the last of the cheese. In a medium bowl, whisk together the cream, pumpkin puree, 1 Tbl sage, salt and pepper. Carefully pour over the top of the squash. Mix together the bread crumbs and the parmesan and sprinkle over the top of the gratin. Bake until browned on top and bubbling, about 1 hour. Garnish with reserved sage and allow to cool for 10-15 minutes before serving.

Buffalo Chicken Dip 2 C Central BBQ pulled smoked chicken, chopped 4 oz Wing sauce (Franks Red Hot with equal part melted butter) 4 oz Blue cheese dressing 4 oz Ranch dressing 8 oz shredded cheese 12 oz Softened cream cheese Blend together wing sauce, blue cheese dressing, shredded cheese & cream cheese. Stir in cut up smoked chicken. Put in casserole and bake at 350 degrees for 30 minutes. Sprinkle chopped scallions & crumbled bacon on top (optional). Serve hot with Central BBQ fresh cooked tortilla chips.

Combine duck legs with cure mixture and let duck marinate overnight (or at least 8 hours). Rince duck legs and place in heavy-bottomed roasting dish and submerge completely with duck fat. Roast at 200 degrees until meat pulls away from bone, approximately 8 hours. Coat cooked legs in spice rub and roast at 500 degrees until crisp, approximately 10 minutes. For the Grits 3 ¾ C Water 1 Tbl Chicken stock 3 ½ C Quaker Oats Quik Grits 2 Tbl Butter, unsalted
1 C Heavy whipping cream 6 oz Shredded cheddar cheese 1 ½ Tsp Kosher salt Dash of Black Pepper
In a large stock pot with water over high heat, bring to a boil. Add chicken base and stir with a wire whip to incorporate. Slowly add grits to stock and mix with a wire whip to incorporate. Bring back to a boil and reduce to a simmer for 20 to 25 minutes, stirring occasionally. Remove from heat. Add butter, cream, cheese, salt and pepper. Fold with spatula until all ingredients are incorporated and smooth. Place mixture into a lined half sheet pans using a spatula. Fill completely to top and smooth out with spatula. Place under refrigeration to cool. Once cooled, cut into portions using a biscuit cutter. Place grit cakes on lined half sheets pans and cover with plastic wrap. Place grit cakes into corn meal mix and evenly coat both cakes lightly. Place grits into a 350°F fryer for 3½ to 4 minutes or until grits are golden brown in color. Remove from fryer and drain off excess oil. For the Shrimp While grits are cooking, brush salad oil onto fresh shrimp. Place shrimp on the grill and baste shrimp with BBQ sauce. Grill to form diamond marks 3-4 minutes. Turn over and baste other side with BBQ sauce. Grill to form diamond marks 3-4 minutes. 76 / 4Memphis

Brown ground chuck in a saucepan over low-medium heat. In a separate pan, saute vegetables until the onions are gray. Drain ground chuck, and add to vegetables. Mix in spices, tomato sauce, paste and juice. Simmer up to 1.5 hours. Serve over meat raviolis, available at Lucchesi’s. Other ravioli fillings available include pumpkin, butternut squash, and roasted chicken.

Reviewed by Kevin Dean, Executive Director, Literacy Mid-South In Mary McCoy’s debut young adult novel, Dead To Me, the author evokes the corrupt, scandalous, murky Los Angeles of classic noir films like Sunset Boulevard. McCoy capitalizes on the familiar archetypes that made these scandals so rich, from the convoluted stories of unscrupulous studio executives to the shady private eyes. In Dead to Me, a young woman finds her glamorous starlet sister beaten and in a coma in a hospital. The main character, Annie, is tenacious, and she decides to solve the mystery of her sister’s assault to ensure the attacker is put behind bars. She is soon caught in a tangled web of psychos and red herrings as she searches for a young runaway who was the only witness to the crime. Even though Dead to Me is a young adult novel, the book is a fantastic, easy read for anyone dazzled by Hollywood noir or the mysteries of Golden Age Hollywood. This is L.A. Confidential for the young adult crowd, and it’s a blast. The backstories, including the extravagant lifestyle of the main character’s parents, paint a portrait of excess and greed that could easily transcend time. This story could have easily been set in the present day, but half the fun is reading about a time when Pumpkin Spice lattes and cellphones weren’t the norm and DNA evidence couldn’t solve every crime. Today’s teenagers might not know Fatty Arbuckle or the Black Dahlia, but Dead to Me can serve as an instigator for a family movie night that includes more The Maltese Falcon and less Transformers. McCoy, a former Memphian, should be commended for creating a believable, strong female lead character in a young adult novel. The book is set in 1948, an era known for its exploitation of women in Hollywood, but Annie has the resilience and grit of a modern feminist character. Even compared to today’s YA characters like Bella Swan from Twilight, Annie’s motivations aren’t inspired by the played out love triangles. (Thank God!) Despite being so young, Annie is able to navigate a perilous world using her intellect, determination, and quick thinking. The book is filled with enough violence and mystery to keep a teenager hooked, but the real hook is that the main character ends up being such a great role model. Paragon Visits Hawkins Mill Elementary On Monday, October 5, Paragon Bank participated in its first visit of the year to Ms. Kimberley Martin’s third grade class at Hawkins Mill Elementary. The team taught the students about currency, and then played a game of bingo using coins. For their craft, the team made faux stain glass leaves from tissue paper. As always, Paragon brought school supplies, snacks and goody bags for the students.
