We all know the importance of first impressions. The entry hall is the first interior room of a home and the perfect canvas to create a cozy, clever and unique atmosphere where grandeur and modesty live side by side. The vital combination of practicality and personality is why some homeowners put as much thought into their entryways as they put into the other rooms. When weighing different entry design ideas, I always start with one inspirational piece, whether it is a wallcovering, painted finish, a collected piece of furniture, accessory or art. Once inspired, I like to consider how each of these individual elements will be sympathetic to each other: Flooring If your tendency is to go bold, consider a colorful concrete tile like “Dandelion” in marine and bone by Marrakech Design, or a parquet floor with a bold, historical pattern. Area rugs not only provide color, but a buffer from bringing outside elements into the interior spaces of your home. Try an indoor/outdoor rug that resembles sisal for a more natural look that wears well. Wallcovering and Paint This is the one place that I like to go bold. Consider a handscreened wallcovering like Kelly Wearstler’s “Crescent” paper in teal and cream, or a faux bois painted finish that looks like you have paneled your walls in an exotic wood. For the paint lover, I like a high gloss enamel finish by Fine Paints of Europe. Furnishings Select an entry table or chest that is both functional and a conversation piece. An antique venetian hand painted chest adorned with modern accessories or a modern piece with an antique blue and white porcelain is always an interesting approach to balancing a variety of styles. Remember, this is most likely to be a catchall place, so a tray of some sort for keys or mail should be considered. A mirror for your guests to make any necessary last-minute adjustments to their appearance is

a nice consideration, but it also provides reflective, natural light from surrounding windows allowing light to bounce around, making the space feel larger. Lighting & Art Convert a piece of pottery into a lamp adding a custom-patterned shade for color for your entry chest. I like a small bell jar for lighting for a small entry with low ceilings. If your walls are bold, select something simple like framed charcoal sketches on white paper or collect a piece of fine art. David Lusk Gallery, Linda Ross, Jay Etkin, Robinson Gallery and Crosstown Arts all represent a wide range of incredibly talented artists, if you are interested in collecting. The entry is the one place that sets the mood of what is to follow, be it quirky and colorful or calm and simple. It is the introduction of the space to come, so give your guests a reason to knock on your door.

It is often said that a person’s eyes are the window to the soul and a foyer is just that - the “window” to a person’s home. It’s where we first receive our guests, so it’s important that it says “welcome.” Afterall, we never get a second chance to make a good first impression. Whether you are designing a new foyer, remodeling an old one, or simply enjoying the one you have, there are always things to consider when decorating this space. First and foremost it must speak welcome and warmth to your guests. You can achieve this with architectural features, color, furnishings, lighting and fresh flowers. Bring color in with a focal point of a piece(s) of art, a large scaled wall covering, or interesting area rug! Use a beautiful upholstered bench or console table with decorative pieces. Lighting is so important! My motto is you can never have too many lamps or sconces in a room! Soft lighting in a room (no matter what room) is the key to warmth and an inviting atmosphere. And finally, fresh seasonal flowers always say “welcome” and help with color as well!

The foyer sets precedence for the rest of the home, and as a designer I look at the overall scope of the house then decide the tone of the entryway. This space can have so many personalities- dramatic, subtle, relaxed. A good designer can reflect all while expressing the client’s from the foyer leading into the rest of the home. This space should be treated like any other room. I would look at flooring options, lighting, trim details, furniture, art, and paint or wallpaper. All of these elements are pieces that complete any space and are key to infusing it with character. The holidays are upon us and the foyer truly is where homeowners will meet and greet friends of old and new. I, as a designer, want to pick more classic objects and paper but with an edge versus trends that quickly become dated. Size matters! One needs to look at scale and determine if it is a smaller and intimate space that would allow for a console and artwork, or is it a large greeting hall where a center table and sculpture is possible? Bringing in mirrors is a great way to reflect light and add dimensions. Paint and paper can create a bolder effect- and those possibilities are endless. An entryway may be the first room a visitor sees, but it can truly encompass the personality of the home.

Literally more than any one person can take in, the offerings this month run the gamut. October is prime time, especially for outdoor events such as the Pink Palace Crafts Fair (can you believe, 46th year!), Art on Fire, and River Arts Festival. The latter is expanding in a big way, moving from South Main down to the water’s edge, which should add energy, scenery, and more parking options. The opera season kicks off (not that those 30 Days of Opera in September were exactly time off) with a beloved classic. Great jazz coming from Jeff Hamilton and Kirk Whalum. I won’t belabor the point with an overly long intro when there is a truly exciting list to get to. JL: I think we sent a "save the date" to last year's partygoers in April and started having meetings about the band and arrangements in May or June. KH: We also had to contract to rent the space even earlier. The enormous popularity of Crosstown means that various event spaces in and around the complex book up well in advance. 4M: What makes Party on the Plaza unique? JL: The setting is fantastic. Out on the plaza with the fountains and the ambient light of Crosstown Concourse as a backdrop, it just has a great look and feel. And it is the right size. It is not as large as some other events and is very comfortable for mingling with short lines for food & beverage. KH: Church Health has 31 years of community service in a very grassroots way; we have never really gone the route of the upscale gala, and this event is very nice but with a casual atmosphere. I think it fits with who we are. JL: Yes, also thinking about who we are as an organization - we are so appreciative of our friends in the restaurant community for supporting this event with food donations. Many, many restaurants workers are Church Health patients (as are musicians and artists) so this is a full-circle relationship in a sense. 4M: What's new with your second year of the event? JL: A new VIP experience with a great pre- and post-party and multi-media experience with our headliner. KH: This will be a night of Rolling Stones music from a terrific group called Black Jacket Symphony that Resource Entertainment Group found for us. They have an over-the-top multi-media show which I think will just blow everyone away. The second annual Party on the Plaza to benefit Church Health will be held on Friday, November 2, at Crosstown. Peel skin and cut in half. Remove seeds and reserve. Cut the halves into quarters. Drizzle brown butter over squash segments and place in 350 degree oven for 9 minutes or until tender.

Remove seeds from squash and wash with cold water. Blanch in salted water for approximately 5 minutes or until tender. Place seeds on flat pan and season with grapeseed oil, salt, and fresh ground pepper. Roast seasoned seeds in convection oven until crispy on the outside. Serve with antelope tenderloin and enjoy!

Bleu Restaurant & Lounge Apple Couscous with Pork Chop 1 cup couscous 1 star anise 1 cardamom pod 1 ounce onion diced 1 cup apple juice 1 sprig fresh thyme .25 ounces oil In an oven-proof sauce or sautĂŠ pan heat oil, add onion, thyme, cardamom, and star anise; sweat for 1 minute. Add the couscous and stir for about 1 minute then add the apple juice. Cover with oven-proof lid or foil and place in oven at 350 degrees F for 15 minutes or until couscous is tender. This couscous is a great starch alternative to potatoes or rice; serve with roasted or grilled pork or chicken.
Kooky Canuck Butternut Squash Mac & Cheese 16 ounces dried pipe rigate 2 butternut squash, peeled, seeded and cut into chunks 2 ½ cups milk 1 quart heavy cream 16 ounces sliced American cheese 4 ounces cheddar cheese 4 ounces pepper jack cheese 8 slices bacon, optional 2 Vidalia onions, large dice Cook pasta according to package directions. Drain; transfer to a large bowl. In a large saucepan, combine the squash and the milk over medium-high heat. Bring to boiling; reduce heat to medium, and simmer until the squash is tender when pierced with a fork, 18 to 20 minutes. Make the cheese sauce in a saucepan by bringing cream to a boil then remove from heat. Add cheese bit by bit, whisking until all the cheese is melted. Cook bacon in a frying pan until crisp; drain on paper towels. Crumble; set aside. Pour off all but 2 tablespoons bacon drippings. Return skillet to the heat. Add onions to frying pan; cover and cook over low heat 10 minutes, stirring occasionally. Uncover and increase heat to high. Cook 4 to 6 minutes more, stirring, until onions are caramelized. Add the squash and cheese mixtures, along with the onions to the bowl with the pasta. Toss well to combine, then transfer to serving dish and garnish with bacon crumbles (optional).

Cooking School at Whole Foods, Poplar Avenue Pumpkin Polenta with Roasted Root Vegetables Vegeta b les : 2 carrots, peeled and medium dice 2 medium parsnips, peeled and medium dice 1 red onion, medium dice 1 medium rutabaga, peeled and medium dice ½ pound Brussels sprouts, end trimmed, outer leaves removed and quartered 3 tablespoons olive oil 1 teaspoon garlic powder 1 ½ teaspoon ground sage Preheat the oven to 450 degrees F. Line a sheet pan with parchment paper. Toss all of the vegetables together with the olive oil, garlic powder, ground sage; season to taste with salt and pepper. Spread out on the prepared sheet pan in a single layer and roast until vegetables are crisp/tender and caramelized, about 20 minutes. While the vegetables roast, make the polenta: in a medium saucepan bring the stock, milk, butter, salt and pepper to taste just to a boil. Lower heat and slowly whisk in the cornmeal, constantly whisking to keep lumps from forming. Continue to whisk and cook until slightly thickened, about 3 minutes. Whisk in the pumpkin puree and brown sugar until heated through. Add in the parmesan and whisk to incorporate. Adjust seasoning as needed and keep warm until the vegetables are finished. In a small fry pan, coat the bottom with olive oil and heat over medium high heat. When hot, add in the sage leaves and cook until lightly browned and crispy. Drain on paper towels and reserve for garnish. In a large bowl, whisk together the Dijon mustard and apple cider vinegar; toss the roasted vegetables while still warm in the vinegar mixture. Drizzle 1-2 tablespoons of the sage oil over top of the vegetables and check for seasoning. To serve, place the polenta in the bottom of a serving dish and top with the roasted vegetables. Garnish with fried sage leaves and additional parmesan, if desired.

Place into oven and bake for 30-35 minutes until squash is tender, stirring about halfway throughout cook time. Cook bacon for garnish. Heat large skillet over medium-high heat, add bacon and cook until desired doneness (about 6-8 minutes) Heat stockpot over medium heat, and add butternut squash mixture and a dash of thyme. Cook for a couple of minutes while stirring. Add chicken broth and puree with an immersion blender until smooth Bring to a boil, stir, then reduce to a simmer. Grilled Steak with Rosemary and Garlic 1/3 cup extra virgin olive oil, divided 4 8-ounce thick cut steaks, such as New York strip 1 tablespoon balsamic vinegar 4 large garlic cloves, thinly sliced 1 teaspoon freshly ground pepper, more to taste 2 tablespoons fresh rosemary leaves, finely chopped Juice of 1 lemon Flaky sea salt In a large shallow baking dish or sealable plastic bag, add 3 tablespoons olive oil, vinegar, garlic, pepper and rosemary; whisk to combine. Note: use a vacuum sealer or instant marinator to reduce marination time in half. Add steaks, turning to coat. Cover and refrigerate 2 hours, up to 6 hours. Preheat grill or grill pan over medium-high heat. Remove steaks from marinade and discard marinade. Pat steaks dry with paper towels, and season generously with salt and pepper. Transfer to a grill and cook, turning once, 6-8 minutes per side (135 degrees for medium-rare). Place grilled steaks on a cutting board with a well, tent loosely with foil, and rest 5 minutes. Cut steak into slices against the grain, and transfer to a warmed serving platter. Drizzle steak with remaining olive oil, lemon juice and sprinkle with flaky sea salt; serve immediately.

1 butternut squash, peeled and diced 1 sweet potato, peeled and diced) 2 russet potatoes, diced 1 yellow onion, diced 1 red bell pepper, diced 1 green bell pepper, diced Blanch the squash, sweet potato & russet potatoes until al dente. Then toss in a bowl adding other diced veggies. Put a skillet on medium heat with cooking oil. Add hash to the skillet and sauté with salt and pepper until it reaches a nice golden brown.
Ba co n B a l s a m i c B r u s s e l s S p ro u t s : Preheat oven to 350 degrees. Cut the “core” from the sprouts then cut them in half and place in a large bowl. When the desired amount is cut, add a cup or so of balsamic vinegar and let soak. While the brussels sprouts are soaking cut 5 or so strips of bacon into strips a half inch thick, then add brussels and mix. Place on a cookie sheet, season with black pepper then bake until bacon is fully cooked. Serve with grilled pork chop along with your favorite BBQ sauce or berry compote.

Ma p l e B a c o n G ra vy : 1/2 lb bacon 1 small red onion, julienned 1 clove garlic, minced 1 sprig thyme, chopped 2 cups chicken stock 1/2 cup maple syrup 1/4 cup brown sugar 2 tablespoons cornstarch Salt and pepper to taste Pork Loin: Season pork liberally with salt and pepper. Set a sauté pan over high heat. Once hot add oil, and sear the pork. Cook 2 to 3 minutes or until it has a golden brown sear, then flip. Add butter, rosemary and garlic to the pan. Cook an additional 2 to 3 minutes and baste pork with herb butter while cooking. Transfer to 400 degree oven and cook until the internal temperature reaches 145. Maple Bacon Gravy: Set a sauce pot over medium heat, add bacon and render. Once bacon begins to release its fat add the onion and garlic. Sauté 2 or 3 minutes or until onions are translucent. Add chicken stock and maple syrup and bring to a boil. Add thyme and brown sugar and whisk until incorporated. Combine corn starch with 2 tablespoons cold water in a small bowl. While sauce is boiling, whisk in cornstarch slurry to thicken. Season to taste with salt and pepper. October 2018

Friends since 2010 freshman year at Sewanee: The University of the South, they tied the knot in May! The Rehearsal Dinner was held at the historic Virginian Hotel with a Welcome Party following at the Warehouse Theater in the Academy of Fine Arts. Walker Bartlett and Katie Feehan met when they were freshmen in high school, so they are high school sweethearts! Walker played hockey and so did Katie's brother, Michael. They always say that hockey brought them together. They enjoyed 7 years of dating before getting married, and they consider themselves blessed to have spent all those fun years together. They went to college together at the University of Missouri and graduated 2 weeks before their wedding. It was a busy and exciting time! Walker says his favorite moment was when Katie walked down the aisle and she agrees! They had been anticipating this day for so long, so the emotions that came with that moment were so sweet. There is something indescribable about the moment before you get to marry the love of your life. They had a lot of out of town guests, so they wanted them to experience the city they love so much. Katie and Walker want to say thanks to all of their AMAZING wedding vendors--planning was very smooth and they helped create the day of their dreams! They went to St. Lucia for our honeymoon and stayed at the Sandals Grande St. Lucian! After the rush of the past year, it was the perfect vacation. Engaged! Scovia Wilson & Brandon Rushing Brandon and Scovia first met through mutual friends at Hog & Hominy. Eventually, Scovia landed a job at the Memphis nonprofit, Operation Broken Silence (OBS), an organization that supports and empowers Sudanese refugees through education, storytelling, and advocacy, and where Brandon serves as a Board Member. They reconnected their friendship and for the next several months, Brandon and Scovia got to know one another better. Upon hearing that there was a young man interested in Scovia, her parents flew to Memphis from Belgium to meet him. Brandon asked Scovia's dad for her hand in marriage, and to Brandon's delight, this meeting went well. Fast forward a few months, Brandon and Scovia decided to surprise Scovia's dad for his 50th birthday in Belgium. Little did Scovia know that she too would be surprised on this trip. Brandon popped the question in Brugge, Belgium, October 31, 2017. Brandon and Scovia are grateful for one another and truly believe that God put them together for a reason and a purpose. They are absolutely ecstatic to tie the knot July 21, 2018, and are so incredibly thankful to the Lord for bringing their paths together.

In October, most people aren’t still thinking about summer camp, but I am. Of course I miss the fun activities like skiing, banana boating, and the view that I am convinced cannot be beaten by any other camp, but these aspects, which can be found at any camp in America, were not what left an impression on me. This camp was different. This past summer, I spent three weeks in Malibu, British Columbia as a part of Young Life’s Work Crew staff. When I signed up, I had no idea what I was getting into, in both good and bad ways. Before I arrived in Canada, I knew very little about what I would be doing. I had been to Malibu before as a camper, so I assumed that the work crew experience would be moderately similar to that of a camper. I was wrong. Soon after I arrived, I found out a couple of specifics that I wished I had known before I agreed to spend twenty-one days of my summer working. I would not get a single day off or be able to participate in any camper activites. I would be working in the rain 50% of the time and would eat the same set of meals for three weeks every week (including the curry that my friends on the kitchen staff should not have attemped to concoct); but most importantly, that I would be a part of the only staff crew that doesn’t have any contact with campers. Work crew staffs are divided up into the dining hall staff, the pits staff, the retail staff, the housekeeping staff, and the outdoors staff. Dining hall staff serves the campers food every day. Pits staff washes dishes and runs out to help serve during lunches and dinners. Retail staffworks the camp store and sees campers 24/7.

Housekeeping helps campers when they need new sheets, pillowcases, towels, etc. But I was a part of the outdoors staff, which meant that I had to actively avoid campers so that the sound of my lawnmower or leaf-blower wouldn’t bother them. Working with campers may not seem important to most, but when you are volunteering for a month further from home than you’ve ever been and you’re running on five hours of sleep every day, recognition for your hard work can be the difference between a good or a bad day. Campers were the source of all praise and because of this, I quickly realized that I was jealous of my friends on the other staffs who were in the camper’s line of sight and were constantly validated by them. This made me realize a lot about myself. I wanted attention for doing something that was supposed to be selfless. As time went by, I realized that I was actively thinking this and decided to find motivation in other ways besides recognition. I found it in scenery, in the people I worked with who made me laugh even when days were long, but most importantly, I found it in myself. There was absolutely nothing I would get out of working diligently and trying to do well at my job. I would not be graded. I would not be reviewed for performance. But while I was there I remembered that serving other people can bring you so much joy, and that made me want to give my all even doing the jobs I hated.

Forever Friends By: Ella Coffey
Every year St. Agnes Academy’s Pep Club and Forever Friends Club come together with the students from Madonna Learning Center for a night of friends, food, and football at a CBHS football game. Madonna Learning Center is a day school for individuals with special needs. The students range from age 5 to 30 years old. Madonna’s goal is “to enable children and adults with special needs to enjoy a productive and satisfying quality of life” despite their disability. I have been able to work with the Madonna students in a number of events and it is amazing to see the bonds formed between the students at Madonna, St. Agnes, and CBHS. All of these students come together for a fun Friday night!

Together the students attend a tailgate and enjoy a night of football. The night of this year’s event, the Brother’s played Kipp. It was amazing to see the Madonna students cheer on the football players, especially on a night with such a big win. This football and tailgating night is the hallmark event of the St. Agnes Pep Club for good reason. From my experience this event is eye-opening. Watching my buddy’s face light up every time a football player would high five him was so rewarding. It’s at these moments, that I know we are doing something good for these students and that even little actions can make a big difference. At the game, the students from Madonna get to socialize with teens their own age and make new friends with the students from CBHS and St. Agnes. The Madonna students were so fun to talk to and I enjoyed getting to know them and introducing them to my friends! These students have taught me to be grateful for the little things and cherish those moments.

Halotherapy, otherwise known as dry salt therapy, is beneficial for a wide variety of health issues. It has been known to aid in the soothing of allergies, asthma, coughs, colds, the flu, cystic fibrosis, ear infections, psoriasis, eczema, acne, sinus infections, sinusitis, snoring, sleeping problems, stress, anxiety, fatigue, COPD, emphysema, and bronchitis. The room itself is designed so that you are able to relax as quickly and as easily as possible. Initially, the other staff members and I were very talkative, but we soon found our conversations slowing as the salt helped us to relax. Being in the Salt Cave not only physically benefitted us, but also allowed us to be in a present state of mind. Overall, the Salt Cave is a great place to go to simply relax, especially with all of the stress that comes along with the school year. WHO TO WATCH by Kara Kane
Fall is in the air, and football season is in full swing. These players have not taken a break and have been preparing for this season since June. Here are a couple of people you should be looking out for in the class of 2019.
#77 WILLIAM NORTON CBHS One of these you may already know- William Norton 6’6” is defensive end for Christian Brothers High School and has been committed to the University of Georgia since March 2018. Norton is prepared to take on any opponents this upcoming season that may try and stand in his way. Norton looks forward to his final season by building on his successes from the previous year.

Next on the endless list of senior prospects is Maurice Hampton from Memphis University School. At 6’0” and 185 pounds, this corner-back is the second ranked prospect in the state of Tennessee. Hampton has been an all-star athlete since he began his high school career and that will not change anytime soon. He plans on attending LSU to further his football career in the fall of 2019.
#1 ERIC GRAY LAUSANNE Taking it outside the SEC, Eric Gray is a 5’10” running back for the Lausanne Lynx, who are two-time defending state champions. Committed to the University of Michigan, Gray has the opportunity to shine with his outstanding statistics achieved while playing with the Lynx. Going into his final season, Gray is the nation’s third-ranked all-purpose back and the 2018 recipient of the Division II-AA Mr. Football award.
#14 KEVEON MULLINS WHITEHAVEN With eight touchdowns and 52 receptions for 1,011 yards, Keveon Mullins, Whitehaven wide receiver, is ready to improve on his accomplishments from last season. Mullins is a four--star athlete and is the state’s 12th ranked prospect for the 2019 class. Recently, he has committed to play football for the University of South Carolina. With his tremendous stats from the season before, there is lots more energy and enthusiasm to expect from this Whitehaven Tiger.

our dad does what?” is usually the response I get after telling someone about my dad’s job. My dad is an Ocularist. An Ocularist is a person that fits and fabricates custom artificial eyes. Both my father and grandfather, Rob and Bob Thomas, work together in their practice, Thomas Ocular Prosthetics here in Memphis, Tennessee. They also have satellite locations in Johnson City, Tennessee, Little Rock, Arkansas and Jackson, Mississippi. My dad is often asked what made him go into this field. “I always enjoyed going into the office with my father when I was younger and seeing the impact he had on people’s lives”, my dad said. My grandfather was introduced to the field when he was a dental-tech in the Navy. He even went into prosthetics while still serving. Out of the Navy, my grandfather worked in New York City until moving to Birmingham Alabama in 1972. While in New York, he had the opportunity to work with both Sammy Davis, Jr. and Peter Falk. Both of these men were celebrities that suffered an eye loss. Each eye is custom fit to the individual’s socket. An impression mold is made of the socket and then a wax shape is used to fit the prosthesis. After the shape is converted into acrylic, the eye

is hand painted to match the fellow remaining eye. This is where the eye starts to look real in appearance. The red veining is made from red thread, and a series of washes with a pigmented paint is used to match the patient’s remaining eye. The process of making an eye has often been described as both medical and art: medical, because the eye is made to fit the person’s socket; art, because the eye is hand-made, custom fit and shaped, and painted to match the natural eye as close as possible, even down to the pupil. Some individuals say they feel like they are sitting for a portrait. Memphis is known to have a major medical community with UT Health and Science, Le Bonheur, and St. Jude. At St. Jude, they research and treat childhood cancers. One cancer that they treat is retinoblastoma, a childhood cancer that occurs in the retina of the eye. Many times the eye has to be removed to save the life of that child. The doctors at St. Jude refer those families to Thomas Ocular for the artificial eye and they continue to be seen there during their scheduled return visits to the hospital. “We like to see a patient every six to twelve months for proper care and maintenance of the prosthesis”, my dad tells me. With little children, as they grow and develop, the prosthesis may have to be adjusted or enlarged to help develop the socket until it’s time for a replacement, which is every five to seven years. Some patients started seeing my grandfather when they were just two or three years of age and are now in their forties with families of their own. So many of their patients live normal lives and don’t look at the prosthesis or loss of an eye as a disability. Many live normal lives with their friends and family not realizing they are missing their natural eye and wearing a prosthetic eye. Some will say that often times a family member will forget they can’t see out of that eye. “Restoring a person’s appearance and giving them their self-confidence back is an amazing feeling”, my dad says. Today, there is such an emphasis placed on social media with pictures and appearances, no one wants to feel or look different. It is amazing the impact a piece of plastic can have on a person’s life. Both my father and grandfather enjoy what they do, but it’s when their work goes unrecognized that they feel the greatest fulfillment.
