Meet Donnette Hilton
Donnie, as she’s affectionately known, is a valuable member of our TGO Community. You might have been fortunate (or unfortunate) to have met her during her five-year tenure working as a CSA Courtesy Patrol officer, where she earned a reputation for her unwavering commitment to upholding the law. She is responsible for creating the TGO Volunteer of the Year Award and has managed it for over 12 years; and is a former winner of the award in 2020. She has been our official Parliamentarian overseeing our CSA Board Meetings for over a decade... and she’s done all this after she retired! Before TGO, Donnie had an extraordinary career in her home state of Minnesota. Find out more starting on page 22.
The All New Blue Heron Menu
It’s here! The new Blue Heron Menu with lots of new delicious plates and Happytizers. You like burgers? The BH has them! Five of them in fact. Make sure to try out the new Florida Cracker Burger. If a burger is too big for your appetite, try The American Slider you can order one or two with the condiments you like. There is a new list of Happytizers that include crab cakes, fries with dipping sauces, a Pub Pretzel and more. If you like pastas there are four Pastabilities to choose from. There are a couple new entrees plus some of your favorites - and now you can follow up your meal with some classic desserts or even a shake, with five flavors to choose from. Dear TGO Community, Happy New Year 2024! I hope this new year brings you many days of laughter, adventure, love, good health and all the other things that make life special. I enjoyed some time off with my family this Holiday season, but now it’s time to pack up and store our holiday decorations, and get organized into this new year. This week our CSA crews are in the field, mowing and working on irrigation leaks and drainage projects throughout the community. We are expecting our next TruGreen spraying on January 16-17. So far 2024 has brought us all some beautiful Florida winter weather, we are all fortunate to live here this time of year. This issue of The Happenings features the new Blue Heron menu items, including some enticing dessert options. We are now open seven days a week for Breakfast, Lunch and Dinner service. You’ll find this information on Page 38. We are receiving some nice feedback on the new menu, and if you’ve not given the Blue Heron a try in a while, I hope you’ll stop in and support your restaurant. Some of you long-time TGO residents will remember… ten years ago TGO owners approved the purchase of our golf course and Blue Heron Restaurant. The payments were spread out over ten years thanks to an interest free loan agreed to by the previous owner, TGO resident Tom Saltsgiver. I am happy to share that we collected the final payment in 2023, and will make this payment on February 2, 2024. To recognize this milestone, there are two celebrations being planned now by some of the key owners who led our community through this deal ten years ago. First, on February 2 at 8:00 am, TGO owners are invited to participate in a golf scramble tournament. The mortgage will be ceremoniously burned right before the tee off. The second event will be a luncheon for everyone, golfers and non-golfers, starting in The Manor at 1:00 pm on February 2. There will be a short program followed by a buffet luncheon served by the Blue Heron. Tickets for these events will be sold on a first come-first served basis. The deadline for signing up for either event is January 26, 2024 and tickets will be sold in the Golf Shop. Make your plans now to join your fellow owners in celebrating this major milestone! Collections for our annual CSA Employee Holiday Fund end this weekend. So far, we have received $18,449 with over 300 individual donations by TGO residents. 100% of this fund will be distributed in cash next week to our over 60 hourly, full-time, front-line CSA workers, including our golf and CSA maintenance teams, recreation team and lawn crews. Your contribution honors their hard work in 2023. This fund provides our most essential workers with a great start to 2024. Thank you deeply for your generosity and blessings to our CSA workers! Golf Tournament and Luncheon Friday, February 2 Golf Starts at 8:30 am When the TGO owners purchased the golf course and restaurant, the payments were spread out over ten years thanks to an interest free plan agreed to by the previous owner, TGO resident Tom Saltsgiver. GUESS WHAT!! We will make the final payment to Tom on February 2, 2024.
To celebrate that milestone, we will have two forms of celebration. First, starting at 8:30 am on February 2, all owners are invited to participate in a golf scramble tournament.
The mortgage will be burned right before we tee off.
1:00 pm Luncheon Open to All TGO Owners The second event is even more important. All owners (whether you golf or not) are invited to attend a luncheon in the Manor starting at 1:00 pm on February 2. There will be a short program followed by a buffet luncheon served by the Blue Heron. The cost for the golf tournament is $10 plus $30 greens fee for non- members. The cost for the luncheon is $25. Space in the manor is limited so tickets will be sold on a first come-first served basis.
The deadline for signing up for either event is 5:00 pm January 26, 2024 or when the events are sold out, whichever comes first. Tickets for both events will be sold in the pro shop on a cash only basis.

Plantation Manor • Wednesday, January 17, 2024 • 3:00 pm The CSA Board of Directors are responsible for the entire operation of The Great Outdoors Community Services Association. The following list shows the current Board of Directors:
Also part of the Board of Directors Organization are CSA Manager Billy Specht, Architectural Review Committee Chairman Leon LeBlanc and CSA Secretary Sharon Sanford. The CSA website at www.tgocsa.org has individual biographies and contact information for each director. Owners are encouraged to attend all the Board of Director meetings. Green speaker cards are available if an owner wishes to address the board for three minutes about any issue. An informational packet with the meeting agenda is given to each household that attends. Prior to the meeting, the agenda is posted on official bulletin boards. The board meeting is televised LIVE on channel 732. CSA Board of Directors meetings are held on the third Wednesday from October through May. Planning meetings to set the agenda for the Board of Directors meetings are scheduled October to May on the second Wednesday of the month in the CSA Conference Room at 3:00 pm. They are open to attend for any TGO owner.
CSA Patrol is Hiring
Patrol officers play an important roll in keeping TGO safe by enforcing traffic rules, and directing traffic during emergecies. If you would be interested in working for the CSA Patrol, go online to our website: www.tgocsa.org then click on CSA Documents/Forms/Application for Committee Assignment.

There are ten CSA voting districts at The Great Outdoors. They are non-geographical, but are determined by the last digit in each property’s street address. The District Meetings are held monthly from October through May. Various districts join together to hold combined monthly meetings. There are two meetings per month with five districts in each one. Please note the upcoming meeting schedule if you want to attend your district meeting. In the PAVILION: Districts 2, 3, 5, 6, 8 - Tuesday, February 6, 2024 at 10:00 am Districts 0, 1, 4, 7, 9 - Thursday, January 11, 2024 at 3:00 pm NOTICE IS HEREBY GIVEN that the next ARC Meeting will be held on Wednesday, January 17, 2024 at 10:00 am on the Manor Porch. The Architectural Review Committee meets for planning purposes on the Plantation Manor Porch at 10:00 am on Monday, January 15, 2024. All changes to your property that are visible on the outside require advance approval from the Architectural Review Committee. Application forms and ARC Guidelines may be obtained from the Community Services Association office or printed from The Great Outdoors Community Services Association website at www.tgocsa.org. All completed ARC forms must be submitted to the CSA office by Noon on the Wednesday before the next Wednesday meeting. Results will be available to pick up after the ARC meeting or from the CSA Office. Be sure ALL necessary paperwork is included with your ARC application. No approval will be given without having all the required data available at the ARC Meeting for review.

Community Information & Notices The Employee of the Quarter
The employee of the fourth quarter is Quentin Tabor. He is the golf course spray technician. He has worked at TGO for over eight years, all in the golf course maintenance department with a continued increase in responsibilities. He is consistently out spraying, fertilizing, irrigation repairs, and doing anything necessary to continue to improve the golf course as one of the best in the county. He always performs his work with a smile on his face. He is a man of very few words, but is one of the nicest people you will have the privilege to get to know. He is always willing to help others not only at work, but within the community. He should consider living within TGO because he spends more time here than most residents. However, he loves to spend time with his family.
CSA Trash Pick Up Rules
The CSA crew picks up household trash 364 days of the year (off for Christmas). You’ll see them in a big truck pulling one or more green hoppers behind it. The guy crouching on the hopper grabs your trash bag as they pass by. To make the process efficient, please follow these rules: • Trash must be placed in plastic bags that are tied closed. Lightweight bags should be tied together. Trash that is not in plastic bags may not be picked up. • Break down all boxes and put all packing material in a closed bag. • Place trash within one foot of the road so that it’s within easy reach. • Dispose of your pet’s waste inside the closed trash bag. • Put trash out at the curb by 10:00 am - Pick-up time varies within the park. Please do not allow pets to urinate on trash or debris. • Do not mix household trash with organic yard debris or construction materials. The crew has to pick this up! • Do not put trash out at night because by morning it will have been scattered by wild animals. • Also be aware that if you place your trash out on the street too early, the vultures think you have prepared them a sack lunch!
CSA Yard Debris Pick-Up Rules
The CSA crew picks up organic yard debris at least once per week. Tree trimmings should be cut down to a maximum of 4 feet long, weigh less than 50 pounds, and be stacked uniformly at the curb. Loose material such as pine needles, leaves and small twigs must be collected in untied plastic bags or open containers. The CSA will not pick up sod, dirt, tree stumps, construction material (e.g., concrete, wood, drywall, metal), chemicals (e.g., paint, oil), major appliances, or tires. DO NOT bring these items to the CSA Maintenance Yard yourself. They may be dropped off, without charge, at the Brevard County Mockingbird Mulching Facility (321-264-5009) on South Street (SR405). Go past the Lowes SR405 entrance then turn LEFT at the first traffic signal. Most other waste items such as carpet, porcelain plumbing fixtures, etc., that are not mentioned above can be dropped off at the Brevard County Transfer Station (321-264-5048) that is also on South Street (SR405), but 0.5 mile past Lowes on the same side of the street.
Clearing Vegetation on CSA Property
Our Declaration of Covenants states that “No CSA land may be cleared of any vegetation without prior written permission from the Board of Directors or its designee. Unauthorized clearing of CSA property will result in a hearing, with possible fines and ordered replanting.” This only makes sense, as you would not cut vegetation on someone else’s property without permission first. In order to track this better, we will require anyone seeking permission to cut vegetation on CSA property to fill out an ARC permit. An approved permit must include the CSA manager’s signature, and a copy of the permit will be filed in your ARC file for documentation purposes.

The automated system offers two methods to provide access for a visitor. Call no more than 24 hours prior to your visitor’s arrival. Send an email to: guest@tgocsa.org, no more than 48 hours prior to your visitor’s arrival. The phone number and email address you use must already be registered with the CSA Office for the access request to be accepted. This system cannot confirm that your request was received or respond to any additional messages.

If you are experiencing problems with their service or need to set up a new service, call the number above. Tell them your community at The Great Outdoors has a bulk agreement known as the Bronze Package.

Vehicle Barcodes
If your vehicle needs a barcode installed, call the CSA Office at 321-268-9767 to schedule a REQUIRED appointment. Barcodes are $10 - new or replacement. They install them everyday, but will not do “walk-in” applications. If you need a barcode installed on your Recreational Vehicle, they’ll install RV barcodes on Fridays ONLY, and they want to visit your home or RV site to hopefully complete that barcode installation without moving your RV.

TruGreen regularly applies spray applications to our lawns and common areas that includes an herbicide for weed control, a liquid fertilizer, and an insecticide to kill chinch bugs, and other turf-damaging insects. The application dates for 2024 will be available in a future issue of The Happenings. TruGreen is also offering “service-call” visits to TGO. If you are still having problems with lawn pests or weeds, call the CSA Office at 321-268-9767, and we will put your address on the TruGreen list. TruGreen advises all TGO residents to stay off treated areas of your lawn, and to keep your pets off treated areas, until the application has thoroughly dried.
AED Basics (Automated External Defibrillator)
Have Someone Call 9-1-1 While You Operate AED The Automated External Defibrillator (AED) is a portable electronic device that diagnoses incorrect heart rhythm patterns that could potentially be life threatening. The device treats the condition with electrical shocks. AED use requires minimal training because an electronic voice prompts the user through each step. If you are helping a person who collapsed and you’re unsure if a heart attack is the reason, don’t hesitate to use the AED. Every minute counts. The device determines if the patient needs an electrical shock or not. Simply place the AED pads on the patient’s bare skin, one on the right upper chest and the other on their lower left side. No one else should be touching the patient because false readings could result. The AED will advise you, the device operator, what to do next. TGO has seven AEDs located at CSA buildings. “My hobby turned into my career. Politics was my hobby.” Donnie and her husband, Mike, happened upon TGO in search for a place to get away from the cold Minnesota winters. They received a marketing DVD from our TGO Welcome Center and decided to come take a closer look. Next thing they knew, they owned a lot on Greenwing. “We were camped at Fort Meyers Beach and I was looking all over the state of Florida for something warmer than Minnesota (don’t know why!) and TGO had on their website that they would send you a DVD. So I told my husband that we should check it out. We came here and never left,” explained Donnie. “It was Valentine’s Day and they offered $5,000 off if you bought a lot that day. We sat at the restaurant and decided to buy. That was in 2005.” They both retired in 2007, and made the move to TGO permanently in 2010. Donnie’s passion was politics. She attended a precinct caucus one time and soon after became the precinct chairwoman. She worked on Minnesota Congressman Bill Frenzel’s campaign. She started as a volunteer and was soon running it. She eventually got involved more deeply in state politics and became the vice chairwoman of the Republican Party of Minnesota. She was asked to become the Chairwoman of the Mayor of Minneapolis campaign as the manager. She helped state legislator Tim Pawlenty become a state representative. She was definitely a political influencer in the state of Minnesota. She was friends with all the political people. One of her lawyer friends suggested she would make a good process server. After working for someone she eventually decided to start her own business. She would serve legal papers on divorces and land title summons. She loved to drive and would regularly rack up 50,000 miles a year driving through the city of Minneapolis. She set the record of serving 72 papers in one day! A competitor offered to buy her business at the same time she received an offer to work for a US Senator, so she sold the

business and went to work for Senator Rudy Boschwitz. She provided constituent service, which is when someone had a problem and they contacted the Senator and the Senator would work on fixing that problem. She started in immigration, working with INS. She would listen to the immigrant issue, and work on behalf of the Senator to convince INS to help the immigrant. She got to know the Immigration Director of Minnesota. Being friends had its perks in that she was able to provide extra help on behalf of the immigrants. She also became the driver for Senator Boschwitz. When he lost his last election, she went to work as director of Governor Arne Carlson’s constituent service. After that she moved over to economic security and became an employer ombudsman under Jesse Ventura’s leadership. When national politicians, like Reagan and Bush, came to town, they would try to get her support. Her career provided a lot of unique opportunities. She rode on Air Force 2 when she was working for the senator as she was required to go to all the military cabinet appointments. She rode on a KC 135 refueling plane. She met Haing Ngor, the actor who played Cambodian journalist Dith Pran in the film The Killing Fields and helped him with an immigration issue.
Her favorite job was being chairwoman of the River Heights Chamber of Commerce which covered the communities of Inver Grove Heights and South St. Paul. She was the first woman in 100 years to do the job and she did it for one year. She received the award for American Business Women’s Association of the year in 1991. Donnie was part owner of a steakhouse and cafe in Minnesota. She was also an assistant manager of a restaurant in a bowling alley. She raised four daughters and married Mike while her daughters were teenagers. Mike owned his own business, Hilton Fire Brick, which serviced industrial furnaces. She is an avid football fan. After she moved to Florida she quickly realized she needed to become involved with something. She worked with the Sheriff as part of the citizen patrol. She was also put in charge of Project Lifesaver for the North Brevard precinct. Eddie Hammond, a former TGO CSA Courtesy Patrol, hounded her to become a Courtesy Patrol Officer and she finally did. Her time as a CSA Patrol Officer offered even more unique experiences. She loved being a Courtesy Patrol officer. She says most everyone was nice. She once gave a FedEx semi truck driver a ticket and then had to lead him to the CSA office so he could pay his ticket immediately. The excuse of needing to go to the bathroom didn’t work with her as she would follow them to their home and ticket them after they used the restroom. Donnie didn’t have a problem issuing tickets, even to her friends. They all understood. She liked the driving part the most and was a big fan of the radar gun. She once saw someone driving out of the park at 72 mph in the 35 mph zone. She got the license plate number and ticketed them later. While doing courtesy patrol, she enjoyed monitoring the pool bands and would grade people (A thru D) on whether or not they had their bands. People would later see her around the park and shout out the grades she had given them. Some
people, would run home to get their bands so they could raise their grades. It was Donnie’s idea to start the volunteer of the year program in TGO. Her experience with the chamber of commerce, made her realize the importance of acknowledging people who volunteer. She noticed Lorraine Murphy was doing everything throughout TGO and thought she should be acknowledged. She has since produced all the presentations for the Volunteer of the Year since its inception. Donnie is also the Parliamentarian of our park. Along the way, she became interested in Robert’s Rules, which is the standard for facilitating discussions and group decision-making. She likes the order it brings to meetings. Donnie attends all the CSA board meetings and helps with questions on rules and order. She has been doing this for TGO since she came here - an important position, especially for a community like TGO.
Donnie has several photos with well known politicians along with numerous plaques of recognition hanging on her walls.

It all started innocently enough. Several years back, Frank and Suzy Whitmore hosted a party for their neighbors and close friends - we’re talking like 50 people or so. Fast forward to 2023 and this local party exploded into the TGO party of the year. 50 people grew to about 250. Johnny Danger Live was thrown into the mix, plus a food truck and Jerry the Ice Cream Man. It was a pretty fun atmosphere that took over the Coach Club cul de sac with some dancing and singing. If you missed it last year, you’ll have the chance to be part of the scene in just a couple weeks on Monday, January 15 3:00 - 6:00 pm to be exact - and this year, the “promoters” expect it to rise to the next level. “We’ve upped our game a bit for 2024,” explained Frank. “There will be two food trucks this year, El Heredero Mexican Food Truck will return and we have added a Smash Burger Truck. Plus, we think Jerry will be back. And, of course, Johnny Danger will be playing your favorite tunes.” Note earlier we said “Promoters.” That’s simply because in 2023 some of the new neighbors wanted to get in on the action. “Our street has become a really fun place to live with

all the neighbors who moved in,” said Frank. We have a great team of organizers now, which makes it that much more fun. John and Kathy Drugan along with Craig and Penny Ryan, Judy Lyons and Brenda and Tony Cullen. We’d also like to thank all of our Coach Club neighbors for joining in and making this one of the most epic events in TGO!” So how do you get an invite to the 2024 street party? Well, consider this your invitation. “Anybody in the park is invited. You just need to bring a chair, your beverage of choice and some money for the food trucks. You’ll be able to sit back and enjoy the music and your friends or get up and dance.” Note that the coach club drive cul de sac will be closed to parking... and special thanks to the CSA Courtesy Patrol. All men of the Great Outdoors community are welcome to the Men’s Breakfast the third Saturday of January, February and March. For over 20 years the Men’s Breakfast Group has hosted a tasty breakfast, catered by the Blue Heron, with an informative speaker while allowing the opportunity to meet your neighbors. This year, due to the exceptional speakers, we will need to limit tickets sales to 150 each month. Space in the Great Outdoors Community Church Fellowship Hall is limited. Tickets are now on sale for $12.00 each and can be purchased Sundays in Fellowship Hall between services or by contacting Bill Miller at 321-474-0785. January 20, 2024 we will hear about the reconstruction of our golf course presented by Chuck Kandt, Golf Operations Manager, and Shane Wiley, Greens Superintendent. February 17, 2024 speaker has not yet been confirmed. The March 16, 2024 speaker has held leadership positions with the U. S. Department of Homeland Security and is currently director of Global Security for a multi-billion-dollar international company. Plan to join us from 8:00 am to 10:00 am on these days. Space Coast Birding and Wildlife Festival January 24 - 28, 2024
If you have ever heard melodic sounds from your backyards, or caught a glimpse of something maneuvering stealthily through the tree limbs or shrub bushes, and wondered what is that – then you will know or learn the value of the Space Coast Birding and Wildlife Festival (SCBWF). For decades the Space Coast has been pairing the curious amateur with the top expert birders in the country together for five days of fun and camaraderie. Regardless of your level of birding expertise, the SCBWF offers you a way to safely see and learn about the natural side of the state, along with meeting many other birders and naturalists from across the USA! This is one of the largest, most comprehensive birding and wildlife festivals in the country. The official headquarters of the SCBWF is the Radisson Resort in Port Canaveral. The dates of the festival are January 24-28, 2024. There are 34 birding trips planned over the five days of the festival. They will cover the Space Coast from Merritt Island, to Lake Apopka, Sebastian Inlet, Smyrna Dunes and right here in TGO on the Betty Salter Trail! If a field trip isn’t your cup of tea, but you would still like to see what the festival is all about, visit the Convention Center and the Pavilion at the Radisson Resort at the Port, where you will find more than 90 exhibits geared towards the birding, wildlife and nature enthusiast. Exhibits include destination tour companies, wildlife and birding organizations, nature-based businesses, artists, book sellers, photography, and an outstanding representation of camera and optic equipment. In addition, Swarovski Optik will be offering to clean and inspect your optics equipment, regardless of brand, so take advantage of that wonderful offer! The festival will include several indoor and outdoor photography classes to help you hone your photography skills. There will also be several speakers presenting a wide range of topics from birding Antarctica to demystifying birding in Colombia, digiscoping and how to become a better birder, plus many more. The best part of Pickleball is just having fun which the Club did recently with a dress up for a Christmas contest. The special guests, The Grinch and Cindy-Lou Who, aka Chuck and Charli Johnson, acted as judges. Hazzards of Electric Bikes in TGO

Have you noticed the increased number of Electric Bikes (E-Bikes) cruising around TGO streets lately? They typically look like “mountain bikes” with a battery pack mounted on the top tube. They pedal like mountain bikes, but if pedaling becomes tiresome or tiring, the rider can switch to electric power and make it up the hill, conquer the headwind or make it home, no sweat, with an integral electric motor powered by a Lithium Ion battery. That’s sweet! Many times I have wished for that option on a long ride or on a tough punishing uphill grade. Now it is a reality! They call it “Micro Mobility.” But there is a catch and a cost! I didn’t even know what a “micro mobility” was until I almost got run over by one this morning! The rider (or driver) of this little electrical marvel was wearing a bike helmet and riding on the wrong side of the road! I applaud the use of the helmet, but traffic rules are “Rules Of the Road” even for the lowly walker. “Micro Mobility” Fires in TGO refers to electrical fires resulting from damaged or defective battery chargers for electric bikes, scooters, skate boards or any other lithium Ion Powered transport or fun item that can be invented, manufactured and sold to the public. Don’t get me wrong, I love the concept of “Micro Mobility” and so does the world! It means cheap transportation that you can recharge in your kitchen, garage, out-house or driveway. Lithium batteries were introduced to you in the last issue of The Happenings. They are a miraculous invention! The global micro mobility market is expected to grow from about $40 billion today to $215 billion by 2030. By next year, roughly 40 million E-Bikes are expected to be zipping down city streets worldwide! More and more light electric vehicles and personal transportation devices are populating worldwide markets. Dan Newlin and Morgan and Morgan are getting prepared! While there is yet no comprehensive data on how often E-bikes or scooters catch fire, it does happen with “some regularity,” usually during recharging: 1. Don’t recharge lithium- ion batteries in the rain. 2. Don’t recharge in a closed space with other combustible materials. 3. Don’t drop the batteries, 4. If the battery case is broken or swollen or hot to the touch, do not recharge, replace! 5. Don’t replace your L.I. battery with a budget model. Get the best! 6. Have a knowledgeable E-Bike shop do the repairs, On the important subject of safe operation of E-bikes and E-scooters, be aware of the fact that you are operating a MOTOR VEHICLE on public roads and are subject to the same dangers and responsibilities as the operator of a car, a motorcycle, even a manually powered bicycle. I know, “simple solutions” do often get complicated.

Funny Thing Is… Calendars Eat Up My Year I finally figured out why I can’t lose weight. It’s that darn calendar. It’s not my fault after all (or is it?). As we embark on a new year with this annual goal, consider this. You start the year with the very noble resolution of “This year I’m gonna lose weight.” You might as well say “This year I’m gonna hit the lotto” because the odds of both happening are pretty close. So why should I blame the calendar? Start in January. You make your resolution and for a couple of weeks it works perfectly as you diet, exercise, and drink lightly. Then February hits. Uh oh. Valentine’s Day. Chocolates everywhere. Not going to lose weight eating a confectionary named after a naked lady on a horse. You know Godiva chocolates? Then March comes along. St. Patrick’s Day. Green beer flowing from every tap and Shepherd’s Pie. Think you’re gonna shed a few after that? April arrives with Spring Break, rolling out the grill, drinking at the beach. May? Memorial Day. Hot dogs, burgers, and beer. June starts summer vacation. Are you going to start dieting on vacation? July? Fourth of July. Ditto Memorial Day. August, back on the diet after you get the kids off to school. September? Labor Day. More burgers and dogs. October brings Oktoberfest a celebration of German culture featuring, you guessed it. MORE BEER. November is Thanksgiving and between food, football, adult beverages and constant naps after each. Uh, not going to lose pounds this month. And finally December with nonstop parties, food, drinks, cookies and cakes everywhere. Looks like your wait for weight loss will have to wait until we lose the calendars. Dr. Sammy

Ingredients 2 tablespoons canola oil 1 pound ground beef 2 1/2 tablespoons taco seasoning Salt and pepper One 15-ounce can refried beans One 16-ounce container sour cream 1 1/2 cups shredded cheddar cheese 1 large tomato, cored and diced
1 Hass avocado, diced 1 jalapeño, stemmed and very thinly sliced crosswise 1 cup lightly packed cilantro leaves (optional)
Directions Heat the canola oil and cook the the ground beef until browned and cooked through. Add the taco seasoning and 1/2 cup of water and cook, stirring occasionally, about 3 minutes. Season with salt and pepper. Let cool. Spread the spiced beef in a 9-by-13-inch baking dish. In a medium bowl, stir the refried beans with a generous pinch each of salt and pepper until smooth. Spread the beans on the beef. Spread the sour cream over the beans, then sprinkle the cheese, tomato, avocado, jalapeño and cilantro on top. Serve with hot sauce and tortilla chips.
