With a growing human population and increasing demand for food in general and protein in particular, every human activity needs to be scutinised for its use of natural resources, and environmental, economic and social/human impacts.

Our lead feature looks at exactly these issues: why sustainability is important and, from the practical point of view, how to measure it.These aspects were covered at a satellite conference at the International Production and Processing Expo in Atlanta earlier this year.

policies and practices have contributed to this goal.

People in many different capacities, from farmers to consumers, have shared this vision and contributed to it.

The fifth annual Animal Agriculture Sustainability Summit at the International Production and Processing Expo (IPPE) in January this year covered operational approaches to sustainability to help identify and discuss the challenges for the future.

Two different viewpoints were presented at a conference on the future of sustainability for the poultry industry.

WHy SUSTAINABILITy MATTERS “Sustainability is a very important topic and takes me round the world,” said Bryan Weech, Director of Livestock for the World Wildlife Fund (WWF), by way of introduction to his presentation.

Animal agriculture - and agriculture generally - increasingly understands the long-term trends. WWF aims to help the food chain understand how it makes changes and it is now waking up to the challenges, he said.

The big questions are how and why this is important.

Eating and access to food affect us all as do environmental, economic, societal and political issues.

Animal protein production starts before the livestock on the farm and go both upstream and downstream, he said.

Key is how to utilise resources to provide for future generations because, as Mr Weech explained, we are currently consuming one-and-a-half times this planet’s resources.

Looking ahead to 2050, he said, there will be between two and three billion more people, income will have increased by a factor of 2.9 and consumption of food, especially animal protein, will have risen even more rapidly. Furthermore, 70 per cent of the human population will live in cities, making food security, selfsufficiency and trade issues ever more important.

Conflicts over natural resources may occur.

Global food production in the next 40 years will have to match that of the last 8,000 years, according to Mr Weech. “We are eating the planet,” he said.

Agriculture is the human activity which uses the most resources, he said, adding that it produces the most greenhouse gases (GHG) and that animal protein accounts for the greatest share of GHG produced by agriculture. Water use will also become increasingly

critical as droughts become more common across the globe as the result of climate change. Agriculture accounts for 70 per cent fresh water used today.

The world’s top food exporters are also those most affected by drought over recent years, which has led to disruptions of trade patterns. And a further 24 per cent more land will be needed to feed future generations, which WWF sees as leading to huge changes in terms of biodiversity and water use.

“Sustainability matters in a multi-faceted way,” said Mr Weech, “We need to freeze the footprint of food production.” WWF aims to make all food production more sustainable.

GDP growth is fastest in countries that are food importers so they cannot export to overcome problems.

Mr Weech explained that collaborative approaches are having some success. A group of 50 countries, the Consumer Goods Forum, for example, has agreed to take deforestation out of the supply chain by 2020 for four commodities and it has US government support. The Banking Environmental Initiative, led by 10 banks, is also aiming to reduce deforestation, starting with the palm oil business in Indonesia and later focusing on soybean and beef production in Brazil.

Mr Weech believes this will affect the way we do business in future.

Individuals can have an impact but we need to work together to produce more with less, said Mr Weech.

Food companies can impact the whole supply chain, he concluded.

Water stress is a function of the amount of water use and the amount of water available (water use/water availability) and can be used as a predictor of direct economic costs. A map of the world shows that water threat is increasing in western Asia particularly as well as northern Africa to a lesser extent; in these regions, current water use is unsustainable. In southern and central Asia and the Caucasus, water scarcity is approaching, according to UN estimates.

MEASURING WHAT MATTERS “In Nature, everything is connected and Nature is closely linked with economic systems - and added to that, everything is changing,” Dr Greg Thoma of the Center for Agricultural and Rural Sustainability at the University of Arkansas told the Animal Agriculture Sustainability Summit.

Change imposes risks on the economy and on businesses, he continued, but we need to recognise that bias affects all our decisions.

This is a global issue, with many countries in west Asia, Africa and much of South America dependent on food imports. Forty per cent of the Earth’s land area is crop or pasture, he said. It has been estimated that we need to treble food production to meet the growing need and that research and technology will cover an increase of about 2.5-fold.We need to measure what matters and what we can control, according to Dr Thoma.

Turning to China to illustrate the complexities of the issue, he pointed out that while the flow of the yellow River has fallen over the last 40 years, that of the yangtze has risen. So the prediction points to the east of the country becoming wetter while the west gets drier. How can that be managed, he asked, and what will be the overall effects of China’s agriculture?

Water is one of the most critical resources, he stressed.

Putting water into the poultry context, it has been estimated that an average chicken requires a total of 1,170 litres of water from growing the feed crops to the table. However, the actual figure will vary widely, depending on the production method and even where the maize for the feed is grown, for example.

Dr Thoma went on to define sustainable agriculture as one which will: • meet the needs of the present while enhancing the ability of future generations to meet their needs • allow increasing productivity to meet future food demands • decreasing impacts on the environment improving human health, and • improving the social and economic well-being of agricultural communities.

out one hectare more of land or one drop more of water, he said.

The major challenges in the food system stems from the facts that many consumers are far removed from producers and that the complexity of the supply chain results in perverse feedback systems and irrational decisions. Furthermore, volatility of food prices creates immediate human suffering and political instability, especially for the bottom billion - and it is the increasing prosperity of these same people that will affect the future prosperity of all humanity, according to Dr Thoma.

Making the Poultry Industry More Sustainable MEASURING SUSTAINABILITy Measurement depends firstly on metrics, quantifiable phenomena to measure an end point, Dr Thoma said.

The aggregation of metrics to a single number (index) requires normative criteria for integration of metrics with different units. The index is used to create the baseline or benchmark to measure change over time.

For each crop, a “spider’s web” is created using one axis for each of five efficiency indicators: land use, energy use, soil loss, irrigation water use and climate impact. Using the examples of maize, soybeans, wheat and cotton, Dr Thoma showed that overall efficiencies have been registered for all crops - to varying degrees - between 1987 and 2007.

Life Cycle Assessment (LCA) is one method for measuring the inputs and outputs in a process in a step towards quantifying sustainability standard methods for LCAs include ISO 14040 and 14044 Standards and PAS 2050 for greenhouse gases. However, there are no standards for Life Cycle Inventory, he said, and no guidelines for most other metrics.

Measuring sustainable metrics is important, he said, because sustainable management equates to risk management. Threats to sustainable supply chains come from safety, security and stability.

In LCA, each process is examined for its inputs from Nature and from other processes and its outputs to Nature and other processes. These are then connected together to account for the impacts ‘from cradle to grave’ for all the raw materials that are required to produce the product in question.

LCAs should help us to understand and manage the supply chain but the complexity of the food chain makes this very difficult in practice and there is debate over appropriate cut-off points. Furthermore, taking the chicken as an example, how should the LCA be allocated to the various parts of the chicken?

The legs and breast could be assessed separately and this could be done by mass or by value, which could greatly influence the result.

There are a great many sustainability initiatives but Dr Thoma stressed that they should all have four vital features: outcomes-based, science-driven, technologyneutral and transparent.

USDA-backed Field to Market, he explained, is a collaborative stakeholder group of producers, agribusinesses, food and retail companies, and conservation organisations that are working together to develop a supply-chain system for agricultural sustainability.

They are developing outcomes-based metrics to measure the environmental, health, and socioeconomic impacts of agriculture, beginning with national scale environmental indicators for a number of US crops.

Finally, Dr Thoma outlined the eight stages in the metric framework that supports sustainability:

• define critical impact metrics • benchmark performance for each metric • develop and adopt goals for improvement across each metric • implement improvement strategies • measure each metric using best scientific methods at prescribed frequencies • report results, and • adjust and adapt practices as necessary.

Population growth coupled with improvements in real incomes, particularly among the poorer sectors of communities, virtually guarantees an annual expansion in hen egg production. While the global human population increased by just over one per cent a year from 6,122.8 million in 2000 to 6,895.9 million in 2010, hen egg production expanded by more than two per cent a year from 51.0 million tonnes to 63.8 million tonnes. However, it should be noted that these figures (see Table 1) include a percentage of hatching eggs estimated globally to be around five per cent.

There are no official figures for the production of egg products. An estimate for 2012 is presented in the table, pointing to a global total of around five million tonnes.

Although output will have expanded during the past decade or so, the annual increases are not likely to have been as consistent as those for shell eggs. Product production will have varied from year to year not only in relation to changes in the demand from food processors for the various forms of egg products but also with changes in the

available supplies and prices at which egg product manufacturers can obtain eggs for breaking.

While, in general, the volume of egg product production depends upon the quantities and prices of surplus table eggs from the conventional shell market, the expansion in the demand for egg products, especially in developed economies, is putting this sector of the egg industry on a firmer footing, and indeed, in some countries, and particularly in the US, large laying units have been established to supply eggs solely to egg processing plants. A guide as to how the market for egg products has widened is given in the claim by the US company, General Mills, that it markets egg products in some 100 countries and that, in the two years since January 2010, it has launched more than 800 egg-related products.

In addition, the past decade has witnessed a significant increase in the number of uses for egg products outside of the traditional baking/food manufacturing sectors, with more products being used for the production of nutritional as well as health-related and medicinal items. Indeed, there is a view that the health/nutritional benefits of egg products may be key to future growth of the egg products sector.

With limited official data on egg product production, the figures presented here are best estimates and in some instances, little more than educated guesswork. Looking specifically at 2012, hen egg production is likely to have been around 65.3 million tonnes which, after deducting an estimate for hatching eggs, puts table egg output at some 62 million tonnes.

It is considered that there are about 350 egg pro-

cessing plants worldwide and that in 2012, they had an estimated capability of producing around five million tonnes of egg products (expressed as shell egg equivalent). This would equate with some eight per cent of the global total for all table eggs. However, it should be noted that there can be a considerable difference between processing capacity and actual plant output depending on local conditions in the shell egg market, as some breakers may have had to operate at less than their full plant capacities.

Europe is the largest producer of egg products with the ability to utilise some two million tonnes of shell eggs a year, equivalent to around 19 per cent of table egg output.The bulk of production comes from some 100 or so plants sited in European Union countries, which can produce more than 1.6 million tonnes of products a year, equivalent to almost 25 per cent of table egg output, a figure which, according to Filiep Van Bosstraeten, CEO of Ovobel Ltd, could rise to between 30 and 35 per cent by 2015.

Within the EU, the Netherlands is the largest manufacturer of egg products with an annual output approaching 240,000 tonnes which, when related to table egg production, is high at around 36 per cent or more, as significant quantities of products are manufactured from imported shell eggs.

FEAtURE ARtIClE has been confidently predicted that the figure will rise substantially in the foreseeable future.

In the whole of Central and South America, there are fewer than 40 products manufacturers with a combined annual output approaching 400,000 tonnes representing almost seven per cent of table eggs. More than 70 per cent of this region’s total is manufactured in Mexico, Brazil and Argentina. Around 13 breakers in Mexico have a combined capacity of around 175,000 tonnes (about eight per cent of shell eggs) a year. Brazil has a similar number of processors handling about 100,000 tonnes a year, or six per cent of total egg output after having adjusted for a particularly high percentage of hatching eggs for the broiler sector.

Argentina has some 10 plants capable of producing around 80,000 tonnes - about 16 per cent of egg output.

France is the second largest producer in the Community product output representing about 25 per cent of total production. Spain and the UK are the other major products manufacturers, output representing about 17 per cent of production in the UK and some 14 per cent in Spain.

In stark contrast in the two largest European egg processing countries outside the EU, Russia and the Ukraine, the proportion of table eggs converted into products is well below below two per cent.

North America is the second largest egg productsproducing region, with some 60 factories having a combined annual output of about 1.7 million tonnes shell egg equivalent, of which nearly 90 per cent will have been manufactured in the US, the remainder being produced in Canada. US products represent between 27 and 28 per cent of table egg production, while the corresponding figure for Canada is around 25 per cent. In some years, around 30 per cent of US table eggs have been converted into products and it

Although egg processors in Asia have the capacity to turn some 800,000 tonnes of eggs into products, this represents only about three per cent of table egg production. In most of the countries in this region, the proportion processed is generally no more than one per cent although there are a few notable exceptions namely Japan, Korea and Taiwan.

Japanese processing plants produce some 500,000 tonnes a year or 20 per cent of its table egg production.

However, in addition, approximately 750,000 tonnes of domestic shell eggs go to the hotel, restaurant and food-service sectors, of which a large proportion are broken in-house for food dishes or fast-food products.

Hence, approximately 50 per cent of Japan’s egg production ends up in some form of egg products.

The corresponding percentages for Taiwan and Korea are 15 per cent and eight per cent, respectively. However, it must be appreciated that utilisation of just one per cent in the massive egg-producing country of China still represents an egg products output of more than 200,000 tonnes a year, a figure which relates to only 18 factories and does not include the production from in-house plants owned by food industry companies.

INTRODUCTION Keeping birds comfortable during hot, humid weather is critical for optimising weight gains, feed conversion and livability. Improved growth rates and the trend to heavier average market weights contribute to greater heat loads in modern broiler barns.While the poultry industry has made significant strides to minimise seasonal effects, even the best housing design can still result in birds settling with lighter weights when nature turns up the temperature. Current methods used by the industry to overcome heat stress include tunnel ventilation that uses exhaust fans to rapidly move air along the length of the barn. When wind speed alone no longer provides adequate bird cooling, water is circulated over the cooling pads to cool the air entering the house. The final stage of cooling involves the use of interior foggers that saturate the air with a fine mist to increase air cooling. In both cases, the air temperature is reduced by water evaporation, absorbing heat from the air. Unfortunately both systems tend to saturate the barn air with moisture (>70 per cent relative humidity, RH), which is counterproductive to the bird’s own natural ability to cool itself by evaporative heat loss through the air that it breaths out.

A second challenge with recirculating cool-cell systems is the significant water usage that is directly correlated to outside temperature and how rapidly the air moves through the house. Figure 1 shows that a single 40 by 400 foot barn with 120 feet of pads used as much as 2,500 gallons of water per day with 38day-old birds present (does not include bird water consumption). Cooling water consumption could be even higher under 100°F days with the same age of

flock. Drought conditions during the 2012 summer were a wake-up call for many producers regarding the need to better conserve water yet maintain good bird performance.

SPRINKLERS VERSUS FOGGERS An alternative to the traditional cool cells and foggers is the sprinkler system which works by cooling the birds instead of the air. Cattle and hogs are often cooled in hot weather by sprinkling with water. Only a few years ago, poultry producers avoided catastrophic losses by hosing birds with water during extremely hot weather (if fans were present).

Low-pressure water sprinkling does not cool the barn air but rather works by wetting the birds' feathers. Heat is then absorbed directly from the birds as these water droplets evaporate and are carried away by the tunnel fans.

The natural response of any producer or live production manager is the thought that sprinklers will soak the litter causing terrible conditions. This is proving to simply not be the case; sprinkler houses are actually drier than cool-cell and fogger houses. The computerised sprinkler control systems take into account bird age and barn air temperature to determine how much water will be 'sprinkled' and at what intervals – less water is used via sprinklers when birds are

FEATURE ARTICLE young than when birds are older, covering more floor space and generating more heat (Figure 2).

As more cooling is required, there is less opportunity for the water to fall on the floor. Sprinkler systems use intermittent spraying of controlled water volumes followed by sufficient time for the water to evaporate and be removed by 500+ feet per minute wind speeds. As a result, litter conditions in the sprinkler houses, as measured on the day of sell, were similar to those in the cool-cell houses (Figure 3).

One significant difference with sprinklers as compared to cool cells is the air temperature inside a chicken house with sprinkler cooling is either the same as or only slightly lower than the outside air. As a result, the humidity of the air in a sprinkler house is similar to the outside air, but consistently lower than that of the air in a cool-cell house as shown with the dotted lines in Figure 4. It is important to note that when barn temperatures are at or below the set point, birds readily give up the extra heat they generate to the 'dry' air that moves over them.As barn temperature rises above the desired set point, birds no longer cool themselves by the air carrying or 'convecting' the heat away (also called sensible heat loss) and additional evaporative heat removal is needed. With sprinkler systems, the controller utilizes

bird age and temperature information to increase the amount of water as needed for bird cooling. Increasing the sprinkler run time or decreasing the time between sprinklings will compensate for the higher temperature so birds stay comfortable. While sprinkler houses may have higher air temperatures than cooling pads or fogger houses, adequate cooling is still achieved by direct evaporative heat loss from the feathers and increased respiration losses from the birds’ lungs due to lower air relative humidity (Figure 4).

SPRINKLERS SAVE WATER Due to the focus of water evaporation at each individual bird’s surface, the cooling water used by sprinkler houses averaged 70 per cent less than the cooling water used by the cool-pad-only houses. In tests conducted at the Applied Broiler Research Farm of the University of Arkansas over five summer flocks, the sprinkler houses (pad cooling turned off) used in the range of 4,000 to 10,000 gallons of cooling water per flock per house (40 by 400 feet), compared to the pad-cooling houses (range of 20,000 to 40,000 gallons per flock) (Figure 5). Results from three summer flocks when sprinklers and cooling pads were used in combination (cool pad set points were set at 17°F higher than house environmental controller set points) show that the combination-cooling house saved 40 per cent of cooling water compared to its paired pad-cooling house. Supplementing the sprinklers with the cool cells under extremely hot conditions may be necessary to gain the best flock performance and water savings.

GENERAL LAyOUT AND OPERATION FOR SPRINKLER SySTEMS The sprinkler system in a typical broiler house includes two or three lateral PVC lines with low-pressure (30 to 40 pounds per square inch, psi) sprinklers, depending on the width of the house. No booster pump is needed. Sprinklers should be evenly placed 20 feet apart and staggered on adjacent lines to ensure uniform floor coverage.The sprinklers should be grouped into zones with up to 20 nozzles in each zone. This allows the water to be activated by zone to avoid overwhelming the water supply on the farm.

evaporation. Aluminum foil or pie plates are used as easy and inexpensive shields. Sprinklers are typically recommended for use after flock age of 21 days (for flocks raised to medium market weights) to minimise the possibility of most of the water ending up on the litter due to low floor coverage by the birds.

Cooling is achieved by intermittently spraying large water droplets uniformly into the house, typically beginning flock age of 21 days under normal stocking density.

The amount of water spray varies according to the total live weight of the birds and the thermal condition inside the house.

The relatively dry and fast-moving air inside the house helps to remove heat from birds' respiratory pathways to keep them comfortable and gives a chance for moisture to escape from the litter.

Cooling water is significantly reduced since the birds are the cooling target instead of the air.

‘The world’s most promising meeting point to boost your business from Feed to Meat’. That is the pledge made by the organisers of VIV Asia about the forthcoming 11th edition of the trade show.

Antibiotics are still widely used in food animal production in many parts of the world.Their use includes the prevention of bacterial infections and because of low costs and availability of some without prescription, antibiotics can be an often used medication.The widespread occurrence of multi-resistant bacteria is becoming a threat for future human and animal health. One consequence of this is that humans get scared and question whether it is safe to eat meat and eggs.

Taking place from 13 to 15 March 2013 at the BITEC exhibition centre in Bangkok, the show no longer just focuses on Thailand and its neighbouring countries, they say, but it now extends to the whole of the Far East and the Middle East, Australia, New Zealand and Africa.

The last edition of VIV Asia, in 2011, attracted 29,000 visitors from more than 100 countries and the wider scope of this year’s event is predicted to raise attendance further.

MEATTECH 2013 MeatTech Asia 2013 is a new feature for this edition of the show, presenting international suppliers active

FEATURE ARTICLE in technology to slaughter and process pig and poultry meat.

Throughout Asia, the demand for equipment and new technology has experienced a massive boost as slaughterhouse operators and meat processors search for efficient systems to speed up processing, manage food safety and reduce costs in terms of manpower, floor space and energy. Opportunities associated with the launch of the Asean Economic Community in 2015 are also fostering increased investment and upgrading of processing and packaging lines. Already some equipment suppliers have seen of sales of cooking equipment in Thailand double as producers opt for complete solutions that offer better yields rather than stand-alone machines.

It is these advances that will be addresses at MeatTech Asia 2013. This special feature consists of a presentation of 25 suppliers at the exhibition, representing some 40 leading brands of equipment for slaughtering and meat processing.

In addition to the MeatTech Pavilion at the exhibition, ‘Asian Meat’ Magazine (a publication of Asian Agribiz) and VIV present a conference on 13 and 14 March, running each day from 14:00hr to 16:00hr. Throughout Asia, investments continue in technology and equipment for the Milling, Processing, Storage and Handling of raw materials to produce Feed. The rap-

ITALy - Incomplete destruction of phytate is compromising the profitability and sustainability of the animal feed industry, according to information presented at the second International Phytase Summit (IPS 2) in December.

FRANCE - LIMA has dramatically improved the quality in terms of recovered meat texture.

Hosted in Rome by AB Vista, the University of Sydney (Australia), University of Maryland (USA), Massey University (New Zealand) and Schothorst Feed Research (The Netherlands), IPS 2 welcomed more than 70 delegates from 18 countries and nearly 50 universities, institutes and companies. Collectively these delegates account for around a third of all scientific papers published on phytase research in the past few years.

The LIMA DDS range allows to reach with yields up to 40 to 80 per cent on chicken trimmings, V-bones, necks with a MDI less than 58.1 per cent.

Poultry Industry News AVIAN INFlUENZA OUtBREAK IN MExICO RAISES CONCERNS ABOUt PRICE SPECUlAtION MEXICO - The dreaded avian influenza has returned to central Mexico again this year, this time causing significant poultry deaths in Guanajuato state, writes Carlos Navarro, Editor of SourceMex. The outbreak of the H7N3 virus—which had forced poultry farmers in the state of Guanajuato to destroy more than 2 million birds as of the end of February — affects municipalities in northern Guanajuato as well as in Jalisco state.

SENASICA, the national food safety authority, said the outbreak originated at a broiler breeder farm, initially spreading to 17 breeder farms owned by the firm Bachoco. The virus was later discovered on 20 other farms in the area. (A Pilgrim’s Pride breeder farm was also affected).

US - Developing strategies to increase the amount of saleable product while reducing dietary inputs is a priority for animal scientists. University of Illinois researchers have been looking at how dietary components affect gut health and disease resistance in chickens.

AUSTRALIA - The Poultry CRC continues to attract exemplary PhD candidates. One of its latest recruits, veterinarian Dr Jemma Bergfeld (based at CSIRO’s Australian Animal Health Laboratory, AAHL) is set to unravel the mechanisms underlying Newcastle Disease (ND).

"An important nutritional outcome is how well an animal is able to digest and metabolize its diet," said Ryan Dilger.

Caused by virulent strains of avian paramyxovirus type 1 (APMV1), this devastating and highly contagious virus is regarded as one of the most important diseases affecting poultry globally. Previous outbreaks of virulent Newcastle disease virus in Australia have been associated with high economic and social costs, not to mention the welfare impact on the birds themselves.

Poultry and swine nutritionists are concerned about dietary fiber in alternative dietary ingredients, particularly the by-products of biofuel production.

Fiber concentrations are very high in these ingredients because the starch content is removed during processing.

NCC SUPPORtS IMPROVEMENtS IN tRANSPORtAtION EFFICIENCY AND SAFEtY US - Rep. Reid Ribble (R-Wisc.) and Rep. Mike Michaud (D-Maine) have introduced H.R. 612, the Safe and Efficient Transportation Act, that would modernise truck weight laws, which have not been updated in over 20 years, and bring relief to the nation's agriculture sector.

The federal weight limit has been set at 80,000 pounds for more than 25 years. This measure gives states the option to increase truck-weight limits to 97,000 pounds with inclusion of a sixth axle on trucks.

NEW DRUG DEVElOPED tO COMBAt FlU PANDEMIC AUSTRALIA - CSIRO scientists have helped to design a new drug to safeguard against epidemic and pandemic flu strains – as published in "Science".

The new drug has been proven to be effective in preventing the spread of different strains of influenza in laboratory models – including resistant strains of the virus.

The breakthrough is the result of a global collaboration between scientists from CSIRO, the University of British Columbia and the University of Bath.

Poultry Industry News tEtRA'S lONG lIFE PROGRAMME HUNGARy - In the last 40 years, classical reciprocal recurrent (RR) selection was successfully used to enhance egg production of TETRA-SL brown egg layers by 100 eggs. Further significant improvement in the number of eggs can be achieved by improving persistency.

TETRA Ltd started a programme in 2008 to improve existing layer lines of Tetra, and establish new strains selected for better persistency.

In a Tetra study, a group of experimental combinations were tested for a longer laying period till 90 weeks of age.

Performance test results conducted in cages showed that among the tested Rhode Island type single cross combinations, significant differences were found, the main cause being the variation in persistency of egg production.

Breeding & Genetics FEMAlE CHICKENS MADE MAlE IN ExPERIMENt JAPAN - Researchers successfully converted an unhatched chicken embryo that would have developed into a female chicken into one that would become a male, a research team from Hokkaido University has said.

Daily yomiuri Online reports that the team led by Asato Kuroiwa, an associate professor at the university specializing in studies of the sex-determining mechanism and sex chromosome evolution in mammals, announced its findings in an electronic edition of the journal Proceedings of the National Academy of Sciences of the United States of America, earlier this month.

In mammals, a gene called hemogen plays a role in the development of cells that later produce blood.

Poultry industry news Mexico continues to carry out Biosecurity Measures MEXICO - Mexico animal health authorities carried out inspections on 158 poultry production units in the state of Guanajuato as well as farms in Aguascalientes and Jalisco.

Mexico's National Service of Health, Food Safety and Quality (SENASICA) reported that so far, it has completed inspection of 49 farms and 32 backyard poultry farms in the municipalities of Dolores Hidalgo Guanajuato, San Miguel de Allende, Cortazar, Juventino Rosas and San Diego Union, over 16 units in Encarnacion de Diaz and Lagos de Moreno, Jalisco.

The Ministry of Agriculture, Livestock, Rural Development, Fisheries and Food (SAGARPA) reported that in total, 3.2 million chickens have been vaccinated to prevent further outbreaks.to sustain itself as well as a suitable environment to carry out respiration, the process of generating energy.

Poultry Industry News COPING WItH A VOlAtIlE FEED GRAIN MARKEt ANALySIS - Three consecutive years of bad weather events around the world together with volatile markets that have been seen since 2007 have created uncertainty in the grain and protein meal market, writes Chris Harris.

While there were flat wheat markets around the world until 2007, an extreme drought in Australia started the period of volatility, the UK's Agriculture and Horticultural Development Board senior analyst, Jack Watts, told the Outlook 2013 conference in London on Wednesday (13 February).

A succession of weather conditions has affected the maize and soybean markets globally as well as wheat and these weather induced production issues and not demand have driven feed costs higher.

Mr Watts said that with already low stocks as well, global demand might need to be rationed through high prices.

EU - The Animal Health and Welfare Panel of the Euroepan Food Safety Authority is to identify a set of science-based animal welfare indicators and sampling protocols to assess the effectiveness of stunning and slaughtering processes.

BRAZIL - Six Brazilian processing plants - one for pork and five for poultry - have been approved for export to China.

The action follows a meeting of nearly 100 participants from EU institutions, Member States, industry and non-governmental organisations (NGOs) with scientific experts to discuss the identification of indicators and procedures to monitor animal welfare at slaughterhouses.

At the meeting on 30 January, EFSA presented its work in this field and facilitated the exchange of information and experience among scientists and stakeholders.

EFSA’s Panel on Animal Health and Welfare Panel (AHAW) will consider information gathered at the meeting in preparing four scientific opinions to be published by end of 2013.

CHERKIZOVO StARtS UPGRADE At FlAGSHIP PlANt RUSSIA - Cherkizovo Group has started renovation of the processed meat product plant at its flagship Cherkizovsky Meat Processing Plant.

The renovation project involves a multiple increase in processed meat production capacity and a significant expansion of the product range.

tendencias Avícolas Mundiales: Mayor cantidad de gente en América come más huevo El consumo promedio de huevo en América se calcula en 11.4 kg por persona, que es mayor que la cifra a nivel mundial escribe el observador de la industria Terry Evans en su análisis de las tendencias de consumo de huevo en la región. Sin embargo el promedio no muestra la realidad de que existe una enorme variación de consumo, de menos de un kilo en algunos países a más de 22 kg en México.

En el mismo período el consumo promedio en América aumentó de un estimado 10.6 kg a 11.4 kg/persona. Estas cifras se utilizan mejor como guía de la tendencia, y no se debe prestar demasiada atención a los niveles, ni a los pequeños cambios de año en año. Estas cifras son cálculos de suministros disponibles, divididos entre las estimaciones de población humana.

Prácticamente en todas partes está creciendo el consumo de huevo por persona. Globalmente, el promedio ha aumentado de un estimado 8.1 kg/persona al año en 2000, a 8.9 kg en 2008, manteniéndose estable en ese nivel en 2009. posee en su casa aves exóticas silvestres?

Existen muchas probabilidades de error en los cálculos alrededor del número estimado de ponedoras (especialmente cuando las parvadas en las aldeas o traspatios son una contribución significativa a la producción), de los rendimientos promedio, del peso promedio de un huevo (donde el consumo se expresa en kilogramos/persona), así como en las estimaciones de la población humana.

De hecho, la variación entre las cantidades reales y teóricas de huevos para consumo puede variar entre 5% y 20%, dependiendo de la fiabilidad de los datos utilizados en los cálculos.

Lo más importante es que no se deben considerar estas cifras como reflejos de cambios en la demanda de huevos. Para la mayoría de los países la cifra de suministros disponibles es ampliamente una medida de la producción nacional.

Cuando los productores han sufrido pérdidas o prevén la posibilidad de pérdidas, la producción se reducirá y se reflejará en un menor consumo/persona, sobre todo porque en la mayoría de los países la población humana aumenta de un año al otro.

Por lo tanto, movimientos de la producción hacia arriba o hacia abajo se reflejan normalmente en cambios similares en el número, o en el peso de los huevos consumidos por persona. Las variaciones en la demanda son mucho más difíciles de medir, ya que dicha evaluación no solo debe tener en cuenta los cambios en las cantidades de compra, sino también cómo han cambiado los precios de los huevos con el tiempo. El cálculo también puede implicar una evaluación de los movimientos de precio y las compras de productos competitivos, así como cambios en los ingresos del consumidor y preferencias, para dar una imagen más clara de por qué ha cambiado la demanda.

Se prevé que entre 2000 y 2015 la población humana global aumentará en 1.2 mil millones (20%) a unos 7.3 mil millones. Para América se espera que el incremento sea de alrededor de 147 millones (18%) para llegar a 982 millones de personas. Como resultado, parece que esta región se mantendrá en su participación global de alrededor de 13.5%.

En base a los datos de la FAO de consumo promedio global de huevo, en América el consumo aumentó 0.8 kg/persona al año entre 2000 y 2009, aunque en ambos casos hubo poco movimiento en los últimos tres años de este período.

La diferencia en el consumo promedio entre los países es enorme, y va desde menos de 1 kg/persona a más de 20 kg/persona, lo cual sugiere un enorme potencial de crecimiento en el futuro para muchos países de esta región.

Aunque según cálculos de la FAO, en 2009 Paraguay registró el mayor consumo de huevo por persona, de 19.5 kg, ahora se acepta ampliamente que los mexicanos comen más huevo, el promedio citado por la Comisión Internacional del Huevo para el 2010 fue de 365 huevos/ persona aunque esto se contrajo a 358 en el 2011, lo cual a 62 g/huevo equivaldría a un consumo de 22.2 kg/persona.

El consumo en EUA declinó dramáticamente desde el récord de 311 huevos/persona en 1965, a 234 en 1990. El consumo se recuperó luego a 255 en el 2000.

Sin embargo, desde entonces se ha estabilizado en unos 247 huevos/persona. El número de huevos con cáscara consumidos en promedio es de alrededor de 171, mientras que se comen 76 huevos más en forma de ovoproductos.

Sin embargo, las previsiones a largo plazo del USDA revelan que aunque el volumen total de huevo consumidos en EUA muy probablemente aumentará de 6.5 millones de docenas a casi 6.8 millones de docenas para el año 2021, debido al crecimiento de la población y en base al consumo por persona, el promedio disminuirá a alrededor de 239.

En 2015 las poblaciones de los Estados Unidos (EUA), Brasil y México serán de 324 millones, 203 millones y 120 millones respectivamente, manteniendo su participación de dos tercios del total regional.
