Not too cold, not too hot; that’s the perfect way to describe the weather in much of Portugal in Spring. Go south to the Algarve, and you’ll find a mixture of mild to warmer days, with an average temperature around 22 degrees C (72 degrees F). The nights are still cool though, so make sure you pack a light coat or a cardigan.
Madeira in Spring is just slightly cooler than the Algarve, with averages of around 20 degrees C (68 degrees F). In the Azores region, the weather steadily starts to get better around this time of year — sunnier for sure. You may still experience a few rainy days, but it won’t be as gloomy as it can be in the winter. In the Lisbon and Porto regions, the average temperature for May is around 20, and 17 degrees C (62, and 68 degrees F). Very springlike, and still low crowds. Thanks to Daylight Saving Time, Portugal’s clocks “spring forward” in March so by May, the sun is up by 6 a.m. The days are finally feeling longer, the sun shines more, and you’ll get to see our spectacular Portuguese sunsets around 8:30 pm.

Oeiras hosts the Somersby Out Jazz music festivals every year, starting in May and running to September. Funchal (the capital of Madeira) hosts its famous Flower Festival every spring. Thousands of people visit the festival every year, when the city is full of flowers. The festival has a Flower Parade with huge floats and people dressed up in costumes decorated with flowers. One delightfully special aspect of the Flower Festival is the Wall of Hope, where children place flowers signifying hope for world peace.

For car lovers, the Rally de Portugal happens every year in May in Porto. It’s part of the World Rally Championship, considered to be the highest level of international rallying. First started in 1967, the rally was put on hold from 2002 to 2006 but returned in 2007.
Finally, May 13 marks the anniversary of the first apparition of Lady of the Rosary — a significant religious event in Portugal that takes place in Fátima. The main religious activities take place on May 12 with a candlelight procession, and close on May 13 with the Adeus (Goodbye) Procession.

SPRING SURPRISES Fish
It is not an easy task to handle a 70-kilo longfin tuna or a 20-pound corvina. But at The Ribeira Market in Lisbon, it's possible to see fishers do just that – looking like more weightlifters or fighters, they strive for big, fat Atlantic fish fillet that usually makes its appearance in Spring. Even more humble specimens, such as mackerel, are also in their fattest (and tastiest) season. This is the joy of feasting with spring fish and seafood in Portugal
Seafood
Spring is the ideal time to eat seafood on the coast and sip the local wine outside. Cockles, mackerel, sea bass and sea urchins and are at their best in this season. There's an old Portuguese saying refrain from eating shellfish in the months without the letter 'r', so between May and August. So April is best for cockles and oysters.
Vegetables
Summer is the best time to experience the full range of vegetables and fruit in Portugal but spring has its treats, too. Try beetroot, cabbage, chard, parsnip and spinach.
Easter Cakes
This time of the year is also Easter, which is a very traditional time in Portugal, especially when it comes to food (sweets mainly). So, you must try “Pão de Ló”, a wonderful cake that can be dry or moist (depending on your taste and the region you are in, you can normally find both options). A very traditional cake around Easter is called “Folar”, which resembles a loaf of bread, but better tasting. It is made from a special flour and accompanied with sausages of every type. Some of them, depending on the region, have boiled eggs on top.
Almonds
This is also the time when almonds seem to appear on every corner. White chocolate, dark chocolate, milk chocolate, sugared, with liquor… You can name it and you can probably find it any place (also supermarkets).
Cherries and Fruits
Fundão is the place to come to sample the region's cherries at their best in June. It is not just the fruit itself but try Fundão's cherry jam, cherry liqueur, and even cherryflavored chocolate. When it comes to fruits, this is the perfect time to eat strawberries and plums.
