A Candid Interview with America’s First Lady,

This woman is a big deal (she's the first African American First Lady, after all), but she's also extremely likable and down-to-earth. I dare you to name one other First Lady who would have even considered hula-hooping or double-Dutching across the White House lawn.

I

t's no surprise her approval rating is a staggering 69 percent, according to the Pew Research Center. Her relatability may have something to do with the fact that she's raising young girls, Sasha, 11, and Malia, 14, and that she brought her own mom, Marian Robinson, to Washington to help her raise them. I grew up in a crowded home filled with four generations of Cuban-Americans. I shared a room with my greatgrandmother, my grandfather was the weeknight cook, and my grandmother took the reins when it came to getting my brother and me to do our homework. When news broke that the First Grandma was also moving to DC, I totally got it, and apparently, so did a lot of other people. We enter through a lower level into a foyer with blackand-white checkerboard marble floors. Bo, the First Family's Portuguese water dog, comes bouncing down the hall, barking. It's lunchtime and the place is busy, with folks bustling back and forth, carrying sandwiches on cardboard trays. We're ushered into the Bookseller's Room, which has a wall of glass that leads out to the

garden, where beautiful blooms flank stone pathways that lead to a gazebo. It's a gloomy day, so the First Lady's staff has requested we move our outdoor shoot here. The crew begins to set up an indoor garden party for Mrs. O and a group of kids recruited from a nearby elementary school. A rotating cast of Secret Service agents keeps a watchful eye. They ask the children repeatedly not to touch the paintings. Or the furniture. Or the walls filled with historic images of past presidents… We were told the First Lady tends to run early, and that's the case today. Just as she's about to enter the room, though, 5-year-old Pedro, already meticulously placed into the garden-party scheme, announces he has to go potty. The jumpy way he delivers the news makes it clear: This. Cannot. Wait. The First Lady's entourage holds her back a few minutes. Once Pedro returns, she enters the room and our crop of kindergartners run toward her. “Hey, everybody, who's ready to have some fun?” she asks. She bends down, opens her arms wide, and greets the kids one by one.

a host of other things if they sit down at the dinner table on a regular basis. This is a challenge for any modern family, especially single moms like me. We're the same folks who hesitate to let our kids play outside for fear of predators, speeding cars, killer mosquitoes… “A lot of people are afraid to let their kids run around outside today,” I say. “Absolutely,” she replies. “Things have changed. We also didn't have 24-hour kids' TV. If you remember, we had seven channels and a limited amount that was even interesting to kids, like on Saturday morning.” My parents never monitored my TV viewing. They were happy my brother and I were quiet. Today my relationship with my son, Javier's, viewing habits is entirely more complicated. When I let him watch more than an hour or so, a heavy weight settles onto my shoulders. It goes by the name Guilt. Perhaps she's heard of it? “Barack and I tell our girls that you can be smart and beautiful, but if you don't know how to treat people…if you're not looking out for the girl who's sitting alone by herself, then who are you?”

She then turns to the photo crew and does the same. Hula-hoops, balls, and ribbon wands make the rounds as Mrs. Obama steps into a role she seems born to play: everyone's favourite playmate. She's teasing the kids, the photographer (“Make me look good!”), even poking fun at herself as she makes funny faces for the kids, trying to get them to laugh along with her. The First Lady finally sits down for an interview in the old family dining room on the second floor of the White House. She's eager to discuss the child-obesity epidemic and Let's Move. I bring up my own childhood: It was many wonderful things, but healthy was not one of them. When asked about her own upbringing, she tells me about her mom's kitchen prowess. “She cooked almost every night, and she sort of followed the traditional plan of having a meat, a starch, and a vegetable,” says Mrs. Obama. “We couldn't afford to go out, so we had fast food maybe once a week. We used to get pizza on report-card day as a reward, and that was like once a quarter! There were things that I don't think they were intentionally doing [like sitting around the dinner table], but looking back, it's where we're trying to get parents and families today.” Ah, yes, the “family table” thing. Research shows that kids are smarter, more secure, do better in school, and

For a moment I wonder if she has similar regrets. With that, I turn to the First Lady and ask, “What's the number one thing you wish parents did more of today?” “I think it's the simple things that hold true regardless of income or location: eliminating sugary drinks, cooking a little bit more,” she says. “It's hard to do. I struggled with it as a working mom myself. But thinking about it once or twice a week even, sitting around a table, getting to know our kids more, is a good thing.” How does the President and the First Lady make time for this? Sure, there are at least two White House chefs that I know of, but she is married to the leader of the free world. They're, like, pretty busy. How involved is President Obama—really? “You know, we go to all the important school functions,” she says matter-of-factly. “At least one of us is there. It's important to get to know their friends and teachers and to understand what they're going through on a daily basis.” Note to self: You may be a single mother, but if the President can do this stuff, what the heck are you stressing about? As if that's not enough to humble me: It turns out the President has even found time to help Coach Sasha's basketball team. “We set the expectation that sports are as important as homework and friends. It's important to learn how to compete, to develop a skill…”

“And to learn how to lose,” I chime in. “Exactly. And how to work as a team. I want them to learn how to sweat, how to win gracefully and lose with dignity. I want them to learn what it feels like to get better at something that you didn't think you were good at.” For a second it sounds like she's talking about motherhood. And maybe she is, in her own First Lady sort of way. Surely her life can't be that easy. If it were, why would she have brought the First Grandma, Marian Robinson, to Washington with her to help with the girls? I soon learn Mrs. Robinson's place in this family was firmly cemented long before the White House dream even took shape. “We led busy lives [in Chicago] with two careers and travel, and family was critical to our survival. People pitched in to help,” she says. It turns out the First Family (and mine) may have been ahead of the times. The number of Americans living in a multi generational household has ballooned to 49 million, the highest number since 1940. It's likely that more families connected to the Obamas than they even realize, simply for bringing Grams to DC. “My mom already helped with pick-ups [from school] and everything. I prayed that she would be open to this move if it happened, and so did Barack, for that matter.”

Multi generational living certainly has its advantages. Today Mrs. Robinson is there to greet the girls when they come home from school; she even takes them to birthday parties. The best part of having her so involved? “Consistent values,” Mrs. Obama says. “She's got the grandma thing where they get away with a lot more than we did, but ultimately she cares about their development into good people as much as I do.” The bonus: “The downloads I get from her [about how the girls are doing] are real.” The First Lady's press secretary interrupts: Our time is almost up. I hop to the question I'm most curious to have her answer.

students spend time doing some form of community service. At home, “we've done everything from work at a soup kitchen to box up packages for military families,” says the First Lady. But beyond those seemingly presidential duties, the Obamas have their own family traditions. “Every Thanksgiving, my family comes over for dinner, and we do a day of service somewhere. Last year my brother, who's a basketball coach, brought his team, so we had six-foot-nine basketball players passing out food to people in the community, and you know, for all the young people in our family, they found that was the best part of the visit. It's not just coming to the White House, it's serving and giving back.” With two young girls with staffs at their beck and call, how does the American President and the First Lady keep everyone so…normal? “Barack and I always tell our girls that you can be smart, you can be beautiful, but if you don't know how to treat people, if you don't walk into a room and say hello, if you don't say thank you, if you're not looking out for the girl who's sitting alone by herself, then who are you?”

I tell my kids that you have “to practice who you want to be

every day. You won't wake up in twenty years and become a compassionate person if you're not practicing that along the way.

What, I ask Mrs. Obama, is the biggest challenge of being a parent today? Her response: teaching the value and benefit of service in a world that seems increasingly dehumanized. “I tell my kids that you have to practice who you want to be every day,” replies the First Lady. “You won't wake up in twenty years and become a compassionate person if you're not practicing that along the way.”

Our time is up, so I do what any modern woman would if given the chance: I ask her to sign my shoe. Under my seat is a pair of red, white, and blue pumps I've had forever that were just so darn perfect for a visit to the White House, I had to bring them along with me, even if they weren't on my feet. “Have you signed a shoe before?” asks a White House staff photographer standing nearby. “You know what? I think I may have,” she says. That's OK. Coming in second for this First Lady is just fine by me. How’d she get those chiseled arms? Here’s what we got: She works out in the morning. “At the end of the day, the last thing I want to do is put on my sneakers.” Lately her workouts are three-pronged: cardio, flexibility, strength. Right now that means running, kickboxing, yoga, and weights (duh).

This isn't a new concept for the Obamas; the President ran on a record of community service. At one point during his campaign, he even suggested that college

You are very active in promoting your collections. Do you have any big projects in the pipeline? A: As I mentioned, Design Creationz

How did Debaj come about? A: I started designing abayas in 2008, more as a hobby than anything else. After exhibiting my designs I received amazing feedback. In mid2012 I was approached by a marketing company called Design Creationz, who started branding Debaj. Debaj relaunched in November 2012 with great success. In December 2012 we were approached by The Luxury Network, it has proven another great decision to have joined as a member.

Did you always want to be a designer? A: Growing up I was always very artistic, drawing was and is my passion, however I cannot say I knew that I would become a designer. I believe that life has so many opportunities and I have always had many dreams, one of

A: Definitely, I have many international friends who actually love wearing Debaj and we have already been approached by international companies to showcase our designs with them. Not only the abayas but as well as our turbans, inspired by our icon for elegance, HH Sheikha Moza.

You are the first Qatari designer for turbans, which again are very fashionable lately, all over the world. Are these your best sellers? A: I started designing turbans back in 2010, and I have to say they have always been a best seller among many nationalities.

You know the dreaded feeling: you’re on holiday, enjoying two precious weeks away from the office when a sudden, disquieting rumble in your tummy stops you short. Disaster! Holiday illness has struck…

With travellers becoming more adventurous and competitive airfares making far-flung, exotic destinations more accessible, taking care of your health while abroad has never been more crucial. In the worst cases, illnesses picked up abroad can be life threatening and the health services in your chosen destination might be poorly developed or hideously expensive if you haven’t got proper insurance. Fortunately, there are precautions you can take to give you and your family the best chance of enjoying your holiday without getting sick, explains global health expert Dr. Ravinder Mamtani of Weill Cornell Medical College in Qatar. Dr. Mamtani, Professor of Public Health and Associate Dean for Global and Public Health at the college, advises seeing your family doctor before travelling to find out what vaccinations you need. Those traveling to Africa, South America or Asia may need to be protected against Hepatitis A and B, malaria and yellow fever and should also be aware of the threat posed by mosquitoes and other parasites. But by far the most frequent complaint when travelling is the dreaded upset stomach. This perennial traveller’s curse can be avoided by taking a few simple measures, explained Dr. Mamtani. “One of the most common illnesses contracted by travellers is diarrhea,” he

said, “but there are some fundamental steps that can prevent this. Avoid eating in places of questionable quality. Drink only safe water (for example, bottled water) and don’t buy food from street vendors. Ensure your food is thoroughly cooked and served hot, and carry hand wipes with you.” Before you embark on your trip, check you have adequate travel medical insurance and take a list of local doctors and hospitals in your destination. Remember to pack an emergency medical kit and see your doctor before you go if you need to order more prescription drugs to take with you. Holidaymakers must also be aware that health risks can occur before you even touch down in your destination, warns Dr. Mamtani. To reduce the risk of developing deep vein thrombosis on long haul flights, avoid drinking alcohol, drink plenty of water and perform light stretching exercises. Wear compression stockings if you have poor circulation or a condition such as diabetes. Another typical holiday health risk is sunburn. Pack plenty of sunscreen lotion with a Sun Protection Factor (SPF) appropriate for your skin tone and avoid the sun in the middle of the day. By following this simple advice you should be able to get down to the real business of being on holiday – having fun with friends and family. Enjoy!

Take preventive measures including vaccinations: Travellers to Africa, Asia and South America may need vaccinations against Hepatitis A and B and yellow fever. Hydrate Yourself! Haitham’s top tip is ensuring hydration and he says that it should be your top priority when dealing with jet lag. This means drinking lots of water and electrolyte drinks like coconut water during, before and after your flight. Also while on the flight, avoid those salty snacks; though the chips may look tempting the sodium contained in those chips will only add to your dehydration.

We all know how it goes with jet lag. You’re somewhere new and exciting, somewhere worth all of the hours and stress of travelling and… you’re exhausted. Or perhaps you’ve finally arrived home after a long vacation and instead of being able to dive back into your real life, your energy is sapped by fatigue or dehydration.

Feed Your Body & Your Skin Well

What goes into your body is obviously an important element in how you feel. Haitham suggests consuming nutrient-rich foods and drinks when fighting jet lag to help your body recover. Proteinrich food can often give you that extra kick you need to feel better. As a quick protein-rich meal try cooking chickpeas and dress with some lemon, garlic, olive oil and mint and serve with some grilled chicken breast that have been marinated in a little bit of saffron, chopped black olives and chili if you want to spice things up a bit. He also says concocting your own special “anti-jet lag juice” is helpful. Try a combination of kale, carrots, apples and pumpkin seeds - these ingredients are universally considered excellent jet lag fighters - for a super juice!

Sleep Enough Most of us know that getting our “beauty sleep” is essential for feeling bright-eyed and bushy-tailed in the morning, but quality of sleep is also crucial for recovering from jet lag. Getting enough sleep (at least eight hours every night and slightly more when you have been deprived) will help you avoid the sluggishness and irritable feeling that you may have after travelling as a result of lack of sleep.

Adjust your Internal Clock It’s also

important to get your internal clock on track for your destination (or after you arrive back home). Try these useful methods to assist: 1) weeks before your trip, begin adjusting your schedule depending on the time zone you’re heading for - this will give your body time to adjust little by little to the timing at your destination; 2) once you’ve boarded the plane, try to just snack lightly until you can get on track with whatever the normal meal time is wherever you’re going; and 3) sleep on the plane if it’s night time at your destination, but try your best to stay awake if it’s daytime.

Stretching and Waking up Your Muscles If you are one of these people that cannot sleep on a flight, like Haitham, make sure you have a stretching interval in between the movies or books that you are reading. Haitham showed me his top tips on how he stretches while on a flight. Haitham told me stretching is a must for him during long flights and he uses the same stretches that he uses when he teaches functional fitness and Muay Thai (Thai Boxing which also requires use of leg muscles) classes. Haitham says the best place to stretch is by the toilets and has provided us with stretches that cover the parts of the body that will feel the most stress when on a long flight:

1) Spine - loosen it up by keeping your hips still and rotating your upper body at 90 degree angles to the right and then to the left through your back;

2) Upper back - put your hands together tuck your chin to your chest and push hands as far away from you as possible;

3) Hamstrings - slowly bend down trying to touch your toes and stay there for about 30 seconds, make sure you relax your head as your neck is a part of your spine and come up slowly; and

Massages are one of the best ways to unwind after a long trip, and many spas offer jet lag-centric massages. Thai massages are a great one to have. Having a massage will help stimulate paralyzed muscles by improving the blood circulation through, and consequently the functioning of, the muscles. Applying direct pressure on muscles over most of the body, combined with stretching to further stimulate the musculoskeletal system (including joints, bones, nerves, ligaments and the lymphatic system), benefits all five physiological body systems.

4) Neck - you can have your hands on your head to support you whilst you tuck your chin down and roll your head to one side then the other.

The Chinese restaurant’s brand new outlet in Dar Al Salam Mall boasts a great new design, courtesy of FORUM DESIGN. We hooked up with Mhairi, who is responsible for this amazing new design concept.

What inspired your décor ideas for the new restaurant? A: When creating the concept design

project, with this project there were the usual technical issues verses the design requirements, but at Forum Design we work closely as a team to overcome these challenges and ensure that our client is always satisfied.

How does it differ from all the other branches? A: This new branch of Chowking is the second to be located in a communal food court, it was of course important to ensure that our restaurant stood out from the surrounding food outlets. Therefore we used bright colours and a bold, eye catching design. However there are now plans in the pipeline to apply a similar bold design concept to the existing Qatar Chowking restaurants.

Are you looking into expanding in retail interior design? A: At Forum Design we are fortunate to have the professional capability and inhouse man-power to successfully execute retail outlets, actually this new restaurant is the latest in a long line of retail projects successfully designed and executed by our hardworking team of international professionals.

How does retail interior design differ from home design? A: The design process involved in

concept applied is clean and slightly urban in its nature, we have played with the food element, from the oversized noodles on the windows or the custom created art work that adorns the internal walls, a visual feast to inspire our customers to come inside and try the NEW Chowking.

Have you received any feedback yet from the customers? A: Yes actually we have and it’s been wonderful to hear such positive comments from our customers. Many customers state

residential interiors is extremely different to the design process applied to commercial or retail interiors. Residential interior design is usually focused on meeting a client’s personal need for a home that reflects self-expression. Whereas commercial or retail design strives to integrate the project premises successfully into the surrounding shopping mall and community as well as provide services and interiors to the client for specific business purposes.

Have you got any interesting projects ahead? A: As you know Qatar is developing at a phenomenal pace and as such we are currently involved in several new residential, commercial and retail projects. But we always have room for another … next time that project could be one of your readers that have been inspired to get creative with Forum Design.

Sometimes ceramic or wroughtiron tiles with detailed designs are displayed on shelves rather than being attached to walls. You can do this to showcase a unique or delicate tile you may come across. Accessories – Don’t forget to complement your earthy coloured walls and furniture with accent pillows to throw onto your couches, arm chairs, and beds. Choose fine fabrics like silk with beadwork, fringe, or embroidery. For your lighting, make sure to choose heavy wrought-iron light fixtures and table lamps accompanied by bronze urns, Persian carpets, and iron fireplace screens.

Easy Mosaic Table DIY! Give your home some Mediterranean glam with this easy weekend project. • Break some old tiles into small pieces with a hammer. Make sure to smash the underside to avoid scratching the surface. • Sort and arrange your tiles into your preferred design. Try circular or flower motifs to give your table a theme that is connected with nature. • Using a trowel spread mastic on the table in small sections to prevent drying. Start arranging the tiles while applying a little pressure to set them. • After allowing the tiles to dry, spread grout between them and wipe of any excess with a wet sponge. Allow 24 hours to dry and then pour epoxy over the entire table and let it dry for another 24 hours.

Censational Girl did a fabulous sunburst mirror out of free paint stir sticks. Her project turned out great, not to mention it was pretty much FREE! Free, because she just collected a handful of paint sticks whenever she went to the paint store. Genius! And free is for me!

So, I got to thinking...uh, oh...here I go again with that "thinking" stuff I told you about before... We had a lot of extra wood from the fireplace redo. A few pieces of lattice, and some thinner cuts from when Justin had a couple of 1x4's ripped at the Home Depot. Maybe, I could use some of that extra wood and make my own version of a sunburst mirror?

What you'll need • Wood sticks • Acrylic paint colour of your choice • Hot glue • Heavy glue • Brush • Mirror

First, I cut all the extra lattice wood and the extra trim pieces into different lengths. I used our miter saw, but you could use a miter box if you aren't down with power tools. The back layer are alternating 16 and 14 inch pieces. The thinner pieces for the top layer are alternating 10 and 8 inch pieces. I laid them out on cardboard to stain. While I waited for the stain to dry, I screwed a picture hanger on a 7x7 inch square of wood. Then, I glued the mirror on the other side of the square. With a hot glue gun, I glued the embroidery hoop that I had already painted.

4. Then, I just laid out my wood to make sure everything fit. 5. Once I got the position of the wood where I wanted it, I glued them down. I used Liquid Nails for the lower layer, and Heavy Glue for the upper layer. As you can see, I cleaned out my pantry to weigh them down so the glue could adhere!

The results? I thought it turned out pretty fantastic! What a wonderful thing to look at when you wake up in the morning...a happy, cheerful addition to our bedroom. I think it looks like a smile on the wall...and smiles are for me!

After using all my shoeboxes for that project, I was left with a bunch of shoebox lids and the crafted in me knew I couldn't just throw them out! I realized that shoebox lids are similar in depth to canvas boxes, and so this DIY project emerged!

Just cut 'em up, add your favourite decorative paper (or cut out graphics from old magazines like I did) and you've got custom wall art for your home. Imagine an entire wall of these! Follow the steps below to create your very own.

What you'll need • Shoebox lids (1 regular size shoebox lid makes 2 pieces of wall art) • Decorative paper (I repurposed mine from old magazines and shopping catalogs) • Scissors (not pictured) • Ruler • Pen • Tape • Glossy decoupage medium • Foam brush • Thumb tacks

Cut two 4" x 4" squares from the corner of the shoebox lid (see image above). Use a ruler and pen to mark before cutting. Slide both of the square pieces into each other so that they form a box with four walls. Attach them together by applying tape to the corners. Cut your decorative paper so that it is a few inches larger than the box on all sides so that it will cover the box entirely. Starting with one side at a time, apply a thin coat of decoupage medium to the box, and lay the paper on top. Make sure there are no air bubbles. Repeat until the entire box is covered with your paper. Once completely dry, add a thin coat of decoupage medium on top of the box to give it a glossy, finished look. Once dry, punch in the thumb tacks as desired.

The great thing about paper flower crafts, is that with a little bit of resourcefulness and creativity, you can incorporate them into your Mother's Day, using newspaper, vintage books, paper bags, and scrap paper. You can also use things like buttons or pieces from old jewelry to add a little pizzaz. You can even mix them in with your fresh flowers to add a splash of color and texture. We give you only an idea but you can see other websites for other flowers style.

Draw a spiral on a 4x4" square sheet of paper. Cut out spiral along the lines you have draw. Begin rolling the spiral from the outside. Done!

ABODE interviewed Chef de Cuisine Ahmed Bounaji of Hotel Gokulam Park, who introduced us to one of his signature dishes, Strawberry Samosas and four of his favourite dishes from around the world. Growing up in the Atlas Mountains of Morocco, Chef Ahmed has a rich traditional background of cooking food from scratch. He remembers visiting the souq’s small make-shift kitchens and was fascinated by how the chefs cooked their food. They grow their own organic food from their own backyards and cooked their meals, to be served to their families,

in clay pots over the wood fire. With that experience it propelled his passion to enter school and he studied Culinary Arts. For him, being a chef is amazing, for it requires talent, experience and a constant love for what he’s doing. He exemplifies his style in this simple dish, making it extraordinary by trusting his gut and ensuring a delightful harmony of flavours.

Procedure:

• Prepare your caramel, cut the strawberries into dices, add it the caramel and stir for 3 to 4 minutes. • Then add chopped mint and lemon zests, 2 tablespoons of lemon juice and let the mixture cool down for 5 to 10 minutes . • Cut your Phyllo pastry to a long rectangular shape, brush it with bit of butter, stuff with strawberry mixture, add a teaspoon of whipped cream and fold it to a triangle shape. • Fry your samosas until they are a light golden brown, place on paper towel to absorb excess oil and serve hot.

Classic Caesar Salad Ingredients:

Did you know that... Caesar Salad originated in Mexico? An Italian immigrant in Mexico, Caesar Cardini concocted the dish in 1924.

• 1/2 cup high quality extra virgin olive oil • 4 cloves fresh garlic, peeled, smashed, then minced • 1 baguette, preferably a day old, sliced thin • 1/4 cup freshly juiced lemon juice (plus more to taste) • 4 ounces Parmesan cheese, grated • 1 tsp anchovy paste, or 1-2 anchovies, smashed and minced • 2 eggs • Freshly ground black pepper (1/4 teaspoon or to taste) • 1/2 tsp salt • 4-6 small heads of romaine lettuce, rinsed, patted dry, wilted outer leaves discarded

Gratinated Pike Perch Quenelle Ingredients:

Procedure:

• In saucepan prepare your fish broth, adding some aroma and bouquet garni (flavour or aroma made of bay leaf, garlic and leeks) optional. In the bowl that the perch fillets cut to small cubes to make its easy to blend, season it all with the rest of ingredients and blend until you will have nice and smooth paste. • Make nice quenelle and poach then in the fish stock that we prepared before, cook it for 5 to 6 minutes, and with the rest of your broth you need to add some cream and cheese to make it thick and creamy. • Place your quenelle in to the plate. • Cover half of it with your creamy sauce, add some cheese on the top and gratinate for 2 to 3 minutes.

• In a very large bowl, whisk together the olive oil and garlic. • While the oil is sitting, make the croutons. Spread the baguette slices out over a baking sheet (may need to do in batches) lined with parchment paper. Brush or spray with olive oil (or melted butter, or if you want garlicky croutons, dip pastry brush in the garlic infused oil you have sitting in step 1). Broil for a couple of minutes until the tops are lightly browned. Remove and let cool. • Add anchovies and eggs to the oil garlic mixture. Whisk until creamy. Add salt and pepper and 1/4 cup of lemon juice. Whisk in half of the parmesan cheese. Taste, add more lemon juice to taste. The lemon should give an edge to the dressing, but not overwhelm it. • Using your hands, tear off chunks of lettuce from the heads of lettuce (do not use a knife to cut). Add to the oil mixture and toss until coated. Add the rest of the parmesan cheese, toss. • Coarsely chop the toasted bread and add (with the crumbs from the chopping) to the salad. Toss. Serve immediately. • You can add either grilled chicken or shrimp on the top.

NOTE from the CHEF Pike is not a popular fish so is not widely available – it’s most likely to be sourced from good fishmongers. It’s sold fresh and frozen, and is available year round because it’s farmed.

ASIAN MOOD

Monkfish Tagine, Preserved Lemon and Artichoke Ingredients:

• 700 g monkfish • 12 artichokes • 2 white onions, peeled • 1 lemon confit (marinated lemon) • 1 lemon untreated • 10 green olives • 1 bunch fresh coriander • 20 g fresh ginger • 20 cloves of garlic • 3 tbsp olive oil • 1 glass lemon juice • salt and freshly ground pepper

Procedure:

• Clean the monkfish and cut into chunks. Rinse, wipe and put it in a baking dish. • Take the lemon in hot water and brush the fish. Grate the lemon zest over this, using the fine grid. • Peel the ginger and grate it also using the fine grid. Peel the garlic cloves. Cut two in half and set aside, crush the other 18, adding them to the monkfish. Add a few turns of pepper and olive oil and mix well. • Cover the dish and set aside in refrigerator to absorb the marinade. • Cut and peel the artichoke tails at about 3 cm. Remove the stringy part of the artichoke and turn them gently with a small knife. Remove grass (hair inside the artichoke and cut the bottom of the artichoke into half. • Dip them progressively in a bowl of lemon water so they do not oxidize. Heat a pan and pour in the monkfish and marinade. • Cut the preserved lemon into 6 wedges. • Fry on all sides then add the sliced onions, whole cloves of garlic, artichokes and lemon confit (marinated lemon). • Salt and pepper lightly. • Mix, pour the sour grapes and a glass of water, cover and simmer 35 minutes over low heat. • Add the olives 5 minutes before end of cooking and sprinkle with coriander before serving.

Chinese Duck with Almonds Ingredients:

• 500 gr duck meat • 2 tbsp oil • 1 tsp salt • 2 tbsp soy sauce • 2 sticks celery • 60 gr fresh mushrooms • 120 gr frozen peas • 1 cup stock • 2 tsp cornstarch • 80gr split, toasted almonds

Procedure:

• Cut the duck meat into paper-thin slices. Heat the oil, add the salt and duck and fry for about 5 minutes or until the meat is tender. • Add the soy sauce and mix well. Wash and chop the celery; wash and thinly slice the mushrooms; add both to the pan with the peas, mix well and cook for 1 minute. • Add the stock, bring to the boil and simmer for 5 minutes. Mix the cornstarch to a smooth paste with a little cold water, stir into the pan, bring to a boil, stirring all the time until slightly thickened. • Add the almonds, and serve alongside bok choy sautéed in soy sauce and steamed rice.

The Des Concubines with Cheesecake Ingredients:

• 205 gr cream cheese • 63 gr sugar • 35 gr eggs • 2 tablespoon milk • 1 tablespoon corn flour • 46 gr sour cream • 1 teaspoon lemon zest • Base • 85 gr Marie biscuits crumbs • 20 gr butter • 15 gr sugar

Perles De Jasmin with Pistachio Crème Brulee Ingredients:

• 400 gr fresh cream • 200 gr milk • 120 gr sugar • 240 gr egg yolk • 250 gr pistachio paste • 1 teaspoon vanilla essance

Procedure:

• Bring cream to a boil • Mix egg yolks and sugar together • Add the boiled cream to the egg mixture • Add pistachio paste • Fill ramekins with the mixture and bake at 130 degrees Celsius for about 20 minutes • Cool down and top with custard sugar • Use a blow torch to caramelize the sugar on top

Procedure: For the base • Mix the biscuits crumb with the sugar • Melt the butter and mix with crumb mix • Cover the bottom of the cake ring with aluminum foil to make sure the liquid will not run out • Fill 1 cm of the cake ring with the base mix and press it to stick together and bake at 180 C for 8 min For the cheese cake mix • Mix the cream cheese with the sugar until blended and softened • Slowly add the eggs one by one • Mix milk with corn flour and add to the cream cheese mixture • Add the sour cream together with the lemon zest • Fill up in the ring on top of the baked base, bake in a bain-marie at 160 c. For about 1 hour • Let cool down and top with fresh berries

Blue of London with Tiramisù Ingredients:

For the cream: • 1500 gr mascarpone cheese • 345 gr sugar • 1000 gr whipped cream • 14 pcs gelatine leaves • 200 gr egg yolks • 70 gr water For Chocolate sauce for filing • 37 gr water • 37 gr sugar • 125 gr dark chocolate • 125 g cocoa powder For Lady Fingers • 600 gr egg white • 500 gr sugar • 400 gr egg yolk • 500 gr flour

Procedure:

For the cream • Soak the gelatine leaves in cold water • Semi -whip the cream • Mix the water and sugar and bring to a boil, until the temperature reaches 121 degrees Celsius • Beat up the egg yolk and slowly add the boiled sugar • Stir in the mascarpone • Add the gelatine into the mascarpone filling, then whipped cream For Chocolate sauce for filing • Bring the water and sugar to boil • Add the melted chocolate and cocoa powder and mix well • Pour in a spheres mold and freeze. For Lady Fingers • Whip the egg white with sugar to a meringue • Sieve the flour • When the egg white is beaten to a soften peak fold in the egg yolk and mix slowly • Fold the flour in slowly • Using a plain nozzle, pipe lady fingers on baking trays (layered with silicon sheets) • Dust with icing sugar and bake at 180 degrees Celsius for about 12 minutes, until golden brown Assembling • Fill up half of the cupcake mold with the tiramisu cream. • In the center of the mold put one of the frozen chocolate sauce • Fill up again with the tiramisu cream and make sure to cover the frozen chocolate sauce totally. • Keep in the freezer to get set • Soak the lady finger in the coffee syrup and arrange on a baking sheet next to each other. And freeze. • Using a ring cutter (same size of the cupcake )cut the frozen lady finger and place on top of the tiramisu • While the tiramisu is frozen remove the mold and keep in the fridge to defrost • When defrosted dust with cocoa powder and top with vanilla ice cream.

Bai Mu Dan with Panna Cotta Fruit Breton Ingredients:

For panna cotta • 320 gr cream • 80 gr milk • 30 gr sugar • 6 gr gelatine leaves • 1 teaspoon vanilla essence For Breton • 140 kg • butter • 50 kg icing sugar • 50 kg castor sugar • 10 gr eggs • 15 ml water • 225 kg flour • 1 g salt • 1 g vanilla

Procedure: For panna cotta • Soak the gelatine in cold water • Place milk, cream, and sugar in a saucepan, bring all to a boil • When is boiling, take away from the stove • Add the gelatine and vanilla essence and put the cream mixture on ice. • Make the mixture so cold until the gelatine begins to work ,then start to fill up in the molds For Breton • Knead butter, salt and sugar together • Mix in eggs one by one • Add water and vanilla to the mixture • Add sieved flour into and knead just for another 20 seconds • Allow to cool down for about 30 minutes • Divide into 500 gram pieces and make rolls out of it • Let rest again in the refrigerator for at least two hours • Cut the dough in 1 cm thickness and put on baking tray • Bake at 170 degrees Celsius for about 10 - 12 minutes • Allow to cool Assembling Place the panna cotta on top of the Breton in a side On the other side spread little of custard cream and top with the fresh fruit

The culinary art of Dim sum started in southern China. It’s related to the older tradition of yum cha (tea tasting) and it is enjoyed by the entire family. The wide variety of tea snacks is served in small steamer baskets and can be cooked by steaming and frying. ABODE asked Chef Somsak to share his ‘secret’ in creating these little delights. Here he guides us to make one of his signature dishes: Shitake Mushroom Dim Sum.

DIMSUM By Chef Somsak Janthakthon Ingredients:

• 12-15 pcs fresh shitake mushroom (remove stem) • 300 g shrimp (peeled and de-veined) • 50 g white fish meat • 1 tbsp spring onion, chopped • 1 tsp ginger, chopped • 1 tbsp shitake mushroom, chopped • 1 tbsp shallot, chopped • 2 tbsp tapioca flour or corn flour • 1 tbsp light soy sauce • 1 tbsp sesame oil • 1 tbsp egg white • 1 tsp sugar • ½ tsp salt • 12-15 pcs slice carrot for the base • White pepper

step 1 Measure, dice and cut all the ingredients needed to make Dimsum. step 2 Mix the shrimp and fish. step 3 Add the spring onion, ginger, shallot and shitake mushroom, mix well. step 4 Then add the tapioca flour, light soy sauce, sesame oil, egg white, sugar, salt and pepper. Knead for 10 minutes or until firm and refrigerate for an hour. step 5 Arrange carrot into bamboo basket or steam plate. step 6 To make the balls, place one hand into mixture and form a ball by pressing firmly (as shown). step 7 Then place the ball on the carrot. step 8 Place a whole shitake mushroom on top of the balls and steam for 10 minutes. Serve immediately!

1 When eating dim sum, tea is an appropriate partner or complement. Check the tea before you pour to make sure it's steeped enough, Green tea – two to three minutes and White tea – five to seven minutes. When you empty the pot, turn the lid upside down or leave it ajar to let the waiter know you want a refill. To be extra polite, make sure to fill up other people's glasses before your own, and tap the table to thank someone for filling yours. You can ask for an extra pot of water if needed. 2 Share. As with most small plates dining, the more people you have and the more dishes you order, the better the experience will be for everyone. Bring people, and be prepared to share.

3 Utensils. Chopsticks are the norm, but don't feel bad about asking for a fork if you need one. The basic rules of chopsticks apply: don't spear your food with them, and don't leave them sticking straight up in a bowl of rice when you're not using them. Instead, lay them horizontally on the edge of the plate.

4 Want rice with that? Steamed white rice can be ordered upon request, and it's a good way to cleanse your palate between bites of strongly seasoned dim sum fare. Oh, and you can pour sauce on your rice if you want, but it's intended to be a plain, bland accompaniment.

Etihad Airways launches ‘Holidays Connect’ booking system in Qatar Etihad Airways, the national airline in the United Arab Emirates, unveiled its new travel agent booking system called EYHolidaysConnect. A Little Oasis of Luxury GOA’s unspoilt beaches and 75 mile long coast are heaven! by Susanna Wolfe

I have wanted to visit India for some time but was dubious to do so travelling alone with my four-year-old daughter; however, I decided to take the plunge to Goa, as I thought it would be the "beginners guide to India". You need a visa, which you obtain at the Indian Embassy in Doha, and it costs nearly QR 500 per passport. Qatar Airways now does a direct flight of only three and a half hours, however, it means travelling in the middle of the night both ways. ARRIVAL IN GOA When we arrived at the airport we were met by a car from Siolim House where we are going to reside during our stay. We go north and it takes one hour to arrive at our destination in the countryside away from the touristy areas. We have to cross the small village road and dodge a cow before entering into our grand old seventeen century heritage villa hotel.

WHERE TO STAY The Casa Palacio house is of beautiful Portuguese design and was built in 1675. It has been lovingly restored, creating seven bedrooms with enormous bathrooms including three suites. There is an open air courtyard and lawn in the middle of the building next to the breakfast area overlooking the tropical green garden with trees and plants and the gorgeous grand old swimming pool. There is also a wooden tree house in the garden with a massage area on the ground floor and a yoga retreat upstairs. This is an example of luxury living in the middle of Goa. It is incredible to see "the before restoration" photos; the house was literally falling down and totally inhabitable with cows living in it! We stayed in the Macassar Suite, which is very light and has lovely antique furniture including a four-poster bed and wonderful old wooden floor boards.

The bathroom has a romantic little Juliet balcony overlooking the pool and garden. The staff are all very friendly and treated us with a personal service like all the other guests; who incidentally are from Germany, France and England. They even amuse my daughter when I need a break. Luckily, there is an upstairs sitting room with a huge plasma TV, DVDs and library - enough to keep anyone occupied! Blacky, the friendly pet dog is also on hand for petting. Breakfast is included in the price and consists of fresh juice, cereal, fruit, toast and eggs or Goan potato curry with dosa (a sort of thin crispy pancake). Afternoon tea is also served daily; I loved the masala tea and homemade French pastries. Once inside the property, it is very relaxing and the feeling is tranquil with birds tweeting and wind chimes swaying

in the trees. Outside, however, is very different altogether. Most people hire scooters so the roads seem to be full of them dodging bumps and cows; it's not an easy ride. WHAT TO DO Siolim House is perfectly located for day trips. It takes about fifteen minutes to visit beaches north and south. Morgim and Asvem beaches are both incredibly beautiful; long and unspoilt with shaded beds to hire and beach shacks for refreshing fresh fruit juices. Young filmmakers from six different countries competed for recognition at the 2013 THIMUN Qatar Northwestern Film Festival last April. The event was created to encourage high school students to use film as a tool to advocate for social change and development. Qatar National Research Fund awards three “exceptional” research projects worth $ 10.4 million Qatar National Research Fund (QNRF) has awarded funding to three major research projects that will expand the Qatar Exoplanet Survey, improve solar power conversion systems and evaluate a novel weight management programme for Qatari school children. The projects were selected under the second wave of the National Priorities Research Program Exceptional Proposal (NPRP-EP), an extension of QNRF’s flagship National Priorities Research Program (NPRP). It offers a maximum budget of $5 million, for a period of up to five years, to proposals of exceptional scientific merit requiring resources in excess of the normal level of funding available under the NPRP.

people What’s your take on the rapid changes Qatar has undertaken since you first came here? A: I had visited Qatar first in 1995 as a minister and then returned in September 2010. I see a huge positive difference emerging in just a little over 15 years. Back then only the Sheraton hotel dominated the West Bay skyline and the Al Jazeera channel office had just opened. I believe Qatar is progressing at a fast pace but (for me) development is more than a growing skyline; I prefer the more traditional aspects of Qatar which emerges through its people and certain places like the Katara and Souq Waqif.

How do you now envision the relationship between Qatar & Bosnia to be? A: We opened the Bosnian embassy in 1995 and we weren’t the first, but at that time, the number of embassies present was a handful as compared to now. Traditionally speaking, Bosnia-Herzegovina shares a very warm and friendly relationship. Qatar was there to help us during difficult times but this support didn’t stop at the end of the war, in fact we have just shifted to a higher level.

The Qatar-Bosnia and Herzegovina Business Forum was held in March 2013, can you share the outcome of this event? A: The outcome was great because the business forum was part of the visit by our deputy prime minister and our foreign minister. More than 70 Bosnian companies visited Qatar as part of the delegation. My intention to do so was to establish contacts between the business community of Bosnia and their Qatari counterparts and promote better understanding of the business environment and how it all works here. The Bosnia delegation met Qatari companies, especially in the field of construction, and it was a successful event.

Please highlight some important events in the past that have boosted the relationship between the two countries? A: The visit of His Highness Sheikh Hamad bin Khalifa Al Thani, Emir of the State of Qatar to BosniaHerzegovina two years ago was an important one, and we have continued to welcome important diplomats from Qatar to Bosnia. Another one is the Sarajevo Business Forum, which is an economically and politically important event in the region. In the last four

years, we have had one of the highest representations from Qatar from the business community, investment funds, banks and ministries.

Bosnia-Herzegovina is famous for its Sarajevo Film Festival. Do you think one can get a glimpse of your enriching culture here in Qatar? A: In a short time, Sarajevo film festival has become one of the biggest cultural events in southeast Europe. Just like the Doha Film Festival, it’s a celebration of culture and people; the mingling that happens makes the atmosphere special. Now how can we introduce [ourselves] to Qatar? Firstly, we are supporting the Doha Film Festival. Since I’ve been here, we’ve had Bosnian film makers attend the Doha Film Festival, like Academy Award winning Danis Tanovic, who was a jury member in 2010. We also had 2006 Berlinale Golden Bear winning director Jasmila Zbanic’s film On the Path screened at last year’s fare. This year we plan to invite important people from the culture segment for the festival and we are planning to establish closer cooperation between Doha Film Institute and Sarajevo. Bosnia has amazing musicians, painters and we plan to do something at Katara later this year.

If you could live your life all over again, what career path would you choose and why? A: We all know this will never happen. But I will not change one single thing from what I did in my past, as this is exactly what I always wanted. When I got my first job in a 5 star hotel I was interviews by the Food and Beverage Director and he asked me a very direct question, “Where you want to be in 12 years’ time?” My reply was “Kick you out and take your chair” and that is exactly what happened.

It is my first time in such position and I was granted with the best place ever to manage, it is like running a mini hotel having exactly the same departments like a hotel but with no rooms, so the full concentration for sales is always on food and beverage — something that is my real strength. Having several ladies and gentlemen from different cultures it gives me the opportunity to learn, learn and always learn more.

Does your unique venue only focus on weddings, or is it looking to expand in other areas? A: We are very popular for weddings; however in the past two years I managed

to take these halls a step forward and we do several outdoor caterings and a lot of corporate events for several high profile companies and also governmental identities.

Tell us about what were you doing before you arrived to Qatar. A: My last position was a Director of Catering and Conference services with Ritz Carlton Hotel and Spa in Bahrain, I had there an amazing two years experience. Prior to that I was a Director of Banquets in Libya with Corinthia Hotels International. During these years I was also was in charge of all catering related matters to Muammar Gaddafi, which was also an amazing and very hectic experience.

You seem very intense and dedicated. Would you consider yourself a workaholic?

Cleanliness and the efficiency of the concierge team is the most important as this the face of the hotel. If the face is not good, God only know what can happen inside. When you book your trips – what service do you use – call a travel agent, surf the net, mobile app? My secretary or my wife. I always go through the net and then finalize via travel agency. What would fail your quality test in a hotel or resort? Spelling mistakes on menus, delays in room service and [lack of] cleanliness. Do you roll, back pack or lug luggage? I always do my best to use hand luggage, as I hate being stuck waiting for luggage.

Just like the salad he created for the photo shoot describing it as a combination of fresh, colourful ingredients with a spicy sauce on the side for that X-factor. “It may look simple but it has a lot of elements going on, just like our kitchens.”

Romain Meder, Executive Chef at IDAM, speaks to ABODE about what it takes to work with the universally applauded chef extraordinaire Alain Ducasse, creating a world class restaurant right here in Qatar. “You don’t just come to the country and present a French fine-dining restaurant in Qatar. You study the region, you note the culinary influences, research the local palette.” So said Chef Meder who spent 18 months travelling and researching before creating a menu that was a perfect confluence of two vastly distinct culinary styles. Thus “contemporary French cuisine with an Arabic twist” really comes alive in the signature IDAM dish: camel calf and foie gras with truffles. “Our camel is cooked for six days and you can eat it with a spoon! It is a great combination of Qatari and French style,” he added.

Elaborating on the IDAM concept he said, “You see this is the philosophy of Alain Ducasse each time he opens a restaurant. It is to be inspired by the local product.” Months were spent searching for a solid local supplier and the main work came when, together with his mentor, this culinary master dove headfirst into the world of spices, a culinary staple in the Middle East. As a chef who hadn’t worked with spices before, Meder became fascinated with cardamom, a spice that is omnipresent in cooking here. Amongst other jewels in the IDAM menu are tender octopus, potatoes infused with

Just the way Meder speaks one can see he has a tremendous respect for his mentor, even though he has worked with Ducasse for more than six years. It’s said Ducasse noticed his potential and placed him at the helm of the kitchen in his seasonal restaurant, La Cour Jardin, at the Hotel Plaza Athénée in Paris. After two years, Ducasse flew this adventurous chef to SPOON des Iles restaurant in the One & Only Hotel Saint Geran in Mauritius. With Ducasse, Meder found a mentor who focused continuously on improving every day. “When you think something is good, it’s lost!” Meder was 11 when he decided to work someday with Alain Ducasse, after seeing the latter on television. Yet when he arrived at the Ducasse kitchens he realized that step one was to unlearn everything and start again at zero. This now helps him even now as he continues to innovate at IDAM. Recounting his earlier styles, Meder says he’s happy at his own evolution of cooking style, and his only pet peeve is eating “a dish that hasn’t been quite been mastered by a chef”. It was clear that being a culinary artist was dear to him, for he believed that everyone can cook. “Of course! Cooking can be as simple as making a nice sandwich. Even a combination of bread and cheese, when done right has the potential to be ‘wow’. But the best chefs in the world are our mothers!” And in that simple concluding statement, Meder let us know the beauty of how the world is when you truly love what you do!

This month, on May 12th, the USA and many European Countries are celebrating Mother's Day. Let's learn something new about this important celebration day. What is Mother’s Day and when is it celebrated in Qatar? Mother's Day is a celebration that honours mothers and motherhood, maternal bonds, and the influence of mothers in society. It is celebrated in many parts of the world, most commonly in March, April, or May. It complements Father’s Day, a celebration honouring fathers. In most Arab countries - including Qatar - Mother’s Day is celebrated on the 21st of March, the first day of spring in the northern hemisphere.

When was Mother’s Day founded? The earliest tributes to mothers date back to the annual spring festival the Greeks dedicated to Rhea,

the mother of many deities, and to the offerings ancient Romans made to their Great Mother of Gods, Cybele. Christians celebrated this festival on the fourth Sunday in Lent in honour of Mary, mother of Christ. In England this holiday was expanded to include all mothers and was called Mothering Sunday. The modern holiday of Mother's Day was first celebrated in 1908, when Anna Jarvis held a memorial for her mother in America. She then began a campaign to make "Mother's Day" a recognized holiday in the United States. Although she was successful in 1914, she was already disappointed with its commercialization by the 1920s. Jarvis' holiday was adopted by other countries and it is now celebrated all over the world, is sometimes associated with different events (religious, historical or legendary), and celebrated on a different date or dates. The Netherlands, Finland and Brazil honour their mothers on the second Sunday in May. On the last Sunday of May countries such as France, Morocco and Sweden celebrate Mother’s Day.

people Despite Jarvis's misgivings, Mother's Day has flourished in the United States and all over the world. In fact, the second Sunday of May has become the most popular day of the year to dine out, and telephone lines record their highest traffic, as sons and daughters everywhere take advantage of this day to recognize and to express appreciation of their mothers. Each year many companies profit from Mother’s Day by marketing and selling specific gifts such as gift baskets, books, DVDs, perfumes, and more. At school children get very creative and make the most beautiful art and drawings for their moms.

Mother’s Day and the workplace

Commercialization of Mother’s Day Although Mother’s Day was not supposed to be a commercial activity it now pretty much is. At first, people observed the day by attending church, writing letters to their mothers, and eventually, by sending cards, presents, and flowers. With the increasing gift-giving activity associated with Mother's Day, Anna Jarvis became enraged. She believed that the day's sentiment was being sacrificed at the expense of greed and profit. In 1923 she filed a lawsuit to stop a Mother's Day festival, and was even arrested for disturbing the peace at a convention selling carnations for a war mother's group. Before her death in 1948, Jarvis is said to have confessed that she regretted ever starting the mother's day tradition.

Mother’s Day is also a day to focus on ways to improve conditions for working mothers. The problem still facing working women that usually receives the most attention is the absence of paid leave. But there are also needs for part-time professional positions, job shares and flextime that are not yet available at many organizations. Without these viable workplace solutions, it can be a struggle to reconcile mothers’ drive to participate fully in the workforce with the desire for time to raise their children. Without these solutions for parents, particularly of children elementary-school age and younger, there is no work/life balance. If more companies are to take advantage of the skills, energy and expertise of workers who also happen to be parents, job shares and other creative employment solutions are imperative. This Mother’s Day we also celebrate the fact that moms are now networked and engaged in ways unimaginable only a decade ago. By the end of this year, more than 90 percent of moms with kids under age eighteen are expected to be online. Increased Internet access, coupled with new communication technologies–like Facebook, Twitter, blogs, and even emails– allows women to reach dozens, hundreds, thousands, even millions of other women at one time with a quick press of a button. It’s an unbelievably fast-moving tool that significantly accelerates communication, education, organizing, and impact.
