Welcome to a special issue of Absolute Bali. Our cover feature on country crooner and crossover artist Taylor Swift shows the exciting, but tumultuous, life these young stars can have. She admits to using her real life relationships as material for her songs. She has had many number one hits so I expect she’ll be dating someone new by the time this issue hits the stands. Our well written expose on the Bali Safari and Marine Park is pretty spectacular. This is not even close to your run of the mill zoo. Here, you get to see and interact with the wildlife in their natural habitat without having to try and focus your camera through a fence. All the animals are free to roam. They provide many interactive activities with something for everyone in the family. As well, the Waterbom water park is just as thrilling. This is the waterpark to top all waterparks. They have tons of super fun rides and water activities. In this heat, nothing would beat a day or two at Waterbom.

B

ali is a very special place, with the locals holding on tight to their culture and customs. Close to the heart of the Balinese Hindus, is a spiritual tradition placing great emphasis on the regular salute to the spirits, deities, and gods they believe to be behind the well-being of their culture and planet. No matter what time of year you might visit Bali, you will be likely able to take in the full experience of some sort of celebration.

Yet no matter what the occasion, one can expect a plethora of colourful sights, stimulating sounds, and rich scents to accompany the spectacle of prayers, rituals, and traditions taking place on these most revered of days.

Ceremonies range from major island-wide events (e.g. Nyepi, where the entire island shuts down and everyone is required to stay off the streets), to local “Banjar” (neighbourhood) ceremonies, to small, family-oriented traditions for everything from funerals, births, and the most randomly-dated anniversaries of distant relatives.

Like many of Bali’s sacred days, the ceremonies occur more than once on a traditional calendar year. Falling on the each day “Saniscara Imanis wuku Watugunug” and celebrated every 210 days (always a Saturday), the most important day “Pawedalan Sang Hyang Aji Saraswati,” or “Hari Raya Saraswati” (“Hari Raya” translating

to “Great Day” in English) is devoted to God’s manifestation as Dewi Saraswati. As described by legend, Saraswati is the wife of Brahma, goddess and protector of knowledge, awareness, and literature. It was upon this day - a feast day for Hindus (exactly on Saniscara Umanis Wuku Watugunung.) that the Hindu people commemorated as man’s descent into the world of science, with Saraswati coming down to earth in order to spread the sacred science for the benefit of mankind. Balinese Hindus see knowledge as a key aspect of the fulfilment of human potential, and as such, believe Saraswati’s grace to thank for the civilisation and culturing of man. Holding knowledge and awareness with great reverence, the cyclical custom of honouring the goddess continues on - paying respects with gratitude for the prosperity, peace, progress, and enhancement of human civilization Saraswati’s decent has brought. While Hari Raya Saraswati is an important day of celebration for all Hindus with ceremonies and prayers typically taking place in temples, it is a particularly special day for students, guardians, and servants of science in schools and learning institutions.

NO MATTER WHAT TIME OF YEAR YOU MIGHT VISIT BALI, YOU WILL BE LIKELY ABLE TO TAKE IN THE FULL EXPERIENCE OF SOME SORT OF CELEBRATION. Instead of dressing up in their usual school uniforms, children in schools dress up in colourful costumes and bring offerings of fruit and cakes to the school temple - performing prayers for success in their studies during a special morning ceremony. Reading or writing is not allowed from morning to noon (except those who carry a full “Brata Saraswati,” who can do neither for 24 hours). All sources of knowledge such books (especially the sacred “lontar,” or “palm leaf”), manuscripts, inscriptions, and stationary writing used for teaching or teaching of religion, morality, etc. are cleaned, collected, and arranged in a place in temples to be blessed with offerings of holy water, fruit, and flowers as a tribute to Goddess Saraswati. The ceremonies continue on for another four days after Hari Raya Saraswati - each with their own offerings and focus on gratitude for different parts of their lives.

Hari Raya Pagerwesi - Wednesday, August 14, 2013 Four days after Hari Raya Saraswati - and the final day of the Saraswati ceremonies, comes Hari Raya Pagerwesi. Literally translating to “iron fence,” (“pager” meaning “fence,” and “wesi” meaning “iron”), the name of the day symbolises a powerful protection. Also occurring every 210 days, Hari Raya Pagerwesi is held on Buddhism (Wednesday) Kliwon Wuku Shinta, during the first week in the Balinese “Pawukon” calendar system. A symbol of strong self-protection, the iron fence suggests one ought to protect oneself with a strong barrier against the obstacles in life. On Hari Raya Pagerwesi, the Balinese focus on building a strong personal fortification - ensuring that evil cannot enter their minds, speech and deeds, so won’t be able do harm their surroundings. One philosophy behind this celebration is that they must keep knowledge, health, food, cloth, and gold high in their lives to keep the universe in balance - the things of value which the “iron fence” must protect inferior influences from destroying.

Pagerwesi is also called “rerainan gumi� by the Balinese, meaning the holiday/ feast for everyone from every background - from the families of priests to the common folk. In many regions in Bali, Pagerwesi is considered to be an extremely important holiday, second only and celebrated excessively in a similar fashion to Galungan Day.

The god worshiped on this day is named Sang Hyang Pramesti Guru - another name for Lord Shiva, who was believed to have descended upon earth as a manifestation of god to wipe out all the bad and evil entities in the world and became a teacher of the universe - leading humans in how to live their lives appropriately, without giving into negative behaviours and evil desires. The Balinese show their gratitude to Sang Hyang Paramesti Guru by making offerings, praying in their houses, visiting temples, and erecting penjors (tall decorated bamboo poles).

Just a taste-test of Balinese ceremonial life, Hari Raya Saraswati and Hari Raya Pagerwesi offer us a glimpse into the traditions of the locals, and ignite a sense of wonder at the worlds in which they live.

Ceremonies and prayers are held on Hari Raya Pagerwesi for the purpose of creating a strong mental and spiritual defence, in welcoming of the Galungung holiday. Like Galungan (the beginning of the most important recurring religious ceremonies, celebrating the victory of dharma over adharma, marking the time when the

aylor Alison Swift was born on December 13, 1989 in Reading, Pennsylvania to Scott and Andrea Swift. Taylor was named after James Taylor; her mother believed that if she had a gender neutral name it would help her forge a business career. Taylor spent most of her childhood on an 11 acre Christmas tree farm in Montgomery County, Pennsylvania. Taylor spent her summers at her parent’s vacation home at the Jersey Shore. Swift’s first hobby was English horse riding. Her mother put her in a saddle when she was nine months old and Swift later competed in horse shows. At the age of nine, Taylor turned her attention to musical theatre and performed in Berks Youth Theatre Academy productions of Grease, Annie, Bye Bye Birdie and The Sound of Music. She traveled regularly to Broadway, New York for vocal and acting lessons. However, after a few years of auditioning in New York and not getting any work she became interested in country music. SWIFT CAUGHT THE ATTENTION OF SCOTT BORCHETTA, A DREAMWORKS RECORDS EXECUTIVE WHO WAS PREPARING TO FORM HIS OWN INDEPENDENT RECORD LABEL, BIG MACHINE RECORDS. TAYLOR WAS ONE OF THE NEW LABEL’S FIRST SIGNINGS. At the age of eleven, after many attempts, Taylor won a local talent competition by singing a rendition of LeAnn Rimes’s Big Deal, and was given the opportunity to appear as the opening act for Charlie Daniels. At the age of twelve, Swift was shown by a computer repairman how to play three chords on a guitar, inspiring her to write her first song, Lucky You. She had previously won a national poetry contest with a poem entitled Monster in My Closet, but now began to focus on songwriting. Taylor moved to Nashville at the age of fourteen, having secured an artist development deal with RCA Records. Taylor left RCA Records when she was fifteen, the company wanted her to record the work of other songwriters and wait until she was eighteen to release an album, but she felt ready to launch her career with her own material. At an industry showcase in 2005, Swift caught the attention of Scott Borchetta, a Dreamworks Records executive who was preparing to form his own independent record label, Big Machine Records. Taylor was one of the new label’s first signings. Taylor released her debut album Taylor Swift in October of 2006 and received generally positive reviews from music critics. The New York Times described it as,

Her single Our Song made Swift the youngest sole writer and singer of a number one country song. The album sold 39,000 copies during its first week. In 2008, Taylor released her second studio album Fearless. The lead single from the album, Love Story, was released in September 2008 and became the second best-selling country single of all time, peaking at number four on the Billboard Hot 100 chart. Four more singles were released throughout 2008 and 2009: White Horse, You Belong with Me, Fifteen and Fearless. You Belong with Me was the album’s highestcharting single, peaking at number two on the Billboard Hot 100. The album debuted at number one on the Billboard 200 Album Chart. It was the top-selling album of 2009 and brought Swift much crossover success. In September 2009, Swift became the first country music artist to win an MTV Video Music Award when You Belong with Me was named Best Female Video. Her acceptance speech was interrupted by rapper Kanye West, who had been involved in a number of

other award show incidents. West declared Beyoncé’s video for Single Ladies (Put a Ring on It), nominated in the same category, to be “one of the best videos of all time”. When Beyoncé later won the award for Video of the Year, she invited Taylor onstage to finish her speech. In November 2009, Taylor became the youngest ever artist, and one of only six women, to be named Entertainer of the Year by the Country Music Association. Taylor released her third studio album in October 2010 Speak Now, and she wrote all the songs herself. She originally intended to call the album Enchanted, but Scott Borchetta, her record label’s CEO, felt the title did not reflect the album’s more adult themes. Swift toured throughout 2011 and early 2012 in support of Speak Now. As part of the thirteen-month, 111 date world tour, Swift played seven shows in Asia, twelve shows in Europe, 80 shows in North America and twelve shows in Australasia. Three dates on the US tour were rescheduled after Swift fell ill with bronchitis. The stage show was inspired by Broadway musical theatre,

Swift’s fourth studio album, Red, was released on 22 October 2012. She wrote nine of the album’s sixteen songs alone. Her manager encouraged Swift “to branch out and to test herself in other situations”. She has described the collaborative process as “an apprenticeship” which taught her to “paint with different colors”. Red examines Swift’s attraction to drama-filled relationships; she believes that, since writing the record, such relationships no longer appeal to her. Musically, while there is some experimentation with “slick, electronic beats”, “the pop sheen is limited to a handful of tracks sprinkled among more recognizably Swiftian fare”. WINEHOUSE’S RECOMMENDATION - TABALI AND SANTA EMA Tabali winery started its vineyards plantations in 1993 in the promising Limari Valley (North Chile) area with very favourable climatic conditions for growing and producing fine wines. Amongst the winery’s production you can find the Tabalí Reserva and Tabalí Reserva Especial lines, which include the standout varieties Chardonnay, Sauvignon Blanc, Syrah, and Pinot Noir; all highly respected as high-end wines. Santa Ema was created in 1955 and exclusively managed in traditional style ever since. Now the third family generation continues producing some of the best wines of Chile’s most prominent region – Maipo Valley (Central Valley). Santa Ema uses French oak barrels to age its Reserve wines, and was recently named to the Wine Spectator’s list of Top 20 World’s Finest Value Brands.

rystal clear water and pristine white sand beaches fringe it’s privileged location of Nusa Dua in south- eastern Bali. 40 kilometres from Denpasar, Bali’s provincial capital a gated enclave of large international 5 star hotels. Passing through the suite’s front door there is a closed lobby area with drinks with beverages on a large writing desk. Through an internal door into a gracefully furnished living room decorated with delightful pieces of Balinese art. On the far wall a luxuriant cotton fabric sofa and large armchair surrounding a rich brown leather coffee table. Smooth wood floors and finely crafted furnishings, along with a large study table suitable for dining. The ambiance most definitely does make a gentlemen feel at home.

Before we could enter the immaculately maintained community of Nusa Dua there was the first security check point. Driving a few kilometres further we had to pass through a second security check point to enter the hotels compound. I was seated in the lobby, checked into the hotel and introduced to my butler who then escorted me to my 6th floor ocean facing suite.

In the bedroom features a large walk-in wardrobe and a plush king-size bed with 300-thread-count Egyptian cotton Ploh linens with a ceiling fan overhead. The generously proportioned marble bathroom is home to a spectacular standalone bathtub with its own wall mounted LCD TV. Dual vanity units with illuminated mirrors that can be a touch too honest but perfect for immaculate grooming. Each item of tissue paper hand been neatly folded and embossed with the St. Regis logo, its this level of attention to detail that defines the brand. On check in guests are entitled to up to five items lightly pressed. I gave the butler three of travel crumbled shirts to freshen up. When I returned to my suite later that night they were each duly ironed and placed on a hanger inside a heavy duty St. Regis garment holder. He had left a note beside my bed telling me that my pressing had been returned and was hanging in the closet, such flawless service.

The Bloody Mary has been the St. Regis signature cocktail since it was created in 1934 by Fernand Petiot at the King Cole Bar of St. Regis New York. Since then the custom has spread for ever St. Regis worldwide to give the classic cocktail its own local twist. Here its the Bali Mary, Indonesian cuisine have influenced the recipe. The primary ingredients are Jicama, a traditional favourite fruit in Indonesia, refreshing cucumber and brown sugar added to the usual mix of tomato juice, Tobasco and Absolut Peppar. To give it a touch of class its served in a Champagne glass garnished with a V-shaped piece of jicama, celery and cherry tomato. I ordered a Bali Mary on the terrace of the King Cole Bar just in time to look down on the Fire Dance ritual performed daily on the Grand Staircase at 6.30pm to mark the transition from day to night. From there followed the trail of the burning lamps through the tropical garden from the hotel building to the beach where I found Kayuputi the fine beachfront restaurant the name in Indonesian means white wood. Its the perfect description for the vision of white with

modern decor and the elegant backdrop of the Indian Ocean. Seating options are either outside in private cabanas or settle in to soft white cushions inside the restaurant. When I arrived at the restaurant I was greeted by Executive Chef Agung Ardiawan whose has the philosophy the “Cooking with Love” is his mission not only his pass time The restaurant serves quality presentations that retain the dishes intrinsic complexity with modern presentation. Chef Agung had prepared a special menu for me to showcase the restaurants food style. He started with a tuna medallion with balsamic reduction encircled by a delicate ring of edible flower making for an exquisite meticulous. This was followed by a seared Canadian scallop in a silky smooth carrot soup. The first two dishes he paired with Peter Lehmann Sauvignon Blanc crafted from Adelaide Hills and Barossa fruit made with no oak just 100% stainless steel fermentation to preserve the acidity and define the intensely aromatic dry style.

THE GENEROUSLY PROPORTIONED MARBLE BATHROOM IS HOME TO A SPECTACULAR STANDALONE BATHTUB WITH ITS OWN WALL MOUNTED LCD TV. From his Champagne Brunch menu he served his 62 hours slow poached beef oyster blade in a nutmeg broth, root vegetables, steamed potato dumpling which he perfectly paired with a Shiraz from the same winemaker. Peter Lehmann, known as the ‘Baron of Barossa,’ selects this classic Shiraz from some of the best vineyards in the region, some of which remain ungrafted due to an absence of phylloxera. He ages them in French and American oak for 12 months. There was plenty of flesh and spice on the palate with concentrated blackcurrant and bramble fruit as well as hints of mocha and dark chocolate.

For dessert he served Chocolate - Valrhona with Guanaja bar, chocolate caraibe coulis, white chocolate sherbet, dried fruit and cocoa tuile, liquored chocolate stick that releases its contents in the mouth when crushed by the tongue such a decadently divine indulgence. Petit fours where individually selected from a cabinet table side, portion were perfect and the plating exquisite. After a perfect night sleep down to Boneka for a sunrise breakfast and they do know how to do it with their own style and panache. Hot dishes are ordered a la carte plus a buffet selection of western and Asian dishes. The dishes that cried out to be tasted were eggs Benedict with salmon roe, slice Serrano ham and buttered asparagus; eggs nouvelle, lobster ragout filled egg shell with parsley cream topped with Salmon roe; river lobster egg omelet with lobster bisque and wild arugula leaves; duo of oyster one fresh with coriander lime drizzle the second sautĂŠed with spinach and gratinated with herb Hollandaise; Veal liver spread with sautĂŠed mushrooms, crispy bacon and pickled beet root and for a local taste Nasi Goreng. A bowl of fresh strawberries and cream from breakfast must be the ultimate indulgence and why not if you can. When John Jacob Astor IV opened St. Regis in Manhattan his vision was for a hotel where gentlemen and their families could feel as comfortable as guests in a private home. He arranged for fresh flowers to be brought in daily, English-style butlers were on hand to take care of the most minute and personal details, the ritual of English afternoon tea being served daily. ali, the Island of the Gods, is a term penned in traditional mythology, as it was originally believed to be an idyllic location for housing deities.

ceremony is going on somewhere. Life is a ceremony! There are rituals for every person’s passage from birth, puberty, marriage, childbirth, death, and the after world. There are a total of 13 ceremonies concerned with life from conception until, but not including, death; each of which have four elements: placation of evil spirits, purification with holy water, wafting of essence, and prayer.

It appears many humans believe the island is an idyllic location to house onesself too. There is a magic energy on Bali that is often hard to describe. It’s known as a strong feminine energy, Bali is known often to embrace you and create an amazing experience, it’s also very well-known to kick those out that are not in harmony with the island.

The most important ceremonies take place after death, and result in the soul being freed to be eventually reincarnated. Unlike the death rites of other religions, the physical body is not the focus, as it is seen as nothing more than a temporary container of the soul and fit only for expedient disposal. In fact, the body must be burned before the soul can leave it completely. The cremation ceremony to bring this about can be extremely expensive because an elaborate ceremony is a way ofshowing

Going to the temple or doing daily ritual ceremony is the same as eating, sleeping, or even breathing. There is never any question of not doing it.

The fundamental principle underlying Hinduism is that there is order in the cosmos, known as dharma. There is also a disordering force, adharma. Hindus seek balance and harmony between these two forces, thus freeing themselves form the never-ending cycle of reincarnation, attaining a state called moksa.

Every home in Bali has its own temple. The home would be incomplete without it. It is fascinating to observe, and an honour to participate in this practise when you are in Bali. Being respectful and courteous when visiting any temple is something to be mindful of. The Balinese are very polite and generally don’t speak up when tourists don’t appropriate according to how one should act in sacred places. Surely you wouldn’t strut through a Cathedral in a bikini, so taking the time to observe the tradition will enhance your experience.

Balinese Hinduism divides the cosmos into three layers. The highest level is heaven, or suarga, the abode of the gods. Next is the world of man, buwah. Below this is hell, or bhur, where the demons live and where people’s spirits are punished for misdeeds on earth. This tripartite division is mirrored in the human body (head, body, and feet) and the shrines found outside Balinese buildings.

The first thing to note is your attire. Always wear a sarong, for both men and women. Always have your shoulders covered. This is the simplest and most basic thing to do. Even if you only do that, you are being respectful.

It’s serious business I’m sure you can appreciate. Yet it’s the natural way of life. It never occurs to the Balinese youth to rebel against the religion or to not go to a

Wearing a salandang (a sash around the waist), shows your further understanding of temple attire. It represents a form of protection from spirits while in the holy place. Always wear shoes while walking around. Always, take shoes off and sit on them if you are invited to pray or meditate in the temple. Try and keep your knees covered at all times. Understanding that ‘Bali time’ is very prevalent in the temple too, and the hierarchy of the holy men and women is similar to all religions. When the Mangku is ready, everyone is ready. You quickly learn patience, going with the flow and community quite quickly spending just a little bit of time in the local temples. Another polite attribute is asking ‘permission’ to go into certain parts of temples, to sit in certain areas, taking photographs, and video recording.

EVERY HOME IN BALI HAS ITS OWN TEMPLE, AGAIN THE HOME WOULD BE INCOMPLETE WITHOUT IT. IT IS FASCINATING TO OBSERVE AND AN HONOR TO PARTICIPATE IN THIS PRACTISE WHEN YOU ARE IN BALI. For every ceremony there is an offering, commonly known as a ‘Banten’; a gift to God. The offering to accompany prayer. If you have been invited by a Hindu, they will have a Banten for you, if you are visiting alone, there are small boxes for donations. By contributing to the upkeep of the temple and the livelihood of the resident Mangkus (priests), you are expressing your sincerity in the Hindu way. Ten to twenty-thousand rupiah is a respected expression. At some of the bigger temples you may come across small children trying to sell you postcards or smallofferings, don’t feel obliged to buy anything from them. If you are not interested in their wares, simply ignore them and don’t entertain the tourist trading. Enjoy the spiritual aspect of the visit and feel free to take many photographs outside of the temple.

Pushed into piano during his youth, the real motivation with music came as he started performing with bands. Yet, keys took second priority once he found DJing in the party scene, “caught the bug” at a friend’s house,

and transitioned to becoming a bedroom DJ. With a lucky break playing his first gig on New Year’s Eve at Melbourne’s Champagne Lounge, residencies unfolded, and he put the part-time income into expanding his record collection. While still working a 9-5, Billy was soon being flown up to Bali over the high seasons. Stars aligned, his success here led to a full-time job opportunity with Ku De Ta ten years ago, where his roles continue to evolve - currently as music director and asset manager. While he may not have an excess of time for the studio between 10 hour days at Ku, diving, biking, and spending quality time with his son, Billy has also released a number of excellent musical productions - drawing from his characteristic sunset-style, “I try to keep the soul - an organic sound… that’s another thing we try to keep in touch with here (at KDT) as well.”

BALI’S ENCHANTMENT & ALLURE OF IT’S WORLD-CLASS HOTSPOTS HAS ATTRACTED A FLOCK OF TALENTED INTERNATIONAL DJS WITH DREAMS OF PERFECTING THEIR CRAFT TO THE BACKDROP OF WAVES CRASHING AS THE SUN FADES INTO THE OCEAN. What he loves about playing Ku to this day: “ The spectrum is really broad - you can play it all as long as there’s a vibe happening. It seems there’s a lot of places doing the same thing at the moment. We try to not look at what anyone else is doing, but just do our own thing.” And - of course - the sunsets: “It changes the colour of everything, changes people’s moods… it puts people in a different headspace and makes them stop for that moment. If the DJ can see that, feel that, and adjust the music accordingly playing something spectacular for that… that for me, is a special moment. You never know what you’re gonna get, and that’s the best part.” Danny Fry Raised in Hawaii, Danny fell in love with clubbing when moving back to his home country, Chile, at 15. Returning to Maui, his path DJing took off - playing and putting on parties while working construction, painting surfboards, and completing a fine arts degree. First visiting Bali in ‘96, Danny spent the next decade playing gigs here while vacationing for the surf. He picked up residencies as work in Hawaii dried up with the economy, and got right into the Bali groove though soon burnt out on playing 5-6 days per week,

“The W’s interesting - as a brand it really has its own style and musical focus on what’s new and upcoming. I try to make sure we maintain a certain level of integrity with our music - pushing the guys to search for music that’s a bit more random or underground, though I’m also all for people mixing it up a bit - throwing down some classics, jazz, funk. There’s got to be a certain electro factor to it, (but) as long as the vibe is cool and fun.” While the sunset sessions may allow a wider playing field to get more into a love for music, Danny’s addiction to playing clubs is clear - and much of his energy has gone into building up Woo Bar’s late nights.

Rok Sivante Hailing from Canada, growing up playing piano and guitar, composing, recording, and performing in rock and jazz bands, Rok’s magnetism to DJing at 17 began with producing creative mixtapes and competing in DMC championships. Dropping out of business school to pursue a career path behind the decks, he soon held residencies at two of the city’s most upscale clubs and lounges, developing a multifaceted style and insightful perspective on the art over the next years.

“I’m digging where it’s going… we’ve been able to play really underground - it’s really going back to just about dancing and music and about people having a good vibe - not about coming to hear the top 40
