Oh my goodness, I don’t know where to start. I must confess, that editor’s letters can be sometimes difficult to write month after month - you’re usually on a tough deadline, stressed with a numb brain, and worry you’re repeating yourself. Not a good state of affairs. However, this month I can’t type fast enough, for all the exciting features this month’s magazine holds. So I’ll go through a few which I think will be of particular interest to you, our lovely readers. As a fan of Top Gear I was so excited when Danny Masters informed me that he’d managed to book an exclusive interview with the ‘Hamster’ Richard Hammond for Absolute Brighton. And upon reading it, I wasn’t disappointed. Also known as the ‘daredevil’ of the three motoring programme’s presenters, Richard spoke to Danny about ‘that accident,’ dispersed those rumours over the stunts and adventures in the popular TV show not being ‘real,’ and why his favourite place is being at home with his wife and children (women everywhere with love him even more now!) (Page 22) Whether it is love or a secret crush, we’re all getting ready to purchase those all important Valentines Day cards… and nowadays, a card isn’t all that loved ones expect. Valentines gifts are now mandatory, apparently. Yes, if you want to gain a Valentines gold star this year from your loved one you had better purchase a little (or big) token of your love. From lacy underwear to a cuddly teddy that you can record a romantic message in, we have found some of the most romantic ideas for lovers everywhere. (Page 32) And with romance comes weddings of course. Choosing a wedding dress is one of the most important decisions in many ladies’ lives; many have envisaged it since they were little. But when it comes to actually finding that dream dress, the task can turn in to a stressful one. To help any brides-to-be out there suffering this predicament, we select a pick of the best wedding gown designers, whose dresses are available in local shops throughout Sussex. They truly are beautiful. (Page 46). We have also selected some great honeymoon destinations for you (Page 42), and some of the best traditional wedding cakes available. Victoria Beckham appears to be stealing Mariah Carey’s crown in the diva stakes. An ‘Absolute mole’ has revealed to me that ‘Posh’ is particularly pernickety about public toilets and is known to get her people to phone ahead an hour before her appearance at a London fashion store to make sure the loos have been locked to anyone else but her prior to her arrival. “She’s also one of those celebrities who tip-off the paps as to where she’s going to be and then blames everyone else when she’s caught on camera,” says our mole close to Posh. “She can’t help herself, she lives and breathes fame!”

Jackie Stallone says Celebrity Big Brother bosses may have duped her into signing up to the show a few years ago by telling her she was to be filmed staying at an English country house with a bunch of intellects, but it was she who had the last laugh: “I’m sure when this series ends I’ll be interviewed again talking about my time in the hell hole of a house and in turn receive more fan mail. The British love me!” she says. “I’m friends with the Queen, you know. I’m friends with her mother too and her sister.” Hmm, seeing the latter two are both no longer with us, it would appear Jackie’s obviously taken up with her role as a medium again!

Baywatch babe too shy for CBB spotlight Pamela Anderson says she couldn’t bare the idea of being in the spotlight 24-7 as a contestant on Celebrity Big Brother: “I’m actually shy in many ways,” says the surgically enhanced former Baywatch blonde turned pantomime star. “I couldn’t stand being spied on for any amount of time; those on that show must be so desperate!”

Holby star is cool about Dancing on Ice Jeremy Sheffield may well have the edge over his fellow Dancing on Ice skaters, as the British born star of Holby City and Hollywood films such as The Wedding Date (2005) and Last Chance Harvey (2008) with Dustin Hoffman, but it doesn’t stop him asking for advice. He recently got tips from the Queen’s former dress designer, Sir Hardy Amies, on how to ice skate. Sheffield, who was a male model at the tailor’s during the late 1980s, revealed that Sir Hardy was once a champion tennis player and ice skater. “He could have given Torvill and Dean a run for their money,” he said. “After being in LA for so long, the one thing I’m least looking forward to is the cold.”

Booth is back and in the saddle Hollyoaks actor Stefan Booth is making his way back on screen after devoting much time to charity work and sharing child care duties with his wife, model Debbie Flett, who he met acting in the TV drama, Breakwater. For Stefan’s latest film Gun of the Black Sun he’ll be utilizing his motorbike riding skills: “I ride my bike all the time so it’s not a great challenge for me – now horse-riding, that would be a different matter,” he says.

England star launches Brighton Ladies League A

n initiative to offer ladies competitive smallsided football is being rolled out across England and will come to Brighton in February with the launch of a new community 6-a-side football league which is being supported by Arsenal and England star Kelly Smith. It is hoped that the weekly league will enable more ladies to take part in competitive football with relatively few 11-aside leagues still available despite the increase in popularity of women’s football. The ladies community 6-a-side football league will be running every Friday evening between 7.00pm - 9.00pm on the Astroturf pitch at Stanley Deason Leisure Centre. The man behind the initiative is Paul Spacey, who helps to run the UK’s largest and most popular network of men’s small-sided football leagues, Prostar Leagues. Spacey hopes the ladies leagues will eventually prove to be just as popular as men’s small-sided football, especially now that women’s football has overtaken netball as the official number one female participation sport in the UK. He said, “We have countless enquiries every day from women looking to get involved in a 6-aside league and we have now decided on a new venture and will work with the Football Association

to offer women throughout England the chance to do just that. It is fantastic to have Kelly Smith involved as she is one of the most high profile names in women’s football. In fact, she’s probably the David Beckham of the women’s game, but with a better left foot!” Teams will play a half hour game each week, there is no registration or affiliation fee and match costs are just £3 per player per week. Divisional winners will receive free kits and entry into the first ever UK Women’s National Cup while runners-up receive top quality individual trophies and there is also a top goalscorer competition. The league will be affiliated to the Football Association with all matches being officiated by qualified FA referees and the organisers hope to get female officials involved in the competition. All equipment is provided so that it is simply a case of turning up and enjoying the fun, providing you are aged 16 and over. Kelly Smith, MBE, commented, “It is great to see someone trying to get more ladies involved in competitive football. I grew up playing small-sided football, it’s a great way to improve your technique and fitness and the leagues will give ladies the chance to do that. It really is easy to get five or

Dear diary Cupid is emptying his quiver in every direction, the naughty cherub! Out of the frozen months gone past comes the warming February news of frills and fancies as many begin their long trips to Love’s Altar. Dave “Mental” Evans, the publisher of my book Brighton Bible and MD of 4 Print and Design/ 4 Publishing, popped the question not long ago to his now fiancé, Keira Philo in a champagne filled private box at The Royal Albert Hall. Another young couple of my acquaintance, Aide Shann and Louise Skinner, have announced November as the month of their nuptials! Some prominent couplings sadly however, came undone in the dark days and long nights of this frigid winter. The chattering classes will know too well of whom I speak. All of us wish these two charming and warm people the best in their new directions. I remain besotted with my elegant wife of 20 years, Karin, and am still in awe of her amazing ability to find the mustard in the fridge or remember birthdays and anniversaries. Eager to expand my writing career (in the 80’s I had 4 bestselling worldwide children’s books published in two editions and several languages by Little Simon/Simon and Schuster NYC ), this multi tasking Socialite is in need of a literary agent for three salacious grown-up novels!

ABSOLUTE INTERVIEW “…Personally, I like a car with some sort of character. It might be anything from a distinctive engine note to a quirky way in which it’s built.”

Richard’s five favourite drives in the world: 1. The Honister Pass in the Lake District. It’s a long and beautifully scenic road but I love it because Buttermere lies at the end of it. And that’s my favourite place in the world. 2. The Stelvio Pass. The hightest mountain pass in the Eastern Italian Alps running from Davos to Stelvio, it’s 15 miles of deserted perfection. 3. The Tranfagarasn in Romania. The road was built as a military route across the Carpathian Mountains and it’s got everything – steep, hairpin turns, long S-curves and sharp descents. A magnificent piece of roadbuilding. 4. The Bonneville Salt Flats in Utah, USA. Best driven in a big but simple V8 car so it quickly settles down into that wonderfully metallic V8 drone. I you nail along as the sun is setting, you see the salt flats opening up ahead of you like spilt milk – that’s a pretty spectacular drive. 5. The road that has my home at the end of it. Because the great thing about leaving my front door to go on one of our expeditions is knowing I’m going to come back to it. As I keep explaining to my wife and two daughters, the best thing about leaving home is that you get to come back. And what would be on the CD player? This makes me sound like an old fogey but the ultimate driving track is Lynyrd Skynyrd’s ‘Sweet Home Alabama’. It doesn’t make you drive aggressively but you just settle into it and let it wash over you. And of course, it’s about home – and I love my home life!

Daredevil Hamster He’s trekked to the North Pole in a dog sled, crashed at 300mph in a jet-propelled dragster and in the Christmas special of Top Gear, drove through the Bolivian jungle and negotiated the most dangerous road in the world. Danny Masters catches up with Top Gear presenter and self-confessed petrolhead, Richard Hammond Richard, given that you suffered a life-threatening brain injury during a previous Top Gear caper, why do you still put yourself through these ordeals? A very good question! We certainly don’t make these films to show how good or clever we are. But it’s an unmissable chance to give viewers the chance to see something extraordinary as seen through the eyes of three ordinary blokes. And of course I can’t deny it’s hugely exhilarating knowing that you’ve pushed yourself to the limit to prove something can be done, and delivered a great piece of television in the process. How close were you to dying when you crashed that jet car? Let me put it like this, doctors use a points system; fifteen is normal, three is a flatline. Apparently I was a three. I was that close to being dead. I actually damaged the part of my brain to do with spatial awareness, so afterwards I occasionally had trouble with parking; which was a bit of an embarrassment. Have you changed your lifestyle in any way since the accident? I run more. My doctor told me that to recover from a brain injury, it’s good to be quite fit. So I run more for my mental health then physical. It makes me feel good, and I feel the benefits immensely. If I don’t have a run at the beginning of the day, I’m miserable and moody all day - it does make a huge difference. In these budget conscious times, how do you justify the cost of Top Gear’s epic challenges? Compared to other forms of TV, we’re very inexpensive to run. Take our Christmas special in Bolivia...the cars were bought on the cheap, we were camping in ditches rather than staying in luxury hotels so we couldn’t have been more frugal. But more to the point, Top Gear is sold worldwide so I think you’ll find the show makes the BBC more money than it costs to make. And that’s a great thing because it props up other programmes that are worthy of making but commercially could never stand up on their own.

As you just mentioned, you and your co-presenters James and Jeremy had to camp out in the jungle. Who’s the worst camper? Probably Jeremy hates camping the most. I love camping – although, I prefer it when my tent isn’t full of cockroaches and spiders. But James and Jeremy get very middle aged about it, complaining about the standard of the zips on their sleeping bags etc. There was a lot of time spent sat round a smouldering camp fire with those two moaning about how wild it was and questioning why I’d spent most of my formative years under canvas in the Lake District. But I genuinely enjoy it, especially the sound of the wind smattering against the canvas. Are you sure you didn’t really all stay in 5 star hotels? No, honestly, when we do these trips, it really is the real deal. You can see by the way we look– and it’s shot in HD (high definition) which is a problem as we all looked like hell. You’ve road-tested loads of cars, what do you look for in a car when you’re buying one with your own money? Personally, I like a car with some sort of character. It might be anything from a distinctive engine note to a quirky way in which it’s built, or something interesting about it beyond the simple ability of it being able to move from one place to another reliably and efficiently, which all cars can. Who’s the best celeb driver you’ve ever had on Top Gear? Jay Kay (lead singer of Jamiroquai). He’s got a collection of sports cars and he really can drive them. He is a very good peddler! On Top Gear, how much of the banter between the three of you is rehearsed? It’s pretty much all ad lib. When we’re filming on location, we go out and we have an idea of what we want to do and generally we come back with something completely different and that’s the joy of it.

Is there any truth in the rumours that you three presenters don’t get on any more? It’s nonsense. People see our on-screen banter and think that we must hate each other. But the whole show is founded on taking the mic out of each other. That’s how we get by. We actually get on really well. We’ve been through a hell of a lot together over the last 7 years of doing the show, so we’re never short of things to talk about. I’m actually not filming with them today for the first time in ages and it doesn’t feel right. Do your two daughters have a love of cars? Yes, they already like cars. But then, lots of little girls do, don’t they? But they both love their ponies and chickens more, so they’re not entirely wedded to metal. Do you think it’s vaguely odd that women seem to be nuts for you? It is odd. I even made it into Heat magazine’s ‘weird crushes.’ But it’s worth remembering that James May also appeared on that list! And that’s not just odd. That’s pretty bloody weird. Finally, Jeremy constantly teases you about this but have you really had your teeth whitened? No, I honestly haven’t!

Romance Celebrity steal their style With spring on the horizon and wedding bells ringing in the distance I wanted to take a catwalk look and bring it back to a style which brides-to-be can create themselves or anyone for that matter who is looking for a romance inspired style. The textured pony is a simplistic and undone style perfect for a wedding as it will signify youth and will compliment most dress choices. This is a great example of how you can successfully create a catwalk style without too much hassle yourself. Haphazard curls pulled back into a low slung ponytail, over the shoulder or straight back will bring out any caramel, honey and chocolate tones for those with lighter colourings and will be able to be seen through the top of the crown and the pony itself on your big day. Hair that already has a natural wave will work well on this style as it does with the beautiful Diane Kruger (pictured above), famed for her roles as Helen of Troy and German actress Bridget von Hammersmark in Quentin Tarantino’s Inglorious Basterds. Rule No. 1: Choose the correct shade. If you are warm with olive or yellow undertones, choose a lipstick with orange or brown tones. Think brick red or fire-engine red. If you are cool with pinkish or reddish undertones, pick a red lipstick with berry undertones of blue or pink. Darker complexions should avoid the brighter reds and opt for deep rich shades in burgundy or plum. Rule No. 2: Prep your lips. Start with lips in the best possible condition, buff and balm the lips before applying any colour. You can Exfoliate gently with a soft, dry toothbrush. But remember to wipe any excess balm away. Rule No. 3: Concealer. Blend a small amount of light concealer around the mouth to enable you to achieve a polished look and to prevent the colour bleeding into fine lines. Rule No. 4: Lip liner. Liner is essential with red lipstick, It helps to hold the

colour and prevent the ultimate bleeding, Fill in the lips completely with lip liner first and trace the lip contours. Choose a lip pencil in a shade close to that of your lipstick. Rule No. 5: No shortcuts. Don’t be tempted to apply straight from the stick, work up the colour gradually and always use a lip brush. Kiss a tissue to remove excess before adding another layer, and the pigment will last a lot longer. To prevent lipstick on the teeth just make an ‘o’ with your mouth, pop your finger in and draw it out again – voila! Rule No. 6: Keep it simple. Pair red lipstick with the lightest possible eye makeup, a little mascara and beige shadow with a hint of blush. Remember: If you’re planning on eating while wearing red lipstick, avoid anything oily such as salad dressing. Oil dissolves lipstick and will spread the pigment into the lines around the mouth.

Depression can be a result of many factors from financial difficulties to a relationship breakdown. However, one cause that people often overlook is dietary. Our health expert Sheryl Waters discusses this often overlooked root of depression

H

ere in the UK, depression is nearly epidemic. Sometimes there are emotional reasons for feeling depressed. Lack of life purpose, financial abundance, love and gratitude can all cause a feeling of being depressed. However, there is often a nutritional piece to the depression puzzle too, and lifestyle changes can dramatically transform someone who feels chronically down in the dumps. If you are depressed, whether you choose to take antidepressants or not, you will find that making some nutritional changes in your life will be beneficial to your overall wellbeing. Dietary Changes Sugar can cause blood sugar and adrenal imbalances that can cause mental lows. You may find you feel temporarily better from the sugar rush, but later you are sure to plummet to a steep low. If you find yourself emotionally eating, make yourself some sugar free treats using ‘agave nectar’ or ‘xylitol.’ Snacking on almonds or seeds is also a healthy quick fix. Avoid caffeine and alcohol since they also bring temporary relief, and energy will shortly turn to a low and give you a need for more. Eat as much raw fruit and vegetables as possible; this is vital. Every time you put something healthy into your body, you are nurturing and balancing yourself, and every time you put processed foods and rubbish in, you are causing imbalances. Be conscious of the foods you eat at all times. Put in as many nourishing foods that are giving your body vital nutrients. Remember, you are what you eat! Essential Nutrients While we need all nutrients for our mental and emotional health, some nutrients are particularly essential for those who suffer from depression. 
 Vitamin B6 is needed to produce the moodenhancing neurotransmitters serotonin and dopamine. Garlic, cauliflower, mustard greens, banana, celery, and cabbage all contain this important vitamin. Folic Acid is a B vitamin that is often deficient in people who are depressed. It is found in green leafy vegetables, other vegetables, and fruit. Magnesium is the most common deficiency in the western world. It relaxes the mind, muscles and body. It brings about a sense of wellbeing and produces serotonin. Good sources of magnesium are legumes, nuts, whole grains and green vegetables. The number

one magnesium rich food is sugar free raw chocolate, which is becoming increasingly popular. Omega-3 fatty acids are good fats that are vital for moods and cognitive function, and can heal and prevent depression. In countries where more fish is consumed, there is a lower rate of depression. They are found in high concentrations in fatty, carnivorous fish such as herring, mackerel, tuna, and salmon. They are also found in hemp seeds, linseeds, coconut oil and chia seeds. Detoxification Besides toxic foods, we also need to be aware of toxins that may cause depression. Lead exposure was thought to be a thing of the past, but it is more common today than most realize. A recent study in the Archives of General Psychiatry (December issue) found that individuals with high lead levels have a greater risk of being diagnosed with Manic Depressive Disorder (MDD) and panic disorder, compared with those with low lead levels. For those who suffer with depression, it may be worth testing for lead, and if it is diagnosed heal it with herbs or chlorella, which can detoxify heavy metals. 
 In fact any toxin can cause depression. Deodorants, perfumes, beauty products, cleaning products and other chemicals should be considered as possible pieces to the puzzle for those with depression. Try to cut out as much as possible.

“In countries where more fish is consumed, there is a lower rate of depression” Supplements St. John’s Wort has long been used in folk medicine for sadness, worry, nervousness, and poor sleep. Today, the results of over 20 clinical trials suggest that St. John’s Wort works better than a placebo and is as effective as antidepressants for mild to moderate depression, with fewer side effects. SAM-e is a chemical that’s found naturally in the human body and is believed to increase levels of neurotransmitters serotonin and dopamine. Again, several studies have found SAM-e is more effective than placebo.

.5-HTP is produced naturally in the body and is used to make the neurotransmitter serotonin. It is also good for those who find sleep a problem and who get anxious and find it difficult to relax. Remember, these supplements may be good for some people but ineffective for others. Try them out one at a time to see if they improve your mood, or better yet, see a natural therapist who can tell you what will be best for you. Everyone is different and can respond differently. Exercise Regular exercise is one of the most effective and inexpensive ways to improve the mood. Exercise releases mood-elevating chemicals in the brain and can decrease stress hormones. Yoga is particularly good for depression as it increases body awareness and helps the mind to relax and focus breathing. Any form of exercise will help. It is vital that anyone with depression gets their body moving at least six days a week. If nothing else, walk briskly to work or to the shops. Light Therapy Getting enough sunlight can be a challenge for those of us who live in England. During the winter when there is less sunlight, serotonin levels can drop, making us feel tired and prone to ‘seasonal affective disorder’ (SAD). One of the simplest ways to increase your exposure to light is to walk outdoors in the morning. Another option is to use special lights that simulate natural daylight. Studies have found they are very effective (these lights can be found online). Keep Working on Yourself Remember that depression may be a message that you need to make some changes in your life. Talk to a natural practitioner about unresolved emotional issues. Read books about coping mechanisms and looking at the world through a positive vantage point. Observe your thoughts rather than getting caught up in them; they are there, they are okay. Just take a distance and watch. Learning to meditate can help tremendously with this process. Keep searching for purposes in life. Making life meaningful is vital for those with depression. Be kind to yourself.

eter Mantle trained as a classical actor at The Bristol Old Vic Theatre School, leaving in 1972 to spend the next 35 years working as a professional actor, writer and director. He now divides his time between the agency that he owns and traveling to Majorca every year to work for Brighton based company E3 Productions where he takes theatrical workshops for major holiday company’s entertainers. These workshops are designed as a series of confidencebuilding exercises to help people lose their inhibitions and deal with their nerves. FOOD FOR LO LOVE With February being the month of romance, why not be a dream lover for your partner and serve up some oysters this Valentine's Day?

O

ysters have been a favorite of food lovers throughout the centuries, beginning with the emperors of Rome, who paid for them by their weight in gold. They have always been linked with love. Aphrodite, the Greek goddess of love, sprang forth from the sea on an oyster shell, and the dashing lover Casanova also used to start a meal eating 12 dozen oysters. The oyster’s aphrodisiac reputation has probably a lot to do with the fact that it is one of the most nutritionally well balanced foods, containing protein, carbohydrates and lipids. Oysters are an excellent source of vitamins A, B1(thiamin), B2 (riboflavin), B3 (niacin), C (ascorbic acid) and D (calciferol). Four or five medium size oysters supply the recommended daily allowance of iron, copper, iodine, magnesium, calcium, zinc, manganese and phosphorus. Oysters au natural should be served simply with crushed ice and seaweed. They may also be cooked in many ways, such as poaching, marinating, frying, grilling or baked.

Oysters Rockefeller By Alex Kingston Serves 2 Preparation time less than 30 mins Cooking time 10 to 30 mins Ingredients 6 fresh oysters in their shell, 55g/2oz butter, ½ small onion, chopped 1 tbsp chopped fresh parsley, 55g/2oz spinach, chopped, 55g/2oz fine breadcrumbs Method 1. Preheat the grill to its highest setting. 2. Open the oyster shells with a shucker (utensil used to open oysters with ease). Discard the top and loosen each oyster from the base of its shell. Set aside and keep cool. 3. Melt the butter in a small frying pan. Fry the onion and the parsley for 2-3 minutes, until softened. 4. Add the spinach and cook until wilted. 5. Add the breadcrumbs and cook for 1-2 minutes. 6. Place a teaspoon of spinach and breadcrumb mixture onto each half oyster shell to cover the oyster and place a small knob of butter on top of each. 7. Place the oysters onto a baking tray and transfer to the grill to cook until golden-brown. Tip: Try topping off this recipe with a sprinkle of fresh chilli and a squeeze of lemon juice.

Oysters and Champagne make the most delicious and romantic blend, so wash them down with your favourite bubbly. Why not try something a bit different. It is elegant and dry yet with a refreshing splash of raspberry, blackberry and strawberry.

How do pearls end up inside of oysters? An oyster produces a pearl when foreign material becomes trapped inside the shell. The oyster responds to the irritation by producing nacre, a combination of calcium and protein. The nacre coats the foreign material and over time produces a pearl. The “R” Myth Folklore says that oysters should be eaten only in months with an ‘r’ in them. This notion (ie. that oysters should not be eaten in the summer) may have started in the days when oysters where shipped without adequate refrigeration and could spoil. But today all that has changed and we can enjoy oysters twelve months a year.

SWEET SURRENDER Have fun this Valentines Day with your loved one Flirtatious fondue with strawberries Ingredients 150g/5oz plain chocolate, such as Bourneville, broken into pieces 200ml/7fl oz double cream 15g/½oz butter 1-2 tbsp Cointreau or Grand Marnier 1 large punnet of lush, ripe strawberries, long-stemmed if possible Method 1.Place the chocolate, cream, butter and Cointreau or Grand Marnier in a bowl over a pan of gently simmering water and leave until the chocolate and butter have melted. Stir until mixed together and transfer to a small fondue bowl over a lit fondue heater.
 2. Wash the strawberries and pat dry. Holding on to the stalks, dip them into the fondue. Saucy tip! Any leftover chocolate sauce needn’t be wasted - you can have plenty of fun using it as a body paint, providing it’s not too hot!

I began to retrace my steps. I had been disturbed to learn earlier in the year that the Komedia had some financial difficulties. But I need not have worried. I learnt from Macina Kobler, Programme Director and one of the theatre’s founders, that takings are up and

so are audiences. ‘Penguins’ this year’s Christmas entertainment for children had sold out. I remembered the time, not so long ago, when I had taken our grandchildren to see the Gruffalo. It was marvellous entertainment which bought tears to my eyes. I looked at my watch, I had been in the North Laine for some two and a half hours. What about the Lanes? I walked down New Road to see what was going on at the Theatre Royal. What an improvement the road works in New Road have made. It has opened up the centre of Brighton turning it into a great meeting place, spacious, welcoming clean and tidy. But why allow cars and non-essential traffic? There was one of those damn great four wheeled drive cars parked near the church and underneath a little patch of oil. The foyer of the Theatre Royal was full of people and there is an exciting programme for the New Year - The Moscow Ballet, Spike Milligan’s War Memoirs and much else. Leaving the Theatre on a whim I thought I would visit Al Duomo, one of my favourite restaurants, and see if they were still staging their Opera Evenings. “Yes indeed,” I was told by the manager in charge, “Alberto (the owner) is working on some ideas for the New Year.” “How are things?” I asked. “We had a very bad time before Christmas, with some three hundred and fifty cancellations due to snow and ice.” I understood the problem, for four days I was icebound in Hove Park Road actually. I rushed across North Street into the Lanes. It is a different kind of place from the North Laine and perhaps it deserves a separate article, I must ask Verity, our editor. There were sale signs everywhere offering reductions of 40%, 50% 60% and 70%, and there were many more empty shops than to the north of what was once Hanningtons. On leaving East Street I noticed a shop that seemed dedicated to second-hand Singer sewing machines. Had it cornered the market? I hope to tell you in my next article.

acau has always been Hong Kong’s feisty older sibling. While the British in Hong Kong were busy sipping High Tea on the Governor’s lawn, ex public school boys ensconced in their City apprenticeships at the HSBC headquarters, would secretly slip over the Pearl River to Macau to indulge in illicit liaisons, a flutter in the casinos (very un-British) and to quaff vintage port in mellow Portuguese restaurants. It’s been just over 10 years since Hong Kong and Macau were handed back to China and as Special Administrative Regions little has changed. Gambling is still banned in Hong Kong and in Macau’s bars you still see the hilarious spectacle of clueless ex public schoolboys inadvertently picking up ladyboys! For the Chinese, keeping Macau as an SAR has been a godsend. Like Hong Kong, gambling is strictly forbidden in mainland China, but policing it is nigh on impossible. The Chinese love nothing better than a flutter at the poker table and with China’s recent spectacular economic growth, the newly wealthy have been pouring into Macau turning this once sleepy Portuguese Colony into a glittering Far Eastern Las Vegas. The first thing you notice if you take the night ferry over from Hong Kong is the neon lights flickering on the horizon. There’s something about the intricate beauty of Chinese characters that lends itself perfectly to flashing neon and the effect in downtown Macau is breathtaking. Whole skyscrapers pulsate with kaleidoscopic light shows the most spectacular of which is the Grand Lisboa. Shaped like a giant golden lotus flower unfurling its petals, this 1000 room hotel and casino totally dominates the Macau skyline and is typical of the luxurious glitz that is a hallmark of Macau’s hotels. Expect cavernous rooms with spectacular views topped off with lashings of marble and crystal; all very OTT but wonderfully self-indulgent.

Place Your Bets In Macau The no holds barred glamorous décor extends into the vast casinos, but this is where the fun stops. Taipa Island is one of Macau’s most popular dining out neighbourhood’s. Rua do Cunha, popularly known as Food Street is lined by stalls serving up irresistible sizzling stir fries. Wander off into the picturesque alleyways lined by pretty colonial era gas lamps and you’ll soon stumble across Antonio’s, one of Macau’s most famous Portuguese restaurants. The larger than life Antonio himself enjoys nothing more than regaling guests with stories of his antics in Korean Soap Operas and, ever the showman, loves pulling out the

portable stove to rustle up flaming chorizos and crêpes suzette. How the old wooden beams have survived going up in an inferno is anyone’s guess! Tranquil Coloane, Macau Across the causeway from Taipa, Coloane is Macau’s lungs and is a beautiful island of feathery forests, giant butterflies and deserted beaches. It’s an ideal place to recover from the 8 hours jet leg that can hit you hard in Hong Kong and Macau. It’s also home to Lord Stow’s Bakery, a British run establishment which produces sublime pasteis de nata (Portuguese custard tarts). They’re less cloyingly sweet than their Portuguese counterparts and with feather light crumbling pastry are utterly delicious, fully deserving the permanent queues that form daily outside. Following a visit to Lord Stow’s, you can vicariously burn off the calories with a visit to Macau’s Grand Prix Museum which has a stunning collection of sleek vintage machines driven by the world’s most illustrious Formula 1 stars. Genuine thrill seekers should make a beeline to the infamous 338m high Macau Tower which is home to the highest bungee jump in the world drawing gasps of disbelief from viewers on the observation deck. The Chinese Superstitions Continue To The Architecture After 3 days or so unwinding in Macau you’ll be ready for the electric pace of Hong Kong. The fabled Hong Kong Island skyline is one of the most iconic views in the world and is rapidly being mirrored across the harbour in Kowloon. Here dozens of super tall skyscrapers are sprouting up creating a spectacular gateway to the new China. The Harbour Grand, one of Hong Kong’s newest luxury hotels, takes full advantage of this fabulous new urban landscape. Head to the rooftop oyster bar at sunset (arrive early as the best seats are always taken) and enjoy the unforgettable views of sparkling skyscrapers that make Manhattan look like Hobbiton. It’s worth taking a tour around the Central Business District with a local guide to hear the fascinating Feng Shui stories. Hong Kong companies are obsessed with superstition and the skyscrapers all have stories to tell. The Bank of China tower, covered in dramatic zig zag struts has been accused of deliberately casting daggers of bad energy at its rivals which has led the newer buildings to don graceful cladding to protect themselves. Norman Fosters iconic HSBC headquarters auspiciously faces the harbour and is built on stilts to allow the dragon believed to live on Victoria Peak unblocked access to the water. Cast your eyes around the streets of Central and you’ll soon get an idea of Hong Kong’s main passion; shopping. Vintage double decker “Ding Ding” trams that look every inch like the Knight Bus from Harry Potter, rattle past giant Emporio Armani billboards while at night so many red and gold neon shop signs light up the shopping streets it’s about the only place in the world where the McDonalds sign is virtually invisible. For more sedate shopping, walk up the hill to Hollywood Rd which is lined by antique shops selling an 62

imperial treasure trove of Ming Vases, dainty Ching Dynasty figurines and mirror smooth jade. More affordable bric a brac can be found in nearby Cat St market which does a brisk line in vintage Kung Fu film posters and hilarious waving Chairman Mao alarm clocks.

The tram weaves its way through the hillside apartment blocks at a gravity defying 27 degrees before entering the lush sub tropical forest that covers the upper reaches of The Peak. From the observation deck look out for the peregrine falcons circling over the distant skyscrapers and enjoy the refreshing breezes wafting in from the South China Sea. While not nipping over to Macau for a flutter in the casinos, the favourite evening past time for Hong Kong’s night owls is eating out. Not surprisingly you’ll find some of the finest Chinese cuisine in the world which bears no resemblance to the mounds of greasy noodles you find here in the UK. Street stalls and top restaurants alike make use of abundant seasonal ingredients all delicately spiced to perfectly balance their yin and yang flavours. One of the most enjoyable ways to experience Chinese food is in a Hot Pot restaurant. Yau Gwat Hei in the buzzing nightlife district of Wan Chai is a popular no frills example. Bowls of bubbling spicy stock are placed on tiny stoves in the middle of the table while plates of razor thin beef and pork, squeaky fresh greens and mushrooms straight out of a fairytale are placed around to toss in at your leisure. It’s a messy business, especially using chopsticks, but the soup gets more and more delicious as the meal progresses. On the other end of the spectrum Fook Lam Moon is a Michelin two starred restaurant frequented by Hong Kong’s film stars and millionaire business mandarins. Outside you’ll see rows of gleaming parked Bentley’s with lucky 8 number plates. Try the deep fried tofu with texture like crème caramel and the crab shells stuffed with crab meat and onions and fried in a meltingly light batter.

he Polo, a car which in the eyes of many jurors looks and feels like a scaled-down Golf, has been even more appreciated than its bigger stable-mate, which took third place last year. In fact, it is the first Volkswagen CotY winner in 18 years, following the win in 1992... by a Golf. All the 59 Jury members from 23 European countries gave points to the winner, and 25 of them chose it as their favourite. The iQ received points from 58 jurors, with 20 top marks. The Opel/Vauxhall Astra was voted by 55 Jury members, with five of them giving top points. Even if the VW model is shorter than a number of competitors in the B segment, this generation of Polo is fully capable of accommodating at least four adult people in comfort. Room, performance, refinement and a reasonable cargo space endorse that affirmation. As well as practical reasons, the small VW appeals for its fine exterior design and the impeccable execution of the cabin, which has a level of perceived quality unprecedented in this category. Should schools have uniforms?

To wear school uniforms or not has been an age old debate. Isn’t it funny how when you were at school you definitely thought uniform was a bad idea, and yet now as an adult most of you probably think it is a good thing, or do you? We look at the pro’s and cons of school uniform… you decide. YES! Uniform helps to create a strong sense of school ethos and a sense of belonging to a particular community (making a child feel proud to belong). As such, it promotes discipline and helps to drive up academic standards, which is why a uniform is often adopted by schools which are being reopened with a fresh start after being classified as failing. Uniform also acts as a social leveler, under which all students are equal in the eyes of the school and of each other. In institutions without uniform students are often competitive and worry endlessly about their appearance and the clothes they should wear. Pupils without expensive designer clothes and trainers may be singled out as social outcasts, or stigmatised as being from poor backgrounds. For these reasons, many parents prefer uniforms as they save them money on buying clothes for school wear and help their children blend in with the other kids. Uniform makes it easy to check that every student maintains a smart appearance and is dressed appropriately for their classes. n a cold Friday night recently, I made my way to the Red Rooms, a very cool and funky bar on Queens Road Brighton, to see a fresh new band from London, Panning for Gold. After a chat with owner Gary Brooks, I met up with the band members: Louis Bowers (Keyboard/Rap), Owen Jones (Lead Singer/ Guitarist), Graham Crawley (Bassist) and Jake Nipper (Drummer), all very friendly and confident guys. They told me how the band has been together for eight months and has already achieved a great deal. By putting so much passion and work in what they do, they have secured a headlining gig at the famous Café de Paris, London. The band members come from different backgrounds of music, from Rock, Indie, Jazz, D’n’B, Punk and Rap, all incorporated in their sound.

As I got settled into my seat, the bar filled up very quickly with a lively and friendly crowd to hear the warm-up band Sweet Sweet Lies, well-known in and around Brighton. The atmosphere builds up to the arrival of Panning for Gold on stage, and suddenly the Red Rooms was completely packed. When the band got up on stage, they introduced themselves to the crowd, and informed us that all songs are original, and written by themselves; you won't hear these guys doing covers. The band has got great stage presence, and they all certainly know how to work the crowd. Every song they played was just great and really got the crowd going. They incorporate their varied music styles perfectly, and with a touch of funk! I would recommend that you go and see this band, as there are great things to come for these guys!

s discussed in an earlier article, risk and business impact assessment is the first key stage of a companies risk management programme. The recent adverse weather has highlighted the fact that risk assessment is not just about measuring internal risks but is also about the wide area impact that may directly or indirectly effect your staff, business, customers and supply chain. Recently, many businesses have been adversely affected by the ‘denial of access’ to their own or their customer’s premises due to the protracted disruption of the private and public transport infrastructure. Business Risk Assessment When conducting a business risk assessment you should address the full range of threats and exposures to your business both from a ‘local’ as well as a ‘wide area’ perspective. The likelihood of a specific disaster scenario occurring is subject to a large number of regional and local variables and is directly related to your particular business model and location. Risks can be categorised into three main groups, as shown in the following table which contains a checklist

Legal & General £50K Fundraising Landmark

I

n January the Martlets Hospice and Legal & General in Hove celebrated a huge achievement – Legal & General staff have raised over £50,000 for the Hospice in less than two years. This fantastic sum of money has been generated by staff at L&G who wanted to support their favourite local charity. The Martlets became L & G’s Nominated Charity of the Year in April 2007. The first target for L & G employees was to raise £28,000 for patient equipment including specialist beds and reclining armchairs, as well as equipping each bedroom in the InPatient Unit with a digital television and free view box for patients to use whenever they feel like it. Employees chose where the money they raise goes from a wish list supplied by the Hospice. In less than ten months they hit the fundraising target and kept on going! The next service to benefit was the hospice at home service – Martlets@ Home – this service allows patients to choose to

die in the comfort and privacy of their own home. Through dress down days, sponsored events like the Martlets Midnight Walk and the Noon Walk, office collecting boxes, a book exchange scheme and L&G’s employee match funding - staff soon hit their second target of £26,783. “The partnership between the Hospice and L & G has been hugely successful” said Gary Moyle from the Martlets fundraising team “we can’t thank the staff enough for their dedication and hard work in raising such an incredible sum of money for the Hospice.” Someone who has supported the Martlets whilst working for L&G in Hove is Jo Barnard. Jo first heard about the charity in 2003 “ My Nan was diagnosed with cancer, and very sadly she died at the Hospice, this was not long after I’d started working at L&G. As a family we got so much support in the time she was there. I was able to spend almost every day sitting with her and it was so nice to be surrounded by people going through the same thing as we were. One of the really special things about the Hospice is that once Nan died the help and support didn’t stop.” It sounds as if Hospice staff will go that extra mile for their supporters as well. Jo explains “Last year we were all invited to visit the Hospice to see where our money had gone. It was a chance to see what a difference our work had made to people’s lives. When you raise money for a bigger charity

you never really know where the money’s gone – to be able to see the difference is very special. It’s that personal touch which is so important when you’re working hard to raise money” Frances Borrer the CSR Savings at Hove L&G explained why they chose the Hospice “Our partnership with the Martlets has been so successful because many of our employees have first hand experience of the great work that the Hospice does.
