It’s been a month of optimism here at Absolute Brighton. Just as it is being portrayed in the news (for a change) we too are feeling the ‘green shoots.’ Having experienced a couple of good months, we sat tight cautiously, and once again have just experienced another improving month, which includes the general feedback from our customers and business colleagues alike. Having said that, of course we are not naive enough to assume that we are home and dry from the recession quite yet. But it is a positive feeling to see the brighter light of the economy. And it’s amazing the lift in spirits it gives to people! I’ve attended a few events this month, and it is so refreshing to speak to business owners with a smile on their face, looking a tad more relaxed. If nothing else, it has certainly taught all of us a thing or two along the way from cutting our cloth accordingly to patience! There were more than a few smiling faces at the BAHBAs (Brighton and Hove Business Awards) this month too. The annual event, in its 6th year, seemed better and more popular than ever before; quite an achievement considering the past business year. The founders, Midnight Communications, put on a professional event at the Brighton Metropole Hotel full of fun and entertainment. Stand up comedian Stephen Grant amused the crowd of 400 business representatives from across the city with his slapstick wit (and risqué jokes) about life in our colourful city. The man of the night however, was Tony Bloom (the Albion saviour) to whom Absolute Brighton was proud to present the Outstanding Brightonian Award; probably the biggest accolade for a Brightonian to receive in their home town. After awarding Tony with his award, I was curious to know more about this successful businessman who clearly has a passion like no other for his local football team (he injected £80m into the Albion). Once the big news of his award had settled, I was fortunate to be given the opportunity to ask Tony how it feels to receive such an award in the city and about his love of the Albion (and found out whether the exciting new football stadium is still on target for the 2010/11 season). (Page 22) Another service doing good in our city, is the RNLI Shoreham Harbour (Shoreham Lifeboats). Being a coastal resort, this voluntary service is a necessity, but one so often overseen and not recognised for its hard work and lifesaving resources; one we take for granted. To give us an insight in to their work, John Periam spends an exercise day at work with the team and the new MCA coastguard helicopter from Lee On Solent. Everyone at Shoreham’s base is an unpaid volunteer (except for the full time mechanic). Each of them has everyday jobs in between carrying out these life saving skills. And they’re always looking for new recruits, so if any of you are keen to help, read John’s feature, which gives application information at the end. (Page 66) Have a lovely month! ABSOLUTE

November Absolute Celeb Unbelievably Cliff is approaching 70, but his famous youthful looks still remain. And you? My first fashion memory is looking at my two older sisters and loving how they dressed. One was quite Suzi Quatro and the other was more Souxsie and the Banshees, both individuals and very rockstar in their approach, to dressing, boys and the world. My greatest inspiration is being relaxed and seeing the beauty in nature, peoples’ individual style, art and music. My favourite place in the world is Ubud in Bali, and my home in Brunswick, Melbourne. I feel most creative when I’m travelling alone and writing in my notebooks.

ast month was a comedy drama in the city starring lusty lovers and fickle fighters! This month, in amongst a busy events calendar for Brighton and Hove’s bright things, there has been body heat building on chilly nights, brooding and emotional bruising in one of our ‘swanky Hove restaurants’ (wedding planners and divorce lawyers look set soon to reap their rewardsI’ll spill the beans in a minute.) But comedy has been most welcome in the shape of glamorous film and TV actress Carol Cleveland (Of Monty Python Fame.) Ms. C kept her audience wrapt at the Latest Music Bar with her Pom Poms Up one woman revue. She held our hands on a tour of her international life from tot to Monty Python TV totty to trans-global comedy ensemble icon ahead of her red carpet appearance in New York and scores of personal appearances as the world celebrates 40 years of the ‘funny flying circus.’ I also enjoyed a sunny afternoon at Brighton Racecourse this month with Carol as she and I, along with several other city sons and daughters, appeared as celebrity judges at TV Vet Marc Abraham’s first annual ‘Puppy Party;’ a canine competition designed to raise awareness to the ills of puppy farming. But it’s amazing what one can glean from one’s regular maintenance pit stop at The Usual Suspects Hair Salons on Church Road, Hove…. Victoria Allen and Maryam Salehi’s team of stylists cater to some of Brighton’s most coiffed court of movers and shakers; while magazine flicking, I overheard the tangled news of the married partners and owners of a Hove eatery, who have called it quits over a baby that he longs for and she ‘hasn’t the time’ to produce. Now these two much admired persons are finding substance from separate menus! By the time my roots were done at the salon, I’d also discovered that my clients Zoe Urben and Lloyd Power (owners of the swish bar INK) were expecting their first baby… Arr. So the news is not all dour, not by a long shot! November is my birthday month, and Ping Cheung of Pearl Chinese Bar is hosting a Winterpearl Party for me, with a soiree of suits, cocktail dresses and, yes, pearls. Also planned is the debut play of my pop single ft. Pasha De Lamare. The creation of Roberto Valentino, producer of Want Love by Hysteric Ego, it has a title perhaps too saucy to mention on these pages. Speaking of making music, I was nominee for Outstanding Brightonian at Midnight Communications Annual Brighton And Hove Business Awards (BAHBAs); a glittering black tie gala at the Hilton Metropole where my friend Diana Frangi and a ‘well liked millionaire’ and his party, toasted the completion of Diana’s own new album. Besides this album, Diana will soon have another explosive bombshell to rock the city! It seems that the multi-media minx, ‘La Frangi,’ looks set to take a new direction and frottage us further.

As Brighton and Hove Albion Chairman, local businessman Tony Bloom has a busy year ahead. And what better way to celebrate it, then as winning the Outstanding Brightonian Award at the Brighton and Hove Business Awards (BAHBAs) this month presented by Absolute Brighton. Our Editor Verity Craig asks Tony how it feels to be awarded with such an accolade, and finds out how that much anticipated stadium is coming along Congratulations, Tony, on winning what must be the City’s most prestigious award, for ‘the individual who has made an exceptional contribution to the city of Brighton & Hove.’ This must have come as a great surprise? I had no idea I had been nominated for this award. Martin Perry, our Chief Executive, told me that we should take a table because it was a very good event to network with other businesses and he invited all the other directors of the Club; he obviously knew, but he kept it a secret. I was delighted and very honoured to have been given this award. You’re man of the moment in the City having put £80m in to Brighton & Hove Albion. What encouraged you to give such a huge offer of support to your local football club? Brighton & Hove Albion is in my blood – it has been part of my family for years. My grandfather Harry was Vice Chairman in the 70’s, my Uncle is the longest serving director on the current board and I am really proud that I have found myself in a position where I can help the football club move forward and achieve the potential, that it undoubtedly has. For Brighton to have a sustainable future, the building of the new stadium was an absolute necessity. Now as chairman of the Albion, how are you preparing to move your team forward from league one division in to the premiership? Step by step. We have got a good manager in Russell Slade; he has been given a budget that has allowed him to re-build the team this season. He has introduced a number of new players and we are beginning to see some of the players who suffered long-term injuries last season recover to full fitness. But it will take time. A new team has to learn to work together, but I am very confident we are moving in the right direction. Stepping in to the shoes of former Albion chairman Dick Knight must be fulfilling, but also the pressure must be on to live up to such a well-respected name in the City? Dick saved the club at a time when there was no one else who was willing to step in and help, and everyone will always be hugely grateful for that. The club has dedicated and talented people

working in it and I am very much looking forward to working with them to take us forward into our new stadium. The club is now financially secure, thanks to your cash injection, and so the new £93m stadium is in the making, much to the joy of Albion fans. How is this project progressing and is it still set to be ready for the 2011/12 season? The project is on programme. We achieved another major milestone at the end of last September when the land owned by the University of Brighton was handed over to us on time. They did well, because they had to complete a large building on their own campus and move all the people in the old buildings into it. They achieved it on time which allowed the land to be handed over. We are very pleased with the progress being made by Buckingham (contractors) and the quality of their workmanship, but we are also lucky that we have got two very experienced construction men – Martin Perry and Derek Chapman, who are directors of the Club, overseeing the works. They will make sure we are ready for the start of the 2011/12 season. As a Brighton born and bred businessman, what do you love so much about your home town? I love the diversity of Brighton. My parents and close family still live here and I really enjoy coming back to see them and enjoying all the places that I loved as a kid.
Do you have plans to help other areas of the City as well as the local football club? Through the football club we do a great deal of work in the community, particularly amongst young people and those who are disadvantaged. I am very proud of the work that Albion in the Community undertakes, encouraging increased participation in sport, education, disability sport, social inclusion and health projects. I strongly believe that using the ‘power of football’ we can reach out to people to create opportunities for them and to help them realise their potential. Why do you think Brightonians are so passionate about where they live? It is the vibrancy of the place; it is unconventional, it is alive and you never know quite what is going to happen next. It is a bit like following the Albion – it’s never dull! And finally, what privileges are you now entitled to having given such a generous gift to the Albion? I think they have got a seat allocated for me already on the half-way line, but the biggest privilege for me will be seeing the looks on the faces of thousands of fans as they stare in awe at our wonderful new stadium, and then see the team walk out on to the pitch for the first time. At last we will be able to say after 14 years – we’ve done it, we’ve brought the Albion home!

There’s no ‘carrying on’ for former pin-up Liz Veteran British actress Liz Fraser is annoyed she can only attract older men - and wishes she had a younger fan following. The 75-yearold attracted a large following in the ‘60s when she starred in I’m All Right Jack, The Pure Hell of St. Trinians and a number of saucy CarryOn comedies, but she is annoyed that all her admirers have grown up. Behind the X Factor scenes Danni and Cheryl have both independently told aides that they have high hopes for Essex boy Olly Murs who in the words of Louis Walsh ‘made the song his own’ with an amazing rendition of Stevie Wonder’s ‘Superstition’. Rumour has it that the Welsh blonde teen heartthrob Lloyd Daniels, age 16, had started a romantic relationship with American born Ethan Boroian 19. Handsome Ethan has laughed off gossip admitting his X Factor dream did cause the split with his girlfriend Jane and rather than Lloyd being the reason for the breakdown, he’s more ‘into’ brunettes than blondes, and favoured Stacey McLean over Lloyd. Asked who’ll win, Ethan, who’s thought to have been approached by modeling agencies and international fashion labels such as Dockers, says Lloyd has a chance but says audiences will really like Northern lad Joe McElderry. Finally, Danyl Johnson has just announced that he’ll get a record deal whether he wins or not, “I’m really good”, he said, “I don’t have to be told I’m a great singer, I know I’m a great singer”. Cooking up a storm With so much to choose from for kitchens, the decision for choosing what is probably the most important room in your home, can be difficult. So where do you begin? Help is at hand...

one are the days when a kitchen was just a room to cook in. From televisions and sound systems in them to seated areas and bars used for socialising, the kitchen has become the hub of most homes. Therefore, it is the most important room to be designed in the home, and it doesn’t just stop with the cooker! From floor to ceiling, there are many options of textiles that are hardy enough to use in a kitchen, while also making a grand design statement. The Kitchen Floor Slate, wood and tiled floors are particularly good to use as they are easy to clean and have a long life, while also looking stylish. Wood comes in many different types and grains. However, if you can’t afford the real thing, there are also many good imitation types, also available in colours and paint effects to match your style of kitchen. Slate and stone is the current favourite trend for the look it gives, matching any style kitchen, and again for its hardiness. Slate is good for keeping in the warmth, and is also cool during the summer months.

Work Surfaces Granite work surfaces were the original material to be used for kitchen work tops for their coolness and hygiene hundreds of years ago, and have made a comeback in recent years for their trend and look. And with literally hundreds of granite to choose from (crystal encrusted, blue, black etc) it is easy to see why. However, don’t purchase a low grade granite as part of a low budget you might be on- it is worth spending when it comes to this rich natural material. The best quality granite is from Asia. It’s also good to mix and match when it comes to your work surfaces- too much granite may make your kitchen a very noisy room that echoes a lot! The odd wooden work surface, or butchers block incorporated, will soften the acoustics while also making it bespoke.

I don’t think you can under-estimate the importance to prospective clients that all of our furniture is 100%-British designed and manufactured, made to exacting standards and reflecting traditional British craftsmanship. A well designed fitted kitchen can add substantially to the value of a home and a Clive Christian one even more so! It helps that we are famous for the original ‘Clive Christian Chandelier’ look. However, the fact that we offer a full range of styles, from our traditional ‘Regency’, through to contemporary ‘Alpha’, to our stunning new Architectural ranges ‘Cool Luxury and Warm Luxury’, ensures we are able to suit almost any taste. Each design is heavily-bespoked to the client’s exact requirements and is complemented with the latest in cutting

edge appliances giving a finished product that is truly unique. In today’s turbulent times, it is significant that Clive Christian has proven to be the only bespoke furniture company that has survived unscathed - many of our competitors have unfortunately had very big problems. We are in excellent financial shape, and to know that we will still be around in ten or twenty years’ time, say, is vital to our clients. Experience has shown me that having visited a client’s home to discuss a new kitchen design, for example, I will often be asked to recommend a building company. In my experience, a project that requires building works in addition to our services, often has a grey area between where the building company’s remit stops and ours starts. This is a source of potential conflict and clients don’t like conflict – they just want the project completed on-time, in budget and to their complete satisfaction. In order to provide a complete solution for our clients, I founded Handcross Developments Ltd, an engineering-led construction company, which can undertake everything from full project management to the simple repositioning of an interior wall.
Managing Director and Senior Designer at Clive Christian Handcross, Andrew Mitchell, has over 20 years experience in designing and creating luxury interiors. Andrew designs with the aid of hand drawings and drafting board, creating a bespoke concept for each client. He uses a team of design assistants, architects, builders, lighting and sound engineers, and soft furnishing and upholstery experts, enabling him to draw upon a wealth of experience to put shape to each client’s vision and to make concept reality. Each project is unique and specifically attuned to the client’s taste and personality. Handcross Developments Ltd works handin-glove with Clive Christian Handcross, so that we can truly offer a stress-free onestop solution for our clients’ every need. At Clive Christian Handcross do you just design kitchens? No, not at all. In fact we have just completed a project in Sussex where we designed the kitchen, library, music room, gymnasium, dining room, media room, five bedrooms and four bathrooms. It is a stunning property and the client is completely delighted with his new home. Once a kitchen project gets underway, more often than not, a client will say to me “could you do the hall too?”, and “do you do bedrooms?” Clive Christian furniture is available for every room in the house, and no room is too small or too large. Luckily for those at home this is a simple look to achieve, by firstly investing in a gloss serum to smooth the front section of the hair. Then using fingertips, section the back of the hair into a twist, pull back and pin at the top of the crown after gently teasing upwards with a wide toothed brush to give volume. For a more mussed up style, use a tailcomb to separate a few strands around the hair and curl using a thin barreled curling iron to frame the face. Set the style with a generous amount of hairspray to ensure your look stays in place and doesn’t require too much upkeep throughout the evening!

At meal times, the way you chew food is affected, causing you to avoid particular foods you used to enjoy. In some cases missing teeth can be replaced with one or more bridges or implants, but there are circumstances where the only solution is a denture. What is a denture? A denture is a removable artificial tooth or set of teeth that replaces missing teeth in either the upper or lower jaw, or both in the most severe cases of tooth loss. teeth for many years. With advances in dental technology, and the use of the latest dental materials, dentures can be made to look and feel like your own natural teeth. Unlike dental implants and dental bridges, which are more or less permanently affixed to the bone, dentures are prosthetic teeth attached to a supporting structure, usually made of metal or plastic. aving only had a facial many years ago, I was looking forward to my visit to Rosalins Hair and Beauty Salon in Trafalgar Street, Brighton, for a welldeserved pampering! I am glad to report I wasn’t disappointed, and found the whole experience, reviving, refreshing, and emerged with a feeling of wellbeing. Rosalins is a bright establishment, with a warm welcome as you enter. Sam, my therapist showed me to a quiet comfortable room to prepare myself by removing clothing and jewellery to clear the face and neck area. It occurred to me that like me, many of you reading this may not have had a facial for a long while, so I will take you through the stages of the procedure that I enjoyed. First step, when I was laying comfortably on the bed, Sam removed all the make-up from my face. It was then possible for her to analyse my skin, to determine which products would be most beneficial. She noticed sensitivity, and as I also have mature skin, but with a shiny T Zone, we decided to use some special Italian products from a new facial range by Dibi. The particular facial we decided on is called Nettare di Zucca, and is moisturising but mattifying. It contains a natural complex with pumpkin, to selectively soothe, moisturise, and reduce shine. Sam went on to deep cleanse my skin in readiness for exfoliation. After this stage, she once more took a look at my skin, and offered to remove some of the blackheads around my nose. She explained that this
was the best time to extract them, as they are close to the surface, and it would be an easy task, which it proved to be! She said that not everyone wants this service, which I suppose I can understand, so she will offer if appropriate, but of course you do not have to have this done. The next stage is the real beginning of a relaxation process. A lovely facial massage, which was slowly administered over about 15 minutes or so. This is followed by a soothing and cool quick-drying mask, and while this was doing its work, Sam left me for a few minutes to relax with gentle music playing. When she returned, I asked if clients sometimes fall asleep at this point, as I could easily have gone off! She said it happens quite often, and proves what a relaxing and soothing procedure a facial can be. After gently removing the mask, Sam toned and moisturised my skin. It is at this stage that other products and procedures can be applied if required, such as special eye treatments, or anything else the therapist thinks might be helpful, and the client particularly requests. Emerging without make-up from the therapy room is a bit daunting, as like many, I don’t like to be seen in the raw! But, I couldn’t help noticing my skin felt glowing, and was softer than I had known for a long time. It is good to let the skin breathe occasionally, anyway, especially when it feels this good. Our health expert Sheryl Waters discusses the benefits of infant massage for both parent and baby
I
nfant massage creates a bond between parent and baby, while boosting the newborn’s overall wellbeing. Massage calms baby, reducing fussiness when done regularly. Sleep is improved for everyone, colic is eased, and a more relaxed, positive atmosphere can be created instantly. Infant massage has been practiced for centuries, but its popularity has only really increased dramatically over the last fifteen years. Now it is used daily by parents, and is even practiced in hospitals. While we may believe that a baby’s life is very simple, the truth is that there are many reasons why babies can be stressed. They arrive in an open new world, constantly learning new things, which even if enjoyable causes a certain amount of anxiety. The body’s natural reaction when stress occurs is to release a hormone called cortisol. Regular massage can reduce the amount of cortisol in a baby’s blood, relaxing and calming their body. Think about how you feel after a good massage. It’s the same. Endorphins, which are considered our ‘happy hormone,’ are also released during a massage. The high levels of endorphins and low levels of cortisol that your baby will feel during a massage will contribute to overall feelings of wellbeing. Regular baby massage relaxes infants little muscles that are learning to work, which creates tension.

Touch Touch is the most attuned sense in a newborn baby, which is why it so vital for them to be constantly touched. In fact, babies who are not touched don’t grow properly. Touching your baby actually increases the release of growth hormone. Massaging a newborn baby also strengthens their circulatory system, which needs boosting after birth. After being in the womb, the blood does not always pump effectively to the whole body, so massage has a positive effect. Baby massage is actually very simple and anyone can do it. It is just about taking time to consciously touch and stroke your baby with sensitivity and care. Here are some helpful tips for improving this wonderful way of loving: Focus Attachment between infants and their caretakers is vital for physical and emotional health. Massage should be treated as a time to really increase this bond. It should be done with attention and joy, rather than as a chore. Remember, only a few minutes to thirty minutes can make a difference for baby and you. Try to make a commitment to do it every day and be emotionally present during that time. Smile and communicate with your baby, this is your special time, and as ever, they will feel what you are feeling. Timing Choose a time when you can be as unhurried as possible and when there will be few interruptions. Making it a routine is a good idea since then baby knows when they will enjoy their next massage. This could be after bath time, in the morning or just before bed time. Avoid doing it when the baby is hungry though, as this will interrupt this precious time. Atmosphere Make sure the room is warm so your baby does not feel cold during the massage. Around 75 degrees is good. It is also very important to make sure that you are comfortable. Sit on the floor or on a bed, and place baby on your lap on top of a soft towel. It is best to not have a nappy on the baby while doing this, so that they feel free and comfortable. However, you will have to have some extra towels around in case of
messes. Don’t have the room too bright or any sunlight shining in their face. Oils Use natural oils and chemical free oils for babies. Almond oil or grape seed oil is good. If you want to use essential oils, a drop of lemon, vanilla and lavender is safe for newborns and infants. Fist, warm the oil in your hands so that it doesn’t shock the baby. Don’t use oil on their head or face, as this may be too strong for their sensitive skin. Then start the gentle strokes.
“Attachment between infants and their caretakers is vital for physical and emotional health” Listen to Your Baby If your baby is not enjoying the massage, go to a different body part, or stop and try later. Massage must be a pleasurable experience. Beginning the Massage Start by massaging their head and face with tiny circles. Rub the forehead and face with very gentle outward strokes like a book. Then start with the oil on the chest. Gentle circles and outward strokes are once again best. Rub down the arms and massage each finger gently and individually. Then, massage the tummy, starting on the right and working towards the left. One hand follows the other in a clockwise direction. Massage down the legs, and end with a nice foot massage that also focuses on each toe. Further Study If you don’t feel confident massaging your baby, there are plenty of books and classes that you can attend. If this is something you think you could enjoy, don’t hesitate to learn. How to draw the line
An Insiders’ guide on how to recreate the alluring guise of the iconic feline-eye ... The feline eye look has been a make-up must-have since Sophia Loren first hit the silver screen; a look that undoubtedly oozes simplicity, style and sex appeal, and a popular choice for red carpet celebrities including Angelina Jollie, Nicole Ritchie, Lilly Allen and just recently by Anna Friel.
Follow these helpful hints: Base: Eyelids have a natural tendency to be slightly oily which is the main cause for eye make-up to shift or smudge. The key trick here is to use a primer, this will not only brighten the overall skin tone, but also help to even out the complexion, whilst assisting your make-up to stay true. Concealer: Apply this lightly around the eyelid and surrounding area, use sparingly and only where needed. This will help to eliminate dark grey, blue or pink discolorations. Imperfections will become invisible leaving you with an even canvas to work with. Follow with a light dusting of translucent powder.

Shadow: Apply to the upper lid only. Choose a natural shade in beige or champagne; matte or pearlescent for day, and iridescent for evening. For subtle definition, blend a warm taupe or bronzer into the crease area of the eye socket. Liner: For most people liquid liner is difficult to apply as it dries so quickly. Try a more forgiving formula such as pencil or wet powder. For a dramatic eye, opt for a gel. The biggest mistake women make when putting on liner is to rim their eyes with it completely. Eyeliner is meant to add definition and make your eyes look larger. By circling them completely it will make them look smaller.

Try this!
1. With your finger, trace the bottom eyelid up to the outer edge to where it joins the upper lid. 2. At this point, take your chosen eyeliner and continue the natural line by drawing upwards from the bottom corner of your upper eyelid and stopping just before the crease, creating a flick. 3. By starting as close to your lashes as possible, draw another line and glide out from the centre of the upper lid to join up with the flick. You should have created a wing shape. Fill this in whilst working the colour into the lash line. You don’t want to have any skin showing between the liner
and your eyelashes. For more impact you can add a very thin line from the inner tear duct running on the lash line and graduating up to the centre. Don’t over do it though!
Lashes
Emphasize your lashes by curling- once at the root and then again at the ends. Add two coats of black mascara. Apply in a zig - zag motion. Starting close to the root, concentrating on the middle and outer corners, pull through the lashes using upward strokes. Ingredients: 430g currents 430g sultanas 100g mixed peel 150ml brandy 300g unsalted butter 300g soft light sugar 6 eggs
It is a well-known bakers fact that Christmas cake should be made as far in advance as possible for the most ďŹ&#x201A;avorsome outcome. Head Chef Lewis Evans from Artisan restaurant in Lewes lets us into his secret Christmas cake recipe that is easy to follow. Even grandma will be impressed!

Easy steps to the perfect Christmas cake: 2 weeks fruit preparation: Soak the fruit in the brandy for two weeks prior to making the cake.

Making the cake: Beat the butter ( at room temperature ) until it becomes light in colour. Beat in the sugar until it is thoroughly mixed. In a separate bowel whisk the eggs until the yolks and whites are thoroughly combined. Slowly add the egg mixture to the butter and sugar mixing all the time.
350g plain flour 4 tsp mixed spice 2 tsp grd cinnamon
Sieve the flour, mixed spice and cinnamon into the butter sugar and egg mix.
1 lemon zest 1 orange zest 50g grd almonds 30g poppy seeds
Then add the zest of one whole orange and lemon followed by the almonds and poppy seeds. Beat until thoroughly combined. Line a 10-inch round cake tin with bakers parchment paper. Pour the cake mixture Into the tin and bake in a pre heated oven. At 150 c for one and a half hours.

And to finish: 450g castor sugar 450g water 1 vanilla pod (split)

The finished cake will be delicious in its basic form. More adventurous cooks may wish to ice the cake. Simple methods for both marzipan and icing can be found online. And remember, the sooner you make it the better it will taste by Christmas time!
To check that the cake is properly cooked, push a metal skewer into the centre. There should not be any signs of the wet mixture. To make the moistening syrup, place the castor sugar, water and vanilla pod into a saucepan and bring to the boil. Turn down the heat and simmer for one minute. Take off heat and leave to cool. Take a cocktail stick and prick the cake all over. Then using a pastry brush, brush the syrup into the cake. Repeat every 15minutes until all the syrup iused. The cake should be stored in a cool room in an airtight container - not in the fridge though! It will keep for up to 6-months because of the alcohol content - same as wedding cake!

A SURE BET! You don’t have to be a card sharp to enjoy a poker evening, says Adam Style
N
ot so long ago, the only poker you saw on TV was in the old Westerns - gunslingers and outlaws sitting around a rickety table in a smoky old saloon. Now of course, live poker has become a regular on SkySports and Channel Five, whist online poker has become a bit of a worldwide phenomenon. However, until you have actually sat around a table and played live poker you haven’t experienced the real thing… or, at least, those were the words running through my mind as I walked into The Crown & Anchor on Shoreham’s High Street on a Monday evening to find out what their ‘poker night’ was all about… and I’d never played poker before in my life! I wasn’t exactly expecting the wild-west saloon but I was expecting to feel a bit intimidated as a complete novice. However, very soon all the preconceived misconceptions were blown away. The room was set up very professionally with great looking tables, chips and cards but as soon as I started talking to some of the organisers and fellow players it was clear that this wasn’t going to be a steely, over-serious, poker-faced game where I’d feel alone against the rest of the world. This was an environment carefully geared towards encouraging complete novices like me to come and sit alongside experienced poker players, whilst at the same time providing the competitive edge that the experienced player obviously seeks. I could sense that the night was going to be a very sociable and fun few hours of entertainment… and I was right.

As a complete novice (and I wasn’t the only one) Paul Stanford, co-owner of Gunpowder Poker (gunpowderpoker.com), was delighted to run through the basics before play started. However, I found the best place to learn was at the table; picking up tips and guidance from everyone around me, sharing jokes, a few drinks and the odd piece of excellent advice. At a time when everyone is feeling the pinch, the pub poker night seems to be a real win-win situation. The local publican gets to host some first-rate entertainment, managed very professionally by the Gunpowder team on their behalf, attracting a wide range of clientele through the door with virtually no effort. At the same time, the public get local access to the thrill of playing serious poker in an atmosphere that’s safe, friendly and above all fun. Even as I lost my last stack of £1,000 chips to a pair of nines, I knew that I was still a winner because I’d had a wonderful time, ate well, met some really interesting people and made some new friends. Lunch in the country Rishma Patel finds peace, tranquility, and a wonderful meal at Newick Park
O
n a glorious sunny October Thursday, my sister Dipti and I decided to head out to the country for lunch and where nicer in Sussex to go than Newick Park, somewhere we have always wanted to visit. Newick is a picturesque village, and driving through the country roads the trees were saturated with autumnal coloured leaves. We arrived at the Grade II listed Georgian hotel and were greeted by cast iron gates and a long driveway leading to the house. It felt almost magical, set in 250 acres of cascading perfectly-tended private land. Getting out of the car, we were greeted with breathtaking views across the South Downs, and a picturesque lake situated at the bottom of perfectly mown lawns. We fell in love with Newick Park instantly!
“It is no wonder that Newick Park is the only restaurant in East Sussex with this accolade (3AA Rosette)...” I noticed how well maintained the country hotel is, with a beautiful cream exterior and green foliage climbing up the walls. The big wooden doors opened and we were warmly greeted by Angela the manager at Newick Park, who made us feel at home with her personal, yet professional approach. We took a sneak peak at the 16 lovely hotel rooms before settling down to lunch, and found that each room is individually decorated. Molton Brown toiletries, slippers and bathrobes are placed in every bathroom for guests. We had certainly worked up an appetite by now and Angela showed us into the dining room which was busy with friends, families and couples enjoying the sumptuous lunches on offer. I like a restaurant to be light and airy, and this dining room certainly is; with floor to ceiling windows, guests can overlook the tranquil setting. We perused the menu and noticed on the extensive wine list that they had a bottle of my favourite, Cloudy Bay, but unfortunately we couldn’t sample any as I had to return to work and my sister was the designated driver. So we opted for two soft drinks. It was difficult to decide what to choose as I would have happily tried everything on the menu; however,

intrigued by the Grilled Crotin Chavignol with Cobb Nut, Plum and Landcress Salad, Josh the assistant manager, knew what I was going to ask before I spoke. He explained that the Crotin of Chavignol is a famous Goats cheese produced in the Loire Valley, only produced in the Chavignol region of France. Our waitress Ofelia was very attentive and friendly, and offered us some homemade bread. I chose Walnut and Date and Dipti chose Honey and Spelt. Within no time, our starter arrived. On a mound of sweet crunchy landcress sat the most perfectly formed round of Crotin de Chavignol, with plum slices neatly scattered and a balsamic reduction, that added a certain sweet and sour tang to the dish. The Goats cheese was warm with a smooth and creamy texture, yet still held a mild taste, the sweetness of the plums and balsamic dressing tingled our taste buds and bought out the flavours of this dish well. I polished mine off within a matter of minutes, and from the silence coming from my sister I could tell she was enjoying hers too. For my main I was torn between the free range Chicken and the Lamb, but Josh was on hand to offer me some advice and I decided to have the Braised Neck of Marsh Lamb with Dauphinoise potato, Ratatouille, Haricot Verts and Rosemary Jus. Depti, being a vegetarian, chose the Pan Fried Gnocchi with Wild mushrooms. The lamb from Romney was so tender it literally fell apart. It was cooked to perfection, and melted in my mouth. Underneath was a sweet tomatoey ratatouille with chunky peppers and courgettes; a great French accompaniment to this dish. The Dauphinoise potato was lovely; it was more like a potato cake, comprised of thinly sliced buttery potato compacted into a square. This was absolutely divine. The fine green beans were fresh, they had just been picked from the walled garden on site. Packed with flavour, they were cooked al dente, and retained their vibrant green colour. Dipti thoroughly enjoyed her dish too, adding that it was the best Gnocchi she had ever sampled. It was homemade and formed into small morsels, well cooked whilst still retaining a bite. The rich creamy mushroom sauce had sweet baby onions, crunchy green beans, and a selection of wild mushrooms. To top it all off it had a generous serving of parmesan shavings neatly placed on top. After enjoying the first two courses we were completely full. However, no one in their right
mind would miss the chance to sample such a high standard of cuisine, so we couldn’t miss the opportunity to try a dessert. Like the rest of the menu, it all looked scrumptious, but after much deliberation I opted for the Crème Brulee and Dipti chose the Blackberry parfait with poached blackberries. Our puddings arrived, and my crème brulee was huge, with a lovely golden crust of sugar. I broke into the caramel; it was like a shard of glass, oh and it was divine. The vanilla flavoured custard was so indulgent. With a silky smooth texture, it was flavoured so well and not too sweet, I couldn’t put my spoon down, nor could I have asked for a better end to a meal even if I tried! The Blackberry Parfait was excellent too, a neatly cut rectangle with softly poached blackberries in coulis encasing it. The consistency was thick, creamy and deliciously sweet yet still light. The taste of the poached blackberries created an excellent texture and took away the usual sharpness they often have. The service throughout the whole of our lunch was impeccable, with such friendly and accommodating waiting staff. After lunch we thought we would retire on the terrace for coffee. The sun was beaming its warm rays over the rolling hills, it was the perfect ending to one of the best lunches I have had. I insist that you sample 3AA rosette Head chef Chris Moore’s wonderful masterpieces! It is no wonder that Newick Park is the only restaurant in East Sussex with this accolade. The menu changes daily and is created around produce available from local businesses and ingredients from the walled garden on the Estate. Sad to leave this lovely retreat, we began our short journey home through the winding country lanes, planning our next visit to Newick Park. Newick Park is holding many events through the rest of 2009. One in particular caught my eye; the Game Dinner, on Sunday 15th November, a rich and robust autumn dinner with game from their own land and vegetables from the organically-run walled garden, at £48.50 per person, including a drink on arrival.

The charity that saves lives at sea, Shoreham Lifeboats, takes a practice session with the new MCA coastguard helicopter from Lee-on-Solent. Words and pictures John Periam
T
he new Augusta Bell AB139 helicopter, now based at Lee-on-Solent, recently took the opportunity to exercise with the two Shoreham Lifeboats. A replacement for the ageing S61N, the helicopter is a lot faster. Although it will not be able to take as many surviors as it predecessor, its agility will give it greater endurance, allowing it to return to base quicker to drop off casualties before returning to the incident. Peter Huxtable MBE, Coxswain of the Shoreham Lifeboat, said “I am delighted to be able to work with the Maritime and Coastguard Agency (MCA) in ongoing exercises with their helicopters. It is ideal training for current and new crew members, giving them an opportunity to come to terms with the latest technical input that both the RNLI and MCA share when working together.” Currently Shoreham Lifeboat Station is going through a complete rebuild, so when completed in July 2010, the boathouse will be able to house the new Tamar lifeboat, the latest addition to the RNLI fleet at a cost of £2.7m.

Like most stations, all crew members are volunteers, giving their time up 24 hours a day to be on call to save lives at sea. “The one major problem we have is trying to get new crew members on board,” said Peter. “It would be nice if it was a perfect world but we all have to work in normal jobs so sometimes we are very limited crew wise,” he added. The images taken on this exercise involved crew members being winched up onto the Augusta Bell from both boats, several miles out to sea off Shoreham Harbour. Once completed, the crew then carried on with other exercises related to the type of situation that may arise at sea including ‘Man Overboard’ and changing crews from the inshore lifeboat to the All Weather Tyne Class lifeboat at speed. It is important to remember also, that the RNLI relies on donations to keep its stations going - fundraising is still going on for the building of the new station at Shoreham. More than just a railway town
The Bluebell Railway
Surrounded by beautiful countryside and quaint villages, Haywards Heath is a town with character and charm. Tim Parker pays a visit
T
he first time I saw Haywards Heath was from the window of the non-stop Brighton Belle service from Victoria to Brighton in 1958. Haywards Heath still had a cattle market in those days which could be seen from the train. But there was a problem - it was extraordinarily difficult to admire the countryside and the town while at the same time finishing breakfast. The Brighton Belle was approaching a certain age, the time when it would have to be retired; it appeared to have square wheels. Crossing a set of points at speed the Belle would lurch from side to side in the most alarming manner; it required determination and skill to keep hold of a breakfast plate. Coffee was particularly troublesome, sometimes it would jump out of its cup. There was a remedy however, a kindly waiter advised me of that. “Sir, always put a spoon in your cup and leave it there. If you do that you will reduce the spillage by half.” The waiters were smart, polite and efficient. They had to be, within the space of an hour they would serve a crowded coach a full breakfast - cereals, porridge ,grapefruit, kippers, bacon, eggs (whichever way you liked them) toast, marmalade, coffee or tea; quite a feat. Unlike most Sussex towns and villages, Haywards Heath was created by the Railway. The London to Brighton Line was opened in 1841 at a cost of around two million pounds. It was constructed within two

years from start to finish, a fantastic achievement especially as the line required the building of the Clayton and Balcombe tunnels as well as Macotta’s beautiful railway viaduct, just North of the town. Macotta, a talented Italian Architect, by the way also designed Brighton’s wonderful Station. Haywards Heath sits on the edge of the Sussex High Weald. To the south lie the sweeping hills of the Sussex Downs and to the east, Ashdown Forest. A five minute drive in any direction from the town centre finds you in the lovely Sussex countryside. How will you know when you get to the Weald? That’s easy, the hills in the Weald are uneven, it is very wooded, the soil changes its nature, and in the spring you cannot fail to notice the riot of rhododendrons with their trumpet-shaped flowers. In Henry VIII’s time the Weald was a hive of industry producing iron and glass. Such was the competition between these two industries that the King was asked to name his priority; he chose Iron. Many of the beautiful ponds and lakes in central Sussex are the remains of those industries, man-made ‘hammer ponds.’ The first hospital in the area opened in 1859. It was called the Sussex County Lunatic Asylum and later changed its name to St Francis. It was a remarkable building designed by Henry Kendall, a magnificent yellow brick structure with polychrome decorations. A grim old place

inside, you might think, but it wasn’t. I had a dear friend, Mary, who developed Alzheimer’s. She was treated with great love and care there. The old hospital was in fact ahead of its time. Unlike many similar institutions built in the 19th century, it made a serious effort to help people get better; it was not a dumping ground for hopeless cases. The old hospital was remarkably self-contained too. It had its own farm, pumping station, brewery, laundry, bakery and an army of tradesmen to keep the great building in order. Oh yes, and there were musicians; music was held to aid recovery. That’s more than enough about the past. Today Haywards Heath is a pleasant, leafy town of some twenty three thousand inhabitants and more goes on than you might suppose. As Haywards Heath has grown there has been an increase in local jobs, particularly in finance and local government. And then there is the New Princess Royal Hospital. This too is a remarkable building and its staff are doing great work for their patients and I can testify to that. I had an operation on my knee last year which has been a great success. My surgeon was a large and jolly man who comes from Turkey. “He is a big chap,” I said to a nurse. “Ah,” she replied, “surgeons have to be strong!” Not quite the answer

Three weeks after the operation I called to see him. “Mr Parker” he said, “I am pleased to tell you that I have done a very good job.” There was nothing for me to do but thank him and I do so from the bottom of my heart. Haywards Heath has plenty of good shops and restaurants but the pace of life is gentler than in the large towns and cities, which is just how it should be. There is time to sit and talk and have a smoke if you must. The Broadway in the centre of the town has a special ambience with its tree-lined pavements, hanging baskets and flower filled tubs. Stop there for a coffee and watch the world go by. There are several lovely Sussex villages in the immediate vicinity of the town - Balcombe, Lindfield, Slaugham and Cuckfield, each with
their own pubs and unique charm. And then there are numerous places of interest, not least the famous Bluebell Railway where more than once I have taken a ride to remember the marvellous sounds of a steam engine and the ribbon of white smoke it leaves behind. There’s also Wakehurst Place (Kew in the country), Ardingly Reservoir, High Beeches and then, best of all as far as I am concerned, Borde Hill Gardens. Borde Hill has been described as one of the country’s truly great gardens. It has outstanding views across its Parkland including Macotta’s famous viaduct, and boasts a remarkably good restaurant, Jeremy’s. Jeremy’s is a really special place and I shall certainly pay it another visit. After all this scribbling I reckon I deserve a good dinner and I know Jeremy’s will not let me down. Thinking about it I should have stopped at Jeremy’s Café Elvira for breakfast – it would have been a good place to start my day in Haywards Heath, a railway town with character.

Victorian festival of Christmas with a twist Celebrating 10 Merry Years at Portsmouth Historic Dockyard

elightful dreams of Christmases past become a reality at Portsmouth Historic Dockyard as the Victorian Festival of Christmas celebrates a 10th successful year and, unlike the story of Scrooge, this one leaves everyone with an enchanting experience and makes the past become an extra special Christmas present. Portsmouth Historic Dockyard’s Victorian Festival of Christmas is a three day event, taking place on Friday 27th to Sunday 29th November. Visitors will be magically transported into a Dickensian-style bygone era of snowy white streets with a festive fairground and seasonal carols. Hearty food is on the menu including the much-loved roasted chestnuts and mulled wine; and pleasure can be found throughout the dockyard with parlour games, bawdy Music Hall, a nativity farm and a traditional ‘green’ Santa, who ensures this hugely popular event is fun for all the family. Children can enjoy Victorian treats from Father Christmas in his grotto onboard HMS Warrior 1860, before taking their place in the school room in the Royal Naval Museum, to ensure they are on best behaviour before Queen Victoria herself arrives to oversee the merriment.

here is something fundamentally different about Brighton College this term. It’s not just the new 6th form girls’ boarding house or the two new day girls’ houses; nor is it the progress of the new Skidelsky Building which will provide a new English department and workshops for Design Technology. What’s really different is that for the first time, children join the senior school in Year 7 – and the 40 boys and girls are already making their mark throughout the school! he UK Government is actively encouraging and targeting British banks to start lending more to consumers and companies to revive the falling housing market and improve confidence. With interest rates at historic lows this is great news for homeowners and buyers who have found themselves struggling to gain mortgage approval and support. The Council of Mortgage Lenders said that gross mortgage lending in August was down by 13% from July’s figures, but that this “seasonal fall is to be expected and underlying lending seems to have stabilised during the summer” and the National Association of Estate Agents (NAEA) said that “first time buyers had now returned to the market. Mortgage approvals also increased sharply in June, up to 51,100, from 41,000 in May, this is up from just 23,000 in January. However difficulties in valuing properties is leading to some delays in mortgage approvals, and there are reports that this is contributing to the collapse of some housing chains. Although lenders have been reporting a rise in demand for mortgages and have seen application levels increasing, actual lending is lagging.”0 At the prime residential property end of the market, Savills say that average values rose by 4.3% in the second quarter of 2009, effectively wiping out the falls seen in the first quarter. However, this still leaves values 20% below their 2007 peak. However, the outlook says that we have entered the first stages of a ‘bumpy recovery’, and that while the market is showing signs of seasonal improvement, we are by no means out of the woods and a worsening economic outlook, could erode the spring growth by the end of the year, particularly if bonus money remains thin on the ground. What is also apparent is how homeowners are
responding to major changes in the property market. Coutts for example is beginning to notice customers changing their borrowing behaviours by severing current agreements, even breaking fixtures and incurring penalties in order to borrow at more competitive rates. Preparation Is Key
T
his is the third part of a series of articles looking at risk management issues for SMEs. The first two articles looked at Risk Assessment and the development of a recovery strategy for your business. This month we are addressing the development of the recovery team structures and the associated recovery plans. Having developed a recovery strategy for your business functions, it is vital that you can effectively manage any incident that occurs and can recover in an acceptable timeframe. To do this you need a clearly defined recovery team structure and a concise set of instructions and associated contact information. A common mistake is to create a plan containing too much information as this is unlikely to be actually read in an emergency. My key message is keep it simple and prepare separate high level plans / call lists for each business function and do not mix detailed recovery procedures with the initial ‘first steps’ plan. BCM Recovery Team Structure Your recovery team structure should be closely aligned to your normal organisation structure and should contain the following: 1. Incident Management Team (IMT) – responsible for conducting the initial incident assessment and directly managing each stage of the recovery process 2. Information Technology Team – responsible for the recovery of the IT infrastructure, systems and voice / data networks

Facilities Team – responsible for the recovery of the office infrastructure and associated office supplies and support services 4. Business Teams – a separate team for each business function, responsible for implementing the recovery plan for their specific function It is very important to assign ‘ownership’ of each team and the associated recovery plan to an individual, usually the functional head. The ‘plan owner’ is responsible for ensuring that their recovery plan is viable and that their recovery team is trained. BCM Plan Structure Each of the above teams should have a separate ‘high level’ recovery plan containing team specific recovery checklists, internal and external contact information and the team recovery strategy. Each plan should be kept as concise as possible and should, where applicable, refer to separately documented recovery procedures. All plans, associated call lists and procedures must be held ‘off-site’ in both hardcopy and electronic forms and must be easily accessible 24/7. It is recommended that you create a ‘Battlebox’ for each team and store it away from the primary site. Note, whilst it is sensible for each team member to keep a copy of the high level plan at home, you should avoid keeping the ‘Battlebox’ (or indeed your IT backup data) at a ‘home’ as it may not be readily accessible to other team members if that person is not contactable or away at the time of the incident!
BCM Emergency Call List (ECL) The most immediate requirement following a major incident is the ability to contact key internal staff and external agencies / service suppliers. In addition to the team recovery plans it is strongly recommended that you create a separate ‘Emergency Call List’ containing the priority internal and external contact details. This can easily be created in a form which each person can keep on them (i.e. in their wallet / purse) and therefore will be immediately accessible off-site at all times. I have given you an overview of what is required when developing your recovery plans and call lists. However, there are many associated issues to be considered. Making use of an experienced third party can make a cost effective contribution to the development of a workable recovery plan for your business. The next article will look at a very important aspect of BCM which is the regular review, maintenance and testing of your recovery plans. Highly Deco-rated - which is the nation’s favourite architectural style, asks Liam Russell

rutalism, Romanesque, Gothic – the list of styles is extensive. In the wake of Lord Roger’s failed proposals for Chelsea Barracks there has been a lot of discussion over ‘what the public really wants’ and ‘whether architects ever understand the public’s taste’. As an example of what constitutes ‘taste’, which is so difficult to predict, it was not so long ago that some of our beloved buildings were thought hideous – the Royal Pavilion, a local landmark, was earmarked for demolition many times throughout its history. It is rumoured to have been saved by one demolition averse councillor’s vote after the Second World War. With over 100 Billion nerve endings in our brains it is no surprise that we each have different tastes although our choice of favourite style and building is not simply derived from within but also very powerful social influences. Some of our favourite buildings here in East Sussex are of the Art Deco style and most agree that they represent a lot that is good with great buildings. The Art Deco movement, hugely popular in the 1920’s, 30’s and 40’s was a style based on decoration and informs some of the most popular buildings in the UK and overseas. The popularity of Art Deco

(as with all styles) was not guaranteed as the style fell out of favour many times over the years – in particular during the 1970’s. In Britain most of our Art Deco buildings have clean lines, large expanses of glazing, and are painted white or have light colours. They are mostly devoid of the more ornamental decoration of the Miami style Art Deco in contrast. Of interest, in the discussion about taste is that the modernistic buildings (and I include British Art Deco here) often lack a human scale or craft. This is one of the principal laments of critics and the public regarding new buildings – ergo pastiche and traditional styles are the answer. However, British Art Deco buildings have a human quality without compromising their lightness and integrity. An example of the human quality in Art Deco, and therefore our love affair with animals, is Berthold Lubetkin’s Penguin Pool in London Zoo. Two local sites of note are Saltdean’s Lido and Bexhill’s De La Warr Pavilion. Taking Bexhills De La Warr Pavilion, a triumph of 1930’s modernistic Art Deco design, it is clear to see that its inherent qualities combined with a proper programme of events and a good café, bar and restaurant make it one of the best buildings and
venues to visit all year round. It embraces all of the most valuable characteristics of proper public space; you can visit it free of charge, often this includes the exhibitions and events too, enjoy its grounds and setting on the seafront and soak up the feeling that life is good. The De La Warr’s design is all ‘clean lines’ and large glazed areas with possibly one of the most beautiful staircases ever constructed. It has curves too which give the building a charm and imbue with a sense of the organic. Perhaps this is one of the reasons it is so successful – because it has a true sense of generosity as it ticks so many boxes. Styles are constantly changing of course and although the trend for soulless flat rendered white buildings might be coming to an end (thankfully) it seems that Art Deco will stand strong, curves and all, and that is why it gets my vote as one of the best.
