Here, it’s always Coffe In case you are a tourist I should explain “ Fika” means coffee break in Swedish! Text: Noel Sheehy Few nations drink coffee as often as Sweden. Regular meeting are an essential part of the Swedish makeup. This is often much to the confusion of Expatriates in the workplace, especially when the main decision at the end of the meeting is, well to have another meeting! Here is Sweden there are a huge number of Cafes per person. If in other countries a visit to the pub is the norm, then in Sweden it’s a trip to the Café. In the last few years the number of Cafes in Sweden has doubled if not tripled in some cities. Cafés nowadays can offer a whole new range of Coffee flavours, as chains like Starbucks, Wayne’s Café, Espresso House, Café By George pop up. There are a variety of themes also, French Belgian and of course Italian. My own favourite Café is the cosy café type, the ones which will offer Swedish specialities such as rasberry or blueberry Muffins. And the great thing about coming into the summer months is the joy of having a cuppa in the sun. But lets not forget the people who opt for Tea instead of coffee. These clients are seeing a greater variety in tea options. Many venues are going the extra mile to find superior tea such as British breakfast.

Maritime &Aquarium Museum Explore life under, above and by the water Text: Leon Smith Here everyone can find out more about the relationship between sea and man. About the marine environment and its life forms. And about the port city in a changing world. Visit the Aquarium or one of the exhibitions, try out the exciting ship simulator, enjoy a coffee in the café or explore the collections in the Archives’ research room. The Seamen´s Tower is a memorial to the more than 690 mariners who died during the First World War. The tower’s 193 steps lead up to the top, where the bronze sculpture of the Mariner’s Wife stands gazing out across the river. This is an emotive work of art by sculptor Ivar Johansson.

Nordic waters In the Nordic section, you’re taken on a dive into the depths of the seas off the west coast. The journey starts in a shallow bay, where you’ll meet pipefish and sticklebacks. Moving a little deeper, you’ll come across Ingo, the Aquarium’s giant lobster. You’ll also encounter lesser spotted dogfish, cod and catfish. Then you get really deep, 300 m down on a soft seabed around Skagerrack. See if you can spot our sea anemones and Norway lobsters. Tropical waters Immerse yourself in the life of the sea. You are surrounded by coral reefs, fields of seagrass and mangrove swamps. One aquarium has seahorses and cowfish which, despite their name and remarkable appearance, really are fish.

You’ll see clown fish living in stinging anemones, poisonous lionfish and goby fish living in harmony with pistol shrimp. If you’re lucky, you might witness archer fish shooting down food from the mangrove trees or the moray eel coming out to eat. Dive down into the ocean and discover life in a shallow bay on the Swedish west coast. Visit the seahorses in a seagrass meadow or explore the vivid life of a tropical coral reef. The aquarium presents the ecosystems of the sea and their inhabitants in more than 25 different tanks in the Nordic and Tropical sections. You’ll also find topical exhibitions about the ocean environment, research and much more besides. Touch pool The Aquarium’s touch pool allows you to come into close contact with some of the animals.

Fashion Shopping Text: Noel Sheehy This city has plenty of jewellery stores. Do you want handmade jewellery you can find it here too. I love the magic of jewellery; I have been wearing a Basque silver ring for the last 17 years and never knew it. I mistakenly presumed it was old Turkish text on it. As long as it’s not cheap jewellery and YES diamonds are forever. There is jewellery out there for all taste, something classic, something loud or my favourite the puzzle/Russian wedding rings.

When wearing jewellery less is more. Some people want to show off their whole jewellery collection which is asking for trouble. In other cities they would be asking to get mugged, but luckily this is a safe city we live in. A recent trend has been the return of Retro jewellery, but this is not everyone’s cup of tea. Some just don’t care for the clumsy rings that get caught up in just about everything. As a general rule Gold is better suited to dark skinned people leaving Silver for the rest of us. But this isn’t school, so you can dare to be different, as long as you like who cares!!

Style Shopping Gothenburg has various shopping mals both in the city and slightly outside. If you want to find Swedish brands its not so difficult. Gothenburg is home to a few brands such as the jeans brands. If you are looking for imports such as Italian or US brands you won’t be left disappointed. A recent trend which has returned is the popularity of UK fashion brands,and a host of new stores on little streets can be found. These can cost a bit extra but the quality is amazing.

Vintage Shopping People should know there are two types of collectors, the first ones collect sensible things like stamps, coins and football memorabilia. The second are just crazy! (Editor’s note) My name is Ashington Hedges, and I am a sucrologist. Don’t worry! It’s nothing to worry about, it’s actually something quite sweet – as sweet as sugar in fact. A sucrologist, and there are more of us than you might think, collects those little packets of sugar that you get when you have a cup of tea or coffee in a café or restaurant. You might just rip them open and tip in your sugar – but I study, appraise and value each one. It all started when I was a boy in the seventies. On Saturdays we used to go shopping in the local town, and would end up having a cup of tea at Debenhams department store. I would have orange cordial or something, but I would always slip a couple of the nicely wrapped Tate & Lyle sugar lumps in my pocket, to give me an extra boost when my mother was looking at hairnets or woollen stockings. There was something warm and comforting about having those little wrapped lumps of sweetness in my pocket. I didn’t always eat all the sugar, and so I normally had one or two left over which I put on my windowsill. 16

For some strange reason that kick-started something in me, and I started to pick up other sugar packets, not to eat, but to keep. Wrapped sugar lumps soon went out of fashion, and my collection started to include sachets, flat sticks, tube sticks, pyramids, in fact a whole range of shapes and styles. This makes displaying them a bit tricky. The sachets I have in a cigarette card album, and the other ones on shelves – taking great care to never get them wet, of course. I have quite a large collection, but I would love to add an example of the very first sugar packet – from “Partridge’s Dining Rooms” in Philadelphia, USA, from 1862. However, they are very rare, so I think my chances are slim. It’s a great hobby, it’s very easy to start, and you can pick up an amazing range of colourful, funny and exotic packets. Why not join me? The cocoa in chocolate can help reduce the risk of heart disease. Vitamins and minerals such as calcium, magnesium, and sodium can be found in chocolate, as well as antioxidants.

Sports Bars Swedes are incredibly active people, participating in all types of sports, but when they are not playing these sports themselves, they seek out the sports bars which show their heroes ply their trade! Text: Noel Sheehy

Sweden is sports crazy, and this means the necessity of Sports bars. Basically you can divide the years into Sporting seasons. Swedish hockey is big business as Sweden is one of the best countries in the world at this sport, normally shown during the winter months. But for the rest of the year Swedes who are eager to catch up on more sport focus on Football, apart from the Premiership and International Team which is always popular viewing, Swedes tend to follow whatever Team or league Zlatan Ibrahimovic is playing in, mainly because he turns the team into a winning machine.

Showing sports in Sweden is big business, tables get booked and fans spend the evening either celebrating their teams victory or arguing their loss. Best of all is the atmosphere when groups of people, just for a while are ruled by passion for a team or star.

Dinner Time Gothenburg is a very cosmopolitan city, and thankfully this is reflected in the cuisine. Many restaurants boast an international kitchen. And on closer inspection many chefs from abroad have brought some extra flavour with them. Recently I sank my teeth into a delicious cheesy burger ,created by a talented Kiwi Chef! Sweden has many things going for it due to its geographic location. Firstly it benefits from the amazing fish in the Nordic sea. Salmon, Herring, Prawns and Crayfish are consumed in large amounts. Secondly its native animals such as Elk or Reindeer, are present in large numbers. While wild boar can also be found in strong numbers. Sweden also has Beef, and lamb in plentiful supply. Not to mention pork from neighbouring Denmark. Swedish Chefs are among the best in the world so its no surprize so many restaurants in Sweden are aiming for the Michelin stars! Sweden, being super modern has seen an increase in demand from vegetarians or vegans, and Gothenburg has something for everyone! Super venues throughout the city amaze me. Do you wish to sit cosy inside or outdoors with a view? If you are hungry for Dinner, Gothenburg has some great options. Do you want fish or meat? Do you want Italian, Greek, French, Irish, British, American, Tapas or maybe you want traditional Swedish? Gothenburg is big on Fine Dining, offering guests the finest in food, service and atmosphere. It is also the highest priced type of restaurant you can find. Swedish Fine dining restaurants would have meats such as Elk or Reindeer or fish such as herring. The growing number of casual diners, bistros or Wine bars is impressive. The standard is quite high as these restaurants have high ambition and a devotion to quality service in both food and beverages. Greek Dinner

Text: Noel Sheehy Greek cuisine as a Mediterranean one makes wide use of olive oil, vegetables and herbs, grains and bread, wine, fish, and various meats, including lamb, poultry, rabbit and pork. Also important are olives, cheese, eggplant (aubergine), zucchini (courgette), and yogurt. Greek desserts are characterized by the dominant use of nuts and honey. Some dishes use filo pastry MezĂŠs is a collective name for a variety of small dishes, typically served with wines or anise-flavored liqueurs as ouzo or homemade tsipouro. Orektika is the formal name for appetizers and is often used as a reference to eating a first course of a cuisine other than Greek cuisine. Dips are served with bread loaf or pita bread. In some regions, dried bread (paximadhi) is softened in water. Many dishes are part of the larger tradition of Ottoman cuisine and their names reveal Arabic, Persian or Turkish roots: moussaka, tzatziki, yuvarlakia, keftethes, boureki etc.

Gothenburg has a wonderful location for sourcing natural dishes. Fresh catch of the day brings a variety of fish and sea food. However if you are a meat eater you came to the right city! If you are looking for something truly Swedish then look out for dishes with Salmon or Swedish Game such as Deer, Elk or wild boar! Sweden’s most popular dish by a mile is “Swedish Meat balls” or in Swedish, köttbullar. The big difference here is that only in Sweden can you get this made from Deer, thus giving it a big of extra flavour!

In Sweden, köttbullar or meatballs are made with ground beef or a mix of ground beef, pork and sometimes veal, sometimes including breadcrumbs soaked in milk, finely chopped (fried) onions, some broth and often including cream. They are seasoned with white pepper or allspice and salt. Swedish meatballs are traditionally served with gravy, boiled potatoes, lingonberry jam, and sometimes fresh pickled cucumber. Traditionally, they are small, measuring one inch in diameter. In the United States, there are a number of variations, based on the assimilation of Swedes in the Midwest.

Approximately 92% of the people I’ve known and met on foreign shores have at one time or another worked in or have frequented an Irish pub. I, myself, have spent plenty of time in Irish pubs whilst abroad and have met plenty of people and formed many close friendships with those that I’ve met. I probably have more close friends abroad than I now have at home. Irish pubs have a special place when travelling the world. They are places you go to to be entertained, to socialise, to grab a drink and to get a taste of home. More important than that though, they are a place to converse with people from all over the world. They are a traveller’s institution! They are frequented by tourists, expats and local alike. Text: Noel Sheehy Swedish Microbreweries have transformed Beer drinking inSweden in the last few years. They have done this so such an extent that the major Brewers are sitting up and taking notice. The message has been clear- The Swedihs consumer wants beter beer, tastier beer and more variety! Microbreweries have popped up at a staggering rate. While home brewers witnessed increased influence of imported beer they took notes. Today Swedish microbreweries provide Swedish beers with foreign influence. The standard is rising continuously, as their search for perfection continues. Swedish Macro breweries have woken up to the demands of the Swedish beer drinker. New variants of the beers are offer. It could be anything from a darker Beer to a stronger Beer. There are many international projects and cooperations going on between brewers. Bars specialising in Beer are popping up throughout the city. Sometimes they will be themed ie German Beer other times they will offer a spread of beers from the four corners of the world. Last but not least information about Beer is on the increase. Italian Dinner Time

Text: Leon Smith Few cultures place as much importance on dinner as Italy. Lucky there are many Italians restaurants around. Here we explain a little bit more about how they function. Traditionally, meals in Italy usually contain 3 or 4 courses. Meals are seen as a time to spend with family and friends instead of immediate sustenance; thus, daily meals can be longer than in other cultures. During holidays, family feasts can last for hours. French restaurants in Sweden make a great effort to serve top Cuisine. Often they can provide a variety of dishes with origins throughout France. This gives the Chef greater freedom as they are not tied into serving just local specialties. Typical French Dinner or Le Dîner often consists of three courses, hors d’œuvre or entrée (appetizers or introductory course, sometimes soup), plat principal (main course), and a cheese course or dessert, sometimes with a salad offered before the cheese or dessert. Yogurt may replace the cheese course, while a simple dessert would be fresh fruit. The meal is often accompanied by bread, wine and mineral water. Main meat courses are often served with vegetables, along

with potatoes, rice or pasta. French Beverages & drinks, those that precede a meal are called apéritifs (literally: that opens the appetite), and can be served with amuse-bouches (literally: mouth amuser). Those that end it are called digestifs. Apéritifs vary from region to region: Pastis is popular in the south of France, Crémant d’Alsace in the eastern region. Champagne can also be served. Kir, also called Blanc-cassis is a common and popular apéritifcocktail made with a measure of crème de cassis (blackcurrant liqueur) topped up with white wine. The word Kir Royal is used when white wine is replaced with a Champagne wine.

They may be cold (such as mixed olives and cheese) or hot (such as chopitos, which are battered, fried baby squid). In select bars in Spain, tapas have evolved into an entire, and sometimes sophisticated, cuisine. In Spain, patrons of tapas can order many different tapas and combine them to make a full meal. In some Central American countries, such snacks are known as bocas. The serving of tapas is designed to encourage conversation because people are not so focused upon eating an entire meal that 44

is set before them. Also, in some countries it is customary for diners to stand and move about while eating tapas. The Tortilla Espa単ola, referred to in the English language as Tortilla, Spanish Omelette, is a typical Spanish dish consisting of a thick egg omelette made with potatoes and fried in olive oil. In Spanish, this dish is called tortilla de patatas or tortilla espa単ola to distinguish it from an omelette (tortilla francesa, French tortilla). Text: Noel Sheehy Gothenburg has witness a major increase of American Restaurants over the last few years. Steakhouse restaurants specializes in beef steaks. Usually, these steaks are made to order and are served with sides, such as baked potatoes and rolls. The same type of restaurant can also be known as a chophouse. The steakhouse started in the USA in the late 19th century as a development of traditional inns and bars. For many of these places the signature dish. Spare ribs are a variety of pork ribs and beef ribs, cooked and eaten in various cuisines around the world. They are a long cut from the lower portion of the pig or cattle, specifically the belly and breastbone, behind the shoulder, 46

Persian cuisine includes a wide variety of foods ranging from chelow kabab (rice served with roasted meat: barg, koobideh, joojeh, shishleek, soltani, chenjeh), khoresht (stew that is served with white Iranian rice: ghormeh sabzi, gheimeh, fesenjト], and others), ト《h (a thick soup: for example ト《h-e anト〉), kuku (vegetable souffle), polo (white rice alone or with addition of meat and/or vegetables and herbs, including loobia polo, albaloo polo, sabzi polo, zereshk polo, baghali polo and others), and a diverse variety of salads, pastries, and drinks specific to different parts of Iran. It is unknown when rice (berenj in Persian) was brought to Iran from the Indian subcontinent. The use of it, at first a specialty of Safavid court cuisine, evolved by the end of the 16th century CE into a major branch of Iranian cookery. Varieties of rice in Iran include champa, rasmi, anbarbu, mowlai, sadri, khanjari, shekari, doodi, and others. Basmati rice from India and Pakistan is very similar to these Persian varieties and is also readily available in Iran. Traditionally, rice was most prevalent as a major staple item in the rice growing region of northern Iran, and the homes of the wealthy, while in the rest of the country bread was the dominant staple. The varieties of rice most valued in Persian cuisine are prized for their aroma, and grow in the north of Iran.

We should stress that the drink will never be any better than the quality of the cheapest ingredient in it, and hence.Note constantly the need for the highest quality spirits, liqueurs, cordials, and modifiers (fresh squeezed lemons, etc.). Observe that a cocktail, in the classic sense (a before-dinner drink) should have no more than the slightest touch of sweetness to it, and not use drinks like the Brandy Alexander as pre-prandial cocktails, as they dull rather than sharpen the appetite. Do not denigrate sweet drinks as such, but rather point out that they are excellent after chocolate cookies, but they are anathema as a “cocktail” 54

before a large meal. Follow these basic principles for a quality cocktail and you can’t go wrong: It should be made from good-quality, high-proof liquors. It should whet rather than dull the appetite. Thus, it should never be sweet or syrupy, or contain too much fruit juice, egg or cream. It should be dry, with sufficient alcoholic flavor, yet smooth and pleasing to the palate. It should be pleasing to the eye and well-iced. Popular Cocktails: Daiquiri- 8 parts white Cuban rum,2 parts lime juice, 1 part simple syrup. Shake with lots of finely crushed ice and strain well into a chilled cocktail glass.

Jack Rose-8 parts Applejack,2 parts lemon juice,1 part Grenadine. Shake vigorously with ice and strain into a cocktail glass. Garnish with a twist of lemon, if desired. Manhattan- 5 parts American whiskey,1 part Italian (sweet) vermouthdash of Angostura bitters to each drink. Stir with ice, strain into a cocktail glass and serve garnished with a maraschino cherry. Martini- 7 parts English gin,1 part French (dry) vermouth. Stir with ice, strain into a cocktail glass, twist lemon peel over the top and serve garnished with an olive, preferably one stuffed with any kind of nut.
