Wowza, it’s been a hot one for up here in the mountains, nearly 100 degrees in the shade and no rain for the last couple of weeks. Seems it’s either feast or famine. One month, there’s so much rain that every piece of my clothing is covered in mold and all of my wooden drawers are swollen shut, the next it’s so dry that my dirt road and driveway kick up enough dust to camouflage my car. You can tell who lives on a dirt road around here because we have to use our windshield wipers (front and back) to clear off the dust. Wash your car one day, and the next it looks just like it did before. As true southerners do when it gets this hot, Maxine, Billy and I have done pretty much a lot of Maxine naps on the floor by my desk nothing. Get our chores and dog under the ceiling fan. She says, “It’s way walks done early and knock off too hot to be on the couch, woof!” just after noon. Not much to do after that besides take a nap in the shade. And that’s exactly what we’ve done this summer, a whole lot of napping. While our earth makes its way around the sun once again, here comes fall with all its glory. This is our big tourist season. Sure, summer is good with the kids out of school and all, but the crisp mountain air and the bright fall colors invigorate everyone. A harvest and the last hurrah before hunkering down for winter makes for some fun for all. In this issue you’ll find some great ways to avoid the apple crowds and venture a little deeper into the Southern Appalachian Culture. A little off the beaten path you’ll find The Cider House Orchards, Café and Market. Skip the crowds and commercialism. Take a walk in their orchard, sip some hard cider, eat a fried pie, and relax. This is what Fall is all about. Here in the mountains, Thanksgiving weekend announces our transition to winter and the beginning of the Holiday Season. Santa arrives, trees are lit, and everyone gets in the spirit. Get your cabin rentals reserved and come enjoy the quiet winter season with us. Have a great Fall Y’All!

Prizes will be awarded to volunteers who collect the most trash, find the most unique items, and uncover the hidden golden trash treasure. Breathe New Life into Your Lawn Landscape & Garden Editor Kevin Johnson Tells Us How to Keep Our Fescue Lawns in Good Health

I

In order to achieve and maintain a beautiful lawn, employing basic lawn care practices such as properly mowing, fertilizing and watering are essential. It’s also important to ensure that nutrients can reach the soil beneath your grass. Aeration can be an extremely vital element to a healthy lawn because it allows air and water to penetrate built-up grass or lawn thatch. The goal of this article is to provide you with tips on how to seed and maintain your fescue lawn. We’ve noticed that with the recent construction boom in the north Georgia mountains there is a growing number of people who desire a beautiful lawn. Many realize a green, healthy lawn provides both aesthetic and environmental benefits. Maintaining a healthy lawn has been challenging of late, due to severe drought conditions last year, unless you were fortunate to have an irrigation system. Even with an irrigation system watering restrictions can limit their use. However this year lawn care has had its own difficulties with excessive rain causing both weed and fungal issues. If you’ve experienced these setbacks, now is the time to take action. Our method to re-establish a fescue lawn is to core aerate and then over seed. There are numerous ways to aerate with different types of equipment. We’ve found aerators that pull plugs are the most effective. These types of aerators are generally found at most equipment rental shops. We use four steps in our aeration process. First, we flag the irrigation heads and other items in the lawn that need to be avoided. Second, we aerate. Third, we apply a three way blend of turf type fescue which is weed free. Lastly, starter fertilizer is applied to encourage seed germination and rooting. This sounds easier that it actually is. Aerating is exhausting and time consuming, but the benefits are worth it. When the grass seed enters the hole you’ve created in your lawn, the environment is perfect for germination. Seed makes contact with the soil and with some rain or supplemental water, you’ll have a thicker and healthier lawn within a couple weeks.

Even if you’re not seeding your lawn, aeration is the most effective mechanical process one can do to achieve a hardy lawn. Benefits of Core Aeration Include: > Reduced soil compaction > Improved soil water uptake > Better utilization of applied fertilizers > Improved air exchange > Stronger roots Aerating twice a year will get the best results. Starting when you first install your lawn. Very few people realize that aeration is preventative, rather than ‘repair’ after your lawn has weakened for become unhealthy. If you have not aerated regularly for several years, then we will recommend that you do so every 3-4 months for 2 years. You will notice the difference once you have been aerating regularly for a couple of years. Also, during aeration is when we can discover ailments. Anything from mold, mildew, bugs, APPALACHIAN COUNTRY LIVING

disease, and anything causing your lawn the diminish. Aerating twice a year can save up to 30% of your water needs for your lawn, simply because your lawn will better distribute the water, and deeper into your soil. The best time for aeration is during the growing season, when the grass can heal and fill in any open areas after soil plugs are removed. Ideally, aerate the lawn with cool season grass in the early spring or fall and those with warm season grass in the late spring. Aeration is a beneficial practice toward achieving a beautiful lawn, but most people don’t realize it or understand the process. If your lawn is a candidate, make it an integral part of your lawn care regime. Your lawn will thank you for letting it breathe again. Design Trend: Eye to The Future Style & Design Editor Cindy Trimble Explains How Drawings Can Help You Visualize Your Future Home

B

Building a home for the first time can challenge your abilities in so many ways. We have found that many of our clients’ struggle when visualizing three dimensional designs by simply looking at a two-dimensional floorplan. You cannot fully understand a home by a verbal description. As designers, it is critical that we communicate our design ideas to our clients, so they fully understand what we have designed. Visualizing a building, a home or a room in three dimensions is something that is very difficult for some, especially if you are a “right brained” person. Creative and artistic people are referred to as “left brained” people and have a much easier time converting two dimensional drawings into three dimensions. However Right brained people who are typically more analytical and technical are more challenged. A residential project will typically have a multitude of design elements to be thought through and detailed including the exterior of the house, the fireplace, the handrail, built in bunk beds, cabinets, a wine cellar and so much more. Three dimensional drawings not only illustrate what you have in mind for your client’s house, but they are a great tool for the builders or sub-contractors to build from. We generate all sorts of sketches including quick hand sketches and computer generated and rendered drawings. Three dimensional sketches help with visualizing the shape and detail but is also a way to quickly explore different color and finish options. They help eliminate confusion and give homeowners a sense of comfort that they know exactly what they are getting. Not only do 3-D drawings help homeowners understand the designs, but they are very helpful for designers to see exactly what is in their mind’s eye. Many times, when we begin to draw something, it will change and evolve into something more successful because we can evaluate all the details. There are many ways to get 3-D OCTOBER/NOVEMBER 2019

images produced. There are local resources such as our studio, but there are many on-line for hire graphic shops that will do drawings for you. The bottom line is, make sure you fully understand what you are getting by insisting on seeing a 3-D drawing. You will appreciate the complete understanding you will get before the shovel hits the ground and even more after construction is complete and you got what you envisioned and was presented to you. A LABOR OF LOVE.

On Labor Day weekend over 150 members, staff, family and friends gathered in the early morning fog as a kilted figure emerged over a hill with the sound of bagpipes playing the old tune “Flowers of Scotland.” This was quite a surreal backdrop as the dedication began announcing the much-anticipated opening of all 18 holes of golf at Old Toccoa Farm, which happens to be the only golf course in Blue Ridge and all of Fannin County. The initial 9 holes of golf have been a highly regarded gem, since they opened in 2015, but now, those holes combined with the new nine, are already creating quite a buzz. “In only our second weekend of having 18 holes open, we saw our average number of weekend rounds go from 150 to over 310,” says Kevin Hermetz, one of the Old Toccoa Farm managing partners. “Many of those rounds were comprised of larger groups that came to play from Atlanta, Nashville, Florida, Chattanooga, Dalton and Birmingham.” The host of one of the groups, who lives in Nashville, but has a second home in Blue OCTOBER/NOVEMBER 2019

Ridge, remarked, “I brought 12 guys to play Old Toccoa Farm both Friday & Saturday and next month I am going to bring 12 more.” “There is not another course in the area that is like it,” he added. Blue Ridge has always been a popular spot for groups to gather, but now a first-class 18-hole golf course can be part of the draw. “Each weekend it is common to see groups come to Blue Ridge for guys and girls’ weekends, bachelor and bachelorette parties, and most recently, fantasy football draft weekends, but now we are seeing golf at Old Toccoa Farm being part of the experience,” says Hermetz. His business partner, Peter Knutzen, agrees, adding, “for the past 10 years, more and more people have discovered Blue Ridge and the understated lifestyle and activities offered here, and now, Old Toccoa Farm adds yet another reason to visit and live here - a world class 18-hole golf course and a community that offers a true sense of place.” However, it is important to note, that in addition to the resort and guest play, there are over 230 resident and non-resident members, who have already discovered what Old Toccoa Farm has to offer. For example, once a month on a Sunday afternoon, one of the more popular events is the Nine

& Dine golf outing, or as some now call it, the “Nine, Wine & Dine.” It is a very non-competitive 9 holes of golf whereby, two couples play a best ball format, and compete against the other foursomes. It is a great way to get to know each other while playing golf and maybe enjoying a cool beverage. And if you are new to golf, this is entry level golf at its finest. Afterwards, everyone meets at a shady spot down by the river to share dinner and some pleasant conversation. Speaking of entry level golf, Old Toccoa Farm has been offering a series of ladies’ beginner golf clinics that has been very popular. Led by teaching pro, Bill Tramontozzi, these clinics allow ladies that are new to golf, or trying to get their game back, a group format to learn the basics and meet other ladies at the same skill level. “After just a few clinics, I am already seeing ladies that did not know each other before, become friends and get out and play 9 holes together. Now they are even going home and asking their husbands to join them,” says Bill. OCTOBER/NOVEMBER 2019

There is both a men’s and women’s golf association, that coordinate tournaments throughout the year, sometimes using a themed format, such as the women’s Daffodils & Dames or the men’s Craft Beer Open to create a fun and different golf experience. In addition, there are the upcoming Member/Member, Member/Guest and Club Championship tournaments. While there is plenty of excitement about the new golf holes, there are also many more fun activities to do at Old Toccoa Farm. A good number of the members regularly participate in the Sunday morning yoga classes taught by Ashlee Lofton at Yoga over Blue Ridge on a quiet spot near the river. “Practicing yoga outside is a whole different experience than practicing in a studio, especially at a place like Old Toccoa Farm along the river, where the water ripples and the birds chirp, making it the perfect place to relax,” Ashlee recently commented. And yoga is not just for the ladies, many of the participants are men, both veterans and first timers. With over 4,300 feet of Toccoa River frontage, Old Toccoa Farm is the

perfect place to wet a line to try and land that elusive trophy rainbow trout or maybe a native brown, as the number of “honey holes� that run up and down the river seem limitless. Or if you prefer, have one of our kayaking partners pick you up and take you near the Blue Ridge Dam for a peaceful afternoon float the ends right near the Old Toccoa Farm front gate. The Old Toccoa Farm Trail Association has begun work on a nearly 3.5 mile stretch of walking trails that runs through some of the most beautiful parts of the property, whether the Overlook Trail or the trail through the Valley of the Ferns. A morning walk in the mist, or a shady afternoon stroll to beat the heat always seems to come with some adventure. Turkey, deer, rabbits, red headed woodpeckers, hawks and turtles are just some of the wildlife you will routinely encounter as you take your walk. There are also many beautiful varieties of plant life that will catch your eye. Wild azaleas, dogwoods, mountain laurel, ferns and of course many types of colorful mushrooms, some edible and some not so edible, make the scene. Earlier 26

this summer, there was much excitement when it was discovered that Old Toccoa Farm has a bountiful supply of Chanterelle mushrooms. Several ladies would routinely put on their boots and gloves to forage the beautiful forests along the walking trails to seek out this edible, fragrant variety. The jury is still out as to whether their popularity is because of the taste, or the fact that they can cost as much as $60 dollars a pound! The magnificent golf course and other activities listed above are a big part of the reason there has been an uptick in real estate sales and new home construction at Old Toccoa Farm. With 10 custom homes completed, 3 new homes now under construction, and 13 additional homes coming out of design review that will be under construction this fall through early spring, it is apparent that the lifestyle and great group of members at Old Toccoa Farm are a big part of the draw. Something old is now something new. Our parents and grandparents made us caramel apples, and they were great. Add another layer of decadence with a second dip in your favorite chocolate.

Like many others, new owners Stephanie and Marc Cots came to north Georgia on vacation and fell in love with area. Having grown up in a town smaller than McCaysville, GA, Stephanie knew immediately that this is where she wanted to raise her children. Recognizing a true gem, and with plenty of elbow grease, the Cots’ have given The Cider House Orchards a new life- bringing a casual, hip, fresh vibe along the way. Stephanie has fully embraced the small town ‘orchard’ way of life. She’s a member of the United States Association of Cider Makers and of Georgia Grown. She is also the first female hard cider brewer in the north Georgia/Tennessee mountains. Stephanie welcomes everyone to her new cidery where you’ll always find her making cider, behind the counter, or cooking up some of her delicious desserts. Enjoy! 30

Stephanie’s Homemade Spiced Apple Bread Ingredients ⅓ cup light brown sugar (not packed) 1 teaspoon ground cinnamon ⅔ cup white sugar ½ cup salted butter, softened (or use unsalted and add ¼ tsp salt) 2 eggs 1½ teaspoons vanilla extract 1½ cups all-purpose flour 1¾ teaspoons baking powder ½ cup milk 1 apple, peeled and chopped (I used Granny Smith) Instructions Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a mixing bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract and stir until incorporated. Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan.

Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat/push apple mixture into batter. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat/push apples into batter; swirl brown sugar mixture through apples using a finger or spoon (I cleaned my hands and used my finger because it was easier). Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes. Mine took about 35.

Grown-Up Fried Apple Pie Sundae Ingredients Double crust pie dough- your favorite 4 cups dried fruit or fresh fruit- I used a combo of Mutzu, Gala and Jonagold apples 1 cup granulated sugar Water- enough to cover fruit Flour for rolling dough 12 tablespoons butter Instructions Cook your fruit with water and sugar in a medium saucepan for about 20 minutes. Dust surface lightly with flour and roll out dough. Cut out large circles of dough and roll out again. Spoon fruit filling onto the center of dough. Fold pie closed and press seams closed with tines of a fork. Melt one tablespoon of butter per pie in a large skillet. Place pie into skillet and cook until crispy, about 3 minutes. Turn the pie and cook on the other side. Remove from skillet and drain on paper towels.

The apple is said to be the most perfect food. In fact, some call it a magical fruit. It’s earned the reputation that if you eat one a day, it holds the MDs at bay. So is it true that apples truly do have health benefits? Dietitians, nutritionists, and doctors all agree that apples provide superior health benefits, especially if eaten whole, with their skins intact. The apple’s peel is the most essential part because it’s packed with vitamins and minerals, making the red, gold or green ball of sweetness or tartness a perfect whole food. So what kinds of proprieties does an apple hold? To start: vitamins A, B 1, B 2, B 6 C, E and K, as well as niacin, folate, pantothenic acid, and other vitamins in small amounts. An apple contains valuable minerals for good health a well: potassium, calcium, phosphorus, magnesium, manganese, iron, sodium, copper, zinc, and other trace amounts. For those who are concerned with weight management, the apple is a charm to keep one satisfied and healthy, offering only 95 calories for a medium sized apple. 32

Apples are like shields against disease. Though they aren’t cure alls, a big surprise is that many cancers can be held at bay by eating apples because of the high fiber content. It’s been known for generations about the benefits of fiber in controlling constipation and hemorrhoids, and providing regularity. Crohns Disease is another malady that benefits from apple eating. Even diabetes and asthma symptoms are aided by apple consumption. Apples are credited to staving off Alzheimer’s and Parkinson’s. The reasons: those diseases are associated is because they develop from a breakdown of the brain. Apples are like a preventative medicine. Yet as far as enjoying an apple’s taste, the total of an apple’s characteristics and it the sweetness or tartness is more than what any individual vitamin or mineral provides. An apple really can’t be overstated—and have you ever known anyone who doesn’t savor the round ball’s succulence? With 55 million tons of apples produced annually worldwide, China leads in production with the United States second.

Apples have fine lasting qualities. They can be stored for long periods in cool storage and still taste like fresh-picked. However, at room temps they ripen very quickly; thus, it isn’t the best keeping environment for apples. Preparation and preservation of them is done in many forms such raw, cooked, canned, juiced, dried (and reconstituted), fermented and made into wine. The keeping quality of an apple was welltested in applesauce form by John Glenn when he took a vial of it on a space flight. Whether it’s an apple in the hand, in pies, cobblers, tarts, cakes, doughnuts, fried pies, fritters, breads, cookies, applesauce, smoothies, jams, jellies, sweet cider or fermented, used as an oil substitute in baking or used as a part of an enhancement to various other food combinations such a salads, even sandwiches—and the old stand-by fresh sliced apples and cheese wedges, you always are in for a tasty treat with apples on the menu. Caramel Apple Upside Down Cake Cake Ingredients 1 1/3 cups Gold Medal™ All-Purpose Flour 1 Teaspoon baking powder 1/2 Teaspoon ground cinnamon 1/4 Teaspoon salt 1 Cup granulated sugar 1/2 Cup butter or margarine, softened 2 Eggs 1/2 Teaspoon vanilla 1/4 Cup milk Topping Ingredients 1/4 Cup butter or margarine 2/3 Cup packed brown sugar 1/2 Teaspoon ground cinnamon 2 Medium apples, peeled, cut into 1/2-inch wedges (I used Ozark Gold apples) Instructions Heat oven to 325°F. Spray bottom and sides of 8- or 9-inch square pan with cooking spray. In 1-quart saucepan, melt 1/4 cup butter over medium heat, stirring occasionally. Stir in brown sugar. Heat to boiling; remove from heat. Stir in 1/2 teaspoon cinnamon. Pour into pan; spread evenly.

Arrange apple wedges over brown sugar mixture, overlapping tightly and making 2 layers if necessary. In medium bowl, mix flour, baking powder, 1/2 teaspoon cinnamon and the salt; set aside. In large bowl, beat 1 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in eggs, one at a time, until smooth. Add vanilla. Gradually beat in flour mixture alternately with milk, beating after each addition until smooth. Spread batter over apple wedges in brown sugar mixture. Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 15 minutes. Meanwhile, in medium bowl, beat whipping cream on high speed until it begins to thicken. Gradually add 2 tablespoons granulated sugar, beating until soft peaks form. Run knife around sides of pan to loosen cake. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Serve warm cake with whipped cream. Store cake loosely covered. ACLM

The colors of fall will be evident in the mountains of north Georgia soon. Leaves will begin changing and the cool air of autumn will replace the heat of the summer. For the last nine years, another array of colors has adorned the area during the fall season, those of Fall Arts in the Park in downtown Blue Ridge. The colorful artist booths of this festival are filled with fine art of all kinds during this two-day family event. The origins of the festival began back in the late 70’s with an Arts in the Park festival held in the spring of each year. What began as an event to showcase local student art in Fannin County 45 years ago (spearheaded by Kathleen Thompson), Arts in the Park has grown into two of the most well attended art festivals in the southeast, Spring 36

Arts in the Park and Fall Arts in the Park. From hundreds of student artworks from all across Fannin County to the hundreds of fine art and fine craft artists today, Arts in the Park has truly become an integral part of the art scene in the north Georgia Mountains. A once industrialized, rural area, Blue Ridge has now become one of the top art destinations in the south. It is noted as one of the Top 5 Art Towns in Georgia according to the Georgia Council for the Arts and the Georgia Municipal Association. For over 44 years during Memorial Day Weekend, the downtown City Park becomes a testament to this title, as thousands of people flock to Spring Arts in the Park. Painters, potters, woodcarvers, photographers, fabric artists and more are juried into this

festival each year, bringing some of the highest quality art to the area from artisans all across the United States. In 2020, Fall Arts in the Park will be in its 10th year of operation as well, and is growing fast in number and popularity during the beautiful fall season in north Georgia. The Blue Ridge Mountains Arts Association (BRMAA), sponsors the spring and fall festivals each year. BRMAA, also known as the Art Center, will proudly be celebrating its 40th anniversary in 2020, as it continues to provide artistic opportunities for the individual and the economic growth of the community. Another exciting highlight for BRMAA in 2020 is the “Crossroads: Change in Rural America” Smithsonian exhibit coming in April. The OCTOBER/NOVEMBER 2019

The Re-Naming of Our Indian Places

W

We don’t often think about the place names of towns that are around us, nor realize how they got their names or that they could have been named for a person. Often, if we don’t know the significance to start with, politics intervene and the place gets renamed. Smyrna, Georgia, a non-denominational religious campground built shortly after the 1832 land lottery, was named as such after a town in Turkey named by the Apostle Paul in the first century AD. Today that town is modern day Izmir. The new Smyrna, Georgia however, already had a name, Buffalofish Town. During the 1930’s all of the counties of Georgia received a mandate from one of the governors to write their county’s history. The pleasure was bestowed upon several authors and contributors to the project, with the history of Cobb County to be written by Sarah Gober Temple. She based her information on the writings of George White’s Historical Collections of Georgia written in 1849-51. In Ms. Temple’s version, Buffalofish Town, mentioned only briefly, and according to White’s statements, was known as Varner’s Station approximately 16 miles southwest of Marietta and had several other names over time including Ruff’s Station. The Battle of Smyrna Campground and the Battle of Ruff’s Mill were two of the Civil War 46

Battles fought on those grounds in 1864. Many of the homes and businesses were burned by Sherman’s troops along with a covered bridge that was rebuilt after the war. Historical records tell of the dispute between Creek and Cherokee Indians and the state of Georgia as early as 1802. Tradition says that the Cherokees had won the plot of land on the Chattahoochee River’s Southeastern side in a ball-play or stick-ball game. Often referred to as being somewhat like lacrosse, the ball was similar to a hacky sack and traditionally made of a nut or stone wrapped with thin strips of deer hide. The “sticks” were about two feet long with strips of hide intertwined to form a net. It wasn’t long after that ball-play, that the state of Georgia realigned where the boundaries of the Cherokee Nation East and pushed those Cherokees living near the Shallow Ford on the Chattahoochee River’s Southeastern side to the Northern side of the river further and into what became known as Cobb County in 1830-32. The government had gotten nervous about how many whites might be living in this Georgia Indian Territory and began making yearly reports in about 1827. These reports detailed who the leaders of the Cherokees were, if any whites were married to these Cherokees, and were there any mixed blood children. Yearly censuses were taken shortly thereafter until the 1838 removal was completed. Historical records show that whenever there were a group of Indians on the wrong side of the river, they were made to move onto the legal side and their property confiscated to be used by “the citizens of Georgia.” This information was detailed in records for the losses incurred by the Cherokees in 1842 after they were removed to Arkansas and Oklahoma Indian Territory. Buffalo Fish and his family moved to Floyd county where they were found in the 1835 census. The census details in brief that there were ten full bloods (of which two were farmers), 2 slaves, three weavers and two spinners (language used to describe the women). Buffalo Fish is listed along with several other family members

Earlier, like many of his compatriots, he served in John Drew’s Cherokee Mounted Rifles, in company D, and was mustered out on Nov. 5, 1861 in order to join the Union army. Two of his many sons are listed, one as “Crying Snake” and the other as “The Spirit.” Improvements to the town detailed in the census made claims to what became known as Dykes Bend in about 1836. Other place names that you might not think to be names of people were Doublehead, Soap, Sequoyah, Sweetwater, Proctor, Fourkiller (or Foekiller) and many more which became names of townships, creeks, schools and roadways.
