08. 21. 17 – Yes we saw the Total Eclipse, and what an event! My friend Mike rode his bike down from DC and we viewed the totality from my neighbor, Morgan’s yard. Morgan made viewing boxes; we had official NASA viewing glasses, 2 different welder’s lenses and even a viewing box attached to binoculars. Each of these viewing devices gave us a completely different type and color view. Wow. We all had expected the sky to go black as night, however we instead experienced a peculiar dark and eerie light, almost as if someone Guess who??? Do you know how hard it had turned down the contrast. is to snap a pic of a dog wearing eclipse I brought snacks that of course Morgan’s dogs ate while we were glasses? Maxine, she’s my girl. Billy Zoom well he’s not called Zoom for nothing, NO busy viewing. And that happened. way I’d get him to do this. Right after the eclipse I spent 5 days in my hometown of Edgewood, MD to celebrate Mom’s life, this time with cousins and old friends. It was a big weekend with luncheons, a crab feast, dinner, and closing down the local dance venue with my brother, just like the old days. On Sunday- a boat ride out to the mouth of the Chesapeake Bay where my Mom wanted some of her ashes spread. As kids we spent summer Sundays swimming, water skiing and picnicking there on the water in my Dad’s and Granddad’s boats. On this visit we cried, we laughed and then we ate Maryland crab at every meal. It was happy-sad to revisit those childhood family memories. And that happened. Then back to Georgia to put together this issue. I feel like I’ve barely taken a breath in several weeks. This issue is our big Apple Festival Issue and I give a hearty thanks to the ladies from the Ellijay Lions Club who made some tasty down-home apple recipes for us. They actually baked those desserts by oil lamplight since they had no power due to Tropical Storm Irma. Satterwhite Log Homes shares a lovely story about celebrating the holidays with family in our beautiful mountain cabins. While you’re in town, stop by their model home located on Highway 515 between Ellijay and Blue Ridge. They’ll have local apples and cider for everyone. Our next issue will highlight all of the wonderful things to do here over the Holidays. What better time to spend in the mountains when the leaves have fallen and the Blue Ridge mountain vistas seem to go on forever. The beautiful quiet and solitude is a wonder to behold. Right now though, there are plenty of festivals, fairs and events going on– you’ll find them all listed in the calendar sectionso get on out there and have some fun, Maxine says, “that’s an order- woof!”

blue ridge mountain baby hikes Outdoor Adventure Editor Greg Dunn and Family Take Us on Some of the Most Beautiful Day Hikes in the Area

Hiking, mountain biking, and paddling are three of my favorite ways to enjoy the mountains of North Georgia. Great trails abound in every direction, but life can sometimes get in the way. Six months ago, my life was changed in a way that I never thought possible. My wife Carrie and I were blessed with our first little boy, Finn. Ask anyone who knows me and they will tell you how much I love to get in the woods. For years, my friends with kids would try to let me know “how little time you will have when you have one of your own,” but I didn’t really believe them. I thought they were just being lazy and making excuses. Sorry friends, I guess you were right. Since Finn came, I am lucky to get a couple quick rides in a week, usually from the house on the road. What’s funny about my lack of adventure lately, is that I haven’t really missed it. This little boy has got me by the heart-strings! Being a family that loves and enjoys the outdoors is very important to us so now that Finn is getting bigger we are thinking of ways to get him into the woods. I’ve gone from reading about the latest carbon fiber this and that, to researching the most trick baby backpacks and baby bicycle trailers, you know normal guy stuff. It’s amazing how much gear is out there for baby’s. Its also amazing how expensive some of this stuff is! $400 for a backpack? What? Luckily for us we have lots of friends with lots of kids that outgrow stuff, including a couple of really nice baby packs. Like his Daddy, Finn loves it outside, so we had a pretty good idea that he would like his new pack. We took a few walks in the neighborhood to get everything adjusted and to get him used to it and he had a blast. Next on our agenda is to get him out on some real trails OCTOBER/NOVEMBER 2017

Never too early to teach your little ones about conservation, preservation and the importance of how to enjoy our precious wilderness. which we are planning this weekend. There are so many directions one can go from downtown Blue Ridge to find beautiful scenery, but with a baby we want to keep it relatively close and not too strenuous so I have compiled a list of some great hikes within thirty minutes of town that will give you the most bang for your baby buck: Ocoee Whitewater Center With over 40 miles of trails from single track to paved walking paths, this area is very baby friendly. Go on a weekend when they are releasing the upper section and enjoy watching all of the kayakers pulling all kinds of crazy moves. Aska Area Fall Branch Falls Follow Aska Road for approximately 8 miles, turn right on Stanley Creek Road, continue for 3 miles, the parking area is on the left. The cascading falls will be about a mile up with a nice wooded platform to hang out on and check out the scenery. Aska Area Stanley Creek Trail Continue past the trailhead for Fall Branch Falls

for another ¾ mile, and you will see a pull off on your left. This is an unmarked trail that zig zags back and forth across the creek up the mountain into the Rich Mountain Wilderness. This is one of the more technical “baby hikes” due to creek crossings but also one of the most scenic. Aska Area Deep Gap Trail This is the main parking area for Aska trails including Green Mountain, Flat Creek, Long Branch and Stanley Gap. Their are lots of options here from an out and back to the top of Stanley Gap to a 5.5 mile loop on flat creek. All of the trails that I have listed are in my opinion some of the most scenic. The fact that they are so close to town makes them a great choice if you decide to get the little ones out to enjoy nature. Despite their accessibility please remember that you are still entering National Forest and Wilderness areas so be prepared, especially when hiking with kids. Take plenty of extra water, snacks and day supplies to keep everyone comfortable and you’re sure see some of the most beautiful spots around! ACLM

Breathe New Life into Your Lawn Landscape & Garden Editor Kevin Johnson Tells Us How to Keep Our Fescue Lawns in Good Health

In order to achieve and maintain a beautiful lawn, employing basic lawn care practices such as properly mowing, fertilizing and watering are essential. It’s also important to ensure that nutrients can reach the soil beneath your grass. Aeration can be an extremely vital element to a healthy lawn because it allows air and water to penetrate built-up grass or lawn thatch. The goal of this article is to provide you with tips on how to seed and maintain your fescue lawn. We’ve noticed that with the recent construction boom in the north Georgia mountains there is a growing number of people who desire a beautiful lawn. Many realize a green, healthy lawn provides both aesthetic and environmental benefits. Maintaining a healthy lawn has been challenging of late, due to severe drought conditions last year, unless you were fortunate to have an irrigation system. Even with an irrigation system watering restrictions can limit their use. However this year lawn care has had its own difficulties with excessive rain causing both weed and fungal issues. If you’ve experienced these setbacks, now is the time to take action. Our method to re-establish a fescue lawn is to core aerate and then over seed. There are numerous ways to aerate with different types of equipment. We’ve found aerators that pull plugs are the most effective. These types of aerators are generally found at most equipment rental shops. We use four steps in our aeration process. First, we flag the irrigation heads and other items in the lawn that need to be avoided. Second, we aerate. Third, we apply a three way blend of turf type fescue which is weed free. Lastly, starter fertilizer is applied to encourage seed germination and rooting. This sounds easier that it actually is. Aerating is exhausting and time consuming, but the benefits are worth it. When the grass seed enters the hole you’ve created in your lawn, the environment is perfect for germination. Seed makes contact with the soil and with some rain or supplemental water, you’ll have a thicker and healthier lawn within a couple weeks.

Even if you’re not seeding your lawn, aeration is the most effective mechanical process one can do to achieve a hardy lawn. Benefits of Core Aeration Include: > Reduced soil compaction > Improved soil water uptake > Better utilization of applied fertilizers > Improved air exchange > Stronger roots Aerating twice a year will get the best results. Starting when you first install your lawn. Very few people realize that aeration is preventative, rather than ‘repair’ after your lawn has weakened for become unhealthy. If you have not aerated regularly for several years, then we will recommend that you do so every 3-4 months for 2 years. You will notice the difference once you have been aerating regularly for a couple of years. Also, during aeration is when we can discover ailments. Anything from mold, mildew, bugs,

disease, and anything causing your lawn the diminish. Aerating twice a year can save up to 30% of your water needs for your lawn, simply because your lawn will better distribute the water, and deeper into your soil. The best time for aeration is during the growing season, when the grass can heal and fill in any open areas after soil plugs are removed. Ideally, aerate the lawn with cool season grass in the early spring or fall and those with warm season grass in the late spring. Aeration is a beneficial practice toward achieving a beautiful lawn, but most people don’t realize it or understand the process. Blue Ridge, GA Marines Make a Difference for the Second Year with Toys for Tots

The Marines of Marine Corps League Detachment (MCL) 1438 of Blue Ridge are in the beginning stages of their second Toys for Tots Campaign and are planning to make the 2017 campaign an even greater success than their inaugural campaign. The Toys for Tots Campaign of 2016, the first to be conducted in Fannin County, collected over 1200 toys and $9000 in cash. Cash donations were used to purchase toys requested but not donated. Over 1700 toys were distributed to 545 children in Fannin County. From bicycles to baby dolls, from toy trucks and cars to building blocks, from board games to puzzles, no request was turned away. “Every request was filled to the best of our ability and within the guidelines of the National Toys for Tots Organization,” said local area coordinator, Jim Brumbelow. “We can only accept new, unwrapped toys valued at $15 or greater and, unfortunately, we can only provide toys for younger children and personal care items for older children,” Brumbelow continued. Toys for Tots national guidelines also prohibit the accepting or distributing of clothing and foodstuffs. Additionally, the Marines were able to accommodate several special requests from neighboring OCTOBER/NOVEMBER 2017

Union and Gilmer Counties. The Marine Corps Reserve Toys for Tots program began in 1947 by wives and friends of Marines who were deployed. The program is the only program administered by a branch of the armed services and the CEO reports directly to the Commandant of the Marine Corps in Washington, DC. Today, there are over 800 campaign offices distributing over 16,000,000 toys to over 7,000,000 children. Impressively, all of this is accomplished with no paid staff and every toy collected and 97 cents of every dollar donated goes directly to children. In Fannin County, collection boxes are located in such locations as The Blue Ridge Scenic Railroad; North Georgia Boat Lift and Marine Construction; Tractor Supply; Circle J Family Restaurant, Mercier Orchards; Bank of the Ozarks; TruFitness Blue Ridge and Fannin County Co-Op as well as a number of churches and businesses through out town. Any business wishing to be a collection point should contact Mr. Brumbelow at 404.405.5024. Volunteers in the project do not have to be Marines. Toys for Tots welcomes everyone. The apple is said to be the most perfect food. In fact, some call it a magical fruit. It’s earned the reputation that if you eat one a day, it holds the MDs at bay. So is it true that apples truly do have health benefits? Dietitians, nutritionists, and doctors all agree that apples provide superior health benefits, especially if eaten whole, with their skins intact. The apple’s peel is the most essential part because it’s packed with vitamins and minerals, making the red, gold or green ball of sweetness or tartness a perfect whole food. So what kinds of proprieties does an apple hold? To start: vitamins A, B 1, B 2, B 6 C, E and K, as well as niacin, folate, pantothenic acid, and other vitamins in small amounts. An apple contains valuable minerals for good health a well: potassium, calcium, phosphorus, magnesium, manganese, iron, sodium, copper, zinc, and other trace amounts. For those who are concerned with weight management, the apple is a charm to keep one satisfied and healthy, offering only 95 calories for a medium sized apple.

Apples are like shields against disease. Though they aren’t cure alls, a big surprise is that many cancers can be held at bay by eating apples because of the high fiber content. It’s been known for generations about the benefits of fiber in controlling constipation and hemorrhoids, and providing regularity. Crohns Disease is another malady that benefits from apple eating. Even diabetes and asthma symptoms are aided by apple consumption. Apples are credited to staving off Alzheimer’s and Parkinson’s. The reasons: those diseases are associated is because they develop from a breakdown of the brain. Apples are like a preventative medicine. Yet as far as enjoying an apple’s taste, the total of an apple’s characteristics and it the sweetness or tartness is more than what any individual vitamin or mineral provides. An apple really can’t be overstated—and have you ever known anyone who doesn’t savor the round ball’s succulence? With 55 million tons of apples produced annually worldwide, China leads in production with the United States second. Apples have fine lasting qualities. They can be stored for long periods in cool storage

and still taste like fresh-picked. However, at room temps they ripen very quickly; thus, it isn’t the best keeping environment for apples. Preparation and preservation of them is done in many forms such raw, cooked, canned, juiced, dried (and reconstituted), fermented and made into wine. The keeping quality of an apple was well-tested in applesauce form by John Glenn when he took a vial of it on a space flight. Whether it’s an apple in the hand, in pies, cobblers, tarts, cakes, doughnuts, fried pies, fritters, breads, cookies, applesauce, smoothies, jams, jellies, sweet cider or fermented, used as an oil substitute in baking or used as a part of an enhancement to various other food combinations such a salads, even sandwiches—and the old stand-by fresh sliced apples and cheese wedges, you always are in for a tasty treat with apples on the menu. Natural or Engineered Flooring? Style & Design Editor Cindy Trimble on Wood Flooring: The Floor Finish of Choice in the Appalachians

Wood flooring is by far the most popular choice in the greater Appalachian Mountains for both residential and commercial projects. There are so many different choices on the market today making it difficult for the average homeowner to make their minds up. In addition to the aesthetic choices, there are so many different construction methods further complicating the decision. Wood flooring has two general categories: solid wood and engineered. Many assume the best and most elegant is solid wood because it is finished in place and can be refinished. Now with the advances in technology and the engineering of wood products, that is not so. There are limitations with solid wood. The larger the piece of solid wood, the wider the plank on your floor, the more opportunity for bowing, cupping and warpage. Solid wood when exposed to any moisture will react, especially if exposed on one side. Wood is a natural material that constantly moves and changes with atmospheric changes. When exposed to moisture, if the wood is not stabilized in some manner, it will tend to curl the way it was on the tree. New Engineered wood flooring has addressed many issues. The various manufacturers have created a layered design, much like plywood where the grains of wood are overlaid in alternating directions, creating a strength that prevents bowing. Some manufacturers have gone even further with product development because just layering solid wood slices still leaves the wood to react if exposed. Some manufacturers have created more durable and impermeable cores that will keep the wood layers intact and protected even if exposed to moisture. These new cores allow installation on concrete slabs where there has been hydrostatic pressure (or moisture coming up from the slab.) They can also be installed over radiant heat flooring systems. But the best feature about many of the engineered OCTOBER/NOVEMBER 2017

wood floors is that they allow for design using very wide plank flooring, up to 9â&#x20AC;? wide giving a very elegant look. The engineered process creates the flooring in a factory, so the top finish many times is much harder and more durable than a finished on site finish. Wood flooring has become more affordable and with the new engineering of the product to address all of the concerns with having wood floors in your house, it is now safe to install wood floors in your kitchens, bathrooms, basements and even laundry rooms where in the past would have tile floors. Wood offers so much more warmth than tile. It is easier on your body if you have to stand for a length of time,

A Visit to Nana’s Cabin

Untold feet have trod these shared pathways, but much of the gentle Appalachian way of life is remarkably consistent from generation to generation and family to family. So often, women are the foundation of families and continuity. Mountain living might seem to be a masculine domain, with rough hewn cabins, and a history of difficulty in clearing fields, plowing stony ground, and building split rail fences. But behind male stereotypes, the woman’s role in Appalachian living yesterday and today cannot be overstated. Today’s grandmothers are busy making preparations to gather their loved ones at this special time of year. And finding themselves assuming new roles in life in their mature years, many have occasion to reflect on their own childhood and upbringing, to consider the challenges of life then, the experience of their adult children today, and the world of influences and distractions in which their grandchildren live. In this, Appalachian living is not something to escape from, but something to return to. And the chosen life and context to living that many women deliberately convey to their posterity. It is easy to think ahead to the family assembled for Thanksgiving and Christmas, and at the same time to reflect upon years past. Thoughts of distant memories are easy to summon and return with vitality. If we could overhear thoughts, and experience recollections of another... 26

This beautiful home is a cherished family retreat enjoyed by four generations, from babies to great grandparents. Now and in years to come, it will be the setting of many special memories. Many families build second homes in the mountains of North Georgia. Appalachia offers tremendous recreational opportunities, and is among the most popular vacation destinations in the country. Great Smoky Mountains National Park has twice as many visitors annually as any of the great western parks, double that of the Grand Canyon, Yellowstone, or Yosemite.

Many times as a girl, she had helped her grandmother work in the kitchen. “Busy hands...” she was always told. Thinking back on slower times, it was evident they weren’t slower at all. Days began early and many chores were done before daylight. Back then, there were no televisions, no transistor radios, and no earbuds. With grandmother, conversation occupied your thoughts while your hands were kept incessantly busy. Granny Jarrell spoke of her own childhood. Whatever the task, as she sewed, baked, fed the chickens, or hung laundry out to dry, she related stories passed by her own grandmothers and great aunts. Grandmother never had more than a few dresses, only two or three. These many years later, it is hard to remember, and even harder to be certain of direct memory or recollection of an old photograph. Thinking back now, it is easier to see her apron than the dress itself; it seems only for church on Sundays was the apron ever removed. That apron. In its gathered folds, Granny held eggs

Addie Bell Hardin, or Nana, once reminisced that she could pick apples without leaving the porch of her grandfather’s house in Rome, Georgia. Memories such as these are common across the apple country of north Georgia, which centers on Ellijay and Gilmer County, known as Georgia’s Apple Capital. Begun in 1972, the Georgia Apple Festival has become the biggest event of autumn in the mountains of north Georgia. Romantics speak of simpler times. But those days were not simpler days; only our understanding of them is simple. Grandmother’s recollections of her own grandmother included the supreme difficulties of wars not distant nor abstract. Immediately present horrors, loss, and sadness. Life always has an urgency and immediacy in the chaos of present tense, and yet the deliberate direction we take and choices we make have predictable outcomes in small increments which accumulate over time. In an old worn box, a few precious letters remain, milestones that document the path. Grandmother’s words are as beautiful as her voice, but characters shaped in labored OCTOBER/NOVEMBER 2017

pencil strokes reveal her weary hand. There are qualities of character not much discussed today, but relevant as ever. Perseverance, fortitude, industriousness, honesty and integrity. The modern world is a cauldron of confusion for the young and inexperienced, and for many families, Appalachia is the antidote. New and improved aren’t synonyms. Outside the jargon of advertising, these words are distant cousins at best, and unrelated more often than not. There is no shortage of distractions in modern life, and no agreement on what our positions and priorities should be. Perhaps what was old is now new again. The ancient mountains of Appalachia are not new, even as their wonders are discovered anew by every child and every generation. Deciding to live in the mountains, even building a new second home, brings questions from friends. “Isn’t that a huge commitment?” Exactly. A defining commitment; one out of step among a generation that has trouble with commitments. Still, the desire to get away from it all, to have a place of your own, runs deep in the American character, and a cabin in the woods is a dream for many, and perhaps most, according to recent surveys.

Ingredients ½ cup butter, softened 1 cup sugar, divided 1 cup all-purpose flour 1 8oz. pkg. cream cheese, softened 1 large egg ½ tsp. vanilla extract ½ tsp. apple pie spice 1 tbsp. all-purpose flour 5 Gala or sweet apples, peeled and sliced

Preparation Pre-heat oven to 425 degrees. Beat butter and 1/3 cup sugar until light and fluffy. Add 1 cup flour and beat well. Line bottom of a 9” cheesecake pan with parchment paper. Spread flour

mixture on bottom and 1” up sides of pan. Beat together cream cheese, 1/3 cup sugar, egg and vanilla. Spread on top of crust. Add remaining 1/3 cup sugar, apple pie spice and 1 tsp. flour to apples. Spread mixture on top of cream cheese layer. Sprinkle nuts on top. Bake 10 minutes, then reduce temperature to 375 and bake for 35 minutes. Cool on wire rack, then refrigerate over night. Apple Raisin & Nut Cupcakes

Using her mother, Ethel Smith Davis’ recipe, by Kathryn Davis Watkins. Ingredients ½ cup shortening 1 cup sugar 1 egg ½ cup cold coffee ½ tsp. baking soda 2 cups all-purpose flour ½ tsp. salt 2 tbsp. cinnamon 1 cup peeled and finely chopped apples 1 cup raisins 1 cup pecan or walnut pieces Paper muffin cups Preparation Preheat oven to 350 degrees. Cream shortening and sugar until smooth. Add egg and mix well. Stir baking soda into coffee & set aside. Combine flour, salt & cinnamon. Add to cream cheese mixture- alternately with coffee- beginning and ending with flour mixture. Mix until smooth.

Add apples, raisins and nuts. Mix well. Spoon into paper cups until 2/3rds full Bake for 18 -20 minutes. Makes 1 ½ dozen.

Caramel Apple Cake with Caramel Topping

Delicious recipe by Emma Lou Stover Ingredients 2 ½ cups sugar 3 eggs 1 ½ cups vegetable oil 3 cups all-purpose flour 2 tsp. vanilla extract 1 cup chopped walnuts 2 ½ cups diced apples Preparation Preheat oven to 350 degrees. Grease and lightly flour a 13x9” baking dish. Cream together sugar, eggs and oil. Add flour and mix until well blended. Mix in vanilla, nuts and diced apples. Spread into dish and bake for 45 -60 minutes. Cake is done when toothpick inserted in center comes out clean. When cake is done, punch holes in it with a knife and pour topping over.

Caramel Topping ¾ pound (3 sticks) butter 2 cups brown sugar ¼ cup milk Heat all ingredients together over medium heat. Bring to boil, stirring constantly. Let boil for about 2 minutes. Pour over warm cake. Serves 15 -20

Beautiful recipe by Evon Creech Ingredients ½ cup butter 2/3 cup packed light brown sugar 1 cup chopped walnuts, toasted 1 ½ lb. apples chopped (3 large) 1 box Betty Crocker Super Moist spice cake mix. Water, vegetable oil and eggs called for on cake mix box. Preparation Preheat oven to 350 degrees In 13x9” pan, melt butter in oven. Sprinkle brown sugar and walnuts over butter, stir to combine. For many visitors to Gilmer County, fall is the perfect time to visit. There are crisp apples, colorful rustling leaves and cool mountain breezes to enjoy. AND the best time to come is October for the annual Apple Festival held the second and third weekends. Anywhere from 40,000 to 50,000 will visit the Festival, walking the aisles of handmade crafts, unique gifts and delicious foods offered next to the river at the Lions Club facility. Fresh fried pies, cold apple cider and buttery apple dumplings can be found tempting, but so can the Greek Gyros, Cajun Cooking, Blooming Onion or the Bratwurst and of course the boiled peanuts! Don’t forget the kidschildren’s rides and events are many. The proceeds from the Apple Festival are split between the Ellijay Lions Club and the Gilmer Chamber of Commerce. The Chamber uses their part of the profit to promote the county businesses through its programs and member services. It provides an integral connection that keeps Gilmer County a productive environment for local business. Residents and visitors frequently use the chamber for recommendations, directions and general information about the area. The work the Chamber does is very important to the continued growth of the county. The Ellijay Lions Club facility and grounds are maintained through member dues freeing up the profit from their hard work at the Apple Festival to charity. The Ellijay Lions uses one hundred percent of its festival profit to fund various charities; local, State and International, such as educational programs, Star Student, scholarships, food pantry, ‘Special Friends’ program, cadets for the Civil Air Patrol, American Cancer Society, American Diabetes Association, GA Lions Camp for the Blind, GA Lions Lighthouse Foundation, all totaling about 34 different charities. The Gilmer Lions Club works hard to make a difference. They are the proud sponsors of the Ellijay LEO Club made up of students from Gilmer High School. Ellijay Lions sponsored the first Boy Scout Troop formed in Ellijay, January 1935 and continue to sponsor both the Boy & Girl Scouts. How can you help? Pour batter over apples & walnuts in pan. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool on rack for 2 minutes. Run knife around sides of pan to loosen Place heatproof serving plate upside down on pan. Turn plate and pan over. Remove pan and serve warm.

Apple Brown Betty with Vanilla Sauce

Ingredients 1 ½ cups bread crumbs (I made biscuit bread the night before) ¼ cup melted butter/margarine 3 cups peeled and sliced apples ½ cup light brown sugar 1 ½ tsp. cinnamon ½ tsp. allspice ¼ tsp. nutmeg 1 tsp. lemon peel 2 tsps. vanilla extract 1 cup raisins 2 tbsps. lemon juice 6 tbsps. apple juice concentrate, thawed OCTOBER/NOVEMBER 2017

8” square glass baking dish Preparation Preheat oven to 350 degrees. Combine raisins, lemon juice and apple concentrate and set aside. Combine bread crumbs with butter and mix well. Spread ½ mixture in bottom of dish. In separate bowl, combine sugar, spices, lemon peel and vanilla. Mix until crumbly. Layer ½ apples on top of bread crumb crust. Sprinkle with sugar mixture. Then sprinkle with ½ of raisin mixture. Add second layer; apples, bread crumb mixture, sugar mixture and raisin mixture. Cover and bake at 350 degrees for 35 minutes. Uncover and bake at 400 degrees for another 20 minutes until lightly browned Vanilla Custard Sauce 1 ½ cups nonfat milk 1 tbsp. cornstarch 2 egg whites, beaten 1 egg 4 tbsps. sugar 1 tsp. vanilla extract

Combine milk and cornstarch in a saucepan over low heat and stir until cornstarch is dissolved. Add remaining ingredients- except vanilla. Stir constantly over medium-low heat until thick, about 5 minutes. Remove from heat and add vanilla, mixing well. Cover with plastic wrap to prevent skin from forming. Let cool completely and then drizzle over Apple Brown Betty. Refrigerate leftovers in a sealed bowl. Note: This custard is great drizzled over fresh cut apples- or any fruit- when just freshly made! Chief White Path 1761 – 1838

A little known feature stands at the Northeast Georgia History Center, located on the campus of Brenau University in Gainesville Georgia. It is the 18th century cabin of full blood Cherokee Indian Whitepath. The cabin was originally built about 1780 by his parents and was near the site of the historic Cherokee town of Turniptown (Ulunyi), not far from the historic township of Ellijay, Georgia. Chief Whitepath was born in 1761 near Ellijay and grew up in the cabin. He was described as “a tall, good looking Indian, with a commanding appearance and earnest manner” about him. His Cherokee name, Nunna-tsunega, translates literally as “I dwell on the peaceful path.” A skillful orator and strict follower of the traditional ways, he frequently spoke out at the Cherokee National Capitol at New Echota against ceding land to the white settlers and about the influence the whites were exposing the Cherokees to. He objected to the new Cherokee Constitution and the introduction of Christian Missionaries into their lands. In 1814 Whitepath joined General Andrew Jackson to fight the Creeks at the Battle of Horseshoe Bend in Alabama. He, along with Junaluska and Going Snake, led 600 Cherokees in a successful attack against a thousand Creeks. He was instrumental in securing victory for Jackson when his small party stole the Creeks’ canoes, cutting off their escape by water. As a result of his assistance and serving as a translator in the Cherokee Nation of Georgia, he was given a reprieve from going on the trail with his people, but chose to stay with them instead. 46

The fall of 1838, at the age of 75, Whitepath helped to organize the removal from the Eastern Indian Territory, later known as the “Trail of Tears.” He and other Cherokee leaders realized that the best chance for survival lay in an orderly march to Oklahoma and they arranged for ration stops along the trail. Both he and Fly Smith fell ill upon leaving Nashville, both arriving in an army wagon on the stop near Hopkinsville, Kentucky. Chief Whitepath died after several hours of arrival and was buried beside Chief Fly Smith who also died during the night. When the land lottery of 1832 was held, the cabin and the land were awarded to the Pinson family. During Whitepath’s time, the cabin consisted of a single large room downstairs with a loft above. The Pinsons, who were white settlers, later added a dogtrot central hallway and another room downstairs. The cabin was removed and relocated in 1982 by Counte L. Cooley, a descendent of Whitepath and James Mathis. It was removed from the Cooley property in Gainesville in 1995 to the campus of Brenau University, where it remains today.  An extensive effort by the entire Cooley family was made for the preservation and restoration of the house to salvage this important part of their family history.
