As I try to remember exactly what Maxine & Billy Zoom and I did this summer– nothing much comes to mind except– pay vet bills. After a second surgery to remove a mass on her side that just would not heal, my vet recommended I take Maxine to a canine dermatology specialist. Several tests and biopsies later, the diagnosis was autoimmune disease. Oh Boy. Let’s just say that the surgery, biopsies, exams and drug prices wiped me out. While all of this may seem somewhat grim– I’ve never seen Maxine look better! She’s trimmed down, her coat is thick and full, her eyes are happy, she’s more engaged– she’s bright and alert all over. Heck- maybe I should start taking those drugs too, ha! That said I feel lucky that my little old cabin is paid off (thanks Mom!) and that I can afford the vet bills even if it means that- YES! We all enjoyed our stay at home budget summer! Oh- and Billy Zoom is such a good boy. Can you believe it’s October? Yep. It’s Apple Time. Lots of folks come up this way to get fresh apples, go to festivals, drive through the leaf colored landscape and dream about moving here. Doesn’t everyone do that while on vacation? Hunting season is again upon us. Generally Maxine & Billy are not allowed out on their own starting with bow season in September through gun season ending in January. Walleye! It’s What’s for Dinner! Outdoor Adventure Editor Greg Dunn Hits Lake Blue Ridge Armed with a Watermelon Colored Plastic Worm
T
The weather here in the Blue Ridge has been incredible. Crisp mornings, bluebird skies, and beautiful fall colors really make you want to get out and do whatever it is you like to do. Having plenty of work to keep me busy through the weekend, I had to make the tough decision to take a break from work. As luck would have it, I got a call from my buddy Destin LeSesne (AKA Bass Pro) inviting me out for a couple hours of fishing. How could I say no? Free afternoon, plenty of sunshine and a Ranger Bass Boat– I really can’t think of a better way to spend a Saturday with the guys. Lake Blue Ridge is not the easiest lake to fish. Its deep, clear waters and lack of shallow structure requires some know-how to be successful. Know-how coupled with the right equipment is even better. Water temperatures are lower which tends to make bass less active. Instead of looking for shady cover, they’re often found near rocky banks with lots of sunshine. We headed out toward the middle of the lake looking for secondary points that were in the sun. I decided to fish a Texas-rigged, watermelon-colored plastic worm, while Destin decided to try a crank bait. As usual, ole Bass-Pro yanks in the first of many Spotted Bass. A few minutes later, Bang! Another one a couple minutes later, Smack! What gives? Not a single strike for yours truly. Oh well, I really didn’t care. More than anything, it was just good to be out there. After a couple more Spots Destin hooks into something big. Pretty convinced he was fighting a good size Bass, Destin brings the fish up to the boat. I grabbed the net, scooped it up, revealing a nice sized Walleye! Sweet! I have tried to catch Walleye ever since I moved here and have only caught two, so this was a treat to say the least. These northern freshwater members of the Perch family (not Pike or Pickerel) have lived in Lake Blue Ridge for years due to its depth and

cooler temperatures. It’s a great habitat for these toothy predators but catching them is rare. This is partially due to the fact that most sport fishermen in the area are focused on Bass fishing but it also has to do with the behavior patterns of the fish. Certain times of the year like late spring, Walleye migrate toward the headwaters of the lake to feed and spawn. I’ve talked to a few locals that claim to have had success around spawning time, but the rest of the year they have little luck. Walleye prefer cold deep water most of the year and travel close to the bottom feeding on smaller fish. What makes them more elusive is the fact that they can cover lots of ground in a day. Scientists who study Walleye in the Great Lakes Region have recorded them traveling up to 15 miles a day. So if a fish is constantly on the move in deep dark water– then it’s probably going to be harder to catch.

Aside from the fact that the Walleye is just a cool fish, it’s apparently the best tasting of all freshwater fish. I’ve heard this my whole life but have never had a chance to taste one– that is– until yesterday. With four good-sized fish in the Livewell, it was time to head in. I released the three Bass and kept the Walleye. Since it’s just Carrie and myself for dinner, there was no reason to take more fish than we needed. Having never cleaned a Walleye, I did some research and found that most people fillet and deep-fry their fish. Lacking a great fillet knife, I decided to clean it like a trout. Adding butter, salt, pepper and a little cornmeal, Carrie baked it at 375 degrees in an iron skillet for about 1520 minutes. Superb! That was hands down, the best fish I have ever eaten. I’m definitely going to have to find way to be more proficient at catching these elusive fish. I’m hooked! Bass-Pro Destin LeSesne runs a guide service out of Lake Blue Ridge Marina. I fish with him quite a bit and rarely go home empty handed. He knows this lake as well as, or better than anyone around, so if you want to “catch” and not just fish, look him up. ACLM

Seiridium Canker of Leyland Cypress Landscape & Garden Editor Kevin Johnson Talks About Diagnosing and Treating one of Our Landscape Favorites
I
Leyland Cypress, x Cupressocyparis leylandii, is a very common and popular landscape tree used throughout the Appalachian area. This coniferous evergreen is often used for screens and hedges due to its fast growing nature. Leyands can easily grow 4-5 feet in a year. They have been relatively easy to care for with little to no disease problems except maybe the rare bagworm infestation. Things have certainly changed. We receive as many calls from folks concerned about Leyland Cypress as we do for Hemlock Woolly Adelgid. As the Leyland Cypress is commonly found in our landscapes, it’s important to understand what’s happening to them. Several years ago I attended an industry conference. During one of the seminars the speaker from U.G.A covered Seiridium Canker of Leyland Cypress. This was the first time I heard of this disease. Over the next few months I started paying attention to Leyland Cypress and things became very apparent. A tree that was virtually maintenance free was in trouble. Seiridium Canker is possibly the most damaging disease affecting Leylands damaging small newly planted specimens and large mature trees alike. Cankers, which appear as sunken darkish brown or purplish patches on the bark, form on stems and branches causing dieback. Often homeowners mistake the cankers for bark boring insects, sadly, this is hardly ever the case. Dead branches turn brown and disease spores rapidly spread to uninfected parts of the Cypress or to uninfected trees by rainwater and irrigation. Seiridium Canker can also be spread through pruning. Currently there are no chemical control measures to treat Seiridium Canker so spraying fungicides on infected trees simply doesn’t work. We do recommend pruning out infected limbs, although pruning is sometimes impossible on very large/tall Leylands. As always, be sure to sterilize your loppers or pruning tools between cuts using a 1 to 9 bleach – water solution. For new landscapes, providing proper spacing between trees will allow for air flow, reducing the risk of the pathogen spreading from tree OCTOBER/NOVEMBER 2018
Leyland cypress (x Cupressocyparis leylandii) is a graceful, rapidly growing evergreen tree that is adapted for growth within the 6-10a USDA hardiness zones. The tree will ultimately attain a majestic height of up to 40 feet.
Planting too close together and in poorly drained soils, Leyland cypress is prone to root rot and several damaging canker diseases, especially during periods of prolonged drought. Disease management is a consideration for Leyland cypress.

The good news is I’ve seen very mature Leyland’s develop Seiridium Canker and continue to survive. There are also several other cankers and root rot issues affecting the Leyland Cypress that may present to the homeowner as Seiridium Canker. Dawsonville’s Around Back at Rocky’s Place Gallery Celebrates 17 Years of Awesome Folk Art

It all started with a single face jug! The owners of Around Back at Rocky’s Place, Tracey Burnette and Robin Blan, became collectors nearly 30 years ago. What started out as a face jug obsession quickly lead to an obsession with other pottery forms, and then spread to paintings, woodcarvings, metal pieces, and so forth. With such a wide collection, Robin and Tracey were asked to be pickers for a couple of galleries in the Atlanta area. Then, collecting reached a new high when they discovered the work of John “Cornbread” Anderson. The folk art train doesn’t end there, but speeds up at a breakneck pace when the two established Around Back at Rocky’s Place in 2002. The gallery was born out of a dream and found its way to the backyard lawn mower shed. Repurposed as a gallery, this shed housed the work of 24 artists at its inception, with Cornbread being the mainstay. The growing list of artists necessitated the need for a much larger gallery space which is adjacent to the original space. Although one can easily see the works of 300+ artists to date, it remains Cornbread who commands the most hanging space. The gallery prides itself on its quality of work. Some of what you will find on a visit to the physical gallery or the online website include pottery from the leading folk pottery families in the Southeast, most notably, the Meaders. You will find work by the grandfathers of folk art, R.A. Miller, Howard Finster, Mose Tolliver, and Jimmy Lee Sudduth. A large majority of the gallery’s artists, from all mediums, have works in the Smithsonian and other major museums and collections around the world. Not only will you see work from these masters, but also from new, emerging artists, and everyone in between. The gallery is not just a place to visit, view, and buy cool artwork, but also a source for

education. Over the years, Rocky’s Place has hosted art classes with her actual folk artists as teachers and guides for both children and adults. The gallery has also exhibited and/or shown in art centers around the area, Bowen Center for the Arts, Quinlan Art Center, Atlanta History Center, Roy C. Moore Art Gallery at the University of North Georgia, Mason-Scharfenstein Museum of Art at Piedmont College, to name a few. Aside from showing at the once annual Folk Fest in Atlanta, the gallery has also shown at other festivals, and at home. In the past, Rocky’s Place has produced the “Saints and Haints” show, “Get Green Art” show, and the “Folk Art Family Reunion.” That is but a brief history in Around Back at Rocky’s Place’s 16-year run. As they begin their 17th year in October, it is anybody’s wonder what will be in store. We know lots of awesome artwork is in the future. Creative Lighting in Interior Design Style & Design Editor Cindy Trimble Addresses the Tricky Job of Lighting Our Rustic Mountain Log Homes.
L
Lighting design is the one element of interior design that can make or break a beautifully designed interior space. Lighting provides so much more than a simple glow. Subliminally, lighting impacts how we feel and impacts our emotions, our comfort level and our ability to do tasks. Of all elements to be incorporated into a design, lighting is the most important. Lighting is not something to think about as finishes are being installed. Nor is it simply picking out the fixtures at a local lighting store. Lighting design starts early in the design process. Good lighting results from a well thought out process that includes spatial function analysis, determination of types of lighting needed for each area, layout and detailing of the lighting plan and finally, selection of fixtures and bulbs. There are three distinct lighting types involved in lighting design. First is ambient or general illumination. This is the large overhead chandelier that adds a glow or “ambience” to a room. The second is task lighting that is for lighting a specific task area such as a reading lamp. And the third is accent lighting which illuminates artwork or special architectural features. Within these three types of lighting, there are many design directions you can take within the layout of fixture(s) and fixture selection. Creative lighting not only provides light, but can add decorative elements to empty space and create the personality of a space. Highly decorative fixtures such as the twig and vine chandeliers in Chester’s animate large spatial voids in rooms but they only provide a soft glow to the space, not enough light to read a menu from. A common mistake is when chandeliers are installed over dining tables with the light sources pointing up preventing adequate light from reaching the table. In this situation, then secondary lighting called task lighting should be added. Recessed or surface mounted mini spots over dining tables on either side of chandeliers to OCTOBER/NOVEMBER 2018
blast the table top with light will work. Mountain homes with wood interiors that are brown or gray have to have a lot of light. Great rooms with intricate ceilings and beams are too often lit incorrectly. Recessed spot lights on high sloped ceilings create a terrible glare and leave the beautiful wood ceilings in the dark. Light from the recessed downlights in tall vaulted spaces dissipates before reaching the floor area. These ceilings should be illuminated with up lights from spots that accent the ceilings then add task lighting throughout such as table lamps add blasts of light where you need it. Chester’s has spot lights strategically placed throughout to illuminate all the art and architectural features. If focal points are scattered throughout a space and illuminated properly then your eye is excited and wanders around the room making the space more interesting. At Chester’s we hid spot lights in the beams to illuminate the artwork, bar top and the back bar. These spots also crisscross over the beams giving lots of dramatic light and shadow. The back feature wall is illuminated by high wattage spots

The story of Treo begins with owners Debbie and Carolyn Harbin: two sisters with distinct personalities and passions. While many successful restaurant owners have years of experience in the service industry that they can fall back on when opening a new restaurant, Debbie and Carolyn were armed only with a love of wine, a love of Blue Ridge and a desire to serve sophisticated food in an area where they owned a second home. Both sisters come from interesting spaces in the business world: Debbie from a 24-year career in the banking industry and Carolyn from an IT background. Which is why, as Debbie says, they have had to overcome many challenges in opening Treo, from updating and re-branding the restaurant to actually learning the restaurant business. There was also the task of addressing plumbing and electrical issues, which they stumbled upon in their effort to open the restaurant. After a career in log homes that goes back 44 years (so far!), I find myself reflecting back a lot and considering more and more the things that really matter. Faith, family, friendships, integrity, patriotism, obligations. These are on my short list. Like most folks, I hope to leave a family (and a family business) well grounded in the things that matter. As a grandfather, it is a fervent desire that these grandkids grow up with pride instead of shame in their family and their family business. A family business like ours expands our family, not by blood, but by relationships. We share each other’s joys, births, birthdays, graduations, and all the happy milestones. We also share the sad times with each other. Customers become close friends and so the family grows. Our business and family began back in the mid-seventies. The smartest thing I ever did was marrying my first secretary, Travonda. Maybe the second smartest was to stay with my instincts about our fledgling log home company. We began by using dry logs to build log homes because it made sense then. It has continued to make sense for all these four plus decades. We are a major producer of house logs and lumber products from dead-standing timber, timber killed from bark beetle epidemics in high elevations of the Rocky Mountains. Because of economies of scale, lighter shipping weights, and our business philosophy, we can ship across the entire country and still be extremely price competitive with the rest of the log home and lumber industry. Satterwhite Log Homes is the most radical company in our industry when it comes to moisture content. At our mill in Utah, every log destined to become part of a log wall is oriented through the mill top first. We do this so that the wettest end, the butt, is always on the same end through the entire process. That way the moisture testing station always checks the wettest end of each piece. And every timber sawed is tested, not every other, not a random sample. Every piece is moisture tested. And if it is OCTOBER/NOVEMBER 2018
too high, it is sent back through the mill to be sawn into 1, 2, or 3” thick lumber so that it will never have a chance to be a house log. What difference does that make to a homeowner or builder in the Blue Ridge Mountains? It means our logs move less and are more stable in your log home, when it’s built and for the future of the families that live in it. Something we are very proud of is that, because of our dry logs and house our houses go together, we have never yet had one of our homes blown down or the log walls pulled apart by tornado or hurricanes. Consider that most of our homes are in “tornado alley,” (Texas, Oklahoma, Arkansas, Kansas & Missouri), and have survived up to F5 storms, so you can rest easy that they are solid and strong. Back in the eighties I traveled the southeast frequently calling on builders and other log home companies we sold logs and lumber to, and I fell in love with North Georgia and the entire southern Appalachian region. I wondered many times how my family could leave Pine Mountain Georgia in 1856 to go to Texas. Many of my cousins headed back East to fight in the war between the States, going back to their new home of Texas afterward. Our family and family business has been blessed beyond measure for all these years in spite of dumb things I do. I picked the worst possible time to stake our claim in Ellijay in 2006. North Georgia, and Ellijay in particular, was a major hub of log home activity. We never feared competition, rather they feared us, and we were itching to compete when we came. We just didn’t know the boom was about to bust when we opened our new facility in April ‘08! Timing could not have been worse yet many in our business said we had built the best, most beautiful office and model east of the Mississippi. Through hardheaded determination we held on through some tough times, times, that sank most of our competition. Without our dedicated staff headed by Don Estes and Ron Lomonaco, we couldn’t have survived. When the market turned, repos sold, and folks started building again,

we were ready! Having experienced bad times, our company family has been humbled, and appreciates our customers more than we ever have. That humbling has made me a better person. Don Estes, was taken by cancer. We have missed him tremendously, but Ron Lomonaco stepped up and is doing an exemplary job running “Satterwhite East”. Ron was an outstanding young man when we first ran into him, a friendly, happy young builder who was drawn to our log homes. His first assignment was to go (at age 22!) to New Zealand to train “Kiwis” to build our log homes. Afterwards, Ron came to our sales team and what better person to guide you through the building process than one who knows the project and process from the ground up? Ron and his sweet wife Britney and new son, Logan, are Ellijay natives who know the area well. Their roots run deep. To round out our Georgia family, Cindy Key, our office manager, will meet you in our Ellijay office. Cindy is a friendly, helpful, professional, and her winning smile will put you at east as soon as you come through the door. Whether it’s

Chris and his wife, Keshia, just recently welcomed a new baby girl, Landree, to their family. Apples. Cheese. Yum. We certainly are lucky to live here in north Georgia this time of year where there are more varieties of apples grown than you can count– including rare, heirloom varieties that are on a welcome rebound. Autumn is also a great season for cheese: aged wheels made with the sweet, grassy milk of summertime are just now coming into their own. Here at Appalachian Country Living magazine, we’re big fans of pairing cheese with apples (and apple cider), so as the weather gets crisp, it's time to get creative with some of our local artists and get cooking!
Apple Walnut Gorgonzola Turnovers
For breakfast or dessert, these fabulous turnovers are sure to be a big hit. Ingredients 1 1/2 cups peeled, cored, chopped apples (use a good cooking apple such as Jonagold, Pippin, Granny Smith, Jonathan, Golden Delicious, Gravenstein, Macintosh) 1/2 cup chopped walnuts 1/4 cup crumbled Gorgonzola cheese 2 teaspoons chopped fresh thyme leaves (or 1/2 teaspoon dried thyme, crumbled) 2 Tbsp honey 2 7-ounce prepared puff pastry sheets (total 14 ounces) 1 egg, beaten Preparation Microwave chopped apples for two minutes on high just to remove a bit of the excess water.

Once cooled, combine apples with walnuts, Gorgonzola, thyme and honey. Roll out the puff pastry - it will be in three long sections. Make 9 equal squares and brush the edges with the egg. Put a dollop of the apple mixture in the middle of each pastry square and fold over to make a triangle. Use a fork to crimp the edges. Brush egg over top of each pastry. Bake for 15-20 minutes at 400 until they are puffed up nicely and golden brown. Cool for 15 minutes and serve. These pastries freeze very well. No time like the fall to enjoy some hot apple cider out on the deck, especially when served in a beautiful Neriage mug by Sheryl Holstein
Apple Mac And Cheese
In a large saucepan, melt 1 tablespoon of butter. Add the apples and sauté until they’re just beginning to become tender (4 to 5 minutes). Remove from pan and set aside.
Ingredients 12 ounces Penne pasta 15 ounces apple (10 ounces diced and 5 ounces grated), Fuji, Braeburn, or Granny Smith 2 1/2 cups milk 1/2 cup apple cider 3 tablespoons unsalted butter, plus 1 tablespoon 1 1/4 ounces (by weight) all-purpose flour 1/2 teaspoon freshly grated nutmeg 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 6 ounces Cheddar cheese, grated 3 ounces Gorgonzola cheese, grated 1 ounce Parmesan cheese, grated
In a separate saucepan, heat the milk and apple cider just until boiling, remove from heat, and set aside.
This recipe by Alton Brown first appeared in MacWorld magazine in 2004 as part of a year long celebration of "the other" Apple.
Preparation Preheat oven to 350 degrees. Bring 4 quarts of salted water to a boil over high heat, add pasta, and cook until al-dente. Drain, rinse, and set aside. OCTOBER/NOVEMBER 2018
In the pan you used for the apples, melt the remaining butter over low heat. Add the flour and whisk for 5 minutes. Add the milk gradually and whisk to ensure that there are no lumps. Add the nutmeg, salt, and pepper, and whisk until the mixture begins to thicken slightly. Gradually add the Cheddar and Gorgonzola cheese and stir to combine. Stir in the apples and penne pasta. Transfer to a buttered 13-by-9-inch glass baking dish and sprinkle the Parmesan cheese on top. Bake for 20 minutes or until bubbling. If the dish isn’t brown on top, turn on the broiler and brown for 2 to 3

Apple [and whatever] Grilled Cheese
There really is no way to go wrong with this simple twist on a fall favorite. Use any bread, any cheese and any add-ins. If you’re winging it on your own for lunch, use what’s on hand. If you’re making a special meal, dress it up with your favorites. Here, I’ve made two variations, both served with a cup of apple curry soup. Ingredients for One Basic Sandwich 2 Slices of rustic bread 2 oz sliced or shredded cheese ¼ - ½ apple thinly sliced 2 tbps butter Preparation Sauté apple slices in butter until slightly soft, remove from pan. Place bread in same buttered pan and layer with cheese and apple slices. Grill sandwiches until lightly crisped and golden brown on each side. Serve immediately. Variation No.1 Pumpernickel bread Extra sharp cheddar cheese OCTOBER/NOVEMBER 2018
1/8 teaspoon salt Dash cayenne pepper Dash ground cloves 3 medium McIntosh Apples, peeled and sliced 3 cups chicken or vegetable broth 1-1/2 teaspoons lemon juice

Ingredients 1 medium onion, chopped 2 tablespoons butter 1 teaspoon curry powder 1/4 teaspoon ground cinnamon

Preparation In a small saucepan, sauté onion in butter until tender. Add the curry, cinnamon, salt, cayenne and cloves; cook and stir for 1 minute. Add apples and broth; bring to a boil. Reduce heat; cover and simmer for 5-7 minutes or until apples are tender. In a blender, puree soup until smooth. Return to the pan. Stir in lemon juice & heat through. Who is Christian Priber?
C
Christian Gottlieb Priber 1697-1744 is said to have been a German immigrant to the British Colonies, Georgia Territory in particular. Apparently, he was too liberal for his home country and was determined to develop a Utopian Commonwealth among the Native Americans in the Southern states. He supposedly had a legal degree, although many contend he had never completed it. History says Priber came from Zittau Germany and if you look that information up, you’ll find he has an artist community and museum named for him. He wrote his dissertation concerning the Roman Law and Germany’s ignorance to this information. He ventured to America about 1735 and began immediately living with the Cherokee. It wasn’t long before they began calling him a “beloved man” of the tribe. He sought out the Cherokee because he felt they were the ideal people to help him realize dream of a Utopia. Several writers said he was a missionary, some wrote he was a Jesuit priest; however history states he was Presbyterian, a legalist, and trader. Several historical authors contended he was a French Jesuit missionary. Priber liked the idea that the Cherokee held all their lands in common and that they provided sanctuary for runaway slaves. This premise found no favor with the British and he found himself needing to surrender to the government in 1739. It took until 1743 to capture him on his way to New Orleans to free a slave.
