Can you believe we had the most spectacular fall colors this year? At least that’s what everyone said. To me every fall has awesome colors– maybe that’s because I spend so much time in my mountain forest. While others do time on a mat, my meditation takes place on daily morning and evening dog walks. Thoreau claimed that he could not “preserve his health and spirits unless he spent at least four hours a day sauntering through woods and over hills and fields absolutely free from worldly engagements.” However, Thoreau had his Mum and sisters to cook and do his laundry, therefore a 4-hour stroll was made possible. I’m lucky to get in a one-hour meditation/dog walk once a day. Nonetheless, for me the changing of seasons is more gradual, natural and absorbing rather than suddenly stunning and beautiful every year. The coming Holidays have a different feel this year as I look ahead to the second time around without my Mom and her Chesapeake Bay Retriever, Natalie. Last year was simply a “getting through,” this year comes a reckoning. I suspect my woodland dog walks will be longer and more frequent. Heck, Maxine and Billy Zoom will be down for that I’m sure, so maybe there’s a good side after all. And yes, the dogs are doing great! Little old man Billy Zoom is always a happy fella. Although he takes longer to wake up and goes to bed earlier, he’s enjoying a life he’d never dreamed as my favorite little ole’ man. This issue started as a bit of a conundrum for me as I tried to pair Winter Holidays in the Mountains with planning an exquisite wedding or event. Turns out they compliment each other nicely. Did you know an increasing number of engagements and wedding planning events happen over the Holidays? I am pleased to welcome Hector Rosano and Gerard Monte back to Appalachian Country Living Magazine! The Dynamic Duo will now bring their expertise to The Mountains of Big Canoe with Rosano as Executive Chef and Monte as Director of Events and Catering. How the Deer Won His Antlers AND OTHER NATIVE AMERICAN CHEROKEE LEGENDS PASSED DOWN THROUGH TIME
The Little Deer, Awi Usdi
Back when the world was young, the humans and the animal people could speak to each other. At first they lived in peace. The humans hunted the animals only when they needed food or skins to make clothing. Then the humans discovered the bow and arrow. With this weapon they could kill many animals quickly and with great ease. They began to kill animals when they did not need them for food or clothing. It seemed as if all the animals in the world would soon be exterminated. So the various animals met in council. When the bears came together and talked about what the humans were doing, they decided they would have to fight back. “How can we do that?” said one of the bear warriors. “The humans 8
will shoot us with their arrows before we come close to them.” Old Bear, their chief, agreed. “That is true. We must learn how to use the same weapons they use.” Then the bears made a very strong bow and fashioned arrows for it. But whenever they tried to use the bow, their long claws got in the way. “I will cut off my claws,” said one of the bear warriors. He did so and then he was able to use the bow and arrow. His aim was good and he hit the mark every time. “That is good,” said Old Bear. “Now can you climb this tree?” The bear without claws tried to climb the tree, but he failed. Old Bear shook his head. “This will not do. Without our claws we cannot climb trees. Without our claws we will not be able to hunt or

dig for food. We must give up this idea of using the same weapons the humans use.” So the bears gave up their idea of fighting back against the humans with weapons. One by one each of the animal groups met. One by one they came to no conclusion. It seemed there was no way to fight back. But the last group to meet was the deer. Awi Usdi, Little Deer, was their leader. When all were gathered together, he spoke. “I see what we must do,” he said. “’We cannot stop the humans from hunting animals. That is the way it was meant to be. However, the humans are not doing things in the right way. If they do not respect us and hunt us only when there is real need, they may kill us all. I shall go now and tell the hunters what they must do. Whenever they wish to kill a deer, they must prepare in a ceremonial way. They must ask me for permission to kill one of us. Then, after they kill a deer, they must show respect to its spirit and ask for pardon. If the hunters do not do this, then I shall track them down. With my magic I will make their limbs crippled. Then they will no longer be able to walk or shoot a bow and arrow.” Then Awi Usdi, Little Deer, did as he said. He went at night and whispered into the ears of the hunters, telling them what they must do. The next morning, when they awoke, some of the hunters thought they had been dreaming and they were not sure that the dream was a true one.
How The Deer Got His Horns
In the beginning the Deer had no horns, but his head was smooth just
like a doe’s. He was a great runner and the Rabbit was a great jumper, and the animals were all curious to know which could go farther in the same time. They talked about it a good deal, and at last arranged a match between the two, and made a nice large pair of antlers for a prize to the winner. They were to start together from one side of a thicket and go through it, then turn and come
back, and the one who came out first was to get the horns. On the day fixed all the animals were there, with the antlers put down on the ground at the edge of the thicket to mark the starting point. While everybody was admiring the horns the Rabbit said: “I don’t know this part of the country; I want to take a look through the bushes where I am to run.” They thought that all right, so the Rabbit went into the thicket, but he was gone so long that at last the animals suspected he must be up to one of his tricks. They sent a messenger to look for him, and away in the middle of the thicket he found the Rabbit gnawing down the bushes and pulling them away until he had a road cleared nearly to the other side. The messenger turned around quietly and came back and told the other animals. When the Rabbit came out at last they accused him of cheating, but he denied it until they went into the thicket

and found the cleared road. They agreed that such a trickster had no right to enter the race at all, so they gave the horns to the Deer, who was admitted to be the best runner, and he has worn them ever since. They told the Rabbit that as he was so fond of cutting down bushes he might do that for a living hereafter, and so he does to this day.
Why The Deer’s Teeth Are Blunt
The Rabbit felt sore because the Deer had won the horns, and resolved to get even. One day soon after the race he stretched a large grapevine across the trail and gnawed it nearly in two in the middle. Then he went back a piece, took a good run, and jumped up at the vine. He kept on running and jumping up at the vine until the Deer came along and asked him what he was doing? “Don’t you see?” says the Rabbit. “I’m so strong that I can bite through
that grapevine at one jump.” The Deer could hardly believe this, and wanted to see it done.. So the Rabbit ran back, made a tremendous spring, and bit through the vine where he had gnawed it before. The Deer, when he saw that, said, “Well, I can do it if you can.” So the Rabbit stretched a larger grapevine across the trail, but without gnawing it in the middle.
Deer ran back as he had seen the Rabbit do, made a spring, and struck the grapevine right in the center, but it only flew back and threw him over on his head. He tried again and again, until he was all bruised and bleeding. “Let me see your teeth,” at last said the Rabbit. When it comes to planning a wedding, Rosano first reminds a couple of the need to plan the reception by setting the mood with the menu. The Holiday Season is all about spending time with family and friends, sharing special moments, and enjoying good food and drink. Here are a few ideas that will add a touch of Jolly to your Holly.
Holiday Angel Bars
We hope you enjoy our take on the classic recipe from “Joy of Cooking” and make it your new favorite holiday cookie bar! Have all ingredients at room temperature, 68˚ to 70˚F. Position a rack in the center of the oven. Preheat the oven to 350˚F. Line an 11x7-inch baking pan with greased aluminum foil, allowing it to overhang the 2 narrow ends of the pan by about 2 inches. Beat on medium speed until very fluffy and well blended: 4 tablespoons (1/2 stick) unsalted butter, softened 1 large egg yolk Stir in, then knead until well blended and smooth: 3/4 cup all-purpose flour Pinch of salt Firmly press the dough into the pan to form a smooth, even layer. Bake for 10 minutes; set aside to cool slightly.

Beat on medium speed until well combined: 2 large eggs 1 1/2 cups brown sugar 2 tablespoons flour 1/2 teaspoons baking powder 1/2 teaspoon salt 1 teaspoon vanilla Stir in: 1/2 cup grated coconut 1 cup chopped pecans Spread the mixture evenly over the baked layer. Bake until the top is firm and golden brown and a toothpick inserted in the center comes out slightly wet, 20 to 25 minutes. Remove the pan to a rack to cool slightly. While the bar is still warm, stir together icing: 2 tablespoons unsalted butter, softened 2/3 cup powdered sugar 2 teaspoons lemon juice Spread the icing evenly over the top. Let stand until completely cool and the icing is set. Using the overhanging foil as handles, lift the bar to a cutting board. Carefully peel of the foil. Cut into bars. WWW.ACLIVINGMAGAZINE.COM

Why would you buy store-bought eggnog when you can make this simple recipe at home? 4 eggs* 1/3 cup sugar 1 pint whole milk 1 cup heavy cream 3 ounces bourbon, rum or brandy** 1 cup whipped cream 1 cup vanilla ice cream Cinamon, nutmeg and cloves to taste In large bowl, beat the eggs on high until they lighten in color. Gradually add the 1/3 cup sugar and liquor. Continue to beat on high until the sugar is completely dissolved. Here the liquor and sugar are meant to “cook� the eggs. Add the milk, cream, and nutmeg. Beat on low to combine.

2oz Pinnacle Peppermint Bark vodka 1 1/2 Oz Tres Leches 1/4 Oz Dekuyper Creme de Cocoa dark liqueur. Rim the martini glass with crushed white chocolate and peppermint pieces. Chill in freezer. Fill a cocktail shaker with ice. Add drink ingredients, shake and pour into rimmed martini glass. Serve this fabulously decadent drink with a peppermint stick and a sprig of fresh mint.
The Grinch Martini 2 ½ Oz Melon Liquer 1 ½ Oz Vodka 1 Oz Fresh Lemon Juice
Rim glass with green or red colored sugar and chill in freezer. Fill cocktail shaker with ice. Add drink ingredients, shake and pour into rimmed martini glass. Add a Maraschino cherry or candy cane and serve with a happy Grinch smile.
Blue Mule Cocktail
½ oz Fresh Lime Juice 2 oz Vodka 1 oz Blue Curaçao 3 oz Ginger Beer Crushed Ice • 8 Blueberries (dusted with sugar) 1 Lime Slice 1 Rosemary Sprig Optional Candy Cane Pour the fresh lime juice into a copper mug (a glass mug may be substituted). Add Vodka and Blue Curaçao. Pour in ginger beer. Add crushed ice. Top with sugar-dusted blueberries Garnish with lime, rosemary, candy ca.

Glühwein, roughly translated as "glow-wine," from the hot irons once used for mulling, is popular in German-speaking countries and in the region of Alsace in France. It’s a traditional beverage that is offered during the Christmas holidays. The oldest documented Glühwein, circa 1420, is attributed to Count John IV of Katzenelnbogen, a German nobleman who was the first grower of Riesling grapes. Usually prepared from red wine, Glühwein is heated and spiced with cinnamon sticks, cloves, citrus, sugar and at times vanilla pods. It is sometimes drunk “mit Schuss,” with a shot, which means that rum or some other liquor has been added. Fruit wines, such as blueberry wine or cherry wine, are occasionally used instead of grape wine in some parts of Germany. Ingredients 1 Bottle of Red Wine 1/8 Liter water 50 grams sugar (approx 2oz) 1/4 stick cinnamon 3 cloves Peelings of half a lemon or two lemon slices Preparation Bring the sugar, spices and water to a boil. Then let this mixture steer for 30 minutes. Mix in the red wine and carefully reheat to just under the boiling point. Garnish with lemon slice or clove spiked orange wedges and cinnamon sticks. Serve warm. And enjoy the Holiday Season!

to think about Christmas. We’ve all heard the legend about Santa flying around the world to deliver toys in his sleigh pulled by eight reindeer, but they weren’t always part of the Christmas celebrations.
Different Ways to Travel
As Christmas legends go, the story of the sleigh with Santa’s reindeer is very new. For many centuries there have been stories about a kind old man delivering gifts to children all over the world, whether he’s known as St. Nicholas, Sinterklaas, Father Christmas, Santa or any of his other aliases. Stories of the mysterious and generous old fellow have been around since the fourth century. But it wasn’t until the 19th century that the eight famous reindeer entered the Christmas scene. Prior to that, Santa traveled on a white horse in Europe and a donkey in South America. It is believed that Dasher, Dancer, Prancer, Vixen, Comet, Cupid, Donner and Blitzer first 30

appeared in 1823, in the poem “A Visit From St. Nicholas,” commonly known as “The Night Before Christmas,” by Clement C. Moore. It didn’t take long for them to become an essential part of holiday lore. It soon became common for artists to depict Santa with reindeer. Santa’s sleigh full of toys being pulled across the sky by the team of reindeer has become an iconic holiday image.
Santa’s Newest Friend
But what of Rudolph, the most famous reindeer of all? Rudolph, the red-nosed reindeer, was created in 1939 by Robert May, an employee of Montgomery Ward. The department store wanted to create a free giveaway book for children as a promotion. May wrote the story in rhyme for the book, which was a big hit with Montgomery Ward’s customers. By the late 1940s, approximately six million copies of the book had been distributed. May’s words were set to music in 1947. “Rudolph the Red-Nosed Reindeer” was recorded by Gene Autry and became a huge hit, cementing Rudolph’s place in Christmas history. New tales and stories of Santa’s reindeer sleigh-pulling team continue to make their way into popular culture in the form of books, movies and television shows, showing us that the legend of Santa’s famous reindeer is here to stay.
