Rain! Rain! Rain! Hot! Hot! Hot! Geez, it feels like I live in a rain forest! While my heavy tree cover helps with the high temps it also tends to hold the moisture in as well. For days my deck was a slippery sea of green slime, now we’re baking in heat bordering on a drought. Climate change much? Luckily the nights have been cool so that I can leave my windows open and hear the summer night songs of tree frogs and every single insect from here to Florida. Peace. Due to this heat, hiking with the dogs happens EARLY. I have to admit that there have been a few hot & lazy Dogs like waterfalls, too. The three afternoons when Maxine, Billy and amigos at Benton Falls. Left to right: myself took to napping in front of the Rosie & Cricket Baumgartner– and fan with a good book. I think this just you know the one with the big goofy smile– Maxine!! might be the definition of “summer” in Billy was home napping :) the mountains. You can also cool off out of doors enjoying our many rivers, creeks, streams and lakes– tubing, rafting, boating, and swimming– all within easy reach to locals and visitors alike. Get out early, hike to the perfect waterfall and spend the day! For those looking to relocate to the area, Old Toccoa Farm offers great “Stay & Play” packages for you to take your time and explore our little corner of the universe. Colonel Poole knows about Barbecue and Quite a few Other Things to Boot! Make a Hot Day Cool Outdoor Adventure Editor Greg Dunn Gives us the Scoop On a Few of the Area’s Wonderful Waterfalls

W

What a better way to spend a hot summer day than hiking under the canopy of lush green trees to a have a picnic at the foot of a waterfall? Beautiful summer foliage and mountainous terrain provide the backdrop to explore the gorgeous north Georgia waterfalls for the casual day-tripper or for the avid hiker. The most accessible waterfall in the area is also the most superlative. Amicalola Falls State Park boasts the tallest cascading waterfall east of the Mississippi River. At 729 feet, Amicalola Falls is a must see for all waterfall explorers. These falls are stroller/ wheelchair accessible, yet adventure stems from this park to satisfy even the most wild at heart, as the Appalachian Trail approach begins here and can be followed from the north Georgia mountains all the way to the heart of Maine. Be sure and stop by the visitor’s center to see the equipment used by Gene Espy, the second person to thru hike the entire Appalachian Trail. Some may want to take the five-mile hike to the back-country Len Foote Hike Inn (open all year, reservations required) to get away from it all. Yet everyone will want to visit the beautiful Amicalola Falls Lodge with its panoramic view of the mountains, lovely accommodations and tasty buffet restaurant. However it’s the Amicalola waterfall that is the crowning jewel. Long Creek Falls Accessing the Three Forks area via Forest Service 58, the vistas of Noontootla Creek beacon you to roll the windows down, slow your pace and take in the splendor. It’s the kind of drive where you’ll be tempted to stick your head out the window and grin ‘till you get bugs in your teeth. It’s that beautiful. Park where the Appalachian Trail and the Benton Makaye Trail cross the road and head north. Just 9/10 of a mile through some of the prettiest hemlock forest that still survives in the Appalachians; take the spur trail to Long Creek Falls at the divergence of the AT and BMT trails. The cool mist and feeling of sanctuary envelops you as you stand at the foot of this broad majestic fall in the company of the towering hemlocks. AUGUST/SEPTEMBER 2018

Fall Branch Falls Near Cherry Log, GA take Rock Creek Road 9/10 of a mile past the abrupt Stanley Gap. Park and walk north up the Benton Makaye Trail 400 yards to Fall Branch Falls. This is a 60-foot fall in multiple drops. Just the drive out Rock Creek Road is delightful—that gorgeous mountain dominating the landscape to your right over the pastures is Cold Mountain in the Rich Mountain Wildlife Management Area. Visitors and locals alike enjoy spending a hot summer day with their toes in the cool mountain waters. Jack’s River Falls Feeling a bit more adventurous? Explore the Cohutta Wilderness Area by hiking the Jacks River Trail via Old Hwy 2 to Forest Service 22 at Dally Gap. This is surely one of the most beautiful mountain stream environments in all of Appalachia. This challenging 15.7-mile trail crosses the river 37 times– the first four crossings from Dally Gap are spectacular. Keep your eyes open for crawdads, salamanders, red tailed hawks, wild boars and black bears; all of these and many more creatures call this remote region home. If you want to set your sights on Jacks River Falls, enter from the north off of Big Frog Road/ Forest Service 62 just over the Tennessee state line. Drop down the Beech Bottom Trail 3.9 miles and hang a right on the Jacks River Trail to the falls. This is a challenging trail into a remote wilderness area. Take all necessary precautions and provisions. Jacks River features multiple falls and a powerful volume of water. Emory Creek Falls Another great water trail is the Emory Creek Trail. Travel Hwy 52 West out of Ellijay, then turn right and follow Conasauga Lake Road to Forest Service 18 to the Holly Creek parking area. It takes about an hour to walk up to the

falls, crossing the creek 12 times. You must cross over Bear and Emory Creeks at their convergence into Holly Creek and follow the trail ever upstream. The reward is great for those who persevere, as there are several falls of note here. The first is 60 feet tall! Get some tips from the local outfitter’s store before heading out on this one, and don’t forget to pack your hammock. There’s a great place to string it up at the base of the second fall. Bring the Essentials We hope these suggestions may be just enough to whet your appetite for exploring north Georgia’s waterfalls. You’ll want to allow plenty of time for driving to any of these destinations, as the journey is so much a part of the fun. If you’re hiking Jacks River or Emory Creek, you’ll need some shoes you can tread through the streams and keep on hiking. Be sure they have sticky tread and toe protection. Trekking poles or at least a sturdy hiking stick are a must for stream crossings. Rain protection, insect/tic repellant, plenty of water and snacks are also in order. A trash bag should be on your list to help keep these areas pristine for us all. And don’t forget to bring your camera to capture a lasting summer memory. Be Aware What Lurks Out There Landscape & Garden Editor Kevin Johnson Gives Us an Overview of What Critters to Avoid this Summer

I

I once had a bad streak that lasted over a decade. Several years in a row I was stung multiple times by Yellow Jackets, especially while I served as Grounds Supervisor at Young Harris College. I remember the fluke year when my bad luck ended– it didn’t last long however– a wasp got me the next year. The goal of this article is to review and consider insects, reptiles and other mammals that pose a threat to humans. Whether we’re working in our gardens or just spending time outside, we need to be aware of dangers that lurk outdoors, and sometimes indoors. I have spent a great deal of time working in the forest treating Hemlock Trees for Woolly Adelgid over the last several years. In that time I’ve encountered poisonous snakes, black bears, feral pigs, coyotes, and a lone Sasquatch. I’m not certain about the Sasquatch– that just may have been a guy who needed to shave and take a shower. I’ve also been bitten multiple times by chiggers, spiders, fire ants and ticks. Thankfully at this point I’ve avoided snake bites. Below is a list of things we all need to be conscious of. *Poisonous Snakes: There are six poisonous snakes in Georgia. The ones we mainly need to be concerned with are rattlesnakes and copper heads. I’ve only seen one rattlesnake in 25 years of living in North Georgia. However I have encountered several Copperheads. Copper Heads tend to be more nocturnal during the summer when it’s cool enough for them to hunt, so it’s important to be careful at all times. *Ticks: Many of us worry about our pets and treat them for fleas and ticks. If we spend time outdoors we need to check ourselves as well. While ticks carry a variety of diseases, if you find a tick on yourself, most likely you will be ok, but it’s a good idea to keep an eye on the bite site and do some research. *Spiders: There are two varieties of poisonous spiders in Georgia. They are Black Widows and Brown Recluse. The bites of these spiders can cause serious problems. I’ve discovered many a Black Widow lurking in the valve boxes of irrigation systems. Fire Ants: Fire Ants are now in every county in Georgia. We can generally identify Fire Ants by the large mounds they build. I once ended up in the emergency room after getting bit multiple times. There are some baits and products that work relatively well. Yellow Jackets, Wasps and Hornets: We’re all familiar with these pesky insects. I encourage folks to keep an eye on their property. You can usually pick up on a steady stream of Yellow Jackets flying in and out of the ground where they typically nest. Chiggers: The bites of these tiny arachnids can cause severe rashes among other problems. Over the counter repellents will help keep them at bay. Mosquitoes: We can’t leave out the mosquito. We were in Jamaica a few years ago and met many people suffering from the Chikungunya virus, which is severe and debilitating. Mosquitoes carry a variety of diseases many of which are becoming more prevalent in the U.S. It’s always wise to take precautions against many of these critters when being outside. Always wear gloves when working in your gardens and flower beds. Try your luck with insect repellents; they are at least a deterrent. For heavy work in the woods we wear snake chaps if we think we might be at risk. Strike boots are another alternative if you have to do work in areas that could harbor Copperheads. In general, most of these critters want to see you even less than you want to see themwell except the Yellow Jackets. Make a lot of

Rooms With A Mountain View Style & Design Editor Cindy Trimble Explores New Window Shades for the Mountain Modern Home

One of the final details added to our projects are window treatments. Whether to add window treatments or not to home with beautiful architecture and spectacular views always creates a debate with our clients. During the daytime, everyone wants to maximize the views that our area is abundant with. But when the night falls, with our wonderful mountain “dark skies”, the vast and expansive windows become “black holes” giving the open modern spaces a cold feeling. Even though everyone knows that on top of a mountain, there is complete privacy outside your windows (unless an unsuspecting drone flies by), there is still an uncomfortable feeling that maybe there is someone out there???? We hear this all the time. And it is always a good idea to have window treatments of some sort on all windows facing streets, or where someone can see in the house when you are not home, simply for security. With large windows that face east or west, without an exterior roof structure that provides sun screening or shading, there is a problem with too much sun during certain times of day. Homeowners need sun screening but again they do not want to block the beautiful views. Harsh sunlight will fade building materials and furnishings and can make it impossible to see TV’s. This is also a concern for the solar gain and heat build-up that comes with harsh sunlight. Even though window treatments are the last element to be installed in our projects, we are thinking window treatments throughout the design and construction process so that we have proper trim to support blinds, electrical where needed to power blinds, depth of window sills to house blinds and enough area on either side of large windows for stacking of drapery. We also try to locate HVAC ducts where they will not interfere with window treatments. Luckily there are a lot of new window treatments that provide window covering that help solve these dilemmas. There are window treatments that AUGUST/SEPTEMBER 2018

New generations of pleated shades provide different levels of opacity for every budget, and fold up to nearly nothing on the top of the window frame. can be activated when needed and closed and minimized when not needed that do not distract from the beautiful architecture or outside view. There are new generations of pleated shades that are made from stiffened fabric that unfold easily to cover windows (and can range from light filtering to blackout) but when raised and put away, they fold up to nearly nothing on the top of the window. They usually are within the frame of the window so there is zero glass covered by them blocking any of the view. There are all sorts of solar shades that are made from a woven fabric that has different levels of opacity, that block the light and UV rays, but still allow you to see through and admire the views. The new materials the manufacturers are using to create the vast array of window treatments are as diverse as the mountain architectural styles are that we are working on. The new mountain home ranges from ultra-rustic with heavy logs or timbers, to traditional with heavy moldings and details to ultra-modern with flat sheetrock walls with wide spans of glass. Cut unpeeled onions in half and place on grill, turning occasionally. Allow to char on outside. Remove and place into a bowl, covered with plastic wrap to steam. Grill skewers until tender, 5-6 minutes total, turning occasionally. Peel and slice onions. Pull zucchini and squash off skewers, toss with onion, season with salt and pepper. Serve. Grilled Zucchini with Lemon Zest Ingredients 6 whole Zucchini (medium Sized) 1/4 cup Olive Oil 1 teaspoon Kosher Salt 1 teaspoon Black Pepper 3 whole Lemons, Zested 1 teaspoon Kosher Salt (additional) Extra Olive Oil For Brushing

There’s nothing better than fresh vegetables right off the grill. Try some of thess variations on a theme with your zucchini and yellow squash or just about any vegetable straight from your garden. BASIC SQUASH PREP Not much to this! Wash & dry squash. Lop off ends and cut ionto spears. Spears work well on the grill, are easier to pick up and look great on any plate. Brush or spray grill with olive oil– or your choice. Heat the grill to medium to medium-low heat. Grill the squash on all three sides until nice and tender, being careful not to burn them. Remove to a plate as it gets done.

Tuscan Grilled Zuccini & Summer Squash Ingredients 2 zucchini, cut into 1 inch cubes 3 summer squash, cut into 1” cubes 2 red onions 5 garlic cloves, minced 4 sprigs rosemary, chopped 1/2 tablespoon crushed red chile flakes 1 sprig oregano, chopped 3 lemons 1/2 cup red wine vinegar 2 cups extra-virgin olive oil To Taste salt & pepper Sturdy skewers, soaked in hot water for an hour if wooden Prepartion Make Marinade: combine garlic, herbs, chile flake, lemon juce and zest,

Preparation Cut zucchini into spears and place them in a very large (or two regular sized) plastic zipper bag. Drizzle in olive oil, salt, pepper, 1 tablespoon lemon zest and the juice of two lemons. Seal the bag(s) and smush them around a bit so that the zucchini is coated. Set aside for 15 to 20 minutes to marinate. Grill the zucchini on all three sides until nice and tender, being careful not to burn them. Remove the zucchini to a plate as it gets done. Pile up the rest of the lemon zest and sprinkle 1 tablespoon kosher salt on top. Use a knife to chop the salt and zest together until it becomes...well, lemon salt! Add more salt if it needs it. Sprinkle the lemon salt over the plate of grilled zucchini and serve.

Grilled Tomatoes

There’s nothing better than vine ripened tomatoes on the grill. Here are a few stuffed grilled tomato recipes to add that twist to an all-time favorite. Best of all, these can be prepared and refrigerated before grilling! BASIC TOMATO PREP Wash tomatoes and cut tops off, or cut in half. Spoon out inside being careful not to go through the outside. Wash out the shells and take the inner core, wash off any seeds. Chop the cores into ¼ inch cubes removing any tough parts. Preheat grill on high, then turn down to medium. Tomatoes cook for about 10 minutes. Note: Carefully remove from grill with spatula ADDING THE TWIST Italian Style Grilled Stuffed Tomatoes Ingredients 2 Large tomatoes ¼ cup Feta cheese ¼ cup grated Parmesan cheese ¼ cup Italian seasoned bread crumbs 1 tbsp parsley Salt, oregano, basil & pepper to taste 1 clove garlic crushed 1tbsp olive oil plus some for brushing Parmesean, bread crumbs abd pareley for topping. Preparation Combine chopped tomato, ¼ cup each of feta, Parmesan and Italian bread crumbs. Add salt, pepper, parsley. oregano, basil and garlic. Mix well. Stuff tomato shells. Mix 1 tablespoon parmesan, bread crumbs and olive oil. Top each stuffed tomato with half of mixture. Brush tomato skin with oil and place over low heat. Cook for about 10 minutes until skin is falling off and top is browning. Twist: Ad 1/4 lb. Pancetta, diced, cooked crisp, drained and cooled.

Grilled Scallop Stuffed Tomatoes This elegant dish is perfect for a special occasion. It looks and tastes sophisticated yet is simple to prepare. Ingredients 8 sea scallops 8 small to medium on-the-vine or garden tomatoes, cored and hollowed 1/4 cup prepared refrigerated pesto 5 tablespoons butter, unsalted 2 tablespoons fresh lemon juice 1 large scallion, finely chopped 1 teaspoon salt /4 teaspoon ground black pepper 1/2 cup fresh bread crumbs 2 tablespoons grated Parmesan cheese 8 large Bibb or Boston lettuce leaves Preparation Light a grill for medium-high heat. Toss the scallops with the pesto, let stand at room temperature 20 minutes.

Melt 3 tablespoons of the butter in a medium skillet over medium heat. Cook until the butter turns a nutty brown color, 3 to 5 minutes, swirling the pan now and then. Remove from the heat and stir in the lemon juice, scallion, salt, and pepper. Brush the butter mixture generously over the inside of the tomatoes. Put bread in food processor and process to crumbs. Add the remaining 2 tbsp of the butter to the skillet over medium heat. Stir in the bread crumbs and cook until toasted golden brown, 3 to 4 minutes, stirring now and then. Remove from the heat and stir in the cheese . Brush the grill grate and coat with cooking spray. Grill the scallops until grill-marked and no longer translucent in the center, 3 to 4 minutes per side (about 120 degrees F internal temperature). AUGUST/SEPTEMBER 2018


Transfer the grilled okra to a serving plate and serve with the chipotle sauce. Okra is best if eaten immediately, while still piping hot from the grill. ADDING THE TWIST Simplicity Sprinkle and toss with your favorite spice or just salt and pepper. Add a squeeze of lemon or lime for brightness. Or pick your Style: Asian – Sprinkle with Shichimi Togarashi and dip in Ponszu Sauce Cajun Style – Sprinkle with Tony Chachere’s Original Creole Seasoning Southwestern – Sprinkle with Mrs Dash’s Southwest Chipotle Seasoning

Stuff a grilled scallop into each seasoned tomato. Pack the bread crumbs on top of the scallops. Grill the stuffed tomatoes directly on the grill grate with the lid down until warm, 1 to 2 minutes. Serve 2 tomatoes per person on a bed of the lettuce leaves. Tip: Ask for “dry” or unsoaked scallops from the seafood counter. Soaked scallops are too wet to develop a crusty brown surface on the grill.

Crispy Grilled Okra

Another abundant summer crop, Okra is often overlooked, although lately the hippest restaurants have added crispy grilled Okra as appetizers and sides. And cooking okra on the grill yeilds a crunchy delight with absolutely no slime!

OKRA BASIC PREP Prepare the okra by slicing each one down its length, stopping just short of the top. This helps the okra cook more evenly and creates more crispy bits. Toss the okra in a mixing bowl with the olive oil and a generous sprinkling of salt and pepper. If your grill grates are so wide that the okra might fall through, use a vegetable grilling pan or spear the prepared okra on skewers like kabobs. Heat a grill to med-high to high heat. When the grill is ready, spread the okra out in a single layer over the grill (or in the grill pan). Cover and cook for about 2 minutes. Remove the cover and flip the okra to grill the other side. Continue grilling, flipping as needed, until the okra are evenly grilled on all sides, another 3 to 5 minutes (5 to 7 minutes total).

Chipotle Dipping Sauce 1/2 cup sour cream 1/4 cup mayonnaise 1 chipotle in adobo, roughly chopped (seeds removed, if desired) 1 tablespoon adobo sauce from the can of chipotles 1 tablespoon lime juice 1/8 teaspoon salt Combine in a blender or in the measuring cup of an immersion blender. Blend until thoroughly combined. Taste and add more adobo sauce, lime juice, or salt, to taste. Transfer the sauce to a small serving cup. Red Curry Lime Dressing Mix together 1 tablespoon Thai red curry paste 1/4 cup extra-virgin olive oil, plus more for brushing 2 tablespoons fresh lime juice Salt Brush with some of the curry dressing and grill until the okra is sizzling, about 1 minute. Drizzle the okra with the remaining dressing and serve.

Grilled Corn on the Cob

Everyone has their own recipe for grilling corn on the cob, and that’s OK. Here are few tips and twists to add to your repetiore. TIP As with any vegetable cooked on the grill, you should start by soaking corn on the cob in cold water. This will allow extra moisture into the corn, softening the husks, making them easier to work with. Peel back husks, leaving them attached at the base of the ear. Remove and discard silk; pull husks back over corn. Place ears in a large bowl or pot; cover with cold water. Let soak at least 10 minutes, some recipes say up to 30 minutes. BASIC CORN PREP Peel back husks again and drain. With the corn exposed from the husk, this is the time to work your magic and add one of the recipe twists below, or concoct your own. Once you’ve dressed the cob in your favorite flavor, pull the husk back over the cob and get ready to grill. Lightly oil grill and pre-heat to high, arrange ears on grill, cover and cook, turning occasionally, using tongs, until husks are slightly charred and corn is tender, 15 to 20 minutes. Grill Time: Cook over a medium to medium high heat for 10 to 15 minutes. Toward the end of the grillling peel the husk back and let the corn develop a bit of tasty char. ADDING THE TWIST Simple Parmesan Basil & Garlic Cob Blend together ¼ cup unsalted butter, softened ¼ cup freshly grated Parmigian cheese 2 tablespoons finely chopped fresh basil ½ teaspoon kosher salt ¼ teaspoon fresh black pepper ¼ teaspoon chopped garlic * 1 tablespoon freshly chopped Italian parsley, for garnish AUGUST/SEPTEMBER 2018

Maple-Chipotle Glazed Cob Blend together 1/2 cup/120 mL maple syrup 1/3 cup/80 mL butter 2 chipotle chilies, finely chopped 2 cloves garlic, minced 1/2 teaspoon salt 1/2 teaspoon black pepper

Bacon Wrapped Cob Ingredients 8 ears of corn 1 lb. bacon, partially pre-cooked. Drizzle grease onto cob Choice of seasoning: salt & pepper, Lowery’s, south west, curry, etc. Tip: Make ahead and freeze.

Cilantro Pesto Cob Blend in food proceesor 1/2 cup cilantro leaves 2 tablespoons fresh lime juice 1 garlic clove, peeled, and grated 1 teaspoon kosher salt 1 teaspoon finely ground black pepper 1/4 cup canola or vegetable oil 1/4 cup extra virgin olive oil Salt to taste Serve with 16 tablespoons (8 ounces) unsalted butter, cut into pats Squeeze fresh limes after grilled or add as garnish.

– Cherokee Removal

History Editor Leslie Barker Thomas Digs Deep Into Our Rich Cultural Past with This Ongoing Series About Our Native Ancestors

M

May 26, 1830 the National Congress passed the Indian Removal Act. Andrew Jackson was adamant and worked ever diligently toward this end signing it on June 30th. In late 1830 Governor George Rockingham Gilmer requested that certain individuals of “good character” be exempted from the Removal Law provided they take an oath of allegiance to the State of Georgia and relinquish their rights under the Cherokee Nation. He declared there were two types of Cherokees, one ruled by the elite mixed bloods and one aboriginal that were easily corrupted by the vices of the white men infiltrating their presence with alcohol and other vulgarities. Some of the early white settlers who had Indian wives and mixed blood families were given permission from the Cherokees to farm the land. Several Cherokee families were given a reservation for life. This meant they could use the land and plant it for profit but they could not sell it or give it away. At the reservist’s death, the land was to revert back to the state of Georgia. Those granted the status of “fee simple” could sell the land or give it away as they so chose. In 1837 Adiel Sherwood 1791-1879, one of the most powerful Missionary Baptist minister pioneers in the state of Georgia was reported to have come through Indian Territory of Georgia. He listed townships and detailed the features of the various towns, such as stores, doctors, and houses. These records indicate that in 1837 various militia officers were ordered to set up and erect huts, stables and other buildings as necessary towards the removal, under the auspices of protecting the Cherokees from the intruders.
