Don’t know about you all, but Maxine and I are sure glad to see spring this year. Daffodils have bloomed, the dogwoods and cherry tree buds are just starting to burst to life, and there’s maybe a bit of hope in the air. I’m sad to report that our Artist in Residence, Betty Kossick, passed away last month. A Georgia native, Betty had a long and rewarding career as a reporter, an author, and a poet. She never hesitated to take on an assignment and never missed a deadline. She was as tough as they come. Also, in the list of ‘not good things,’ Maxine has been diagnosed with a mast cell tumor on her rear leg. We’ve had a long run together, nearly nine years since I adopted her from the Blairsville Detention Center’s Rescued Program. We go to a specialist vet next week and will know after that how long we have together. Take a deep breath, do the right thing. So. In this issue we celebrate the coming summer with Old Toccoa Farm as they near completions on their new clubhouse and tavern. From the photos it seems to be quite grand in a country sort of way. I look forward to hopping over there for a cocktail as it’s a short few miles from my cabin, can’t wait! New on the scene is Cotton Mill Exchange in Canton, GA. The re-purposed cotton mill is a lovely yet rustic space, filled with antiques, home décor, chic fashions and future heirlooms. Steve and Lori Sinatra should take a bow, ‘cuz the place is absolutely stunning, and like the headline says, it’s definitely Destination Fun. Engelheim Vineyards is also featured in this issue showcasing their new event space, Venue in the Vines. The vineyard grounds and tasting room are old-world wonderful, so I have no doubt their new venue will be a fab addition and a solid hit. There’s our annual listing of Spring and Summer Festivals, I’m still amazed each time as I compile the list how much there is to do up here in north Georgia. And before we know it, summer will arrive and our little tourism-based towns will be filled with happy hikers, kayakers, rafters, and vacationers venturing out for some mountain-style fun. I ask everyone to be kind to each other and our planet, share with those less fortunate, take a deep breath and do the right thing.

Kids Ferst is Celebrating!
April 2007, Kids Ferst was born in Gilmer County becoming a chapter of Ferst Readers (formerly known as Ferst Foundation for Childhood Literacy https://ferstreaders.org/ ) headquartered in Madison, Georgia. Kids Ferst is a Community Action Team (CAT) dedicated to improving literacy by providing ageappropriate free books once-a-month to every child under the age of 5 in Gilmer County. Giving a child the gift of reading allows them to enter school with reading readiness skills that prepare them for school success! Did you know that nearly two thirds of lowincome families in Georgia don’t have a single book in their home suitable for a child, and over a third of all children arrive at kindergarten without the skills necessary for lifetime learning? Sadly, children who are not reading on grade level by the end of 3rd grade are four times more likely to drop out of school!! From 1 to 930 in 15 years! Thanks to the initiation of Judy Harvey and Beth Gentile, Kids Ferst registered their first child in Gilmer APRIL/MAY 2022
County 15 years ago. Kids Ferst now provides approximately 930 preschool age children with free books each month. In just 15 years, over 182,000 free quality books have been delivered to preschool-age children in Gilmer County. During the last 15 years, Kids Ferst dedicated volunteers have engaged in multiple fundraisers to facilitate continued funding for this program. Volunteers constantly seek venues to register kids including booths at festivals, city parks, food banks and anywhere parents (or grandparents) can be found. Kids Ferst also looks for opportunities to speak at meetings of local organizations. The Kids Ferst motto is Read to Lead – Lead to Succeed! Kids Ferst members love to read to help children succeed! They might be spotted reading to children in the school setting, in city parks, at the food bank and just about anywhere kids can be found. Like the proverb says, “it takes a village to raise a child.” There are a variety of ways you can become part of the village. A donation of just $36 provides a book-a-month to a child for an entire year! Or join the 10x360 program

Canton Cotton Mills
T
The New Echota Treaty of 1833 relinquished Cherokee Indian claims to lands east of the Mississippi River. The majority of the Cherokee people considered the treaty fraudulent and refused to leave their homelands in Georgia, Alabama, North Carolina, and Tennessee. 7,000 Federal and State troops were ordered into the Cherokee Nation to forcibly evict the Indians. On May 26, 1838, the roundup and eviction began, now known as The Trail of Tears. In 1834, the town of Canton was incorporated on land that at the time was still part of the Cherokee Nation. European settlers chose the name after the Chinese city of Guangzhou, which was then known in English as Canton (pronounced can tahn). The name was chosen because a group of citizens had dreams of making the Georgia town a center of the silk industry, which was concentrated 12
in China at the time. Though Canton never became a significant silk center, it did become a successful manufacturing community. Taking advantage of abundant cotton production, The Mill was founded in 1899 by Robert Tyre Jones, along with a group of local investors. Jones was a leader in banking and commerce in Canton at the time and the plant was the first of two cotton mills built by the owners along the river. Opening in 1901, The Mill mainly produced cotton thread. In 1902 a dye house was added, affording the production of denim. “Canton Denim” quickly became famous and production increased in the following years. The success of “Canton Denim” allowed for the construction of a second mill in 1923, one mile north of the first mill. Both mills built homes for their employees and the mill village

featured amenities, such as indoor plumbing, running water, electricity, and ice delivery. Jones Mercantile Store, owned and operated by one of R.T. Jones’s sons, became a popular shop for the residents of the Canton Cotton Mills mill villages. Later on, Jones Mercantile served as the parent company for Etowah Manufacturing Company, which produced trousers from “Canton Denim” as well as chenille bedspreads. Canton Cotton Mills faced many hardships, including the Great Depression, floods, a major strike, and changes in leadership. In the late1970s, the textile market slowed due to cheaper markets overseas. Canton Cotton Mills shut their doors in the spring of 1981. AC LIVING RECIPES Strawberry Basics Strawberries are sugar-sweet, affordable, and omnipresent – even if you can’t pick your own, you’ll find pints and quarts of them at roadside stands and red seas of them in the produce aisle. These berries are delicious on their own, sprinkled with sugar, or in breakfast recipes, desserts, and even salads. In Season: Fresh strawberries are available year-round in many regions of the country, with the peak season from April to June. What to Look For: Buy strawberries that are bright red (with no white or green around the stem), fragrant, and plump, with no soft spots. How to Store: If using right away, it’s best not to refrigerate them. Otherwise, lay the berries flat on a paper-towel-lined plate and refrigerate for up to 2 days. Do not rinse or hull until ready to use.
Strawberry Cake with Coconut Cream Cheese Frosting Ingredients 1 cup butter 3 cups dices fresh strawberries Whole strawberries for decoration as desired 1 cup sugar 4 egg whites 1 cup strawberry puree (Fresh or 1 cup thawed frozen strawberry & 1-2 tbsp water in blender) 2 teaspoons baking powder 3 cups all purpose flour 4 egg yolks 1/2 teaspoon almond extract 1 tablespoon vanilla 1/2 teaspoon salt 1 cup white sugar 2 tablespoons flour Pink food coloring *Room temperature ingredients are ESSENTIAL for this recipe. Preparation 1. Heat oven to 350 degrees. Prepare three 8-in round cake pans. 2. Whip four eggs whites in mixer until soft peaks form. Add 1 cup sugar, 1 tbsp at a time, whipping to maintain soft peaks. Pour whites into large bowl (This was about 5 cups in volume after whipped) and set aside. 3. Without fully cleaning the mixer bowl, cream room temperature butter and 1 cup sugar until fluffy. Add vanilla and almond extract. Add egg yolks one at a time, beating after each addition. 4. Sift together 3 cups flour, baking powder, & salt. Alternatively add flour mixture and 1/3 strawberry puree to batter until fully combined. (Flour, 1/3 cup puree, flour, 1/2 cup puree, flour). Add food coloring to achieve desired color. Batter will be thick. You should have 1/3 cup puree LEFT OVER. (This will be brushed on cake later) 5. Fold in egg whites. 6. Coat diced strawberries in 2 tbsp flour and gently add to batter. Pour batter into prepared pans and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. If using two 8-in cake pans, bake for 45-50 minutes. 7. Remove cakes from oven and use a pastry brush to spread remaining strawberry puree over warm cakes. Cool until ready to assemble cakes. TIP: If you want to use all of your strawberry puree IN the cake, feel free to brush cakes with a simple syrup after they have baked. This is a dense cake, so it does need the additional moisture added. Coconut Cream Cheese Frosting Ingredients 8 oz cream cheese, softened 1 cup butter, softened 4 cups powdered sugar 1 teaspoon coconut extract 2-3 Tablespoons heavy cream Shredded coconut Preparation 1. Beat cream cheese and butter together. 2. Add in powdered sugar one cup at a time and

beat until creamy. 3. Add the vanilla or coconut extract and heavy cream and beat until smooth. 4. Frost cake and cover with shredded coconut. TIP: Turn mixer on high and let it go for 4 minutes to get some air into the frosting.
Strawberry and Cream Biscuits Ingredients 2 1/4 cups all-purpose flour 1 tablespoon baking powder 1/4 cup granulated sugar 1/2 teaspoon table salt 6 tablespoons unsalted butter, cold 1 cup chopped very ripe strawberries. Cut strawberries into about 3/8" dice, halving very small berries, quartering medium, and then dicing large berries. 1 cup heavy cream Preparation 1. Preheat oven to 425 degrees. Line a large baking sheet with parchment paper. 2. In the bottom of a large bowl whisk flour, baking powder, sugar and salt together. 3. Cut in cold butter until the mixture resembles a crumbly meal with small pea-sized bits of butter. 4. Gently toss in strawberries, just to lightly coat in the dry ingredients. 5. Stir in heavy cream gently, just to moisten the dry ingredients but not over work the dough. 6. Knead once or twice in the bowl, to form a WWW.ACLIVINGMAGAZINE.COM

Buck Bald Brewing has expanded with a new location in Murphy, NC. ACLM caught up with owner Patrick Keenan for the 411. ACLM: What factors influenced your decision to open another location? BBB/Keenan: We love our Copperhill location. It will always be where we started and the source of everything amazing about Buck Bald Brewing. We’ve reached the limit of what we can do in our flagship location. We looked extensively at expansion opportunities in Copperhill and they just aren’t there. ACLM:. How did you decide on Murphy? BBB/Keenan: One of our staff, Matt Wright, lives in Murphy and I had him on the lookout for an amazing space where we could expand. The building is a 1930s era building - right in our wheelhouse - where we have room to grow. What we didn’t know at the time is how amazing the town of Murphy would be in helping us get started. Everyone we’ve spoken to in Murphy has been helpful and supportive. What a great place to open a brewery! The town of Murphy has great things coming that have us psyched. They are making changes to encourage growth and new businesses in Murphy and we are happy to be a part of it. 22
ACLM: Will beer be brewed at both locations? BBB/Keenan: Yes! We’ve opted for a larger system in the new Murphy location. We’ll brew our flagship beers on the larger system in Murphy - Hollerin’ Man Pale Ale, Ragin’ Red Ale, Yikes, Bobby! IPA, Backpack Blonde and more. Smaller batch and location specific brews will continue at the Copperhill location. Copper Basin Cream Ale and McCulley Mountain Mild will stay in Copperhill. New beers like Gambler’s Gem Golden Ale and Cherokee Stumpwater Porter will be brewed in Copperhill but will be served only in our Murphy location. Expect to always find something fresh, different, and amazing in each location. ACLM: Who will manage the new location and who else will be working there? BBB/Keenan: Matt Wright is now the Taproom Manager in Murphy. Matt’s wife, Sarah and Jake Reuse will help him as necessary. We’ll seriously look at supplementing our staff once we have a gauge of our traffic in Murphy. ACLM: Who will be brewing? BBB/Keenan: Currently Frank Crosier (Big Cro), Jake Reuse, and I brew the beer in Copperhill. As we expand we’ll look toward adding additional brewing help in both locations. Every beer we’ve ever created in Copperhill has been brewed by the same team (with Jake added along the way), and I don’t expect that to change. We’ll always be a group

somewhat shaggy, but cohesive mass. The dough won’t be even – the key here is to be gentle! 7. Generously flour your counter or work surface. Transfer dough to the counter, generously flour the top and flatten with your hands or a rolling pin. 8. Gently roll or press the dough out to a 3/4 to 1-inch thickness. Cut into 2 1/2-inch circles with a floured biscuit cutter, pressing straight down and not twisting as you cut. 9. Carefully transfer scones to prepared baking sheet, spacing at least two inches apart. You can re-roll the scraps of dough; things will get a bit messy but they will still be perfectly tasty. If you’re so inclined, sprinkle with a little sugar to finish them off. 10. Bake the scones for 12 to 15 minutes, until golden and the juices start to bubble a bit and thicken. Cool on the baking sheet for a few minutes, then transfer to a cooling rack. Serve warm or at room temperature. Makes 16-20.
Strawberry Butter
Flavored butters are so easy to make and can be used in many different ways. This is a great butter recipe to add to your collection. Ingredients 1⁄2 cup strawberry, fresh and diced 1⁄4 teaspoon thyme, minced optional 1⁄2 cup butter, softened Salt, to taste APRIL/MAY 2022
Preparation 1. In a blender or food processor, puree the strawberries and thyme coarsely. Add the butter and salt and blend until fairly smooth. Serve at room temperature. 2. This can be made one day in advance and refrigerated in a tightly covered container. Allow to become room temperature before serving.
Strawberry Compote
During strawberry season, every cook should have a compote handy. Spoon over everything from pancakes to ice cream! Ingredients 3 pints fresh strawberries, washed, patted dry and sliced 1 cup sugar, less if you prefer 1⁄2 cup Grand Marnier or 2 tbsp lemon juice Preparation 1. In a non-reactive saucepan, over medium heat, combine 2 pints of the strawberries, sugar and liquor. 2. Bring the liquid to a boil, reduce the heat to medium and simmer until the fruit is soft, about 8 to 10 minutes. Remove and let cool. 4. In a food processor, fitted with a metal blade, puree the strawberries until smooth. 5. Turn into a mixing bowl, and add the remaining sliced strawberries. Mix well. Makes 2 cups.

Strawberry Rose Gin Fizz Ingredients 6 beautiful strawberries 2 teaspoons sugar 4 shots gin 1 teaspoon rose water pinch of salt 1/2 cup club soda (or, to taste)
Preparation 1. Wash and de-stem strawberries. Dice into small pieces, like 12 pieces from one berry. Tiny. 2. Sprinkle the sugar over strawberries. Let sit for 5 minutes. Mash with a fork to release their juices. 3. Fill a cocktail shaker with ice, add the strawberry mixture, gin, rose water and a pinch of salt (just trust me). Shake, and divide between two glasses. 5. Top off with club soda, squeeze a lime wedge into each glass. Gilmer County is famous for its luscious apples and its numerous outdoor activities; however, viticulturists and vintners also know that grapes grown in the rolling fields and valleys around Ellijay have unique characteristics which lead to beautiful wines. The climate of the Southern Appalachians, alternating from cool and cloudy to sunny and hot, creates a complexity of flavors that are fully released from the grapes and expressed in the wines created here. Winemakers call this delicate yet immediately recognizable quality a region’s “terroir”, which is created by site-specific soil conditions, climate, elevation, and topography. The infinite combinations of these elements, big and small, give every wine a particular character, which both the experienced sommelier and casual wine drinker can appreciate. Experienced wine-sippers who prefer some wines over others, and wines from one region over another, can likely point to the wine’s terroir as a major reason why.

At Engelheim Vineyards, visitors are encouraged to savor the whole experience of tasting and enjoying locally produced Georgia wines. Since revitalization after prohibition began in the 1970’s, the Georgia wine industry is booming. The dry weather, a consequence of record-setting drought conditions across the Appalachian region, just so happened to create some spectacular wine grapes. The state of Georgia was once the sixth largest producer of grapes in the country, and Engel thinks we can get there again someday soon as more and more people flock to the Georgia wine country in search of the perfect bottle. Engelheim proudly produces eleven varietals including Merlot, Cabernet Sauvignon, Cabernet Franc, Traminette, Chambourcin, Petit Manseng, and others. Engelheim has received numerous awards and medals from various wine competitions including a Double Gold, 26
multiple Silver, and Bronze medals from the San Francisco Wine Competition with Engelheim estate grown and bottled wines. They were also named Best Georgia Winery in 2018 and received Best Georgia Grown Wine for their Petit Manseng in 2020, and for their Red Blend, Doxology in 2021, by the Georgia Trustees Wine Competition. Engelheim Vineyards is also proud to announce that they have recently opened a new event center, Venue in the Vines. This 12,000 sq. foot facility is home to an indoor and outdoor event space, bridal suite, groom suite, and barrel cave. The ramp or wild leek, is a wild onion native to North America. The bulb resembles a scallion, but the flat, broad leaves set it apart, a version of the wild garlic. This event features the traditional Ramp Meal which includes, Ramps in eggs, white beans, cornbread, fried potatoes, and streaked meat bacon for take-out only. Corn in the Early Days of North Georgia

The Cherokee Territory of Georgia instituted a Studying the History of Corn and the Indians of the Southeastern United States where you you will find a number of stories. One included here, is that at one time there were 14 different varieties of corn as we know it today. The Indians ate them all and traded with the pioneers trying to teach them how to use this product. European pioneers couldn’t comprehend why the natives didn’t use more of the vast lands to grow products or raise livestock. They were thinking more in terms of getting rich, rather than using what was grown to feed their own families. Once the lands were confiscated from the southern tribes causing the removal to the west, intruders began planting hundreds of acres at a time. Not comprehending that the Indians only used what was needed without building up great stores, production got out of hand and demand wasn’t as necessary as the farmers originally thought. Every farmer was growing more than was needed. Most of North Georgia’s history related to growing corn seems to wrap around the making of moonshine. Because the high volume of production proved to be useless and they couldn’t sell the corn, most farmers had to return to their Scotch-Irish roots and the making of whiskey or as we came to know it, “moonshine.” 38
Cherokees have a legend that the first woman was named “Selu” meaning corn. The “three sisters’ story is often told as how Selu planted the corn and the women, who were the farmers planted beans and squash. The corn stalk supported the beans and the squash provided much needed shade to keep the corn stalk moist. The three sisters were harvested and made a tasty vegetable soup. But that wasn’t the only use for the whole corn plants. The husks were often dried and then crinkled to make them pliable and soft to be used to make mattresses for the rope beds. Corncobs also had a couple of uses. One was for “toilet paper,” a bit rough but it worked. Paper was in short supply, so although you hear of catalogs being used, more often real paper was considered to be a premium item and was bleached out and used for writing letters or doing homework for school. In addition to using the cob for toilet duty - hay, husk, hemp, leaves and moss could also be used to stuff furniture and mattresses. Another use for cobs was to make yeast or baking powder; grinding or shredding the cob to a powder similar to baking soda. Or it could be steeped and fermented to make yeast. Cobs were also used to feed the livestock. And oh yes, let’s not forget that old corncob pipe. Husks and corncobs were also used to make dolls for the young girls. Green husks could also served as a sort of tin foil to wrap foods in when cooking them over an open fire. Slippers or sandals could also be made from the husks striped or rolled and woven together. Corn stalks could be hollowed out and used to store sugars, salts or medicines. Pioneer families would dry their corn and store it in sacks. Drying would make it last much longer than the few weeks before it would mold (or ferment) and had to be eaten. They ground it using a pestal and mortar, much as the Indians had done throughout their history. When ready to be cooked, the dried corn was soaked in lye to loosen the outer casing. This resulted in hominy, a corn seed that swelled to sometimes three times its original size. This practice is still done by indegenous peoples. Cornmeal was the basic bread making flour long before wheat. Corn mash could be mixed up and wrapped with corn leaves, then roasted in the dying embers of the fire. Corn mash could also be mixed with fruits and berries in season for tasty dumplings, boiled in water or roasted on the fire. Early farmers may have found out they needed to pay more attention to how the Indians stored
