September 2022 was a milestone month for me, turning 65 yrs. old. YIKES! I celebrated with some of my BFFs in SoCal. Fancy umbrella cocktails, swimming in a backyard Tiki Barthemed pool- complete with waterfall and floaty things- steaks and seafood on the grill, ethnic foods that we don’t have in the mountains, and of course lots of laughs. Feeling pretty darn lucky to be alive these days. Cheers to my pals, love you guys!
Maxine is doing great! I see a marked improvement now that I make her dog food from scratch. Everyone who has known her over the years agrees, she’s one good-lookin’ pup at 13+ years old. We’re enjoying being two old ladies together, our favorite outings are a short walk and then a visit to our local breweries, Buck Bald and Copperhill. While Maxine doesn’t imbibe, she gets lots of attention and treats from her fans. This month she also spread her tail-wagging, smiling fur face in Murphy, NC.
I’m truly excited that The U.S. Capitol Christmas Tree was selected from Pisgah National Forest this year and will be stopping in Murphy, NC on its “Mountain to the Sea Tour.” What an honor! If you didn’t know (and I didn’t), each year the Capitol Tree is selected from a different National Forest and then travels to the Capitol with celebration stops along the way. Join Historic Downtown Murphy, NC on November 6th along with Buck Bald Brewing, The Murphy Arts Association, Mimo’s Ice Cream & Twisted Treats, The Mason Bar, Parson’s Pub, Smoky Mountain BBQ, in welcoming the tree. The celebration kicks off around noon culminates with the lighting of the Murphy Christmas Tree.
As we roll into fall and peak leaf color season, starting to think about boots and sweaters, I’m reminded of all of the fantastic festivals and events that take place every year. Take a look at the AC Living Mag Calendar, I had to add two extra pages and even then I couldn’t fit every event. If anyone was left out it’s only because they ‘re aren’t enough pages in the magazine. So, pack up the kids, dogs, grandparents and the kitchen sink- and come on up to the mountains.
Before we know it the Christmas Holiday Season will be here with twinkling lights, parties, parades, and shopping. Our local mountain shops, restaurants and galleries– brimming with festive decorations, Holiday cheer, and loads of cool gifts– are the perfect place to spend with family and friends.
Old Toccoa Farm will be featured in the next issue. Just opened to the public this year, The Tavern at Old Toccoa Farm is a wonderful backdrop for your winter mountain Holiday. Great food and drinks, paired with a stunning view and a lovely atmosphere are waiting for all to enjoy.

A Holiday Tradition: The Architect of the Capitol Trims the Tree

PPreparing the Christmas tree is a true team effort for the Architect of the Capitol.“When the lights of the Capitol Christmas Tree are finally turned on, everyone has that ‘ahh’ moment,” says Tree Surgeon Supervisor George Rollins.
Rollins has served with the Architect of the Capitol for 30 years and the moment of the official Christmas tree lighting by the Speaker of the House each year never gets old. It’s when the hard work that the AOC has been performing, around the clock and behind the scenes, finally pays off.
The Capitol Christmas Tree tradition has been an Architect of the Capitol responsibility for nearly 50 years. In 1964, House Speaker John W. McCormack suggested to Architect of the Capitol George Stewart that a Christmas tree be placed on the U.S. Capitol Grounds. That year, a live 24-foot Douglas fir was purchased for $700 from Buddies Nurseries of Birdsboro, Pennsylvania, and was planted on the West Front lawn.
Each year through 1967, this tree was decorated and a tree-lighting ceremony was held. Unfortunately, due to a combination of factors, including a severe windstorm in the spring of 1967 and root damage, the tree died and was removed a year later.

two white pines from Finksburg, Maryland, and was 30 feet tall; the 1969 tree was a 40-foot white pine from Westminster, Maryland. In 1970, the current tradition of the United States Forest Service providing the tree began.
The responsibility for providing a tree rotates through the nine national regions of the Forest Service. During the summer, the host Forest Service staff nominate about a dozen potential Capitol Christmas trees. These trees are carefully measured, photographed and mapped. Ted Bechtol, superintendent of the AOC Capitol Grounds Division, reviews this information and visits each tree to make the final selection.
Bechtol considers many criteria when selecting the Capitol Christmas Tree. The ideal tree is 60 to 90 feet tall. It must be healthy, have good growth and density, and be rich in color.
The tree must be straight and perfectly conical in shape.
“It is positioned out in the open of the Capitol’s West Front lawn, visible from 360 degrees,” says Bechtol. “Unlike at home, you cannot hide the bad side of the tree in the corner of a room.”
Once the tree is positioned in the center of the West Front lawn, it’s lowered into a 4-foot hole. The Capitol Grounds Masonry Shop mixes concrete, pours it into the hole anchoring the tree firmly in place.
The Capitol Grounds Tree Care Branch attaches guy wires allowing the tree to be adjusted for straightness. Once the tree is in place, the AOC’s High Voltage Shop provides electrical service and lights for the tree.
The final step is the hanging the 5,000 ornaments by the Capitol Grounds crew.
“The donated ornaments are made by school children throughout the Christmas tree’s home state. This makes the tree unique each year and more typical of an ‘old fashioned’ style that many of us grew up with,” says Bechtol.
Seeing the ornaments is also a favorite for Rollins. “I always enjoy the ornaments made by grade school children with pictures on them wishing us a Merry Christmas.”
The Speaker of the House then marks the start of the holiday season with the annual lighting ceremony. The tree is subsequently lit by the Architect of the Capitol each evening throughout the season for everyone to enjoy.

In the south west corner of North Carolina lies the sweetest, little mountain town. ‘Two hours from anywhere’ and nestled at the base of the magnificent Appalachian mountain range, Murphy embodies the charm of an old-time downtown.
Christmas is coming early to Historic Downtown Murphy with an auspicious special event. Each year a different National Forest is selected to provide the tree that lights up the U.S. Capitol’s West Lawn. This year, the National Forests in North Carolina, in partnership with the nonprofit Choose Outdoors, have selected a tree from the Pisgah National Forest.
Our national tree will embark on the “Mountains to Sea Tour” traveling through North Carolina to the U.S. Capitol in Washington, DC, with he very first stop on the tour being Murphy, NC!
The U.S. Capitol Christmas Tree arrives in town at 1pm on November 6th. Historic Downtown Murphy will be rolling out the red carpet with an Old-Fashioned Christmas event. Everyone will have the opportunity to sign a Christmas Card to the tree, take photos in front of the tree, and learn more about the history and significance of our Nation’s U.S. Capitol Christmas Tree.
Streets will be closed, vendors will be selling cocoa, sweets, coffee and other tasty treats that are sure to please. Local shops, art galleries, restaurants, and breweries will be open for all ages to enjoy.
Photos with Santa, fun for families, games for kids, caroling, music, Christmas character sightings, and downtown shopping for all will make even the grumpiest Grinch smile.
Festivities culminate with the lighting of Murphy’s own Christmas Tree at 6pm. Best of all, the event is free and open to the public.

Buck Bald Brewing, Fill a Pint.Fill a Growler. Fill Your Mind Nestled in scenic Murphy is a new iteration of a familiar face to many in area and a hidden gem for those who love craft beer.
After almost four years as a staple in Copperhill, Tennessee, Buck Bald Brewing has expanded into its second location, taking root in an the Historic Mill building on the edge of the growing downtown scene in far western North Carolina.
“We’d long had a vision for expansion of this brand, and in considering our area, Murphy seemed a perfect fit,” said owner and head brewer Patrick Keenan. “We felt the time was right toward the end of 2021 and immediately began scouting our options.”
With the help of tap room manager Matt Wright, Buck Bald found a home on the backside of an 1920s industrial warehouse at 104 Tennessee Street, and the vision came to life quickly.
“It was a whirlwind process to go from concept to opening the doors, but we’re thrilled
with the product and so thankful for how the community has responded,” Wright said. “People are still discovering us each week, and we’re glad to be making so many new friends.”
Once inside the beautifully renovated space, you’ll find a warm, welcoming staff, ready to greet you and offer a friendly recommendation on any of the twelve offerings brewed in house.
And, as with the Copperhill, the beer is just as spectacular. With tastes ranging from the spicy, sweet, and sour cult favorite Mango Tango, an outstanding traditional porter in Party on the Patio, a refreshing west coast hop forward IPA in Yikes, Bobby!, or a lighter offering such as the Backpack Blonde, there’s something for every palate on tap.
If beer isn’t your thing, the housemade Peach Tea or a glass of pinot noir can also keep you coming back.

Our organization produces First Friday Art Walk to showcase community music, arts, and crafts on the downtown sidewalks, a Kids’ Club program for art classes, Adult and Teen classes year-round, The MAX Project Murphy Art Xplosion, and an artist showcase gallery for all types of art and Appalachian crafts, all with our dedicated volunteers.
We invite everyone to stop and shop at our huge galleries of the Murphy Art Center, to enjoy the incredible quantity and quality of local Appalachian arts and crafts. We are busting at the seams with thousands of beautiful locallyproduced artworks and also offer interesting classes for all ages in our classroom space. The MAC is run by the Valley River Arts Guild artists and is open every day including Sundays!
One of our big projects created and produced by the Valley River Arts Guild at the Murphy Art Center is The MAX Project: Murphy Art Xplosion. This big Outdoor Art Gallery is a unique innovative project throughout downtown Murphy, North Carolina, showcasing seasonally changing art of Appalachian Mountain regional artists. The art is printed on large 5’ x 3’ outdoor canvases, mounted in frames attached to the outer brick walls of downtown historic buildings and can be viewed anytime, 24/7. The Murphy Art Xplosion is growing, and will include 70 beautiful framed art panels, located all over downtown bringing our many area “hidden gem” artists into the public eye along the Art Trail. We are a small mountain town with a big heart and big art!
Another large event held every month is First Friday Art Walk, produced by the Valley River Arts Guild, d/b/a The MAC, Murphy Art Center. Art Walk happens every First Friday evening May through December in downtown Murphy, NC. A huge variety of arts and crafts vendors, musicians, magicians, and
art demonstrations fill the sidewalks all over downtown each month. The Valley River Arts Guild volunteers do all of the legwork needed to produce this huge event each month.
Our goal as the Valley River Arts Guild at The Murphy Art Center is to promote the arts and artists of our region, to produce art events and classes for the community, and to create an arts destination in our region. We are a powerhouse in the community with our 50+ members and plan to continue growing and showcasing the arts in our town and region!

Mimo’s Ice Cream and Twisted Treats, Where Everyone Leaves with a Smile
Nothing is better on a hot afternoon, or any time really, than delicious homemade ice cream. At Mimo’s Ice Cream & Twisted Treats, you surely won’t be disappointed since all of their ice cream is handmade right in the shop with a regional dairy mix and ingredients from local grocers. There are no big jugs of chemical flavorings lining their shelves, for example, Mimo’s Mint Chip boasts 102 hand-crushed red and white candy pepper mint candies and Nestle’s mini chocolate chips.
It wasn’t that long ago that Apryl Scayola and her husband decided that instead of waiting another twenty years for retirement, they would “just go for it.” They packed up their lives and moved straight into the heart of the Appalachian Mountains! With two of their adult daughters in tow, they moved to what Apryl describes as, “The most charming place in the world inhabited by the most caring, generous people we’ve ever met.”
While wandering around Murphy’s quaint downtown one afternoon, they had a craving for
ice cream but couldn’t find a shop within walking distance. Apryl’s daughter, RayLynn, mentioned to her mother that she always talked about opening up her own shop, but never actually did it. Taking that as a challenge, within weeks, Scayola seri ously approached RayLynn and her younger sister, Kenley Grace, and asked them if they would join her in opening their own ice cream shop.
The three women had no idea what they were doing, but were determined to set about mak ing the World’s Best Homemade Ice Cream. And June of 2021, Mimo’s Ice Cream & Twisted Treats became a reality.
After a year full of laughter, tears, sleepless nights, discovery, a TON of dairy mix and fresh ingredi ents, they are several months into year two and the community is thrilled!
All of Mimo’s ice cream is homemade so they spend a lot of time developing recipes and perfect ing each flavor. There’s not a single recipe that’s not unique to the shop in some way.
The small shop has become the “must-see” spot in town with its unique decor and unforgettable, delicious ice cream flavors.
For the kiddos, and kids at heart, they offer Mimo’s Mega Shakes– 24 ounces of any flavor shake piled high with mammoth amounts of goodies on top– guaranteed to give your little one a smile from ear to ear and the sugar rush of a lifetime! There’s something for adults too! Their alcohol-infused milkshakes and ice cream flavors are out of this world!

The Mason Bar Serves Up Live Music, Delicious Food, and Tons of Community Spirit
From the start, the Scayolas wanted to create a live music venue that would give musicians a place to gather and do what they love. Providing a space for local artists, as well as artists from Atlanta, Chattanooga, and north Florida, The Mason Bar hosts many different genres of music throughout the week so there is something for everyone! Live music and great food? Yes!
To be honest, no one in the Scayola family had very much commercial kitchen experience when The Mason Bar opened last January.
Thank goodness they did not let that stop them! Determined to serve delicious, memorable food, Daniel, Apryl, and their daughter RayLynn researched recipe ideas, compiled ingredient lists, and spent hours in the kitchen taste testing and tweaking sandwich and salad recipes. They even spent Christmas Day last year finalizing their first menu- just two weeks before they opened! Then as an added measure, they invited their friends and family
to critique their favorites. After many hours and many trials, the Scayolas had a small, but very delicious menu ready for opening day. That original menu was very well received and has grown to contain many new local favorites!
A few friends have even shared their own personal recipes that are now staples on the menu. Shirley’s Buffalo Dip is so popular and in such high demand that The Mason Bar now serves it three ways: with homemade chips, piled high on a jumbo baked potato with ranch dressing and potato chip crumbles, or on a breaded chicken breast sandwich with tomato slices, thank you, Shirley!
The Mason Bar also has a special selection of signature cocktails and dessert martinis designed to complement their full bar. Try a Cotton Candy Margarita or a S’More’s Martini. Prefer something more robust? How about a delicious Bloody Mary, served with a seasoned salt rim, pickle, and a BBQ pulled pork slider?
The Mason Bar offers a large selection of beer, including craft, ciders, sours, local, regional, domestic, and import beers. They will
be expanding their wine selection to include wine tastings this fall. Be on the lookout for The Twelve Wines of Christmas selection that is sure to be a local favorite.
Being fairly new to Murphy, the family has been overwhelmed by the support that they have received from the community and are looking forward to the future.
So, come on in to say, “Hello,” relax, and enjoy lunch on their shaded patio. Or sit center stage, grab a cocktail, and get ready to hear some awesome live music!

The Parson’s Pub- Fine Food, Hearty Meals & Great Drinks.We Serve Them All!
Opening on St. Patrick’s 2014, Parson’s Pub has been bringing a touch ‘o the Irish to downtown Murphy for going on nine years. Originally opened by Colby and Marissa Beck, the pub was named after Colby’s father, a local preacher. With 67 beers on tap and good old fashioned family recipes, Parson’s Pub became a welcome part of the local scene. After seven years the Beck’s decided it was time for new ownership.
Jack and Diane Lange had been coming to the Pub since 2016, becoming local regulars in 2017 when they moved to Murphy full time. The Beck’s offered the business to the Lange’s, mainly because they knew it would remain an Irish Pub. Diane says, “We bought the Pub because Jack was bored in retirement and thought this would be and exciting adventure.” And what an adventure it’s been!
Serving over 85 beers and ciders, paired with (mostly) the same Beck family recipes, the Pub has a strong local following, all of whom are
amazing. Out of towners, some who own cabins in the surrounding areas, are also considered regulars and join in the fun when they’re in town. Some nights it kind of reminds you of the lovable ‘Cheers,’ where ‘Everyone Knows Your Name!’
Parson’s Pub could not operate without their amazing staff. Everyone who works at the Pub tries to give customers the best experience daily. They keep the atmosphere laid back and relaxed, ensuring that everyone has a great time.
Serving mostly traditional Irish dishes, some of the Pub’s best sellers are the Reuben, flat bread Reuben, authentic Shepherd’s Pie, and the Pretzel Bites with Guinness cheese. You’ll also find Corned Beef and Cabbage, Bangers and Mash, Fowler’s Pie, and of course, Fish and Chips. Daily soups and salads, Brunswick Stew, and delicious sandwiches are all served at reasonable prices. Dessert? Guinness Chocolate Cake, English Whipped Pie or Irish Cream Pie!

BBQ Dave is Back with Smoky Mountain BBQ!16+ Years and Still Smokin.’
Being born and raised in Murphy, NC, one of ‘BBQ Dave’s’ first jobs as a teenager was work ing at a barbecue restaurant near the Tennessee line which means he’s been cooking barbecue more than half his life. Dave says, “I’ve worked many other jobs but my BBQ is something that has always made people around me happy. I cherish the fact that BBQ brings people and communities together which has always been important to me. I’m not good at much of any thing most days, but I can back a trailer and I can smoke some BBQ!”
Smoky Mountain BBQ Company was found ed in 2021when several catering companies contacted Dave requesting that he start his own BBQ catering gig. Dave had been out of com mission for a year recovering from a motorcycle accident, so this was his chance to jump back in the game. Dave and Emily Handford decided to take the leap and purchased a concession trailer.
News traveled fast that ‘BBQ Dave’ was back!
Requests poured in and the business blossomed providing the customer base needed to support a brick-and-mortar restaurant. Only one year later on June 28th, 2022, they opened their Downtown Murphy restaurant located in The Historic Mill Building.
Moving into the Mill Building gave the Handford’s the opportunity to expand the menu. Developing his recipes by trial and error and sharing his creations with family and friends, helped BBQ Dave decide which items would keep customers coming back. And come back they do! Favorites include delicious pulled pork, ribs, burgers, JW Smoky Dogs and Dave’s Famous ‘Best in the Tri-State’ Brisket– which also comes as a Brisket-Mac Taco, yum. Salads, outstanding sides, great folks, and fun events like Live Music and Prime Rib Night make Smoky Mountain BBQ the place to be.
Smoky Mountain BBQ is also the first bar becue restaurant in Cherokee County to serve beer. Pair a cold beer with Dave’s award-winning brisket, and all is well with the world. General Manager Zachery Hales, a trained chef who
graduated at the top of his class with a culinary degree, keeps the beat going strong. Emily and David Handford love their work and totally enjoy sharing the fun of running the restaurant. There is something significant yet familiar about autumn. The air is sharp and clear. Leaves turn brilliant shades of red, orange and yellow and float to the ground. Despite the inevitable winter, we toast the harvest with a hardy cheer for the abundance of our favorite fall fruit– the apple.
Apple Tarts with Rosemary-Lime Sugar
Ingredients
1 sheet frozen puff pastry cold but thawed (8.5 oz/ 240g)
2 granny smith or other tart apples, peeled, cored, halved and sliced thinly (about 1/16 inch)
1/4 cup granulated sugar 95g
2 teaspoons fresh rosemary leaves from about 1 medium sprig, plus more for garnish zest of 1 lime about 1 teaspoon
1/4 teaspoon coarse sea salt
2 tablespoons cold unsalted butter cut into small cubes (30g)
2 tablespoons apricot jelly or jam optional, for glazing
Instructions
1. Preheat oven to 400°F. Line a baking sheet with a sil-pat or parchment paper.
2. Make the Rosemary-Lime Sugar: In a medium mixing bowl, add the sugar, salt, lime zest and the rosemary leaves. With your fingertips, mix it all together, rubbing it gently until it’s combined and fragrant. Set aside.
3. On a lightly floured surface, unfold puff pastry and, using a rolling pin, gently roll it into a 15 x 12 inch rectangle. Cut it into 4 squares.
Transfer to the lined baking sheet. With a sharp knife, using gentle pressure, score a border about 1-inch from the edges, but don’t cut all the way through the dough. Inside the rectangles, poke dough all over with a fork. (Dough should be as cold as possible when you bake it so refrigerate until the apples are ready).
4. Layer the apple slices in two rows, overlapping them slightly, leaving the border edge bare. Sprinkle with the rosemary-lime sugar, then dot the surface with butter cubes. Bake for 25-30 minutes, until the pastry is golden brown and the edges of the apples start to brown. Let cool for at least 15 minutes.
5. If you want the tarts to look shiny and glazed, add apricot jelly into a small dish and thin with 1 tablespoon hot water, then brush glaze lightly over the apples.
Note: This recipe makes four tarts, yet can be easily doubled but use two baking sheets so you don’t overcrowd them.

Baked Apple French Toast
French Toast Ingredients
One 1-lb challah or raisin challah
5 large eggs
1½ cups half & half
3 tablespoons maple syrup
2 tablespoons bourbon (optional; replace with apple cider or half-&-half if desired)
1 teaspoon vanilla extract
Heaping ¼ teaspoon salt
Apple Topping Ingredients
4 tablespoons unsalted butter
4 large Granny Smith apples, peeled & sliced thinly
¼ cup + 2 tablespoons packed dark brown sugar
6 tablespoons maple syrup
1 teaspoon ground cinnamon
French Toast Instructions
1. Butter a 9 x 13-inch or 3-QT baking dish. Slice the bread into ¾-inch-thick slices.
2. In a large bowl, whisk together the eggs, half & half, maple syrup, bourbon, vanilla, and salt.
3. Dip each slice of challah into the custard mixture for about 5 seconds, then arrange in an overlapping pattern in the prepared baking dish.
Be sure the entire bottom of the dish is covered with the bread. Pour any remaining custard over the bread. Set aside.
Apple Topping Instructions
1. In a large sauté pan, melt the butter over medium-high heat. Add the apples, brown
sugar, maple syrup, and cinnamon. Cook, stirring frequently, until the apples are softened and the sugar-syrup is thickened, about 8 minutes. Spoon the apples and sugar-syrup evenly over the bread, making sure not to leave any of the syrup behind. If not baking immediately, cover the dish with plastic wrap and refrigerate overnight. Otherwise, proceed with the recipe.
2. Preheat the oven to 350°F and set an oven rack in the middle position.
3. Cover the baking dish with aluminum foil and bake for 25 minutes.
4. Remove the foil and continue baking until puffed and golden, about 20 minutes more. 5. Remove from the oven and, using a fine sieve, dust with the confectioners’ sugar. Serve with maple syrup.
Apple & Butternut Squash Bruschetta
Ingredients
Butternut Squash – feel free to buy a whole butternut squash, peel it, dice it and remove the seeds. Or you can buy already peeled, cubed butternut squash in the produce section or frozen on the freezer aisle
Apples – I used fuji apples for this recipe, but other types of apples can be used if you’d like!
Olive oil
Spices: Ground cinnamon, Ground nutmeg,
Allspice, Ground cloves
Kosher salt Black pepper
French bread or baguette
Ricotta cheese or goat cheese
Garlic cloves
Fresh sage leaves
Balsamic Glaze – order it online or find it at in grocery stores near the balsamic vinegar.
Instructions
1. Preheat the oven to 425° F.
2. Toss the butternut squash and apples with 2 tbsp olive oil, ground cinnamon, nutmeg, allspice, cloves, ½ tsp kosher salt and ½ tsp black pepper.
3. Place in an even layer on a baking sheet and into the oven for 15 minutes.
4. While the squash and apples are roasting, brush the sliced bread with 2 tbsp olive oil, set aside.
5. Combine the ricotta cheese with the remaining ½ tsp black pepper and ½ tsp kosher salt, set aside.
6. In a small skillet, add the remaining 2 tbsp olive oil over medium high heat.
7. Add the garlic and sage leaves, saute for 1-2 minutes.
8. Remove from the heat and toss with the squash and apples when they come out of the oven.
9. Place the slices of bread into the oven for 4-5 minutes, or until toasted to your liking.

10. Remove the bread from the oven and top with the ricotta cheese, then the roasted squash and apple mix.

Bread Ingredients
1 16 ounce loaf brioche or challah bread
3 medium Granny Smith apples, peeled, chopped ¼-inch
2/3 cup chopped walnuts
2/3 cup dried cranberries
Custard Ingredients
5 large eggs
1 egg yolk
1/2 cup applesauce (regular, not unsweetened)
1/2 cup granulated sugar
1/3 cup packed brown sugar*
1 3/4 cups milk
1 3/4 cups heavy cream
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
1/2 tsp EACH ground nutmeg, ground ginger
Caramel Sauce Ingredients
12 tablespoons Danish Creamery Butter
3/4 cup packed brown sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350 degrees F. Cut bread into 1-inch cubes. Spread cubes into an even layer on a baking sheet and toast for 7-10 minutes or until dried out but not hard/crispy.
2. Meanwhile, lightly grease a 9×13 baking dish. Whisk all off the custard ingredients together in a medium bowl; set aside.
3. Add the bread, apples, walnuts and dried cranberries to a separate large bowl and toss to combine then pour into the prepared baking dish. Pour the custard over top and let it sit for a couple minutes, then press down on the bread to totally submerge it (I just use my hands).
Let the casserole rest for 15 minutes, then top evenly with cubed butter.
4. Bake uncovered at 350 degrees F for 45-55 minutes or until the edges look set and a toothpick inserted into the center comes out with a few moist crumbs but without any raw/ wet custard. Cool on a baking rack for 10-15 minutes before serving. Meanwhile, make the caramel sauce:
5. Caramel Sauce: Melt butter over mediumhigh heat in a small saucepan. Add brown sugar and heavy cream, whisking until sugar dissolves and sauce is heated through. Remove from heat and stir in vanilla. You can make the caramel ahead and reheat when ready to serve but you might need to add a little extra heavy cream as sauce thickens upon standing.
6. Pour desired amount of Caramel Sauce over the bread pudding and serve warm.

Ring Style Apple Fritters
Ingredients
Apples, sliced thinly and cored
1 cup milk
1/2 teaspoon cinnamon
1/4 cup sugar
2 Tablespoon vegetable oil
1 egg, beaten
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
Instructions
1. Start by peeling your apples, and slicing them thinly. I like to use a nice, tart Granny Smith apple in these. A mandolin is useful to make perfectly even slices.
2. Cut out the center core area of each apple ring.
3. Mix all batter ingredients together (everything except the apples).
4. Dip apples in the thin batter and fry until golden brown.
5. Place the golden apple fritter rings on a paper towel to soak up any excess oil

Monthly Benton McKaye Trail Association Hikes BMTA normally schedules four or five hikes per month, some “leisure” hikes that are shorter and easier and some 5 to 8 miles and of moderate difficulty. In addition, we have occasional backpacking hikes and more difficult ones that might be called “hardy hikes.” Occasionally we co-sponsor hikes with other organizations. Some, but not all, of our hikes are “dog friendly.” Although more hikes are in Georgia than the other states, you will find hikes in all three BMT states: Georgia, North Carolina, and Tennessee.

Washington and Henry Knox declared ten mil lion acres in Georgia Territory for the Cherokees and twenty million acres for the Muscogee (Creeks) after the Revolutionary War.
Each chapter has many re searchers, teachers, retirees, and historians, as well as just ordinary people, who love history and are working to locate the records within the 12 counties involved with the removal of the five “civi lized” tribes.
What is the Trail of Tears Association?
TThe National Trail of Tears Association, TOTA, was founded in Arkansas in 1993 and is spon sored in partnership with the National Park Service out of Santa Fe New Mexico http://www. nps.gov/trte. Since then nine state chapters were founded to organize efforts in the preservation and education of the public as to the history of the Cherokees. These are Alabama, Arkansas, Georgia, Illinois, Kentucky, Missouri, North Carolina, Oklahoma, and Tennessee.
Those are the Cherokee, Muscogee (Creek), Chickasaw, Choctaw, and Seminole tribal nations. Each state addresses the specific issues that evolved within their state. Georgia, in particular, is considered to be the homeland, although was not included on the original Trail of Tears maps for mulated in the 1980’s. It was the Georgia Chapter’s goal to get this changed and even before it actually happened, members had begun working on establishing the routes through Georgia and the missing portions not included in that origi nal map.
From July 2006-March 2009 Congressman Zach Wamp of Tennessee directed the National Park Service to make a recommendation to ex pand the Trail of Tears to include not just the routes of removal but the ancestral homelands. The Omnibus Public Land Management Act HR146 was submitted, passed, and sign into law March 30, 2009. The Trail of Tears now includes North Carolina, Alabama, and Georgia in addi tion to the Benge and Bell route arteries missing from the original research materials.

The pandemic recently put a crimp in our efforts and we have no less than seven more sites to sign, document, and tell everyone what happened there. The major problem is that most of us are ag ing out of being able to continue to do what still needs to be done. I myself have spent 22 years with the Georgia Chapter and am serv ing my second term as the chapter president. I’m only one of a dozen dedicated research and volunteer members of this association. We need people who are interested in working in their county to form a committee and do the research that still needs to be done. We need workers in the field to pick up and carry on after we are gone. My grandmother was a wise woman and always told us to bloom where we are planted and to have a goal in life so that someone would know you had been there.

Our objective is to Preserve, Interpret, and Promote the history and heritage in Georgia of those who came before us. The Georgia Chapter came about in 1996. We work with local histori cal societies and other organizations to verify and document the events of the removal and to locate any surviving and viable sites related to the heritage of the Cherokees and Creeks of what was known as the Cherokee Nation of Georgia. It included portions of Tennessee, North Carolina, Alabama, and Georgia when General George
Since becoming an official arm of the National Trail of Tears Association we have worked hard to document, certify, and map out sites that were important to Cherokees and Muscogee Nations East. We work with educational facilities that include university archaeology, history, and ethnological students and classes. We work with dendrochronologists, spend hours in state and national archives researching records and in local libraries finding those hidden treasurers stuffed away in file drawers and long forgotten.
In the years that I have written articles to tell the public about this history and heritage in just Georgia, I have only scratched the surface. Currently we have seventeen sites that have been documented, certified, and signed. Those brown and white Trail of Tears signs you see along the
