ith the sea to your left and vines to your right, Divine Domes McLaren Vale offers four five-star luxurious bed and brekky glamping tents with all the frills. The location couldn’t be better, as you have perfect views of Oliver's Taranga and the world-famous d’Arenberg Cube on the horizon.

The first of their kind in South Australia, the domes are architectural marvels, which have been designed to blend nature and comfort, seamlessly. They’re all super spacious and have been styled to perfection with fancy king beds, mini kitchens and magnificent bathrooms. And all four domes have a clawfoot outdoor bath! Can you imagine? The magic really begins when the sun goes down. Each dome features a transparent ceiling, where you can look up to the starry sky from the comfort of your warm bed, or even from the shower. If you're thinking, who are the deadset legends that brought these domes to Adelaide? Husband and wife owners Tom and Annamieke Wilds made the move from Brissy after falling in love with our gorgeous state a couple of years ago. “People thought we were crazy moving

states at our age, but we’re so happy we did it and now all our friends and family want to move here, too,” says Annamieke. The pair always wanted to have a quirky accommodation and now they’ve made that dream come true in the heart of one of Australia's most popular wine regions — it’s the icing on the cake! Highschool sweethearts Tom and Annamieke believe life is meant to be enjoyed. “It’s about escaping the ordinary and detaching from the everyday grind. This one-of-a-kind guided expedition takes you deep into the Ranges, from the comfort of an open-air, custom-built four-wheel drive. It’s jumpy, it’s wild and you’ll literally be on the edge of your seat for at least 90 minutes. Along the way, your lovable guide will show you some of the spectacular geological formations, ancient granite peaks, and plenty of breathtaking views with opportunities to stop and photograph. Your campsite, perched at the top of the ridge, has 360-degree panoramic views of the surrounding landscape. You’ll feel so tiny and insignificant — like you’re the only ones on earth! The evening unfolds with a delightful outback dinner cooked over an open fire. “How do you like your steak? Medium? Rare? Or well done?,” is the only tough decision you’ll have to make all night.

YOU’LL FEEL SO TINY AND INSIGNIFICANT — LIKE YOU’RE THE ONLY ONES ON EARTH! And no need to worry if you don't eat red meat. They cover all dietary requirements — the barramundi is sensational! As the sun goes down, the night sky comes alive and you’ll quickly realise why the region has recently been certified as the only Dark Sky Sanctuary in SA (and only one of two in all of Australia!) Under a gazillion stars, you can examine the constellations through a telescope or simply just take it all in by the campfire while you enjoy a cuppa or a glass of wine. The best part happens next… An opportunity to sleep under the stars! In a luxurious swag complete with Egyptian cotton sheets, a mattress and a toastiewarm doona to top it off, you’ll fall asleep while looking up at that majestic night sky. This was my favourite part and I’m not even a camper! It was quite profound. At 5.45am the horn sounds and you whack on a jacket, some shoes and meet your guide, who’ll offer you a coffee in one hand and a banana in the other. Still in darkness, you climb aboard the fourwheel drive and head 15 minutes up the mountain to watch the sun rise over what looks like an oil painting. Your guide will enlighten you with the history of Arkaroola’s delicate balance of flora and fauna, showing a deep

appreciation for the need to protect and conserve these environments for future generations. The only thing left in the tour is brekky — and of course another coffee before packing up your bags and heading back down the rugged mountain range to where it all began. If you’re up for anything and really want to immerse yourself in the great Australian outback, or maybe like me you have some sort of gravitational pull towards the incredible Flinders Ranges, this tour is an absolute must! I never expected to feel so deeply moved and so connected to the universe as I did during this experience. Our guide Macca, sleeping under the stars in a swag, the Arkaroola sunrise — these moments will stay with me, not because they’re iconic experiences, but because I was completely surprised by them. THIS IS A SUPERB WAY TO SEE A WHOLE LOTTA EUROPE IN A SHORT AMOUNT OF TIME.

C

ruising is a whole new world for us, and since we sailed the Mediterranean on board Norwegian Breakaway (one of the incredible ships in the Norwegian Cruise Line fleet) we’re now totally convinced that it’s the best way to travel, especially in Europe.

This is a superb way to see a whole lotta Europe in a short amount of time — being gently rocked to sleep at night while listening to the sound of the ocean and then waking up in a new destination each day. Not to mention the ease of travel. We visited all the top spots on our hit list and only unpacked once. Every little detail was taken care of so we were free to just enjoy the entire day at each port.

WE VISITED ALL THE TOP SPOTS ON OUR HIT LIST AND ONLY UNPACKED ONCE.

We started in Rome and this city was one of our favourites. There’s so much rich culture and history, and around every corner there’s another iconic sight. We actually cried when we caught our first glimpse of the Colosseum! We made a wish at the Trevi Fountain, traversed the Spanish Steps, shopped up a storm wherever we went and ate everything in sight. Once we had ticked off all the major attractions, we were happy to just wander aimlessly and soak in the Roman way of life. We felt so relaxed and happy, which set the tone for the rest of the trip.

Next stop was Santorini and the stunning contrast of the white-washed buildings, the dramatic cliffs and the glistening turquoise ocean made this the most scenic destination on our itinerary. We enjoyed local Greek food like dolmades, saganaki, calamari and souvlaki. And once our tummies were full, we wandered the quaint, cobble-stoned laneways perusing jewellery and fashion stores. Safe to say we contributed to the local economy! We didn’t want to leave Santorini, but our next stop beckoned: Athens, the birthplace of democracy and home to the original Olympic Games. Our fave moment in Athens was taking a selfie in front of the Acropolis — to see these ancient ruins in real life was just mindblowing. We can also highly recommend the gyros in Athens. YUM! As we said farewell to Greece, our sights were firmly set on our next destination, Malta. Mdina, the fortified city in the north of Malta, exceeded all

of our expectations. The laneways were absolutely stunning and everywhere we looked was another Instagram-worthy spot! This is definitely a place we will come back to for a longer stay. By nightfall, we were bound for Sicily, an island off the southern coast of Italy. Once docked, we made our way from the port of Messina straight to the pretty-asa-picture coastal town of Taormina. The distinctive sound of the piano accordion filled the laneways lined with little shops, all proudly displaying citrus-patterned plates, bowls and printed fabrics, as well as the famous head statues (known as Testa di Moro) which are unique to this area of Italy. The next day, our ship docked in Naples — the perfect base to start exploring this diverse region. Here, you can visit Pompeii to see the preserved ruins of the volcanic eruption, head to Positano for views along the Amalfi Coast, or stay in Naples and explore the thirdlargest city in Italy and the original home of pizza. We opted to spend the day in Sorrento and enjoyed a delicious seafood lunch. No regrets there! 37 -

We had an incredible array of activities on the ship, all day and night, with something for everyone. We took part in art and craft workshops, salsa dancing classes and trivia. And we were spoiled with a choice of great live music performances every night. On our voyage there were two headline theatre performances — Burn the Floor and Six! The Musical. The entertainment on NCL is truly world-class and there’s plenty of it… or you can be the entertainment by joining in with a bit of karaoke! To be back in Adelaide, reminiscing about our trip feels surreal. We can’t believe how many amazing places we visited and all the magical experiences we managed to squeeze into just ten days. The last port of call before heading back to Rome was Livorno, the gateway to Tuscany. We simply had to visit Florence from here and we’re so glad we did. Within minutes of arriving in the city, we wandered around a corner and were greeted with a view of the magnificent

IN THE AIR Duomo (Florence Cathedral) — one the greatest masterpieces of Gothic art and the beginning of Italian Renaissance architecture. What a dream! It’s probably time we gave you a little insight into just how fabulous our ship was. Our cruise experience on board Norwegian Breakaway was second to none. We dined in a different restaurant each night, from French and Italian, to Shanghai noodles and pub meals; not to mention the 24/7 buffet that spans almost the entire length of the ship! Our fave experience was Teppanyaki — the food was superb and our chef kept us entertained all night as he sang, chatted and cracked jokes, all while showing off his culinary skills on the hot plate.

We flew to Rome with Singapore Airlines and can see why they’re famous for their in-flight service — the delicious food, onboard entertainment, wi-fi connectivity and welcoming cabin crew made the journey to Europe an easy one, and the ergonomicallydesigned seats are very comfy for long-haul flights. They have a huge network connecting Adelaide to the rest of the world via Singapore… so, what are you waiting for? A day in the life of Rehnny WORDS Hayley Pearson He’s the busiest man in Adelaide, but somehow has time for everyone!

S

ay hello to Tom Rehn, or Rehnny as he’s affectionately known around town. Flick on FIVEaa or switch the telly onto Nine News and Rehnny will often pop up. On top of that, he’s a great husband, and doting dad and stepdad to three gorgeous boys. The juggle is real! So, how does he fit it all in with such grace and humility? Let’s go straight to the horse's mouth!

Talk us through a day in the life of Tom…

The alarm goes off at 4.30am and I hit snooze about five times before I get up. I head into FIVEaa, where I go through all the news and sports updates that have happened overnight for Sportswrap, before joining the FIVEaa Brekky Show to cover all the sport for them. And in between that, I squeeze in some live crosses to Karl and Sarah on The Today Show. Then, there’s a small window for the gym and if time permits, I’ll race home for an arvo nap. Before I know it, the alarm goes off again and I'm back in hair and makeup at Channel Nine getting ready to deliver the sport for both the 5pm and 6pm bulletins.

And then of course, I’m here, there and everywhere filming hello SA — but I plan most of that for the weekends so my family can join me.

Where’s your favourite place to holiday in SA with Sara and the kids?

The boys absolutely love West Beach Parks and there’s always so much to do. It’s so close to home, which is handy if something urgent pops up at work… or if my little guy leaves his bathers at home!

What’s been a stand-out experience for you while filming hello SA?

hello SA has allowed me to explore places I’ve never been. I'm a bit embarrassed to say this, but my wife Sara and I had never been to Kangaroo Island until I got to film over there. So when we went, we went all out! We swam with dolphins, did the wildlife parks and glamped overlooking some of the world’s best beaches.

What’s left on your SA bucket list? Maybe the new golf resort on KI, because the combination of KI and golf is simply irresistible to me. Shark diving and skydiving would also be a real rush!

We joke that you’re always eating on the show. Where are some of your favourite places to eat and drink in Adelaide? I love the flavours of ShoSho on King William Road and you’ll often find me

and my ten-year-old son Harry at Gaucho’s on Gouger Street — they have the best steaks in town!

Camping or five-star luxury?

I’m not a natural camper. Like Hayley and Lauren, I prefer the finer things in life. But I do love a cabin in a caravan park, so perhaps that’s the perfect compromise! @tomrehn9

Their stories show firsthand the impact that the Foundation has on the lives of so many South Australians. And not only that, without their support and funding, a huge amount of groundbreaking lifesaving medical research wouldn’t happen.

We couldn’t love her any more if we tried. She’s a smart, hilarious, courageous 23-year-old who happens to be battling

an incurable illness. Despite spending most days bedridden and in severe pain, she’s so positive and actively fundraises for The Hospital Research Foundation Group’s Palliative Care charity and Laurel Hospice. When Annaliese first got sick, like most of us, she misunderstood the purpose of a hospice, believing it to be a place solely for end-of-life care. Now, she knows that it’s a sanctuary filled with peace, love, comfort and happiness, offering people like her a chance to experience quality of life. At Adelady, we’re so grateful for the angels working in palliative care, supporting Annaliese and others like her.

This wonderful woman spent an astonishing 15 months in a hospital bed, far away from home after a leg amputation. Despite her hardships, Margaret has boundless positivity and enthusiasm. With one leg, she embraces life to the fullest and credits her resilience to the art and music therapy provided by The Hospital Research Foundation Group’s Creative

Health team — which helped her get through the difficult times when boredom threatened to overwhelm her. Music Therapist Dr. Patsy Tan has serious healing powers, and without the support of the Foundation, services like hers would struggle to continue, affecting the recovery and wellbeing of so many South Australians.

As well as patients, we’ve had the privilege of meeting talented doctors and scientists dedicated to saving lives. Associate Professor Susan Woods works tirelessly on a better method to test for bowel cancer. Currently, bowel cancer screening involves the ickfactor of sending off stool samples for testing, leading to low participation rates. Susan, based at SAHMRI, is developing a revolutionary pill-based test that could replace the current method, potentially increasing participation rates and the early detection of bowel cancers. She is amazing. Despite the immense potential and the staggering number of people diagnosed with bowel cancer every year, securing funding for Susan’s research was not an easy task. The grant from The Hospital Research Foundation Group allowed her to take the crucial next steps in developing her groundbreaking test.

The Hospital Research Foundation Group’s impact on various areas of healthcare in South Australia is truly remarkable. They stand beside individuals when they need it most, fighting the good fight and making a difference in the lives of countless patients. he ‘C’ stands for online Consent and is just one of the critical parts of students receiving their digital citizenship at Scotch College. Most of us are playing catch-up when it comes to all things technology and computers. We learned to use them later in life and sometimes need to ask our kids for help with TV remotes and navigating the latest apps. Fear plays a huge part in our learning as adults — the fear of being scammed online or having our identities stolen, and the fear of new technology like Chat GPT and artificial intelligence (AI) potentially threatening to take our jobs. At Scotch College’s Junior Campus, they focus more on the positives: innovative thinking, student agency and sharing a love for digital technology. In that, children learn how to stay safe online and how to look after their devices. But the bigger picture is empowering them

from a young age, to use these digital literacy skills to go big in life! “Jo Rea, our Digital Technologies Specialist, has worked hard to get the age and stage right, so when they get to social media at 13, they’re ready,” says Ieva Hampson, Head of Junior Campus. She continues, “We want to prepare them but understand that families have different situations about what they allow at home”.

YEARS 3 AND 4

The R-2 program dovetails into the curriculums for Years 3, 4, 5 and 6. In Year 3, a new digital agreement is signed and students complete a cyber security certificate, which includes how to be accountable for their conduct online. Jo says, “We want to get them into the mindset to do the right thing online. It’s understanding the power in the good stuff they can use technology for, rather than just focusing on the pitfalls and risks”.

YEARS 5 AND 6

Students get their devices for school and learn how to look after them while becoming good digital citizens. They also complete a term-long inquiry on the ethics behind AI and how to use it to their advantage, instead of only looking at the negatives from news stories featuring driverless cars and deep fakes. Every learning has a purpose and in Years 5 and 6, students gain a deeper understanding of how this machine learning will help them, rather than fostering fear.

DIGIDO DIGITAL TECHNOLOGIES CONFERENCE

One of Scotch College’s Digital Technologies Policy’s guiding principles is to equip students with the knowledge and experience to thrive in the digital world. Well, the students aren’t sitting around waiting to graduate to start thriving! In 2022, Scotch kicked off its inaugural DigiDo Digital Technologies Conference, led by Jo Rea. She says, “The conference represents something lacking for kids.

In the digital world, there’s plenty for children who love sport through e-sports, but there isn’t much at the primary school level to celebrate a love for digital learning. This is a good example of being able to do that”. Just like in the real world, this studentrun conference has a showroom filled with different technology displays. The Year 6 team organises the entire conference, including inviting other schools, plus parents and professionals who use technology in their work to present at the conference held in Scotch College’s new wellbeing centre, Purruna. “Jo is an innovator and leader in this space and has been awarded the EdTechSA Leading Light Award for 2023,” says Ieva Hampson. She continues, “In organising the conference, it’s not Jo setting it up for the children. The children are doing everything in the background as well, from creating lanyards, right through to marketing and presenting the workshops”.

Student-led panels include discussions around AI and ethics, plus conversations about digital security. DigiDo is a true test of the student agency piece — from naming the conference to speaking on the microphones and directing visitors to the different panels and displays. Jo says, “Last year I had COVID the week before the conference and when I turned up, staff said they couldn’t believe how well it went. The kids just owned it!”

THE FUTURE

“It’s so easy for us adults to just see the risks and problems inherent with digital technology, but by introducing it so early and ramping the curriculum up that way, kids develop a passion and find a real application for these tools in their own lives,” says Warren. With the assistance of external experts, parents and professionals, Scotch College’s Digital Technologies program shows students how many opportunities are out there for them in this rapidly changing world.

he Romeo's story spans generations, taking us back to 1987 when The Bangles topped the charts and eighty cents could buy you a loaf of bread. It was during this time that Antonio and Elizabeth Romeo started their journey by buying a small convenience store in South Plympton. Their children, then in their early teens, enthusiastically joined in by stacking shelves every day after school. From the get-go, they adopted the motto, "Family owned and community minded," and that still rings true today. They’ve always been dedicated to supporting local growers and producers, forming a strong bond with their community and transforming each customer into a friend. Oldest son Paul says, "It was never just about business for our family”. Most people wouldn't know that over the years they’ve donated an astounding $10 million dollars to local charities, sporting clubs,

community groups, churches and schools. Their most significant passion involves assisting children through Dreamride — an event for motoring enthusiasts to raise funds and awareness for people with intellectual disabilities. After joining their parents in the family enterprise, sons Paul, Anthony and Joseph have enhanced the customer experience by embracing new technologies, introducing cuttingedge store designs and expanding their product selection to cater for evolving dietries. Even as Mr Romeo transitioned away from the core business, his dedication remained the same and over the years, he’d often be spotted arranging supermarket shelves or restocking refrigerators, just to help. A group of incredible SA businesses have come together to create something special, by building a home on a donated block, set to be auctioned off for charity in 2024 as a no-reserve auction. Who are the big hearts behind these plans?

The who

In late 2022, Joe Belperio, Owner and Director of Parkfield Glades Pty Ltd, donated a 495m2 block at the entrance of his new development, Emerald Way in Mount Barker. Builder Urban Edge SA quickly came on board to construct an architecturally-designed, doublestorey home. “We've been blessed and privileged to live in such a wonderful country, with fortunate times in the construction industry, so it's time to give back,” says Ameen Farah, Director of Urban Edge SA. Then, Century 21 Property People and Century 21 Special Projects (SA) joined the party and turned it into such a feel-good project! The team set a fundraising target of over $1 million, with all to be donated

to Variety SA, to support children in need. “Variety supported over 85,000 children in the last 12 months and we are always looking for new revenue streams beyond our famous motoring events and functions. The generous and kind support on this project from so many people is heartwarming,” says Mark McGill, CEO of Variety SA.

Echoes Montessori is one of seven centres operated by SA Montessori. Founded by CEO Barbara Langford in 1989, the first centre, called Jescott Montessori, was created so her daughter Jessica could attend. Jessica loved it so much that she became a teacher there, before eventually becoming her mum’s business partner — making Echoes Montessori an intergenerational project in more ways than one. Montessori education provides an exceptional foundation for a child’s lifelong learning journey. It nurtures a child’s natural curiosity and empowers children to develop independence while also cultivating respect and empathy for others. The amazing foundation of Montessori learning is enriched by the presence of the Encore residents. “Day to day, we have our children come into our classroom, but we have the added bonus of interacting with our beautiful grandfriends who join us for our intergenerational learning,” says Jessica Langford, Co-Founder of Echoes Montessori and Managing Director of SA Montessori. Whether it’s planting and playtime in their shared community garden, building and fixing in the workshop, or story time and baking, the activities enjoyed by the kids and elders are something so special. And this didn’t just happen by chance — it was designed that way.

“The village was built in a partnership between ECH and SA Montessori, and we worked really closely with the amazing Walter Brooke architects to identify exactly what we needed in the preschool space, the apartment space and the shared space to really facilitate that intergenerational living,” Claire Scapinello, CEO of ECH explains. Ross and Jeanette are two of the residents involved in the program and absolutely love it. Jeanette said while putting a dollop of cream on the scones delivered to her by the kids, “It’s so lovely to mix with the children. Our grandies live interstate, so we’ve made so many friends here both young and old; it’s truly amazing!” The community garden, workshop and art studio allow the intergenerational learning to flourish, while giving the grandfriends a real sense of purpose. “If you don’t have grandchildren, you miss that opportunity and I think it provides a great environment for them to form oneon-one bonds that they wouldn't get in the outside community,” says Claire.

The residents can interact with the children as little or as much as they wish and they all bring their own unique skills with them. There are former teachers, engineers, doctors and tradies who pass down their skills, bringing the village to life. And the kids LOVE it! “They read to me and play with me, and sometimes we bake and get our hands messy,” says five-year-old student Emily. Mediterranean-style roast chicken A family meal that’s set to impress. Time 3 hours and 20 minutes Serves 4–6 Recipe Laura Bakhtiarian Photos Naomi Giatas 1 whole Lilydale Free Range Chicken, butterflied Marinade ⅓ cup extra virgin olive oil Juice and zest of 2 lemons 1 tbsp dry oregano 1 tbsp fresh thyme 1 tsp coriander 1 tsp paprika 1 tsp cumin ½ tsp black pepper 1 whole garlic, cloves peeled and minced Salt, to taste Salad 1 ½ cups dried pearl couscous, cooked as per packet instructions Salt and ground black pepper, season to taste ¼ cup extra virgin olive oil 1 tsp Dijon mustard ½ tsp honey 1 tsp finely grated lemon zest 2–4 tbsp fresh squeezed lemon juice, to taste 20g pine nuts, toasted 200g cherry tomatoes, halved 200g Sicilian olives ½ cup coarsely chopped fresh herbs; use any combination of fresh parsley, coriander, basil or dill ½ red onion, finely chopped • Mix the marinade ingredients together in a small bowl. • Place the chicken in a large dish. Apply the marinade underneath the chicken skin and rub some on the back of the chicken as well. Keep the chicken flat with skin side up. Refrigerate for 2–4 hours. • Preheat oven to 220°C fan-forced. • Transfer chicken to a well-greased oven pan. Roast for 10 minutes, then turn oven down to 180°C and roast for a further 1 hour and 15 minutes, or until cooked through.

• While the chicken is cooking, whisk together the oil, mustard, honey, lemon zest and juice, and salt and pepper for the salad. Add drained cooked couscous to the dressing and mix well, then stir through the olives, tomatoes, herbs, pine nuts and red onion. Set salad aside. • Remove the chicken from the oven and set aside to rest for 10 minutes, before slicing into portions. • Best served with salad, hummus, chilli oil and burnt lemons.

Time 30 minutes Makes 6–8 waffles Recipe Laura Bakhtiarian Photos Naomi Giatas 3 eggs 230ml milk 125g unsalted butter, melted 260g plain flour 32g caster sugar 50g Primo Australian Bacon, diced 3 tbsp maple syrup 2 pieces Primo Australian Bacon, for garnish • In a pan over medium heat, fry the diced bacon until golden and crispy. Add maple syrup to the pan and cook for 2–3 minutes. Set aside to cool slightly. • Whisk together the eggs, milk and butter until well combined. Add flour, sugar and bacon pieces and stir until combined. • Pour batter into your waffle machine and allow to cook (follow machine instructions). • Serve your warm waffles with extra pieces of cooked bacon, fresh berries, ice cream and more maple syrup.

Time 2 hours and 50 minutes Serves 10–12 Recipe Laura Bakhtiarian Photos Naomi Giatas 1 pre-made sweet tart case 50g dark chocolate shavings, to garnish Chocolate Mascarpone Filling 170g dark chocolate, finely chopped 50g caster sugar 2 tsp vanilla paste 80ml PURA Thickened Cream 170g mascarpone cheese Coffee Mascarpone Topping 225g mascarpone cheese 240ml PURA Thickened Cream 50g caster sugar 2 ½ tsp espresso powder • Prepare your pre-made tart case as per packet instructions. Chocolate Mascarpone Filling • Combine chocolate, sugar, vanilla and cream in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until smooth. • Add mascarpone into a separate mixing bowl. Pour chocolate mixture into mascarpone and whisk until completely combined. Pour combined mixture into the tart shell, smooth the top with a spatula and place in the refrigerator to set. Coffee Mascarpone Topping • In a very small bowl, mix espresso powder with ½ teaspoon of water, stirring until fully dissolved. Add an additional ½ teaspoon of water if necessary. • Place mascarpone, cream, sugar and espresso mixture into the bowl of a stand mixer fitted with the whisk attachment. • Mix on medium speed until firm peaks form and coffee mascarpone mixture holds its shape. • Transfer mascarpone mixture to a piping bag fitted with a large round tip (or cut a hole at the end of a plastic zip lock bag). • Remove tart from fridge and pipe dollops of coffee mascarpone across the top in a circular pattern. Continue until chocolate filling is completely covered with coffee mascarpone. • Sprinkle chocolate shavings over tart. Return to fridge until ready to serve.

Time 55 minutes Serves 12–14 Recipe Laura Bakhtiarian Photos Naomi Giatas Biscuit 225g plain flour 75g cornflour 250g Western Star Chef’s Choice Unsalted Butter, softened 2 tsp vanilla paste 80g icing sugar mixture Filling 120g Western Star Chef’s Choice Unsalted Butter, softened 165g icing sugar mixture or pure icing sugar 3 tsp lemon rind, finely grated 2 tsp lemon juice • Preheat oven to 160°C fan-forced. Line two baking trays with baking paper. • Sift the plain flour and cornflour into a bowl, then set aside.

• In a large bowl, add the butter, vanilla paste and icing sugar mixture. Beat with a stand mixer or hand-held beaters until smooth and creamy. • Slowly add the sifted flours, mixing between each addition until combined. • Roll mixture into level teaspoon-sized balls and place 5cm apart on the prepared baking trays. Press the tops of the balls lightly with a fork. • Bake for 15 minutes, then remove from oven and leave to cool on the trays for 10 minutes before moving to a wire rack to cool completely. • To make the filling, beat the butter, icing sugar mixture, lemon rind and lemon juice until smooth and creamy. • Pipe a teaspoon of filling onto the flat side of one biscuit, then use another biscuit to sandwich them together.

We used: OREO Cookies. Everyone loves an OREO! Why? Because they nail that perfect balance between cookie and creme. Uncover the layers of deliciousness with one simple twist — best enjoyed in a decadent dessert, or as a moment of indulgence just for you.

• Line a springform tin with baking paper. • In a food processor, crush OREO cookies to a fine crumb. Add to a bowl with the melted butter and stir until well combined. Pour into the base of the springform tin, pressing down firmly. Move to fridge to set. • In a bowl, whip the cream cheese, icing sugar and vanilla paste. Reduce the speed of the mixer and add the whipping cream. Increase the speed, beating the mixture to a soft peak consistency. • Fold in the chocolate baking chips. Remove the tin from the fridge and spoon in the filling, using a spatula to smooth the top. Place in the fridge to set for 4 hours. • To make the chocolate ganache topping, combine melts and cream in a heatproof bowl over a saucepan of simmering water. Stir until smooth. Remove from heat. Cool slightly before spreading onto the cheesecake. • Return to the fridge and allow to set overnight. • Decorate with Mini OREO cookies and whipped cream.

Why slave over the stove, crafting a creative cake, when you’ve got Kytons Lamingtons to do all the heavy lifting for you? You can pick your favourite lammie flavour from Traditional, Coffee, Raspberry or bite-size Mini Lamingtons, then get to work laying them out to mark the occasion and decorate with fresh fruit, lollies, chocolates, candles, or leave them as-is in their scrumptious glory. Some other lamington display ideas include: • Numerically for a birthday celebration • A love heart for Valentine’s Day • A Christmas tree for the silly season We’ve opted to celebrate 85 years of Kytons, with an 85-lamington cake of course!

Kytons Christmas Puddings, which recently won first prize at a National Christmas Pudding Competition, are packed with festive flavour and are the perfect base for these pudding pops. Simply break off sections of a Kytons Christmas Pudding and roll into a tight ball (they hold together because their puddings are so moist!). Then, dip into melted chocolate and leave to set on a tray lined with baking paper. Before the chocolate is completely hard, insert two pretzels as ears, pop on two edible googly eyes (found in your local supermarket) and a red M&M for a nose. Voila — Rudolph and his friends have arrived! Alternatively, you can simply dress up the Kytons Mini Christmas Puddings in a similar way. Her apprenticeship refined her skills in the kitchen, but after years of working long hours doing what she loved, she thought it was time to do that for herself. When Nic and her partner, Julie, peered inside the old warehouse on Manton Street in Hindmarsh, they saw the potential of this magical place that looked like a time warp from the ‘60s. They cleaned it up, dropped in an industrial kitchen… and Pony and Cole was born in 2017! And if you’re wondering what’s in a name? It’s named after Nicolle (Cole) and her sister, Simone (Pony), who’ve gone by these nicknames since they were kids.

ig Twist by Big Shed Brewing was created to turn pop-ins into memorable nights with friends. This brand-new, readyto-enjoy range by the team known for brewing the most epic beers is something none of us saw coming. They’d been circling the idea of doing an alcoholic ginger beer for a while. “We found that most of the popular ginger beers on the market are sweet. Are they sweet because that’s what people want, or sweet because that’s what people have been given?” says Craig Basford, CoOwner and Creator at Big Shed Brewing Co. So, they came up with something that contains real ginger and is totally moreish. Ph o
