Hanging at Betty’s Burgers. It doesn’t get any better!

It all started with an Insta post a few months ago. I shared a photo of Hayley and Lauren celebrating the backbone of Adelady — their friendship. The outpouring of love was instant and a brilliant reminder of how important friendships are.

So, we asked all of YOU to share your besties with us. And that’s when Betty’s Burgers came on board with a comment…

“More of this please!!! Your genuine care for each other is seriously so inspiring. We LOVE BESTIES, they really do make the world go around. Cheeky idea… should we invite all of SA’s besties to Betty’s and have a partyyy?”

Of course, the answer was a big YES.

Hundreds of people wrote in, sharing stories of their most treasured friendships. Our team spent hours reading them all, sparking so many conversations about our own besties. But finally, we narrowed it down to five fabulous BFFs.

We invited them along to a photoshoot to celebrate friendship. Betty’s Burgers Hyde Park generously kept us all fully stocked with burgers and onion rings, as we spent one glorious morning swapping stories and making new friends.

Eight years ago, Rosina and Fiona both had boyfriends (now husbands) that knew each other. But that’s not the real love story here!

“It started with lots of double dates and now we spend every weekend together. We shop together most weekends and we’ve got our first trip together to see the Jonas Brothers. We can’t wait,” smiles Rosina.

“We’ve been through so many big life events together. We both got engaged and married, we finished uni and now I’m pregnant with my first baby. It’s been so special to go through all of these big moments with Rosina by my side,” says Fiona.

This is just the beginning. These two besties have a lifetime of friendship ahead of them, with plenty of dinner dates and board game nights to look forward to.

Jessica and Renee are about as close as you can possibly get to another human — they’re identical twins!

“The only time we’ve ever been apart was in grade three when we were split into different classes. We’ve worked together, we’ve lived together, we’ve done it all,” says Jessica.

And now, Jessica is mum to two beautiful kiddos, making Renee the ultimate aunty. “I think of her kids as my kids. I just love them so much, we still do sleepovers and it’s always just so special.”

Their bond goes well beyond your average friendship. “People think it’s crazy, but we can sense when the other person is upset. When Renee was over in Bali, I could just feel when something wasn’t right — and one text to her confirmed that I was spot on,” says Jessica.

As for any other perks of being besties with your identical twin?

“I don’t buy clothes, I’ve got Renee’s wardrobe,” laughs Jessica.

Angela and Cassandra Work besties! They met back in 2004 when they were posted to Port Augusta as part of the police force. Their housing was on the same street, so when Cassandra stopped by to welcome Angela, “We did some friendship flirting. And we’ve been best friends ever since,” Cassandra laughs.

“It’s just easy. There’s no pretence, no competition, we can talk about everything and nothing. She’s always the first person I call,” says Angela.

They’ve always lived near each other, had kids at the same time, got married at the same time and even had a joint honeymoon in Europe!

Once the shoot was over, we left these two besties deep in conversation and drinking Betty’s rosé. Now that’s friendship!

Raelene and Kathy

We all left the shoot thinking, when we grow up, we want to be just like Raelene and Kathy!

They’ve been friends for 71 years, ever since their first day of school. And when they graduated, they both got jobs together at the Port.

“When we were working, we’d meet up for lunch. Then after work, I’d get home and run to the phone box and call Raelene! It’s not like we had anything more to say, but somehow we always had something to chat about,” says Kathy.

“We’ve done everything together: pilates, yoga, gymnasia, adult tap dancing. It’s so much easier to do new things when we’ve got each other,” says Raelene.

These girls had everyone in stitches throughout the day. They finish each other’s sentences, erupt into giggles and tell some incredible stories that honestly can’t be repeated in print.

At a glance, you’d be forgiven for thinking these girls were sisters!

They became fast friends on a uni study tour to America many moons ago and are celebrating a big moment in their friendship — after five years of Nicci living in Queensland, she’s back in SA!

“When she called to say that she was moving home, I instantly started crying happy tears. I just kept saying, ‘She’s coming home, she’s coming home!’” says Amy.

“We stayed in contact over the last five years and Amy visited me every year. Now I’m back, we’re continuing the traditions we started in Queensland — like weekly burger dates,” says Nicci.

Seeing these two together, it’s like no time has passed. They’re still as close as ever, proving once and for all that love knows no distance.

Saving a town

Let’s set the scene…

There’s a world of outdoor action only 10 minutes up the South Eastern Freeway in the Adelaide Hills. And it’s not just for junior adventurers…

A trip to Woodhouse is a rite of passage for any South Australian child. Most have been to this Scouts SA property specialising in group accommodation at least once on school excursions and camps, or through scouting. Some of the more adventurous spirits might’ve returned for birthday parties or camping trips with their own families.

Known for their impeccable hospitality, the family behind Adelaide’s iconic venues, Chianti and Bar Torino, have opened a brand-new restaurant and function space within the spectacular gardens of Carrick Hill. The loyal customers of Chianti can vouch for the incredibly warm and personal service that the restaurant’s founders, Maria and Frank Favaro, are famous for. Their two children, Nick Favaro and Jess Favaro-Richards, are now following suit!

With a wealth of knowledge behind them and a deep passion for the industry, Nick and Jess have now opened two new venues within the recently built $7.2 million development at Carrick Hill. Rozelle’s, a casual bistro, and The Pavilion function space are the new babies in the Favaro family, and boy are they something else!

This casual bistro is surrounded by the stunning gardens of Carrick Hill. “Anticipate a menu driven by our family’s love of food, flavours, sharing and creating good times. The menu is everything we love about relaxed Italian food and dining,” says Jess.

A state-of-the-art pizza oven serves up wood oven pizzas and a mouthwatering selection of scrumptious bites leaves every palate catered for. The menu’s been a project of passion for the group’s Executive Chef, Josh Cooke, who trained under British

chef Rick Stein and worked alongside the late Jock Zonfrillo as Head Chef at the Adelaide institution, Orana.

After 25 years in the business of break-ups, this is what Divorce Lawyer Rose Cocchiaro has learned about staying together.

We asked Rose for her top tips on what makes a healthy marriage...

1. Marry well

Marry someone who will stand beside you through life’s ups and downs. Someone who supports your independence, and someone who considers both of your careers and aspirations as equally important.

2. Never stop working on your marriage

Invest in your marriage. One thing my husband and I do is take an annual marriage retreat — just the two of us. This allows us time to connect and reflect on our relationship without the pressure of kids, responsibilities or rules. Have some good old-fashioned fun together!

3. Consider what role you play

If you’re constantly upset or irritated by your partner’s behaviour, have a look at what role you play. How you address an issue can play a huge part in how it’s resolved.

Communicate with kindness and try to focus on the qualities you loved most about your spouse during those early days.

4. Change leads to growth

It’s inevitable that the person you married years ago is different from the person they are today. Change is what allows us to grow, which is why I encourage people to find a way to ‘change together’. Embrace the journey of life and constantly encourage one another to be better.

5. Sleep together

Maintaining an intimate aspect to your relationship looks different for every couple. Find what works for the both of you and have open conversations about it. Where possible, sleep in the same bed to keep the physical and emotional connection alive.

6. Life is not what you see online

We’ve all looked through our screens to see a family or couple living what appears to be our dream life. Remember, we’re not always seeing the full picture and chances are, that person’s life is just as imperfect as your own! Stop comparing your marriage to everyone’s online posts.

7. Don’t let money be a reason for conflict

Address money issues head-on. Never hide assets, loans or money concerns from each other and be open about finances so you both feel informed and empowered. Something as important as the family’s finances should never be considered as just one person’s role.

8. Stay united as a family unit

Don’t let outside influences come between each other. Approach your spouse’s family with kindness and set the expectation that they do the same for you. Have clear boundaries and gently but consistently, enforce them.

She’s Channel Nine’s weather presenter, a mother of two and a super-talented musician.

Balancing the demands of the media world and the music stage, while keeping things at a calm and sunny 250 C, is all in a day’s work for this Adelady. And somehow, Jess does it so effortlessly.

She’s refreshingly humble and always professional, bringing warmth to our TV screens every night. Beyond her meteorological prowess, Jessica Braithwaite’s songs are reaching star status on the music charts.

She’s passionate about her home state and wants to share some of her favourite places with us…

Where do you love to holiday in SA?

I know this is a little biased, but I just adore Mount Gambier — my hometown! I love the gorgeous crater mountains and walking trails, the stunning coast around Port MacDonnell and the sweet little cafes along the main street. It’s just heaven for me.

You wrote the amazing theme song for our television show hello SA, so can you share what inspired you?

When I wrote Hello (You’ve Got My Heart), I was channelling the upbeat feel of hello SA. I was thinking about what it feels like to be on holiday — the feeling of freedom that comes with hitting the open road and leaving your cares behind. hello SA is such a bright and inspiring show, so I wanted to write a song that matched that vibe.

You’re a mum, musician and journalist. What does a day in your life look like?

I wake to morning cuddles with my threeand five-year-old. I really treasure this time before the business day kicks in. I usually sneak in a swim at the beach before work, even in winter. My weather presenting role at Channel Nine sure keeps me on my toes. One day I’m out in the sunshine, the next day I’m out in a ferocious wind storm!

Your job has taken you all over South Australia. Have you discovered many hidden gems along the way? Andamooka in the outback is the most unique, quirky town I’ve ever seen.

We travelled there on a stargazing tour. Those epic views of millions of stars will stay with me forever.

Have you got a fave cafe, restaurant or bar?

My hubby Thom and I love Sarah’s Sisters at Semaphore. The food is delicious and the deck overlooks the flowers from the nursery next door. It’s a real treat to relax with a turmeric latte and just soak up the colourful, peaceful vibes.

She’s down-to-earth and brings sunshine wherever she goes. Jessica is a true Adelady!

In the last issue of Adelady Magazine, we told you all about a truly incredible project happening right here in SA.

Three amazing South Australian businesses (Emerald Way Mount Barker, Urban Edge SA and Century 21) have come together to build a beautiful two storey, four bedroom, three bathroom home in Mount Barker. And once completed, this spectacular home is going to be auctioned off. Sounds pretty standard, right?

Wrong! Because this is a no reserve auction, with the net proceeds from the auction to be donated to Variety SA — the Children’s Charity. Words can’t even begin to explain the difference it will make to so many lives.

Whenever we chat with the three people leading the charge on this home, lovingly named The Amelie, they quickly turn the conversation back to the cause and the big “why?” behind this extraordinary gesture. But we think they, along with the 25+ other businesses that have offered their support, deserve a whole lot more than that.

Let’s meet the exceptional people who have turned the Emerald Way Charity Home into a reality.

Joe Belperio — Emerald Way Mt Barker

Joe is the heart and soul of this project. Having experienced the struggles of a child with needs firsthand and tragically losing his daughter Amelie at only three, Joe decided to donate a 495m2 block at the entrance of his new development, Emerald Way in Mount Barker. And that’s where it all began.

INCREDIBLE THINGS CAN HAPPEN WHEN WE ALL COME TOGETHER.

For Joe, this project and the fundraising it creates means more than anything. “It’s not a dream anymore; now it’s just exciting. Thank you to everyone that’s been involved.”

Ameen Farah — Urban Edge SA

What’s a block of land without a home to sit on top of it? There aren’t many builders out there that would do what Ameen has done by donating an architecturally-designed, double-storey home!

“We understood Joe’s story about his daughter, so when the opportunity came along to do something with him for Variety SA, we jumped on board. It’s been incredible to see other South Australians get behind the build, too — we have over 25 trades and suppliers donating part of their time or their products, including timber and steel. It’s just amazing,” says Ameen.

Greg Nybo — Century 21

The final piece to the puzzle was Greg, who actually introduced Ameen and Joe in the first place. But he was also determined to be involved and make a contribution.

Not only will Century 21 be donating their time and efforts in marketing and auctioning the house, but as a collective group, they

have also dedicated 2024 to raising funds for this cause.

“We’re unbelievably proud to be a part of the Emerald Way Charity Home team and we can’t wait for the auction! It’s going to be an auction with a twist — which means there is no reserve. So on the day, whoever places the highest offer will be the lucky new homeowner, with net proceeds from the auction donated directly to Variety SA,” says Greg.

“By raising funds for Variety — the Children’s Charity, we can make a positive impact on the lives of vulnerable children and give them a better chance for a brighter future.”

The Emerald Way Charity Home is being built as we speak and is expected to go to auction in late 2024. For updates and more information, make sure to jump online.

What is perimenopause?

It’s the transitional phase leading up to menopause, where a woman’s body undergoes hormonal changes that can cause various symptoms like irregular menstrual cycles, hot flushes, mood swings and sleep disturbances. These hormonal fluctuations can also contribute to feelings of stress and anxiety for some women, as they navigate physical and emotional changes.

What’s the difference between menopause and perimenopause?

Perimenopause is the lead up to menopause, while menopause is the point at which menstrual periods stop permanently, marking the end of a woman’s reproductive years.

Let’s talk perimenopause symptoms because there are MANY!

Irregular menstrual cycles, hot flushes, night sweats, mood swings (including anxiety and depression), insomnia, vaginal dryness leading to discomfort during intercourse,

decreased sex drive, headaches and memory problems can all be part of your perimenopausal experience.

How long does perimenopause last?

It can vary from woman to woman, but on average it lasts about four years. Factors that can influence the length of perimenopause include genetics, overall health, lifestyle factors and medical history. Once you’ve gone 12 consecutive months without a menstrual period, you’re considered to have reached menopause, marking the end of perimenopause.

What can you recommend to support women through menopause and perimenopause?

Some lifestyle changes include eating a balanced diet rich in fruits, vegetables, whole grains and lean proteins to help manage weight gain and mood changes; physical activity to help reduce hot flushes and improve overall mood and sleep; stress-reduction techniques such as meditation or mindfulness to battle stress and anxiety; and avoiding hot flush triggers like caffeine, alcohol, spicy foods and tight clothing. If symptoms persist or are not alleviated by non-pharmacological interventions, it’s advisable to seek guidance from a medical practitioner.

The goal of managing menopause is to alleviate symptoms and reduce any risk of complications such as osteoporosis. There are several treatment options available to help manage symptoms ranging from lifestyle changes to prescription medications.

The educators are all great and we’ve gotten to know them really well. It doesn’t keep changing either, so it never feels like you’re leaving the children with strangers. That consistency is really reassuring.

Our children both have the lunch the centre offers and it’s made a huge difference in them not being picky eaters. Now they eat better at home, too!

The educators also fill us in at pick-up, so we always know how they’re playing and who their friends are. You just really feel like you know what’s going on with your children.”

hummus as a snack! As a busy working mum, not having to do lunch boxes in the morning is a luxury. She also tries new things when she’s around her friends, like butter chicken or tuna mornay and loves it!

The best part is picking her up and hearing about her day. Every day she comes home with a new song she’s learnt, or she’s pumped because she made playdough from scratch — it’s the stuff I don’t always have time to do during the week and I love that she’s getting to experience it all.”

Throwback to November 2022 — Josh O’Shaughnessy was overseeing a struggling hospo venue on Goodwood Road when he found inspiration in a Netflix show, which featured an arcade-themed restaurant. He caught up with mates, Nathan Walton and Cesar Federici, two blokes entrenched in the arcade and pinball rental business. They yarned over a beer and Flipside Barcade was born.

Gaming goodness

Flipside is the dream den for gamers, home to classics like Daytona, NBA Jam and Mortal Kombat. Daytona’s multiplayer car racing is a crowd-puller, but it’s impossible to top their Super Nintendo booths — they’re pure nostalgia!

Navigating your fertility

Fertility. It’s a topic that so many of us don’t think about until we hit that magical age (whatever it may be for you) and suddenly fertility’s the centre of your universe. And then, it’s game on.

The team at Genea (formerly Fertility SA) has extensive experience and stellar results, making it one of Australia’s leading fertility and IVF clinics. Since their creation in 1986, they’ve remained at the forefront of fertility, dedicated to realising the parenthood dreams of many.

Given Adelady is made up of an all-girl team and pregnancy and babies are discussed most days, we jumped at the chance to ask Fertility Specialist Dr Michelle Wellman a bunch of questions. Over to the expert...

What are some of the fertility issues that Genea can help with?

Genea is more than just IVF. We can help couples with reproductive health assessments, ovulation disorders, fertility preservation (also known as egg freezing), donor eggs and sperm, and surrogacy. Collectively the fertility specialists at Genea in Adelaide have many decades of combined fertility experience.

What testing is involved to understand your fertility and identify any issues?

Fertility testing usually involves blood tests to measure hormones and an ultrasound, and if there is a male partner, a semen analysis can be conducted.

What’s one thing you wish every woman knew about fertility?

Fertility is time-sensitive for every woman. As age increases, fertility declines and the chances of conception decrease significantly, especially after 35. Despite technological advances like IVF, age needs to be top of mind when planning a family.

How long should you try to conceive naturally before getting professional help from somewhere like Genea?

In general, healthcare providers often suggest that couples under the age of 35 try to conceive for about 12 months before seeking fertility assistance. For couples over the age of 35, the recommendation is usually around six months.

If a couple has known fertility challenges, such as polycystic ovary syndrome (PCOS), endometriosis, male factor infertility or other reproductive health issues, healthcare providers may recommend earlier intervention.

Can you describe how science and technology play a role in your work and why they’re so important?

Thanks to recent scientific progress, medications that stimulate egg production have been created. Technology has taught us how to retrieve eggs, establish a controlled lab setting for egg and sperm interaction, and cultivate embryos in an incubated environment.

Genea also has exclusive use in Australia to the Geri® incubator, which is where your embryos are stored. It has individual chambers for each patient, plus your own time lapse camera so the scientists can continuously monitor your embryo’s development remotely instead of opening the incubator to take them in and out.

Beyond the grades

Scotch College doesn’t measure student success the traditional way.

When the Year 12 ATAR results were released in 2023, teachers at the college were thrilled to see that 43 percent of their students achieved a score over 90. But that was just the icing on the cake. “We not only help students to open the doors to do what they want, but also to do the things that they haven’t even thought about yet,” says Mr Driver.

In 2023, over 30 students walked away with their Certificate 2 and 3 qualifications in chosen VET courses. It’s this kind of advanced preparation that gives students access to their steps beyond school, whether it be university or other pathways, that they’re really excited about.

“Something we’re really proud of is the diversity of our students: we have some who aspire to do medicine and some that aspire to work on their family farm, and everyone in between. It’s wonderful for us to celebrate academic results in a really diverse way,” says Mr Driver.

There’s something reassuring about knowing that as the younger generation stands up and faces the world, they’re not just doing it with brains — they’re doing it with a nurtured and supported heart and soul, too.

From cancer, heart disease, stroke, dementia, diabetes, mental health and more — you name it, The Hospital Research Foundation Group funds it. In the last 12 months alone, The Hospital Research Foundation Group has raised funds for research and patient care in different areas — $1.3 million to breast cancer, $994,000 to healthy ageing, $500,000 to prostate cancer, $250,000 to lymphoma, $94,000 to kidney disease and $80,000 to stroke. And that’s just scratching the surface!

Its funding has also supported researchers to develop a world-first imaging device to better diagnose heart blockages, bring a ground-breaking therapy to human trials for children with brain cancer and find a cure for inflammatory bowel disease through faecal transplants.

This just goes to show that any support you give helps to bring us one step closer to a cure or treatment for our loved ones.

Life-changing patient care

The Foundation also funds programs and equipment for our local hospitals — there’s so much more of this stuff you don’t even hear about!

For example, it helped bring a state-ofthe-art laser machine to the RAH Burns Unit to improve scar healing for people with severe burns; they contributed funds to redevelop the dementia ward at Noarlunga Hospital, to maximise comfort for people with cognitive challenges; and they funded a cutting-edge ‘patient’ robot as a training tool for staff at Lyell McEwin Hospital.

Life-changing accomodation

Imagine being a young mum living 700 kilometres away and you’re diagnosed with cancer. So you have to pack up, leave your family and spend weeks away from home to receive life saving care. It gives us goosebumps just thinking about it and we haven’t even touched on the monumental costs yet.

This is the story of many regional cancer patients who face this scary and stressful diagnosis.

The Hospital Research Foundation Group established Under Our Roof, which provides family-style accommodation to country cancer patients travelling to Adelaide.

Under Our Roof has four homes in Woodville West and Bowden, all large enough for patients’ support networks to stay with them too.

“You don’t know you need it until you need it,” loving mum and wife Cindy McMahon told us, who’s battling triple negative breast cancer while living 700 kilometres away in Smoky Bay.

“To stay somewhere like this, it’s lifechanging for someone like me,” she said.

Volunteers are the lifeblood of the South Australian State Emergency Service (SES).

Our incredible SES volunteers respond to more than 10,000 requests for assistance every year. Rain, hail or shine, they’re always ready to go at a moment’s notice to provide support to communities in need.

The SES is a volunteer-based emergency assistance and rescue service that supports the people of South Australia all year round. Responding to everything from floods, extreme weather, road crashes and search and rescue, the SES has helped save the lives and protect the property of countless South Aussies.

In just one year, these devoted and highly skilled volunteers were at the forefront of two major emergencies. In 2022, they responded to severe weather and flooding in the north-west and west coast of SA, which damaged the rail network and flooded the Stuart Highway. And then, the River Murray flood, which extended into 2023.

Across our state, from the city to the remote outback, SES volunteers remain ready to provide emergency assistance to people and communities in need, as well as supporting a range of sister emergency agencies.

More than 1,700 dedicated volunteers make time in their busy work and family lives to participate in ongoing training, educating the community on how to protect themselves as well as potentially risking their own safety to help others. That’s a staggering amount of SES volunteers looking after the South Australian community and keeping us all safe.

Across the country, we recognise and celebrate SES volunteers on Wear Orange Wednesday (WOW Day) in May. But honestly, they deserve more than that.

Theatre Bugs is the largest performing arts school in South Australia. Their team of passionate teachers takes great pride in nurturing the individual child to bring out their best and encourage them to bloom.

Acting, singing and dancing classes

Theatre Bugs’ wide range of classes are carefully designed to suit children aged one to twelve. Your child will be introduced to the magical world of acting, music, movement and song with these weekly classes while building self-esteem and friendships in the process.

For children over the age of 12, Adelaide Theatre Academy provides programs in acting, singing and dancing, which are specifically tailored to older performers.

Former student Erin, 16, says, “Over the years I’ve attended Theatre Bugs,

I’ve developed so many new skills and friendships, and discovered my passion. I will always look back and know that Theatre Bugs helped shape and educate me”.

School holiday programs

Mini Bugs is a three-hour program for three to seven-year-olds. It includes imaginative play and a dance that is presented to family and friends at the end of the session. The Junior Holiday Program is a five-day workshop where students rehearse a

musical theatre play, create their own set and props, and then perform the show for friends and family at the end of the week.

“It’s always amazing to see what these young people can achieve in only five days,” says Michael Eustice, Managing Director. The school holiday programs are taught by friendly and encouraging teachers and are the perfect way to keep boredom at bay.

“It’s great to see the kids really involved in something where they don’t have to win or be the best. Instead, the kids just have fun and enjoy the moment while learning and developing skills, confidence and self-esteem,” says Michael.

Performances

Theatre Bugs students are involved in at least two performances each year, which often involve special costumes, lights and sets, and for students aged seven years and over, performing in a large professional theatre venue. It’s the real deal. In addition,

there are opportunities to participate in other exciting events such as TV work, charity concerts, Adelaide Fringe events, Christmas pageants and more!

Private lessons

If your child is eager to progress quickly in singing, dancing or acting, these oneon-one lessons can help them achieve their goals. They’re perfect for students wanting to improve their skills in a specific area, prepare for an upcoming audition or even just for those who want to build their confidence in performing in front of a group.

Best ever ham and cheese quiche

It’s a classic for a reason!

Time 50 minutes

Makes 8 slices

1 sheet shortcrust pastry

1 tbsp olive oil

1 onion, finely chopped

1 clove garlic, crushed

1 leek, washed and chopped

1 cup cherry tomatoes

6 eggs

⅓ cup sour cream

½ cup parmesan cheese, grated 300g Primo Foods Ham of your choice (we used a combo of Double Smoked Leg Ham, Champagne Ham and English Ham) Salt and pepper, to taste

• Preheat the oven to 180˚C.

• Pre-line and grease a tart tin with a removable base. Press shortcrust pastry into the base, cover with baking paper and fill with pastry beads. Blind bake for 15 minutes.

• Meanwhile in a large mixing bowl, whisk eggs and cream together until smooth. Stir in all other ingredients.

• Remove tart tin from the oven and discard the baking paper and pastry beads. Carefully pour in the egg mixture.

• Bake for 25 minutes or until set in the centre. Serve immediately, or enjoy cold.

Makes 10 pies

250g I&J Wild Alaskan Red Sockeye Salmon Portions (skin off), cubed

500g I&J Raw Prawns (tail off), whole

250g I&J King Snapper Fillets (skin on), cubed

375g I&J Basa Fillets, cubed

250g I&J Barramundi Fillets (skin on), cubed

5 sheets of shortcrust pastry

5 sheets of puff pastry

1½ tbsp olive oil

½ brown onion, finely diced

1 cup of frozen peas

50g butter

500ml whole milk, plus extra for brushing

2 tbsp dry white wine

100g crème fraîche

The zest and juice of ½ a lemon

4 tbsp flat-leaf parsley, chopped

4 tbsp dill, chopped

¼ nutmeg, ground

Salt and pepper, to taste

• Preheat your pie maker.

• Cut out 10 rounds of shortcrust pastry for your pie bases and 10 rounds of puff pastry for your pie lids using the pie maker’s accompanying cutter. Set aside.

• Heat the olive oil in a saucepan over medium heat. Add the chopped onion and cook with the lid on for 2–3 minutes or until softened. Add all seafood and cook for a further 5 minutes or until cooked through.

• Meanwhile, add the butter, flour and milk to a separate saucepan and heat over medium heat. Whisk until the butter has melted and you have a smooth, thick white sauce. Add the dry white wine, crème fraîche, lemon zest and juice, parsley and dill, then season to taste with nutmeg, salt and black pepper.

• Once the white sauce has thickened, pour into the seafood pan and stir gently until combined. Add frozen peas and cook for another 2–3 minutes.

• Place the pastry base into the pre-heated pie maker. Carefully scoop ½ cup of the seafood filling into the pie cavity. Place the pastry top over the filling. Repeat the same process until the pie maker is full.

• Cook the pies according to pie maker instructions until golden brown on top, for approximately 8 minutes. Serve immediately, or leave to cool and freeze for up to 6 months.

Everyone needs a reliable lasagne recipe to impress their friends with!

Time 1 hour and 40 minutes

Serves 8

2 tbsp olive oil

1 onion, finely chopped

3 tbsp basil, finely chopped

3 cloves of garlic, crushed

500g beef mince

690g Romanella Sugo

Salt and pepper, to taste

375g La Tosca Fresh Lasagne Sheets

125g parmesan cheese, grated

Cheese sauce

3 tbsp butter

3 tbsp plain flour

2 cups milk

Salt and pepper, to taste 125g mozzarella

• Preheat oven to 180ºC.

• To make the meat sauce, heat oil in a saucepan over medium heat. Add onion and garlic and cook until soft. Add beef mince and continue cooking until brown.

• Stir in sugo and basil, then season with salt and pepper to taste. Cover and simmer gently for 20 minutes, stirring occasionally.

• To make the cheese sauce, melt the butter in a separate saucepan. Stir in flour and cook for 2–3 minutes over gentle heat.

• Remove from heat and gradually stir in the milk. Return to low heat and continue to stir until sauce is thick and smooth. Remove from heat and season with salt, pepper and add mozzarella.

• To assemble the lasagne, pour ½ cup of the meat sauce into a lightly greased baking dish and spread to cover base. Alternate layers of lasagne sheets, meat and cheese sauce, ending with a cheese sauce layer.

• Sprinkle with grated parmesan cheese and bake for 30–40 minutes or until cooked through.

• Allow lasagne to stand for 5–10 minutes before serving.

1kg Farmers Union Greek Style Yogurt

1–2 garlic cloves, minced

4 eggs

3 tbsp extra virgin olive oil

Chilli flakes, to taste

Paprika, to taste

Salt and pepper, to taste

Chilli oil or chilli crunch, to liking

Fresh herbs (parsley, dill or coriander)

• In a small mixing bowl, combine the room-temperature yoghurt, garlic and a good pinch of salt, whisking well. Divide the yoghurt mixture between four serving bowls and set aside.

• Crack your eggs into four separate small dishes. Bring a small pot of water to the boil, then reduce to a soft simmer. Use your spoon to create a whirlpool in the water, then pour each egg into the water, gently. Leave to simmer for 3–4 minutes, then remove eggs with a slotted spoon.

• Immediately place your poached eggs on top of the prepared yoghurt bowls and drizzle with chilli oil. Season to your taste with herbs, chilli flakes and paprika.

• Serve immediately with your favourite rustic bread for dipping.

Pickled red onions

• Place the red onions, water, vinegar, sugar and pepper into a small saucepan.

• Bring to the boil briefly and then turn down to a low heat and simmer for 5 minutes.

• Leave to cool, then pour onions and brine into an airtight container. Leave in the fridge for a few hours or overnight before serving.

Pickled cucumbers

• Stir the sugar and salt into the boiling water and allow to dissolve, then add the vinegar, salt and pepper.

• Place cucumber in an airtight container. Pour the hot liquid over the cucumbers and cover with a lid. Leave to stand for a few hours or overnight before serving.

Mediterranean tomato chicken

A rich, flavour-packed dish with very little effort — perfect for busy weeknights.

Time 25 minutes

Serves 4

2 tbsp olive oil

4 x Lilydale Free Range Chicken

Breast Fillets

2 tsp dried basil

1 tbsp butter

1 onion, finely diced

3 cloves garlic, minced

1 cup dry white wine

400g diced tomatoes

2 tbsp tomato paste

1 tsp dried oregano

¼ cup drained capers

1 small capsicum, roughly chopped

⅓ cup sundried tomatoes, roughly chopped

Salt and freshly ground black pepper, to taste

• Season chicken with 1 tsp of the dried basil, salt and pepper.

• Heat olive oil in a large skillet. Add the chicken breasts to the skillet and cook over medium-high heat for 3–5 minutes per side, or until lightly golden.

• Remove chicken breasts from skillet and set aside.

• Add butter to the skillet and let it melt. Add diced onions and cook for 2–3 minutes. Stir in garlic and the wine, and scrape up the brown bits at the bottom of the skillet; continue to cook for 4 minutes, or until the wine has reduced.

• Mix in the tomatoes, tomato paste, oregano, remaining dried basil, sundried tomatoes, capsicum and capers. Place chicken back in the skillet, nestled into the sauce.

• Bring to a boil, then reduce to a simmer and cover. Leave for 10–15 minutes, or until chicken is cooked through.

• Remove from heat, garnish with parsley and serve with crusty bread.

300ml Schweppes Pink Lemonade Zero Sugar

60ml of cold sparkling water

30ml strawberry shrub

Strawberry salt for decoration (optional)

Rose petals for decoration (optional)

Strawberry shrub

1 cup strawberries, halved

1 cup sugar

1 cup apple cider vinegar

• To make the shrub, combine the strawberries, sugar and vinegar in a medium saucepan. Bring to a boil over mediumhigh heat. Remove from heat and let stand for 30 minutes. Strain into an airtight, heatproof jar. Refrigerate until cold (about 4 hours).

• To make the mocktail, add shrub, sparkling water, pink lemonade and ice to a cocktail shaker. Cover and lightly shake.

• Wet the rim of a mocktail glass and dip it into the strawberry salt. Strain the mocktail into the glass and garnish with rose petals.

Corn Flakes tart

Sweet and crunchy, this tart celebrates your favourite cereal!

Time 1 hour 10 minutes + cooling

Serves 8 slices

1 sheet shortcrust pastry

100g butter, softened

1/2 cup caster sugar

1 egg

1 egg yolk

1 cup almond meal

¼ cup plain flour

½ cup of strawberry jam

Corn Flakes topping

3 cups of Kellogg’s Corn Flakes

¼ cup unsalted butter

2 tbsp honey

2 tbsp sugar

• Preheat oven to 180°C.

• Lay the pastry across the base of a pre-lined and greased tart tin. Cut excess edges off.

• Line the pastry with baking paper and pastry weights. Bake for 10 minutes. Remove the paper and weights and bake for a further 10 minutes or until golden. Remove from oven and set aside to cool slightly.

• Spread jam across the base of the cooled tart shell.

• Using an electric mixer, beat the butter and caster sugar until pale and creamy. Add the egg and egg yolk and beat until just combined. Add the almond meal and flour and stir until combined. Spoon the mixture into the prepared pastry case and use the back of a spoon.

• Place the butter, honey and sugar in a small, heavy-bottomed saucepan. Set it on medium heat and cook until the sugar dissolves and the mixture begins to bubble. Remove from the heat and stir in the Corn Flakes.

• Pour over the tart filling and bake in the oven for 30 minutes, or until the filling is set. Please note: Corn Flakes will darken in colour. This is from the caramelisation of the topping and is nothing to worry about, but keep an eye on it as it bakes. If it’s darkening too quickly, reduce your oven temperature.

• Remove from oven and set aside in pan to cool completely. Enjoy your Corn Flakes Tart!

I f you’re looking for something to do on a weekend, or on your next day off, 1924 Riverfront Steakhouse is a must. The easiest way to get there is driving. But if you’re coming in by boat after a morning of fun in the sun, all you need to do is step off your skis and walk about 15 metres to the restaurant. Boom!

Damien and Pete O’Riley are Murray Bridge locals. They grew up on the River and local knowledge counts for everything in these parts, especially when you’re in the hospitality game. The boys know what locals want and they know what will entice non-locals to take the scenic drive an hour up the South-Eastern Freeway for lunch, dinner… or a special event like a wedding.

They know good food and the best local farmers who produce it. “We try to support all the regions — the Barossa, Langhorne Creek, Cape Jaffa and more. We love to support local,” says Pete.

Comin’ in hot

There’s a new “secret spot” on the west side and people are starting to talk.

Fuego by the Sea is one of Adelaide’s hottest new restaurants and function spaces, and sits on the water’s edge at West Beach, halfway between Glenelg and Henley Beach.

It all began when Head Chef and Co-Owner Danny Sauchelli built a thriving mobile catering business specialising in

street food cooked over carefully distributed charcoal. He and Co-Owner Dario Fontanarosa, who also owns the extremely popular Fine Food Cucina in Newton, saw a rising trend in grazing menus for weddings, 18th and 21st birthdays, and even corporate events because guests love to mingle while they eat. They converted an eight-by-five trailer into a GIANT portable barbecue and took their show on the road — booking out all over Adelaide!

But once word got out, they needed a place where the masses could come to them. Now, at Fuego by the Sea with Chef Marcia Martins, they serve lunch from Wednesday to Sunday, dinner from Thursday to Saturday, and breakfast on weekends.

When catering, they’ll serve everything from street food to sit-down dinners for over 400 people! The main function room holds 200 people and includes access to the balcony overlooking the water, making twilight weddings and birthday parties a very popular choice.

“There’s no limit to what we can do here,” says Kat Trimboli, Events and Marketing Coordinator. And the food doesn’t need

to be complicated. One client wanted Danny’s trademark Fuego flavours served in American-themed burgers and hotdogs for their ’50s night.

But meat isn’t the only thing on the menu! You can also enjoy a veggie stack, oysters, mussels, prawns, arancini balls, mushroom risotto, blue swimmer crab linguine, the seafood platter and Fuego’s fish of the day. It also boasts a vast wine list, with many of South Australia’s biggest names included.

They love what they do at Fuego and often surprise customers who are expecting a more manic way of running events. “They sit down, we ask them a few questions and organise everything so they can relax. We love doing this and making it look easy,” says Danny.

Fuego by the Sea is available for event bookings year-round.

Tintinara’s sweet and savoury haven is connecting the community and even the travellers passing through.

Over 14 years ago, Tintinara local Renae Zadow started baking cookies at home while juggling a newborn and mama duties. Fast forward and her hobby has evolved into two small-town businesses — a cafe called The Bake Shop, and selling her products wholesale and crafting dreamy wedding cakes that embrace rustic charm through B Sweet Catering.

After five years of wholesaling her goodies to cafes in the region, Renae had gradually accumulated enough equipment, expertise and local traction to start her catering business.

Over the past year, Renae has taken her culinary expertise to the next level and now offers a full waitressing team for events spanning across the region. Specialising in weddings, B Sweet Catering not only delivers platters and grazing boxes, but also ensures a stress-free celebration by offering full service or allowing hosts to pick up and reheat pre-prepared meals as needed. And for the grand finale, Renae takes the cake — or bakes the cake! She’s most passionate about creating edible masterpieces from the visions of each couple. In a world where coffee is our daily fuel, one mobile van is on a mission to spread cheer and cheekiness across South Australia.

Introducing Cheeky Grin Coffee’s latest venture: their sassy mobile coffee van, ready to tantalise tastebuds and awaken sleepy souls with their brews and cocktails. Whether it’s a bustling city street, a laidback beachside festival, a wedding, special work function, sporting event or a quirky market square, Cheeky Grin Coffee’s mobile van is there to serve up smiles in a cup.

Husband and wife owners Stefan and Rhianna Iannace figured having one shop in Firle simply wasn’t enough, and that their infectious energy and award-winning coffee needed to spread far and wide across South Australia. And so, the van was born. “We’ve come full circle to how we started — doing events and being out and about meeting people from all walks of life. We want to get our great-tasting coffee to everyone, not just people in the east,” says Stefan.

But what sets Cheeky Grin Coffee apart from your average Joe? For starters, they’ve won the Best Coffee in the East at the Eastside Business Awards three years running (making them the first-ever three-peat winners for best coffee!) and they don’t just stop at a regular latte or cappuccino. Kies Family Wines

This winery overlooking the Lyndoch Ranges in the Barossa Valley welcomes families with open arms at their cellar door and cafe — playfully named Monkey Nut Cafe. With enclosed lawns and outdoor games, this winery provides a backdrop for year-round fun.

“The kitchen (designed by joinery designer Stefan Vignogna) is a focal point, boasting integrated fridges, sleek black Miele appliances, a refined butler’s area and a centrepiece fireplace. The home’s modern aesthetic is emphasised by striking black joinery and exterior cladding and polished concrete surfaces both indoors and outdoors,” says Carmel.

Hahndorf

This spectacular home is the epitome of luxury. With a 5.5-metre high entry and three 6-metre high concrete feature walls, it’s no surprise this house won the 2021 Master Builders Association Award for Contract Home $1 million – $2 million.

“Building this home was all about capturing the nearby Hahndorf Hill Winery vineyard and the sprawling 13-hectare estate through expansive floor-to-ceiling windows. It was a joy to see this home come to life, with it’s architectural design and seamlessly blended modern-industrial aesthetics,” says Carmel.

“The clients’ vision was a fusion of sleek elements with a timeless allure. Notably, the homes elevated height and use of offform concrete feature walls and polished concrete slabs blends perfectly with the extensive joinery and the breathtaking landscaped surrounds,” says Troy.

Millswood

Finally, the home that made us fall in love with Klemm Homes in the first place. This build in Millswood won HIA Australian Kitchen of the Year 2022 (among many other awards). Oh, and what a kitchen it is!

“The brief for the Millswood home was modern farmhouse, with lots of ecofriendly and sustainable living principles, making the home highly energy efficient. The exterior features steeply pitched gable roofs, capturing the essence of a farmhouse while maintaining a sleek aesthetic,” says Troy.

“Another notable feature is the application of various cladding materials, including Fielders Prominence on the roof, a mixture of James Hardie feature panelling and Blackbutt timber lining boards which create a visually stunning and dateless facade,” says Carmel.

It all starts with the local Limestone Coast sheep, who need a trim once a year. The sheep bounce out of the ‘salon’ with their

groovy new hairdos, while their wool is sent off to be washed and cleaned in Adelaide. On return to Naracoorte, it’s turned into beautiful bedding and clothing.

Specifically the one that The Grace Collection Australia has made its home.

Tucked away on Sydenham Road, Norwood, a different shopping experience awaits. In February 2024, The Grace Collection Australia whisked its online store into the bricks and mortar world, offering up beautiful gifts and homewares with a side of styling expertise.

When husband and wife dream team Kathy and Simon Pengelly ran their successful home staging business, one question from clients kept popping up: where can we buy these beautiful pieces? So the duo took the leap and created their own brand of cushion covers for their online store, slowly building the offering to include bedding, kitchenware, bathware and more. They’re also passionate about supporting creators from their home in the south-east, so you’ll find plenty of pieces that celebrate the country charm we all know and love.

It wasn’t long before the questions started up again: “When will you be opening a store?” This question sat in their minds until the perfect location popped up — a beautiful 1872 church with oodles of character.

“We’ve landed in one of Adelaide’s nicest suburbs, but we didn’t want anything to be out of reach for people from all backgrounds and walks of life. Affordability was top of mind for us,” says Kathy.

Kathy’s rich background in staging allows her to offer styling advice in-store, helping with selections and pairing items together that you might not normally see! “The feedback we get the most is that you walk in and can imagine everything in your own home — we love different textures and patterns, but there’s nothing so wild you can’t picture it in your house!” says Kathy.

“We think a little outside the box — we prefer to create things that people wouldn’t usually pair together themselves! Here are some of my go-to tricks:

• “Don’t be afraid to mix and match patterns, textures and materials. Just keep your colour palette the same using two to four colours. It adds so much interest and creates unique looks that are individual to you.

• “Upsize your quilt cover to your bed. If you have a double bed, get a queen cover! This creates a lovely, refined look and covers all the imperfections underneath.

• “Remember, it’s only you that needs to love your home and its surroundings! People get caught up trying to please everyone else and keep up with the trends, they forget what they really love. Surround yourself with things that make you smile.”

If you’re new here… hi, I’m a dermal therapist with over 20 years’ experience in the professional skincare industry and the owner of Elixir Skin Fitness on The Parade. I’m also the Adelady skincare queen. For the past 10 issues, I’ve been sharing secrets and in-clinic treatments to help you all on your skincare journey.

But now, I’m letting you in on the biggest secret of all: the skincare products that you use at home are equally as important as the treatments we offer in our clinic! How you care for your skin each day is the best way to support the treatment plans that we create for you at Elixir. So, we want to make sure you’re getting it right.

Skincare helps to protect, regulate and normalise the skin barrier function, keeping the outer layer of the skin (the epidermis) as healthy as possible. This then helps us to progress further with your skin when we see you in our clinic.

For example, at Elixir, we’re licensed to offer platelet-rich plasma (PRP), Vampire Facials and Vampire Hair Treatments. These healthy treatments work with the skin to help it function better, using the nutrients from your own blood to rejuvenate the skin and hair. Your in-clinic doctor or nurse will isolate the blood by using a machine called a centrifuge. It releases growth factors that work like magic to increase collagen and elastin, which can help improve blood flow and the formation of new blood vessels while also healing and rejuvenating the skin tissue.

Treatments like PRP or the Vampire range work best when your skin is being taken care of properly at home. This is why I’m sharing some of my go-to products to incorporate into your daily skincare routine.

It’s all about hydration

Keep your face looking and feeling glowy and plump with products made specifically for hydration. I’m a big fan of Niacinamide, Hydration and Barrier Repair. Or my personal favourite, Medik8 Hydr8 B5 Intense Rehydrating Serum.

Sayonara, dark spots

For skin that’s experiencing hyper-pigmentation, go for an inhibitor and treatment product like this Mesoestetic Dermamelan Cream, which is used in particular to manage melasmaprone skin.

The non-negotiable

Sunscreen. Every. Single. Day. It’s non-negotiable! My go-to is the MotherSPF Range, a sunscreen that suits everybody and is made for the harsh Australian sun. It’s also environmentally friendly!

Keep it clean

Cleansing is arguably the most important step in any routine, as it helps to remove impurities and rebalance the skin barrier without stripping or irritating the skin. I love the Universkin Cleansing Olive Oil and Biologique Recherche Cleansing range, which are suitable for most skin types.

Anti-everything

If you’re searching for the perfect antioxidant or anti-inflammatory product, I’ve got only good things to say about ingredients such as vitamin E, vitamin C or superoxide dismutase (SOD), which help protect the skin cells against free radicals. You’ll find these powerful ingredients in most of the products that we stock.

It gets an A+

Loco for lotion

I love the Medik8 Crystal Retinal range, because it’s a Retinaldehyde. This is my top pick for vitamin A application and the easiest way to work it into the skin without irritation.

I can’t get enough of P50 by Biologique Recherche, which is used to rebalance the epidermis and microbiome. It also includes active ingredients to encourage cell turnover, exfoliation and create a smooth, luscious and natural glow to the skin.
