If one did not believe in the Karmic qualities and spirituality of art before one experiences the work of Carolyn Tyler, one will thereafter.

Her sensitivity and creative skills emerged as a child; later, she would follow a serendipitous thread of events from southern California to Bali, where she discovered what seems to be the wellspring of her soul.

Until then, she had not embraced a life as a jewelry designer. After trekking through Bali, observing the grace and decorum of its ancient customs; finding native jewelers with extraordinary, unappreciated skills, she devoted her life to seeking perfection with them, and through them.

There, in a Balinese paradise; sitting in an open-air river house surrounded by carved statues and antiquities she channels her genius; bringing her considerable knowledge of archeology and ancient art to bear with a mastery of pen-and-ink while islanders offer sacrifices of flowers, candy and cigarettes to the river spirits.

Such deference to local tradition has not been in vain. The Balinese embrace Tyler’s sense of honor and deference, as well has her renowned artistic ability. It is a symbiotic reverence: In turn, Tyler is humbled by the thousands of years of skill achieved by the goldsmiths of Bali. The results are creations fiercely coveted by patrons around the globe. In fact, Tyler is considered by many to be one of the 10 best jewelry designers in the world.

In addition to her creativity and the skills of her assistants, Tyler insists on working with materials thought too rare or delicate for many. She prefers to work in 22k gold, as the hue, matte finish and maddeningly fine detail of her pieces cannot be achieved in lesser purity. “I deal with the most noble materials to create my art,” says Tyler.

Her commitment to spirituality leads her to avoid recently mined gold, preferring instead to work with pure gold melted from old jewelry and other established sources. Because the Balinese have worn their wealth for centuries, they are a ready source of ancient, exquisite metals with which to create.

Such ancient metals, complemented by the rarest of gems and treasures such as 100-million-year-old fossilized ammolite shell, make Tyler’s work passionately sought and collected. Even as her work is exclusive, she does not want this fact to discourage those who wish to approach her for pieces. She continues to meet with clients by receiving their emails or, in certain cases, communicating by Skype to hear a client’s request.

Tyler was gracious enough to spend a few minutes with Upscale Living Magazine, discussing her work and the nature of art itself. We asked her what she sees as the difference between good and great art.

“That’s so subjective. But obviously there are global standards in terms of what people are wanting for themselves. Great art makes the heart sing.

I’ve made things that had me in them but I would have not worn them as my talisman,” she says.

“There’s something about art that’s fixating. I believe great art is the marriage of the most interesting materials, highest skill and best imagination possible. When I’m most in tune and entranced. When I’m playing on paper . . . that produces the best results. The soul must be perceptive: Dull souls can’t produce art. One must be in tune with one’s deeper self,” Tyler says.

dream by beginning a revolutionary marketing and product brokerage company on the Internet. Today, Market America/SHOP.com serves more than 10 million customers and more than 180,000 shop consultants worldwide. Ridinger and her

husband are multimillionaires with homes in New York, Miami Beach, the Bahamas and London.

How on earth did she and her husband do it? Upscale Living Magazine was granted an exclusive interview with Ridinger to find out.

How did you wind up in North Carolina?

My dad was moving around, he was in the car business and he was like, “There’s this great dealership that just opened in North Carolina,” and we’re like, “North Carolina?” And we ended up falling in love with it.

We moved there when I was in 9th grade, and it was incredible. Our company is headquartered there so we made the best of it. I met my husband there. There are so many great things about North Carolina and the city of Greensboro. It’s kind of a place that will bring you back home when you need to chill out and relax.

What was your first job?

My first job, I worked in a retail store. It didn’t last long because I thought it was all about trying on clothes – because I love fashion, but it was all about hanging them up and folding them after people used them. And I thought “this is not for me.” I’m so bad at this part because I just wanted to play with the fashions. People were so rude they just dropped everything on the floor, you know they’d come out of the fitting room with like 30 things and they never bought one.

Where did you go from there?

My second job – Sears had a huge catalog company in North Carolina and Greensboro and to have a job in Sears when you’re 16, you were the BEST. They paid so much money – at the time they paid like $20 an hour which was unheard of. And I went to apply for another job but there were 100 people in line. So I went to look for a bathroom in the upstairs, and I saw on the vice president’s door there was an opening for an assistant, so I knocked on the door, walked in and it was the vice president’s office and he was in there. He thought, “Oh, are you lost?”

He hired me. I worked there for two summers. It was great.

So fast forward – at some point you and JR had a conversation at your kitchen table or someplace where one of you said, “I have an idea.” Is that how it began?

I think JR is just a genius. He was always the person I looked up to, I was fascinated with. I always had great people skills, but he knew how to create things that were just genius – that no one had ever thought of. So listening to him was always intriguing to me. So he said, “I have this incredible idea. We can actually offer people whatever they want to shop for and we’ll use the Internet.” But back then no one was using the Internet 21 years ago. I thought “that’s amazing, but who shops on the Internet? You think that will never happen?” He had a vision before anybody else saw it.

Did it work right away?

It took a minute. I think that was part of the growing process. The first couple years we struggled and I remember a few times he said, “You know, we can’t afford to keep doing this.” We didn’t have any money.

Remember neither one of us came from successful families. We didn’t borrow money from anybody so he had a little bit of money saved, maybe like $50,000, and we were burning through it fast. And he said, “We’re going to have to throw in the towel.’” And I thought, “Don’t do that, we’re so close.” And he didn’t. Within that next year, momentum started building and we hit a million dollars within our second or third year. But it was rough, it was rough. We were all living in this one little house of mine, our vice presidents, my brother, everybody who was involved in the company – and we shared one car. Wendy’s was my big date. There was no money.

“Success is just around the corner so right when you think you’re getting ready to fail, you just need to tie a knot in that rope and hang on.”

So, fast forward again, all is going very well – and then you had a lifechanging incident. You had a brain aneurism and subsequent surgery.

What did you learn about yourself?

You think, “How can this happen to me? Everything in my life is so great.” Maybe it meant to happen because my whole like has been dedicated to empowering women, helping women with through my make-up lines or my blogs. I thought, “This is something we have to educate people about because they don’t know.” We check everything about our bodies but we don’t check our brains.

could have gone wrong. But we agreed immediately that was the right thing to do. It was a life-changing experience. You never really take time to smell the roses or enjoy all the things you worked so hard for until you have something kind of tragic happen. You’re like “How do you deal with it?” But you do.

So – does adversity reveal character, or does adversity build character?

I think it builds your character. I thought (that) everything I had done I was so proud of because I worked so hard with my husband and my daughter. That was the part of my life that I really didn’t let anybody see. It’s easy to say to somebody, “Your life looks great.” But it’s not always great and it’s OK for it not to always be great. So it allowed me to gain a lot more confidence about being able to share the things that people didn’t see. I thought that was so critical because life is not always a bowl of cherries, it’s not always perfect and adversities make you better and stronger. I think people look up to you when you share it with them.

Let’s lighten the mood – besides the weather, what’s the biggest difference about working and living in New York and Miami?

I think it’s the environment. I love being in Miami because of the colors, the sky, the water, and you see all this beautiful Art Deco which has been preserved so well. New York is very chic and urban and it’s easy. In Miami you don’t have dinner until 10 o’clock at night, you get all dressed up to go to dinner. In New York you have your jeans, your leather jacket and your white T-shirt and you’re hooked up for the month. And in New York you eat dinner at 8 o’clock and a big night is going to a play.

Miami Beach is amazing but it’s a bit like 90210. Everybody knows each other, it’s the big “305.” In New York, you can disappear. You can remain anonymous which is critical for your sanity. You can walk down the street with no make-up on; you put your baseball cap on. It’s normal.

Are you ever mistaken for anyone?

She’s my best friend. I’m her children’s godmother.

How do you stay focused on your work while living in Miami?

I stay inside, I never leave! (Laughs.) I try not to get diverted with all the distractions. I’m one of those people who always believes that success takes a lot of work – and it does. It’s not that hard to be successful, because most people don’t try. Yet it does require showing up. A lot of people don’t show up. For me, I don’t think about going out and doing things that are appealing to me personally unless I have the time to do them – which is rare. So if I’m seeing my girlfriends, I try to do it all in one night. I have 20 people over for dinner – because I so stay focused on what the mission is.

Back to Miami. You’ve lived here almost 20 years. How has it changed?

I’ve been in Miami in this house for 15 years, and on the Beach for 1819 years. I was part of the original boom when Miami Beach took off.

Everybody knew each other and it was hard to go anywhere without someone saying, “Oh my God, there’s Loren and JR, there’s JR and Loren.” (But) It was such an exciting time when it first launched and I think it (Miami Beach) is inventing itself again. I love when I talk to people who are running for mayor or commission and they tell me what they’re trying to do with the city and I love that.

It’s really important to stay grounded and remember what your mission is. I’m not a big club girl, you probably won’t catch me there. But great events, great charities, great friends. I usually have everybody here 50 Upscale Living Magazine | Issue 28

because I’m really a homebody. Nobody believes that. I like to stay home. I like to be around my friends and my family and my friends happen to be really well-known people so being in this environment is really great for that because we have a lot of privacy.

Can you name-drop for us? Who are some of your best friends?

Oh, Jennifer Lopez is one of my longest, best friends. Eva Longoria is another one of my best friends. I’m the godmother to Alicia Keys’ son as well (as Jennifer Lopez’s). Mike Piazza. I don’t have to have celebrity friends, they just happen to be most of my friends because I work so hard, and I think when you work so hard and your whole life is what you do – you want to create it, you want to design it, you want to get your hands on it, you want to touch it. Market America/Shop.com has been a dream how we’ve grown and my family is involved and we’ve taken it from zero to almost a billion dollars a year in 20 years – it’s amazing.

Where did you get the name “Motives” for your cosmetics line? Is there a story there?

The name came from wanting to motivate women inside to be really great and believe in themselves. Most women go home, they take care of their family and they put themselves last. I know my mother was that way. (Editors note: Loren’s mother died of a massive heart attack at the young age of 42.) It’s easy to fall in that trap. It’s important for women to feel they can have it all. Don’t get me wrong – being a mother is hard work, being a housewife is hard work, all those things are real jobs – but you can also put your dreams first.

So when I made “Motives” I also cared how it made them feel on the inside: Because if you look great, you feel great.

Your daughter Amber is in the family business too?

She is. We have five brands of skin care in our business, which are incredibly successful and Amber’s line is No. 1. It’s amazing. We’re so proud of her and everything happened at once. She launched (her line), she got married (in Puerto Rico April 6th), so many things are happening and I feel like I’m officially my mother now! (Laughs.) I’m there. You want your kids to be better than you are.

What’s the best advice you would give to our readers?

Never give up. You know it’s really easy to quit. People say, “What are the two things you do every day that help make your life successful?”

Everyone knows who works around me I tackle the hardest things first, always. People have a tendency to procrastinate the hardest things in life and I always tackle them first because once you get them out of the way, it’s like you’re done. And then it’s not quitting. There are challenges. It’s not easy to be successful but it’s not that hard. Eliminate negative people around you. I really control who I socialize with and who I’m around because I don’t want anyone who’s negative infiltrate my thoughts. With positive thinking, I can do anything I want.

You have a cosmetics line, a jewelry line – is there one you’re most proud of, or is that like asking a parent to choose a favorite child?

Our business, Market America/Shop.com, is really our baby. You give birth to something over time and then you realize it takes a lot of time.

A Slice of the World

A journey that takes me on the other side of the planet is always one I eagerly anticipate. For this excursion, I spun my globe and decided on Australia as my destination. Known as “Down Under,” the “Land of Plenty” or simply “OZ,” Australia has many nicknames, most quite applicable.

After a bit of deliberation, I’ve decided this journey to Australia will include stops in Sydney, the Blue Mountains, The Great Barrier Reef and a little hidden treasure known as the Daintree Rainforest. An introduction to Aussies....

There are several points of entry to Australia. The most commonly used when arriving from the U.S. are Sydney, Brisbane and Melbourne.

While Sydney is not the capital of Australia, it is definitely the largest city, home of the one of the most photographed buildings in the world, the Sydney Opera House.

As we landed in Sydney on a particularly beautiful morning, we found the process of clearing customs effortless. Rarely does one get out of an airport within an hour from landing, especially when arriving in a foreign country. Once out, a quick ride from the airport by private car and we were welcomed by our hosts at the Intercontinental Sydney Hotel.

As any large cities, Sydney offers a vast array of luxury hotels. Our choice was definitely the right one. Situated near Circular Quay, the smaller pier of Sydney adjacent to the Opera House, the Royal Botanical Gardens and the magnificent Harbour Bridge, this 32-story hotel offers proximity to the right spots and outstanding views. I chose the “Club Lounge” category, which provided me access to the lounge on the 31st floor and all the amenities it includes (complimentary breakfast, open bar happy hour and a million dollar view.

shower, change of clothes and to live on local time. With that in mind, I took the recommendation of the concierge and headed to a charming little café at The Rocks for lunch a few blocks away from the hotel (Swagmans Post Courtyard) which serves a variety of local specialties and burgers. Do get a table on the old wooden balcony, on the second floor, to enjoy the street’s activity on market day. Being a weekend, an arts and crafts market was taking place, which is where I headed after lunch to begin to immerse myself in Australian culture. I recommend completing your day by walking around the Harbour, where you will discover the famous Opera House and the outstanding Royal Botanical Gardens.

After a day of adaptation to the local climate and time, I headed to the Finger Wharf – only a short walk away and through the Royal Botanical Gardens. This beautiful Edwardian wharf faced oblivion for decades before being preserved and renovated. It received a “sprucing up” in the late 1990s and has emerged as one of Sydney’s most exclusive eating, drinking, sleeping and marina addresses. Here, one can enjoy a nice evening with live music or do Sunday brunch at one of the 10 restaurants lined up on the port.

My choice for dinner, was Manta, recommended by Intercontinental Hotel Chief Concierge David Pratt, whom we ran into as we were eating. Manta offers outside seating, an extensive wine list and some of the best seafood in Sydney. Head Chef Daniel Hughes presents a combina-

toric Government House located inside the Royal Botanical Gardens.

For those of you unable to stay away from shopping, visit the Queen Victoria Building. Occupying an entire block of George Street, it has more than 180 of Sydney’s finest fashion boutiques and jewelry shops accompanied by delightful cafes and restaurants. Around the corner and on the route of Sydney’s own monorail one will find The Strand Arcade.

It remains a majestic beauty in the middle bustle of Sydney’s central business district and is a unique mix of Australian designer fashion and specialty stores catering for a discerning, sophisticated clientele.

Sydney has a lot to offer: I recommend devoting at least three days/ three nights to the city. With more than 50 historical sites, museums and art galleries as well as countless restaurants, cafes and wine rooms, it has something for everyone.

The second stop on my amazing journey was Wolgan Valley Resort & Spa in The Blue Mountains (named after the perceived color created by the extensive eucalypt vapors and the sun). I chose to drive from Sydney.

One may fly into the resort by letting the resort charter a helicopter for you, a mere 45 minute flight from Sydney. I wanted to admire the Australian country side by driving and, despite having to adapt to driving on the other side of the road, my trip took only about two and a half hours.

For more than 190 years, the Wolgan Valley Resort was cattle and sheep farms. In 2005, Emirates purchased four acres in an attempt to return it to its original state. In 2009, Wolgan Valley Resort & Spa opened with one main goal: Conservation. A pampering conclusion...

My journey continued the Great Barrier Reef. After a short drive back to Sydney to catch a flight, I arrived on Hamilton Island early afternoon, welcomed by two of Qualia’s staff members who drove me by luxury car to the property. Once on Hamilton Island, transportation is via golf cart. Residents and guests alike are assigned their very own “buggy” to make their way around this tiny paradise. Purchased by two businessmen in 1975 who oversaw construction of several complexes and high end resorts, it now caters to the affluent and intrepid traveler.

For the next three nights, we would call Qualia Resort our home. And what a home this was: This 5-star luxury property is tucked away in an exclusive precinct on Hamilton Island’s northern-most tip, Qualia’s 60 private pavilions look onto the Coral Sea and the surrounding Whitsunday Islands. The tranquility of the setting was magical, with the wait staff starting me off with a glass of champagne while I sat comfortably in a coach overlooking the coral waters of the Great Barrier. There, I was briefed on all the amazing activities the resort and the island offer.

champagne, I took the “buggy” to an enclave of posh restaurants, stores and art galleries on the lagoon marina in the center of the island. This is the perfect place to start a conversation with the many cockatoos or simply watch the sun set over the marina while enjoy a glass of wine or a cocktail. As the sun slowly retires, look up in the sky and watch the fruit bats making their way into the trees. Harmless and ecologically crucial, they are a remarkable, uncommon sight.

Once the sun is down, I made my way back to the resort where “dinner is served.” Qualia offers a refined modern cuisine served in their main dining room overlooking the Whitsundays Island and the lagoon. For guests who stay two or more nights, I recommend the degustation menu and à la carte the following day. Traveling with your loved one? Ask their staff to set a private dining table up for you by their infinity pool for a romantic evening under the stars.

On day two of our Great Barrier Reef adventure, I enjoyed a private picnic on an isolated beach. After a very short 15 minute boat ride, I discovered an entire white sand beach set up with beach lounge chairs, towels and anything I could imagine for a picnic – even a telephone,

After a fantastic afternoon in complete isolation, I joined the Qualia crew on their 45ft luxury cruiser, “The Atomic,” for a cocktail. There, one truly appreciates the beauty of these hidden islands while sharing your travel experiences with other guests. To top off a fantastic day up returning from the sunset cruise, I recommend strolling down the marina, where several restaurants offer a variety of exotic cuisines. That evening, I went for Australian pizza at the Manta Ray Café, which overlooks the Hamilton Island marina; a spot known for local seafood, meaty mains and Italian pasta dishes, as well as a great selection of Australian and New Zealand wines.

Day three of our journey was truly what we came to Hamilton Island for: Diving the Great Barrier Reef. For this, many options are offered to guests. I strongly recommend the day-long excursion. With morning departure and a little under two hours to your diving site, this option offers the best experience by truly diving away from the islands and into the magnificent land of coral reefs that extends for hundreds of miles off the coast of Australia. We decided to make the trip shorter by chartering a helicopter to the reefs. Hamilton Island Air is the exclusive Sea Plane and Helicopter Tour provider on Hamilton Island. When flying to the reefs, one lands on an existing platform set up in the middle of the amazing gardens of corals. It is the fastest way to get there, providing a unique prospective of the Great Barrier. There, immerse yourself in this UNESCO World Heritage site which contains the world’s largest collection of coral reefs (2,800), with 400 types of coral, 1,500 species of fish and 4,000 types of mollusk. It also holds great scientific interest as the habitat of species such as the dugong (“sea cow”) and the large green turtle, which are threatened with extinction. If diving is not something you enjoy or are certified to do, consider snorkeling. Hamilton Island Air provides the necessary equipment to do both from the same platform. Hamilton Island Air also offers day trips by sea planes with beach drop off to several isolated islands. should I think of something else. Not a sound but that of small water ripples on the beach, not a soul but that of the local wildlife coming out of the woods to check out what new animals might have landed on this

I geared up and went snorkeling to experience a swim in the shallow waters of the Great Barrier Reef. While I recommend a true diving experience away from the islands, the colors and abundant life in less than five feet of water is absolutely amazing.

After this unforgettable experience, consider one of the many spa treatments offered at Qualia. rtist and designer Marcelo Holzinger shares his inspiration and reasons why he loves the cosmopolitan culture of Miami.

Where did you grow up, and when were you first drawn to creating?

I grew up in Argentina, and I feel that I was born loving art. When I was a very child, I was drawn to beauty, nature, art, and music. I remember even back in elementary school being very happy and excited when doing activities involving creativity (drawing, painting, using my hands to create crafts). I was always looking forward to those kinds of activities, and because I enjoyed them so much, over time I developed my skills in these areas.

Looking back, I was passionate about art and design from an early age, even without knowing what “passion” was. I now realize that as a child I was already an artist, a decorator, a designer . . . and later on in life, that passion became my professional life – I am now a professional artist, a graphic designer, art director, and interior decorator.

You are able to express your art through interior design, graphic arts, and painting. How has your art evolved into these various mediums?

I earned a degree in advertising and design in Buenos Aires and worked as art director in an advertising agency. Over the years, I began to delve into different forms of artistic expression.

After working for several years as an art director, and also teaching graphic design at the University of Buenos Aires, I moved to New York.

During those years in New York, I continued to pursue my passion for art and design; I attended design classes and also worked as a graphic designer for several publications.

In 2000 I moved to Miami Beach, and continued to work in the graphic arts. Here in Miami, I branched out into interior decoration – which proved to be another satisfying means of artistic expression for me. I was fascinated by the Art Deco buildings, the exquisite interior design of hotel lobbies, restaurants and lounges, and the contemporary architecture and interiors of Miami’s beautiful buildings and residences. involved in interior décor, I began to work on many projects in Miami, Fort Lauderdale and Palm Beach. As part of my décor services, I often suggested and purchased art pieces for my clients.

I love being able to flow between art, graphic design, and interior decor.

Each project has its unique challenges and complexities, since all of them involve different skills and different forms of expression. I enjoy all of them. However, I must say that at this point in my life, I feel best able to express myself through abstract painting. The canvas allows me to flow most freely and purely, without limitations. As you can see, my work in different artistic media evolved over time.

How do you approach interior design projects to decide upon the colors, furniture placement and decor themes? What is your advice for someone who would like to redesign a space in their home; do you have any tips for the most important room to focus on, and where to begin aesthetically?

The most important thing about how I approach a design project is that I listen to my clients – what they need, what they want, their life-style, their goals . . . their dreams. Every person has their own tastes and preferences, so it’s important to first get to know who they are, and then embark on the design journey. Once I have a clear sense of who they are and what they want, we can go about co-creating the design to match their personality and their goals, and work with them to help make their “dream space” a reality.

How has the culture of Miami influenced you as an artist?

What are your favorite restaurants in Miami?

Living in Miami energizes me. The cultural energy and beauty of Miami are definitely present in my creative process . . . and in my life.

I love nature, and the wide variety of people simply walking around.

The colors, flavors, and textures of Miami are vibrant and alive – there’s a never ending flow of activity; so many cultural venues for the performing arts, live music, symphonies, art galleries and museums. In the last few years, Miami is becoming one of the most important art centers in the world. It is not a surprise that Miami is a playground with its enter-

tainment and night life (clubs, bars, lounges, restaurants). The cuisine here is world-class. My favorites are the ones that most authentically capture the flavors and textures of a region or culture; these are the most “artful” ones for me, and the ones I enjoy the most.

The people here are diverse and beautiful, and there’s a never ending flow of activity. I love to walk on the beach, visit design showrooms and art galleries, mingle with artists, designers, and great friends . . . and then go to my studio and create! The energy and beauty of Miami is very inspiring to me, and shows up in the colors, textures and compositions in my work. I love the mix of cultures of South Florida, especially the Latin flavor. Being Latino myself, this makes me feel very much at home.

Miami has been known as the “Magic City,” but because of its recent transformation and growth – with modern new buildings, contemporary architecture and sophisticated designs – the city is now also known as “The Manhattan of the South.” I am very fortunate to live in the Downtown-Brickell area, which is the fastest growing sector of our city. This area is stylish, with breathtaking waterfront views, culture, fine dining and entertainment. This aesthetic fits well with my personal style, and is also reflected in my design work, which is transitional, eclectic – the union of traditional and contemporary designs – although, I lean more toward the contemporary end. While many people think that modern interiors are cold and minimalist, contemporary interiors can be quite comfortable and welcoming. I feel very comfortable in a sleek and fresh environment that evokes simplicity, clean-lines, and subtle sophistication, with soft colors and striking accents. This is definitely a reflection of Miami’s modern, cosmopolitan life.

Describe an ideal day for you.

A perfect day for me is very simple – working in my studio, then connecting with nature; going out for a walk and being barefoot on the grass, or going to the beach and being close to the ocean. An ideal day for me also might involve visiting art galleries, and being surrounded by art and creativity. Of course, I also enjoy sharing special moments with my loved ones, and it is an ideal moment whenever I can do that. Once a law school student, he is now extremely involved in the Let’s Move campaign, which is America’s move to raise a healthier generation of kids. He visits local schools to perform healthy cooking demos or educates in the garden about sustainability, committed to spreading his word throughout the community of Santa Monica and beyond.

Yield: 10 Servings INGREDIENTS Bacon: 1 2-pound slab smoked bacon 10 shallots, julienne 2 quarts apple juice 1 gallon chicken stock Approximately 45 strips thinly sliced smoked bacon

Avocado Cream: 1 avocado 1 cup crème fraiche Salt and freshly ground black pepper

To Assemble and Serve: 4 heirloom or Early Girl tomatoes Fleur de sel 2 cups baby Sylvetta arugula Extra virgin olive oil Freshly ground black pepper METHOD For the Bacon: Trim the bacon slab of its tough skin and excess fat and slice into 2-inch by 2-inch squares. Sear all sides of the bacon pieces over medium-high heat; remove from the pan and set aside. Sweat the shallots in the same pan until fragrant; add the apple juice, stock, and the seared bacon.

Transfer the bacon and liquid to a CVap oven and cook for 8 hours at 180˚F. (Alternately, braise in traditional method until soft.)

Remove the bacon from the braising liquid and let cool. After the bacon is cooled, wrap each piece with enough strips of the thinly sliced bacon to cover. Fry the wrapped bacon over medium-high until crispy on the outside and warm on the inside and slice into 4 even pieces.

For the Avocado Cream: Blend the avocado and crème fraiche and season with salt and pepper.

To Assemble and Serve: Cut the tomatoes into thick slices; put them on a plate and season with fleur de sel. Toss the arugula with extra virgin olive oil and season with salt and pepper. Top each piece of tomato with the arugula and add the wrapped bacon. Spoon the avocado cream along the side of the tomatoes and finish with the freshly cracked black pepper.
