Colorful Landscape | Belmond Hotel Splendido, Portofino Most resorts and hotels in Portofino focus on the Italian Riviera; such a gorgeous view as if it were a frame from a romantic Hollywood blockbuster: a sun-entrenched Ligurian harbour glistening with toys of the rich and famous, cheerful tourists taking in the colourful palette of the dramatic landscape and the sounds of water being gently ruffled by the wind. Belmond Hotel Splendido has the glamour side of things covered, with a flamboyant view of the bay, some interesting history sprinkled with pirate attacks (we’ll get to that soon), a lot of Hollywood sparkle and romance, and an enviable roster of jet-setting guests. Originally a monastery, the four-storeyed structure was so often attacked by Saracen pirates in the 16th century, that the monks were forced to abandon it. Sometime in the 19th century, Italian aristocrat Baron Batta gave the building a new lease of life: he turned it into his summerhouse and called it the Villa Baratta. In 1901, Ruggero Valentini bought the villa and converted it into a hotel to kick-start the glamour-tourism boom in Portofino. Since the hotel threw open its door to guests, the Duke of Windsor, Lauren Bacall and Humphrey Bogart, Clark Gable, Ava Gardner, Elizabeth Taylor and Richard Burton, and Rex Harrison have all stayed here. The Belmond Hotel Splendido, with its 69 rooms and suites and private terraces, nestles on the contour of a hill, shyly glancing at the piazzetta and harbor. Its gardens wander down the slopes to the sea while tangled bougainvillea – overhanging the benches – whisper in the breeze. Portofino, once a non-descript fishing village, has had a chic makeover and offers plenty of culinary options. Start off at the hotel’s restaurant, La Terrazza. citrus, homemade short pasta served with traditional pesto sauce, local black olive dumplings served with cherry tomatoes and basil – cooked to perfection by Chef Corrado Corti and his team. Olive oil is the staple of the Mediterranean diet; learn more about it by joining the hotel’s olive oil tasting sessions on the terrace. Also, lounging by the pool becomes ever more appealing with the Poolside Restaurant, open from spring through autumn, serving up tasty snacks. There’s a lot you can do here. Stroll through the piazzetta and nearby areas; take a break for more delicious sampling of the local cuisine. Go on a fishing expedition with fisherman Renato (arranged by the hotel) or set off on a romantic cruise to watch the sun setting over the pastel hued village. Water skiing along this Italian Riviera would probably win hands down, if you love to get your adrenaline going. Prefer less adventure? Paddle to Olivetta and walk to the lighthouse for an aperitif or kayak along the coast. If you’re game for exploration, head to the Cinque Terre (five villages) on the Ligurian shore. Prolong the luxury experience back at the hotel with a healing Lomilomi Hawaiian massage, derived from ancient Polynesia or work your stress away with an ultimate aromatherapy experience. An all-time favourite is the garden massage done in an open area, with a knockout vista of the bay. Enjoy the view while the masseuse works her magic to rejuvenate your muscles.
TRAVEL DESTINATIONS GETTING THERE International airlines have connecting flights to Genoa International Airport. The airport is 37 km away from Belmond Hotel Splendido and takes about 45 to reach the hotel. The hotel also arranges private jet charters within Europe. The word ‘indulgence’ and ‘spectacular’ take on new meaning as you board a sea-plane – soar over the compelling Indian ocean – to check-in to this hideaway. What do fancy having for lunch/dinner? You may be a tad surprised by the options available here: the Japanese teppanyaki Koko Grill, organic cuisine in Mandhoo, the Chinese restaurant Ufaa by Jereme Leung, Vilu Restaurant with a la carte options, Ithaa offering contemporary cuisine, the Atoll Market with buffet style kitchens whipping up a global fare. That’s a long list. Then there are the Vilu and Rangali bars, and the wine cellar too. Restaurant hopping is recommended if your stay is short. At the famed restaurant Ithaa, built 16 ft underwater, chances are you’ll forget to focus on the delicious caviar, truffle and lobster fare before you. welcome distraction as is the 180-degree vista of the ocean. Billed as the world’s “first all-glass undersea restaurant,” Ithaa exceeds all expectations of visual delight. At the heart of the resort is its wellness treatment that focuses on rebalance and rejuvenation. Regular exercise benefits the body: seek out the yoga instructor for a private class or join a scheduled session. For those on the purge, look no further than naturopathy. The resort’s resident Naturopath, Christelle Stockdale, works with guests to analyse their health goals: weight loss, addressing a specific health concern, detoxification or simply de-stressing. Deeply inspiring are two spas The Spa Retreat on Rangalifinolhu Island and The Over-Water Spa on Rangali Island that offer guests a plethora of pampering therapies. We recommend you opt for The Spa Retreat, an overwater spa haven. Designed as a “resort-within-a-resort” it floats 100 metres away from the tip of the main island. Your whim for a luxurious bath is realized on the beach villas: the outdoor bathing pavilion with a deep sunken bath is filled upon request. Add a dollop of decadence to the ambience with candles, decorative flowers, champagne and essential oils – time to spoil yourself. The real relaxation, though, happens at The Over-Water Spa on Rangali Island in its thatch-roofed treatment rooms set on stilts over the ocean. Three of these rooms have glass floors, offering an undisturbed view of the colourful coral walls below. Nip off after the pampering for a soak in the open-air Jacuzzi on the ‘serenity deck.’ You’ll be hooked on to this dizzyingly beautiful view for life.
TRAVEL DESTINATIONS TO DO You’re obviously here because you love water and you like the seclusion. Stepping into the ocean might be like swimming around in an aquarium. Chances are, here, you will be in the company of manta rays, shoals of fish and many a turtle. Want to swim with the big fish? Snorkelling with whale sharks, diving to explore the coral reef or going on a dolphinwatching expedition might be other options to try out. Count fishes or watch the passing sea life from a glass-bottomed boat; the choice is yours. The resort offers various watersports, including a new Jet Pack. Look up the weekly calendar of events and excursions; you’re likely to find something you’ll enjoy. Individual trips can also be booked for those who want some quiet moments. TRAVEL DESTINATIONS For an in-depth introduction to the Thar desert, head to the dunes with gusto in specially modified SUVs. There are camel rides if you wish to do things in a traditional style. And for advanced lessons in history, art and culture, visit the hallowed Jain temples, abandoned village of Kuldhara and the majestic ‘Golden Fortress.’ After baking in the sun during the day, it is best to retreat to the refreshingly cheerful Sujan Spa conceived by Raison d’Etre. Whispers of the Windmill | Calderas Vistas & Sunsets Say you found the perfect piece of land perched atop a cliff – what would you do there? Build something? If you’re like the enterprising couple Fotini and Nestor Levitis, who bought the land 22 years ago when it was merely a bed of black rocks, you’d build windmills and transform them into luxury villas. You’d bring in some colour to the stark white mills with a liberal splash of green, blue and lilac, and add your personal touch to the décor and furnishings. Then you’d design a practical, well-equipped kitchen to make life easy. This sanctuary is not your run-of-the mill retreat: the peaceful Windmill Villas on the Aegan Sea offers undiluted views of the turquoise waters and sweeping vistas of the islands of Los, Naxos, Koufonisia, Amorgos and Anafi. The three villas – Green, Blue and Lilac – are a lesson in the art of minimalism. They are similar in design and have a private pool, Jacuzzi, flower garden, parking space and private entrance, with each villa being able to accommodate up to five people. The first floor bedroom has a double bed and en-suite bathroom, while the second floor bedroom is cone-shaped with an en-suite bathroom. Read a book or lie on the bed, watching the waves through the windows as they swish in rhythm to the north winds. You could while the afternoon away or pop over to the wine-tasting sessions conducted by wineries on the island. of small tomatoes, fava with caper and onion. Also, try the chloro, a creamy goat cheese made only in Santorini and sausages. Fish delicacies are always a winner in any seaside region as is on this island. And to keep things light, round off your meal with a healthy dollop of Greek yoghurt topped with honey and nuts. For a quiet day by the beach, head to Pori – it is within walking distance of the Windmill Villas. Another option is the nearly 4km-long Perivolos beach dotted with bars, food joints and water sports facilities. The beach provides a sharp visual contrast with its black sand and deep blue waters; the waters are great for swimming. Perissa, an extension of the Perivolos beach, is also another favourite with swimmers. A must-do on your trip is to see the volcano and watch the sunset. Watching the sun dip over the horizon from anywhere in Oia is rather dreamy. For a picture perfect view of the sunset, the Oia castle would be the ideal spot. Looking for rejuvenation on your holiday? Many of the bars and cafes are on the caldera itself; some others are tucked away on the cobbled streets that weave through the town. Helsinki is such a fantastic destination, though often overlooked in my opinion. Located in the middle of all the action and cultural hub of the city, Hotel Kämp is a historical masterpiece dating back to 1887, and one of the regal properties managed by Starwood’s Luxury Collection. Like any good luxury hotel in Finland, the hotel’s architecture and stately rooms and suites (several with personal saunas) make you feel right at home. Dining at Hotel Kämp is an experience – Restaurant Yume is modern Asian, Brasserie Kämp has been serving delicious cuisine for more than 100 years and Kämp Bar is a favorite for locals and guests. The highlight is Afternoon Tea served at Brasserie Kämp, which is a delicious and unpretentious take on this favorite pastime for me that includes sandwiches, quiches, macarons and even mini burgers. Afternoon Tea is just more enjoyable when being savored in such a historically significant hotel property; and in the case of Hotel Kämp, the offerings and service are genuine and professional. Golf in this area of the world is first class, and I was fortunate to visit three of the most exclusive private and public golf courses in the southwest area of Ireland: Dooks, Ballybunion and Tralee. One of Ireland’s oldest links courses, Dooks has some of the most amazing views imaginable in this corner of Dingle Bay that is on the Wild Atlantic Way. Ballybunion is a guaranteed to challenge any golfer, and the views out over the Atlantic Ocean are second-to-none – the Old Course is phenomenal, and the Trent Jones Cashen Course is a close second. Tralee is the direct result of Arnold Palmer’s design group taking the raw earth to create a true masterpiece – this course even has towers from the old castle dating back to 1190. Since most of the courses are played while walking and taking advantage of the advice from local caddies, the entire experience feels much more authentic, as it should in a corner of the world that lives and breathes golf. I can certainly say that the feel of Miami has changed a lot in recent years, and there seems to be a host of new hotels intermixed with all of the ongoing construction. However, while shopping and dining along Lincoln Mall Road for a taste of the local culture, and a visit to Adrienne Arsht Center for the Performing Arts for international culture are must-do’s while in the area, it’s finding a peaceful escape to unwind that’s absolutely necessary. The Loews Hotel Miami is not extravagant, and the rooms and standard suites are not over-the-top, but walking along the palm-lined walkway that leads to a fantastic beachfront pool that has something for everyone makes this hotel a favorite place to call home while in South Beach. The entire team is quick to assist guests while lounging by the oversized pool, or guests can go all out and enjoy the exclusive services and amenities available at the poolside VIP area, SOAK.

Visit the Aviara Spa for the absolute best in pure indulgence. It’s all about the entire bespoke experience here, and is not a situation where they advertise luxury spa services, but only offer a tired and cramped locker room. The spacious locker rooms with whirlpools, saunas, steam rooms and an indoor solarium lounge area at Aviara Spa are perfection. With 20 treatments rooms, the therapists and overall luxurious spa atmosphere make it a great place to spend the day (or two).

Many of the lake view rooms actually look into the landmark John Hancock Center, and beyond onto the majestic Lake Michigan. The Ultimate Equestrian Experience I will admit that a ranch is not normally my first choice for a getaway. However, The Alisal Guest Ranch & Resort somehow brings together the best of an authentic ranch experience with the necessary modern touches to simply make it work. Accommodations are a bit rustic, but this 10,000-acre ranch just outside of Santa Barbara has fine dining, two amazing golf courses, tennis, pool and spa to make this resort very charming. Though I don’t get to be around horses nearly as often as I would like, I never miss an opportunity to spend time on the trails. With 50 miles of trails, a string of 100 horses, and the opportunity to escape on horseback to enjoy a unique perspective of the canyons, shaded hillsides, grazing cattle and babbling brooks makes for a perfect outing. They have rides and lessons throughout the day, and have a great fun-loving staff that caters to all levels of riders.

Palm Beach has long been a favorite destination for those looking for a sun-filled Florida getaway, and The Breakers has been the hotel-of-choice since the beginning. Driving up the path of palm trees to the majestic portico is simply breath taking; and once inside, the insane level of architectural details is very unexpected for Florida. A new gym, spa and more enhancements were just recently completed, and the golf, tennis and pools associated with The Breakers are first-class. Dining here is an experience, and the walk across the street to Flagler Steakhouse, upstairs from the golf pro shop, is well worth the efforts and an indulgent affair. Poolside, the beach bungalows are some of the best options when it comes to bungalows today. The staff is there for anything needed, and I recommend guests try to reserve Number 25, as it’s a personal favorite – corner unit with private grass area overlooking the beach and all the standard amenities that come with bungalow rentals while a guest at The Breakers Palm Beach.

Having visited a number of ski destinations throughout North America and Europe, I have discovered multiple reasons to return to these hotels, restaurants and winter destinations; but Vail sincerely is the entire package, and has quickly won me over. The picturesque Vail Village makes you feel more like you’re walking through a quaint village in the Alps, surrounded by private villas, lodges and hotels. To add to the Village’s charm, the boutique shops and restaurants are easily accessible due to the entire Village having heated sidewalks. The skiing is world-class with more than 5,000 acres of skiable terrain, and the entire operation is made complete with great staff and services. Even those that might not be ready to tackle the slopes, the mountainside restaurants, spa services and spectacular scenery make Vail a perfect getaway. Besides, any ski resort that offers free Wi-Fi in their Gondola is tops in my book.

I visited the hotel during my own busy season -- the holidays -- which also happen to be the top season for this Charleston landmark hotel. I figured it would be quite the challenge for the spa to unwind this stressed-out gal. But as soon as I entered and saw the decor and grander enhanced by the holiday season, I found myself pausing. Relaxation was effortless and immediate. THE HOTEL If you are fortunate enough to stay at this hotel, try to secure one of the 72 rooms on club level. Here, you will be awed by the little touches that make a big impact: turndown with the next day’s weather, an in-room shoe shine buffer (or get one in the lobby on the elevated bench), and even your own microfiber polishing cloth to clean up your tech goodies. While here, don’t miss the acclaimed Forbes Four-Star restaurant, Charleston Grill, The Palmetto Cafe and the Thoroughbred Club Lounge. However, my next trip will give me more time to enjoy one of the new, updated guest rooms and also spend more relaxing time at the spa’s hydrotherapy areas. THE SPA Wellness is taken seriously here, but so is relaxation. I was treated to a new twist on the traditional four-handed spa treatment. The Head, Shoulders, Knees and Toes has a definite “wow” factor. It was actually two treatments at the same time performed by two spa therapists. Imagine the drizzle of Moroccanoil on your scalp, while your feet enjoy tension-relieving reflexology. Your body enters a state of bliss from head to toe, quite literally. When I left the treatment, I had not a care in the world. But I wasn’t too blissed out to miss the exquisite spa boutique and sneak in a little shopping. One of the most exciting features at this European-style spa is its unique rooftop saltwater pool with retractable roof. A retractable roof is one of the most redeeming qualities for any spa. The sunshine is naturally refreshing and relaxing, and a little vitamin D is a known health and mood booster. After all, a retractable roof is not just an after-thought you can add on a whim to the construction budget.

SPAS Around for 40-plus years, in an upscale north Dallas area off Preston Road, Cooper Aerobics Health and Wellness has a spa (opened in 1975). The property also contains a clinic (opened in 1970), a hotel and just about anything else you need as well. When I was there for a facial at the spa and some experiential facial work in the clinic there were folks all around having a good time and the tennis courts were full for hours. At the spa, Jennifer McKeever took me into a treatment room where I had a Deep Cleansing Facial for one hour coming out with my face feeling better than new. McKeever is the Lead Esthetician at Cooper Spa and knows her job well. Just enough chatting and relaxation during the treatment made for the perfect experience. I highly recommend this spa for whatever ails because they really do have a blend of it all. When I finished my facial, the Public Relations representative escorted me to another area of the complex where I experienced a bit of what is called Dysport. Dysport is an alternative to Botox. While I had been told in the past that this was a type of generic Botox, the doctor who did my treatment Dr. Helen Kaporis, says these treatments are “separate but equal.” This distinction allows her to offer patients either one. The units that one receives, depending on Botox or Dysport, vary and are a bit different. For example, five to six units of Botox might be the same as about 12 to 15 units of Dysport. The latter tends to run a little less expensive. There are many reasons why an individual might choose one over the other. A simple reason could be because Botox does not work as well on one person as it does on another, and the other person’s skin takes to Dysport more easily. Whatever the case might be, the doctors at Cooper Clinic are friendly and helpful. Finally, at the Joule Hotel on Main Street in Dallas’ downtown area has a first-rate spa and the trend setting property recently began offering a 2:30 tea time as well. At the spa, called ESPA at the Joule, I indulged in the Contour and Firm Body Treatment that included a detox wrap along with an advanced body massage to tone and firm the skin. The therapist was very attentive to my needs and asked me a number of times about my comfort level because the massage was quite intense. However, in a body firming treatment like this one it needs to be firm so that the circulation undergoes proper stimulation. There was also a body exfoliation using warm and iced mitts and then the comfortable body wrap before the massage began. Other standouts at the spa include the signature Joule therapy, an 110-minute treatment using intuitive body work or the ESPA Hand and Foot Ritual for indulgent pampering of the nails complete with hot stones and paraffin. At The Joule Hotel’s afternoon tea, folks will find a smorgasbord of goodies in the hotel’s Taschen Library beginning with champagne. Amid Taschen’s coffee table titles, the wait staff serves up casual tea options with unusual finger food combinations for the ultimate experience. With Joule Executive Chef Jaco Smith and Executive Pastry Chef Ruben Torano at the helm you can’t go wrong. Of the delicacies served, the day I was there, this included a ham mouse éclair with parmesan tuille and mustard caviar. The smoked salmon rillette and an apple milk tea bomb were to die for, indeed, no stuffy British attitude here, just lots of class Texas style. NOOR ALFARDAN
This Qatari fine jewelry designer’s Arab inspired statement lace rings and earrings are making her an A-list hit, but she’s not resting on her laurels; instead she’s busy pushing the boundaries of creativity, finds Smitha Sadanandan. Inspired by Arabic elements and henna designs, Noor Alfardan’s fine jewelry is steeped in tradition and strongly influenced by her Middle Eastern heritage. Noor cut her teeth as a buyer in her family business; it sure helped that her family, the Alfardans, were into jewelry and watch retail business and represented over 60 brands. “I wanted to create something that would stand out even to someone like me who spends an entire day surrounded by jewelry,” says Noor. Since her jewelry brand Noudar was launched four years ago, the likes of Natalie Dormer, Selena Gomez, Michelle Rodriguez and Nicole Scherzinger have been spotted wearing its avant-garde collection. Today, Noor’s clientele comprise the well travelled who have clusters of basic jewelry and continue to seek new and arresting designs. “They buy my pieces as statement additions to their existing collection,” says the designer, whose work reflects the fun-loving spirit of costume jewelry.
Where do you manufacture your jewelry? I envisioned creating a purely Qatari brand that people would recognize internationally. I wanted everything, including the manufacturing, to be done in Qatar. The jewelry was previously produced in Valencia, Italy and the diamonds sourced directly from diamond suppliers in Belgium or bought from suppliers at exhibitions. The quality was always lovely; I believed we could achieve the same outcome in Doha. This year, the Alfardan Group opened its doors to our new hi-tech jewelry workshop. What’s new at Noudar? My latest collection is just being finished at our workshop and will be unveiled at the Doha Jewelry and Watch Show in February.
How did you embark on this journey? A: My father used to take me to jewelry exhibitions and his meetings with jewelers ever since I was six. After each meeting, I would draw my favorite pieces from the collections we had just seen. I would alter them in ways that I thought would make the jewelry look better. I also developed such a fascination with gemstones that I couldn’t ever imagine another path for myself. By the time I was 13, I was already designing personal pieces for friends, family and for myself. But it wasn’t until I graduated from university and worked in the company for three years that I decided to market the pieces I designed under my own label – Noudar. What was the first piece of jewelry you designed? A: I designed a diamond skull necklace in both yellow and white gold when I was 13. I didn’t want a pave setting and wanted to spread the diamonds around the skull in a random order. I had the gold in the middle etched with lines to make it look like a scary skull as opposed to a pretty one. I still have the necklace and wear it nearly every day. Tell us about your collaborations with fashion designer Julien Macdonald. I collaborated with Julien Macdonald on his presentations during the London Fashion Week for two years in a row. I absolutely love his dresses; the intricacy of the beadwork and embroidery compliment my jewelry so well.

Volvo XC90 and the Perfect Catalonia Fit By Rita Cook
Recently I found that driving the 2016 Volvo XC90 in Spain was the perfect combination. The Volvo folks brought us in to test the car in an area just outside of Barcelona where countryside met with beach and the roads were easy to navigate particularly in this snazzy set of wheels. Mine and my colleagues greatest challenge seemed to be “not getting lost” as I kept saying over and over again as we drove around admiring the landscape. However, that was not to be and at one point during the afternoon drive we found ourselves down a dirt road in the middle of a vineyard. A man with a very large dog was walking down the same dirt road and chuckling to himself. When he came to our window for directions he just kept saying vino and pointing at a small house a few yards away. We finally found our way back to the hotel (thanks to the navigation being pre-set with an option to go home). We also found ourselves at one point in a very small village and on a very small street, you know the ones, in the movies you see these little streets all the time and this image is one way you can also tell when you are in Europe. 54 Upscale Living Magazine |

Well here I found myself behind the wheel of this Volvo looking at less than inches on either side and praying the car side mirrors didn’t get scratched. Happy to say all went well, so indeed, I love this car so much and when driving it the feeling is that of action and adventure and taking charge, who doesn’t want to own a car with a vibe like that. So let’s go into some detail about this “oh, so cool” 2016 Volvo XC90. The more I learn about Volvo and its continual quest to move forward the more impressed I find myself regarding the Volvo brand overall. The Volvo XC90 is all about styling and comfort and this one is going to be one of the top choices in the SUV market alongside the likes of the Acura MDX, Infiniti QX60 and the BMW X5. The 2016 Volvo XC90 has a totally new look and some big changes. For 2016 expect a smaller engine meaning good fuel economy coupled with
a powerful punch. Keeping the Swedish style and culture in mind, Tisha Johnson, Chief Designer, Interiors for the new XC90 says the design reflects the Scandinavian lifestyle and the term Scandinavian sanctuary was even mentioned. A good point since, after all, these days people spend a lot of time in their vehicles so why shouldn’t it be the best experience possible. Johnson says the Swedish folks are “thoughtful before executing” and with that she says this new Volvo was designed in that same way. Highlights to point out include easy-to-use navigation, a seat design that took around seven years to perfect, 32 different combinations for folding the seats, zoned climate control, a very large sunroof and theater seating so everyone gets the same view and with just a simple wave of the foot under the bumper and the tailgate opens too.
AUTOMOBILE The XC90 will also come with a T8 powertrain that is a twin-engine plug-in model offering about 60-kilowatt of electric along with the fuel engine so as needed the electric and the plug-in hybrid will have 400 horsepower and it is said to be expected to get 25 miles on electric only with 472 pound-feet of torque. Safety is also a consideration on the 2016 Volvo XC90 as on all Volvo’s since the brand stands behind their Vision 20/20 that goes like this “by 2020 no one should be killed or seriously injured” in one of the Volvo cars. Remember too, it was in 2002 that Volvo released the rollover protection and in 1959 this was the brand that introduced the threepoint safety belt development. On this 2016 Volvo you get imminent frontal collision detection with automatic braking as well as a feature that allows for the brakes to be applied automatically when the driver turns in front of an oncoming car and tightened seatbelts as needed called the Run-off Road Protection. I would say that the interior is nothing short of beautiful; elegant and classy and there is also plenty of room inside for the driver and passengers and the second row will give 2.4 inches of legroom, while the third row is not for long trips and is best served for children. At a cost of $48,900 on the low end and $54,500 on the high end, the plug-in hybrid is being touted to offer 25 miles using the electric feature only. After I had myself had the chance to drive the T6 and T8, in the afternoon we visited a Cava place (cava is sparkling wine in Spain) with 17 generations of family having made the place what it is today and checking out the cellar was a tour on a sort of rollercoaster like mode of transportation ala Disney Land on botox - www.grupocodorniu.com. From there we visited the town of Sitges with great sightseeing and on the water for a look at history and some great boutique clothes shops. A great combination overall and the Volvo excels with this new one with Barcelona and its environs the perfect playground.
On the exterior there is a larger grille, sleeker headlights and inside leather, wood and even crystal in some cases, making this a luxurious experience reminiscent of that sanctuary the Volvo folks eluded too and, with a great sound system to the tune of Bowers & Wilkins and 19 speakers. The 2016 Volvo XC90 is a luxury crossover SUV that can carry seven passengers and comes in the base Momentum trim or the Inscription or R-Design trims as well. All of the extra package options not offered on the various trims are all priced under $2000 to add-on. Going under the hood the 2016 Volvo is the world’s first twin-engine on a seven seat four-cylinder with the Volvo execs noting “we aim for leadership.” The engine is supercharged and turbocharged with 316 horsepower and 295 pound feet of torque with an eight-speed automatic transmission and AWD.

The winter season attempts a clumsy dos-à-dos with the spring. In the northeast, tiny snow mounds once themselves giant white piles like scoops of vanilla ice cream, melt patterns into the streets. Residual razor sharp ice patches turn to sparkling slush while newly blooming pansies and crocus poke out through unkempt gardens, bringing much needed color. It thaws our hearts and piques out appetites, pulling us all willingly out of hibernation for the love of freshly prepared Spring-centric dishes. In that spirit, Upscale Living has gleaned a well rounded sampling of some of our favorite restaurants and the culinary masters who create and feature them. chef and restaurateur himself. From his work at the famed Le Cirque restaurant in New York to his experience at Europe’s finest Michelin starred restaurants such as his work under Chef Roger Vergé at Le Moulin de Mougins in the south of France, his signature style remains consistent.
Chef Terrance specializes in Mediterranean-inspired American cuisine. His love for and expertise in selecting artisanal cheeses prompted him to offer the traditional cheese course at Picholine. He is a frequent guest on the “Today” show and has also appeared on PBS, The Food Network, Martha Stewart Living Television, “Anthony Bourdain: No Reservations,” “CBS Morning News,” “The Early Show” and “Live with Regis and Kelly.”
Picholine- Executive Chef -Terrance Brennan Picholine opened its doors at 35 West 64th Street in October of 1993 and it immediately became one of the best restaurants around Lincoln Center. Redesigned in 2006, the wine and cheese bar features purple leather banquettes and walls upholstered in a grey and lavender stripe. Velvet curtains separate the bar from the perfectly elegant dining rooms, showcasing grey mohair banquettes and leather chairs with deep purple piping. In addition to the main dining rooms, L’Olivier, the restaurant’s private space, accommodates an additional 22 guests. The restaurant’s intimate Wine Room and famous Cheese Cave are iconic and actually, quite romantic. In that spirit, chef combines the traditional with the modern in May/December romance fashion, by introducing playful spins on his ever evolving menus, allowing his signature dedication to old school dining to be freshened up and updated with just a gentle shift and nudge. This is artistically expressed in such treats as the Sea Urchin Panna Cotta “2015” with Ocean Gelée, Wild American Caviar, Seaweed “Coral”, the Persimmon Miso Glazed Foie Gras Wild Rice, Turnips, Foie Gras Dashi or the Hamachi Ceviche a la Minute Citrus, Ginger, Radish, Chili and Avocado. For the adventurous, order the Wild Partridge or Grouse if available, cooked to tenderness and complete with the menu note “birdshot may be present”. Certainly not for the faint of heart or appetite. The wine list is endless and diverse with selections in every category, the cheese service sublime. The desserts here are remarkable as well like the Coconut Panna Cotta Pineapple Brulée with Coconut Crumble, Thai Mango Sorbet or the Caramel Cashew “Bar” with Tamarind Caramel, Cashew Mousse and Banana Variations. Delmonico’s Restaurant Group- Executive Chef- Billy Oliva It’s the end of a long winter, and you’re at the end of a long day. What more fitting then to travel downtown to yet another end; the tail end of lower Manhattan. There in its original flagship building, enter a vast iconic dining room, check your coat and indulge. Stow your day planners under your seat and worry about your waistline tomorrow. You are in for a treat. Ease into your meal with a seafood tower and taste yet another season, the best of summer just around the bend, served with three sauces all composed to enhance the freshest shrimp, lobster, clams and oysters before you. Try the Caesar Salad, maintaining its original ingredients but still managing to jazz it up a bit, with a smooth pale yellow soft cooked egg in the center and whole white anchovies atop. Another popular choice is naturally the signature Delmonico steak; tender, tasty and cooked to perfection. For dessert, the Baked Alaska born at this very restaurant many years ago will coax you back to the grand dining of the gilded era Splendid.
CULINARY About the chef: Executive Chef Billy Oliva’s love of the culinary arts began at in childhood when he took his first restaurant job in NYC at Fraunces Tavern under Chef Guy Gautier, just blocks away from Delmonico’s flagship restaurant in New York’s Financial District. Today, as the Executive Chef of this restaurant group, Chef Billy brings a globally inspired, seasonal approach to Delmonico’s legendary cuisine, known as the United States’ first fine dining restaurant and the birthplace of the Delmonico’s Steak, Baked Alaska, Eggs Benedict and Lobster Newburg to name a few. Emphasizing fresh local and organic ingredients, with homage paid to tradition nonetheless, Chef Billy manages to maintain Delmonico’s signature dishes and its iconic roots while at the same time, updating the recipes in consideration of modern influences. (He for example, is sure to have fine vegan choices on hand should the request be made such as quinoa dishes and other popular vegan dishes, produced of course with inventive flair.) Delmonico’s sister restaurant, Delmonico’s Kitchen in Midtown Manhattan, offers a contemporary twist on Delmonico’s flagship menu in a more casual setting while Delmonico’s of Southampton Est. 1837, keeps the Hamptons droves happy. Boulud Sud-Executive Chef Daniel Boulud An open space with modern chic appeal, a sizeable contemporary bar upon entering, an open kitchen and wait staff bustling about in seeing to your every whim and desire, this dining room lends itself to people watching via its large floor to ceiling windows. Pedigreed dogs and their families, young couples in love and proper businessmen alike, pass by and make for great conversation, but before long, you’ll be chatting it up about the delicious and beautifully presented food instead. Start with the Mediterranean Mezze with Spicy Moroccan Hummus, Herb Falafel, Babaganoush or Sea Urchin and Crab Tartine with Green Olive, Lemon Cream, Seaweed Rye Bread and Lemon. Try the Saffron Linguini with Razor Clam, Puntarella and Sardinian Bottarga or perhaps the Lamb Burger with Crushed Potatoes and Garlic Chips.

CULINARY The desserts here are worthy of a visit alone, like their signature Grapefruit Givre with Sesame Halva, Rose Loukoum and Grapefruit Sorbet. It’s like tasting a fresh spring day. About the chef: Daniel Boulud is Chef-Owner of several award winning restaurants and his Feast & Fêtes catering company. Originally from Lyon, France, he took the New York dining scene by storm and is today considered one of America’s leading culinary authorities. Notorious for the contemporary spin he puts on cooking rooted in French tradition, his New York City restaurants include his flagship DANIEL, a Michelin starred Relais & Châteaux member, Café Boulud with its adjacent Bar Pleiades, the more casual db Bistro Moderne, Bar Boulud, the Mediterranean themed Boulud Sud and Épicerie Boulud, an eat-in and take-out market and café. Jose Enrique received the esteemed Food & Wine Best New Chef 2013 and rightfully so. A native of Puerto Rico and culinary expert on Puerto Rican cuisine and local ingredients, he was classically trained and cooked around the world before returning to open his first flagship restaurant in his native Puerto Rico. His cooking is defined by his heritage, incorporating traditional Puerto Rican goods and adding his signature to every dish with his take on bright and fresh flavors.

Maine Lobster Macaroni and Cheese “Au Gratin” Degree of Difficulty: Medium | Time Needed: 1 hour | Serves: 4 Ingredients: 3 Tablespoons, white wine vinegar, 4 live Maine lobsters (about 1 pound each), Salt to taste, White pepper to taste, White wine to taste, tablespoon butter, 1/3 cup finely minced shallots, ¼ cup very finely diced carrots, ¼ cup very finely diced celery, 1 tablespoon cognac, 2 tablespoons port, 1 ½ cups cream or half-and-half, + 2 ½ tablespoons cream, 1 bouquet garnish, 1 egg yolk, 8 ounces elbow macaroni or small pasta shells, 3 tablespoons freshly grated Gruyere cheese. Preparation: To prepare the lobster, bring 1 ½ gallons salted water to a boil in a large stockpot. Add the vinegar and then add 2 of the lobsters, head first. Cover tightly with a lid, and cook for 3 minutes. Remove the lobsters, drain and set aside to cool. Repeat with the remaining 2 lobsters. Break the lobsters in two where the tail meets the body. Using scissors, cut the underside of the tail and remove the meat in one piece. Break off the claws, carefully crack the shells and remove the claw meat in a single piece. Cut the bodies in half lengthwise, and remove and discard the greyish, milky sand sacks located near the eyes. Remove the soft green strip of tomalley and dark green coral and reserve. Season the lobster meat with salt and white pep-
per. Heat the butter in a large nonstick skillet, and gently sauté the lobster meat over medium heat for 2 minutes. Remove the claw meat and continue to sauté the rest of the lobster meat for 1 to 2 minutes. Transfer the lobster meat to a work surface and let cool slightly. Cut the meat into ¼ inch-thick slices and set aside. In the same skillet, sweat the shallots, carrots and celery over medium heat for 3 minutes. Add the cognac and port, reduce to almost dry. Add the white wine and reduce by half. Then add 1 ½ cup of the cream, the bouquet garni salt and pepper. Reduce the heat to a simmer, and cook for 5 to 7 minutes. Cover the skillet, remove from the heat and set the sauce aside. Whisk the remaining 2 ½ tablespoons of cream in a small mixing bowl until thick. Fold in the egg yolk and keep refrigerated. Cook the macaroni in a large saucepan of boiling water until just tender, about 10 minutes. Drain in a colander and set aside. Preheat the broiler. Return the sauce to low heat and warm gently. Whisk the reserved lobster tomalley and coral into the sauce, and then stir in the cheese, lobster meat and macaroni. Increase the heat to high and quickly bring to a boil. Adjust the seasoning if necessary. Divide the macaroni mixture equally between individual warm gratin dishes. Pour the reserved cream-egg mixture over the macaroni, and place the gratin dishes under the broiler until golden brown. Serve immediately.

FINGER LAKES, NY
Named for the 11 long, skinny lakes that disperse like fingers, the Finger Lakes region of Upstate New York is the largest winegrowing region in the state, with some 11,000 acres of vineyards. The region is oftentimes compared to Germany’s Rhine Valley due to its similarities in growing conditions. The three major lakes—Cayunga, Seneca and Keuka—each has its
own distinct wine trail, all coming together to form the 130 wineries that make up the Finger Lakes AVA (American Viticultural Area). So no matter which route you choose, you’ll quickly understand why the Finger Lakes was listed by Wine Enthusiast as one of the top 10 wine travel destinations for 2015.

CHARLOTTESVILLE, VA
Most people know the quaint town of Charlottesville for being the home of the University of Virginia; what people don’t always realize is that it’s also one of the top winegrowing regions in the States. Dubbed the “Birthplace of American Wine,” it was Thomas Jefferson who first brought European winemaking techniques to this region of the New World in the late 1700s. Named for his famous Monticello estate (the
United States’ only house listed as a UNESCO World Heritage Site), the Monticello Wine Trail covers over 1,250 square miles of land at the foothills of the Blue Ridge Mountains, yielding 30 distinct wineries within 25 miles of Charlottesville. Most are small, family-run operations (even the Trump family has a successful winery here), resulting in a balance of some of the best old-meets-newworld wines in the country.

In Sonoma, bigger doesn’t always mean better. In fact, 40 percent of the region’s vineyards are less than 40 acres, while 80 percent are less than 100 acres, representing a total of nearly 450 wineries throughout. Most are family-owned estates, many in their third or fourth generation of winemakers. And although it’s perhaps the most well-known region on our list, Sonoma Valley doesn’t always get the recognition it deserves due to
its proximity to trendy Napa Valley. Sonoma has instead maintained a somewhat quiet existence. Just 45 minutes north of San Francisco, Sonomo is actually much larger and more diverse than Napa, with 15 distinct growing regions and microclimates, allowing for more than 50 grape varieties thrive. And, of course, more types of grapes means more varietals of wine.

It’s true what they say: everything is bigger in Texas. And Texas Hill Country is no exception. Though it’s not the largest winegrowing region in the States, it’s certainly big, home to 42 stunning wineries scattered throughout 15,000 square miles from Austin to Fredericksburg and Lampasas to New Braunfels. Each boasts its own unique personality, terroir and specialty blend, but one thing remains consistent: each one’s decidedly
Texan spirit and hospitality. With a semi-arid climate akin to Tuscany and Northern Spain, warm days and cooler nights, the region boasts prime conditions for several grape varietals. Today, Hill Country is one of fastest-growing wine-producing regions in the country, welcoming over 5 million visitors every year, second only to Napa Valley.

WALLA WALLA, WA
Situated in southeast Washington State, this seemingly middle-ofnowhere slice of land—more than 250 miles from either Seattle or Portland—continues to make strides in the wine world. At 46 degrees latitude, the region is about midway between the Burgundy and Bordeaux regions of France, so it comes as no surprise that the region’s mineral-rich glacial soils make for the perfect place for red wines to flourish, particularly Cabernet Sauvignon, Merlot
and Syrah. Over the last 30 years, the Walla Walla Valley has seen an enormous growth spurt thanks to the area’s founding five wineries—Leonetti Cellar, L’Ecole No 41, Seven Hills, Waterbrook and Woodward Canyon—who joined together to establish the region as an American Viticultural Area. Today, more than 100 wineries call the valley (which spans over 500 square miles) home.

I met with the exuberant visionary CEO of Six Senses Hotels, Resorts and Spas Neil Jacobs during the International Luxury Travel Market (ILTM) in Cannes, France for an interview about the philosophy of the brand and how they differentiate themselves in the luxury marketplace. Neil has been at the helm of the admittedly quirky brand since 2012, having previously worked in the luxury hotel business for decades. Empathy is at their core philosophy where wellness and community are emphasized. Locations are chosen for their beauty and serenity. The brand’s commitment to delivering unexpected surprises for guests extended to the press covering ILTM. Six Senses sponsored the Media Center and flew one of their specialists in massage therapy to Cannes to give journalists short aromatherapy chair massages in between press briefings. Known as an eco-friendly but upscale concept, how does Six Senses combine the two seemingly competitive philosophies?

Although our hotels are not inexpensive, we never talk about being exclusive. It’s not in our vocabulary. We are inclusive and want our guests to experience the local community. We feel we have an obligation to build a product that embraces our environment. Don’t get me wrong, luxury is an important part of puzzle and although I sound very earthy, I don’t own Birkenstocks. When you wake up in one of our properties relaxed and well cared for, it is luxury indeed. Do your guests mainly stay at the hotels or do they venture into the communities? Our guests go into the local villages and, like in the case of Ziggy Bay, they are among herds of goats. They can milk them and learn to make cheese.
We plant gardens where we grown our own food. There is a crossover of community and property with a seamless experience because we believe the richness of our guests’ experience will only be enhanced by the local community.
What’s new for the brand?
What makes your brand an eco-friendly brand?
We are rolling out some doctor relationships. The famous American cardiologist Dr. Oz is with us. He is helping us develop some interesting integrated wellness programs. Nutritionist Dr. Stephen Gundry from California is doing a set of nutritional guidelines. Yoga sleep and aerial yoga are new concepts in several locations. Our plan encompasses food and wellness. We can provide guidance to guests with total immersion or they can choose a more laid back approach.
We feel we have an obligation to build a product that embraces our environment. We are very careful how we use water resources. When choosing the materials we build with we won’t do it unless it fits with the surroundings and try to source as much locally as we can. For us, the sustainability issue is as much about community outreach as it is about the built in environment. Tell me more about Six Senses commitment to the local communities. How we interact with the community is about how we leave it behind for them and how we are able to improve their lives. Of paramount importance to us is the development of people. We attempt to hire local as much as possible. We train and advance people to become the best they possible can become. In addition to the professional development of our staff, we allocate half a percent of revenue to at-large community projects. We call this our Social Responsibility Fund and commit to that money remaining local. Tell me about the cuisine at your properties. Are you on the hunt for Michelin stars? I attended the food and beverage conference in Bangkok last week. There was a big emphasis on bringing in Michelin star chefs to cook. That was amazing, but for us it’s not about a concept of a Michelin food restaurant as much as it is showing a love for fresh local products. I want another kind of experience. What’s the end game? For too many chefs, they want the star. I look at it a different way; do something we believe in and if the star is the byproduct, then fantastic. It should not be the ultimate goal. In order to satisfy guests sometimes we are trying to be too much – too much with 100 items on the menu because we have international customers with many demands that cannot always be fulfilled. We need concepts that stick to the theme – Italian needs to be authentic Italian. We have enough options for diners that we can offer smaller menus and stay true to what we are describing as the best cuisine we can serve in the hotel. 72 Upscale Living Magazine | Issue 35

At Six Senses, we have a roster of 250 people who are advisers and practitioners worldwide. We track them as they move around the properties. They are vetted and we perform system wide checks to track their effectiveness. What new properties are you rolling out soon? Douro Valley in Portugal is a special property for us. Douro is considered the Napa Valley of Portugal. Wine Spectator named four of the top ten wines from this region. We took over the old country house designed by New York City design firm Clodagh – 71 guest rooms and suites with organic interiors. Of course we will emphasize wine, food and wellness at this property. We plan to open in May, 2015. In July, 2015 our Seychelles location on a private island called Felicité will open. It is a home-style atmosphere with 30 villas and 17 private residences for sale. Truly secluded, it’s an easy helicopter ride from Mahé. Our goal is to be as organic an island as possible. The resort has huge boulders and we placed the villas around them. It is a lovely sanctuary for gigantic tortoises. We have a climate that suits water sports year round, an environment with a lot of sailors – the wind and beauty are so attractive for the sailing community. Qing Cheng is our property in China in the Qing Cheng Mountains near the UNESCO World Heritage site near the city of Dujiangyan. Dujiangyan is becoming an important city in western China. It is a spiritual area, home of Taoism. People will love that it is only 15 minutes from a significant panda reserve. Our design is like a contemporary Chinese village with architecture elements that fit in naturally with the surroundings. Our spa, naturally will feature treatments with holistic approaches.
