A

rguably the best Huracán so far, the Lamborghini Huracán EVO RWD Spyder is an agile, sleek, and a beast of a machine designed to give you the signature Lamborghini experience with extra speed, style, and comfort.

A favorite of sports aficionados, the Italian company is synonymous with supercars that exude high performance, look classy and feel luxurious. The Lamborghini Huracán EVO RWD Spyder is a highly revolutionized love child of its predecessors Huracán LP610-4 Spyder and Huracán EVO. This supercar is specially engineered as an instinctive driver’s car, designed to offer extreme control and power at the same time while being completely secure and safe. Lockdown or not, Lamborghini knows how to launch a car giving it its moment to shine. The Evo Syder was launched on its official website with the use of Augmented Reality to ensure the near-perfect experience of the supercar. Every iOS phone and iPad user could have a tour of the Huracán EVO Syder and virtually see the interiors, the functions, and the entire experience of the car. Stefano Domenicali, Chairman and Chief Executive Officer of Lamborghini, said in a statement: “The Huracán EVO Rear-Wheel Drive Spyder doubles the driving fun, delivering raw driving pleasure with the opportunity to celebrate life outside. The driver is perfectly in touch with Lamborghini’s engineering heritage, experiencing the feedback and engagement from the set-up of a rear-wheel-drive car where the electronic intrusion is minimized while enjoying the sense of freedom and spirit of life that only open-top driving provides.” Powered with the phenomenal 5.2 liters naturally aspirated v10 engine with 610 horsepower and 560 Newton meters of torque, this beast of a car takes only 3.5 seconds to reach 0 to 100 km/h. With a top speed of 324 km/h plus and 8500 RPM, the Huracán EVO Sypder gives a true Lamborghini experience with the hardware than the software. These robust features remind of the Italian supercar maker’s iconic designs like the Miura, Countach, Diablo, and Murcielago. But this is just where the fun begins! The Huracán EVO Sypder features a new front splitter, framed front air intakes, and a black glossy rear bumper that hides the v10 engine. Using the rear-wheel-drive allows it to pull the power down without smoking the rear tires and enjoy the drift. The absence of front drift-shafts makes it lighter (1509 kgs), adding on to the drifting experience. Like other Lamborghini supercars, this car as well has three drive modes interchangeable via the Lamborghini’s ANIMA button: the traditional Strada (Street in Italian) provides stability and safety in all conditions by minimizing rear-wheel slippage, the Sports mode allowing the rear wheels to slide and skate during acceleration and with P-TCS (Performance Traction Control System) calibrated to suit the drift. And the Corsa mode

(race mode) optimizes the car’s traction and agility when exiting a corner in high-performance conditions, maximizing dynamics and speed. The front/rear weight distribution of 40/60, with doublewishbone suspension with overlapped quadrilaterals and passive shock absorbers, and the ventilated and cross-drilled discs fitted to 19” Kari rims to the iconic Pirelli P Zero tires provide additional grip. One can also add on the MagneRide electromagnetic damper control feature and ceramic brake plates fitted on 20” Kari rims. The highlight of the Lamborghini Huracán EVO Syp-der is the folding soft canvas roof ,and the rear win-dow going down at a push of a button (irrespective of the rood placement) is a perfect scenario to enjoy the orchestra of the internal combustion while the wind is disrupting your hairstyle. Very few cars are as techno-logically advanced as the Evo Spyder, the upcoming addition of Alexa would be a definite game-changer as you can now voice-control your car from asking to open the gates to calling the ambulance during a misfortune event. The inside of the car also features a 19-inch wheel that is unarguably accurate and smooth. The supportive sport seats with upholstery available in leather and Alcantara create a premium racer mode feel while feeling secure. The taller Lamborghini fans might be disappointed at the cramped feeling. The Distinc-tive Q-citura trim features a diamond pattern as an addon option. One could also opt for either the fully electric/heated seats or racing bucket seats with a carbon-fiber shell. The iconic feature of the interior is the giant HMI 8.4-inch touchscreen infotainment console on the dashboard. A small detail is that every icon used the hexagon shape. The system features Bluetooth connectivity, navigation with traffic information, satellite radio, MP3 compatibility, and an internal hard-drive. There are seven toggle buttons above the central screen that control various features like aisle movement, window panes, etc. Included out of the box is dual-zone climate control, LED headlights, the power-operated soft-top push-button start, parking sensors, and cruise control. For the racer fanatics, two cameras help you understand and access your performance to improve lap-time. The exposed carbon Forges composites only add on to the sporty vibe of the car. Though the cargo is a considerable small space of 3.5 cubic feet, carrying cargo is not what is the car is made for. Comparing to its direct rivals, the Ferrari F8 Tributo and McLaren 720S Spider, Lamborghini wins in the superficial drama or securely enjoying the V10 whirlwind. However, the Lamborghini Huracán Evo RWD Spyder exceeds expectations and if you wish to experience the authentic Lamborghini experience, this is the way to go!

CORVETTE C8 Incredible Performance

It’s a day that Corvette fans have been anticipating for decades — the introduction of the new C8 Corvette. We’ve enjoyed driving Corvettes for many years, but this one is something entirely new. Why is the C8 so different from previous models, and what can you expect to see when you get behind the wheel of one? STARTING WITH THE BASE MODEL If you’re investing in a sports car like a Corvette, the chances are high that you will not settle for the base model. With the C8, however, you aren’t missing out on much if you stick to the stock options. Plus, even at that level, you’re looking at a $60,000 car. The base model comes with a 6.2L V8 engine, capable of generating 490 hp and 465 lb-ft of torque. This setup is just a hair less than what you’d get with the performance exhaust. You still get an 8-speed dual-clutch transmission, four-piston Brembo brakes and a mechanical limited-slip differential. Driving a base model C8 Corvette will not disappoint. What you’ll miss out on is things like the Magnetic Ride Control suspension, which is available on the Z51 version. You will, however, get the standard suspension and allseason tires, which make for a slightly stiffer ride when compared to the Z51. Still, you’d have to drive the two side-by-side to notice the difference. NAVIGATING YOUR ENGINE OPTIONS When it comes to customization options, you’ve got plenty to choose from with the C8. The first thing we’ll look at is engine options. You’ve got three to choose from for the base C8 — 1LT, 2LT and 3LT — and all three of which come with the same 6.2L V8 engine mentioned above. Opting for the Z51 performance package doesn’t get you much more in the way of power. In fact, you only get an extra 5 hp and 5 lb-ft of torque. It’s enough to push the Z51 from 0 to 60 mph in less than three seconds, which might be worth the additional $5,000 price tag for some. THREE TRIM OPTIONS The three trim options offered for the base model of the C8 Corvette have several different things you might need to make the most of your time behind the wheel. 1LT is the most basic trim option, but it still comes with some features that you’ll enjoy, from the push-button start and keyless entry to a digital gauge cluster and GT1 seats.

You’ll also see a comprehensive infotainment system and a variety of safety features, including a rear-facing camera, parking assistance and other options to keep you safe. 2LT includes everything from the first trim package, while also offering more interior and exterior color options. You will also have things like heated seats, blind-spot monitoring and a performance data recorder to monitor your driving performance and help you make the most of your C8. The 3LT provides everything from the previous two trim options, as well as interior upgrades that include features like suede and leather upholstery. It also has GT2 seats, which have carbon fiber trim. WHAT SETS IT APART? While all of these options sound pretty amazing, what sets the C8 Corvette apart from previous models? One thing that really makes the C8 stand out is the engine placement. Instead of the front engine design used by the last seven generations of Corvette, the C8 has a mid-engine. Chevy has been working toward a mid-engine sports car for decades but hasn’t had the technology to make it happen until now. In addition to having some serious power — even in the base models — the mid-engine design lowers the Corvette’s center of gravity. While these cars have never had an issue with rollovers because they’re so close to the ground, this shift in the model’s center of gravity means that the C8 hugs the road like never before. Unfortunately for Corvette purists, there is no option for a manual transmission in this design. The only choice is the 8-speed dual-clutch transmission; This automatic transmission is traditional, but it might lack the connection with the car that manual models provide. BRINGING ONE HOME When the first Corvette C8 started to roll off the assembly line, you could expect to pay a serious premium — the first one off the line sold at auction for $3 million. Today, however, you can bring one home for a cool $60,000. Making his clients feel alive in a newly designed space has put Wade Weissmann firmly on the map in the architecture business. Creating dream homes since 1996 his collaborative approach to design always yields the best results. WADE, WHEN AND HOW DID YOUR JOURNEY AS AN ARCHITECT BEGIN? I knew from about the age of 6 that I wanted to be an architect. My grandfather wanted to be an architect, so he bought me architecture books for every birthday and holiday. After receiving my masters in architecture from the University of Pennsylvania, I got my feet wet working in a few different architecture firms, spending time on construction sites with woodworkers and masons, working alongside my cousin and best friend, the late interior 18 | UPSCALE LIVING MAGAZINE | JULY 2020

designer, Jon Schlagenhaft, and doing anything and everything I could to learn as much about the design world as possible. A few years into that period of my life, my brother engaged me in the design of his cabin in Northern Wisconsin. The next-door neighbors then hired me to design a home for them. That was the beginning of it all. WHAT/WHO DO YOU DRAW YOUR INSPIRATION FROM? Travel brings me the most inspiration- visiting new places, amazing cities and towns, hotels, restaurants, gardens. I am always soaking in inspiration wherever I am. WHAT ARE / HAVE BEEN YOUR BIGGEST CHALLENGES IN YOUR CREATIVE PROCESS?

Truly the most significant challenge when running a firm is carving out the time to allow for creativity and drawing. Once I find the time, the ideas flow from my pencil. I have learned to adapt and draw all the time - in restaurants, airplanes, or wherever I am! WHAT INSPIRES YOU TO WORK ON A SPECIFIC PROJECT? A client who is looking to do something unique. I honestly do not have a requirement about the size of a project or the budget, so long as the client is excited by design and creativity. WHAT DOES YOUR CREATIVE / WORK PROCESS INVOLVE? We have a collaborative process. We love integrating ideas from our clients, builders, interior

architects, landscape designers, and all design contributors. We start the process by getting to know our clients and the way they live. It’s an incredibly personal process, so it is very important to me that we have trust, and I know how they want it to “feel” when they get up in the morning, or when they are moving from room to room. We like to find out what they liked and didn’t like about their previous living space and about what ultimately would allow them to feel most “alive” in this new space. A lot of clients will put together photo boards (on websites like Pinterest or Houzz) of spaces that speak to them in some way. Other clients enjoy having me simply sit with them and sketch as they share with me their dreams for their home. It all depends on the client. We also like to draw by hand in the early phases of design. We sketch initial site and floorplan ideas, hand-drawn perspectives for the exteriors as well as interior perspectives, including selected furniture, lighting, rugs, etc. that bring life and scale to the design. THE FAVORITE PART OF YOUR JOB? The absolute most rewarding part of my job is seeing our clients enjoy their homes - from attending parties there to seeing their holiday celebrations in pictures and even getting texts through the pandemic from clients saying how grateful they are for their wellplanned sanctuaries while they spend extra hours there. WHAT DO YOU THINK SETS YOUR DESIGNS APART? We aim to strike a balance between considering lifestyle ‘musthaves’ with designs that are pleasing with balance, symmetry, and scale. We pride ourselves on really thorough drawing sets, so there are very few surprises during construction. We think about how every building finish and trim interact so that it is intentional and resolved. HOW DO YOU EXCEED YOUR CLIENTS’ EXPECTATIONS? I believe we are stewards of our client’s wishes. At the end of the day, after we are gone, it is their home. I am not interested in developing a ‘signature style,’ and I do not believe in prioritizing the architect’s ego over the client’s wishes. We listen to our clients and then use our professional expertise to stay one step ahead of the process and make it as smooth and fun for them as possible. I feel that is why we have many clients that like to build multiple projects with us! WHAT IS THE BEST THING ABOUT BEING AN ARCHITECT? It is the ability to get people excited by casting vision onto a blank slate! TALK US THROUGH YOUR LATEST PROJECTS. We are so fortunate to have a number of exciting projects on the boards and under construction right now. The majority are residential, with the exception of an exciting mixed-use hospitality development we planned for Nashville. We have new homes, family compounds and renovations on the East and West coasts, in the South (Florida, Carolinas, Tennessee) and many around our central office in Milwaukee. several lake and weekend get-away homes on the water and in the rustic Northwoods of Wisconsin. Nerea Yacht was established in January 2019 to add a touch of Italian excellence to finer things like yachts. The beginning of the year saw the exciting launch of the NY24, successor, the NY24 Dark Bronze – a boat that stands with its Italian Design Excellence and state-of-the-art technological equipment. A brainchild of owner Dario Messina, NY24 is a testament of his skill in the field of boat making. The NY24 is built in collaboration with designers Alessio Battistini and Davide Bernardini of idealeITALIA; the NY24 is brought to us in three versions.

In the bow, a stem-head roller with an automatic anchor launch and retrieve system is designed to respect the external lines of the boat and is activated from the dashboard. The drive is comfortable without any major complications makes the experience easy and enjoyable.

Crafted with warm and metallic colors the yacht exudes an exquisite elegant and sophisticated look. Every element is made with the attentive care, stylistic research, and production features of a tailored garment, of a unique made-to-measure piece. NY24 is also trailerable; thus, there is no need for special permits to move the boat into the lake or the sea.

The central cockpit is a beautiful convertible dinette where lowering the central table becomes an extended sunbathing area. The cockpit can be equipped with two drawer refrigerators, a concealed sink, and a stove to guarantee sociable entertainment. The pristine white and lush blue accents accentuate the contrast with the deep earthy tones of the boat. The entire walkable surface is covered by teak to give a classic yet modern signature to the boat style.

THE DESIGN The Nerea Yacht 24 Bark Bronze is a power-play of proportions and colors. The sleek design with optimum functioning only enhances your boat experience. The designers have managed to get very roomy interior spaces in less than 8 meters in length. The design is a result of meticulous research, and poses to be a specimen of the designer’s extensive experience. There is a beautiful synergy and balance between the aesthetical features and the practical uses. The spacious swim platform and the transom on three levels make onboarding easily accessible. The engine room hatch is controlled via a remote electrical opening, making inspections easy and simple. The first launch of the Speedmaster dates back to 1957 when Omega was the official timekeeper for the Olympic Games. 63 years later the Speedmaster still moves seamlessly between the masculine and feminine realms. The Speedmaster CK 2915 was also known as the ‘Broad Arrows’ due to the broad arrow hands sweeping the dial. Designed by the Claud Baillod it featured some of the hallmarked features: the high-contrast index markers, the triple-register chronograph layout, and the domed Plexiglas crystal. Since then, the Speedmaster has been imagined and reimagined in various sizes, version and complications. A highlight of the Speedmaster was when the manual winding Speedmaster Professional or ‘Moonwatch’ landed in NASA’s Gemini 4 mission. The watch was also the first watch worn by an astronaut

Since 2007, Triton Submarines have been creating dynamic submersibles, allowing private explorers and yacht enthusiasts the opportunity to explore the deepest parts of the ocean. They have launched the ground-breaking Five Deeps mission, and have once again pushed submersible technology to new heights with the release of the Deepview 24. The Deepview 24 is capable of carrying up to 24 passengers to depths of 328ft, With an imposing overall length and sturdy plumb bow, it will offer unrestricted views of marine wildlife through state-of-the-art panoramic windows. It marks the most significant step forward in commercial submarine technology in the last two decades and further seals Triton Submarines’ reputation as the world’s leading submersible company. In 2019, its prototype successfully guided adventurer Victor Vescovo to the deepest point in each of the world’s five oceans. Having now completed its sea-trials, the latest Triton DeepView 24, “Vinpearl” will shortly be en route to Vietnam for training with staff and is hoping to be operational and taking bookings for guest experiences off Hon Tre Island in Nha Trang by December 2020. Following sea trials in Barcelona in March 2020, the Triton DeepView 24 has undergone a meticulous certification process, ensuring its safety for anyone onboard. It comes fitted with an electric propulsion and steering, two 20-kW (27hp) main thrusters, and four 12.6-kW (17-hp) Vertran thrusters and can reach a top speed of 3 knots. Boasting of top-in-the-line technicalities, the DeepView uses nearly 4,000 lb (1,800 kg)

Experience a Little Irish Charm in the City of Cork

P

rior to the lockdown, I was most fortunate to encounter a little Irish charm when I opted for a relaxing weekend break in Cork. This intriguing city, located on the banks of the majestic River Lee, is separated into two channels and the centre of the city nestles on an island formed by those channels. To the east of the city centre the channels reunite and quays and docks lead the way into Lough Mahon at the high end of Cork Harbour, one of the world’s greatest natural harbours.

lined Grand Parade. The market attracts hordes of locals and visitors alike and when her majesty Queen Elizabeth II visited in 2011 she was said to be delighted. I browsed along the stalls, crammed with traditional Irish fare and culinary delights from around the world. Settling down on a perch, at one of the stall side counters, I sampled a few slivers of blood sausage, known as ‘drisheen’, and then tasted ‘battlebord’, a delicious dish of fresh buttered eggs and dried salted ling, followed by a boiled pig’s foot, known as a Crubeen.

In 606 AD, Cork was a monastic community, established by Saint Fin Barre and his church and monastery were located on the spot where today, stands the Church of Ireland’s imposing Cathedral of Saint Fin Barre, consecrated in 1870. I wandered around this magnificent structure, admiring the Bath stone interior enhanced by the red Cork marble lining the walls as the golden sunlight flooded through the beautiful stained glass windows. The soaring Gothic spires and the bell tower, where eight of the thirteen bells date back to 1753, are simply mesmerising.

With a fancy for an afternoon tipple or two I walked along to the Franciscan Well Brewery on North Mall where, I was reliably informed, a traditional warm Irish welcome awaits. Beers are brewed in-house and the shining copper tanks at the rear of the bar dispense the beers direct to the taps. I found myself a table in the covered beer garden and was engaged in lively conversation with the regulars in no time at all.

The Red Abbey, considered a national monument, is another popular site to visit. Dating back to the Middle Ages, it stands on the site of an Augustinian abbey, deemed to have been established in the 14th century and thought to have been occupied by friars until the 1700’s. During the siege of Cork in 1690 the abbey tower was used as a vantage point to stem the rebellion and to break links with James II, King of England. Alas, the original building was destroyed by fire in 1799 but the square tower remains intact and is the oldest structure throughout the city. A popular spot to visit for a local lunch is the English Market, which has been trading since 1788 and is located on Prince’s Street along the tree-

I then headed for the nearby Church of St Anne, founded in 1726, which is situated in the Shandon area of Cork city. Known locally as the church tower of Shandon, it perches on a hill overlooking the River Lee, and the church tower, which is noted for its eight bells, is regarded as a landmark and a symbol of the city. Visitors are welcome to climb to the first floor and ring the bells themselves. Blarney Castle, another popular attraction, is only fifteen minutes by road from the city. The castle dates back to 1446 and was built by Dermot McCarthy, King of Munster. The lower walls are fifteen feet with an angle tower built by the McCarthy’s of Muskerry. The castle was then occupied by Cormac McCarthy, King of Munster, whom it is said, sent four thousand of his men to support the forces of Robert the Bruce at the battle of Bannockburn in 1314. the Scots gave half of the Stone of Scone to McCarthy in appreciation of his support and this stone was incorporated into the battlements of Blarney Castle. Those who kiss the Blarney Stone, and the majority of visitors do so, are said to be rewarded with the gift of eloquence. To experience a little piece of heaven and to take advantage of a true haven of tranquillity, I embarked on a stroll around the castle’s wide variety of gardens. The bog garden features two calming waterfalls and it’s the ideal place to reflect on the stunning surroundings. I wandered along the wooden boardwalk, passing by several varieties of bog plants, and paused awhile to admire a group of three yew trees, said to be over 600 years old. The Fern Garden is located at the end of a grassy path often lined with beautiful wild flowers and it features a display of over 80 types of fern, one of which is the 204 inch high Dicksonia Antartica, the tallest fern in Ireland. The poison garden is simply fascinating and includes a collection of plants, which are all highly toxic and safely displayed in large cage- like structures. Exhibits include Ricin, Wolfsbane and Mandrake. I then took a leisurely stroll along the Mardyke Riverside Walkway, which opened in 2006. The new Mardyke Bridge spans the river Lee and is the ideal spot to take a minute or two to admire the beauty of Mother Nature all along the banks of the river. Feeling a trifle fatigued after all my excursions, I checked into the sumptuous Hayfield Manor located on Perrott Avenue in the centre of the city. This family owned business opened in 1996 and is the recipient of the 2020 Independent Reader Travel Awardfor Ireland’s Best Welcome. with plump pillows, ensuring a deep slumber for weary explorers. I was fortunate to stay in a grand suite, which measures 750 square feet and includes a living room with a three piece suite and a marble fireplace. The large windows flood the space with natural light and provide sweeping views across the manor gardens. Hotel facilities include a luxury spa offering a wide variety of treatments including facial therapies, body rituals and massages. And, for an exceptional dining experience, Orchids, the hotel’s award winning restaurant offers an extensive menu of delicious dishes presented in opulent surroundings and of course, as expected, the service is excellent. Partial to a late night tipple and some traditional Irish music, I went along to ‘Sin è’ which translates to ‘That’s it’, in reference to the funeral parlour next door! MISAVA SAFARI CAMP

KLASERIE DRIFT, HOEDSPRUIT Luxury has been given a new name at Klaserie Drift, on the banks of the Klaserie River in Mpumalanga, and that name is Misava, which means Earth. Klaserie Drift owners and founders have opened Misava Safari Camp to the world, having breathed new life into one the original and oldest camps in the Klaserie Private Nature Reserve. This site was first purchased in 1936 by Edwin Crookes before the reserve was even formally established in 1969. This pristine land stayed in the family for six decades until 1997, when it was acquired by the current owners, who have fiercely preserved its history. Travelers now enjoy serene luxury in five opulent units, overlooking the wilderness and river, and passing wildlife and birdlife. Three of the site’s original rondavels have been carefully converted to sumptuous fivestar rooms. Two additional villas

“Havana Club 1519” was created to mark the 500th birthday of the city of Havana last November. Havana Club has an extensive selection of prestige rums which form part of its “Iconica” luxury collection including Havana Club Añejo 15 Años, Havana Club Tributo, Havana Club Unión and Havana Club Máximo Extra Añejo. The collection showcases the high quality and varieties in style of Cuban rums. A very rare bottle of Havana Club 1519 sold for £5,200 at a recent online auction in London which raised more than £5,000 for the Distillers’ Livery Company Emergency Appeal in support of The Drinks Trust” which is helping those facing unemployment and hardship in the wake of the Covid-19 pandemic. The prestigious Havana Club 1519 was one of 138 exclusive bottles donated by distillers and individuals for the auction where 15% commission on top of the hammer price of each sale was donated to the appeal. The sought-after auction lot was one of 500 bottles released globally to mark Havana’s 500th birthday. The case included a certificate of authenticity written by Dr. Eusebio Leal Spengler, Historian of Havana City, and signed by the four masters who created Havana Club 1519. This included Havana

Chef Paul Liebrandt’s food melds the tradition of classical cuisine with a contemporary, personal approach to ingredients and technique along with a uniquely graphic visual style.

A

s a teenager growing up in London, England, Liebrandt cooked for some the world’s most esteemed restaurants and chefs including Marco Pierre White at his Michelin three-star restaurant, Raymond Blanc at Le Manor Aux Quat’ Saisons in Oxford and Jean-Georges Vongerichten at the London outpost of Vong. He traces his turning point from cook to chef to a life-changing year he spent working under the brilliant Pierre Gagnaire at his eponymous three- star restaurant in Paris, France. Following that experience, Liebrandt moved to New York City in 1999, where he worked briefly for David Bouley, at Bouley Bakery. In 2000, Liebrandt first became a chef in his own right at Atlas restaurant on Central Park South. In November of that year, at the age of 24, he earned the distinction of youngest chef ever awarded three stars by the New York Times: critic William Grimes praised his “daring, distinctive style,” likening him to “a pianist who seems to have found a couple of dozen extra keys.” After leaving Atlas, Liebrandt cooked at Papillon, then for numerous high profile clients including Lord Rothschild and HRH Prince Andrew. He opened his first restaurant Corton in 2008. Corton was awarded two Michelin stars in its angular year and was nominated as Best New Restaurant in the United States by the James Beard Foundation, also winning best new restaurant in the USA by Esquire magazine. In 2013 Liebrandt opened his second restaurant The Elm in Brooklyn, which after six weeks of being open was voted best new restaurant in the USA in Esquire magazine’s industry pantheon, its Best New Restaurants list.

Liebrandt has been profiled in Vogue, Men’s Health, W Magazine, UK Sunday Telegraph, Men’s Health, W Magazine and many others. In 2009, Food & Wine Magazine named him one of the Best New Chefs in the United States. In 2011 the HBO documentary ‘A matter of taste- serving up Paul Liebrandt’ was released which garnered an Emmy nomination and won best documentary at the James Beard Awards in 2012. His first book ‘To the bone’ was published by Clarkson Potter in December 2013. Paul Liebrandt lives in New York City. In this feature we speak with Chef Paul Liebrandt about his philosophy, his favorite dish and favorite ingredients. WHICH IS YOUR FAVOURITE INGREDIENT? Madagascan Vanilla is my favorite ingredient. WHAT IS YOUR ADVICE TO ASPIRING CHEFS? Cooking is a marathon not a hundred meters race. WHAT’S YOUR COMFORT FOOD AND WHICH IS YOUR FAVORITE RESTAURANT TO DINE AT? Anything Japanese, Sushi Amane in NYC is my favourite restaurant to dine at. WHO IS YOUR INSPIRATION? Pierre Gagnaire would be one. WHICH IS YOUR SIGNATURE DISH/ DISHES?

I do not believe in the term signature, my style and sensibility of my craft speaks louder than a dish. WHAT IS THE PHILOSOPHY AND ETHOS BEHIND THE FOOD YOU COOK? The philosophy behind my cooking is spreading happiness, the spirit of sharing, thoughtfulness, the spirit of giving, an international outlook and being respectful towards my ingredients, towards sustainability and zero wastage. WHICH IS THE DISH YOU’VE CREATED THAT YOU ARE MOST PROUD OF AND WHY? Anything from the sea- reminds me of my childhood! HOW HAS THE CURRENT PANDEMIC AFFECTED YOUR RESTAURANT?

The current pandemic is not good for business of course and the long term repercussions of the pandemic are tough questions for most cosmopolitan restaurants. WHAT IS THE ONE FOOD TREND YOU WISH WOULD GO AWAY? Pretty and fake Instagram food is one trend I wish would go away. WHEN THE LOCKDOWN IS OVER, WHAT IS THE FIRST RESTAURANT YOU’LL BE HEADING TO AND WHAT WILL YOU ORDER? Sushi Amane in New York is the first restaurant I will head to once the lockdown is over, and I shall order a full omakase! WHAT ARE THE MOST IMPORTANT CONSIDERATIONS WHEN CRAFTING YOUR MENU?

The most important considerations when crafting my menu is balance, time and place, who will be eating, sense of season. WHICH IS YOUR FAVOURITE DISH TO COOK AT HOME? Fish curry with jasmine rice is my favourite dish to cook at home! WHICH IS YOUR FAVOURITE CHILDHOOD DISH AND WHY? Fish and Chips- so British I know!

CHEF PAUL LIEBRANDT’S RECIPE OF FISH & CHIPS Yield: 4 Portions Beer Battered Turbot: 4 (100g portions) Turbot fillets cleaned 250g Rice Flour 50g Corn Starch 370g Brown Lager-Brooklyn Brewery Sorachi Ace 2 Tsp Sea Salt ½ Tsp Cracked Black Peppercorns 3000g Groundnut oil METHOD: - Combine all dry ingredients before adding half the Lager, do not over mix as the you want to keep the bubbles in the lager, fold in the remaining lager, strain in to siphon container and charge with two no2 carts. Refrigerate and hold for 2 hours. - In a deep pot, carefully heat groundnut oil to 395f - Lightly season the fish with rice flour- which should be at room temp. - Discharge batter into a cold bowl, Dip the fish into the batter, shaking off the excess and gently place in the oil for 3-4 minutes-drizzle a little of the batter atop the fish whilst frying until light caramel color about 5 mins. - Remove and drain fish on a paper towel, internal temp will rise to 45c perfect cooking temp. - Season lightly with sea salt and pepper Lime Pickle Aioli: 100g Indian pickled lime relish 300g Mayonnaise 1 Lemon juice/zest METHOD: In a mixing bowl, combine all the ingredients using a whisk Chips: 8 Large Russet Potatoes 3000g Ground nut oil 1Tsp Sea salt METHOD: - Peel and cut the potatoes in to 1 inch by 4-inch blocks. - Wash the potatoes in cold water to remove any starch. - Cover potatoes in a pan with water and cook over medium heat at a light simmer just until the potatoes are fully cooked but retain the shape. - Gently remove from water and place on a tray, place in refrigerator to cool for 4 hours. - Heat the oil to 250f and gently fry the potatoes for about 5-7 minutes or until there is a very light golden color to the potato. - Remove gently from the oil and place on a tray, place in refrigerator for 4 hours to cool and dry the outside of the potato. - Heat oil to 375f cook the potato’s until golden in color and crisp- about 5-7 minutes- Remove from oil and season with sea salt. 71 | UPSCALE LIVING MAGAZINE | JULY 2020
