Putting her heart and soul into everything she does, Gloria Campaner, a celebrated Italian pianist, carefully elects causes to support through her music. During her recent visit to Cape Town, she performed at a private event hosted by Newmark Hotels, Residences, Reserves & Lodges’ Managing Director, Neil Markovitz, in aid of Rhino Disharmony. This unique project was created by Motswari Private Game Reserve owners, Marion Geiger and Fabrice de Lamazière, together with one of the founding directors of Rhino Disharmony, Anthony Watterson, to educate the world about the rhino poaching crisis in South Africa through the arts.

riving along the Atlantic Seaboard, the beaches are packed to capacity, but I’m en route to a far more appealing event. Arriving at Mr Markovitz’s private residence, I hear the sound of piano music emanating from the home as Gloria rehearses for the evening’s concert.
and her piercing green eyes become expressive as she speaks about her path to engaging audiences with her gift of piano music.
Freshly cut flower arrangements of proteas and hydrangeas adorn the tables and I hold my breath for a moment to take in what is right in front of me – a striking woman sitting at a Fazioli piano, playing so passionately that it almost brings me to tears. On the right-handside of the piano lays an eye-catching reminder of the cause that is being supported; a bronzed sculpture of a newborn rhino calf with his umbilical cord still attached, another victim who didn’t make it after his mother was poached.
GLORIA, TELL US A BIT ABOUT YOURSELF. I started playing the piano when I was four years old after receiving a piano toy as a present for my second birthday. It was a baby grand piano, all red and white and my Mom remembers that instead of handling it like other children might have done, I was trying to play with both hands. I even prepared an auditorium of puppets and dolls to play for; I was creating my own little theatre. My Mom never understood what I was doing, perhaps I saw it on television once, but my family were not musicians and I hadn’t seen or heard any music before, so maybe this was a sign.

kindergarten at the age of four. She was keen to take music, and since we did everything together, we even went there together. She was too shy and gave up immediately, but I absolutely loved it. I started with the violin, which proved to be very difficult with no-one helping me. I drove my Dad crazy with screechy violin sounds, while the piano, on the other hand, sounded good. In the beginning, I learnt to play everything by ear, and it seemed easy. It became difficult once I had to learn to read music and learn how to play properly. I did my first public recital in Perugia when I was five years old. This paved the way for my debut performance with the Venice Symphony Orchestra. I was just out of junior school and suddenly I was on stage, embraced in music by the entire orchestra. It’s an experience I will never forget. This was a very important step as a memory. It’s the most amazing experience to be on stage with an orchestra accompanying you. I left home when I was sixteen. I studied classical music in Europe, Russia and the USA. I went to university to study foreign languages; I studied Russian – it’s such a fascinating language and my piano teachers at school were Russian. I have been studying all my life, practicing eight to ten hours per day. I had to give up lots of things to live my dreams and to look up at my passion, to balance it; I’ve met amazing artists and amazing people. I have explored so many types of music; I was in a rock band when I was younger, I do electronic production with my electronic band, I am a DJ, I play with amazing jazz musicians and choreographers and street musicians. DID SOMETHING IN YOUR FORMATIVE YEARS SPARK YOUR LOVE FOR PLAYING THE PIANO? Definitely my little toy piano, but I love all types of instruments; I even play the trumpet. Piano was the easiest when I was young and didn’t have a coach in my family. You can create a lot of music with the piano – it can be a percussive instrument, groovy or extremely intimate. Minor, major, all humanity, spirituality and more. Pleasant, happy and melancholic. You have to go where the music is in mood and spirit. YOU DEBUTED AT THE AGE OF TWELVE WITH THE VENICE SYMPHONY ORCHESTRA. WHAT DO YOU REMEMBER ABOUT THAT? Suddenly, there I was, on stage during the first rehearsal with all these musicians and instruments around me. You are embraced by sounds from every direction, encircling you. It’s an overwhelming experience. I had to work hard to contain my emotions. WHAT IS YOUR FAVORITE GENRE TO PERFORM? As a classical pianist, I am very lucky that I’m able to perform at lots of events and to explore different avenues. I also sing sometimes, just for fun. WHAT OR WHOM HAS BEEN YOUR BIGGEST INFLUENCE AS AN ARTIST? That is a very interesting question. I am so open-minded, I think the biggest gift was to get given freedom from my professors and my family and my lifestyle in a way that I was always feeling allowed when I was experimenting with music. I was lucky enough to have met good people along the way who believed in this flame that I have inside of me, using it as a lightbulb to find my path; even to explore different pathways. This was the biggest source of good energy that made me grow like that. Thanks to my open-mindedness and awareness of the beauty of possibilities and life, this awareness made me so open with my heart, because when
you respect yourself and you respect other people, you open up. That’s when everything came in; everything became a great influence – meeting a street artist rather than meeting the biggest artist in the world; opening all my senses to listening to the greatest pianist in the world; everything became on the same level, because when you open your heart, you grow and when you grow, you’re safe. Having that freedom, and being accepted for who I am, has given me this possibility. YOU HAVE PERFORMED IN FRONT OF THOUSANDS OF PEOPLE. DO YOU STILL GET THE OCCASIONAL STAGE FRIGHT AND HOW DO YOU DEAL WITH IT? Yes, absolutely. I am a coach of a very interesting workshop which helps others to ease stage fright. I have met the most amazing musicians who have helped me on every level – music, the piano, for which I’m very grateful; it’s equally important to coach and help someone balance the nerves and all the adrenaline that pumps through your body. Young performers and artists don’t necessarily know how to cope with this, and I didn’t know how myself at first, so I found myself backstage with my heart going into my throat and my ears. In my workshops, I teach others about breathing techniques, yoga basics with lots of important exercises. Whether I’m performing for hundreds of people or only a handful, I believe in the music and whoever hears it, has the right to take it in at its best level. For this, you need a lot of work and a lot of strength and one cannot take it for granted. WHAT IS YOUR CREATIVE PROCESS? I find my own way of playing and interpreting music. I am not a composer; I write very simple music. I try to be centered with myself and find breathing, walking and being in nature imperative to my creative process.

TELL US ABOUT YOUR ALBUM, HOME. It might sound strange to call my album Home when it’s dedicated to my favorite German composer, Robert Schumann. So why the title Home? There are different layers of meaning; the first one is very basic – it’s dedicated to my home town and my family, so it’s all related to Venice. The deeper meaning alludes to all the years that I have been traveling on an ongoing basis. I have a home, but I’m never there; I live out of my suitcase. The album is dedicated to the wish I have for myself and for all the people who live a life like me who are on the road non-stop, to feel the difference between being at home and feeling at home, which is a huge difference. If you’re able to trust in your capacity of feeling at home wherever you are, bring a few things with you that remind you of that, and I would like people to feel at home when they listen to my album. The album is also dedicated to a foundation that helps children who don’t have a home or the privilege of having a family.

I also play musical stones, as taught by the late Sardinian artist, Pinuccio Sciola. I will be performing at the Marlboro Music Festival where I will take up residency in America. The third layer is connected to the fact that the home in a very spiritual way is also our body. We live inside a place that is hosting our soul. The first thing we have to do is to be grateful every day, giving the correct nutrition, sleeping enough, respecting and loving ourselves and feeling good about ourselves before anything else. Respect your body and respect your life. APART FROM PLAYING THE PIANO, YOU ALSO ENJOY DANCING. I did eleven years of classical dance and I love dancing the Tango! YOUR HAVE TRAVELED EXTENSIVELY TO PERFORM. DO YOU HAVE ANY FAVORITE PERFORMING VENUES? Japan has amazing concert halls. I love to go places where it’s sunny; I love South Africa and I love South America. Cape Town reminds me of Rio de Janeiro, which is my favorite city. THIS IS NOT YOUR FIRST TIME TO SOUTH AFRICA. WHAT WARMS YOUR HEART ABOUT THIS BEAUTIFUL COUNTRY? It’s a mix of culture and extreme wild nature. Being a nature lover, there is so much space between things, which we don’t really have in Europe. YOU ARE A HUMAN RIGHTS ACTIVIST. I do a lot of social work besides my main performing, and I dedicate most of my life to children and to disadvantaged communities. Through talking or playing the piano, I convey the message of love. PLEASE TELL US MORE ABOUT THE DAFNE PROJECT. It’s a project dedicated to violence against women. It’s the premiere of a piece that was specifically written for me. It’s a very harsh piece with a strong message and contemporary music. YOU ARE A GUEST OF NEWMARK HOTELS, PERFORMING FOR RHINO DISHARMONY. HOW DID YOU COME TO LEARN ABOUT THE PROJECT AND WHAT DOES IT MEAN TO YOU? I have long known about the tragedy of rhino poaching but I learnt about Rhino Disharmony and its aim last year. It is a very unique way of fighting against the problem; through raising awareness and consciousness. By shining a light on the matter,

ver the past two decades, Peter Dundas has sat at the helm of Roberto Cavalli, Emilio Pucci, and Emanuel Ungaro, so it was only a matter of time before he launched his eponymous label. Born in Norway, Peter Dundas and his sister were raised by a doctor as a father and his elderly aunts as co caretakers, who looked after the children while their father was working. At a young age, he started going through his father’s trunks of old clothes and customizing garments that belonged to his grandparents. He got a sewing machine and then young sewing Peter started turning up at school in his father’s surgical updated gowns and flea-market finds. He is said to have been a class clown at some point and a bit of an introvert. At the age of nine, he channeled his artistic tendencies in regional theatre, but it was pretty much a given that his future lay in medicine. This changed when he attended high school in America, after going to live with his uncle in Indiana at the age of 14, and encountered physics. “He was not impressed” And even though cultural times were different this had made him take a hard and very mature (for such age), look at what he really loved and made him happy, Fashion! Thus a passion was forged. He went to Parsons Design School in New York and then with minimum French knowledge to Paris. He then started working as a costume designer for the Comédie Française and the furrier Revillon. In 1992 he landed a “first design assistant job” at Jean Paul Gaultier. He stayed at Gaultier for eight years. All the while building up his experience, in 2000 Dundas moved to Lacroix, followed by Cavalli, where he served as chief designer from 2002 to 2005. Dundas was appointed an artistic director at Emilio Pucci, owned by LVMH, in 2008, before returning to Cavalli. During his seven-year tenure at Pucci, Dundas developed the brand’s history of glamorous, colourful and patterned collections. Focusing on nightlife as a key inspiration, Dundas took Pucci in a new, youthful direction. It was under the creative helm of Dundas that LVMH identified the label as a key future-growth vehicle, branching into new product categories such as shoes, handbags, and eyewear.
Next was a stint as creative director at Emanuel Ungaro and then a return to Cavalli where he made a short but great stamp, he was home. Although being a creative director on his own right, he didn’t particularly want his own label. There was content with the mixed energy of personnel, the allure and solidity, and arrangements of an established house. ‘It made something stronger happen.’ Yet, in October 2016, Peter Dundas parted ways with Roberto Cavalli after 19 months in the role. In 2017 The introduction of Dundas namesake label was made to the world in a very unconventional way. Debuting his first designs with three custom-made looks for Beyoncé at the 2017 Grammy Awards. This followed by a short collection exclusively with Moda Operandi in July, and subsequentially by a partnership with Farfetch in that autumn. The drops are made in diverse forms such as runways, presentations, pop-up stores in LA, NY, London etc. Created with partner Evangelo Bousis, The label is conceived around a non-seasonal structure, released in drops to coincide with the demands of clientele. Their strategy is to be cleverly price-positioned. It is an important message for the brand: guilt-free retail. None compromised high level, well-executed product - a fantastic price/quality ratio. The brand is inspired by the duo’s travels and the glamorous, jet setting women in their inner circle and although at times described as unapologetically sexy and body-conscious, Dundas dresses women of all sizes and ages. From pop stars to royals such as the Queen of Norway, celebrities, friends, mothers, and daughters. Making, The Dundas woman is a rockstar state of mind, not a specific age or body type. Simply and importantly The Dundas brand creates a more direct dialogue with her and her needs. Described by his friends and clients as fullon, ready for it, genuine, hot as hell and as if we’re going to the best party in the world type of guy. Dundas has even consulted for Dolce & Gabbana - and with a trajectory of labels “not for“ the minimalist or fainthearte, he is not considered your typical Norwegian. His parallel world would consist of Dundas at a bar on a beach somewhere. ‘Just hanging out all day. And isn’t that the best guilt-free set of all times?

HISPANO SUIZA CARMEN TO MAKE ITS DEBUT AT THE GENEVA MOTOR SHOW | BY JARONE ASHKENAZI Spanish automotive company Hispano Suiza will debut their new production car ‘Carmen’ at Geneva Motor Show on March 5, 2019. The once proud car company continued primarily as an aerospace firm following World War II until rumblings at the 2010 Geneva Motor Show with the rumored showing of a new model car. Although this production never materialized, the iconic Spanish luxury car brand will be making its global debut in Geneva in hopes to have customers getting behind the wheel in 2020. Designed, developed and manufactured in Barcelona, the fully-electric Carmen (€1.5m, just over $1.7m) is a ‘hyperlux’ grand touring car, which combines hypercar performance with exquisite luxury. With key attention to detail and craftsmanship along with reviving the brand’s heritage of elegance and luxury, Carmen has a top speed of 250 km/h and a range which will surpass 400km. Capable of 0-100 km/h in under three seconds, thanks to its carbon fiber construction, it features a 750-kW electric motor, translating to just over 1,000hp.
Inspired by the unique style and elegance of Mr Suqué Mateu’s (current President of Hispano Suiza and great-grandson of the brand’s founder) mother, Carmen Mateu, Carmen has a focus on thrilling performance and an easyto-drive character. Its striking s is influenced by mold-breaking Hispano Suiza cars of the early 20th century blending a mix of aggressive sportiness and timeless elegance into a modern-day hyperlux car.
that combines the finest leather and Alcantara along with hand-trimmed and hand-sewn in-house upholstery, each Carmen will feature a custom perfumed interior, specified and developed with the buyer to ensure the car is aligned perfectly with their preferences. Its dash features a traditional style using real wood veneers and machined high-grade aluminum with a 10.1-inch touchscreen display and a separate instrument panel screen.
Each car will be hand built in Barcelona by QEV, the Carmen honors the 1938 Hispanos Suiza Dubonnet Xenia in a retrospective aerodynamic teardrop profile modernized for the 2020s. With a large chrome-framed, deep set trapezoidal grille with the italicized heritage ‘Hispano Suiza’ script and the marque’s new badge at the center, its headlamps mirror an aggressive frown of a feline.
Carmen rivals the performance of other top luxury car brands as drag coefficient is Cd 0.325, lower than the Porsche 918 Spyder (0.34), Koenigsegg Agera R (0.37) and Ferrari F12 (0.33).
Carmen’s seats, battery housing and monocoque chassis are all made of carbon fiber while dramatic scissor doors rise and pivot in one smooth, elegant movement inviting driver and passenger to enter. With an interior

pieces, the Ultra-Thin Moon Enamel masterfully balances Jaeger-LeCoultre’s famous super slim case, with its remarkably handwrought dial; and while the craft of enameling and engraving takes an incredible amount of skill, the journey begins with decorating the dial with a hand-operated rose engine, followed by a painted layer of liq-uid enamel. The surface is then subjected to
T I M E P I E C E S excruciatingly high temperatures. More layers of enamel are painted on and fired up and once the right shade is attained, the dial is polished to perfection. The Master Ultra-Thin case is housed in 18k white gold, measures at 10.04 mm thick and 39 mm in diameter, and is complete with a mirror-polished moon. The relief-engraved date-display ring has raised numerals with a frosted finish, and nicely complements the redesigned applied white gold stick hour markers. According to the brand, ‘’the hour markers are elongated out separated in two at 12, 3, 6, and 9 o’clock. The moon phase has also been completely redesigned with a perfect-ly round and polished white disk that comes into view in its entirety during the full moon. Leveraging its extensive knowledge of the Chinese market, Ctrip will help Boom accelerate its ongoing partnerships in the region; Ctrip is uniquely positioned to help Boom navigate the Chinese airline industry; regional aviation powerhouses like Japan Airlines have also signed on for supersonic air travel; and given China’s soft push for global economic dominance vis-à-vis Belt and Road, China’s travel market is the world’s second largest and one of the fastest growing.
Boom is currently assembling XB-1, a ⅓-scale manned prototype of its Mach-2.2 airliner. XB-1 will be history’s first independently developed supersonic jet. The fastest civil aircraft ever built, XB-1 looks to demonstrate, in flight, the key technologies necessary for mainstream supersonic flight: state-of-theart aerodynamic design, advanced composite materials, and an environmentally sustainable propulsion system. Keep in mind that Boom’s quest for a mainstream renaissance in speed is not without precedent. Nineteenth-century rail technology completely transformed the movement of goods and people, faster than possible by canal; connections previously unimagined not only linked cities and ports, but markets, driving remarkable economic expansion for the US and Great Britain; and Boeing’s 707 (with its 4-jet engine), surpassed the steamship as the dominant mode of long-distance commercial travel while setting the jet age in motion—at a mere 600 mph; and the BritishFrench turbo-jet powered Concorde, while a great idea, catered to the wealthy.
Japan Airlines has also signed on. According to Yoshiharu Ueki, President of Japan Airlines, “We are very proud to be working with Boom on the advancement in the commercial aviation industry. Through this partnership, we hope to contribute to the future of supersonic travel with the intent of providing more ‘time’ to our valued passengers while emphasizing flight safety.” And while Boom’s supersonic airliner is still a few years off, bringing the airliner to market will immediately reverse decades of stagnation and regression in supersonic commercial travel. After all, who wants to be hemmed in by something as trivial as speed limits anyway?
Boom’s supersonic airliner’s intervention is that it is not only technologically advanced and environmentally-friendly, but it’s actually looking to deliver value, shrinking 12-hour flight time from Los Angeles to Shanghai to just over six hours. Cabin design totally rethinks the passenger experience. Luggage storage would be underneath passenger seating rather than above. And each passenger has their own window. GANDER, NEWFOUNDLAND, CANADA Fogo Island Inn has an international reputation for exceptional, embodied, place-specific hospitality and bold, thoughtful, humanistic contemporary design. Fogo Island Inn was designed by Newfoundland-born, Norway-based architect, Todd Saunders. The 43,000 square-foot Inn is perched on stilts and hugs the North Atlantic coastline, affording all 29 rooms with floor-to-ceiling views of sea and sky. All rooms showcase the richness of their locality and clearly express a modern take on traditional Newfoundland outport design and décor. The Inn’s architecture is bold, optimistic, and distinctly of this place. Though radical in its design, the Inn still speaks to the traditional outport Newfoundland aesthetic. Two floors of guest rooms sit atop the Inn’s stilts, a distinct nod to traditional outport fishing stages. These stilts, or “shores,” underpin many of the buildings on Fogo Island due to the rocky, undulating topography. They support the 32 Upscale Living Magazine | MARCH 2019
footprint and impact on the adjacent rocks, lichens, and berries. The Inn’s sharp angles and rough contours feel at home amidst Fogo Island’s jagged and uneven landscape. The X-shaped structure features a two-storey west-to-east wing containing gathering spaces, and a four-storey south-west to north-east wing, parallel to the coast, containing all of the guest rooms. The first floor includes the contemporary Art Gallery curated by Fogo Island Arts, the dining room, bar, lounge, and tea room. The second floor is home to a Heritage library containing works of both fiction and non-fiction pertaining to Newfoundland, the cinema, meeting room, gym, and reading room, and the fourth floor roof deck houses wood-fired saunas and outdoor hot tubs. Guest room sizes vary from 350 to 1 100 square feet, with rooms on the third and fourth floors all including wood-burning stoves. All of the Inn’s rooms were created using only natural materials such as wood, wool, cotton, and linen. The only plastic in the guest rooms is the telephone.

UYUNI SALT FLATS, BOLIVIA Standing directly on the Uyuni Salt Flats at the foot of Tunupa Volcano and at an altitude of 3,600 meters, Kachi Lodge resembles a space station with its unique and luxurious white pods. Composed of repeated equilateral triangles, their metallic structure is the very essence of its mathematical elegance. In front or on top of the dome, a transparent panel offers wide-open views on the Salar and its star-studded sky. Lit up at night, with solar panels placed in between the domes, they are one of the coolest and most surreal viewing stations ever seen in this arid region. structure was constructed that didn’t require groundwork. A dome encloses the largest volume of interior space with the least amount of surface area. Each dome boasts a living area of 300 square feet, a bathroom with shower, toilet, running hot water and heating. With an overall contemporary design that is natural and warm, a queen-sized bed faces a bay window, offering stunning views onto the Salt Flats.

DENALI NATIONAL PARK, ALASKA The beauty, majesty, and remote locale of the Don Sheldon Amphitheater, a 35-square-mile basin carved by glacial ice in Alaska’s Denali National Park, is astounding. SKELETON COAST, NAMIBIA Located in Namibia’s Skeleton Coast Central Concession, between the Hoarusib and Hoanib Rivers, Shipwreck Lodge is the only luxury accommodation in the Skeleton Coast National Park. A raw, rugged and impossibly remote area of the country, it was important that the lodge would leave not a blemish on the pristine landscape should it ever have to be moved.

NGORONGORO CONSERVATION AREA, TANZANIA Designed by South African based company Artichoke, owned by Caline Williams Wynn, The Highlands was inspired by the stunning landscape of the Ngorongoro Highlands area, reminiscent by name and also in topography and climate to the Highlands of Scotland. The camp itself provides a stylish refuge from the elements and a genuine African experience, memorable not only for the innovative design of the domes but also the unique environment that surrounds them. The Geodesic Dome, popularized by Robert Buckminster Fuller, was touted by the American Institute of Architecture as the, “strongest, lightest, most efficient means of enclosing space known to man.” The design is such that the structure can bear immense loads while having no internal supports aside from the structure itself. Traditional homes rely on spreading the overall
weight across supports made of right angles as opposed to a geodesic dome in which the load is dispersed across the entirety of the structure. This makes a much more efficient space and leaves room for a completely open interior design, unlimited by loadbearing walls and columns.
Faux fur and woven throws within the canvasdomed tents emanate warmth and relaxation, whilst the wooden floors and deck provide comfortable living spaces. Clear windows within the domed structures allow the outside in, ensuring that guests are able to take advantage of the magnificent surroundings.
The domes also have an exceptionally small ecological footprint; the bulk of the structure is made of recyclable materials and the spherical nature allows the dome to be heated and cooled efficiently and evenly, having no corners for air to pocket into. Between the low waste from manufacturing and the efficiency of heating/ cooling, the geodesic dome is an excellent choice for a low impact on the environment.

was about to embark on a voyage across the Bay of Biscay from Dover, England to the delightful ports of Honfleur, St-Malo, StJean-de-Luz and San Sebastian before arriving in Lisbon. Of course, I have heard of Crystal Cruises’ reputation as one of the finest luxury cruise lines in the world – lauded by travel insiders and savvy guests alike. Sometimes though, you take these kinds of accolades with a grain of (ahem) sea-salt, but the moment I stepped onboard the 781ft. Crystal Symphony, I can see why Crystal have consistently earned its award-winning status in the large luxury cruise category. With an 848-guests capacity, it hits the sweet spot by being large enough to have a variety of dining and entertainment offerings, but not so mega-ship big that it takes you a week to familiarize yourself with everything.

A 2017 refurbishment maintained the refined elegance Crystal is known for, as well as reduced the number of staterooms which means more space as well as increasing the staff-to-guest ratio. The feeling onboard is that of a luxury resort with light wood paneling, plush carpets, marble and brass finishes, and a neutral color palate accented with Crystal’s signature blue hue. Starlite Club, Symphony’s redesigned lounge area with a bar in the center is the perfect place to enjoy the panoramic sea views during the day, or for evening cocktails and dancing. Families are welcome and there is a small designated space – Fantasy & Waves for children, and a kids program for those ages 3 to 17, but the onboard facilities are designed more for adults in mind. This might be a good thing depending on the type of shipboard atmosphere you’re looking for.

Penthouse guests receive enhanced all-inclusive Crystal amenities such as unlimited complimentary dining at the onboard specialty restaurants.

When it comes to dining, this is where Crystal has long excelled. There are five venues to choose from on the Symphony: the main dining room Waterside, upscale Italian at Prego, Umi Uma created by celebrity chef Nobu Matsuhisa, and two casual options – the Brazilian steakhouse Churrascaria, and the Asian restaurant Silk Kitchen & Bar. At the main dining room, guests can order from the Crystal Classics menu of tried-and-true dishes such as Prime Rib and Dover Sole, or from the Modern Cuisine menu of molecular gastronomy specialties. The service by the dedicated staff is faultless and if you wish for something that is not on the menu, well, they can accommodate that too. At Umi Uma, I’m delighted to find there is my favorite yellowtail sashimi with jalapeño, and Nobu’s famous misomarinated black cod. Although reservations are required for the restaurant, many guests simply walk in for the sushi bar seating. On Deck 11 is the Silk Kitchen and Bar which reminds me of a solarium with its glass skylight roof, green shrubbery, and photos of fauna and birds on the walls. The Chinese menu has dim sum during lunch and family-style dishes of Wagyu beef and lobster at dinner. For evening entertainment, there are Broadwaystyle production shows and a stellar roster of guest musicians, singers, comedy and magic acts from around the world at the Galaxy Lounge. On my particular sailing, there was even a master mind-reader who demonstrated his impressive skills in knowing exactly what the audience is thinking! You can also try your luck at the Resorts World at Sea Casino, have a vintage cognac and rare cigars at the Connoisseur Club, enjoy live piano music at the Avenue Saloon, catch recent movie releases at the Hollywood Theatre, or mingle at the Starlight Lounge with its circular bar. Crystal’s enrichment program excels in keeping your body and mind busy while at sea. There are USC digital filmmaking classes, Computer University@Sea courses, and expert instructors on everything from watercolor painting to
wine tastings, cooking demonstrations and golf lessons. Technological improvements after the refit in 2017 ensures a faster internet connectivity with all you can use free Wifi – although the bandwidth does get strained during peak periods. There is a useful guest portal called “Crystal Connect” where you can easily access shipboard information such as a map of the ship’s location, daily program of activities, menus from each restaurant, digital versions of international papers and shore excursions. At the port of St-Malo in northwestern France, many guests opted for guided excursion to the iconic Mont St-Michel, a 1,300-year-old abbey which was unreachable during high tides until a 2,500 ft. elevated pedestrian footbridge was built in 2014. I visited it before, so this time, I came for the food of the region, and went off on my own to the nearby fishing village of Cancale - renowned as the “oyster capital of Brittany”. So famed are the oysters here that King Louis XIV reportedly had oysters from Cancale brought to Versailles. Hundreds of oysters beds stretch for miles along the shell-shaped bay as oyster vendors line the pier where 5€ or 6€ (depending on the size) will get you a dozen of these deliciously briny mollusks. I ate 2 dozen oysters with some lemon while overlooking the Bay of Mont-Saint-Michel with the sea air against my face, and can’t imagine a more enjoying way to spend that afternoon.
The Asian-inspired Crystal Spa & Salon with complimentary men and ladies’ sauna rooms was designed along Feng Shui principles, and also offers medi-spa services such as acupuncture. As the ship sails from each port, Louis Armstrong’s “What a Wonderful World” is played throughout each of the cabins. A fitting signature as I marvel at how it is a wonderful world when you’re sailing on the Crystal Symphony. Note: A similar sailing to mine in the Bay of Biscay is available from June 7 to 19, 2020 from Lisbon to London.
My culinary exploration continued in San Sebastian, in the Basque region of Spain, another area that attracts serious food aficionados. Don’t miss the veritable San Sebastian rite of passage of going on a pintxo bar crawl in the Old Town where you sample as many types of the Basque version of tapas as you can. Each bar has its own specialties with many classic and creative combinations of meat, seafood, cheese and vegetables placed on top of a small piece of bread and consumed in a couple of bites. Following a three-year, multi-million-dollar restoration, Belmond Cadogan opened in late February as the British brand’s first London address and is the ideal hotel for couples, families and business travelers. hat I was most looking forward to was seeing the major cultural sights, however, what made our cruise remarkable had less to do with the sights we saw and more to do with the genuine encounters with local guides and spontaneous moments along the way. Every day there was something usual, extraordinary, funny or uniquely Russian that my buddy Elizabeth and I loved. Cruising on Viking Longship Ingvar, we traversed six waterways and hit seven ports of call on our 12-day journey of cultural exploration, culinary discovery and relaxation. MY FAVORITE THINGS:
MOSCOW Practically speaking, travel by Metro (Subway) in Moscow is incredibly easy. Aesthetically, several of the stations are beautifully designed both architecturally and artistically. I highly recommend buying a day pass at the convenient kiosks and exploring three of the interesting stations: Dynamo for the basreliefs, Teatralnaya for the white marble, and Mayakovskaya with the mosaic tiled vaulted ceilings. It was a surreal experience approaching the St. Basil’s Cathedral with the iconic flamboyant domes that have been etched in my mind since childhood. Standing adjacent to Lenin’s Tomb in the middle of Red Square looking at these symbols of old Communism, it struck me how extraordinary this adventure was. Adjacent to Red Square is the infamous Kremlin full of splendid onion dome churches within the fortress.
CITIES - ST. PETERSBURG Although it was an unusually warm afternoon and the un-airconditioned Hermitage Museum was stifling, seeing the golden Peacock Clock, commissioned by Prince Grigory Potemkin (allegedly the secret husband of Catherine the Great), in person was mesmerizing. During our panoramic tour of the city we broke off from the group (I love that when there is free time we can wander on our own) and made a beeline for the bar at The Four Seasons Hotel. The Church of Our Saviour on Spilled Blood with its striking gold, green, white and blue domes and the small market outside was filled with inexpensive, but amusing souvenirs such as nesting wooden dolls (matryoshkas) of U.S. Presidents, Elvis and Putin on horseback. There’s no better way to see the splendor of St. Petersburg than by water. Open air and
Gum Department Store in the northeastern side of Red Square is essentially a large shopping mall. Most of the major luxury U.S. and European brands are represented. For one-of-a-kind souvenirs try their wonderful specialty grocery store selling unique Russian chocolates, candies, caviar, cookies and wines.
CRUISING THE RIVERS A series of connected lakes and rivers took us from St. Petersburg to Moscow. The route mostly comprised of densely populated forests, small villages with fisherman out at all

hours of the night, and people camping along the shores. It was a peaceful route with calm waters, beautiful sunsets and plenty of pretty onion dome churches. The ship was updated, admittedly not as glamourous as Viking’s counterparts in Western Europe, but as comfortable and well-appointed with upscale amenities. We were in stateroom 426 which had a spacious veranda, a nice perch to view the beautiful landscapes as we floated along the lakes, canals and rivers. FOOD, WINE & VODKA I didn’t expect to eat so much fish, tasty fish, delectable fish! I believe I ordered seafood for dinner at least 10 of the nights. Several of the appetizers or main dishes came with dollops of fresh Russian caviar atop which I adored. Viking Executive Chef Joachim Moeller conducted an entertaining cooking demonstration of pelmeni (meat dumplings) and offered interested guests a brief tour of the kitchen and a caviar tasting afterwards. One of the ship stops was at the small reproduction village Mandrogy on the Svir River. Home to a Vodka Museum, this spirit lovers’ paradise had over 3,000 bottles on display and for sale. The “Taste of Russia” lunch we had on the Sun Deck was both entertaining and delectable. Enthusiastic Program Director, self-proclaimed “Sasha from Russia,” sang traditional Russian songs like Dorogoi dlinnoyu (By the Long Road) or what we know it as, Those Were the Days. The crew joined in the revelry, line dancing to the Macarena and YMCA while we dined on Russian epicurean delights – most notably the pastries!
CULTURAL ENLIGHTENMENT The Russian Viking Cruise ships had three “in-house” guides who spoke perfect English and were quite candid about their experiences growing up Russian. Two of the guides, Slava and Phillippe were particularly engaging during bus rides from one event to another. We had the opportunity to find out more about everyday life in Russia. While in the small town of Uglich we made a visit to a charming family home. We met the matriarch of the family, her daughter and three of her grandchildren. People in the countryside grow their own fruits and vegetables in their backyards and can them for the long, harsh winter. We dined on fresh organic cucumbers, tomatoes and bread. We sipped hot tea and took shots of an amber colored homemade moonshine – quite strong, but tasty. She toasted us warmly via help of a local translator and we learned the proper way to drink the libation. There were two amazing live acts we attended. One was a Cossack Folkloric Show where the stars performed the ancient ethnic art of “squat” dancing that we as Americans think of as typically Russian although its roots began in southern Russia and the Ukraine. The other was a whimsical classical folklore concert featuring compositions by famous Russian composer Tchaikovsky conducted by a young, humorous, and very talented showman. The cruise provided the opportunity to experience the art, culture and landscape of Russia easily. I admired the beautiful seaside, forests, villages and delighted in how friendly the Russian people were in the cities. The Viking programs had a wide variety of thought-provoking activities and tours, something I have come
to greatly appreciate from Viking. Cruising the Waterways of the Tsars was a thoroughly relaxing and effortless way to experience Russia for the first time.

From cool glaciers to hot lava fields, having risked life and limb during his celebrated cycling adventures in extreme climes and on diverse terrains, such as vanquishing five volcanos in five days and performing on famous landmarks like the Statue of Liberty, he is considered the world leader in extreme mountain biking.
G
lobally-renowned adventure mountain biker, showman and stuntman, Hans Rey, talks to Angela Sara West about his incredible exploits, what’s hot in the world of mountain biking, his luxury home and lifestyle in Laguna beach and challenging former US President George H.W. Bush to a bike race. Known for his rad rides, he’s scaled the slopes of monumental mountains, steered through the deadliest of deserts, pedalled victoriously over volcanoes and wheeled his way through waterfalls, all on his beloved GT bikes. Former Trials Riding World Champion, pioneer of Freeride and Mountain Bike Hall of Famer, Hans Rey, has travelled the globe extensively, riding over and through areas previously considered ‘unrideable’. Making a name for himself with a number of ‘out there’ publicity stunts, Hans and his trusty bikes have graced the covers of around 400 magazines worldwide. The more
extreme the stunts the better for this fearless biker… There have been bunny hops across cars on a freeway, impressive bike flips into swimming pools, biking bungy jumps and wild bike rides on ropes down a 14-story skyscraper in New Zealand, not forgetting his legendary bike dance on a Hawaiian volcano, surrounded by hot lava! Exciting escapades have seen him conquer extreme conditions and elements in over 70 countries, achieving a number of ‘firsts’, such as making the first bike descent of Mount Kenya, along the way. INTREPID INSPIRATION An adventurous child, German-born Hans grew up practising sports from the minute he could walk. “My whole family was very active. We used to hike, ski, go on bike tours etc.,” he tells me. The stunts started early, too, causing him to catch the mountain biking bug, albeit a little reluctantly, at a very young age. “When I was very little, my sisters pursued me, maybe with a little push, to ride my tricycle down a set of five stairs… That didn’t end well!” Undeterred, he went on to rule the mountain bike world… Many pro riders inspired Hans when he was growing up. “I was mostly inspired by moto cycle riders and racers, like some of the great legends of Trials riding, such as Bernie Schreiber and Martin Lampkin, as well as BMX racers from America, like Andy Paterson or Bob Haro.” He was also influenced by athletes from various other sports. “I would try to learn from

their actions, success and failures and apply the lessons learned to my own sport.” WORLD CHAMP & OLYMPIC PERFORMANCES Hans became famous for his pioneering moves and techniques. “I’ve always liked that mountain biking is an individual sport, with numerous ways to enjoy it and experience it. With my Trials riding background, I’ve always liked and embraced technical terrain and sections that others wouldn’t ride.” In 1996, he performed at the Olympics’ closing ceremony. “It was a great feeling to perform on such a prestigious stage in front of the whole world, ringing in a new area of sports. I was part of an Extreme Sports act/ show, choreographed by well-known producer, Kenny Ortega, and many legends of actions sports, like Tony Hawk, Mat Hoffman and Dave Mirra, to name just a few. Our show was to symbolise the changing of the guards from traditional sports.” Among his abundant awards and accolades were many Trials medals, clinched when the X Games were known as the ESPN Extreme Games. “Trials riding was only in the very first Extreme Games (now X Games). to the Games, ESPN had chosen me as one of the few athletes who would get pushed and featured leading up to the competition. That helped to get my name on the map, especially since they had a major strike in baseball and hockey and the network didn’t know what to put on TV other than repeating our stuff!” How did it feel to take the crown as a world champion and to have been inducted in the Mountain Bike Hall of Fame? “A lot of things would just happen back in the days… the anticipation or hype wasn’t as big, and there was less pressure and expectation from sponsors, the media and the audience. Winning some of these titles were big milestones, but I was always looking for new challenges and eventually found them outside of competing, not just pushing the limits of extreme riding or adventures, but also by reaching new levels off the bike and pushing my sport or my career into areas where nobody had gone before - and not just geographically. However, the appreciation of some of my achievements sometimes didn’t come until years later.” Having won numerous bike Trials riding championships, including taking the title of German, Swiss and USA National Champion, NORBA World Champion, Winner of the UCI World Champion and Bike Trial Union Vice World Champion, Rey retired from competitive sports in 1997 to explore the world on his amazing mountain bike adventures, adding endless impressive escapades to his repertoire. RETIREMENT ADVENTURES - MISSION ‘POSSIBLE’ As the only permanent member of the ‘Hans Rey Adventure Team’, a quest to explore the world using his mountain biking talents in search of something historical or mysterious, Hans’ thrilling trips are frequently filmed for TV, capturing the cultural, scenic, and spiritual aspects of the exotic locations he encounters along the way. From following in the footsteps of Moses across the Sinai Desert, to discovering the ‘alien’ dwarf Dropa tribe in China, he has also traversed Peru’s Inca Trail, ridden the Roop Kund trek in the Indian Himalayas and even uncovered Pyramid mysteries in Cairo. Significant triumphs include being the first (alongside Canadian freeriding legend and pioneer, Richie Schley) to traverse, summit and also make the first bike descent of Mount Kenya - Africa’s second-highest mountain at 16,300ft./5,000 metres. A world-class trekking destination boasting numerous challenges, it comprises jagged peaks and clima-zones with diverse flora and fauna, from the open savanna to rainforests and equatorial glaciers.
“We’d never ridden above 15,000ft., but both handled the terrain and altitude well. We encountered rain, snow and a thunderstorm.”
RISKY RIDES & ‘DOPE’ DISCOVERIES – HANDLING THE PRESSURE
Countless other hazards required really upping their technical riding game. “We were warned of elephants, buffalos, lions, contaminated water and malaria-ridden mosquitos. Within hours of my arrival, I was charged at by an elephant with her new-born baby!” Having escaped the elephants, culture vulture Hans was happy to make some tribal friends en route. “I got to meet and hang out with some of the Samburu Warriors, who still live in the bush in their traditional ways.” Their exhilarating adventure also took them along the site of a recent airplane crash. “There were parts and pieces scattered all over the mountain side – it was quite eerie...”
Truly testing the limits during an inspiring lifetime of discovery and adventures, it’s his desire to accomplish the “impossible” that motivates him to attempt such epic and highly-precarious challenges and to push both his mental and physical boundaries. “I like to conquer things that used to be considered ‘unrideable’ or have never been done before, like riding on glaciers, volcanos, waterfalls etc.”
Not one, but two missions were actually accomplished during this feat. “Our real mission was the first descent, but I also accomplished my secondary mission to find the remains of ‘Icy Mike’, the elephant bones and skull discovered years ago in a remote valley on Mount Kenya at an astounding altitude of over 15,000 ft. I took a DNA sample of this mysterious find. We crossed the equator from the Southern Hemisphere to the Northern Hemisphere right before the Sirimon Park Gate. This was an unforgettable adventure and, to end it, jubilant and ripe, we were on the guestlist to race in the annual ‘10 to 4’ (50km) race the next day. It was the last thing we wanted to do, but we couldn’t pass up the opportunity, nor let down the people of the Mount Kenya Trust, who organized this event to raise funds for Mount Kenya National Park.” Out of all of his amazing biking adventures and achievements, which have been the most momentous and memorable. “At this stage, I have to say it was a couple of years ago, climbing and riding down both Mount Kenya and Kilimanjaro back-to-back with Danny MacAskill. That was a hard trip…” Which other places have been particular highlights and which discoveries have also seen him ‘stoked’? “I’ve always liked to ride to ancient sites… places like Machu Picchu or the Pyramids. Anything new excites me; new trails, destinations, cultures, food, people… On many of my adventure trips, I’ve been in search of something mystical or historical… Some missions were pretty far out, but there was often more to it; even if we often didn’t hit the jackpot, we would still shed some light on some interesting stuff, often long before those things became known in the mainstream. It could be as simple as following the footsteps of Moses or ‘Che’ Guevara across some mountain range, or in search of that ancient elephant skeleton on Mount Kenya…”
No wonder his nickname is ‘No Way Rey’! When was it coined? “When I first came to America, people called me ‘Rey’ because they couldn’t pronounce my first name ‘Hansjörg’. They’d never seen a rider with such Trials biking skills (Trials was a European sport, unlike BMX or MTB), and would often say ‘No way… that’s impossible!’ They soon started calling me ‘No Way Rey’… and it stuck!” Does he have a mantra? “Be good to others and chances are your faith won’t come short, and that one can only make a first impression once...” Which have been among the most hairraising experiences for hardy Hans? “When going head-to-head with Mother Nature, she is unpredictable and always stronger… like riding in a hot lava field, across glaciers or in places with extreme weather conditions. Riding along Ireland’s Cliffs of Moher, along a tiny edge as narrow as five inches on top of a 600ft. cliff, raised a few hairs!” URBAN ADVENTURES Rey recently kicked off his ‘Urban Adventure’ series with a five-day ride across Los Angeles. “In the past decade, I’ve been more in search of the ultimate flow… the best trails… and some of them are actually purpose built. Lately, it’s been urban adventures that make my heartrate go up. I have singled out a dozen big and interesting cities which are surrounded by beautiful nature. TransAngeles was my first one - a five-day traverse of the city of Los Angeles and its surroundings with all its contrasts, culture and history. Next up was TransNapoli, in Naples, Italy, just a few months ago. And now, I’m eyeing other places like Hong Kong…” Oh the ultimate flow… that much soughtafter trail nirvana... that feeling all mountain bikers seek and know it when they’ve found it. When one obstacle melds perfectly into another, you’re suddenly in cycling heaven. But where can we can find it? “The way we ride, where we ride and what we ride has improved so much since the beginning. Biking is at a great point and some destinations have

really embraced this trend, like Livigno in the Italian Alps with its Carosello 3000 Mountain Park. “ RAD RIDES ON THE FIRST EVER FLOW COUNTRY TRAIL… PUTTING LIVIGNO ON THE BIKING MAP Hans has been working as a consultant and spokesperson for the Italian commune of Livigno, helping to put this part of Lombardy in the spotlight of the international mountain bike scene. In fact, he loves Livigno so much, he proposed to his wife there! “I’ve been riding at, and working with, Livigno and Carosello 3000 for around 14 years. It has an incredible infrastructure for all sorts of biking.” Hans has raised the resort’s profile exponentially after implementing the ‘Flow Country Trail’ concept there. “Ten years ago, I coined the phrase ‘Flow Country’ for flowy trails that are never steep, never extreme and never dangerous. A concept of fun, family-friendly trails.” He reckons this style of trail is set to become a new micro trend in the world of mountain biking, appealing to a large number of riders, regardless of skill level and mountain bike type. “Over the years, we have built a huge network of trails, which are not just for experienced rid60 Upscale Living Magazine | MARCH 2019
ers; we now see more and more female bikers, families and kids. I visit Livigno several times a year. The first time I went was on a family hiking vacation, when I was just eight years-old!” RIDING RECOMMENDATIONS His favorite destinations? “Along with Carosello 3000 in Livigno, I love Italy’s Amalfi Coast, Baja California in Mexico and Fiji.” Still on his bucket list? “There are numerous big cities that I want to explore on my Urban Adventures… Other than that, I still need to ride in places like Alaska and Madagascar.“ Where does he recommend for biking here in Britain? “I really like some of the Welsh bike parks and trail centres and I sometimes ride in the Peak District and Cannock Chase in Staffordshire. The concept of riding and trail centres was actually pioneered in the UK, especially in Wales!” How about biking in his hometown, Laguna Beach in California? “Laguna is a beautiful town with some great riding… not exactly the most beginner-friendly riding, with steep hills, up or down…” Laguna Beach is a luxury destination savoring a stunning seven-mile stretch of sand and surf. “Fortunately, I live in one of the nic-

est neighborhoods imaginable,” says Hans. “Behind my house is nature and wilderness, with trails coming practically to my doorstep. Two shorts blocks down the hill is one of the nicest beaches on the Californian coast.” The ultra-luxe 5-star Montage Resort lies literally across the street from Hans’ house here. “Laguna Beach has a great lifestyle and standard of living. It has incredible views and nature, great restaurants and cafés, lots of galleries and unique shops. It’s also a hub for action and outdoor sports.” A few of Hans’ favorite hangouts? “The Rooftop Lounge, La Sirena Mexican eatery, Urth Caffé for breakfast or cocktails at the bar at The Ranch at Laguna Beach. The popular beaches can get crowded in the summer, but in the evenings they are often deserted and fun places to hang out. I also love having BBQs in our garden, which is lush like a mini jungle with a swimming pool, Jacuzzi, Koi pond and breathtaking views of the Pacific Ocean all the way to Catalina Island on a clear day.” WHEELS 4 LIFE - CHANGING THE WORLD, ONE BIKE AT A TIME Hans has also been busy putting the wheels in motion in the Third World. Founded by Hans

and his wife, Carmen, in 2005, the nonprofit charity ‘Wheels 4 Life’ donates bikes to Third World countries. “We give bicycles to people in need of transportation in developing countries. We all work voluntarily and the charity has very few overheads. To date, we have donated over 12,000 bikes in 32 different countries.” Once every year or two, Hans hosts his glitzy Wheels 4 Life Charity Gala Fundraiser in his adopted hometown of Laguna Beach. “The Foo Fighters’ drummer, Taylor Hawkins, has played at our Gala a few times with his band Chevy Metal. Timmy C (Tim Commerford) from Rage Against The Machine/Prophets of Rage has also attended… designer Troy Lee, too. Guests at the glamorous event also include numerous extreme sports athletes and world champions from various disciplines, such as mountain biking, BMX and motocross, including Hans’ fellow riders Richie Schley and Darren Berrecloth, plus representatives from long-time sponsors Crankbrothers and GT Bicycles (a partnership which began back in 1987, making it one of the longest-standing sponsorship relationships in the entire cycling, action sports and outdoor industry). Alongside sipping on delectable cocktails, the exciting event sees bidding on silent auction items, ranging from brand-new mountain bikes to tickets to the premières of Hollywood movies! MONKEYING AROUND - SMALL & SILVER SCREEN APPEARANCES Talking of movies, Hans has starred in bigscreen productions including Tread: The Movie, and made guest appearances and carried out stunt work on the TV series Pacific Blue. He’s also worked as a stunt coordinator and rider on Willy Bogner’s White Magic films, and Fire, Ice and Dynamite, the huge action/sports comedy starring Roger Moore. The legendary Trials and adventure rider was also one of the first to produce action videos of his Trials biking and extreme biking skills, too, including his own VHS series from 1992-96. Hans has been biking with many luminaries of the mountain biking fraternity, making edits showcasing his and their talents along the way. “I always enjoyed riding and filming with Greg Herbold, one of the early biking legends. I’ve always admired John Tomac, too. Nowadays, it’s great to ride with riders from the new generations and to witness first-hand their skills and see where they have taken the sport, be it Nino Schurter, Martin Maes or Darren Berrecloth, to mention just a few…”. Hans says no-one has stood out more, though, than Mr Jiggs. “The
chimp that starred in my video Monkey See, Monkey Do!” PEDALLING WITH POP STARS & PIONEERING PRESIDENTS Hans has also pedalled alongside countless celebrities… “I’ve met a few and have ridden with others, including Tim Commerford (Rage Against the Machine) and Taylor Hawkins (Foo Fighters), along with some basketball legends. I once challenged mountain bike fan, President George W Bush, to a bike race and chased him through a conference room, both of us on bikes! He was one of the early pioneers of the e-bike movement, 22 years ago, long before the bike industry realized their potential.” Along with footage of the cycling President rising to that challenge, Hans posts all sorts of inspiring edits on his YouTube channel. “I’ve been posting lots of content lately, old and new. I have a huge library of VHS tapes that I’m currently converting. There’s a lot of cool, and almost forgotten, footage.” He loves showing off his special cycling mementoes and memorabilia, too. “I also show things about my personal life on there. People are very keen to see the bike treasures I’ve hoarded in my garages!” This cycling YouTube sensation’s favorite ever bike? “The bike that’s most associated with me must be the GT Zaskar. It was one of the most legendary bike models of all time, and I used it during my films, competitions, Trials shows and adventures. On that bike, I used to turn heads when doing front wheelies, where I used to stand on my back wheel, hopping the bike with one arm raised to the sky! I named one of my bike tricks “Statue of Liberty” EVOLVING HOT WHEELS With so much new equipment, such as technical developments with GPS tracking apps, Strava, advanced clothing etc. entering the market lately, what’s currently hot in the world of mountain biking? “E-bikes. Personally, I like pedal-assist e-bikes and have been riding them for a year, but they will not replace my regular push bikes. E-bikes will be part of the next steps in evolution. Like them or not, they are fun and open many new doors.“ How else has the world of mountain biking changed over the years and what does the future hold for the sport? “The evolution of mountain biking has been incredible on every level in the last three decades. From the bike technology and materials, to the places we ride and how we ride… The past
was more dictated by technology, while the immediate future will be more dictated by where we ride and how we ride. The quality of the trails and riding experience will become most important.” DISCOVERING THE GREAT OUTDOORS IN OUR DROVES… Hans is hopping happy to see the sharp increase in the number of riders embracing the great outdoors and enjoying mountain biking. “Finally! I was wondering what took everybody that long to discover the outdoors ;-).” He warns, however, that there is a downside to the sport’s recent rise in popularity. “It’s definitely a two-edged sword… As somebody who makes a living from this industry, I’m pleased that so many people are being active and riding bikes. But, from a more personal point of view, I miss the days when we had the hills to ourselves... Luckily, those more remote places can still be found, although they might take a bit more travelling to get to. We have to all be responsible and not love them to death.” PUSHING THE BLOOD-PUMPING LIMITS Apart from the obvious fitness benefits, the sport can also aid general wellbeing. What are the advantages of the social side of mountain biking etc.? “It’s great on so many levels, I have learned so much from riding bikes, pushing my limits, travelling and meeting people, along with staying fit and enjoying nature.” Cycling aside, how does Hans keep fit and healthy and on top of his game? “It’s all about the right balance between working out, living a healthy and happy lifestyle and embracing new trends,” he explains. As an adrenaline junkie, does he enjoy any other extreme sports? “Only to a degree. I like off-road motos, like Trials and Enduro, and I like the crossover into many other sports, but not as much as I enjoy pushing the extreme limits…” RIDING LIFE A must for all cycling aficionados, Rey gives talks and motivational keynote speeches at events and, following his hugely-successful November 2017 UK theatre tour, the first by a professional mountain biker, has been back on the saddle here this January and February on an extension of the same tour, Riding Life. “I had real fun doing the tour. It’s cool to meet people from so many different generations. Most seem to get inspiration from the talk and I love hearing their stories, too.” Ready to ride some rad new trails? As for mountain bike must-haves, Hans never heads off on an adventure without several essentials in his riding pack. “Water, tools, and my ‘phone.” He also has invaluable tips on what riders should look for when buying a mountain bike, accessories and equipment. “Go to real bike shops for consultation, and support those businesses by buying your bike there. Then, you’ll always have a place to go to for advice, help, or to make new friends - real ones, not digital!”
Still struggling to rail that turn? Trying to tackle a tricky kicker? If you’re looking to improve your skills set and techniques, Hans has advice aplenty to take your core skills to a new level and reach optimum performance on bail-free rides. “Go for it, one step at a time. Once you have the basics mastered, no matter if in technical riding skills or basic endurance, it’s easy to push a bit more.”
“There’s lots of advice on different online outlets,” he says. “It just takes some time to visualize your goals and then reach them. With constant effort, improvements will be noticeable before long, even though they don’t always come overnight. Most importantly, don’t forget to have fun, because that’s what it should be all about!”

he star of the Little Karoo, Sanbona Wildlife Reserve is set amongst the most majestic Warmwaterberg mountain range, where nature and nurture meet to provide visitors with the Cape’s premier wildlife destination.
years, the vegetation is the livelihood of the herbivores, so with little enough food available, driving over terrain that serves as their feeding ground will surely deplete the numbers of plant-eating animals.
An icy chill grips the late afternoon air as we depart on our first game drive. In the distance, a large herd of elephants is making its way across the plains and they veer off into a different direction from where we are driving. Our guide, Andrea Bothma explains to us that going off-road would compromise the ecology and conservation efforts at Sanbona Wildlife Reserve, so we patiently wait roadside for them to find their way to us.
We are elated when the elephants eventually sashay over to the area where their feed is supplemented as a shortage of food for these gentle giants is not an option. A young calf is standing underneath its mother’s mouth, affectionately rubbing its head against mom’s trunk. After a languid feed, the herd walks off into the mountainous terrain.
In the midst of one of the most severe droughts the region has experienced during the last two

On our way back to Gondwana Family Lodge, a lone male giraffe is standing perfectly still, answering the call of nature. A warm drink and inviting fire in the dining room is enough to stave off the cold. Waiter Lungisa is at hand to serve us and tonight, we dine on a canape of cucumber, salmon & cream cheese, followed by a starter of carrot & orange soup, spiced with turmeric, ginger & spring onion. Lungisa brings us the most soothing mixed berry palate cleanser and for main course, my husband and I order the delicious marinated kudu wrapped in bacon with roast butternut puree, pickled fig & a red wine jus while our daughter orders her all-timefavorite go-to-food, yes, pizza! wana Family Lodge rooms display space and colors that blend in with the surroundings. We are staying in one of the ground floor’s interleading family suites and our daughter is ecstatic to have her own room and en-suite bathroom. Her room choice has accents of green while ours has smidgens of orange. It is time for bed and after a shower with the Healing Earth products, we retire for bed. Our wake-up call at 05:00 has us scurrying for the phone. Dressed and ready to go, we meet in the dining area for a warm beverage and some biscuits before setting off on our early morning game drive. It should be illegal to be up this early, but just as that thought crosses my mind, he comes into view – a majestic tawny lion. Seeing two sub-adult male lions striding towards us makes the pre-dawn rise worthwhile. We follow them through the dry riverbed when eventually they saunter off for a siesta, only to reappear in the late afternoon. Back at the lodge, breakfast is served next to the crystal-clear pool and we spend the rest of the day at leisure immersed in our magnificent surroundings. Our daughter loves the skull garden and for children staying at Gondwana Family Lodge, the Kids on Safari program is a big drawcard. On arrival, they get issued with a backpack in their color of choice, a peak cap and a Sanbona activity book, which is a fun way of collecting dung and plant species and is great to use as show-and-tell at school. Our afternoon game drive yields some exciting sightings – a grumpy buffalo staring at us through the branches of a tree and the same lion brothers in pursuit of their next meal. We are supposed to have a boma dinner tonight, but the weather doesn’t play along, so we dine fireside again, feasting on a scrumptious array of barbequed meats and side dishes. Dessert is the ever-popular South African favorite peppermint crisp tart. It is our last morning and Andrea heads in a northerly direction. We spot the cutest baby bat-eared fox sunning itself in the early morning warmth. We lose sight of it and eventually it pops up from the shrubbery, only to display a huge pair of ears. Further afield, a tall male giraffe is feeding on the most succulent yellow flowers of an acacia tree, looking over at us, probably also hoping that soon, the escarpment will be blessed with the wondrous life-giving rains it so richly deserves. The Inn rests on six acres of parkland overlooking the inner harbor positioned at the cusp of a prominent peninsula in Victoria, BC. A NOTEWORTHY TEAM Paul and Artie Arsens had a dream. The couple purchased the Delta Hotel in 1980 and rebranded it as the Inn at Laurel Point. They immediately began working with renowned architect and friend Arthur Erickson. The Arsens wished to augment the hotel turning it into something grander than it once was. Paul and Artie enjoyed a love affair with travel and art. Numerous pieces from their personal art collection fill the Inn’s rooms and hallways. It is rumored that local artist Louie Morino, a friend of Artie, often traded his artwork for accommodations at the hotel. Since the Arsens’ purchase, the Inn has operated as an indepen-

dent hotel allowing them to invest in sustainability efforts lowering their overall carbon footprint. In 2010 NatureBank awarded the Inn BC’s first Carbon Neutral Hotel. A SUPERIOR INDEPENDENT HOTEL The Arsens believed in their staff and the corporate culture they created. Paul passed away in 1997 and Artie set up an 80-year trust before passing away in 2008 that would keep the hotel an independent business. The Inn at Laurel Point has operated as a social enterprise since 2008. Three trustees manage the trust with guidelines set to maintain the Inn’s status as a social enterprise. These policies

state that the hotel funds must be allocated for (1) the betterment of the hotel, (2) new training and incentives to retain superior staff, and (3) good acts of will toward the community. The trust donates to several local charities including Habitat for Humanity. Victoria hosts the only cancer treatment center on Vancouver Island, and the trust allocates funds to provide free accommodations at the Inn for patients and their families while they undergo treatment. Many of these families travel great distances and are blessed by receiving free housing during this difficult time. Director of Sales Brooke Harris says, “These people become part of our family. Sometimes we get to watch them leave happy, and other times we know we will never see them again.” A VARIETY OF MAGNIFICENT ROOMS The Inn at Laurel Point features 200 rooms with private balconies, each one with gorgeous harbor views. The 135 original accommodations in the Laurel Wing range from standard rooms and junior suites to the well-appointed Laurel Wing hospitality suite. The newer Erickson Wing boasts 65 spacious and luxurious suites from large studio-style rooms to the expansive executive suite with floor-to-ceiling windows and a wraparound balcony. All rooms at the Inn come with complimentary Wi-Fi, a half-sized refrigerator, movies on demand, in-room coffee and tea, a desk and Aveda amenities.
A FABULOUS RETREAT My daughter Brittney and I stayed in one of the Erickson Wing studio suites. The elegant room with large sliding glass doors leading out to the balcony fulfilled Erickson’s goal of bringing the outside in. The shoji screen separating our bathroom from the main room gave a nod to the Arsens’ love of Japan and the rest of Asia. We relished lounging in the sunshine on our balcony. The first afternoon we watched the sailboats bob about while seaplanes took off and landed on the water, and the following morning we enjoyed breakfast gazing out at the harbor. A DELIGHTFUL RESTAURANT Executive Chef Takashi Ito oversees all food served at the Inn at Laurel Point. He changes the menu at AURA waterfront restaurant + patio twice a year and works closely with Manpreet Sethi, the restaurant chef, and Janis Goard, the director of food and beverages. Brittney and I shared dinner outside on the patio. We began our feast with a shrimp and cream cheese spring roll followed by a seafood play on a charcuterie plate. The platter consisted of scallop and nori “mortadella,” cured salmon, smoked tuna pâté, and a delicious pressed local octopus. A delicate Dungeness crab and shrimp terrine, rye crisps and a harissa crème fraîche finished the dish. The chef prepared a chilled corn soup with cured and smoked scallops, charred corn, and bacon powder. Next, we dined on gnocchi with
roasted beets, edamame, kale, shiso pesto, and feta cheese alongside fennel dressed in yuzu. Asian flavors came through in the duck breast rubbed with shio koji and the spiced soybraised duck leg with forbidden rice croquettes. We ended this delightful meal on a light note with strawberry and coconut sorbet and mango ice cream. A DRAMATIC SPACE FOR SPECIAL EVENTS The Inn at Laurel Point features 10,000 square feet of premier indoor and outdoor meeting space. The Terrace Ballroom boasts incredible natural lighting and an exquisite view of the Japanese pond and the harbor. The Inn’s meeting space accommodates groups of 10 to 300. A DREAM FULLY REALIZED Rooms at the Inn received a remodel 12 years ago, but funds ran short and most of the ground floor did not receive renovations. On October 15, 2018, Arthur Erickson’s vision for the entire renewal project began, and completion of the endeavor is anticipated for the spring of 2019. The mission is to construct a new entryway, lobby, driveway, and groundfloor meeting and event spaces together with a remodel of the AURA waterfront restaurant + patio. During this six-month venture, the hotel will run with a temporary entrance for guest checkin and will offer on-site catering. The indoor pool, fitness studio, in-room spa services, and bicycle rentals will remain available.

Architect John Graham, manager of the renewal project, was a junior architect during the Inn’s Erickson Wing project. y visit to the city of joy Kolkata proved to be a fabulous one owing to the JW Marriott Kolkata. The first hotel in Kolkata & East India by Marriott International, JW Marriott Hotel Kolkata towers over JBS Haldane Avenue and is located in the heart of the city, minutes from the old central business district. It was a lovely surprise to be greeted by unique in room welcome amenities as I checked in to the hotel. When I woke up in the morning, the sight of the beautifully designed swimming pool from my room was a pleasant one.

I was treated to an authentic Bengali thaali for lunch in the company of Trina Mukherjee, Senior Marketing and Communications Manager, JW Marriott Kolkata and Sayantani Ghosh. The delicious thaali consisted of Hilsa maach, baingan bhaja, cholaar daal, luchis, rice, kosha mangsho, chingri malai curry, mishti doi, aloo poshto and rossogulla. Vintage Asia is a fine dine restaurant and serves authentic Thai and Chinese dishes. Shubham Sharma, assistant beverage manager created an interesting cocktail for me while I was dining at Vintage Asia. While in Vintage Asia, I tried the assorted dimsum platter, the crispy fried prawns with wasabi mayo, the lotus stem with cashew nuts and vegetables. JW Lounge, a casual meeting space is the venue of choice for freshly baked items and afternoon tea or crafted cocktails and a premium wine and spirits selection in the evening. The lounge has a unique concept called Monsoon Chai evenings where the chefs dish up a tiered snack platter consisting of Bengali style samosas, onion pakoras, jalebis, chops, etc. I was delighted to notice flavored popcorn on the menu which was served along with the tea. I try and eat a lot of the local cuisine whenever I travel to different cities whether domestic or international. At the JW Marriott Kolkata Chef Anil Duvvi created a lot of the local food for me such as luchis and aloor dum for breakfast on one occasion as well as stuffed luchis and ghugni so that I can get a taste of the local flavor. I tried the interesting baked rossogullas from the buffet as well. Gold, the hotel’s chic nightclub is immensely popular with locals owing to its sleek design, refined opulence, pulsating music and intoxicating drinks. JW Marriott Hotel Kolkata features the brand’s signature Spa by JW. Created to demystify and re-imagine the spa experience, the global spa concept offers guests wellness experience that are luxurious yet purposeful with treatments and products designed to address four core benefit states: Calm, Indulge, Invigorate and Renew. To complement the range of rejuvenating therapies offered, the wellness facilities also include an outdoor infinity pool with Jaccuzzi and private cabanas for guests to unwind and relax. After a relaxing spa treatment as I walked into my room, it was a pleasant surprise to see a bunch of fresh roses along with welcome note from the housekeeping team. During my stay I went sightseeing with Sayantani Ghosh, the hotel’s Assistant Social Media Manager. We visited a lot of Kolkata’s iconic places such as Victoria Memorial, Howrah Bridge, Howrah Station, Gangaghat and Princep Ghat. Sayantani also suggested that we should try some of the yummy street food that Kolkata is known for. So we ate the roadside puchkas and kathi rolls from Kusum. CAELIS ROMAIN FORNELL Chef Romain Fornell obtained his first Michelin Star in 2001 at La Chaldette in France at the youthful age of 24. A year later, he moved to Barcelona taking the reins at Restaurante Diana that was located at a place known at that time as the Hotel Ritz. Diana eventually converted into Caelis, and the restaurant separated from the hotel business. Caelis received a Michelin star in 2005, and Chef Fornell became the only chef to acquire a Michelin star in both France and Spain. Over the years Chef Fornell has opened several other tempting restaurants. In 2017 Caelis shifted in concept and place. The cuisine is now less classical and more contemporary, and the restaurant moved into the Hotel Ohla Barcelona. 86 Upscale Living Magazine |
Sitting at the chef ’s table is a treat. Michelin star restaurants must maintain consistency. I spent a delightful evening observing the staff meticulously prepare identical plates. My dinner began with six single-bite tastings, each one delicious, but the pumpkin gnocchi with truffle ice stood out. The tiny gnocchi bathed in a pool of sweetened chardonnay vinaigrette, frozen truffle water and minuscule pieces of white mushroom. It was light, fruity and refreshing.
The red mullet, my favorite, arrived with small potato cylinders, cilantro/basil pesto, potato aioli, garlic chips, and toasted pine nuts. After a spectacular cheese course and celery sorbet, the showstopping finale arrived, a crystal lemon. The outside shell reminded me of blown glass made from sugar and lemon juice, and a lemon foam filled the inside creating a diversity of textures. Lemon gel and basil sorbet adorned the dish.
The following courses offered items from both the sea and the land. Oysters shared the stage with duck liver and a refreshing pickled sauce. Sturgeon and caviar lay on the plate with mushrooms atop a rich brown chicken stock. Precision-cut steak, slow-cooked egg yolk, iced mustard pearls, fried caper berry, and soy vinaigrette made an amazingly balanced plate with phenomenal viscosity and bright acidity.

ENOTECA PACO PÉREZ Chef Paco Pérez began his culinary journey at the early age of 12 working at his family’s tapas bar. Chef Pérez has earned five Michelin stars: two at Miramar restaurant in Llançà on the coastline of the Costa Brava in Spain; two at Enoteca inside the Hotel Arts Barcelona in Barcelona, Spain; and one at 5 Cinco by Paco Pérez in Berlin, Germany. Chef Pérez focuses on Mediterranean gastronomy using fresh products from the garden, the mountains, and the sea. He serves a rendition of contemporary cuisine with classic and inventive touches. Chef Pérez reimagines the use of quality ingredients, creating exquisite and delicious dishes with innovative aromas, tastes and textures. My tasting menu at Enoteca began with a lovely play on cappuccino. A delectable mix of deep rich stock fashioned from chicken and mushrooms was topped with black truffle foam
and dusted with cocoa powder. As a starter, it was delightful and surprising. Five small bites followed the “coffee.” The crisp tempura-style octopus coexisted with dots of saffron emulsion, petite cilantro leaves and a dab of Moroccan spices. I love trying new things, and at Enoteca I sampled espardenyes fricandó. Espardenyes are sea cucumbers, and fricandó is a stew typically made with beef and vegetables. Chef Pérez’s fricandó was intense and hearty unleashing all the flavor of a typical stew, yet he produced it without any beef. This creative and incredibly scrumptious dish made my top-ten list of inspired foods.
The truffled brie crunch, another fabulously surprising dish offered at Enoteca, was heavenly. Shards of meringue sandwiched velvety brie complemented by a small piece of cotton candy which brought an incredible texture and sweetness to the plate. The combination was incredibly creative and unbelievably delicious. This “cheese course” led the way toward the desserts. The diversity of red fruits with smoked sheep milk ice cream was bright and refreshing without being overly sweet. Chef Pérez’s interpretation of the “Prince Cookie” was revolutionary. The small dishes are great for sharing and also allow you to taste as many of them as you wish, experiencing many different tastes and textures.

The night we went to have the Izakaya experience the bar and restaurant were buzzing. The
crowd was young and stylish, all ready for a great night of fabulous food and cocktails. Six of us were dining together and it’s clear to see from the get go that folk come here to see and to be seen. People watching is considered a social sport here. And be warned they are dressed to the nines. A congregation of the best most stylish folk in Amsterdam. We ordered far too many dishes to name them all, each one equally as delicious as the one before. My favourite was the Pan fried scallop served with a Yuzu truffle sauce, and also from the Robata the Jumbo Shrimp served with spicy lemon was pretty special. The service was superb.

Angela Sara West finds out about the famous faces who have flocked here, discovers moving artwork by world-renowned artist, Tracey Emin, a unique collaboration between Searcys

The famous poet, Sir John Betjeman, once worried that St. Pancras station was “too beautiful and too romantic to survive”. The founding member of the Victorian Society was a passionate defender of Victorian and Edwardian architecture, well-known for popularizing and protecting those eras’ beautiful buildings. Among Europe’s most stylish stations, the beauty of the unique Grade 1-listed building takes your breath away… Designed by William Barlow, St. Pancras originally opened in 1868. An engineering marvel for its time, it was the largest enclosed space in the world and provided the grandest entrance into London. Over the years, the Victorian
wonder has experienced near-demolition and decay but, although this masterpiece of Gothic architecture has seen a turbulent history, thanks to Sir John stepping in and saving St. Pancras and its resplendent hotel, the station’s stunning iron arches, over 100ft high at the roof ’s apex, still reign supreme over the unrivalled atmosphere and hustle and bustle of today’s travellers. A stunning restoration completed in 2007 saw St. Pancras respectfully restored and reopened to showcase a magnificent £800m redevelopment of the globally-famous station, which has become a world-class luxury destination, also home to high-end shops galore, alongside Eurostar’s high-speed railway service. I’m blown away by the grandeur of this great gateway to the rest of the UK and Europe and, despite its modern makeover, it’s not hard to imagine the cacophony of sounds and sights of nostalgic steam engines whistling their way up and down the tracks, treasuring that atmo-

International stars, including Hollywood legend, Jeff Goldblum, simply cannot resist a tinkle on the keys, while British music maestros, Jamie Cullum (joined by the National Youth Jazz Orchestra), Laura Mvula and Jools Holland, have all had a turn, too. Comedian, Bill Bailey, has also showcased his musical talents here and even global music icon, John Legend, couldn’t pass by without a play, wowing passers-by with an impromptu performance. Fresh off the Eurostar train from Paris, the multi-award-winning American artist entertained a gathering awestruck crowd with a selection of songs on Sir Elton’s piano before continuing his journey. In aid of the charity Penny for London, singer Pixie Lott has also graced the station’s Grand Terrace to serenade commuters with a choir of local primary school children and, believe it or not, before he became a household name, Ed Sheeran took part in St. Pancras’ Station Sessions for up-andcoming acts – the audience had no idea at the time that they were witnessing a megastar in the making! BACK TO SCHOOL, CHAMPAGNE STYLE! To mark the station’s 150th anniversary last October, St. Pancras celebrated the momentous milestone throughout 2018 with exhilarating events galore organized in conjunction with HS2 and Crossrail. ARMAND DE BRIGNAC A TRIP TO CHAMPAGNE, FRANCE |By RAJ GILL
To say that I was excited about my first trip to the Champagne region of France is an understatement. Not only is it my favorite tipple, the famous Madam Lilly Bollinger quote “I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it – unless I’m thirsty, comes to mind and perfectly sums up my feelings towards champagne.

n our first day in Reims we had the exceptional opportunity to visit the Cattier family vineyards, and then the piece de resistance the Armand de Brignac cellar, an absolute paradise, if they had locked me in and thrown away the key, I would have died happy!

The Cattier family have resided in Chigny-lesRoses, a Premier Cru village of the Montagne de Reims since 1625, their main trade has always been the production of wines, and they have been manufacturing for thirteen generations.
The brand Armand de Brignac was created by Jean-Jacques mother, Nelly Cattier . Mounsier Cattier tells the story of how she was inspired by a novel she was reading in the 50s and the main character was Monsieur Armand de Brignac. Jean-Jacques set out to create something unique and settled on the name Armand de Brignac as a tribute to his mother Nelly.
The Cattiers, father, Jean-Jacques and son, Alexandre, are a dynamic little duo, hospitable, kind and with an incredible extensive knowledge. They are not just the figure heads of the

with a goal to break conventions by bringing a new aesthetic to what was a very traditional looking category and to bring attention to the quality of the champagnes inside the glass. They certainly succeeded, you can spot a bottle of Ace of Spades at a hundred paces! They produced a very distinctive metallized bottle featuring pewter spade motifs. Armand de Brignac is known for its innovative approach, it is part of its DNA and the history of the house of Cattier. The Cattiers adopted a handcrafted approach and their metallization and also the hand –applied French pewter labels clearly communicate a difference from the industrial brands in the category, breaking the mold in an industry dominated by conglomerates with brands selling bottles by the millions. Without any pressure on volume, the Cattiers can afford to hand finish their bottles in this manner. They decided to use the metalized bottle because not only does this aesthetically look pleasing, but the metallization also provides a functional purpose - to protect the precious champagne from light strike. Light strike is the technical term given when wine is exposed to blue and ultraviolet light. This results in the flavour becoming distorted. Protecting the wine from light is the main reason that it is stored in dark cellars. Learning that bottle color has a huge influence on how much of this light reaches the wine itself was the main reason that the Cattiers set out to solve the problem. As much as it aesthetically pleasing to the eye and also conveying a “bling, bling” image, the reason behind the metallization is a very practical one. The first bottle hit the shelves in the USA in early 2006. Rapper Jay-Z featured it in one of his music videos and it become hugely popular, the demand for Ace of Spades rocketed. It has become quite the status symbol. And in this generation of Instagrammers etc, no image is complete without featuring a coveted bottle of champagne, with Ace of Spades leading the way. However it is not just a pretty bottle, Armand de Brignac Gold Brut was awarded the best Champagne in the world in 2010 by the international journal, Fine Champagne Magazine, beating off tough competition. It was a blind tasting conducted by sommeliers, Masters of Wine, winemakers and other experts, the finest in their field. I had the opportunity to label my very own bottle of Ace of Spades, a once in a lifetime money can’t buy experience, and despite having Papa and Alex’s intense gaze watching my every step, I think I pretty much nailed it! Will I be employed as a “Labeller”? Apparently my application is under review! On our final evening in France we were treated to a sensational culinary treat, a superb meal cooked up by Michelin starred Chef Arnaud Lallement at the L’Assiette Champenoise, he had devised a unique pairing menu, champagne with every course, what’s not to love!
