Skillet Sicilian Chicken

Makes 4 Servings

Ingredients

1 tbsp. extra-virgin olive oil

6 bone-in, skin-on chicken thighs (about 2 pounds)

2 cloves garlic, minced

1 tbsp. fresh thyme leaves

1 tsp. crushed red pepper flakes

3/4 cup low-sodium chicken broth

1/2 cup heavy cream

1/2 cup chopped sun-dried tomatoes (If you're not into sun-dried-tomato use fresh ones instead. It won't have as much of a tangy kick, but it’ll still make folks fall at your feet.)

1/4 cup freshly grated Parmesan

Kosher salt

Freshly ground black pepper

Freshly torn basil, for serving

Directions

1. Preheat oven to 375°. In a large oven-safe skillet over medium-high heat, heat oil. Season chicken generously with salt and pepper and sear, skin-side down, until golden, 4 to 5 minutes per side. Transfer chicken to a plate and pour off half the fat from skillet.

2. Return skillet to medium heat and add garlic, thyme, and red pepper flakes. Cook until fragrant, 1 minute, then stir in broth, heavy cream, sun-dried tomatoes, and Parmesan and season with more salt. Bring to a simmer, then return chicken to skillet, skin-side up.

3. Transfer skillet to oven and bake until chicken is cooked through (and juices run clear when chicken is pierced with a knife), 17 to 20 minutes.

Gooey Chocolate Mug Cookies

Serving Size for 1 Mug

Ingredients

1 tbsp. unsalted butter

1 tbsp. granulated sugar (or sugar substitute)

1 tbsp. dark brown sugar

1/2 tbsp. teaspoon vanilla extract

2-3 tbsp. chocolate chips

3 tbsp. all-purpose flour (or gluten free substitute) (If you use the gluten free flour it will not be as fluffy and firm when completed.)

1 egg yolk

Directions

1. Melt butter in your mug of choice.

2. Mix sugar, vanilla extract into melted butter, then add in egg yolk until all combined. 3. Mix in flour, ensure dough does not become crumble. 4. Add chocolate chips. 5. Microwave on high for 40 seconds, cookie should be spongy when you push down, not liquid. 6. Add a scoop of frozen yogurt for a healthy addition to the top!
