The Emergence of the Senior-Friendly Food Market in the Era of the Super-Aging Society

The transition to a super-aging society is a global trend. Korea is also expected to join this trend as the proportion of the population aged 65 or older is projected to increase from 14.9% in 2019 to 20.4% in 2025. According to the National Health and Nutrition Survey, the rate of inadequate nutritional intake among senior citizens aged 65 years or older in Korea is expected to increase from 8.5% in 2013 to 22.8% in 2021. This means that more than 2 out of 10 seniors have inadequate nutrition. Proper chewing, swallowing, and digestion of our food are crucial to our health. However, as we enter the senior generation, our chewing, swallowing, and digestive functions decline due to the body's natural aging process. This transformation has led to the emergence of a specialized food market catering to the senior generation within our food industry. This aligns with the ongoing global trend of healthy and ecofriendly K-Food rooted in traditional fermented foods. Recognizing the significance of this shift, the Korean government initiated the designation of excellent senior-friendly products in 2021. emphasis on catering to the needs of seniors. There is fierce competition among large enterprises, food companies, and startups to obtain product certification.

The inaugural certification was granted on October 29, 2021. Pulmuone Foods was accredited for four varieties of ready-to-cook foods, including "Chicken Broccoli" and "Cod Bean Curd," under the brand "Smooth Meal." Seo Chang Industry specializes in producing chicken and beef porridge under the label "SC Healthy Porridge." At the same time, Hyundai Green Food offers "Braised Pork in Soy Sauce" and "Braised Beef in Soy Sauce" under the brand "The Soft." Additionally, Green Family's "Dried Beef and Vegetable Wellbeing Porridge Premix" was among the ten products from four companies to receive the government's first aging-friendly excellent product certification. Love and Good Deed is the leader with 29 certified products, including "Soft Ready-to-Eat Soy Sauce Stir-Fried Pork" and "Rolled Omelet with Chives," certified on June 30, 2022. Approximately 40 companies, including Ourhome, Harim Industrial, and Shinsegae Food, are competing for recognition in this competitive landscape.

A decline in healthy lifespan and an elevated risk of chronic diseases are often observed in senior generations, particularly those aged 75 years or older. Consequently, senior-friendly foods have garnered significant interest from individuals with chronic conditions as potential substitutes for medication. Such foods are designed for patients who experience limitations or impairments in eating, chewing, swallowing, and digestion. In response to this demand, pharmaceutical and food companies have initiated several notable collaborations.

Ildong Pharmaceutical acquired Namyang Industrial and established Ildong Foodis. Ildong Foodis' products targeting older people include high-protein drinks, red ginseng extract, omega-3, and probiotics. Maeil Dairies established a medical food company with Daewoong Pharmaceutical. This

collaboration has resulted in the development of specialized nutrition meals catering to individuals with conditions such as diabetes and kidney issues and those requiring high-protein diets, alongside offering balanced nutrition.

Senior-friendly foods play a crucial role in assisting patients in hospitals and nursing homes. Shinsegae Food's specialized brand, Easy Balance, focuses on producing elderly-friendly food items. They manufacture a variety of side dishes tailored for individuals who encounter difficulties chewing food and distribute these products to hospitals and nursing homes. Furthermore, a number of other companies are offering senior-friendly food options to healthcare facilities, including CJ CheilJedang, Pulmuone Foodmerce, Maeil Dairies, Namyang Dairy Products, Dr. Chung's Food, and Daesang Wellife. These offerings cater to patients with various diseases, functional abnormalities, and chronic conditions typically associated with the elderly stage of life.

「㈱愛と善行」は2022年6月30日に「軟化式すぐに食べ られる醤油豚肉炒め」と「ニラ入り卵焼き」で認証を獲得 するなど、29種の認証製品を持っている認証製品保有数 1位の企業だ。ほかにも、「㈱OURHOME」、「㈱ハリム産 業」、「㈱新世界フード」など約40社が競いあっている。 75歳以上の後期高齢シニア世代になると、健康寿命が 縮み慢性疾患を患っている割合が高まる 。高齢者にや さしい食品は、この慢性疾患者の薬物代替材としても 注目されている。普通に食べて、噛んで、飲み込んで消 化する能力が低下したり、うまく機能しない患者が対象 となる。そのために、製薬会社と食品企業が協力する 例も目立つ。「ILDONG製薬」は「南陽産業」を買収し、 「ILDONG FOOD’IS」を設立した。ILDONG FOOD’IS は高齢者向けの製品として高たんぱくドリンク、紅蔘エ キス、オメガ3、プロバイオティクス含有製品などを発売 している。毎日乳業は大熊製薬との協力でメディカル フード会社を設立し、糖尿病食、腎臓病食、高た んぱく食などの特殊栄養食と均衡栄養食など を発売している。

高齢者にやさしい食品は、病院や老人 ホームの患者にも大きな助けになる。 「新世界フード」の高齢者にやさし い食品専門ブランド「イージーバ ランス」は、食べ物を噛むのが 難しい消費者を対象に様々なお かず類を嚥下食として製造し、 病院・老人ホームなどに納品し ている。「CJ第一製糖」、「プル ムウォンフードマース」、「毎日 乳業」、「南陽乳業」、「チョン食 品」、「大象(デサン)ライフサイエ ンス」などは、各種疾患及び機能異 常を持つ患者や高齢期の慢性疾患 者のために、高齢者にやさしい食品を 病院と老人ホームへ納品している。

Senior-Friendly Foods

Green Family Co., Ltd. is a leading Korean company specializing in senior-friendly foods. It was one of the first seven companies selected by the government on October 29, 2021, when it first designated excellent aging-friendly food products. As of April 28, 2024, it has 19 government-certified excellent aging-friendly food products. With this certification, Green Family ranks second among some 40 respected companies in Korea and proudly supplies nutritional porridge to over 200 nursing homes nationwide.

The company's flagship products include eight healthy porridge premixes. They include "Dried Beef and Vegetable Wellbeing Porridge Premix," made with beef, shiitake mushrooms, and carrots; "Mung Bean Wellbeing Porridge Premix," made with mung beans, brown rice, and mung bean extract; "Roasted 7 Cereal Powder Wellbeing Porridge Premix," made with barley, radish, and soybeans; and "Bean Curd and Dried Pollack Wellbeing Porridge Premix," made with bean curd and yellow bean paste. The other porridges include "Nut Powder Wellbeing Porridge Premix," made with almond flour and rice bran extract; "Sea Food Wellbeing Porridge Premix," made with shrimp powder and dried shrimp powder; "Red Bean Wellbeing

Porridge Premix," made with red beans and red bean paste; and "Spinach and Shrimp Wellbeing Porridge Premix," made with spinach and shrimp. All of these porridges are made with locally sourced rice. Each package of porridge weighs 500 g and serves ten people.

Green Family's products provide a significant portion of daily nutrients, providing approximately 25% by adding vitamins, minerals, and a rich blend of gamma oryzanol ingredients and inositol derived from rice bran extract. This nutritional supplementation is beneficial for children and the elderly with compromised immune systems, providing vital support for their overall health. Rice bran extract, rich in vitamins, minerals, octacosanol and linoleic acid, is concentrated in the germ and endoderm of rice and contains over 90% of the nutrients found in rice. This water-soluble substance is easily absorbed by the body, enhancing the nutritional value of the diet.

Brown rice is a nutritious early-season rice harvested in Boseong, South Jeolla Province, around August every year. It is rich in GABA, which improves health by improving the constitution and providing nutrition. Green Family's porridge has more than ten times the nutritional value of traditional white rice porridge. Its wide range of products includes 23 kinds of porridge premixes and six kinds of "3-minute instant nutritious porridge cups". Among them are eight types of "Wellbeing Porridge," five types of "Fermented Rice Porridge," three types of "Natural Taste," three types of "Milk Porridge," and four types of "Powdered Soup," in addition to the convenient "3-minute OK!" line. These standardized products promote taste and health, serving as ideal options for group meals or home meal replacements, and are offered at 30-40% lower prices compared to competitive products.

Green Family's porridge premixes are made from a blend of six essential nutrients, including domestically sourced new crop rice, brown rice and glutinous rice, supplemented with U.S. patented rice bran extract, skim milk powder, fermented milk powder and a spectrum of vitamins and minerals. The line features three salt-, sugar- and flavor-free varieties under the Natural Taste brand. These include "Pyogo Mushroom and Vegetable Wellbeing Porridge," made with dried shiitake mushroom powder; "Red Ginseng Wellbeing Porridge," made with domestic dried red ginseng powder; and "Crispy Rice Crust Wellbeing Porridge," enriched with a crispy rice crust.

代表製品である「ウェルビング粥フリーミックス」8種は、牛 肉とシイタケ、ニンジンなどを使った「牛肉味・牛肉野菜」、

緑豆、早稲米、米ぬか抽出粉などを使った「緑豆・香ばし い味緑豆」、麦、ハトムギ、豆などを使った「香ばしい味7穀 物」、豆腐と干しスケトウダラなどを使った「干しスケトウダラ ・すっきり味豆腐干しスケトウダラ」がある。アーモンド粉、米 ぬか抽出粉などで作られた「香ばしい味ナッツ類」と、エビ 粉末と干しエビの荒切りなどで作られた「海鮮エビ味海鮮」、

小豆と砂糖漬け小豆を使った「ほんのり甘い小豆」、ほうれ ん草とエビなどを使った「テンジャン・香ばしい味ほうれん草 エビ」粥などだ。これらの粥は、どれも韓国産の新米をベース としている。内容量は500gで、10人前を基準とする製品だ。

Trends in Senior-Friendly Food Production and Sales in Korea

We studied the trends in special nutritional and medical foods over the past three years to examine the production and sales dynamics of senior-friendly foods in Korea. The senior-friendly food category, a specialty food category until 2020, has been divided into special nutritional and medical foods since 2021. Special nutritional foods are carefully formulated by blending food and nutritional components for individuals who require special nutritional management. Special medical foods are designed to substitute for part or all of a meal when individuals require targeted nutritional supplementation, restriction or enhancement, including those with limited ability to normally ingest, digest, absorb or metabolize nutrients.

By the end of 2020, Korea had 183 domestic special-purpose food companies with a total production capacity of 2.89 million tons. This translated into a production volume of 69,000 tons, with a production value of KRW 284.2 billion. Domestic sales reached KRW 398 billion, with an export volume of 13.08 tons worth USD 18.77 million. The leader in domestic sales was Daesang Wellife with KRW 73.4 billion, closely followed by Maeil Dairies Products with KRW 72.8 billion. Notably, Ildong Foodis was the top exporter with USD 6.45 million.

By 2021, the landscape had evolved to include 179 companies specializing in special nutritional foods. With a production capacity of 3.07 million tons, they produced 71,000 tons of products valued at KRW 294.7

billion. Domestic sales surged to 73,000 tons, valued at KRW 427.5 billion, while exports reached 1,231 tons, valued at USD 13.8 million. Daesang Wellife ranked first in domestic sales with KRW 117.8 billion. Maeil Dairies ranked second with KRW 59.2 billion. Korea Jintao topped the list with USD 4.64 million in exports, followed by Namyang Dairy with USD 4.14 million, and then COSMAXNBT, Lotte Food, and Mother Love.

In 2021, there were 17 companies with a production capacity of 96,000 tons, a production volume of 2,500 tons, a value of KRW 6 billion, and domestic sales of 2,300 tons and KRW 12.1 billion. There were no exports. Daesang Wellife ranked first in domestic sales with KRW 10.6 billion, and Nature & People ranked second with KRW 800 million. Maeil Dairies, MS Biotech and Shinseon F&V followed.

In 2022, special nutritional foods were produced by 166 companies with a production capacity of 1.61 million tons, output of 23,000 tons, production value of KRW 203.5 billion, domestic sales of 21,000 tons, domestic sales of KRW 270 billion, exports of 1,209 tons, and export value of USD 11.7 million. In terms of domestic sales, Maeil Dairies led with KRW 46.4 billion, followed by Namyang Dairy with KRW 33.9 billion, Bebecook with KRW 27.2 billion, Food Care with KRW 20 billion and Lotte Confectionery with KRW 17.6 billion.

In terms of exports, Namyang Dairy topped the list with USD 49.3 million, followed by COSMAXNBT with USD 2.93 million, Lotte Confectionery with USD 1.77 million, Mother Love with USD 840,000, and Novarex with USD 360,000.

In 2022, the production capacity of special medical food was 2.14 million tons, the production volume was 69,000 tons, the production value was KRW 154 billion, the domestic sales volume was 65,000 tons, the domestic sales value was KRW 237.2 billion, the export volume was 543 tons, and the export value was USD 10 million. There were 58 companies. The leader in the domestic market is Daesang Wellife with KRW 191.5 billion; the second is Nature & People with KRW 18.4 billion; the third is Maeil Dairies; the fourth is Sunyang Food; and the fifth is Hanmi Science. In terms of exports, Korea Jintao ranked first with USD 9.53 million, followed by Maeil Dairies with USD 650,000, Namyang Dairy, Seokang Dairy & Food and SallyCook.

韓国における高齢者にやさしい食品の生産及び販売の動 向を分析するために、<特殊栄養食品>と<特殊医療用途 食品>の過去3年間の生産及び販売推移を調べた。2020 年まで特殊用途の食品項目に分類されていた高齢者にや さしい食品項目は、2021年からさらに細分化し、特殊栄養 食品と特殊医療用途食品に分けられた。特殊栄養食品と は、特別な栄養管理が必要な特定対象のために、食品と 栄養成分を配合して製造・加工したものだ。特殊医療用途 食品とは、正常な摂取・消化・吸収または代謝の能力が低 下している一般人や患者のために十分な栄養を供給する食 品と、一部栄養成分の制限または補充が必要な場合に、食 事の一部または全部を代替する 食品を意味する。

2020年末時点の韓国の特殊用途食品は、企業数183社 に生産能力289万トン、生産量6万9千トン、生産額2,842 億ウォン、韓国内での販売量3,980億ウォン、輸出量1,308 トン、輸出額1,877万ドルである。韓国内販売1位の企業は 「大象(デサン)ライフサイエンス」で734億ウォン、2位は 「毎日乳業」で728億ウォン。「南陽乳業」、「ロッテフー ド」、「BEBECOOK」がそれに続く。輸出では「ILDONG FOOD’IS」が645万ドルで1位となった。

500-Year Tradition of Growing

World-Class Red Ginseng in Punggi

Punggi, in Yeongju City, North Gyeongsang Province, has been famous for ginseng cultivation on the Korean Peninsula since the 1500s. Kang Sung-chan, CEO of Sobaek Insam Farming Association, manages 9.3 hectares of ginseng fields in the area with four other farmers who are members of the association. Over four decades of experience, Kang has honed his skills in cultivating top-quality ginseng. He was recognized as a certified "Ginseng Master" in 2010, solidifying his position as one of Korea's foremost ginseng experts. Drawing on his wealth of experience and knowledge, Kang has implemented several innovative techniques to improve the quality and yield of his ginseng. He strategically installed sunshades in his ginseng fields to improve ventilation and deter pests. He also carefully removed weeds around the sunshades to further reduce pest damage and carefully regulated the amount of light to help the ginseng adapt to high temperatures. As a result of these measures, Kang's ginseng has a robust texture and yields have increased significantly due to reduced pest damage.

Sobaek Insam Farming Association, which produces and exports world-class red ginseng products from Korea's representative "Punggi Ginseng," is also widely known under the brand name "Sobaek Korea." In the pristine area at the foot of Mt. Sobaek, the company produces red ginseng from ginseng roots grown for five or six years and uses it to make various red ginseng products for sale at home and abroad. Over the past five years, about 380 tons of ginseng have been used to make Sobaek Korea's products. About 75 percent came from Kang's ginseng farm.

The rest came from member farmers of the Sobaek Farmers' Association. This amounts to about KRW 5.5 billion. The company also exports ginseng harvested directly from the fields, known as susam, while distributing it domestically.

in the Food Industry

CES 2024, the world's most significant home appliance and IT exhibition, took place from January 9 to 12, 2024, at the Las Vegas Convention Center in the United States. With its theme of "All Together, All One," the event underscored the potential of integrating technologies, including AI, across various industrial sectors to address common human challenges. In light of growing interest in AI adoption across industries, the food sector is also witnessing heightened focus on automation and technology. Food tech in the food industry was featured as one of the top 10 trends at CES 2024, alongside AI, robotics, and mobility. This indicates a high level of anticipation for innovation and new technology within the food industry.

A notable highlight of CES 2024 in the food industry was the focus on technologies and companies

addressing the global food crisis and climate change. In particular, agtech technologies and companies have been in the spotlight. Agtech, a combination of agriculture and technology, refers to a technology or industry that applies advanced technology in agriculture to improve efficiency and increase productivity at stages such as production, processing, and distribution.

Among the domestic Agtech companies drawing attention is Midbar, which presented "Air Farm," a groundbreaking approach to cultivating vegetables in the air using eco-friendly farming techniques. This innovation, which earned the CES 2024 Best of Innovation Award, addresses the challenge of water scarcity with a system that gathers moisture from the air to irrigate crops within an aerial farming setting. This technology boasts an impressive water-saving potential of around 99% compared to traditional soil cultivation.

Top Table, which also won the CES 2024 Best Innovation Award in the Food & AgTech category, is a leading food tech company that has developed a 4D food printing system based on traditional 3D food printing technology. This system enhances food presentation by imprinting precise images or designs on food items and beverages. Top Table's 4D food printing system, "Ink," represents a revolutionary advancement in the field of nutraceuticals. This technology enables consumers to customize the size, texture, and nutritional content of their food. Unlike mass-produced, uniform products, this 4D food printing technology allows for tailored food items that align with individual preferences.

A number of companies exhibited Fourth Industrial Revolution technologies at CES 2024, including AIpowered food scanners and robots. Student startup Seawith has developed cultured meat made from seaweed, and KiloA from Doinglab harnesses AI to analyze food photos to determine nutritional information and food quantity. Samsung featured Bespoke, an AI-powered open and kitchen appliance brand. Robots were also on display, showcasing the active development and growth of food technology in Korea. These innovations demonstrate the dynamic growth and expansion of domestic food tech technology, which is poised to revolutionize the future food industry.

「CES(Consumer Electronics Show)」は世界最大の家電及 びIT展示会で、2024年のCESは1月9日から12日にかけて、米ラ スベガス・コンベンションセンターにおいて開催された。今年は「All Together, All One」というスローガンのもと、全ての産業分野にAIを含 む技術を適用し、人類共通の課題を解決することをテーマとして強調し た。全ての産業分野においてAI導入への関心が高まり、食品産業においても、 自動化及び技術化への注目が高まっている。CES2024では、AIやロボット、モビリ ティ等とともに食品産業のフードテックも10大トレンドとして選定され、食品産業の 革新と新技術の融合に対する高い期待感が表れた。

今回のCES2024において食品産業部門で注目を浴びたのは、世界的な食糧危機と気候変 動に対応する技術や企業だった。中でも注目されたのがアグテック技術とその企業で、アグテ ックとは農業(Agriculture)と先端技術(Technology)の合成語で、農業分野に先端技術を適用し 生産・加工・流通などの効率化を図り、生産性を増大させるための技術や産業を指す。

PROMOTION OF K-FOOD CONSUMER EXPERIENCE in Connection

With K-POP Festival

Korea Agro-Fisheries and Food Trade Corporation (aT), in collaboration with the Korea Tourism Organization (KTO), organized a K-FOOD consumer experience promotional event in connection with the K-POP Festival at Dongshan Music Square in Chengdu, China. This event, aligned with the local K-POP fan club festival, aimed to promote Korean agricultural products to fans familiar with Korean culture, offering an opportunity to introduce and experience various aspects of K-food and K-lifestyle to local Korean Wave enthusiasts.

Significant events included promoting through online social media, hosting a K-POP fan club festival, and operating a Korean agri-food experience booth. For the online promotion, popular local KOLs (Key Opinion Leaders) advertise the festival. At the same time, offline events featured K-POP performances, K-FOOD experience booths, and Korean food experience events such as making gimbap and playing games involving alcohol. The Korean food experience booth showcased various Korean products, including teas, noodles, beverages, alcoholic drinks, sauces, ginseng, and processed rice products. Alcohol and beverages, in particular, have become very popular among young people due to the variety of flavors and promotions aimed at young people.

Approximately 4,940 people attended the event, and visitors' interest in Korean food products increased significantly, with favorability rising by 47.72% and purchase intention by 75.53% before and after the event. The early development of grain-based dishes such as rice cakes, rice and porridge was influenced by Korea's agricultural heritage. Historical records indicate that porridge was consumed before the Goryeo Dynasty and was featured in various cookbooks during the Joseon Dynasty. There are around 40 types of porridge in Korea, each made by mixing different ingredients with grains as the main ingredient. In addition to rice porridge, porridge with multiple ingredients such as Job's tears, red beans, beans, mung beans, pine nuts, walnuts, chicken and pumpkin have been developed. Chaesojuk (vegetable porridge) is a basic Korean porridge made with rice and can be served with a variety of vegetables. Not only is it flavorful, but it also provides essential vitamins, minerals, and fiber, making it a nutritious meal choice. Its soft texture makes it particularly suitable for older people who may have difficulty chewing, adding to its appeal as a nutritious meal option.

180 g rice

1/2 onion

10 g scallions

30 g carrots

30 g zucchini

Instructions

2 Tbsp sesame oil

2 Tbsp pepper

2.5 Tbsp salt sesame seeds

1. Soak the rice in water for 1 hour.

2. While the rice is soaking, finely chop the vegetables.

3. Add sesame oil to the pot and stir-fry the soaked rice well, then add 1.2 liters of water. Bring to the boil over a high heat.

4. When the water comes to the boil, add the chopped vegetables and stir well until the water has reduced slightly.

5. When the vegetables are cooked, season with salt and pepper. Finally, sprinkle with sesame seeds.
