Unconditional Cabin Conditions

PH OT OG RA PH BY U NIT ED AI RL I NE S CR EAT IVE S ERVIC E S

In addition to maintaining the safety and reliability of United’s fleet, senior vice president Jim Keenan is responsible for keeping the cabins in top condition. // BY AARON GELL WHAT DOES IT TAKE to keep a commercial widebody jetliner clean and the myriad seat and other features in working order? In an effort to find out, more than 100 volunteers from across United’s various divisions filed into a maintenance hangar at Chicago’s O’Hare International Airport one afternoon last year. Each participant received a pair of purple latex gloves, a supply of cleaning products and detailed instructions from a member of United’s cleaning crew. Then they boarded a pair of 747s—one just in from Narita, the other from Hong Kong—and set to work. The unique event was designed to highlight the company’s redoubled efforts to ensure that cabins are clean and that

R1.HEM_0110_Voices.indd 1

seating and other equipment, from the tray tables to the inflight entertainment system, are in good working order. Those wielding sponges included a number of United’s top executives (folks normally more accustomed to spreadsheets than spray bottles), among them Jim Keenan, the airline’s affable senior vice president of the worldwide maintenance division, called United Services, who just seven months into his tenure was busily cleaning things up in more ways than one. “The big takeaway for everyone involved was that making sure a cabin meets our customers’ expectations is hard, detailed work,” Keenan says, now sitting in his office at United’s maintenance base adjacent to San

Franciso International Airport. “We knew we had to improve.” Keenan and his experienced teams are also responsible for the numerous cabin remodeling and condition improvements currently underway. At the top of the list are the new first and business class cabins on United’s Boeing 767s and 747s, incorporating new lie-flat seats, improved on-demand entertainment and large, flat-screen monitors—a truly luxurious experience, Keenan notes, that’s paying off with customer satisfaction ratings nearly double those before the modifications. The same work on the 777 fleet will begin this year. In addition, the reconfiguration of 56 Airbus planes—including installing

first-class cabins and leather seats throughout—as well as new carpet and other enhancements, was recently completed. “We’re springboarding off of these successes to bring cabin improvements to virtually all of our airplanes,” Keenan says. At the core of Keenan’s responsibilities is oversight of United’s global maintenance and engineering operation, which contributes significantly to the airline’s reliability performance and safety, its No. 1 priority. United Services comprises a network of industryleading maintenance facilities at or near more than 95 airports around the globe, providing 24/7 maintenance, repair and overhaul services not only to United’s fleet but to those of other airlines. “We even perform the maintenance and overhaul of the Air Force’s F117 engines, which power the C17s that ferry troops overseas,” Keenan adds. “That’s a sacred trust, and something we all take an enormous amount of pride in.” The decision to bring the cleaning function under his division’s purview elevated the importance of the task within the company and the discipline with which United approaches it, Keenan explains. And the change is paying off. The feedback United is receiving from its customers—actual ratings via

exclusive environmentally sensitive formulations. This success would not have been possible, Keenan says, without the support of many teams within the airline, which worked together to adjust flying schedules so that intensive cleanings and necessary repairs could happen more often. “We’ve been strategic about how we’ve deployed our cleaning and cabin-repair teams throughout the cities we serve, which has enabled us to dramatically increase the frequency with which we accomplish those tasks,” he explains. Even with all the efforts being undertaken by the airline to improve the overall condition of its aircraft interiors, Keenan emphasizes that customers, too, have a role to play. “We fully understand

“Bringing the cleaning function under [the maintenance division’s] purview elevated the importance of the task within the company and the discipline with which United approaches it... and the change is paying off.” an online survey—shows a threefold improvement over the past year alone. “We know we have more to do, but the transformation that is well underway is a real testament to the professionalism and commitment of United’s people,” Keenan says. Better yet, he notes, this success has been achieved with specially created cabin-cleaning products, which recently won the Environmental Protection Agency’s Design for the Environment (DfE) certification for their

R1.HEM_0110_Voices.indd 2

that someone might have a burned-out dome light or a headset plug that doesn’t work and he or she may just be inclined to keep quiet,” he notes. “But we really do need our travelers to notify our flight attendants whenever they notice something amiss.” A big part of the airline’s efforts is a rigorous process in which the flight attendants and cabin maintenance teams work closely together to log and prioritize nonworking items, Keenan

emphasizes, which helps his teams to fix the issues as soon as possible. “The more in-the-moment feedback we receive from our customers, the more we can do to make their next experience with United that much better,” Keenan adds. Keenan, 45, who lives in the Bay Area with his wife and two teenage sons, has been fascinated with aviation since childhood. “It sounds corny, but I grew up in the hills near the San Francisco airport, and I spent a tremendous amount of time watching airplanes take off and land. It was part of the reason I elected to study mechanical engineering with a focus on aerospace.” After joining United Airlines right out of college, Keenan spent 14 years at the company before moving to Pratt & Whitney for several years, during which time he got to experience United as a Global Services customer. “That gave me a solid understanding of the travel experience from the perspective of a premium customer,” he says. Having learned the importance of that firsthand experience, he now flies United more than 100 times a year. “We have to be very tough on ourselves in terms of maintaining the highest expectations.” Which isn’t to say he’s complaining. “I have the greatest job in the world,” Keenan says. “Not only do I get to work around airplanes every day, but I get to work with people who have an equal passion for continuing the proud tradition of United Airlines. We are the stewards of what I consider the proudest legacy in commercial aviation history.”

Cleared for Takeoff FOR THE MORE THAN 200,000 travelers who choose United Airlines each day, a pleasant travel experience is, quite simply, the intersection of safety, reliability, comfort and courtesy. To that end, United has invested tens of millions of dollars this year in our cabins, our airports, our products and our employees. And customers tell us they like the results. Yet, we think there’s more to do. On December 8, United announced a significant investment—an order for 25 Airbus 350 XWB aircraft and 25 Boeing 787 Dreamliners with options for 50 more of each. These advanced aircraft will provide United’s customers with a significantly improved travel experience, with larger windows, more overhead bin space, improved lighting and a sense of greater relaxation as a result of cabin-pressurization improvements. Delivery is expected between 2016 and 2019.

R1.HEM_0110_Connex.indd 1

Both new widebody aircraft types— with their smaller size, longer range, and lower operating costs—will enable United to serve a broader range of international destinations. The A350, for example, has a range 11 percent greater than United’s B747, and the B787 has a range 32 percent greater than the current B767. United’s network of U.S. hubs will allow for more nonstop service throughout Europe, Asia and the Pacific, Africa, and the Middle East. These next-generation airplanes will

also reduce fuel consumption, carbon emissions and, with quieter engines, the noise inside the plane as well as the impact to communities around the airports we serve. The new aircraft also promise greatly enhanced workplaces for our onboard crews, including state-ofthe art cockpits with advanced avionics, more service-friendly galley spaces and other features. We’re looking to the future. And with new airplanes, it’s the next generation of United.

United’s order of Airbus 350 and Boeing 787 Dreamliner aircraft is a significant statement of commitment—to our customers, for both their onboard experience and future markets served, as well as our employees and our shareholders.

perfectly still along a hushed and snowy road in Wisconsin’s Northwoods. He cups his hands over his mouth and breaks the silence with five plaintive, pitch-perfect wolf howls. Hearing the call of the wild After a pause, he lets out five more, louder this time. ILLUSTRATIONS BY GRAHAM ROUMIEU Wydeven is the extremely hands-on director of Wisconsin’s Wolf Management Program, and though no wolves howl back tonight, oftentimes they do—usually pups left behind as their parents hunt, or adults warning others not to tread on their turf. These “howling surveys” help gauge the size of the local timberwolf population. Since 2003, Wisconsin’s wolves have bounced on and off the endangered species list six times. According to Wydeven’s howling surveys, their numbers are currently at a robust 650. “It’s pretty exciting knowing that you’re communicating with another animal in its language,” says Wydeven, who learned how to howl with the help of timberwolf recordings that he played on his car stereo and practiced for years in the privacy of his shower. In 1990, having spent two weeks howling for the state, he received his first response. “I felt like I really developed a rapport with this other animal,” he recalls. “It was magical.” Sometimes, however, howlers accidentally develop a rapport with other survey groups, who wind up calling to each other in the darkness. And on rare occasions, a howl can become something of a human mating call. Wydeven met his wife when she took a course he taught on wolf ecology. After class one day, he asked if she wanted to go howling. “How’s that for a pickup line?” he says with a grin.—EMILY STONE

PLAYING DRESS UP

European-Chinese relations seem to be hitting a high note on a fall afternoon in Brussels, as workers carefully dress a statue named Julien— the so-called “first citizen” of Belgium—in a traditional red leather Chinese outfit crafted by the finest tailor in Haining, a town in Zhejiang Province. As a brass band plays and Haining’s vicemayor beams before a large crowd, a Brussels councilman declares the outfit “one of the most beautiful costumes Julien has ever received.” And that’s saying a lot, because Julien has worn many outfits—at last count, more than 820, many of which are on display at the city museum. On some days he’s a butcher, others Christopher Columbus, a Roman emperor or Mickey Mouse. Better known as Manneken Pis (which means “little boy peeing” in Dutch), Julien is a two-

R2.HEM_0110_Dispatches.indd 2

foot-tall bronze figure representing a little boy urinating into fountain on Rue de l’Etuve; he’s also the most famous landmark in Belgium, a tiny, 390-yearold cherub surrounded by gawkers toting digital cameras. Sort of the Bart Simpson of 17th century Belgium, Julien is based on several folkloric tales that involve a quick-thinking young lad thwarting a siege of Brussels by dousing the attackers’ lit fuse. Say what you will, but to the thousands of municipalities and trade unions around the world that petition Brussels to dress Julien in their favored garb, he may be the most soughtafter mannequin since Twiggy. “We’re so proud of little Julien,” says a beaming Belgian bystander at the Haining ceremony. “Just by wearing clothes, he makes the world a better place.” —GILLIAN TELLING

Operating an industrial milling machine is hard work, but the lemony Los Angeles sun is so mild this morning that Travis Paternostro, a stocky stonemason, has barely broken a sweat. Working the device in a roped-off section of Hollywood Boulevard’s Walk of Fame, Paternostro is grinding to a shiny finish a three-foot square of terrazzo paving block that he mixed and laid himself just yesterday. “I always take care of the stars personally,” Paternostro says, his graying black hair coated in stone dust. “It keeps up the family tradition.” Last year, an estimated 20 million people walked all over the handiwork of Paternostro and his forebears. They’ve also had their pictures snapped as they knelt on and fitted their palms into the handprints left by celebrities. For nearly 50 years, the Paternostro family has crafted the brass stars that line this 3.5-mile stretch of sidewalk. There are 2,393 stars’ stars in all (plus a few for companies including L’Oreal, and minus those that have been stolen, such as Gregory Peck’s). The first celebrated actress was Joanne Woodward; Paternostro’s grandfather, Biaggio, did the honors in 1960. Today’s addition is Full House and ER heartthrob John Stamos. “I got up early this morning and welded the name and the star design from brass,” Paternostro says, mopping his brow. Each square on the Walk is made from an aggregate of marble, coral, seashells and glass (“Sometimes you can see the labels from old beer bottles”) and then blended with either cement or epoxy. Every year, an average of 24 stars are awarded to celebrities eager for this heavily sought-after piece of Tinseltown immortality. While the price of fame itself is incalculable, a place on the Walk will set Uncle Jesse’s supporters back a cool $25,000. “I guess they thought it was worth it,” says Paternostro, turning back to his grinder. —JAMES BARTLETT Los Angeles

Bangkok

THAT SINKING FEELING

Bangkok was once called “The Venice of the East,” a reference to the days when boatmen paddled the local version of gondolas through the sprawling Thai capital on a vast system of canals. In coming decades, both cities are in danger of disappearing underwater. Though an international effort to shore up Venice has been under way for years, notes Anond Snidvongs, one of Thailand’s top disaster specialists, “I’m more worried about Bangkok resembling Atlantis.” With increasing regularity, heavy rainstorms turn flood-prone Bangkok thoroughfares into soupy canals, often in just an hour.

Most locals tolerate the flooding with typical Thai aplomb. As floodwaters rise, swarms of kids can be seen bobbing playfully around cars, occasionally catching confused fish. However, the deluges are a portent of something less whimsical: According to the kingdom’s National Disaster Warning Center, by 2030 much of the Thai capital will be five feet below the surface. The culprits include inadequate drainage, uprooted coastal plant life and rising sea levels. But the most significant factor? The entire city is slowly sinking. Originally built on a soggy marsh, Bangkok over the centuries has added layers of concrete and steel, not to

mention roughly 8 million inhabitants. All that weight, experts say, is slowly pushing Bangkok into the marsh. The flooding will increase by about 2.5 feet every decade, Snidvongs predicts. The Thai government is considering a massive “Wall Around Bangkok” project to

hold back the tides, but for now the floods remain a soggy headache, choking traffic and sending street vendors fleeing. The local kids, however, are making the best of things. After all, where else can you go fishing with your bare hands in the middle of the street? —PATRICK WINN

Kitzbühel, Austria

On a bright day in early autumn, a notably well-dressed herd of cows wends its way through the mountainous Austrian village of Kitzbühel. After a long summer spent grazing fresh grass in the high-altitude meadows, where everything from precarious cliffside trails to lightning strikes poses real risk to hoof and limb, the cows come home to lower fields. It’s a rare season when every last one somehow survives, and on those occasions the villagers hold a raucous, spangled cow parade called the Almabtrieb. “The cow train is a celebration and a thank-you to God,” says farmer Nik Filzer. “We haven’t had one for twenty years.” The parade begins at dawn, after the hair-raising overnight descent. At a staging area outside town, farmers dress their brown-and-white heifers in century-old bells and heirloom leather headpieces bearing images of saints or German sayings. Finally, each ruminant is wreathed in colorful paper flowers. At noon the slow stampede arrives in town. Surrounded by beer-quaffing crowds, the cows—some 200 head— make their way slowly through quaint squares, past stately churches and designer boutiques gearing up for ski season. The clanging of the bells is deafening, but the crowds greet the parade with even louder cheers, perhaps in anticipation of the sweet milk, chocolate and savory cheese they’ll sample this winter. As for the bovine guests of honor, they seem mostly indifferent despite their finery.—RICH CARRIERO

What a Dish! The Dogleg Diner is where style-concious canines keep their kibble. BY ADAM K. RAYMOND // PHOTOGRAPHS BY JOHN LAWTON

Doca Pet’s Dogleg Diner is the food bowl your dog would buy if you put the little guy in charge of such things. Designed by Luke Wong, who typically creates furniture for humans, the Dogleg Diner keeps two bowls aloft, so small pups like Bobby (above) don’t have to strain their neck muscles at chow time (apparently, that’s a problem). More important, though, the Dogleg Diner looks fantastic. And with scratch-resistant powder-coated steel legs and a nonskid rubber bottom, it’s sure to stay that way. The Places I Go: Jelena Jankovic “IN BEIJING, I usually stay at the

Shangri-La. It’s really beautiful and quite big, and it has a great gym and a wonderful restaurant. You know, Chinese food is a little...different. Once, at another place, I ate a snake! It wasn’t exactly what I’m used to. Very chewy, but interesting. “I try to visit Beijing at least once a year—and I went for the Olympics last year. At this point, I’ve seen all the attractions including the Great Wall, the Forbidden City and Tiananmen Square. Now I mostly shop when I’m there. You can get everything: fashion, beautiful silks, electronics. The markets are just amazing.”

Start your Singapore sprint with a glass of well-priced Moët at the New Asia Bar (2 Stamford Rd.; swissotel.com). Located on the 71st floor of the Swissotel, it’s the highest bar in Singapore and has a view worth toasting. ( 0:30 ) Take a walk to the river for some historical perspective. Admire the waterfront statue of Sir Stamford Raffles, the man who founded Britain’s settlement in 1819, and pop into the Asian Civilisations Museum (1 Empress Pl.; acm.org.sg) to learn about those who inhabited the island before Raffles arrived. ( 1:10 ) Catch a taxi to the bustling Lau Pa Sat (Boon Tat St. at Shenton Way; laupasat.biz) market to taste Singapore’s wonderfully jumbled cuisine, which borrows from Malay, Chinese, Indonesian, Indian and Western cooking. Loosen your belt for a smorgasbord of cheap-as-chips favorites, like Hainanese chicken rice, fresh spring rolls and “carrot cake,” which is actually made from radish and fried egg. What’s up, doc? ( 1:50 ) Scurry over to trendy Club Street and catch your breath in the Screening Room’s rooftop bar, which overlooks Chinatown’s quaint shop houses. Then think ahead and grab some inflight reading at Books Actually (5 Ann Siang Rd.; booksactually.com). ( 2:20 ) You’re in prime souvenir-hunting territory now. Wander down Pagoda and Terengganu Streets and haggle for a tea set and Merlion T-shirt (the fish/lion icon of Singapore). Then check out the impressive Buddha Tooth Relic Temple (288 South Bridge Rd.; btrts.org.sg). Holy molar! ( 3:00 ) Slip off your sandals and enter the nearby Hindu temple, Sri Mariamman (244 South Bridge Rd.), home to an annual fire-walking festival. There’s just enough time to make an offering to appease the resident goddess of disease and rain, as you hope both will hold off for the next two hours. ( 3:15 ) Take a taxi to the Long Bar at Raffles Hotel (1 Beach Rd.; raffles.com), and slurp down a Singapore Sling. Countless tourists make this pilgrimage to revel in colonial grandeur and drink the cocktail in its birthplace. Who are you to argue? ( 4:00 ) End your trip where so many before you have ended theirs: the red-light district. Hail a cab to No Signboard Seafood (414 Geylang; nosignboardseafood.com) and soak up the gritty atmosphere, along with plenty of spicy-sweet sauce with fried bread. Finish up with some love-it-or-hate-it durian from a nearby vendor, and find out why, by law, this pungent fruit is not allowed on city buses. ( 5:00 )

Weekend Update Well-heeled indie darlings Vampire Weekend stake out new territory on their sophomore effort, Contra. BY K. LEANDER WILLIAMS THE FOUR IVY LEAGUERS in Vampire Weekend know people want to dislike them. They’re making the rock star thing look too easy. A year before their selftitled debut was released in 2008, when they were fresh out of Columbia University, they’d already become favorites of the blogosphere. With the Vampires’ peach-fuzzed faces and penchant for V-neck sweaters, it’s not hard to see why more than one culture watcher predicted public opinion would turn against the band’s brainy, danceable, panglobal rock. “It gets complicated when people read about you before they actually hear you,” says keyboardist/singer Rostam Batmanglij. “With the first record, we realized that sometimes even the favorable stuff written about us had an odd cast, kind of ironic or detached.” Even so, the backlash never really arrived, and judging by the giddy anticipation of Contra, the band’s followup, it never will.

R2.HEM_0110_Sound.indd 1

On the new record, VW again combines sunny pop with sinewy rhythmic and melodic flourishes culled from abroad, most notably the U.K. and Africa. Where the first disc pondered

ALSO THIS MONTH What else to listen to on the go in January

things like etiquette and mansard roofs, the opening track on Contra rhymes “horchata,” a popular Latin American beverage, with “balaclava.” They somehow draw upon even more global influences without sacrificing their Manhattan breeziness. On the surface, at least, much of the credit for VW’s sonic signature goes to singer-frontman Ezra Koenig, whose reedy voice is a marvel. Though often thin as paper, it’s equipped with a catalog of hefty hollers, all of which offset Batmanglij’s perfectly calibrated string arrangements. Recently, however, a respected rapper suggested in the New York Times that it’s actually bassist Chris Baio’s rubbery lines that pull in fans from unexpected quarters. “He got into us after hearing us on the iPod of his manager’s son,” remembers Batmanglij. Listeners may not be as excited about that endorsement by Ghostface Killah, nor will they likely untangle the disc’s various influences, from Bollywood to the Hallelujah Chicken Run Band. A collection of references and brainy tricks is always impressive, but a great record connects with an audience on an altogether more visceral level—i.e., it rocks—and in that sense, Contra more than qualifies. K. LEANDER WILLIAMS

will always cherish

his Brooklyn breeziness.

Still getting by with help from old friends (Paul McCartney, Joe Walsh, Dave Stewart) and new (Joss Stone, Ben Harper), the nerdiest Beatle churns out hard-driving stadium rock—and it works.

I love her!” one viewer gushed of Berkeley prof Marian Diamond’s talk on functional anatomy. “After watching a video of dog tricks, it’s nice to actually learn something,” notes Swarthmore College psychology professor Barry Schwartz, a veritable star of the genre, whose lectures have more in common with George Carlin’s biting social satire than the dry talks more typically heard in university classrooms. “Ideas that challenge the way we commonly think” get viewers excited, says Peter Hopkins, president of Big Think, which produces videos with professors and other experts. Like TED. com, which posts clips of addresses given at the annual Technology, Entertainment and Design conference, Big Think is part of a new wave of slick sites working the lecture circuit. The most popular online talks—like Berkeley professor Richard Muller’s series on “Physics for Future Presidents,” which has had around a half-million views on YouTube—have certain common traits: uncanny comedic timing, social relevance and clever visual aids. and sharply incompatible, narrative accounts of Lim’s life and times. Now with Map of the Invisible World, Aw conjures the revolutionary ferment of Indonesia in 1964, as the national unity imposed by socialist leader Sukarno dissolves into the chaos that will set the stage for the Suharto regime’s brutal rule. The novel centers on Adam De Willigen, a rural Indonesian orphan trying to locate his adoptive father, a Dutchman who was jailed by Sukarno’s military police in a sweep of Communists. A clutch of other emigrés— an American anthropology professor, an Australian journalist, a U.S. embassy official—get caught up in Adam’s search, which triggers a series of unexpected revelations about the characters’ adopted homeland and their own roles in the rapidly vanishing colonial order. The goal of the novel, the author explains, was to examine the region’s quest for an identity. “From 1500 to 1950, our history has basically been that of a colonized country,” he says. “So in a sense it wasn’t entirely ours. We were still trying to figure out who we were.” To some extent, the answer may always be elusive. Indonesia, Aw points out, “is a loosely knit association of very different cultures. If you just take the major islands—Java, Sumatra, Bali—they’re completely different, linguistically, religiously, ethnically.” The 38-year-old novelist, who was educated in England, was spared the more barbed kinds of personal and political reckonings his characters face. But while pursuing his first career, as a corporate attorney, he found he had to grope his way toward his literary vocation in stages. “I’ve always wanted to be a writer,” he says, “but no one tells you how to be one.” His problem with practicing law, Aw adds, was that he became too busy. “What you do from day to day ultimately becomes your reality,” Aw says. “So it got to the point when, even though I was writing The Harmony Silk Factory, I started to think of myself as an attorney. “That was the moment,” he adds with a laugh, “I realized I had to stop.” Bookforum editor CHRIS LEHMANN is still groping his way toward his literary vocation.

Finding renewable energy sources could go a long way to reducing conflicts.” MOTIVATION • A recent University of Chicago graduate, Azrielant was having drinks with college friends Jeff Bladt (the project’s expedition leader) and Andrea Fjeld (social media editor). “I had gotten a job at McKinsey & Company, and Andrea was working at an ad agency. We were talking about how we wanted to do something good for the future of the world—not just our own futures—while we could.” Though it started as a last fling before corporate life, Azrielant says, “This has been kind of a life-changing experience. We’ll see where the road takes us.” MOST ANTICIPATED DESTINATION • “I’m really excited for Iranian cuisine,” Azrielant says. HOW TO HELP • “Just follow our project,” Azrielant says. “Read our blog, project-evie.org.” Want to do more? Make your next car electric.

Raising the Bar

A San Francisco chocolatier mixes science, low-tech machinery and pure democracy in its quest to make the perfect candy bar. // BY JANE BLACK

I’VE MADE SERIOUS SACRIFICES for a free box of chocolate (don’t ask). But in this case, all that’s required is my opinion of the product. The goods—two bars wrapped in silver foil—arrive via FedEx directly from the chocolatier, a tiny San Francisco outfit called TCHO. I break off a piece of Sample A and let it melt on my tongue. It has a hint of peach and bright currant

notes. Then I log onto TCHO’s website and open a confidential survey. Question number one: “Please rate the sweetness.” I enter three out of five, which means just right. After several more questions, I move on to Sample B. Wow—way too sweet. I mark it a five. BUNCHA SQUARES This batch of TCHO chocolate tastes better than the last.

It turns out the two chocolates are all but identical. They are made from the same Peruvian beans, with the same amount of sugar. The only difference is a touch of vanilla. “A minor tweak can have a huge effect on flavor,” says Timothy Childs, TCHO’s cofounder and chief chocolate officer. “If the majority of the people say they like the one with

GOOD VIBRATIONS One company looks to ancient beliefs to improve the chocolate-eating experience.

The noble eightfold path of Buddhism preaches detachment from worldly cravings, and it makes no exception for chocolate. So it might seem a bit odd that Intentional Chocolate, a Hawaiian company, employs Buddhist monks to infuse their product with good vibes. Here’s how it works: The monks project positive thoughts, which are collected by a “special device” and later transmitted to the chocolate during manufacturing. Supposedly, this treated chocolate will improve the overall well-being of the person eating it. Can jelly beans do that?

Rossetto was the founder of Wired magazine. And the beta testing is only the beginning of TCHO’s tech-heavy approach. For instance, there’s a special iPhone application that, among other

unrivaled El Rey), the country of origin never assures consistency, or even a product superior to, say, the average chocolate bunny. Even Venezuela can produce substandard beans.

A former NASA researcher and a founder of Wired magazine join forces to make the perfect chocolate. things, lets Childs remotely control roasting times and temperatures at the company’s flavor lab on Pier 17 along San Francisco’s Embarcadero. “We have reexamined every part of the process and asked, Where does it make sense to do things differently?” he says. To start, TCHO is reinventing the way sweet-tooth consumers classify chocolate. Until recently, there were only two kinds: milk chocolate and dark. And most people, Childs jokes, believed that the stuff came from a factory somewhere in Switzerland. In the 1990s, that began to change. Artisanal producers started to advertise single-origin chocolates from Ghana, say, or Venezuela. They slapped percentages on labels to indicate how much pure cacao each bar contained. The higher the percentage, the thinking went, the more real chocolate flavor. A worthy effort, and one that makes sense. But how important is that 70 percent–pure designation in the taste? Actually not very. And does saying a chocolate is from Venezuela guarantee a quality product? Nope. While there are certainly some great chocolates made from Venezuelan beans (particularly the

The truth is, most of this is marketing. To cut through the jargon, Childs has coupled his cutting-edge innovations with a simplified classification system and some surprisingly low-tech machinery. When his beans arrive from Ecuador at his Embarcadero lab, he roasts a small test batch in a highly customized Ronco turkey roaster, controlled by that iPhone app. The bean grinder is an off-the-shelf Indian curry maker, which is attached to a $20 hairdryer from Walgreens. The finished product is stamped with a “flavor wheel” made up of straightforward descriptions of the cacao beans used in the bar: Chocolatey, Fruity, Nutty, Citrus, Earthy and Floral. Rossetto and Childs are replicating TCHO’s high-tech-meets-low-tech process closer to the source, in Peru and, later this year, in Ecuador and the Dominican Republic. Along with the roasters and grinders, TCHO equips its farmers with digital weather stations to help make harvest decisions and temperature probes to monitor the beans’ fermentation. They also encourage the farmers

vanilla, the next iteration will have vanilla. Then we’ll send out more and dial in the exact amount of vanilla until it’s perfect.” Modern food manufacturers have long used surveys and focus groups— not to mention the blunt edge of industrial science—to figure out what people like. How else would we have ended up with Combos or Lunchables? But it’s rare indeed for a boutique chocolatemaker like TCHO (pronounced cho) to employ the same principles of science and polling. Small producers, especially those who cater to foodies, pride themselves on their decidedly anti-empirical, artisanal methods. A good rule of thumb for a company that wants to stand out in the foodie marketplace: less science, more craft. TCHO’s approach makes more sense given the backgrounds of its two founders: Childs started out as a researcher at NASA and went on to develop 3-D online worlds in Silicon Valley, and chief executive Louis

to become more involved. Unlike their counterparts working for other companies, TCHO’s farmers actually sample the final product. “Most cacao growers have never tasted the chocolate that is made with their beans,” Childs says. “I’m trying to democratize the process of making chocolate. Giving farmers the chance to actually taste it helps increase their understanding and improve quality.” The same goes for tasters here at home. Which is why for the company’s first chocolate bars—TCHO version 1.0—it embraced the principles of opensource software development: The more people involved, the better the product. In December 2007, TCHO started selling $5 samples of chocolate on its website and invited buyers to send feedback. It received more than 4,000 responses, which it used to create TCHO’s first products, called “Fruity,” “Nutty,” “Citrus” and “Chocolatey,” which is a sultry, silky and profoundly dark bar. The broad sample is a key to Chocolatey’s success. But for version 2.0, TCHO has limited its tasting circle. That’s how the FedExed box ended up on my doorstep. The company invited 120 chocolate experts, food writers and bloggers to participate in a “longitudinal” tasting, which means testers taste one version (1.9A and B, in my case), file comments, then receive a second round that incorporates their feedback. “Reading the comments for Chocolatey, it became clear that some people had better palates and were better tasters,” Rossetto says. For example, one person might say, “The hazelnut notes were overwhelming,” while another might wonder, “Where’s the hazelnut?” “Now we can track what a particular taster thinks of the changes from generation to generation. And we can tell if we are satisfying the feedback they’ve given us.” The results may not please everyone, of course. In the samples of Fruity and Nutty that I tried, I preferred the bar without any vanilla. Most testers, it turns out, go the other way. Indeed, the final bars don’t always satisfy Childs’ palate, either. “The process has helped

me to dial in my palate to those of our customers,” he says. Fruity and Nutty 2.0 will be released early this year, which is when TCHO’s Pier 17 factory opens to the public. Visitors can learn how chocolate is made, then tour the shiny grinders, roasters and refining and tempering machines. Finally, they enter the tasting room, where they’ll be invited to help develop the next TCHO chocolate. If you go, tell them exactly what you think. Believe me, TCHO wants to know. Washington Post food writer JANE BLACK used to prefer fruit to chocolate. Not anymore. JANUARY CROSSWORD ANSWERS

THE CENTER FOR REGENERATIVE MEDICINE

A NON-SURGICAL TECHNIQUE TO FIGHT AGAINST ARTHRITIS AND SPORTS INJURIES

Located at 9573 Harding Avenue, Miami Beach, Florida, The Center For Regenerative Medicine includes a team of professionals that are dedicated to improve your quality of life, paving the way to enhance the science of non-surgical orthopedic medicine. World champions, sports legends, professional and amateur athletes, dancers, and people with just plain pain and arthritis go to The Center For Regenerative Medicine for non-surgical orthopedic care. Using the facility to improve their condition, thousands of successful cases have been treated over the past nine years.

The Knee Diaries: SJ is a 60-year-old male with bone on bone osteoarthritis of the left knee. An X-ray showed arthritis of the knee (X-ray on the left). Patient started receiving treatments at The Center For Regenerative Medicine. Today he is feeling better (X-ray on the right). This is how it works: The physician introduces Cell Therapy into damaged, arthritic cells by means of a precise injection. This process is followed by infrared laser as well as several other modalities including Collateral Artery Flow Exercises (C.A.F.E.), in order to accelerate the process. Depending on tissue damage, severity of the condition and the size of the joint that needs to be injected, people usually need a series of 1 to 6 treatments to improve. There is usually no down time, and people can go back to their usual activities or work immediately. The treatments can help most musculoskeletal problems such as low back pain, neck pain, knee pain, shoulder pain, whiplash, sciatica, tendinitis, sprain, strains, torn ligaments and cartilage damage.

Bowled Over Every year, the NFL’s big game is played in a sunny, neutral location in front of corporate junketeers. It’s time to let the top team—and its craziest fans—play host. BY JASON GAY // ILLUSTRATION BY JOHN CUNEO EVERY SPORT IN THE WORLD has its Big Game. But in the United States, there really is only one: the Super Bowl. From the torrent of media hype to the parade of grizzled football veterans to the comically high television ratings—almost 100 million viewers in the U.S. alone— the Super Bowl makes everything else (NBA finals and World Series game sevens, U.S. Open Finals, the Masters) look like a festival of obscure European art films. You have to go global—the Olympics or World Cup—if you want to compete on magnitude, but of course, neither of those events will ever feature the comedic stylings of Bill Belichick. I love the Super Bowl. Love the hype, love the game, love the overbaked halftime show, and love the social acceptance of eating 39 chicken wings in a single sitting. But I have a beef: Why is the most important sporting event of the calendar always played in a dispassionate, indifferent city? It’s the planet’s most watched game, played in

R2.HEM_0110_Sports.indd 1

front of the planet’s most ambivalent live audience. It’s an insult to serious fans everywhere. You spend the entire season smearing on face paint, standing shirtless and grilling ribs in the parking lot with like-minded lunatics. You waste nights building a detailed papier-mâché replica of Cris Collinsworth (or is that just us?). You hang in for the highs and lows, the injuries, the coaching crises. Then if your team makes the playoffs, it plays a handful of postseason games in someone’s home stadium, in fair weather and foul. And then, if lightning strikes, it makes the Super Bowl, only to run onto the field and entertain...a bunch of bored guys in khakis. It’s like following a couple of dry martinis with a nice tall glass of soy milk. In the NFL’s peerless playoff system, which keeps us enthralled through January and early February, this is the one weak link. I’m not a (total) fool: I know the

upside of holding the Super Bowl on unaligned turf. It’s the Super Bowl! It’s the sport’s marquee event. Like a bride planning her wedding, the NFL selects locations where it will have consistency, control and veto power over the band. Ever since Green Bay won the first Super Bowl in Los Angeles, it’s been held in warm places. On the rare occasion that it takes place somewhere cold, like Indianapolis in 2012, it’s a cold place with a domed stadium and a lot of hotel rooms. The NFL does not want Howie Long sleeping in his rental car. And unlike some hand-wringing purists, I don’t mind that the Super Bowl has a corporate side. Fine with me. If fans want to rave about how well-run, rich and polished the league is, they’ve got to accept that corporations have a lot to do with that. Television network money and deep-pocketed sponsors are the foundation of the league. Sponsors need to be taken care of. Eli Manning does not pay for himself.

Think of what an entertaining zoo a football-mad city like Green Bay or Pittsburgh would be if it hosted the biggest game on the planet.

Still, the Super Bowl must get livelier before it loses touch with its hardcore fans, the ones who support it the other 364 days of the year. And the most obvious way to accomplish this is also the simplest: Hold the Super Bowl at the home field of the team with the best record. Either that, or alternate it each year between the two conferences, the AFC and the NFC. (Just don’t employ that cockamamie idea that baseball had for its All-Star game, and turn the Pro Bowl into some kind of home-field decider.) I can just hear the complaints. “Hey, do you really want to go to Green Bay, Wisconsin, in February?” My answer? Why, yes—yes I do want a Super Bowl on the Frozen Tundra in the second-coldest month of the year. Think of the hours of rumination over how teams would handle the weather. Think of the obsessive worry over Nor’easters and Alberta clippers. Think of the ingenious methods fans would come up with to smuggle in scotch. Think of Super Bowl snow. Besides, I’ve never understood why it’s okay to hold an AFC or NFC championship in freezing-cold howling winds and snow just two weeks before the Super Bowl, but not the Super Bowl

itself. It’s as if the NFL spends 51 weeks of the year advertising how tough it is, only to start whining like a beach volleyball player when it comes to the main event. Still, the exciting possibility of ugly weather isn’t the main reason to move the Super Bowl (after all, warm weather and dome teams could host too). It’s the energy. Think of what an entertaining zoo a football-mad city like Green Bay—or Pittsburgh, or Baltimore, or Foxborough, Massachusetts, where the New England Patriots play—would be if it hosted the biggest game on the planet. It certainly wouldn’t be any duller than…okay, I’m not going to say it, but just remember that not all warm-climate cities are as swinging as Miami. Sure, they might wind up a few hotel rooms short in Foxborough or Green Bay, but two words, sports fans: buddy up. Meanwhile, just think of the scene inside the stadium. It would be a madhouse. The crazies would overwhelm the corporate suits. Nobody would be leaving in the fourth quarter

SEE SPOT RUN For many of the Superbowl’s nearly 100 million viewers, it’s as much about the advertisements as the game itself. But those 30-second spots ain’t cheap.

to catch an early shuttle to the hotel. There’d be no inexplicable lulls of silence midway through the second quarter. And they wouldn’t have to do that embarrassing thing they do now: importing fake fans to race onto the field and cheer for the halftime act. Do you think Pittsburgh needs to be told to cheer for Bruce Springsteen or Tom Petty? To be honest, I didn’t care about this issue for a long time, because for a long stretch from the mid-’80s to the mid’90s, the Super Bowl was basically a blowout. You could have put 80,000 Motorhead fans in there and by halftime it would have sounded like a middleround match at Wimbledon. Lately, however, the Super Bowl has been extremely competitive. Several times in the past decade I’ve heard commentators speculate that the given year’s Super Bowl might be the “best ever.” Last year’s throwdown in Tampa between Pittsburgh and Arizona, which had the potential to be a dog, turned out to be one of the most exciting games I’ve ever witnessed. Still, you couldn’t help but wonder how much better it would have been on home turf. Finally, to those who ask, “Isn’t it unfair to give the home-field advantage to one team in the biggest game of them all?” I respond, Yes! It’s unfair. Since when did football start being about what’s fair? Is it fair that the Colts got Peyton Manning and the Cleveland Browns have to hold open quarterback tryouts? Is it fair that the Washington Redskins have become the Washington Generals? Is it fair that a casino took all my brother’s money after I promised him the Patriots would “never, ever lose” to the New York Giants? Let football play its signature game at home. After all, I too will be home. Watching on the couch in the living room, where it’s nice and warm. JASON GAY played the half-time show with Seals & Croft at Super Bowl XII.

DIGITAL PHOTOGRAPHY COMES OF AGE In the Great Age of Overshare, everyone’s a photographer. At last count, photo site Flickr had archived more than four billion pictures, and more than two billion are uploaded to Facebook each month. For the semipros among us, three new developments in the field of hobby photography will make creating (and sharing) memories a little easier. Expected to debut this month at the Consumer Electronics Show is a next-generation version of Kodak’s popular Zi8 pocket video cam, which brought recorder capabilities like image stabilization and a wider lens to the pocket-camera market. But the real excitement among tech bloggers is centered on Kodak’s CES release of a “new but secret type of camera,” as one insider put it. “Kodak’s been doing a lot of work in the creation of more consumer-friendly, higherzoom cameras,” says John Biggs of tech blog CrunchGear. He reckons Kodak's new gadget may combine some of the more recent camera technologies, like 3-D recording, a front-facing LCD screen and GPS. The new gizmo will have to be pretty spectacular to compete with those ubiquitous cameraphones. A new iPhone app, Best Camera, supercharges the device’s photo functions, allowing users to add artistic effects and share directly to social network platforms. Created by commercial photographer Chase Jarvis and Seattle-based app development firm Übermind and based on Jarvis’ own experiences taking iPhone photos all over the world (see his book, The Best Camera Is the One That’s With You), the app’s easy-to-use effects icons turn your hohum snapshots into arty pics that look almost professional. Then comes the hard part: keeping track of all those shots. Web startup Pixable allows users to select, edit, store and print (how retro!) photos from Facebook and numerous other sites. Creator Andres Blank, a business student at MIT, cooked up the idea when he lost his camera during a group vacation abroad and his friends began to post their own pics to Facebook. Pixable’s integration with the social networking site means users can grab shots from any of their friends’ accounts or from photo archives such as Flickr, which makes the technology both revolutionary and frightening. Custommade photo books start at $7.95, and Blank says he plans to offer greeting cards and other items. Which means if you don’t want that photograph of you and your cat dressed as Santa and Mrs. Claus going viral, keep it to yourself (or don’t take it at all).

LIGHT PEAK > You know that mess of cables behind your computer? (Don’t look!) It will soon be a thing of the past, if Intel has anything to say about it. Expected to debut in 2010, the chipmaker’s new high-speed optical cable technology, Light Peak, will offer a single-port, one-size-fits-all connectivity solution. Bandwidth will start at 10GB per second—enough to transfer a full-length Bluray movie in less than half a minute—and grow to 100GB per second over the next 10 years. (By comparison, highspeed USBs average about .5GB per second.) The technology will be incorporated into the next generation of consumer electronics, meaning that if you’re looking for an excuse to buy a whole new workstation, here it is.

HIGH-TECH BUDDHISTS > For those wondering what Richard Gere was thinking when he made the widely panned Nights in Rodanthe, the answer may be close at hand. Researchers at Merck and the Boulder, Colorado– based Mind & Life Institute are using brain imaging to study the physiological differences in Buddhist monks. The goal? To see if meditation can increase the efficacy of neurological drugs. Meanwhile, the organization Science for Monks, pioneered by the Dalai Lama, has begun pairing international scientists with Tibetan monastic leaders to encourage the integration of science and Buddhism. Distracted technophiles in search of a quicker fix might opt for the Odin 99, a gold mobile phone that comes with an animated Buddha screensaver.

AS A SCIENTIST, Harvard biomedical engineering professor David Edwards has earned renown for his groundbreaking work in developing inhalable medicines, including aerosol insulin and a vaccination for TB. But as a child, he was a literature and theater buff, a passion he rekindled after he and his wife, French-born biomathematician Aurelie Edwards, began spending time at a second home in Paris. “Paris was, for me, a place where I could dream big,” he says. “I realized not everything had to be so practical.” By 2007, as Harvard was beginning to explore an interdisciplinary approach to teaching and learning, Edwards had what he calls his “eureka moment.” “I realized this creative side of David Edwards, the one I’d kept private, was very related to the scientific bent,” he says. “The artist was a catalyst for the scientist.” That year, he established Le Laboratoire, an “ideas lab” and cultural space in central Paris, where artists and scientists could come together to dream big, “push the limits of understanding,” and change the world. As Edwards saw it, science—with its traditional reliance on the proven and the peer-accepted— needed to take a page from the more passionate art community. Developed in partnership with Harvard, Le Laboratoire has since fostered collaborations among international scientists, artists, industrial designers and even chefs (such as MIT’s Robert Langer and Michelin-starred chef Thierry Marx), resulting in art installations, commercial products, and ideas for new companies and nonprofit organizations. This year, Edwards will open an American outpost, The Laboratory @ Harvard. Like its Paris counterpart, the Lab will roll out new inventions, hold monthly “idea nights” and produce performances around the city. Edwards’ goal is simple: to make the fields of art and science more accessible. Not every brainstorm will find a commercial application, he says, pointing to one of the launch exhibits: an art collaboration between Harvard mathematician Benedict Gross and Japanese digital composer Ryoji Ikeda. But others just might—for instance, the Bel-Air, a mobile mini-greenhouse that filters air on the go, and sOccket, a scheme to implant a portable energy-harvesting source inside a soccer ball for use in the developing world. (When the ball is kicked, power is stored in the device and later used to charge lights or batteries.) Now, there’s a worthy goal.

TREDPUTING > Literary boy wonder Jonathan Lethem recently revealed his secret method for cranking out novels like Motherless Brooklyn and The Fortress of Solitude: He amps up the font on his computer and pecks away at a wireless keyboard while marching on a treadmill. While the pages pile up, the pounds come off. Apparently he’s not the only dedicated multitasker: Companies such as SurfShelf and TrekDesk are now peddling polycarbonate shelving that attaches to your treadmill, elliptical or stationary bike to support a laptop—so you can blog and jog at the same time.

The company is said to be introducing a $700 handheld tabletlike device for websurfing, TV viewing and, yes, book reading. Meanwhile, new display technologies from E Ink and Qualcomm promise to take electronic type to a new level. Next-gen readers will be faster, cheaper (as low as $99), and—how do they do it?—have colored ink. They’ll also sing you to sleep, if London-based Enhanced Editions has its way. The company is cooking up e-books tailor-made for the iPhone, with bells and whistles including audio, video, links to online reviews and, in the case of the recently released The Death of Bunny Munro by Nick Cave, an original soundtrack. Still no new-book smell, alas.

IT DOESN’T SNOW IN GHANA. IT NEVER EVEN GETS CHILLY. BUT DON’T TELL THAT TO KWAME “SNOW LEOPARD” NKRUMAH-ACHEAMPONG, THE SOLE MEMBER OF THE GHANA OLYMPIC SKI TEAM. BY GRANT STODDARD

Those are just some of the ways you might be described if, upon nearing your thirties, you announced that you were putting your life on hold to compete alongside the world’s elite in an expensive, dangerous and culturally alien sport you’d only recently tried for the very first time. Kwame Nkrumah-Acheampong has a perfect rebuttal to such skepticism: Through sheer will, he recently qualified for the Vancouver 2010 Winter Olympic Games in downhill skiing.

ILLOGICAL, IRRATIONAL, DELUSIONAL, FOOLHARDY.

“Kwame should be here any minute,” says Richard Harpham, checking his cell phone for a call from the downhill sensation, whom he manages—or at least tries to manage. A camera crew from a local London news channel is sipping coffee impatiently. For the past hour, they’ve been waiting for the 34-year-old Ghanaian in the lobby of the Snow Centre in Hemel Hempstead, an indoor skiing area 25 miles north of London. Outside the facility, it’s fall, the trees peaking in hues of gold and rust. But beyond the glass of the observation deck, we look down upon a scene of Alpine winter, replete with skiers and snowboarders nimbly carving through surprisingly powdery snow. “Here he is now,” says Harpham, rubbing his hands with glee. “It’s my pleasure to introduce you to the Snow Leopard!” Dressed in baggy jeans and a hooded sweatshirt, the soft-spoken NkrumahAcheampong cuts an unassuming figure that belies his improbable achievement: In Whistler, British Columbia, he’ll compete in the slalom, giant slalom and, hopefully, super-giant slalom (super-G)

and downhill events. The chances of Ghana’s one-man representative standing atop the winners’ podium are slim, but in human terms, his may well be the definitive triumphal story of the Vancouver games. “Yes, of course there are parallels with the Jamaican bobsled team,” the skier says, referring to the 1988 Calgary fan favorites. “I don’t mind that at all. They actually had some very respectable starts in Calgary.” Though seen as a mere novelty at the time, the Jamaicans went on to beat the United States, Russia, France and Italy at the Lillehammer games six years later. The Snow Leopard can only hope for such success, though in marketing terms—he skis in a leopardprint suit, hence the nickname—he’s already ahead of the game. Located just north of the equator, Ghana rarely sees the mercury drop below 70 degrees. In fact, the first time Nkrumah-Acheampong saw snow was the day he arrived at Heathrow Airport. “In retrospect,” he says with a smile, “that may have been an omen.” Nkrumah-Acheampong was actually born in Glasgow, Scotland, while his father was studying for a doctorate, but he returned to Ghana as an infant. After a series of jobs, including a stint as a

safari guide, he relocated to London at 24 to earn a master’s degree in tourism management. Toward the end of his studies, he got a job as a receptionist at SNO!zone, an indoor ski area. “One of the perks of the job was that staff could use the slope for free at off-peak times,” he says. “I’d always been athletic, running and playing tennis, and I think that helped me pick up skiing quite quickly.” Soon after his first time on skis, the young father of two was ripping down the 185-yard slope. “As I improved, one guy in particular kind of motivated me,” Nkrumah-Acheampong says. “He told me there was no way that I could qualify for an Olympic games. Well, I am a very competitive person, and I took that as a challenge. I wanted to make him eat his hat. Skiing was suddenly something I needed to master. That is what drives me.” Nkrumah-Acheampong will need every last bit of that drive to compensate for the massive disparity between his experience and that of his Olympic competitors, most of whom have been skiing since they were toddlers. The Snow Leopard picked up the sport at an age when most competitive skiers are

“The main problem is that in Ghana they are completely unfamiliar with the sport,” Nkrumah-Acheampong says. “The average person there might not even really know what skiing is.” He worked several summer jobs to raise cash and secured sponsorships with a distributor of Japanese apples and a couple of other businesses. So far, it’s not nearly enough. “I only have two legs,” he says with a smile. “How many skis do I need? I need money for coaches, I need money for accommodation. I have a wife and a family who have had to make do while I devote more time to training.” Recently, Nkrumah-Acheampong came up with a clever grass-roots investment scheme: He’s offering to sell spots—literally—on his custom-made leopard-print ski suit. “For a minimum donation of eight dollars,” he explains, “people can have their name on one of my spots as I compete. It’s like they will be right there with me on Whistler.” Sitting down to lunch in the Snow Centre’s café, he orders fish and chips and quietly says a prayer of thanks before eating. “God can’t make me do well in the Olympics—that is up to me— but he can keep me well and help give me the strength to do my best,” he says. British bookmakers William Hill have given the Snow Leopard a 500-1 shot of coming away with a medal. “Success to me would be to beat at least ten people,” the Snow Leopard says. “I admit that I am an underdog and a novelty. But I hope I’m more like the Jamaican bobsled team and less like Eddie the Eagle. If I can beat a path so that others can follow, I’ll be happy.” Whistler, British Columbia–based GRANT STODDARD’s trainer hasn’t helped his Olympic chances.

Sonoma County, and there’s little doubt that these valleys and rolling green hills—once unkown—are now a world-class destination for oenophiles and food lovers. Among the winemakers and rugged fourth-generation locals, there are more and more glitzy types clad in linen or draped in cashmere, and they feel right at home. Sonoma has arrived. To its detractors, hippie-dippy Sonoma is a cultural no-man’s land where oddball characters cavort in the hills. Of course, that’s exactly how the locals like it. After all, only the scrappiest of pioneers made their way to this stretch of the remote West, digging in and adapting to its dramatically varied microclimates. In the generations that followed, hardworking farmers, largely Italian-American immigrants, worked the land for lumber and produce. Importing their family winemaking traditions from the old country, they discovered something vital: The local wine was pretty darn good. Visitors soon began to understand all the fuss over the region’s soil and air, and all the care that’s put into everything produced here, from lettuce to cheese and wine. Though Sonoma is quickly becoming the next big thing, it still contains many hidden corners you’ll feel as if you discovered on your own. And the locals, finding you off the beaten path, will welcome you with a wink, and let you imagine that you have.

Go on to ponder the bountiful Californian lifestyle at Plaza Gourmet (3), where you run your hands longingly over copper cookware and cheese boards repurposed from retired wine barrels. Getting further into the foodie frame of mind (this is what people live and breathe in Sonoma), you saunter off the main square to peruse the pickle bar at Love Farms (4) organic market on North Street, where the heirloom tomatoes on display are worthy of a photograph. Arm yourself with a trusty Wine Road map and set off by car—in this case, a sleek Mercedes SLK 55 convertible—toward Highway 128, wending your way into the Alexander Valley to stop for lunch at the Jimtown Store (5), a cheerful clapboard shop that first opened its doors in 1895 and is now refreshed and stocked with local wines. Order the house specialty, a Brie-and-chopped-olive sandwich on a baguette, to go. Picnic supplies in hand, make your way to the eco-friendly, ultramodern Ridge Vineyards (6) on Lytton Springs Road. Take a seat at one of the teak tables out back, surrounded by oak barrel planters overflowing with fresh rosemary and wildflowers, the rolling vineyards just a few feet away. Request a flight of wines (a.k.a., a tasting selection) to accompany lunch, and dig in. (If you prefer to actually drink than to taste, you can always arrange for a bus tour through sonomawinetours.net.) Afterward, head to the Michel-Schlumberger Winery (7) in nearby Dry Creek Valley, and join the 2 p.m. tour, during which you’ll walk among the vines and ponder the meaning of terroir (or, heck, just enjoy the views from this quiet corner of the county). After a taste of their Deux Terres Cabernet Sauvignon, it’s back over the charming Lambert Bridge and home to Healdsburg. Sequester yourself in the hotel’s hidden hot tub or indulge in a quick nap on your crisp Frette linens in preparation for an epic meal at the town’s finest dining establishment, the decadent Cyrus (8). With chef Douglas Keane, an alum of New York’s Lespinasse, helming the kitchen, reservations are a must. However, if you haven’t planned ahead (or aren’t game for Keane’s five-course culinary extravaganza), step up to the elegant bar and order a succulent porcini pot pie. DAY TWO Pack your bags, albeit reluctantly, and check out. Before you hit the road in your ragtop, stop for coffee and a buttery croissant at Healdsburg’s Flying Goat Coffee (1), where the potent brew is taken ever so seriously. Begin your leisurely drive down Westside Road, stopping in at the Hop Kiln Winery (2) to see the striking landmark 100-year-old hop kiln building, which now houses the winery’s tasting rooms. Take in the historic photos of the laborers of old, a reminder of when Sonoma was best known for its plum trees. Snag some of Hop Kiln’s zinfandel-infused grainy mustard, and you’re on your way. Cruise into Graton (not too fast, or you’ll miss it) and settle in for succulent Drakes Bay oysters on the half shell and a side of roasted blue potatoes at Underwood (3), a cool bistro that’s doing its part to transform what was a “rough little apple cannery town” into an urbane yet rustic destination for food and wine aficionados. Drive north and check into a luxurious barn room at the Farmhouse Inn (4), where sister-and-brother owners Catherine and Joe Bartolomei have created a stylish Russian River Valley idyll. Ask the concierge to set up a visit to the pleasantly rickety American Wine Building (5) in Forestville to check out the work of the vintners behind Arnot-Roberts and Wind Gap wines, two local labels that have earned the seal of approval of the inn’s inhouse master sommelier, Geoff Kruth. After chatting with the winemakers about their modern take on traditional barrelmaking and wine-stomping (and meeting the curious winery dog), head back to the Farmhouse and take a dip in the pool. Then stop by reception and help yourself to the “bath bar,” a complimentary array of salt scrubs and milk baths, and have a soak in the tub. You’ve earned it. As the sun hangs low in the sky, hit the road for a low-key dinner at Zazu (6), an old-fashioned roadhouse-turnedcarnivore’s-delight. Start with a selection of the Black Pig Salumi and move on to a hand-thrown MacBryde Farm fig pizza and a tasting flight of Russian River Valley BETH COSTA, EXECUTIVE pinot noir, the region’s celebrity grape. United’s hub at San Francisco International Airport makes getting to Sonoma so easy that it’s just, well, perfect.

DAY THREE Rouse yourself for breakfast at the Farmhouse and then begin the

winding drive west on River Road, where Sonoma gets just a little bit funkier. Note the various trapped-in-time motels tucked into the shadows of enormous redwoods and feel happily relieved you’ve arranged fancier digs. At Guerneville, a sleepy relic of a logging town, turn toward Armstrong Redwoods State Reserve (1) and get out for a walk (you think all that cheese is going to metabolize itself?). Here in the dim woods, you’re eerily alone. Gaze heavenward at the tops of the tallest trees, which are some 1,000 years old, and let yourself be dazzled. In the otherworldly green light, odd New Age philosophies somehow seem less odd. Feeling ready for human contact (and a little worried about bears), you hop back into the Mercedes and wind along the Russian River, named for the Russian fur traders who came south from Alaska in the 19th century. Drive through the settlements of Monte Rio and Duncans Mills, looking out for old wooden holiday cottages perched precipitously in the hills. When the mouth of the snaking Russian reaches the Pacific, you have arrived in Jenner, a tiny trappedin-amber seaside town. Stop for lunch at the old-school River’s End (2), order the reliable West County burger with fried leeks and prep for the last leg of your remarkable road trip. From Jenner, venture north on the perilous, cliff-hugging Highway 1. Stay on the lookout for stray cows (you’re in ranch country now, and the hapless giants occasionally wander onto the road) until you reach Salt Point State Park (3) and Stump Beach, named for the giant felled trees that wash up here. Note the sign: “Strong Backwash. Sleeper Waves. Rip Currents.” Watch as the surf tumbles through the kelp beds, the odd seal poking his head out of the water. The air is a fair bit cooler here than in Healdsburg, so you head back to the Mercedes and put up the top. From Highway 1, you ramble through the dense redwoods on Skaggs Springs Road (4), a byway so remote that signs warn you in advance to make sure you’re gassed up. Finally, the road turns south, completing the loop through the wilds just in time for you to peel off your fleece and freshen up before a final dinner at the Farmhouse, with its welldeserved Michelin star. In the softly lit dining room, under a mural depicting Russian River Valley farmers of yore, a cork pops and the waiter pours a glass of Roederer Estate sparkling wine from the nearby Anderson Valley. For dinner, it’s Gruyère SAUL GROPMAN OWNER, CAFE potato gratin and beef tenderloin served LA HAYE, SONOMA // “Customers with beans from the Bartolomei’s farm often ask me for wine tasting and a local Pinot noir. You sip and savor suggestions, and I tell them it, tasting rich cherries and mint, even a wineries that bring something new to the table. The Benziger whiff of the salty ocean. You’re beginning family has made a dramatic to get this terroir thing, after all. SARAH HORNE is now a living testament to

the health benefits of wine.

EXERCISE

IN EXACTLY 4 MINUTES

PER DAY

THE TYPICAL QUICKGYM PURCHASER GOES THROUGH SEVERAL STAGES: 1. Total disbelief that the QuickGym can do all this in only 4 minutes. 2. Rhetorical (and sometimes hostile) questioning and ridicule. 3. Reading the QuickGym literature and reluctantly understanding it. 4. Taking a leap of faith and renting a QuickGym for 30 days. 5. Being highly impressed by the results and purchasing a QuickGym. 6. Becoming a QuickGym enthusiast and trying to persuade friends. 7. Being ignored and ridiculed by the friends who think you’ve lost your mind. 8. After a year of using the QuickGym your friends admiring your good shape. 9. You telling them (again) that you only exercise those 4 minutes per day. 10. Those friends reluctantly rent the QuickGym for a 30 day trial. Repeat the above cycle from point 5 on down.

$14,615

• •

You get the same results from 4 minutes on the QUICKGYM as: 25 to 45 minutes of aerobic exercise for cardio conditioning. 45 minutes of weight training for muscle tone & strength. 20 minutes of stretching for limberness & flexibility.

RENT A QUICKGYM FOR 30 DAYS. RENTAL APPLIES TO PURCHASE.

The Cincinnati Bengals linebacker tries to grasp hurling in Ireland. Watching the professional athlete whiff at the ball and struggle to keep up with his teammates is sure to make you feel good about your own athletic abilities.

Irreverent New Zealanders Jemaine and Bret pay musical tribute to a woman they’ve both fallen for. That woman is played by Saturday Night Live cast member Kristen Wiig, searching for her missing, epileptic dog.

Using some very high-tech camera equipment, this episode shows the remarkable feat of salmon swimming upstream in Canada and Alaska. And in a TV first, see a mother grizzly bear and her cubs emerge from hibernation. You’re probably at a safe distance.

This breathtaking documentary series shows the flora, fauna, scenery and cultures of this littleexplored corner of the globe. You also won’t want to miss the “making of” special, which shows all the high-tech equipment used to film wave vortices and wildlife.

HARRY POTTER AND THE HALF-BLOOD PRINCE [V]

2 hr. 21 min.

It Might Get Loud tells the stories of three generations of electric guitar virtuosos—The Edge (U2), Jimmy Page (Led Zeppelin) and Jack White (The White Stripes). Traveling around with all three, this film lets you witness intimate moments and hear new music. FEATURING The Edge, Jimmy Page, Jack White DIRECTED BY Davis Guggenheim

When Kate and Brad find themselves grounded by fog on Christmas morning, their exotic vacation plans morph into the family-centric holiday they had, until now, gleefully avoided. They trudge to four relative-choked festivities. Childhood fears are raised and adolescent wounds are reopened. Can their relationship survive? FEATURING Vince Vaughn, Reese Witherspoon, Jon Favreau DIRECTED BY Seth Gordon

As Harry Potter begins his sixth year at Hogwarts School of Witchcraft and Wizardry, he discovers an old book marked mysteriously “This book is the property of the Half-Blood Prince” and begins to learn more about Lord Voldemort’s dark past. FEATURING Daniel Radcliffe, Rupert Grint, Emma Watson DIRECTED BY David Yates

500 DAYS OF SUMMER

MY SISTER’S KEEPER [T]

THE TIME TRAVELER’S WIFE [T]

1 hr. 33 min.

“This is a story of boy meets girl,” begins the narrator. The boy, Tom believes in the notion of a cosmically destined kind of love. The girl, Summer, doesn’t. But that doesn’t stop Tom from going after her—and the very idea of a love that has the power to stop the world. FEATURING Zooey Deschanel, Joseph Gordon-Levitt, Geoffrey Arend DIRECTED BY Marc Webb

1 hr. 49 min.

Sara and Brian are faced with an unorthodox choice in order to save their daughter Kate’s life. Their decision raises both ethical and moral questions, ultimately setting off a court case that reveals surprising truths and challenges everyone’s perceptions of love and loyalty, giving new meaning to the definition of healing. Please have tissues on standby. FEATURING Cameron Diaz, Abigail Breslin, Alec Baldwin DIRECTED BY Nick Cassavetes

1 hr. 41 min.

Clare has been in love with Henry her entire life even though she never knows when they will be separated: Henry is a time traveler cursed with a genetic anomaly that causes him to live his life on a shifting timeline, skipping back and forth with no control. Despite the fact that Henry’s travels force them apart with no warning, Clare desperately tries to build a life with her one true love. FEATURING Rachel McAdams, Eric Bana, Arliss Howard DIRECTED BY Robert Schwentke

TRAVEL ASSISTANCE FOR DELAYED OR CANCELED FLIGHTS At United Airlines, our priority is safety and keeping an on-time schedule. On occasion, canceling or delaying a flight is the only option to assure we maintain the highest safety standards. Flight canceled? We automatically confirm you on the next United flight with available seats. EasyCheck-in® units located in the concourse will assist you with information and a boarding pass—it will also help you standby for an earlier United flight if one is scheduled. If you want to travel standby and aren’t boarded, we will transfer your name to the next United flight to your destination until you are onboard. What about my bag? Baggage is boarded on the next flight if space is available. This means your bags may arrive before you. United will secure the bag until you claim it. See a baggage claim representative. What if I have to stay overnight? If a flight is canceled to address a mechanical issue or another similar reason within our control, we

HEM_0110_VER3.TerminalDiagrams.indd 1

will provide you with a hotel and meal voucher. For uncontrollable events—such as weather—we may be able to help you locate a local hotel at a discounted rate; however United does not cover hotel or meal expenses in this event. If we can not retrieve your checked bag, overnight kits containing toiletries are available. Please see an agent. What if the reason for my travel no longer exists? If as a result of the delay or cancelation you decide not to travel, call United reservations (1-800 UNITED-1) to get information on your options. Help us help you keep informed. Sign up for EasyUpdate®, our messaging service. If your flight is canceled or delayed, EasyUpdate® will inform you. Enroll at united.com/easyupdate. At home? Go to united. com for information or to check-in and print your boarding pass. Your safety and satisfaction are important. We appreciate your business and apologize for any inconvenience you may have experienced.
