“AL DÍA StartUp Workshop” coming up very, VERY, soon I recently released to my coworkers at AL DÍA (as I call AL DÍA employees) the purpose statement of our organization, as well as a set of core values that rule our work together.
I
t is the toughest job I have done in 24 long years building, mostly through trial and error, this news media organization I started, as s a 1-man operation, in the very living room of my own home, in 1991, in a very unlikely place: North Philadelphia, in the Latino barrio, in the living room of my home, in the very heart of the most immigrant of the neighborhoods in our adoptive hometown: Olney. To build organizations, specially from scratch, is a tall order. One that involves more than determination, ready money, sturdy technology and, as we say in Spanish, “Muchas Ganas” (Lots of Guts..) I, however, refuse to take the credit for having done anything here people may want to brand as “extraordinary.” Specially when people wonder how AL DIA came about, or ask me point blank the terrible, ultimate question: “Who owns AL DÍA, anyway?” Funny, I tell them, “AL DÍA is not owned by anybody in particular.” But by everybody, specially when somebody dares to embrace the simple idea around which it was built. And he or she can, therefore, “own it…”. Freely. Since it was built the natural way, one brick at a time, year after year, without changing much the mission, the AL DÍA experiment is as “American as the Apple Pie,” and as natural as Pennsylvania’s “Good & Plenty,” one of my favorite restaurants in Amish County, in Lancaster, PA, USA. Today it remains pretty much the same as in year 1, and I was just one young fellow in my early 30s, exactly like those start-CEOs of today, only just a quarter of a century later. I explain further to my questioning friends that if anything in life turns out to be something we can label as “extraordinary,” it is because somebody simply stuck to do the ordinary, but for a sufficient number of months, or years, for it to finally look extraordinary to others— mainly those I call “the unbelievers.”
In other words, anybody can do it— but only if you want it that badly. The dawn, in other words, doesn’t come up much faster just because you got up much earlier. Trees continue growing today at the same pace they always have for the past couple of hundred years. When you arrive at the point when you can, finally, sit down and write the purpose statement of the company, and, as a follow up, you set out to craft the critical “core values,” and that copy flows, as a thread tying everything together, simply as pure air, or as a natural stream of water —as it happened to me some time ago— it is a good sign that, maybe, maybe, you “have arrived.” “Arrived”, in our case, just to yet another point of departure in a journey that has lasted close to a quarter of a century. The founders of today encapsulate at this point their dream into solid words and slick presentations and some basic numbers and, in the most solitary of the jobs, they set out to convince people, almost as it they were modern preachers— be investors, be their co-workers, or be their first customers. Convince them (good luck to all of them) that there is a horizon worth pursuing, a future years ahead where there will be “milk and honey.” Intangible as “Milk & Honey” is, the actual endeavor becomes very trying and, most of the time, fails, according to the IRS statistics for brand new business. These statistics clearly indicate that the big majority of dreamers end up with their wings clipped, and their boats smashed into pieces against the rugged realities of the market place. I applaud those who dare, though, those courageous who overcome the fears, and, as the pioneers did, sail away, honest and light, ready to run the race every day, sometimes burning the candle on both ends, if necessary, just to never be defeated in the midst of the old battle: The battle to keep the P&L sheet “in the black…” It is a a balancing act— worth trying no matter how though and/or scary it at times may become. That is exactly the reason why we will announce soon a new initiative we will call “The AL DIA StartUp Workshop” through which we will bring together young men and women, from Philadelphia and beyond, with the indispensable soul of the Entrepreneur.
They will be invited to our home, here in AL DIA headquarters, which is becoming again the “living room” of year one of AL DÍA, where the new generation can sit down, network, obtain legal and financial assistance, and try the adventure of attempting to bring their ideas into reality, same as we did 23 years ago. In other words, we will lead by example, and attempt to show the way to the impossible: To be creative and courageous at the same time. We will mentor and support those with the fire to set their own roadmap and who may feel the calling to enrich our city and region with the power of their independent and productive work. They will be given the oxygen of the one to one nurturing, just to survive that initial period of time when the idea is just a single seed, yet to become a creature that is finally conceived and placed in “an incubator of new businesses,” next where AL DIA, the older brother, happens every day. Yes, at the very womb where a previous, legitimate creature was conceived, nurture and delivered safely into life, without too much fanfare. In an initiative in partnership with a Business School in our city, we will show the way to the younger generation, teaching them well beyond their academic preparation, from our own encyclopedia of harsh-lessons-painfully-learned, and our own manual of errors that show, finally, how to do it right, more often, and/or avoid the rocks— more often. Sharing our own journey, and challenging them to carve their own, we believe we can make a modest contribution to the improving of quality of life in our beloved city. “Caminante, no hay camino... o hay muchas cosas que puedan hacer sentir mal a Michael Anderson. El único desafío, según dice, es tener una discapacidad física: parálisis cerebral. Deja claro, sin embargo, que es un hablador y se hace evidente que él no tiene miedo de expresar sus preocupaciones cuando se trata del mundo político. En la Convención Nacional Demócrata de este año (DNC), Anderson será uno de los muchos embajadores voluntarios. El interés de Anderson por la política comenzó a una edad temprana, gracias a que sus padres trabajaron en el campo durante muchos años. “Después de la Convención Demócrata de 2004, me sentí inspirado por Barack Obama por lo que dijo”, dijo Anderson. “No somos estados azules, no somos estados rojos no, somos y siempre seremos los Estados Unidos de América”. Estaba tan nervioso que lloré. Después de la reunión con ella, tuve una conversación privada con ella durante cinco minutos”.

Culpar no es un juego, la introspección es la única salida
D
esde en los UberPools hasta en la fila del supermercado, muchos desconcertados residentes de Filadelfia me han hecho la misma pregunta: “¿Llegará Donald Trump realmente a ser elegido presidente?”. En estos breves encuentros la pregunta es retórica, sin embargo no puedo sino considerar una respuesta real. Los acontecimientos de la semana pasada en el Reino Unido han dejado claro que no solo es posible, sino probable. Los ciudadanos de Gran BreREAD IN taña e Irlanda del Norte votaron para abandonar la Unión ENGLISH Europea en un referéndum llamado “British Exit” (la saliNEWS.com/OPINION da británica). A pesar de contar con un nombre lindo, “Brexit” es como un regalo alarmista británico que va a seguir dando que hablar. Pese a mi decepción, nuestra nación tiene una oportunidad única de ver en primera fila exactamente lo que puede suceder con un líder como el actual candidato presidencial republicano. Tengo que admitir que no lo vi venir. Pasé varios años viviendo al otro lado del océano y disfrutando de los beneficios de la “concienzuda” sociedad del Reino Unido. O al menos eso pensé. Igual que un niño en una tienda de dulces liberal, disfrute al conocer de sus leyes antiarmas, del Servicio Nacional de Salud y la educación asequible. Los padres envían a los niños a clase sin el temor a un tiroteo en la escuela. Los jóvenes asistían a la universidad sin preocuparse de una agobiante deuda estudiantil. Las facturas médicas nunca llevaron a una familia a quedarse sin hogar. Encontré que cuando se proporcionan los derechos humanos básicos, se puede sentir un tipo de libertad diferente. El Reino Unido está lejos de ser una utopía, pero en esos pocos años, sentía que estaba más cerca de ella. Hace unos días, me enteré que esa mentalidad progresista podría ser exclusiva de Londres, Escocia e Irlanda del Norte. Sin contar con el total de la nación en sintonía, estos pocos sitios no pudieron persuadir al Reino Unido del miedo irrevocable. Mi amor por este país es honesto y sin embargo leal. Soy consciente de sus defectos, pero también rápida a la hora de hablar de su belleza y majestuosidad. Estados Unidos da a un sinnúmero de personas la oportunidad real de cambiar su destino para bien. Desafortunadamente el racismo sistemático provee de culpa cuando ciertos individuos no lo logran. A los estadounidenses se les dice que el socialismo es malo y que el objetivismo de Ayn Rand es un camino lógico a la verdadera libertad personal. Esto hace que parezca como
si la felicidad fuese escasa, que es una perversión peligrosa del “sueño americano”. El “Brexit” es un amargo despertar y consecuencia del “juego de la culpa”. Existe una creciente cantidad de personas blancas de clase media y baja con dificultades. Sus problemas son reales y sus frustraciones son entendibles. Han observado la codicia de corporaciones y de políticos devastar vidas y quieren un cambio. Por desgracia, ese cambio se ha manifestado en xenofobia. Han creído a los medios de comunicación que sugieren que los blancos no deben luchar tanto o más que las minorías. Lo que da temor es que no todos ellos son los racistas fuertes y orgullosos del mundo. Creo que los blancos de clase pobre y trabajadora han estado votando en contra de sus mejores intereses simplemente porque un candidato juega el papel. Apoyan a candidatos ricos, blancos y poderosos, solo para ser completamente ignorados después de cada elección. Advertencia, existe un votante menos agresivo pero igualmente intolerante considerando a Trump también. El imperialismo, la esclavitud e incluso el movimiento de derechos civiles pueden parecer muy anclados en el pasado para los americanos blancos. Sobre el papel, todos somos libres y algunas personas blancas no entienden por qué tanto alboroto. Al parecer, los blancos marginados tienen un gran problema que solucionar y por ello están entregando el cuchillo a Trump. Me preocupa que su ira solo crecerá si la solución es buscada externamente. El tipo de cambio que necesitamos comienza en cómo se ve la gente a sí misma, especialmente la gente blanca. La idea de que todos los estadounidenses tienen las mismas oportunidades y de que algunos simplemente toman mejores decisiones que otros es profundamente falsa. Creo que el núcleo de este problema es pensar como “blanco”, una especie de línea de base de la sociedad. Como si “blanco” fuera equivalente a ¿¡¿¡normal o estándar?!?! Como estadounidense blanca, analizo mi papel en todo esto. Estoy cansada de hablar a la gente amablemente sobre discriminación e injusticia. Es el momento de decirlo. Esto no se trata de fragilidad blanca; esto se trata de supremacía blanca. ¡No se equivoquen! ■

O quizás los demócratas, en el curso de los años, se ganaran la reputación de dar por descontado el apoyo de la comunidad LGBT, porque ésta consideraba a los republicanos peores y más intolerantes. Entonces, no se sorprendan si más miembros de esa comunidad se arman y si el tema de combatir el terrorismo sobrepasa al tema de las reglas para baños transgénero y al debate sobre si los reposteros cristianos deben hacer tortas para los casamientos gay, en la lista de prioridades LGBT para la elección presidencial de 2016. No ayuda a calmar temores el hecho de que los estadounidenses ya no parecemos saber cómo responder cuando se nos ataca. Hoy en día, no nos unimos; nos separamos. years after the first pioneers came, when the residents of the “Isla del Encanto” were declared U.S. citizens by an Act of the U.S. Congress, in 1917, young men and women continue to pour into mainly three U.S. Cities where full enclaves of Puerto Ricans live in the United States: New York, Philadelphia and Orlando, in that order. Philadelphia, up to this day, continues to be the second largest settlements of Puerto Ricans in the United States, but few people know why. It is calculated that well over 3 million live today in the 50 States, many more than there are Puerto Ricans left in the island, where only 2.5 roughly live today. The numbers keep on dwindling down as a result of traumas that run deep in the history of the Caribbean island. The realities today are not different from 100 years ago. The only thing that changes is the faces and the professions of those who now
come— not peasants anymore, but bilingual professionals. 100 or 50 years ago, they were the peasants and modest blue collar workers who were invited by us to come to the Philadelphia region to work in the agricultural fields of New Jersey, or work as maids, in the case of women, in the houses of the wealthy. The parents of important leaders of the Puerto Rican leaders, like Nelson Diaz and Pedro Ramos — like it was the case of others— came from modest beginnings, which make the accomplishments of these two professionals named above even more meritorious. We need now their monetary help to finish up our project, exclusively supported by a crowdsourcing effort led by a courageous Temple University’s Journalism graduate. Not only Nelson’s and Pedro’s, but also Alba’s, María’s or Luis’, Nydia’s, Nilda’s, Jennifer’s— all of them friends and followers of AL DÍA in the Puerto Rican community. 100 años después de que llegaran los primeros pioneros, cuando los residentes de la “Isla del Encanto” fueron declarados ciudadanos de Estados Unidos a través de una ley del Congreso de Estados Unidos, en 1917, hombres y mujeres jóvenes continuaron llegando principalmente a 3 ciudades de EE.UU., que se convirtieron en enclaves completos en los que los puertorriqueños viven en el país: Nueva York, Filadelfia y Orlando, en ese orden. Filadelfia, hasta el día de hoy, sigue siendo el segundo mayor asentamiento de puertorriqueños en Estados Unidos, pero poca gente sabe por qué. Se calcula que más de 3 millones viven en la actualidad en los 50 estados del país, muchos más puertorriqueños de los

que quedan en la isla, donde sólo 2,5 más o menos viven en la actualidad. Las cifras siguen disminuyendo como resultado de traumas que están profundamente arraigados en la historia de la isla caribeña. Las realidades actuales no son diferentes a las de hace 100 años. Lo único que ha cambiado son las caras y las profesiones de aquellos que llegan ahorano más campesinos, sino profesionales bilingües. 100 o 50 años atrás, eran los campesinos y los modestos trabajadores los que fueron invitados a la región de Filadelfia para trabajar en los campos agrícolas de Nueva Jersey, o como trabajoras domésticas, en el caso de mujeres, en casas adineradas.

Paz en Colombia: una luz en tiempos de oscuridad
E
l mundo pasa por momentos tan oscuros que las buenas noticias parecen casi inexistentes. Pero existen, tal y como lo demuestra felizmente el acuerdo de paz en Colombia. En La Habana, la visión del Presidente de Colombia, Juan Manuel Santos, estrechando la mano a Timoleón Jiménez, conocido como “Timochenko”, el comandante de la guerrilla de las FARC el jueves, después de 52 años de sangriento conflicto, resultaba tan improbable como conmovedora, tan surrealista como trascendental para todo el continente. “La paz será la victoria de todo Colombia; pero también la de toda Nuestra América,” afirmó el Presidente cubano Raúl Castro, auspiciador de las negociaciones. “El fin del con-
flicto armado en Colombia será una nueva demostración del firme compromiso de nuestros pueblos contra el uso y la amenaza del uso de la fuerza y a favor de la solución pacífica de controversias. Ante las diferencias, diálogo. Ante los retos, concertación”. “El logro de la paz en Colombia”, añadió Castro, “será también esperanza para millones de personas en el planeta, cuya principal preocupación sigue siendo la supervivencia en un mundo convulsionado por la violencia y las guerras”. Santos, emocionado, estuvo de acuerdo. “Esta es la paz de los colombianos, de todos sin excepción, la paz que soñamos y esperamos por tantos años”, afirmó en el Centro de Convenciones El Laguito en la capital cubana. Luchando por contener las lágrima, Timochenko, quien agradeció la ayuda del expresidente de Venezuela Hugo Chávez, respondió con su propio mensaje de esperanza: “¡Que este sea el último día de la guerra!”. El tratado final se firmará el 20 de julio en Colombia. Su firma será la culminación de cerca de cuatro años de difíciles negociaciones en La Habana, durante las cuales superar la profunda desconfianza mutua de las dos partes en varias ocasiones pareció ser un sueño imposible. Pero el sueño se hizo realidad en un pacto que pone fin a la guerra más antigua del hemisferio occidental, más de medio siglo de violencia que
privó de la vida a más de 220.000 colombianos. En Bogotá, la gente celebraba en las calles abrazándose y cantando jubilosos el himno nacional. “Los únicos sueños que se logran son aquellos que se intentan, eso es lo que sentimos hoy”, manifestó Timochenko, que añadió que las FARC no abandonan su lucha por la justicia social. “Claro que las FARC haremos política, si esa es nuestra razón de ser, pero por los medios legales y pacíficos, con los mismos derechos y garantías de los demás partidos”, dijo. “En el pasado fuimos adversarios pero ahora nos convertiremos en aliados por el bien de Colombia”. Santos, quien fuera un agresivo ministro de defensa bajo el siniestro expresidente Álvaro Uribe, el mayor enemigo de la paz en Colombia, también afirmó que en el futuro las batallas se librarán únicamente en la arena política. “Ahora que pactamos la paz”, dijo Santos, “defenderé, con igual determinación, su derecho a expresarse y a que sigan su lucha política por las vías legales, así nunca estemos de acuerdo, esa es la esencia de la democracia”. El camino a recorrer va a ser largo y difícil, pero los colombianos, exhaustos por 50 años de violencia y muerte han escogido la paz. Una paz que solo será real con una democracia verdadera y mayor justicia social. n

Desde hace una década la comunidad mexicana poblana se ha encargado de representar, inculcar y portar con orgullo la identidad carnavalera en Filadelfia. ANA GAMBOA

echos a mano y de elaboración artesanal, cada año las calles del sur de Filadelfia son recorridas por cientos de carnavaleros portando trajes tradicionales durante la celebración del Carnaval de Puebla, fiesta originaria y traída desde el municipio de Huejotzingo, localizado en ese mismo estado mexicano. En Filadelfia el carnaval se ha realizado durante los últimos diez años, adquiriendo gran popularidad y haciendo historia, al haber formado parte de la “División de Filadelfia” en el desfile de los “Mummers” el año pasado. El público y otros curiosos que por lo general no están familiarizados con la tradición carnavalera, asisten para admirar el espectáculo de los coloridos trajes y máscaras, bailando al son de la música mexicana desde muy temprano y hasta que cae la noche. Está tradición simboliza el verdadero significado de la conmemoración del 5 de mayo, fecha que en México se celebra bajo un contexto histórico. La Batalla de Puebla ocurrida el 5 de mayo de 1862, fue un combate en el que México libró una heroica victoria contra la invasión del ejercito francés. Durante el carnaval, esta es representada a través de cinco trajes elaborados que conforman cinco batallones distintos que son el Zacapoaxtla, el Zapador, el Turco, el Francés o Suavo, y el Indio Serrano. Aunque a primera vista pareciera que cada cual trae su propio ritREAD IN mo, los pasos de cada batallón están ENGLISH fríamente calculados y en conjunto NEWS.com/OPINION muestran la fusión de culturas mezcladas tras la batalla. Un homenaje que este año celebró en Huejotzingo la edición 146, y que se espera que en Filadelfia se transmita de padres a hijos como expresión de identidad por muchas generaciones más. “Ser carnavalero no solamente es en abril durante el desfile sino todo el año. Es una forma de vida”, declaró en 2015 Edgar Ramírez, quien forma parte de la organización local “San Mateo Carnavalero”, la cual lidera la festividad en Filadelfia. Aun así un factor muy importante en la celebración de esta tradición es la identidad que cada uno de los participantes adquiere a través del vestuario que eligen. La creación de estos coloridos trajes puede tomar desde un par de meses y hasta un año, dependiendo de los detalles personalizados, con un costo que varía desde $15.000 hasta $40.000 pesos o más (entre $800 y $2.000 dólares o más). “Ellos nacen y crecen con la sangre carnavalera. A todos los que conozco desde chiquitos visten a sus hijos de carnavaleros. Hay mucha gente que es de la Ciudad de Puebla y van a bailar. Les pregunto que por qué y me dicen que es algo que les nace, que se desestresan y que [es una experiencia] que les gusta vivir”, dijo Óscar Tlacuilo, dueño del negocio ‘Bordados Match’, localizado en la Ciudad de Puebla. Por 15 años, este artesano de trajes se ha encargado de producir los laboriosos vestuarios tradicionales en el Carnaval de Huejotzingo. Actualmente ante la creciente tradición del carnaval por Estados Unidos, Tlacuilo cuenta con clientes no solo en Filadelfia, también en Nueva Jersey, California e Indianapolis. ■

ZAPADOR “Ser carnavalero no se expresa con palabras sino con hechos, con baile y nada más. Es un sentimiento inmenso que no se puede describir, no podría expresarlo con palabras”, dijo David Piña, presidente de “San Mateo Carnavalero quien ha participado en esta tradición desde los 11 años en su natal estado de Puebla. Desde que comenzó a participar en el carnaval eligió portar el traje de “Zapador” porque siempre fue el que más le gustó. No fue hasta después que comprendió el profundo significado de cada uno de estos batallones. “Para nosotros es muy importante llevar la tradición original con el mismo respeto y el mismo valor en este país. Tratando de llevarla con mucho cuidado para que tenga el mismo valor”, dijo Piña. “Estamos trabajando para que el carnaval sea más grande y enseñándoles a nuestros hijos su valor para que siga aumentando a través de los años”. Por ahora ha mantenido la tradición de identidad en sus hijos de 14 y 8 años respectivamente, quienes también portan el traje de “Zapador”. Considerado uno de los trajes más costosos, Piña invirtió alrededor de $1.800 dólares en él. “Se puede hablar del costo del traje, pero ya simbólicamente para nosotros como mexicanos realmente lo que representamos no tiene valor. Es algo que va más allá de lo costoso”, agregó.
El uso de gafas de sol es un elemento moderno que se adquirió en décadas recientes de la celebración.
El penacho utilizado por Piña durante el carnaval muestra el Escudo Nacional de México. Es uno de los símbolos más representativos y también el material más pesado a la hora de marchar.
La vestimenta distingue a cada uno de los batallones, que en el carnaval original incluye el uso de mosquetones cargados con pólvora sin perdigones. Esto último no se permite en la ciudad de Filadelfia. El gazne que porta el vestuario del ‘zapador’ es bordado a mano y usualmente lleva imágenes aztecas.
El conjunto completo del ‘zapador’ es reconocido como uno de los trajes de mayor costo debido a la cantidad de bordados a mano que requiere.
El diseño de los mosquetones es creado por cada uno de los participantes y puede variar en cuanto a diseño.

ZACAPOAXTLA Aunque originario del estado de Oaxaca y no de Puebla, Edgar Ramírez sintió un interés casi instantáneo por la tradición del carnaval en Filadelfia. “Después de diez años, ver la pasión y como ellos sienten y hacen las cosas pues uno se contagia. Definitivamente quieres ser como ellos porque tienen una fuerza natural, se sienten muy orgullosos de lo que es la tradición y uno se contagia”, dijo Ramírez. Aunque ha formado parte del comité organizador desde la segunda edición del carnaval, no fue hasta el este año que marchó junto al resto de los carnavaleros. “Primero el día 1 de enero en el Desfile de los Mummers, y después en el décimo aniversario en abril pasado”, dijo Ramírez. Su elección por el traje de “Zacapoaxtla” fue un poco sugerencia y otro tanto coincidencia, pues pensó que sería el que mejor le quedaría. Le tomó varios meses adquirir de forma separada los distintos elementos del traje, siendo el sombrero la pieza más laboriosa y costosa. “El sombrero me costó $3.000 pesos (alrededor de $160 dólares). En total invertí $1.300 dólares en el traje entero”, dijo Ramírez.
El gazne muestra la imagen de la leyenda de la ‘Mujer dormida’, la cual forma parte de la mitología mexica.

La indumentaria del “zacapoaxtla” se caracteriza por incluir un sombrero con tiras de papel de china, adoptado en la época moderna y siendo el artículo más laborioso y comúnmente más costoso del traje.
Creado a través de un laborioso bordado que se pueden observar a espaldas del traje, incluyen símbolos e imágenes aztecas.

TURCO Gerardo Chico ha residido en Filadelfia por 14 años. La tradición del carnaval fue inculcada por su padre desde que tenía 6 años. Aunque su prime traje fue el de “Zacapoaxtla”, a partir de la adolescencia decidió adquirir la identidad de el “Turco”. “Me gustaba mucho. Para él, el batallón de “Zacapoaxtla” representaba a su padre, y el de los “Turcos” representaba juventud. Desde entonces ha sido su traje de elección. “Para mí participar en el carnaval es algo que traigo en la sangre, es una tradición bien apegada a mi familia. Yo tengo 13 años que no he vuelto a visitar (Puebla), el sentimiento que tengo es el de recordar a mis raíces”, dijo Chico. “Es el único día que me siento libre, me olvido que estoy aquí y me transporto a mi pueblo natal”. Aunque sus hijos nacieron en Filadelfia, tiene muy presente heredar la tradición a su familia para que “no se olviden de dónde viene su padre y qué hacía en su pueblo natal. Ellos ya se sienten identificados con el traje”.
La imagen del ‘Turco’ se complementa con máscara, túnica, gazne, tocados de plumas, escudos y fusiles.
En la parte trasera del traje se observe el gazne bordado a mano, además de la caja de madera. En ella según explicó Chico, se acostumbra guardar la pólvora que se utiliza en el desfile original.
Al igual que en el resto de batallones, el mosquetón es una parte indispensable para el traje del ‘Turco’. El actual traje del carnavalero fue traído desde Puebla.

ZUAVO El batallón de los “Zuavos” fueron de los intengrantes más famosos del ejercito francés y de las fuerzas extranjeras que participaron en la batalla del 5 de mayo. A los integrantes de este batallón también se les conoce simplemente como ‘franceses’. En la imagen aparece el carnavalero Adelaido Torres, miembro de “San Mateo Carnavalero” y organizador del carnaval en Filadelfia. “El Cinco de Mayo es motivo de orgullo, pues las tropas mexicanas, menores en número, mal armadas y poco entrenadas derrotaron a los franceses, considerados entonces invencibles”, declaró Torres a EFE durante su participación en el décimo aniversario del carnaval en abril de este año. “El carnaval mantiene vivo ese orgullo en los que emigraron hacia Estados Unidos hace media vida, y les permite inculcar la tradición a sus hijos, ya nacidos en el país”, agregó el carnavalero.
El atuendo de este batallón consta de chaquetin color azul y rojo, botas y talines que se usan en el pecho.
A diferencia del resto de los batallones, el ‘Zuavo’ se distingue por portar botas militares.

El turbante que se coloca en la cabeza es uno de los elementos más reconocidos, además de la caja de madera que se lleva en la espalda y la típica máscara o careta. La máscara fue elaborada por Andrés Serrano, quien la volvió rosada y con barba rubia.
Un traje netamente artesanal en donde el bordado es a mano, al igual que los cotones, chaquetines y el sombrero. Su elaboración puede prolongarse hasta un año.

INDIO SERRANO El batallón del “Indio Serrano” representa a valientes residentes provenientes de la región Norte del Estado de Puebla que valientemente participaron durante la Batalla de Puebla. Identificados también con el batallón de los “Zacapoaxtlas”, aunque este último si era conformado por soldados militares. El traje de este batallón está caracterizado por incluir imágenes de la Virgen de Guadalupe en su gazne, adornos con perlas, listones y moños multicolores. A través del tiempo los miembros del carnaval cambiaron los ‘huaraches’ (sandalias) por tenis con moños de colores, multiplicaron pañoletas sustituyéndolas por los gaznes bordados. En la imagen portando el traje de “Indio Serrano” aparece el carnavalero Sebastián Lorenzo, miembro de la organización “San Mateo Carnavalero”.
Los orígenes de este tipo de comparsas parecen relacionarse al de los “zacapoaxtlas”, ambos ligados con la Sierra Norte de Puebla.
El vestuario de los “Indios Serranos” se ha transformado a través de las décadas. Agregando adornos con perlas, listones y moños multicolores.
El gazne bordado en el vestuario del ‘Indio Serrano’ por lo general lleva una imagen de la Virgen de Guadalupe, que representa la mezcla de la cultura indígena y la llegada de los españoles.
Tradicionalmente el vestuario del ‘Indio Serrano’ se portaba con ‘huaraches’ (sandalias) aunque en las últimas décadas se ha optado por zapato cerrado.

ara encontrar el primer vestigio del célebre chef mexicano Richard Sandoval entre fogones hay que remontarse a su infancia en la cocina de su abuela. “Pasé mucho tiempo con mi abuela, creo que ahí realmente es cuando empieza a formarse mi paladar [...] Desde muy chiquito siempre tenían quesos importados, mantequillas importadas... Entonces desde esa edad empiezo a probar ingredientes muy diferentes y creo que me ayudó mucho en mi carrera”, cuenta a AL DÍA News. adolescencia el sueño profesional de Sandoval se encontraba más cercano al mundo de la raqueta que al de la gastronomía. Dos disciplinas que, según asegura, comparten esa inyección de adrenalina que asegura necesitar. Cuando a los 18 años llegó el momento de elegir entre continuar con su carrera en el tenis o dedicarse por completo a la cocina, Sandoval decidió decantarse por esta última. Así entró a formarse en el Culinary Institute of America, en la ciudad de Nueva York. Al finalizar sus estudios regresó a México para trabajar con su padre, que poseía varios restaurantes en Acapulco. Tras cuatro años junto a él, fue el turno de emprender su camino en solitario con la apertura de un restaurante de sabor francés bautizado Savann and Savann. Desde entonces sus restaurantes se cuentan por decenas, concretamente cuatro, y se extienden por todo el mundo. Desde Estados Unidos hasta Dubai , Qatar, Serbia, Hong Kong o Tokio. “El denominador que todos tienen en común es que todos tienen comida latina. Hay algunos restaurantes en los que tenemos una fusión con asiático, pero son los únicos”, explica Sandoval. “La comida latina para mí es una de la cocinas más diversas, especialmente la mexicana. Tenemos muchas variedades de chiles, hierbas, especias, hay muchisimos moles etc... Es una cocina superdiversa, con sabores muy interesantes. A mí me gusta decir que es como una montaña rusa en tu paladar”.
Además de los restaurantes de creación propia, Sandoval también cuenta con alianzas con diversos hoteles de renombre para la creación de sus restaurantes. El último en requerir su experiencia ha sido The Ritz-Carlton de Filadelfia, donde el pasado jueves 23 de junio abría sus puertas Aquimero (10 Avenue of the Art Philadelphia, PA 19102. Tel. 215.523.8200). “Es un restaurante que yo llamo de marisco sostenible. Tratamos de buscar que los pescados que usamos sean sostenibles, es un menú como de las costas de México con sabor”, explica el chef. Su intención a la hora de desarrollar este restaurante, en cuya creación ha invertido cerca de dos años —y alrededor de seis meses en la elaboración del menú—, es que el público deguste el marisco a la mexicana. “Quería que la gente probara ese estilo de comer los mariscos con un poquito más de sabor, con especias y hierbas”, aclara. La carta también contiene sushi, ceviche, chicharrón de camarones, tacos de langosta, sopas y ensaladas. Por otro lado se encuentra lo que ha bautizado como ‘las especialidades del chef’, “que son platillos más elaborados”. Y por último, la parrilla, que permite al comensal elegir la proteína que desea y la marinación, además del ‘side’. Pero la variedad no solo se deja sentir en la comida, también en un menú de bebidas que incluye desde vinos, cervezas y cócteles hasta licores menos comunes como el sake o el Mezcal. n
