Message from the Editor Her name was Susie. She was a delight to adults and children alike. Her home was a place often visited by many. She was a deer that called Tim’s Ford State Park her home. I reminisced about Susie with a dear friend, about her and those days we spent up on a hill camping in the park. From our campsite it was a bit of a steep walk and we were crossing the footbridge leading to a winding path that would take us to the swimming pool, a children’s playground and the recreation hall. The nearby cabins were occasionally our choice for visits, but the campground was where we spent countless weekends. It was only a short drive from our homes in Winchester. We rode bikes with our kids, Gary and Christy, along the hillside bike paths that wound around offering occasional glimpses of the lake. We carried fishing poles to the water’s edge and it seemed we could see more fish from the bridge than we could actually catch. Some of my favorite memories are of sitting in lawn chairs around that campfire just talking about everything and nothing, just enjoying the ties that you have with special friends. My friend died a few weeks ago, joining his wife and my husband and son who were all so much entwined in those memories. His daughter and I still cherish our memories of bike rides, swimming, campfires and Susie. Tim’s Ford is just one of the beautiful places in our Southern Middle Tennessee area to make memories with friends and family. I hope you are taking advantage of many “Susie” moments! Brenda

Wasson M.D., has joined its medical staff. H&R Agri-Power Announces Acquisition of Yearwood Equipment Fayetteville, Tenn. — H&R Agri-Power announces the acquisition of Yearwood Equipment Co. located on Wilson Parkway in Fayetteville, Tenn. This will be H&R Agri-Power’s 13th location across its fivestate-footprint. This new H&R Agri-Power location will continue to offer the same great service and many of the same product lines previously offered at Yearwood, including Kubota, New Holland, Bad Boy Mowers, Hustler, Husqvarna, Bush Hog and ECHO. The Yearwood location and the already existing H&R Agri-Power location on Highland Rim Road in Fayetteville will both operate as full-service locations in Fayetteville. At the Yearwood location, the same friendly and experienced staff will continue to provide the best service to meet customers’ equipment, parts and maintenance needs. “We are excited to bring this location into our family of stores. They bring years of experience in the industry, as well as product lines that are new to us in the area,” said H&R Agri-Power owner, Wayne Hunt. Yearwood Implement was founded in October of 1951 by Zelma Yearwood, derived from a car dealership owned by the Yearwood family. Yearwood Implement originally sold Allis Chalmers tractors. The business was purchased by Bill Fitzgerald and Garner Peck in 1956, when they began selling the New Holland line of equipment. Wes Fitzgerald took over the business in the early 1990’s, and in 1993 the business was purchased by Philip Barnes, when the Kubota line of equipment was added to the dealership.

Chipotle and Rosemary Roasted Nuts • Vegetable oil • 3 cups whole roasted unsalted cashews (14 ounces) • 2 cups whole walnut halves (7 oz) • 2 cups whole pecan halves (7 oz) • 1/2 cup whole almonds (3 oz) • 1/3 cup pure maple syrup • 1/4 cup light brown sugar, lightly packed • 3 tablespoons freshly squeezed orange juice • 2 teaspoons ground chipotle powder • 4 tablespoons minced fresh rosemary leaves • Kosher salt Preheat the oven to 350 degrees F. Brush a sheet pan generously with vegetable oil. Combine the cashews, walnuts, pecans, almonds, 2 tablespoons of the vegetable oil, the maple syrup, brown sugar, orange juice and chipotle powder on the sheet pan; toss to coat. Add 2 tablespoons of the rosemary and 2 teaspoons of salt and toss again. Spread the nuts in one layer. Remove from the oven and sprinkle with 2 more teaspoons of salt and the remaining 2 tablespoons of rosemary. Toss well and set aside at room temperature, stirring occasionally to prevent sticking as they cool. Taste for seasoning. Serve warm or cool completely and store in airtight containers at room temperature for up to a week.

Tangy Meatloaf Burgers
• 1 small onion (1/2 sliced into rings, 1/2 diced) • 1 pound meatloaf mix (ground pork, beef and veal) or ground turkey • 1/4 cup fresh parsley, chopped • 1/2 cup breadcrumbs (preferably panko) • 1 large egg • 1 teaspoon sweet or smoked paprika • 1/3 cup ketchup • 1/3 cup duck sauce • Kosher salt and freshly ground pepper • 1 tablespoon extra-virgin olive oil • 4 potato buns or other rolls, split • Lettuce, sliced tomato and pickle slices, for topping • Sweet potato chips, for serving (optional) Preheat a grill to medium high. Soak the onion rings in a bowl of cold water. Meanwhile, combine the meatloaf mix with the diced onion, parsley, breadcrumbs, egg, paprika, 1 tablespoon each ketchup and duck sauce, 1 teaspoon salt and 1/2 teaspoon pepper. Gently form into four 1-inch-thick patties; make an indentation in the center of each. Brush the patties with the olive oil and grill until marked on the bottom, about 6 minutes. Meanwhile, mix the remaining ketchup and duck sauce in a small bowl for brushing; set aside a few tablespoons. Turn the patties, brush with the ketchup mixture and continue grilling until cooked through, about 5 more minutes. Toast the buns, if desired. Spread the buns with the reserved ketchup mixture. Drain the onion rings. Serve the patties on the buns; top with the onion, lettuce, tomato and pickles. Serve with sweet potato chips, if desired.
Apple Coffee Cake with Crumble Topping and Brown Sugar Glaze
Cake: • 1 stick plus 2 teaspoons unsalted butter • 1 1/2 cups packed light brown sugar • 2 large eggs • 2 cups all purpose flour • 1 teaspoon baking soda • 1 teaspoon ground cinnamon • 1/2 teaspoon salt • 1 cup sour cream • 1 teaspoon pure vanilla extract • 2 cups peeled, cored & chopped apples Crumble Topping: • 1/2 cup packed light brown sugar • 1/2 cup all purpose flour • 1/2 teaspoon ground cinnamon • 4 tablespoons unsalted butter, softened Brown Sugar Glaze: • 1/2 cup packed light brown sugar • 1/2 teaspoon vanilla extract • 2 tablespoons water Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter. In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges. To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes. To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

1 1/2 tablespoons dijon mustard 1 1/2 tablespoons mayonnaise 9 slices white sandwich bread 6 slices muenster or gouda cheese 6 slices oven-roasted turkey (leftover or deli-sliced) 6 slices baked ham (leftover or delisliced) 1/2 cup eggnog Generous pinch of freshly grated nutmeg 3 tablespoons unsalted butter Confectioners’ sugar, for dusting (optional) Cranberry sauce, for serving
Mix the mustard and mayonnaise in a small bowl. Lay out 3 slices of bread and brush each with about 1 teaspoon of the mustard mixture. Top each piece of bread with 1 slice each of cheese, turkey and ham. Cover with another slice of bread and brush with another teaspoon of the mustard mixture; top each sandwich with another slice each of cheese, turkey and ham. Brush the remaining 3 bread slices with the mustard mixture and place mustard-side down on top of the sandwiches. Trim the crusts, then wrap the sandwiches tightly with plastic wrap. Chill in the refrigerator at least 30 minutes and up to 6 hours. (Wrapping the sandwiches helps keep them compact.) Whisk the eggnog and nutmeg in a shallow bowl. Unwrap the sandwiches and dip in the eggnog, turning to coat both sides. Melt half of the butter in a large nonstick skillet over medium heat. Add the sandwiches and cook until the undersides are golden, 3 to 4 minutes. Add the remaining butter, flip the sandwiches and cook until golden on the other side, about 3 more minutes. Cut the sandwiches into quarters. Dust with confectioners’ sugar, if desired, and serve with cranberry sauce.
