Crispy Chicken Sandwich with Marinated Cabbage and Sour Cream

New potato and herb salad Ingredients: Ciabatta rolls Chicken Flour Egg Breadcrumbs Cabbage

1/2 Lime (other half for lentil chili)

Garlic scape

Sour cream

Potatoes

Herbs (dill, parsley, zataar oregano)

(For best results, read recipe fully before beginning.) 1) Prepare the ingredients:

• Heat a small pot of salted water to the boil on high.

• Wash and dry the fresh produce.

• Remove and discard core of cabbage. Thinly slice leaves.

• Remove and discard stems of herbs, and roughly chop leaves.

• Mince (finely slice) the garlic scape.

• Cut the 1/2 lime into 2 wedges.

• Slice the ciabatta rolls in half lengthwise.

2) Cook the potatoes:

• Heat a small pot of salted water to the boil on high.

• Rinse the potatoes, and add them to boiling water. Cook, uncovered, until tender when pierced with a knife, about 10 minutes. Drain.

• Using a fork, smash potatoes until broken down but still chunky.

• Add olive oil, the juice of 1 lime wedge, salt and pepper, and the chopped herbs. Set aside.

3) Marinate the cabbage and prepare the sour cream:

• While the potatoes cook, place sliced cabbage in a bowl, and season with salt, pepper, and the juice of 1 lime wedge.

• In a small bowl, mix the minced garlic scape with the sour cream, and season with salt and pepper. Set aside.

4) Dredge and cook the chicken and toast the rolls:

• Heat 2 teaspoons olive oil in a saute pan on medium-high until hot.

• While pan heats, spread the flour on a small plate. Crack the egg into a small bowl and whisk until smooth. Spread the breadcrumbs on a small plate.

• Season the chicken with salt and pepper, then coat on both sides in flour, then egg, then breadcrumbs.

• Add breaded chicken to pan and cook until golden brown, 2 to 3 minutes. Flip and cook until other side is golden brown and crispy, another 2 to 3 minutes. Transfer to a plate and let rest in a warm place. Wipe out pan and return to heat.

• Add 2 teaspoons olive oil to pan. Lay ciabatta rolls, cut side down, in pan, and toast until golden brown, 2 to 3 minutes.

5) Assemble sandwiches:

Spread garlic sour cream on toasted sides of rolls, add cooked chicken and marinated cabbage. Serve potato salad alongside. Enjoy!
