Pasta with Gorgonzola and Arugula Ingredients: Pasta
 Butter Bleu cheese Arugula Radishes (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Separate the radishes from the greens. Thinly slice radishes and roughly chop greens (discard any greens that don’t look nice). 2) Make the pasta: - Add pasta to boiling salted water and cook for 8 minutes. Drain, reserving 1/4 cup of the cooking water. - While the pasta cooks, add the butter to a small saucepan and melt over low heat. Add bleu cheese and cook, stirring frequently, until it melts. Keep warm while pasta finishes cooking. - In a large mixing bowl, combine cooked pasta with cheese sauce and arugula and toss well to combine and gently wilt the arugula. If the mix seems dry, add the pasta cooking water, 1 tablespoon at a time, until silky. 3) Finish the dish: - In a small bowl, combine radishes with greens and a glug of olive oil. Season with salt and pepper and toss to combine. - Divide pasta between 2 bowls. Top with radishes. Enjoy!
