Pasta with Purple Sprouting Broccoli Arugula Salad Ingredients: Pasta Sprouting broccoli Garlic Arugula Lemon (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Wash and dry the fresh produce. - Roughly chop the broccoli into bite-sized pieces. - With the flat side of your knife, smash the garlic. Peel and discard the papery skin. - Quarter and de-seed the lemon. 2) Cook the pasta: - Heat a pot of generously salted water to the boil on high. Add the pasta and cook, stirring occasionally, for 7.5 minutes. Drain, reserving 1/2 cup of the pasta cooking water. 3) Make the sauce and finish your dish: - While the pasta cooks, heat 1 tablespoon olive oil in a large saute pan on medium-high until hot. Add smashed garlic and cook until lightly browned and fragrant, about 30 seconds. Discard garlic.
