Smoked Pork Sandwiches with Kohlrabi Slaw Zucchini Fritters Ingredients: Pulled pork Buns Kohlrabi Cabbage Zucchini

1) Prepare the ingredients: - Slice the buns in half. - Grate the zucchini on the large holes of a box grater. Transfer to a mixing bowl, add a fat pinch of salt, and toss to combine. Transfer salted zucchini to a colander and set it over the mixing bowl to drain. (If you don’t have a colander, just leave the salted zucchini in the bowl. No problem.) - Trim the root and stem off the kohlrabi so you are left with just the bulb. Using a vegetable peeler or a sharp knife, peel and discard the skin. Grate the kohlrabi on the large holes of the box grater. - Grate or thinly slice the cabbage to match the kohlrabi. 2) Make the slaw: - Transfer the grated kohlrabi and cabbage to a small bowl, season with salt, pepper, and 1/2 the vinegar, and stir to combine. 3) Warm and season the pork: - Transfer pulled pork to a small sauce pan. Add spice/sugar blend and the remaining vinegar, cover pan, and warm through over medium heat, 5 to 7 minutes. If pork seems dry, add a splash of warm water and mix. 4) Make the fritters: - By now the salt has drawn a good deal of water out of the zucchini. Squeeze the salted zucchini dry (if it’s in a colander, press it down to help squeeze out the water). In a clean mixing bowl, combine the grated salted squeezed zucchini, the egg, and the flour. Season with salt and pepper and mix thoroughly. 5) Cook the fritters and toast the buns: - Heat 1 tablespoon olive oil in a large skillet (non-stick if you have one) on medium-high until hot. Using a spoon, scoop spoonfuls of zucchini batter and gently place in the hot oil. Press gently with a the back of the spoon to flatten them. Fry until golden brown and set, about 2 minutes, then carefully flip and cook until browned on the other side. Transfer to a paper towel lined plate. - Wipe out pan, add 2 teaspoons olive oil and return to medium heat. Add buns, cut side down, and toast until golden brown, 2 to 3 minutes. Transfer to plates. 6) Assemble your dish: - Divide the warm seasoned pork between 2 bun bottoms, top with the kohlrabi slaw, and then the top buns. Searve the zucchini fritters alongside. Enjoy!
