Seared Rockfish Arugula and Heirloom Potatoes Ingredients: Fish Potatoes Arugula Spice Lemon Shallot (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Wash and dry the fresh produce. - Cut the potatoes into large bite-sized pieces. - Peel the shallot, then finely mince. - Quarter and de-seed the lemon. - Season the fish on both sides with salt, then lay on a paper towel lined plate at room temperature. 2) Cook the potatoes: - In a medium sauce pan, combine the prepped potatoes with enough cold water to cover them. Add a generous amount of salt (the potatoes won’t absorb most of this, so add abundantly) and bring to the boil on high. Reduce heat to medium and simmer until potatoes are tender when pierced with a knife, 10 to 15 minutes. - Drain thoroughly, then return to pot. Using a fork, gently smash the potatoes and mix them with minced shallot, a generous glug of olive oil, salt, pepper, and a drizzle of the paprika oil 3) Make the paprika oil: - While the potatoes cook, combine 2 tablespoons olive oil and the spice in a small saute pan and set over low heat. Warm until oil becomes fragrant and takes on the color of the spice, about 5 minutes. Remove from heat. 4) Finish the potatoes: - When the potatoes are tender, drain them thoroughly, then return them to the pot and mix with minced shallot, a generous glug of olive oil, salt, pepper, the juice of 2 lemon wedges, and a drizzle of the paprika oil. Cover and set aside while you cook the fish. 5) Cook the fish: - Heat 2 teaspoons olive oil in a large saute pan over medium-high until hot. Add fish, dry side down, and cook undisturbed under lightly browned, and opaque at edges, about 4 minutes. Carefully flip filets and cook for 1 to 2 minutes more. 6) Finish your dish: - Into the potatoes, toss the arugula to gently wilt. Add more olive oil and the juice of the remaining lemon wedges. - Divide the potatoes/arugula between 2 dishes, then top with the cooked fish. Drizzle the remaining paprika oil over the fish and potatoes. Enjoy!
