Sloppy Joes Roasted Potatoes Ingredients: Ground beef Onion Sweet peppers Potatoes Spice Sauce Buns (For best results, read recipe fully before beginning.) 1) Prepare the ingredients: - Wash and dry the fresh produce. - Prepare the peppers: remove and discard the stems and seeds, then seal dice peppers. - Slice and discard a thin slice from the root and stem end of the onion. Halve, then peel and discard the papery layers. Small dice onion. - Halve potatoes lengthwise.
 Slice buns in half crosswise. - Heat oven to 425 degrees F. 2) Roast the potatoes: - In a mixing bowl, combine the prepped potatoes with salt, pepper, and olive oil. Arrange in a single layer on a sheet pan and transfer to the oven. Roast until browned in spots and tender when pierced with a knife, about 15 minutes. Remove from oven. 3) Cook the beef: - Heat 1 tablespoon olive oil in a large saute pan on medium-high until hot. Add ground beef and cook, breaking up with a spoon, until browned thoroughly but not cooked all the way through, about 5 minutes. Transfer to a bowl with a slotted spoon, leaving as much fat in the pan as you can. - Add diced onion and diced peppers, season with salt and pepper, and cook, stirring occasionally, until softened and translucent, about 5 minutes. - Add spice and stir to combine. Cook until fragrant, about 30 seconds. - Add sauce and return seared beef to the pan. Bring to the simmer and cook until reduced to a sauce consistency, about, about 10 minutes. Taste and season with salt and pepper. 
 4) Toast the buns: - While the sauce cooks, heat 2 teaspoons olive oil in a wide-bottomed saute pan (non-stick if you have one) over medium heat until hot. Add sliced buns, cut side down, and cook until toasted and golden brown, about 3 minutes. Remove from heat. 5) Assemble the sandwiches: - Spoon sauce between toasted buns and serve roasted potatoes alongside. Enjoy!
