Spaghetti with Willapa Bay Clams, Garlic Scapes, and Parsley Local lettuces and vinaigrette Ingredients: spaghetti clams garlic scapes parsley butter lettuces vinaigrette 1) Prepare the ingredients: Heat a large pot of generously salted water to the boil on high. Wash and dry the fresh produce. Wash the clams in several changes of cold water. Drain thoroughly. Thinly slice the garlic scapes. Remove and discard the tough parsley stems. Roughly chop the leaves. Put lettuces in a salad bowl. 2) Cook the pasta: To the boiling salted water, add the spaghetti and cook, stirring occasionally, 7 1/2 minutes. Drain, reserving 1/2 cup pasta cooking water. 3) Make the sauce: While the pasta cooks, heat 2 teaspoons olive oil in a large saute pan on medium-high. Add garlic scapes and cook 30 seconds, stirring constantly, or until aromatic and slightly softened. Add clams and 1/4 cup warm water. Cover pan and cook until clams pop open, about 3 minutes. Add butter and cooked spaghetti, and the reserved pasta cooking water. Simmer, stirring constantly (but gently so the clams don’t fall out of their shells), until spaghetti is coated with sauce. Add chopped parsley and stir to combine. 4) Dress the salad and finish your dish: To lettuces, add as much of the vinaigrette as you would like. Toss to combine. Divide pasta between 2 dishes. Finish with a drizzle of olive oil. Enjoy!
