Welcome!
If you have arrived in Yarmouth by car, you may have noticed that our two town exits on Route 6 have new numbers. What was once Exit 7/Willow Street is now Exit 72 and Exit 8/Union Street is now Exit 75, as the Commonwealth of Massachusetts has recently aligned its statewide highway numbers to meet the federal standard that reflects distances from route origin. Luckily, no matter what our exits are called or numbered, both still lead you to a delightful array of fun, history and culture in the town of Yarmouth! This guide provides you with some suggested itineraries for your visit, but regardless of how long you have to enjoy our charming town, there are multitudes of outdoor activities, restaurants, museums and shops to entertain you while you are here. Here in Yarmouth you will also find wonderful nature trails, stunning beaches, peaceful ponds and friendly parks for both recreation and relaxation. In addition, our villages of South Yarmouth, West Yarmouth and Yarmouth Port, which stretch between the coastlines of Nantucket Sound and Cape Cod Bay, offer you a glimpse into centuries of Cape Cod history, as well as a chance to explore contemporary arts and culture. Our Chamber of Commerce is ready to provide you with everything you need to navigate our town and find your own favorite spots in Yarmouth. We hope you will stop by our Visitor Center located at 424 Route 28 in West Yarmouth (take new Exit 72 to reach us!) and that this guide will help lead you to the treasures and pleasures of our town.

THERE IS AN OLD ADAGE that the only constant in life is change, and to be on Cape Cod is a chance to be reminded of that truth on a regular basis. There is a lure to the remembered Cape, and to the specific towns we visited in our youth, just as there is always an opportunity to make new discoveries in this phenomenal place. I spent many of my own childhood summers in Yarmouth, hanging out in my grandparents’ backyard, going to Smuggler’s Beach with my cousins, and buying freshly made saltwater taffy and root beer from stores along Route 28. I recall crowding into my Uncle Bill’s car to go see July 4 fireworks on Nantucket Sound — he always knew the best and most secret places to park — choosing beach books at the South Yarmouth library with my mom and riding my bike with my brother to see the old houses, windmills and fishing boats along Bass River. Yarmouth today feels like it is both the same old town and a brand new one — there is still the cozy charm and slow pace, the beaches are as beautiful and the ice cream just as delicious. But there are also vibrant new businesses, a renovated Cultural Center, young families making Yarmouth their home and a renewed community passion for preserving and protecting our incredible natural resources. After many years living and working in other places, I have found myself back in Yarmouth. I now live full time with my husband in my grandparents’ old house, happily revisiting treasured spots while uncovering new delights in this historic seaside town. In these pages our team has compiled what we hope is an inspiring look at some of the things we each love about Yarmouth. We encourage you to try the fresh harvest from a local cranberry bog or oyster farm, travel the popular Sand Sculpture Trail,
visit the favorite spots of photographer Betty Wiley, or catch an exciting Yarmouth-Dennis Red Sox baseball game. And make sure to find time to relax and play on our stellar beaches, with their soft sand and warm water, enjoy our local cuisine and take home a souvenir from our eclectic collections of shops. Cape Cod’s FREE Sand Sculpture Trail is back for 2021! As one of Yarmouth’s biggest attractions, this trail features family-friendly, 3-ton outdoor sand sculptures. Each sculpture is unique and is hand carved by nationally recognized Fitzysnowman Studios. The sculptures will be available for viewing from Memorial Day through Columbus Day. Funded in part by the Town of Yarmouth’s Tourism Revenue Preservation Fund.

FAMLY BEACH DAY When you have just one day to escape to the Cape, we suggest picking a sunny one and hitting the sand and sea with the whole family.
ARRIVE IN THE MORNING and head to one of Yarmouth’s spectacular beaches. We recommend any of the public options, particularly those along South Shore Drive in South Yarmouth, such as Bass River (Smuggler’s), Parker’s River, or Sea View, or our largest saltwater beach, Seagull, which is in West Yarmouth off South Sea Avenue. Each of these beaches faces Nantucket Sound, which offers warm, calm water for swimming. (For information on all of Yarmouth’s beaches, check out our Beach Guide on page 22) AFTER A FEW HOURS AT THE SHORE , stop in to one of our many family friendly restaurants for lunch (Restaurant guide page 51), and then pick up some clubs for a round of miniature golf! (Things To Do page 42) With several themed mini-golf centers clustered on Route 28, your family will find the perfect putt-putt spot.

FRIDAY EVENING: Settle in at your accommodation (see Lodging guide on page 39) in time for a sunset stroll on Bass Hole Boardwalk, which juts out into Cape Cod Bay alongside Gray’s Beach in Yarmouth Port. Then choose among a variety of cuisines — Italian, Asian, seafood, traditional New England…just to name a few — at one of our fine dining options for a leisurely dinner. (see Restaurant guide page 51)
SATURDAY MORNING: Up and at ’em this morning? You can opt for activity on both land and sea in Yarmouth! Choose a round of golf at one of Yarmouth’s three highly rated public golf courses (Bass River, Bayberry Hills or Blue Rock) or head down to Bass River to rent a kayak or paddle board for a sightseeing workout on the water. SATURDAY AFTERNOON: After a tasty lunch at any one of our more casual restaurants, spend the afternoon shopping for treasures of all kinds. You can find art, antiques, books, souvenirs, vintage clothing, beach supplies and other unique gifts throughout town. (Shopping guide page 55) SATURDAY EVENING: Enjoy a live performance or lecture at the Cultural Center of Cape Cod, a vibrant arts center housed in two renovated historic buildings on Old Main Street, which has been presenting instruction, entertainment, and exhibitions in the visual, literary, and performing arts since 2007.
SUNDAY DAY: After a hearty breakfast at one of Yarmouth’s
popular brunch spots (Restaurant guide page 51) get out and walk the beautiful nature trails off Route 6A behind the Kelley Chapel, managed by the Historical Society of Old Yarmouth, including a stop by the newly constructed Turtle Wetu, a unique, traditional Native American dwelling once common on the Cape. Nearby is a magnificent European weeping beech tree estimated to be approximately 150 years old, which is part of the Captain Bangs Hallet House Museum property. Get your fill of history, architecture and culture with visits to this former sea captain’s home, a tour of author and illustrator Edward Gorey’s house on the opposite side of the green, a stop at the circa 1870 Yarmouth New Church across Route 6A (Old King’s Highway) and, finally, a visit to the eighteenth century Georgian-style Winslow Crocker House before beginning your drive off-Cape.

SOMETHING FOR EVERYONE You have a whole week on the Cape! Lucky you and smart choice to pick Yarmouth as your destination because there is truly something for everyone in our town. Whether you are staying at one of our hotels, motels or inns, or have rented a cozy cottage for your visit, you have a world of activites available, and many chances to learn and explore at your doorstep.
ANY DAY OF THE WEEK might be a great beach day, so be sure to look at our Beach
guide (page 22) to choose from sandy spots on Nantucket Sound, Cape Cod Bay and the many freshwater ponds throughout town. And while you have sand on your mind, be sure to follow the charming and eclectic entries in the Yarmouth Sand Sculpture Trail as you make your way through town this week. (see Sand Sculpture story page 16)
SATURDAY AFTERNOON: Unpack and unwind, and why not get a taste of the sea your first night here? If you have your own kitchen and/or patio, pick up some fresh lobsters or shellfish and treat everyone in the house to a clam bake in the backyard. Or, if you have chosen one of Yarmouth’s many comfortable accommodations options, then you also have dozens of seafood restaurants — from casual fried clam take-out to sit down sushi — to select from a delicious fish dinner tonight. SUNDAY: Head out on the Cape Cod Rail Trail, which now begins right here in Yarmouth! Named for an old railroad line that it follows, this well-paved 27 mile walking, jogging and biking trail runs through forests, past kettle ponds and cranberry bogs, and through several Cape towns before ending near the National Seashore on the Outer Cape. Join the trail in Yarmouth at Peter Homer Park on Old Townhouse Road or the Station Avenue Trailhead. MONDAY: Go fishing! Get your own bait and tackle at Riverview Bait & Tackle on Route 28 and make your way to one of Yarmouth’s best fishing spots for incredible freshwater and saltwater angling. Or you can let a professional captain lead the way by chartering a day trip from one of several fishing tour companies in town, some of which launch from historic Packet Landing Park and Marina on Bass River. TUESDAY: Talk to the animals at Taylor Bray Farm, Yarmouth Port, TAYLOR BR AY FARM
a 22-acre, circa 1780, working farm with friendly goats, chickens and even a Scottish Highland cow. Then, later in the day, let the kids go a bit crazy at the Cape Cod Inflatable Park on Route 28, a fantastic wet and dry amusement park, with interactive and challenge zones for older kids and adults as well.

WEDNESDAY: New England weather is
always a variable, so if you are faced with a rainy day during your visit, never fear. Yarmouth has plenty of entertainment even if the clouds are gray. First take everyone on an informative pirate adventure with a trip to the Whydah Pirate Museum in West Yarmouth to see artifacts from the Whydah, a galley ship that was captured and used by pirate Captain Samuel “Black Sam” Bellamy before wrecking off the coast of Cape Cod in 1717. Then try your hand at either candlepin or ten pin bowling at Ryan Family Amusements in South Yarmouth, which also has a snack bar, freshly prepared pizza, and a game room with prizes.
THURSDAY: You can find all sorts of fresh produce, baked goods, and handicrafts at the Bass River Farmers Market, which runs Thursday and Saturday mornings on Old Main Street, just opposite the South Yarmouth Public Library. Stroll or drive along picturesque Pleasant Street to the historic Judah Baker Windmill on Bass River and end your day with a beach picnic at one of the beaches on South Shore Drive.

FRIDAY: Practice your swing at the batting cages at Skull Island Adventure Golf & Sports World on Route 28 in South Yarmouth, which also features a spectacular Swiss Family Robinson
Caribbean island-themed miniature golf course, go-kart track, driving range and game room. Hitting some baseballs should inspire you to head over to Dennis-Yarmouth Regional High School to catch a Cape Cod Baseball League game and root for the Yarmouth-Dennis Red Sox! For more than 100 years, these competitive games have highlighted the major league–ready talents of top college players.
SATURDAY MORNING: Goodbyes are never easy, but you have a week’s worth of wonderful Yarmouth memories to look back on. It actually takes months of planning and several intense days of shoveling, carving and coating to create the intricate entries in the popular Yarmouth Sand Sculpture Trail (see Sidebar). “We do it in such a way to give everyone the longest viewing season as possible,” says Sean Fitzpatrick of Fitzysnowman Studios, the sand and ice sculpting company he runs with his wife Tracy. Fitzpatrick has been perfecting his long-lasting sand sculpture technique for more than twenty years, when he first was asked by his daughter to build her a snowman. “I was an auto mechanic for twenty-two years, but was always looking for artistic things to do,” he says. “I began with snow, but immediately expanded into sand, and now I’ve added pumpkins to my repertoire as well as 3-D street art.”
Business leaders in Yarmouth first reached out to Fitzpatrick ten years ago to help utilize funding from the Commonwealth to support tourism by crafting a few sand sculptures to promote a handful of local companies. “We had six businesses sign up for the trail that first year,” says Fitzpatrick, “and we also did one big sculpture on the beach.” The sand sculptures proved to be a hit, and by the next year more than thirty businesses joined the trail. “They all got really excited about participating,” says Fitzpatrick. “This is the largest sand sculpture trail in the United States, having the most sculptures in a designated area,” says Mary Vilbon, Yarmouth Chamber of Commerce Executive Director. “The Yarmouth Sand Sculpture Trail has truly become an annual tradition for our residents and guests to enjoy.” While there are new businesses joining the trail every summer, many companies have been part of the fun for years. The Yarmouth branch of Kinlin Grover Realty has been commissioning sculptures for over five years, first in South Yarmouth and now,

more recently, at its location in Yarmouth Port. “It is really important to us to participate and support the town,” says Annie Blatz, Branch Executive of Kinlin Grover’s Yarmouth Port, Brewster, and South Yarmouth offices. “The sculptures really pull people in,” she says. “Visitors stop by, take pictures and ask us for maps for the entire Sand Sculpture trail.” Each year Kinlin Grover’s sculptures represent some kind of castle. “We always ask for something whimsical,” says Blatz, “and we love the castle theme, since for every man or woman, their home is their castle.” While she cannot directly attribute a home sale to their sand sculptures, “You never know what might have inspired someone to buy a house in town!” she says.

Like the other participating businesses, Kinlin Grover gives Fitzpatrick their ideas and he creates designs to match. Last year, despite the Covid-19 pandemic, the trail still proved to be a popular attraction since it was an outdoor experience, and some of the sculptures reflected the community’s appreciation of those who were on the front lines. “The Dunkin’ on Station Avenue usually asks for a sculpture dedicated to first responders,” says Fitzpatrick, “but last year they decided they wanted to honor essential workers, and we brought back Fred Who Makes the Donuts.” One of the most enjoyable aspects of the trail for Fitzpatrick is seeing people’s reactions as he builds the sculptures and Continued on page 20

YARMOUTH SAND SCULPTURE TRAIL How do they do it? Seafood Sam’s
Sean Fitzpatrick of Fitzysnowman Studios has been developing his sand sculpture technique for twenty years, and says that it is “not magic, but physics” that makes his sculptures hold together and stand up to wind, rain and time. First, Fitzpatrick strives to get the cleanest sand possible from his quarry suppliers. (He always aims to limit any weed growth in the sand.) Then he will drop a sand pile at the designated location, where the forms for the sculptures have been built on-site. His designs are carefully constructed to balance strength with aesthetics. His team spends at least a day shoveling sand into the forms, six inches a time, adding water, compacting it down and getting any air out, which helps prevent erosion. Eventually it becomes a carvable block that won’t collapse. Once they have carved the detail into the sculpture, they spray the sand with a solution of Elmer’s glue and water, then finish with a light coating of clear acrylic spray paint. This combination forms a good barrier from environmental damage. “It keeps the sand from drying out, but also prevents any extra water from coming in,” says Fitzpatrick. “This helps to give the sculpture the longest life possible.” Fitzysnowman.com

Continued from page 18 when they are finally unveiled. “We are at each location for quite a bit of time, and you get to interact with folks,” he says. “They see a big pile of sand and the work going on and they stop to watch.” He says it is always exciting when the finished project is revealed. “It’s always a surprise and it is such a cool thing to see all the smiles on everyone’s faces.” The intricate and playful designs are truly impressive and have represented trends, whimsical characters, historic landmarks, events, local attractions and collages over the years. “The artists do an amazing job incorporating these ideas into sand,” says Vilbon. “The Sand Sculpture Trail is one of the most popular

attractions on Cape Cod. People love the creativity, detail and the design of the sculptures that change annually.” “We do try to do something unique each year,” says Fitzpatrick, “so people can see something different every time they travel the trail. It has developed into something really fun for locals and visitors.” Kinlin Grover’s Blatz feels that it gets the town spirit going. “It is good for merchants and good for tourism,” she says. “We will continue to be part of the Yarmouth Sand Sculpture Trail as long as it continues. We would never even consider not having one of our sand castles up each year!”

OFF CENTER STREET, YARMOUTH PORT
By far, this has to be one of my very favorite spots on the Cape. It’s very popular at sunset and for good reason—you have an expansive view of the beautiful marsh that overlooks Cape Cod Bay. You can even see Sandy Neck Lighthouse in Barnstable across the bay. The image was taken in late August right at sunset. I prefer to photograph this location when there is a mid to high tide. It can also be a great spot for storm watching, providing good vantage points as summer storms move from west to east. There are so many different compositions that you can photograph at this spot and it’s beautiful at almost any time of the year. I particularly like the fall when the marsh grasses turn a beautiful shade of gold.

Judah Baker Windmill 89 RIVER STREET, SOUTH YARMOUTH
Great spot at sunrise or early evening when the sailboats pass by below along Bass River. Windmills have a long history on the Cape, and this windmill is in a beautiful setting. You can see across the river over to the marsh and West Dennis Beach. In the summer months, the sun comes up directly across from the windmill. I like this spot in the summer and fall months. In early/mid June, the beach roses are in bloom, which is when this image was taken in the early evening before sunset.

Tips for iPhone shooters:

What is your subject? Having a strong, interesting subject helps. Think about what you are photographing and why. Decide what you want to call attention to and make that the focal point of your image.

Backgrounds are as important as the subject, so keep backgrounds uncluttered so not to detract from your subject. Many of the newer iPhones have a portrait mode which can soften or blur the background. You can use it not only when photographing people, but also animals and flowers!

Vary your perspective! So many people have a tendency to photograph subjects and scenes at eye level. Instead, try getting down low or up high, as it can make a real difference in your images, especially if you have a wide-angle lens on your phone. When photographing kids or animals, it really helps to be at eye level with your subject.

Time of day: My favorite times to photograph are early in the morning at sunrise and at sunset when the light is soft and not so harsh. Avoid the harsh, contrasty light at midday unless you want to capture shadows or you are looking for a particular creative look. Overcast and cloudy days work best when photographing people.

Processing your images: Skillful editing can make or break a shot. My favorite apps for iPhone images include Snapseed, Distressed FX, image blender, and lens light. Snapseed is my favorite. It is a fantastic app for editing images on your iPhone and is very easy to use. I even use it on the images taken with my camera before posting on social media!

Get in close: Don’t use digital zoom on your iPhone. It can lead to poor image quality. Instead, purchase a telephoto lens for your iPhone or zoom with your feet! Popular lenses from a company called Moment are really good quality. They make wide angle and telephoto lenses for camera phones. Check them out, since they can really help when you want to get close to your subject.

Photographing action and movement: Tip: If you want to capture movement, keep holding down the shutter button to take a burst of photos. You’ll get every step in a sequence, which will lead to a handful of action shots to choose from. Then go to your camera roll and click on what seems like just one photo. The “select” function will let you scroll through and pick your favorites.

Focusing and adjusting exposure: You can tap on your subject to focus, which can be the difference between a sharp image and one that is blurry. You can also adjust your exposure and make your image brighter (or darker) by sliding your finger up or down after you tap on your subject. Lock exposure by pressing firmly on your subject or other spot you want to choose. Continue holding your finger down until the AE/AF LOCK text appears at the top of your screen. I often underexpose my images knowing that I can always brighten them a bit when editing. If your image is too bright, causing what is referred to as “blowing out the highlights,” often you cannot recover those lost details in the highlights.

Taking the shot: While using the Camera app on your phone, having to tap the shutter icon on the screen itself can often cause camera shake or lack of focus. Instead press either of the volume buttons on the side of your iPhone to capture the shot. This lets you hold the phone horizontally like a conventional camera, giving much more stability to take a better picture.

Make sure to clean your lens! It seems so obvious, but many people don’t think about it and let’s face it, the lenses on our iPhones can get really dirty!

This is a beautiful drive. I particularly love this area with the old Captain’s homes in the summer months when the roses and hydrangeas are in bloom. This area has a very old “Cape Cod” feel.

Mill Creek
KEVENEY LANE, YARMOUTH PORT
Always a favorite spot of mine for sunsets during the summer months. Beautiful marsh and a great spot for kayakers. I find this spot to be best when there is a high tide. At sunset, the setting sun casts a beautiful warm glow onto the boat house. This image was taken in mid-June very early in the evening. To reach this location, take Keveney Lane off Route 6A in Yarmouth Port. There is not much parking, so the best plan is to park along the road. This is a bit off the beaten track and is frequented by fishermen.
Seagull Beach
SEA GULL ROAD, WEST YARMOUTH
This is a beautiful beach, complete with charming beach fences, which are a favorite subject of mine to photograph. Sunset in the summer months is always nice here. I think it is one of the best beaches on the sound side. It’s a great place to take kids and also a good spot to watch the fireworks in Hyannis. This image was taken on July 4 close to sunset; the best part is that you can hang out and wait for the fireworks to start in Hyannis without dealing with the crowds.

ape Cod and cranberries just go together. Due to a combination of the region’s unique soil, a plentiful water supply, natural kettle pond topography and a reasonably long growing season, these native berries flourish on the sandy peninsula. The Wampanoag people have been harvesting wild cranberries for 12,000 years, using the tart fruit for food, medicine and textile dye. Commercial cultivation began more recently, in 1816, when a local Revolutionary War veteran, Captain Henry Hall, realized that sand cover increased the yield from the wild cranberry bogs on his property. He began to replant vines, scattering sand over them, thus beginning a successful industry that has been going strong for 200 years and counting. You can still find numerous locations on the Cape that grow cranberries, from large-acreage bogs to smaller, family-run businesses, such as Fresh from the Vine cranberries in West Yarmouth. Owned by Chris
and Lindsay Wilson, the farm uses both dry and wet harvesting methods to collect berries. “Our property is unique when it comes to water,” says Chris Wilson. “It has a series of natural springs that flow very well.” You can buy the Wilsons’ reasonably priced, freshly sorted cranberries from their distinctive cranberrycolored bus/farm stand located next to their bog on Route 28. The fruit is available for purchase throughout the fall harvest season into December, depending on the supply. “People love getting fresh cranberries, straight from the source,” says Lindsay Wilson. “Having a local source is important for the community.” And in addition to getting a supply of delicious berries to take home, visitors will find that the Wilsons are more than happy to answer questions and let you take a short walk around the property to see what a cranberry bog looks like. Cranberry Chutney
Here is a simple chutney for use in various ways: to top soft, warm brie for an appetizer; as a condiment with lamb and game meats; to serve with Indian style curries; and as a party spread on crackers. Ingredients: • 1 pound fresh cranberries, picked over • 1 Granny Smith apple, peeled, cored, and chopped • 1 medium onion, peeled and chopped • 1¼ cup dark brown sugar • ½ cup white raisins • ½ cup cider vinegar • ½ cup water • ¼ cup minced fresh ginger root • Zest of 1 large orange, minced and juice • ½ teaspoon chili powder • ½ teaspoon kosher salt Directions: Combine all ingredients in a large saucepan. Mix well, bring to a boil. Reduce heat, and cook until thick, about 25 minutes, skimming the foam from the surface. Pour into 8-ounce sterilized jars and seal. (Yield: 4 to 5 8-ounce jars) 34

Italian Ricotta Cheesecake This ricotta cheesecake is similar in style to an American cheesecake but is a little lighter. Ingredients: • 3 cups (1 pound 8 ounces) whole milk ricotta cheese • 1 cup (8 ounces) mascarpone cheese, softened • 1 cup white sugar • 1 tablespoon all-purpose flour • 1 /8 teaspoon salt • 4 eggs • 1 teaspoon lemon extract • 1 teaspoon vanilla extract • 1 tablespoon lemon zest • 1 tablespoon orange zest For the crust: • 3 to 4 (4-inch) biscotti, to make about 1 cup • 1 stick butter, melted

Place the ricotta and mascarpone cheese in a large mixing bowl; with an electric mixer beat until smooth. Add the sugar, flour, and salt; continue beating the mixture until well combined. Beat in the eggs one at a time, mixing well. Beat in the lemon extract, vanilla, and both zests until thoroughly mixed.

Pour batter into the prepared pan, place in the oven's center, and bake for about 75 to 90 minutes, until the top is a light golden color.

Bring to a boil and simmer for about 8 to 10 minutes until sugar dissolves. Most of the cranberries should be whole. Remove from heat, cool before using. Cover top of cheesecake with the cranberry mixture before serving.

ill Creek Oyster Company owner John Reeve started his career as an oyster farmer five years ago when he realized a gold mine was at the end of his own street. “There were shellfish farms in Barnstable and Dennis, but nothing in Yarmouth Port,” says Reeve, whose aquaculture farm is located on the tidal flats of Cape Cod Bay, where ponds and marshes were formed millions of years ago from receding glaciers all along Cape Cod. “Water from these ponds is packed full of minerals and flows directly into our lease,” says Reeve, “which gives the oysters an ample food source to grow and thrive.” Calling himself Chief Oysterman, Reeve is joined in his efforts by his wife, Stephanie (“Chief Oysterwoman”), adding to the town’s long history of ocean-focused industry. “Entrepreneurs at the end of the nineteenth century created a three-story brick building with a tall chimney for salting cod,” says Reeve. “Due to the extreme tides, they also built a pier so the fishing boats could tie up and unload their catch. Some remains of the old dock are still there.” While still maintaining his management consulting practice, which he has run with Mill Creek Oyster a business partner for two decades, Reeve relishes working on the flats during low tide, Company, LLC harvesting delicious treats from the sea. “Even during the pandemic, which was a challenge, Located in Cape Cod Bay we have been making it work,” he says. Tomato Aspic If you are serving oysters to a large group, this is the perfect answer. This recipe is a jellied twist on the classic cocktail sauce. It makes an excellent presentation and is easy to make. Serve with small spoons for adding a tasty dollop atop each chilled oyster. Ingredients:

• 1 envelope Knox unflavored gelatin • 1½ cups tomato juice, divided • ½ teaspoon salt • ½ teaspoon sugar • 1 teaspoon Worcestershire sauce • 1½ teaspoons Tabasco • 2 tablespoons lemon juice and zest of one lemon • 1 tablespoon horseradish
Pour ½ cup of tomato juice into a small saucepan and sprinkle the gelatin over the tomato juice to soften. Place on low heat and stir until gelatin has dissolved. Remove from heat and stir in the remaining 1¼ cups of tomato juice and seasonings. Turn into a 2-cup mold and chill in the refrigerator until firm. Unmold on a serving plate and surround with opened oysters.

Mignonette Sauce Make the mignonette at least 4 hours ahead of time, preferably a day or two, allowing the flavors to blend and the shallots to mellow. Ingredients: • ½ cup minced shallots (about 2½ ounces) • ¼ cup Champagne or rice vinegar • 1 /8 teaspoon sugar • 1 /8 teaspoon salt • 1¼ teaspoons finely crushed black peppercorns (do not use pre-ground or powdered pepper). The back of a knife works well for crushing the pepper. * If using seasoned rice vinegar, omit the sugar and salt. Directions: Peel and finely mince the shallots. Place shallots in a non-reactive small glass bowl. Add the Champagne vinegar, sugar, salt, and freshly crushed pepper. Stir with a spoon to combine. Cover with plastic wrap and chill in the refrigerator for a minimum of 4 hours. The mignonette flavor will be better blended the longer it sits. The crushed black peppercorns may sink to the bottom of the bowl as the mignonette rests; give it a little stir. The mignonette will last up to a month in the refrigerator. 38

The MidCape is a dog-friendly place, but towns do regulate their presence, especially on beaches in summer, with dogs banned from mid-May to mid-September. Yarmouth offers dog parks where your pet can socialize with fellow canines. In general, keep your dog leashed at all times (unless visiting the dog parks) and check with the town website for specific rules and regulations. Be sure to clean up after your dog!
