Penrose Room expands its horizons with globally inspired cuisine.

Penrose Room chef de cuisine Luis Young draws inspiration from his diverse influences, as well as his experience cooking in some of the world’s finest restaurants. Young, originally from Panama, spent time interning at molecular gastronomy powerhouse Alinea in Chicago and cooking at avant-garde El Celler de Can Roca in Girona, Spain, as well as the legendary French Laundry in

California’s Napa Valley. As chef of the Penrose Room, Young’s deliciously inventive style and skill are on full display as he crafts nightly selections for the three- or five-course Chef’s Tasting Menu from a bounty of seasonal ingredients. “Luis features a daily chefs tasting menu that is ever evolving and always hyper seasonal,” says Executive Chef David Patterson. BACON & BROWN BUTTER CAST-IRON TROUT

This recipe, from “The Broadmoor: Spirit of the West,” can be doubled, but you may want to decrease the amount of butter.

SERVES 2

2 TABLESPOONS BUTTER

1–2 TABLESPOONS CANOLA OIL

1 SEVEN-OUNCE FILLET OF TROUT, SEASONED WITH SALT AND PEPPER

2 PIECES HICKORY-SMOKED BACON, DICED

1/2 LEMON, CUT INTO SIXTHS

1 PINCH CHOPPED ITALIAN PARSLEY

1. Begin by slowly browning the butter in a pan. Once it has reached the smell of toasted hazelnuts, pull it off the heat and set aside.

2. Heat a cast-iron skillet over medium to medium-high heat. Once hot, add the oil and then the fish, skin-side down. Cook until firm, about 4 minutes; flip and cook to desired doneness. Remove from heat and place on serving plate.

3. Meanwhile, in a separate pan over mediumhigh heat, render the bacon until crisp. Drain the fat from the pan. Return bacon to the pan and add the brown butter and lemon segments. Cook for 1 minute. Finish by pouring browned butter sauce over the trout and garnishing with chopped parsley.

A HIKE YOU’LL LIKE

Midnight Falls trail at Seven Falls is one of our favorites. Although it’s rated “easy,” this roughly 20-minute round-trip hike pays off big with a secluded walk through the woods to a hidden waterfall.

THE BROADMOOR SOARING ADVENTURE

The Broadmoor Soaring Adventure, one of the top five zip line courses in the world, offers a thrilling experience to guests as they safely soar high above rocky outcroppings and forested canyons on zip lines ranging in distance from 250 to 1,800 feet, with some moderate hiking. Tours include up to eight participants with two professional guides. Located at Seven Falls, the Woods Course features five zip lines, while the Fins Course also has five zip lines and includes two 200-foot suspensionbridge crossings and a thrilling 180foot controlled rappel at the end. BIRDS OF A FEATHER

The Broadmoor’s falconry program offers an up-close-andpersonal experience with birds of prey through small-group encounters with these regal animals. Our resident expert, Deanna Curtis, discusses what guests can expect.

ARE KIDS ALLOWED?

Yes! Kids older than 5 can participate, and actually I think kids get so much out of it. We’ll spend time outside learning about falconry and seeing how the birds track prey. It’s thrilling to have them fly so close and see these birds in action.

HOW MANY BIRDS ARE LIVING AT THE BROADMOOR?

Broadmoor Outfitters keeps eight birds right now: five Harris hawks, two Saker falcons, and one Eurasian eagle owl.

DO YOU HAVE A FAVORITE?

They are all unique, but right now I do have a certain fondness for one of the Saker falcons, Chase. The owl is a pretty special girl, too. All I have

to do is have a guest put their face near her window, and she’ll give us a hoot.

HOW DID YOU GET INVOLVED WITH FALCONRY?

A raptor volunteer brought a bird to my son’s Cub Scout troop, and I was hooked. There was something about the connection to a wild animal that really captivated me. I started volunteering with the organization, and eventually this became my life’s work.

WHAT DO YOU HOPE PEOPLE TAKE FROM THE EXPERIENCE?

Ultimately, I hope it strengthens their connection with nature. We provide hands-on learning in a fantastic setting.

Sea Island Resort, The Broadmoor’s sister property, debuts luxurious Lodge cottages and Golf Performance Center.

The Lodge at Sea Island, a Forbes Five Star resort on the coast of Georgia, recently debuted six new guest cottages with 14 sleeping rooms, an 18-hole putting course called Driftwood, an oceanfront pool and pool house, an expanded driving range tee, and a new putting green and short-game area. They are all part of a nearly $30 million enhancement program, which also includes a recently opened, state-of-the-art Golf Performance Center.

Each cottage features a living room, with wide-plank hardwood floors, beams, iron lighting, and fireplaces. As with all accommodations at The Lodge, guests in the cottages will have personal butler service.

The new Golf Performance Center replaces the resort’s existing facility, widely recognized as one of the finest golf centers in the country. The new facility features industryleading technology, six instruction and club-fitting bays, a putting studio designed by world-renowned putting

instructor Phil Kenyon—who serves as the Director of Putting Instruction at Sea Island—a full-service golf club workshop, fitness center with locker rooms, spacious retail area, and indoor and outdoor meeting and event spaces. The enhancement program culminates with the complete redesign of Plantation Course by Davis Love III, Sea Island resident and touring pro, and his brother Mark. Plantation, along with the signature Seaside Course, serves as the site of the annual PGA TOUR’s RSM Classic. The Loves intend to reintroduce some of Plantation's historical elements, drawing on its traditional profile, and bringing into play some of the ideas they have had since they were youngsters, when they grew up playing the course with their father. Plantation will reopen in October 2019, ahead of the RSM Classic.
