Candice Brown Cherry Bakewell Fondent Fancies
For the marizpan 100g/3½oz ground almonds 50g/1¾oz caster sugar 50g/1¾oz icing sugar, sifted, plus extra if the mixture is too wet and to dust 1 free-range egg ½tsp almond extract For the sponge
METHOD
75g/2½oz unsalted butter, melted, plus extra for greasing tin 5 free-range eggs, at room temperature 1 tsp almond extract 1 unwaxed lemon, finely grated zest only 150g/5½oz golden caster sugar 150g/5½oz plain flour For the fondant icing
For the marzipan, combine the almonds, caster sugar and icing sugar in a large bowl. Create a well in the middle and add the egg and almond extract. Stir until just combined. Knead briefly until the marzipan is smooth, adding more icing sugar if the mixture is too wet. Wrap in cling film and put in the fridge until needed.

For the sponge, Preheat the oven to 180C/160C fan/Gas 4. Grease and line a 23cm/9in square deep baking tin with butter and baking paper.
150g/5½oz unsalted butter, softened 225g/8oz icing sugar, sifted 15g/½oz ground almonds 1 tsp almond extract violet food colour gel
In the bowl of a freestanding mixer fitted with the whisk attachment, add the eggs, almond extract, lemon zest and sugar. Beat on a high speed for 7–10 minutes, or until the mixture is thick, smooth and trebled in size and the whisk leaves trails which sit on the surface of the mixture when lifted out.
For the filling and decoration 100g/3½oz black cherry conserve 1 tbsp almond liqueur 200g/7oz fresh cherries, stones removed, halved edible glitter (optional)

Sift a third of the flour over the surface and very gently fold into the mixture using a large metal spoon until combined. Repeat this process once more, then pour in
the cooled, melted butter around the rim of the bowl and fold in with the last third of flour. Make sure the butter and flour are completely folded in, but be careful to keep as much air in the mixture as possible. Pour the mixture into the prepared tin and bake for 30 minutes until golden-brown and coming away from the edges. Allow to cool in the tin for 5 minutes before transferring to a pourable consistency. Add a drop of colour to the fondant, mixing thoroughly, until it is a pale lilac colour. Transfer to a bowl, cover. cooling rack to cool completely. Wrap in cling film and place in the freezer. For the fondant icing, tear the fondant into small pieces into the bowl of a freestanding mixer fitted with a paddle attachment. Add 100ml/3½fl oz water and the lemon juice gradually (you might not need it all) beating on medium speed until a thick pourable consistency. Add a drop of colour to the fondant, mixing thoroughly, until it is a pale lilac colour. Transfer to a bowl, cover with cling film and set aside.
For the almond buttercream, beat the butter in a freestanding mixer fitted with a paddle attachment until smooth. Gradually add the icing sugar and almonds and beat until light and smooth. Add the almond extract, to taste. Cover and leave in a cool place. For the filling, mix the cherry conserve with the almond liqueur. Remove the sponge from the freezer and carefully trim the edges to straighten. Measure the cake and mark out a grid of 5 equal columns and rows on the surface of the cake (which will be cut later to make 25 squares of cake). Using a small knife, cut out a dip in the middle of each square – but be careful not to cut through to the bottom. Fill each hole with a little cherry conserve. On a surface dusted with icing sugar, roll out the marzipan to a square slightly larger than the cake and drape over, trimming the edges
so it covers the top neatly. Place in the freezer for 10 minutes to set. Re-measure the 5 x 5 grid as before and cut the cake into individual fancies using a serrated knife. Using a palette knife smooth a crumb coat of buttercream around the sides of each sponge. Place in the freezer to chill for a minute. You may want to do a second coat to make very neat edges. Place a large cooling rack over a sheet of newspaper. Dip the chilled cakes into the lilac fondant to cover the sponges. Set the fondants onto the rack to drip dry. Place the remaining buttercream in a piping bag fitted with a medium star nozzle. Once the fondant is slightly set, pipe a small swirl of buttercream on top of each fondant fancy. Place half a fresh cherry on top of each swirl. Sprinkle each cherry with a little glitter, if using.

Antonio Carluccio Headlines Nottingham Castle Great Food and Drink Festival Line-Up. Famous Italian Chef, and one half of the ‘Two Greedy Italians’, Antonio Carluccio will be the latest top chef to appear as part of The Great Food and Drink Festival at Nottingham Castle, sponsored by Cirio, Lexus Nottingham, Smooth Radio, NET, CDA, Brewhouse & Kitchen and RBS With a career spanning over 50 years, Antonio Carluccio, who is also the owner and founder of the Italian Restaurant chain ‘Carluccio’s’, will be hosting three cooking demonstrations in the Kitchen Theatre, which will be followed by book signings straight after each demo. Antonio will be taking to the stage on Saturday 28th May. Jean-Christophe Novelli, who has been dubbed the ‘nation’s best French chef’, will also be taking to the stage on Sunday 29th. Jean-Christophe, who regularly appears on TV shows such as ‘This Morning’ and ‘Loose Women’, will be entertaining the audience by presenting three cooking demos. The final day of the event, Monday 29th, will see Adam Simmonds wow audiences with a selection of wonderful dishes. The former Great British Menu contestant, who went all the way to the final and got his starter ‘Your Share’ at the D-Day Banquet, will be treating the audience to two cooking demonstrations.
The event, which takes place over the May Bank Holiday, will be returning to Nottingham Castle for the third successive year. Last year saw the likes of Tom Kerridge, Nadiya Hussain and Rustie Lee attend the event over the weekend. A whole host of great food and drink stands will line the castle grounds, allowing your senses to run wild as you walk around the venue taking in all the delightful aromas from cuisines from all around the world. There will be a great variety of bars on offer at the event from a double decker bus bar, providing a range of drinks and great seating at the top of the bus, Greene King will be providing a real ale bar and there will also be a prosecco bar and a spirit and cider bar provided by Coolest Drink Bar! To keep up to date with all the latest information on The Great Food and Drink Festivals, which will also be visiting Markeaton Park, Newstead Abbey, Lincoln Castle and Hardwick Hall in 2017.

Wine Expert Reveals What You Should Be Drinking Instead Of Prosecco – And 9 Other Exciting World Wine Trends It’s well known that we are a nation of Prosecco lovers, we’ve well and truly taken the Italian bottle of sparkling goodness to our hearts. However, wine expert and co-host of The Wine Show Joe Fattorini has boldly proposed an alternative to our favourite tipple, along with nine other alternatives to our wine favourites. Joe Fattorini worked with Celebrity Cruises to scour the world for the most exciting, up-and-coming wines that are perfect to swap for your old favourites. From volcanic wines to Champagne-quality without the Champagne price tag, you’ll find something new and exciting to impress your friends with next time you’re handed the wine menu. Each alternative wine has been chosen by Joe to match the tastes and styles of some 26
of the UK’s favourite wines – such as Pinot Noir, Shiraz and Sauvignon Blanc. Use the handy wine map to help discover delicious wines from places you may not have expected such as Canada, Greece and Tasmania. Swap Prosecco for Franciorta from Italy If Prosecco is your go-to tipple of choice, you should make 2017 the year you fall in love with Franciacorta. It’s been referred to by some as ‘Italy’s Champagne’ as the method and grapes they use to make it are the same as those in the Champagne region – but it’s much more affordable. Joe says, “More serious than Prosecco and made in the same way as Champagne… it’s warmer, more generous and fleshier. It has a personality of its own and I know plenty of people who much
prefer it to both Prosecco and Champagne.” Swap Pinot Noir for Frappato from Mount Etna Volcanic wines are all the rage at the moment, so if you’re looking to impress someone with your wine choices – this is a great option. Wine from Mount Etna offers delicious and complex flavours due to its steeply-sloped vineyards on the side of the mountain coupled with the highly nutritious volcanic soil. Look out for Frappato from this region, it’s a versatile, medium bodied style that is best served slightly chilled with light meals such as salads and grills, which will suit people who can’t get enough of Pinot Noir at the moment.
Swap Sauvignon Blanc for Calvet Fleur Baron from Bordeaux You may not be surprised at a suggestion to try a wine from Bordeaux, but while the region is famed for its reds – it’s their white wines you must try this year. Sauvignon Blanc is a firm favourite for many at the moment, but if you’re looking for something a little more interesting then a white from Bordeaux, such as Calvet Fleur Baron, is a great, refreshing choice. Joe says, “The area is better known for its reds, but their whites are delicious, complex and smoky. This is one of my favourites!” Swap Riesling for Canadian Riesling from British Columbia Thanks to climate change, wine production is marching ever northwards into regions that were previously too cold. Wonderful Pinot Noirs and Chardonnays can be found from British Columbia with their own unique styles which reflect the area, but if you’re going to try one this year - make it a Riesling from this stunning mountain region. Joe says, “What’s so wonderful is that winemakers are finding their own, bigger, richer distinctive style. Reflecting the climate and soils of British Columbia” Swap Champagne for Jansz Cuvee from Tasmania Another cooler region that is coming into its own, this temperate climate is perfect for sparkling wines. The Jansz vineyards were the first to make sparkling wine in the traditional Champagne method, and have coined the term ‘Méthode Tasmanoise’. Joe says, “A great, ripe alternative to Champagne. Don’t expect it to be the same. It has more fruit and ripeness. But it’s a gorgeous wine”

Swap Pinot Grigio for Picpoul de Pinet from Rhone Valley Picpoul is a fresh, fruity grape from Southern France with a ripe, juicy flavour and just a squeeze of citrus to make the perfect seafood wine. It’s hard to miss, just look out for the distinctive slender green bottle with a cross embossed on it. Give this a try if your go-to is normally a Pinot Grigio. Swap your favourite sweet wine for Vinsanto from Santorini Sweet wines are having a bit of a resurgence at the moment, if you’re going to try the trend this year why not be bold and sample one from somewhere a little more surprising. Another on-trend volcanic choice, Vinsanto from Santorini is the region’s delicious sweet wine. The distinct and funky flavour is influenced by the ash and pumice from volcanic eruptions from years ago. Joe says, “A sweet wine aged for anything between 4 and 40 years in barrels making an unctuous, complex, multi-layered wine” Swap Soave for Dorona from Venice When you think of Venice you may think of canals, gondolas and breath-taking architecture. What might not spring to mind are vineyards, but nestled in the lagoon just by the city is a vineyard within the ancient walled monastery of Venissa. This is where Dorona, a medieval grape, is produced and uniquely bottled with a single gold leaf label – Joe recommends it if you fancy an earthier, more complex Soavelike wine. Swap Shiraz for Grenache from Rhone Valley 2017 will see a big focus on Grenache, and it’s the Southern Rhone Valley that is making some of the most exciting ones out there. These juicy and hearty options are perfect
for Shiraz-lovers looking for something with class that are also great value. Joe says, “This is the incoming age of Grenache. Wineries in Southern Rhone Valley are making Grenache-dominant reds with class, panache and yet still good value” Swap Cabernet Franc for Mencia from Northern Spain For a fruity and bright red that you may not have tried before, Mencia from Northern Spain is a great choice. Spain as a whole is a really exciting wine region this year, so make sure you try at least one to stay ahead of the wine-curve. Joe says, “If you love fruity and bright reds, then you must dig out Mencia. The Big Bake Comes to Newstead Abbey For the third year running, we will be attending Newstead Abbey for the Great Food and Drink Festivals! Last year was a huge success and we want to make sure that 2017 is just as good, if not better! This years festival will be a ‘Big Bake’ event, sponsored by CDA and Smooth Radio, which will be the second one of the year following Markeaton Park in June. There will be a host of well-known celebrity bakers taking to our kitchen demonstration theatre, where they will be showing you how to make the perfect cakes and how to avoid that soggy bottom over the August Bank Holiday Weekend, 26th, 27th & 28th. Figuring It Out Having made his name as the head chef at two Michelinstarred Gastropub The Hand and Flowers, Tom Kerridge decided on the eve of his fortieth birthday that he had to make a real change in time for his second act‌ 39
When owner and head chef of the two Michelin-starred Marlow gastropub The Hand and Flowers Tom Kerridge reached his 40th birthday, he decided to make a change. Three years later and the Salisbury-born Kerridge has lost over 10st thanks to his newly-created ‘Dopamine Diet’.
his Dopamine Diet is not just a new cookbook or a fleeting eating fad, but rather a “personal story.”
“I think a lot of people when they get to 40 have a reflection on yourself, you start to think about where you’ve gone, what you’ve done, what you’ve achieved and where you are going in the future,” Kerridge explains in his distinctive Gloucestershire burr.
“You’ve got this super-fit guy or girl telling you to eat skinny or to do this or that and they’re stood there with their six-pack and their training gear. They are so far removed from where you are, you just feel so far away from that state. And it’s a really difficult place to jump into, especially if you have low confidence, and so you give up before you even start.
“So it was a reflection of where I was at, and I had to think about how I would make it work, how I would stick to something that was long-term. “So many people can do it 4-6 weeks and drop a dress size, but I wasn’t looking at that, I needed to do something bigger than that,” he adds. “So I had to look at diet methodology and ways to do it in a way I could stick at. And I thought choosing lowcarb was the way for me.” And Kerridge – who has made his name as a passionate advocate of traditional Great British food in all its many forms – is proud that
“The biggest problem you have if you’re my age and overweight, is that you have nothing in common with everybody else in the gym, or so you think,” he says.
“With my book, I’ve already been there, I’ve already done it, it’s how I did it and little tips on how I did it myself,” he continues. “It’s the difference between being told not to do it and being shown how not to do it by someone who has already lost 11st and has done it the right way – the way that worked for me, at least. It’s something that I hope is inspiring and helpful. If just one person buys into it then it’s been worth doing, the book, because it means that it has helped that one person change their life.”
Having gone completely tee-total alongside cutting out the majority of carbs, Kerridge says the most important bit of attempting to lose weight is to just jump straight in. “So many people say ‘I’m going to give this a go’ – but that’s the wrong attitude,” he says. “What you have to say is ‘I’m going to do this.’ If you say ‘I’m going to give it ago’ you are only giving yourself an excuse to say ‘Nah, it didn’t work’; you need to just step into it and say you are going to do it, and mentally I think that’s the hardest part.”

John Torode Headlines Lincoln Castle Great Food and Drink Festival
Celebrity Chef John Torode will be headlining Saturday 16th September at Lincoln Castle, with Michael Caines taking centre stage on Sunday 17th at the Great Food and Drink Festival sponsored by Krantz Designs. The event, which is also sponsored by CDA and Marshall Lincoln Land Rover and Jaguar, will see John Torode perform three cooking demonstrations on the opening day. Best known for being a judge on MasterChef and related spinoff shows, the Australian chef moved to the UK in the 1990s and began working in Conran Group’s restaurants before making the move into TV. Michael Caines, who has previously been awarded two Michelin Stars whilst at Gidleigh Park becoming the youngest chef to achieve this
accolade at the time, will also put on three cooking demos for the audience on Sunday.

Morue à la Catalane / Cod Catalan Style
This dish originates from the Catalan region that borders France and Northern Spain SERVES: 4 Preparation Time: 15 minutes Cooking Time: 25 minutes Ingredients 4 cod fillets (skin on) 700g plum tomatoes (chopped) 3 shallots (chopped) ½ bulb garlic 1 sprig rosemary 1 sprig thyme 2 bay leaves 1 tbsp parsley and fresh basil (chopped) 2 tbsp extra virgin olive oil 10 black olives Cracked black pepper 2 tbsp extra virgin rapeseed oil (for frying) Crispy salad and steamed
rice (to serve) Method Preheat the oven to 160ºC (fan), 180ºC (non-fan), or gas mark 4. To Prepare The Sauce Using a blender or liquidiser, blitz the tomatoes and shallots for a few seconds. Transfer this mixture into a sauté pan, with a lid, and bring to the boil. Add the garlic, rosemary, thyme and bay leaves and simmer for 10 minutes to reduce the sauce slightly. Season with black pepper to taste, then add the olives. For The Fish In another pan, heat the
rapeseed oil. Introduce the fish, skin-side down. Sear for 2 minutes then remove from the heat. Place the fish in an ovenproof (gratin) dish. Cover with the tomato sauce and bake for 10 minutes. While the fish is in the oven, mix the fresh herbs with the olive oil and let it infuse. When the 10 minutes of baking time is finished, drizzle the infused oil over the fish dish and serve. This is perfect with steamed rice and a crispy salad. Chef’s Tip Any good quality, firm fish can be used for this dish, especially one of my favourites, red snapper. 51
An appetite for success… There’s been a definite sea change in people’s eating habits and choices over the last few years with so many now opting for the more casual rather than the formal, fine dining scene. This has been reflected in the new restaurant landscape across the county with more tapas and street food style eateries now populating our town and suburbs. Alongside the restaurants, the bar industry has stepped up its creativity and whilst there will always be a place for the favourite local boozer, the gastro pub that delivers time and again, there’s now quirky, secretive and design-led bars standing shoulder to shoulder with these venues. All of which provides the consumer with a bigger choice than ever. It also gives those that live and work in the city a taste of the more cosmopolitan lifestyle that is probably more associated with London.
Nottingham, however, has always managed to deliver a diverse hospitality scene but, as with any city, there is always going to be a fine line between going with the times and offering themed venues that will never stand the test of time. Whatever the design – the theme – the offering - consistency in delivering great food and service will always remain the number one priority for the customer. We will therefore continue to see those venues that simply don’t perform to that level, go to wall, but the quality venues will survive, in fact, flourish. It’s also wonderful to see independents thriving in this industry in the city and the county and whilst there will always be a place for the larger chains, these strong independents are what gives the town and surrounding areas a unique identity and wider variety of places to enjoy.

Our taste buds are still watering after visiting the latest restaurant to grace the Nottingham food scene, Son of Steak.

Located on Trinity Square, the new restaurant opened its doors in March and boasts it offers cooked flat-iron steaks, served without the fuss. So, we put it to the test.
Mains Burger - Juicy aged beef burg¬ers are cooked in a Charcoal Josper Oven. You can even personalise your burger with crispy onions, pickles and American mustard for free. Flat-iron - Rare and new cut of meat, it comes out pink and tender within minutes from the kitchen, it is also very good value for money. For beef, it is very light and so it works well both for the evening and at lunch time.
From the moment we walked in, we couldn’t fail to be impressed. A relaxed vibe inside, with bench seating and some cool decor including pipe lighting and handlebar antler’s hanging on the wall! Menu wise steak is the main event, whether you are dining at lunch or in the evening. According to their menu Son of Steak only serves premium-graded beef, which they source from British and Irish farms, before being matured for at least 28 days. So it’s proper, good quality meat! If a burger is more your thing, there is also a choice of juicy aged beef burgers too, all cooked in a Charcoal Josper Oven. You can pimp up your burger by adding any of the free toppings including caramelised onions, pickles or American mustard. Throw in the tasty range of sides & sauces from hand cut chips to secret steak sauce and you are definitely spoilt for choice! The Big Bake Comes to Markeaton Park! Over the weekend of June 17th-18th, The Big Bake, sponsored by Lexus Derby and CDA, will take place at Markeaton Park. Nancy Birtwhistle, John Whaite and Andrew Smyth, all former contestants on GBBO, will be joined by cake artist Molly Robbins at the show. Come and see these fantastic bakers perform baking demonstrations throughout the weekend and take home some tips on how to avoid that dreaded soggy bottom. But that’s not all… You can get involved too. The Big Bake are looking for budding bakers to come along and take part in their fantastic competition that includes some great prizes. The Big Bake is a fantastic family orientated event, with live baking demos, children’s entertainment, music and hot and cold food stands, there is certainly something for everyone to get involved with. There will be a host of licensed bars around the grounds of Markeaton Park serving everything from lager, wines and real ales.
