T
he word “authentic” has powerful meaning when describing ethnic foods. It speaks to one’s heritage, as well as their upbringing and culture. Food is powerful, too. It can comfort, it can heal, and it can affect a person’s overall mood or outlook. Christian and Heather Martinez have been very successful in recreating and keeping family food traditions alive within their incredibly quaint Mexican restaurant located in Ossian, Indiana. The name of the establishment points to hearts that are deeply invested in the restaurant. As the Martinezes say to everyone, “mi casa es tu casa” translates “my house is your house,” and
that is exactly what you will experience while dining at Mi Casa Mexican Restaurant. Christian and Heather pride themselves on their reputation for amazing hospitality and excellent service, as well as award-winning food. Mi Casa Mexican Restaurant opened in September of 2014. The inside of the restaurant has the look and feel of an authentic Mexican home. Christian and Heather’s passion for bringing their restaurant vision to life shines through with the color choices and unique décor. You can sense the amount of time and energy that went into making the restaurant so inviting—the atmosphere creates a feeling of warmth and peacefulness when you enter. Mi Casa’s recipes are tried and true—authentic. They have been passed down from older generations and will be passed on to future generations for years to come. The restaurant menu holds special meaning, as well. Several entrées are named after family members, including Kaylee, Martha, Mario, Donlupe and Lalo.
Mi Casa can accommodate groups for graduation parties, Christmas parties, etc., but these must be booked in advance due to the limited space available. Group reservations ensure a cozy atmosphere—and, that all guests can be attended to before they have the chance to ask for a refill. Prior to opening Mi Casa, Christian had been worked in the food industry since 2001. Many diners in the southern part of Adams County would recognize him—he managed El Carreton Mexican Restaurant in Berne, Indiana for several years.
Chips and salsa are traditional favorites, along with the white queso dip and guacamole. But, these are just the intro to an amazing meal ahead. There are so many delicious options, it’s hard to choose. But, no matter what you’re in the mood for, your meal is guaranteed to be pleasing and filling—the portions are large, and you’ll never walk away hungry. The restaurant also offers featured entrees, as well as featured drinks, on Friday and Saturday. The best-

Heather joined Christian shortly after the restaurant opening. She had worked at Christian Care Retirement Center for 10 years, taking on many different roles there, including cook. With her background, she was a perfect fit at the restaurant. Heather and Christian each have a variety of responsibilities at Mi Casa. The restaurant receives three deliveries a week, and there is bookwork, ordering, and inventory to be done, along with putting away supplies. They help with cooking and waiting on customers—and making sure all is running smoothly. The dedication of Mi Casa’s staff speaks volumes about the restaurant’s owners. Amazingly, Christian and Heather have retained the same waitstaff since their grand opening. Such retention is uncommon and suggests the owners are highly-skilled in operating their business. During Ossian’s Revitalization Days, Mi Casa was presented with a Business of the Year award. And, in 2016, the restaurant’s Guacamole Casero Dip was recognized by the Fort Wayne News Sentinel as one of the top appetizers in Northeast Indiana.

When Christian and Heather have free time, they both enjoy spending time with their daughter, Kaylee (13). She and her dad love going bowling and hanging out together. Kaylee and her mom, of course, love to go shopping together. Heather and Christian also enjoy working out and staying in shape. Heather is a Beachbody coach, as well, offering Shakeology and coaching advice to those looking for a healthier future. At the restaurant, Heather even incorporated a special menu for more healthconscious. fter 25 years spent working in a family law firm, Lee M. Bowers II began thinking about a career change. He spoke to friends and family about the possibilities, and today, the residents of Huntington, Indiana are grateful for his choice of a new direction. “I planned to retire the end of 2009,” Lee says. “About that same time, the restaurant that was in this location closed. I had discussions with [the investors of that restaurant], and the numbers all worked out well, and so that pointed me in the direction of restaurant owner. We did extensive renovations and opened the restaurant in March of 2010.”
Lee’s restaurant, The Rusty Dog Irish Pub, has received recognition for its excellent menu and service. It has earned Best Steak, Best Hamburger, Best Bar and Best Atmosphere in the local Readers Choice awards. It has also received the coveted 5-star rating from Ryan DuVall, food critic at Fort Wayne’s Journal-Gazette. This is high praise for an establishment whose owner initially didn’t really know too much about running a restaurant. “Obviously, this is a dramatic change in direction, opening the restaurant—and I knew nothing about running a restaurant,” Lee admits. “I knew a lot about food and the preparation and serving of food, but I didn’t know anything about running a restaurant. So, it was a big learning curve for me.”

Lee says he worked with food service representatives to figure out the ordering process and what items were available. He also had help from Patrick Ramsdell, a chef he had known for more than 20 years. Before opening the restaurant, Lee met with Ramsdell. “I told him this is what I wanted to do, and I said, I am not going to open the restaurant unless you agree to come on and be my chef and stay with me for at least a couple years,” Lee recalls. “And so, we had a long conversation about our philosophies of food. Evidently, I passed whatever test he had in his mind, so he agreed.” The rest of Lee’s staff was able to help in other areas. “Fortunately, the people I had out front, the serving and the bartending staff, had a number of years of experience, and they helped me get the procedures out front. I had a lot of help from people who had experience in the business.” Next, Lee deliberated the theme of his new restaurant, traveling to
England and Ireland several times for inspiration. He fell in love with the countryside pubs. “They were so cozy and inviting, had good food, and you kind of felt good when you walked through the door,” he says. “I wanted to create that atmosphere here in Huntington, so we decorated it with a lot of things on the walls to make it feel cozy and comfy.” Next, came the name. Again, Bowers turned to his experiences overseas. “In England and Ireland, especially in the small towns, the shops and restaurants oftentimes have figural signs over the sidewalk,” he explains. “I wanted to do a figural sign out front, and at home, I had a metal sculpture of a dog that was made from found objects. “It had been sitting out in my front yard for 15 years, and it was all rusted. So, I was going to use that dog sculpture as my figural sign. Therefore, Rusty Dog.”

Unfortunately, the sculpture ended up being way too small. “As it turned out, we couldn’t use the original sculpture that inspired the name, but we decided to keep the name.” When creating the menu, Lee turned to his own dining experience and philosophy of service. His focus would be highquality items.

“We really focused on bringing high-quality food into Huntington at The Rusty Dog, things that weren’t available in Huntington—duck, lamb, a lot of different seafood.” In addition to the regular menu, there are usually three featured items on weekends. “We have several items that we have featured that ended up being very popular so we added them to the regular menu,” adds Lee. Always keeping his customers in mind, Lee is constantly making additions to his menu at The Rusty Dog. As the demand for craft beers increased, so did The Rusty Dog’s selection. Presently, 12 craft beers are available.

And for those seeking gluten-free items, the Rusty Dog offers several options. “Serendipity Sweets in Roanoke bakes gluten-free buns for me,” Lee says. “We have marked on our menu items that are gluten-free. We get a lot of people from out of town just because they know we are careful about that, and we are sympathetic to the needs of people who need to avoid gluten.” Lee enjoys spending all his time at the restaurant. He puts great effort into putting customers first. “I make it a point to touch every customer and talk to everyone, make sure their meals are good, make sure they have everything they need,” he explains. “And, I think the customers really appreciate that. “My mission is to create an atmosphere that the customers are comfortable coming into, where they can get good service and quality food at reasonable and fair prices.” Mission accomplished.

In 1970, a truck driver of Greek descent from Canton, Ohio found out that one of his favorite stops, the Van-Del Truck Stop on twolane Route 30 outside Delphos, was about to close. Whether it was luck or fate, the driver and his wife purchased the business and the property, and they moved their family of four children, two boys and two girls, to Van Wert County. For six months, the family lived on-site, sleeping in the old truckers' bunks and working at the business—even the kids helped
after school. Once the family purchased a home and moved out of the truck stop, they still spent most of their time at the business. And, they made it a going concern for several years. Then, the former trucker—and successful restaurateur—wisely sold the truck stop just before a four-lane highway opened between Delphos and Van Wert in 1979. Nick Pampas was one of the four children who helped operate the truck stop. “My dad established our work ethic from the very beginning—‘You live in my house, you work,’” Nick explains. "We understood what he expected of us, and he taught us what it takes to make it in the small business world."

You've probably been to several of the Pimpas family's restaurants in the Van Wert/Delphos area. Nicko's Pizza is one of the most recent, and it's a going concern. "We have something for everyone, for every taste," says Nick. "Come and enjoy my family's food!" Nick grew up working in the family's restaurants, including the Topp Chalet in Delphos, which is now owned by his brother. "I was 18 years old when I made my first pizza," Nick reminisces. He later managed several eateries, including Flanagans in Fort Wayne, Indiana (which he opened for its owner) and Beef & Bourbon/Twist & Shout in Fort Shawnee, Ohio. It was while he was working in Fort Shawnee that Nick learned the Westside Pizza place down the road was up for sale. After some negotiations, he purchased the business and property and became his own boss. "I worked all the time," Nick says. "My whole family does that. And, we help each other. If we're in
a family restaurant somewhere, it's expected that we help out as needed. My family is very tightknit, and we believe in pitching in." Nick's pizza business in Fort Shawnee was successful enough to allow for a second location in Cridersville. "It was a lot of work, and it was tough, since my home was still in Delphos," Nick recalls. "When I heard of a property available in Van Wert, I immediately checked into it, as it was closer." In May of 2009, Nicko's Pizza opened in Van Wert. "We don't have a dining area, as the building isn't set up for it," explains Nick. "We do carry out and delivery, however! We will bring your food, fresh and hot, to your door, or you can come pick it up. "From the beginning, we have rolled out individual pizzas from fresh dough we purchase weekly, and we cut our own fresh vegetables three to four times a week." Nick quotes his father on their menu: "Through our doors walk the finest people on earth, our customers." One of the greatest goals at Nicko's is to make sure the food is freshly prepared and delicious. With over 30 years of experience, Nick Pimpas provides quite an array of foods at reasonable prices. Nicko's offers nine specialty pizzas, including Meat Lover’s, Deluxe, Ranch Chicken, and Greek. "One of our specialties is Greek cuisine. We have pizzas with Greek-style ingredients, Greek salad, and gyros. Every Thursday is ‘Greek Day’ at Nicko's; we take 15% off all Greek-flavored items." The menu at Nicko's includes appetizers, such as mozzarella sticks, wings, and cheese-stuffed breadsticks; salads, including ham chef and crispy chicken; subs with ham, turkey, and steak;
sandwiches, including tenderloins and chicken filet; and full dinners, including chicken tenders, crunchy cod and shrimp and fries. There are even sweet treats like funnel cakes and choco-bites. Nick works at providing an economically-friendly menu to his customers. Prices for non-pizza items range from $1.95 for fries to $9.95 for boneless wings. Pizza prices are as low as $6.75 for an 11-inch cheese pizza up to $25.75 for a loaded 18-inch Greek pizza. Even the dinners average about $7.00 in price. One Nicko's Pizza special is twopronged: an 18-inch 2-item pizza with breadsticks for $19.99, and an 15-inch 2-item pizza with breadsticks for $16.49. This special is available all the time! However, Nick pointed out that he would not be able to do this alone. "I have employees other than my extended family. No matter if they're related to me or not, I do my best to treat all my help well, making this a place where they're appreciated and needed.

"He knows everything about this place and can run it very efficiently and confidently. “He makes my life a lot easier. Without someone like that in a business, the owner has to micromanage everything. I have Greg to watch out for me."
Nicko's Pizza is open from 3 to 9 p.m. Tuesdays, Wednesdays, and Sundays; 11 a.m. to 9 p.m. Thursdays; and, from 11 a.m. to 10:30 p.m. on Fridays and Saturdays. They are closed on Mondays.

life-long dream came true for Andy and Kim Gay when Corner Café opened October 1, 2016, in Decatur, Indiana. “This is our first venture out on our own,” explains Andy, who was in management at Richard’s Restaurant for ten years prior to launching the eatery with his wife, Kim. “It was kind of a now-or-never thing,” he shares, with a chuckle. The couple had long fancied the idea of owning their own restaurant as they each worked in several establishments, owned by others, over the years. “We talked about doing this for so long,” says Kim. The couple spent a lot of time looking for the perfect location from which to launch their dream

business. “We wanted to be on 13th street, near enough to the street for good visibility, and with adequate parking,” explains Andy. They discovered Choice One Rehabilitation was moving to a new location further north on 13th Street and acquired the business’ existing facility. In August, Andy and Kim dove into an ambitious remodeling schedule with a firm goal of opening October 1. They opened, raring to go, with 90% of the improvements complete. Family and friends helped to name the eatery via feedback sought on Facebook. Customers frequently comment on how roomy the interior of the restaurant is. In booths and at tables, the eatery comfortably seats 52, with room to squeeze in a few more should the need arise.

The biscuits and sausage gravy and Andy’s hash brown casserole get rave reviews from breakfast customers. Quiche was a big hit when it joined the traditional breakfast dishes on the menu in December. Lunch fare features a shaved fried bologna sandwich named after Kim’s dad—Grandpa Draeger’s Fried Bologna—and a “smashed” pork sandwich that blends seasoned roast pork shoulder and Pappa Gay’s—Andy’s dad’s—own BBQ sauce. Other sandwiches— Mombo Meatloaf, Sloppy Joe, Roooben!, Chicken Malibu, Piles O’ Ham, and the Corner Burger— along with a chicken stir-fry, and a chicken bacon ranch salad that features a hand-made dressing round out the lunch menu. “Soup is kind of a big deal around here,” states the menu. Most days, two homemade soups are offered, including such favorites as stone soup, cheesy cabbage, asparagus, and potato. “The cream of mushroom and cream of broccoli are fabulous,” insists a loyal customer.

Kim says, “We talked about offering a seafood item, and we thought, What about fish tacos?” Evidently, the right choice. “They go like wildfire.” A kids’ menu is available for both breakfast and lunch. And, gift certificates make it easy to share the new eatery’s unique menu with family and friends. A small staff, including their children and a few employees the Gays have worked with in the past, operates the café alongside Andy and Kim Tuesday through Sunday. “Breakfast is from seven to eleven, lunch is from eleven to three.” Andy and Kim willingly devote themselves full-time to the restaurant. Their experience in the local restaurant scene, as well as Andy’s involvement in years past with his family’s grocery, liquor and restaurant endeavors, helped prepare them for the commitment a retail food establishment requires. When asked if they made the right decision, launching their own restaurant, both Andy and Kim answer “Yes” without a second’s hesitation. Their big smiles confirm they are more than happy operating the Corner Café.
What does the future hold? Andy envisions additions to their menu— some new specials, some original items they’d like to try. “There’s nothing we would take off the menu because everything sells,” says Kim.
The restaurant enjoyed a steady opening that gave them a solid footing and introduced them to the community. “I’ve opened for a lot of restaurants, and openings are crucial because you make so many lasting impressions,” Andy says.
Andy agrees. “Everything is someone’s favorite.”
“Every day, we welcome new customers,” adds Kim, confirming that locals continue to discover the new eatery.

A
new year often brings change, whether personal, like a New Year’s resolution, or professional, like a business expansion. In Celina, Ohio, C-Town Wings is embarking on a new adventure in 2017—the opening of a new location on Havemann Road. With only a few more weeks until the anticipated grand opening in mid-March, owners Kerry and Julia Roberts are busy with preparations, looking forward to what is ahead. They’ve also taken time to reflect on how far they’ve come in the past several years.
C-Town Wings is currently situated on Main Street amongst other businesses and a hubbub of activity at the center of town. Kerry and Julia opened the restaurant in July 2011 after purchasing and remodeling the building downtown. This wasn’t their first business. The Roberts also owned the Dairy Cone, located in Celina, and operated it simultaneously until 2014. The pair enjoyed both businesses but wanted to focus on the sit-down restaurant, so that’s exactly what they did.

When the Roberts opened C-Town Wings, Kerry was also employed at CAPT (Celina Aluminum Precision Technology Inc.). To help determine what should go on the menu, Julia experimented with recipes, and Kerry brought samples of the chicken wings to his fellow employees. C-Town Wings offers approximately 15 different sauces—kept as secret family recipes—for their wings, ribs and more. Their wood-fired grill is unique to the area, as well as their 12-ounce delectable, signature burgers. The Bronco burger is the #1-selling burger at C-Town Wings, but the owners anticipate adding four new signature burgers to the menu when the restaurant relocates to the larger facility. Periodically, Kerry and Julia challenge their kitchen staff to come up with new burger ideas for the menu, offering a reward to employees if a new flavor proves popular with diners. The bar at C-Town Wings offers a mug, personalized with engraving, for just $25. Leave the mug at the bar, and when you return, you’ll receive 75-cents off any draft beer. 34
If you can’t dine in, takeout orders are available at C-Town Wings, the restaurant’s free app makes ordering simple. Place an order and pay online, then stop by and pick it up. The new location will even allow customers to pick up orders at a drive-thru. Just inside the entrance downtown, you’ll find C-Town Wings’ wall of champions. This wall is decorated with photos of diners who have successfully finished an incredibly enormous meal, including: two one-pound burgers, topped with a half-pound of ham and a half-pound of bacon; a pound of French fries; and, a pound of coleslaw. Those who complete the meal in under 40 minutes get their photo taken for posting on the wall, their huge meal is complimentary, and they receive a free C-Town wings shirt. Of the 450 to 500 customers who have tried since C-Town Wings first opened, fewer than a dozen have succeeded.

Currently, the restaurant offers a banquet room upstairs for catered group gatherings, such as parties, rehearsal dinners, showers, luncheons, etc. At the new facility, their party room will seat 70. Even though C-Town Wings closes during Mercer County Fair week, it is still a busy time for the restaurant staff. Why, you might ask? The owners use the week to clean the restaurant from top to bottom, and they also take their wings on the road. They open a C-Town Wings stand at the fair, offering a simplified menu featuring wings and sauces, as well as tenderloins, pulled pork sandwiches, and fries. When C-Town Wings relocates, its kitchen space will almost quadruple in size. This will allow for a more extensive menu, and one item the Roberts plan on adding is pizza. They also expect to offer a salad bar that will be available all the time, with more side dishes and some of their specialty items, like coleslaw and chicken salad. Soups will be available, too, and the
owners hope to feature a hot bar with selections similar to what they provide when catering. Another addition will be the new patio area outside for diners. During the building process, Kerry and Julia have tried to invest locally by hiring area construction contractors like Alexander & Bebout, Shinn Brothers and Selhorst Concrete to complete their new facility. While there are many changes just ahead, the staff at C-Town Wings will continue its focus on offering great service. Kerry and Julia explain, “Service is number one. You can have the best food around, but if you don’t have good service, customers won’t come back.”

His family has been in the community for generations, but, to his knowledge, he is the only one who developed an interest in the food service industry. "I've been cooking and baking all my life," says Jack. "I started in a small restaurant in Delphos when I was sixteen. Believe it or not, I was hired as a cook at that age!"

Jack spent some years away from both family and restaurants earlier in his life. "I worked in retail for a few years in Boston and L.A.” He laughs. “I wasn't happy, so I came home and started cooking." Thirty years later, Jack is the owner of (the) Grind Cafe & Coffeehouse. "This is what I've wanted to do all along—live in an area close to my family and own a restaurant. I'm happy!" (the) Grind celebrated its eighth year of operation on January 6, 2017. When it opened in 2009, it was located on 5th Street. "There used to be a KFC on 5th, and we originally opened there,” Jack remembers.

Seven years ago, the building where (the) Grind is currently located was a small bar. "We had heard that the owner might be wanting out of his business, so we went in one day and talked to him. Turned out the rumors were correct!"

When Jack moved (the) Grind into its current location, he chose to keep the original brick walls and pressed tin ceiling. The overall

For those who prefer lighter fare for lunch, (the) Grind offers six different salads, from a garden salad to a taco salad—and even a spinach strawberry salad. You can have a fruit cup with your salad, or perhaps a hot cup or bowl of soup. Whatever your selection, one thing you can be assured of—all the food served at (the) Grind will be fresh. Jack uses no premade mixes or frozen foods. All ingredients are fresh and natural, and all recipes are made right in the kitchen— nothing from a box. "Over the past Christmas season, we experimented with selling fresh baked goods, such as cookies, muffins, cakes, pies, and scones," Jack says. "It was a big hit! In fact, interest in the sweets was so great that we are continuing to offer seasonal baked goods in 2017."

While Jack enjoys cooking, he likes baking even more. "I use old family recipes (like Grandma's snickerdoodle cookies), and they're very well received." Although no plans have been made, Jack has been dreaming of opening a bakery, perhaps across the street from (the) Grind. "The fact that our baked goods are being purchased in large quantities does suggest that there is a call for fresh-baked goods in Delphos and the eastern end of Van Wert county. We're not going to dismiss any talk of establishing a bakery, but we're in no hurry right now. Sales are just fine at our restaurant!" Currently, (the) Grind also offers catering services. "We've been catering breakfasts, luncheons, and dinners for a while now," Jack reports. "Our biggest job so far was a complete Thanksgiving dinner with all the trimmings for a group in Lima.
“Mostly, we do luncheons and breakfasts. Customers can order from our menu, or we will work with them to create a custom menu. If I can cook it, we'll serve it!" hen members of the Indiana General Assembly convened last month, Rep. Curt Nisly of Goshen introduced House Bill 1134, a measure that would repeal state statutes authorizing and regulating abortion. Hoosiers for Life founder Amy Schlichter is a passionate supporter of the “Protection at Conception” bill – and the Jay County resident has worked tirelessly to permit legislators the chance to vote on the proposed law.
2015 to support passage of the Indiana Heartbeat bill (S.B. 144, H.B. 1122), introduced in January 2016 by state senators Jim Banks and Scott Schneider and Rep. Nisly. She says, “After I discovered how easily incremental legislation created the same arguments as strong legislation, I decided that we need to set the standard in Indiana with our life legislation.”
“After experiencing infertility and pregnancy loss in my own personal life,” Amy explains, “I've acquired a great respect for the unborn. I am making it a priority to ensure they have the ability to live the life that has been given to them.” Amy created Hoosiers for Life in
Partial-birth abortions are banned in Indiana, but legal abortion methods are available throughout the term of a pregnancy – including the months and weeks before birth when an unborn child could likely survive outside the womb.
Although Indiana Code 16-34-1-1 states that childbirth is “preferred, encouraged, and supported over abortion,” there are currently few limitations on abortion in the state.
“We needed to tell the state what we wanted and stop trying to move forward in small steps. If we are facing the same giants regardless how hefty our bill is, why not stop messing around and just say what we want. Abolish abortion in the state of Indiana.” On her organization’s website, Amy points out Indiana Code that affirms “human physical life begins when a human ovum is fertilized by a human sperm” (IC 16-34-2-1.1). Despite the good intentions of pro-life leaders and organizations – and acknowledgement by the State that human life begins at conception – an average of 22 unborn children are “slaughtered in the womb” each year in Indiana. Perhaps a more shocking statistic is the ratio of annual abortions compared with live births. According to the most recent state report, more than 8,000 Hoosier pregnancies were terminated by an abortion provider in 2013. The same year, doctors delivered around 88,000 babies, meaning approximately 1 in 11 unborn children were aborted in Indiana. “As we pull back the veil,” adds Amy, “the reality of abortion still remains. It is the intentional killing of human life. To me, that's a huge problem, and it should be a concern for everyone who lives in Indiana.”
Amy encourages Hoosiers who support ending abortion in Indiana to contact their legislators at the state level – even legislators known to be pro-life. “Go to the Hoosiers for Life website,” she says, “and click the link ‘Find My Legislator’ to see who your state representative and state senator are. Follow the link to the legislator's page and record their phone number in your cell phone.” Visitors to the website can also join a mailing list to receive email updates. “Then, when we tell you that your representative or your senator needs to hear from you, you'll be ready to place that call. Most calls last two minutes or less, and they will ask your name, age and address to verify that you are a voter in their district. “You don't have to be prepared to debate the situation.
