Pasquetti’s Homemade Italian Food and a Table Near the Street Article and Photos byTiffany Schortgen

T

ucked on a quaint corner of Bluffton’s busy Market Street sits a charming Italian eatery with an old-world feel. Sedate décor, a tin-stamped ceiling, low lighting, and white linens give this restaurant a warm, romantic ambience. Perfect for a date night or family dinner out, Pasquetti’s offers family-style fine dining.

The menu at Pasquetti’s is loaded with mouth-watering pasta creations sure to fill your comfort food cravings. Seafood Au Gratin, Shrimp Scampi, and Gamberetto Linguini are just a few of the restaurant’s specialties. All entrées are served with piping hot homemade garlic knots and a fresh-made Caesar salad.

But, if you crave something from the grill, Pasquetti’s has you covered. While a selection of superior meats isn't the first thing you think of in relation to Italian cuisine, choice meat is a focal point at Pasquetti’s. With a background in meat market management, owner Shaun Imbody allows only the finest cuts of meats in his eatery. Filet Mignon is hand-cut to order, the meatballs and sausage are freshly ground and assembled in-house, and the freshest seafood is selected. Scallops the size of golf balls and brightly colored salmon and tuna filets line the protein cooler at this Italian eatery. It’s not only the meatballs that are handmade. All entrées are made from scratch, using top quality, handpicked ingredients. From freshmade soups to Tutto Di Mare to the restaurant’s signature garlic knots, Shaun takes pride in the handcrafted recipes that fill his menu. Even many of the dessert items, which are packaged afterthoughts at some restaurants, are fresh-made at Pasquetti’s. For instance, Shaun touts that he has been making his bananas

When asked about the importance of homemade, Shaun responds, “At [one local food plant], the chemists get paid ten times as much as the chefs–there’s something wrong with that.“

He laughs, “At Pasquetti’s, we don’t employ a chemist.” Shaun said his love for cooking started at age 12 when he was in Boy Scouts. His scout leader, Raymond McCune, saw his interest in cooking and challenged him to broaden the menu of items made for the campers. “Before I knew it, I was making threelayer birthday cakes in a Dutch oven, cooking bananas Foster on a grill, and making stews and soups over an open fire,” Shaun recalls. “And, that is where my interest really exploded.” Shaun has a plethora of experience in the food industry, from being a carry-out employee in the grocery business as a teenager, to working as a general manager at Tom’s Foods, to being the owner and operator of Bluffton’s ever-popular Heyerly’s Meat Market. He is also the owner of the Snug Café, which is an Americana diner just down the street from Pasquetti’s and has been a staple in downtown Bluffton since 1927. While Shaun is a skilled grocer and butcher, he always dreamed of opening a restaurant where he could show off his knack for creating gourmet dishes. “Every time I cook for someone, they absolutely love it.

“So for me, it’s a natural extension to go into the restaurant business, because this is what I enjoy.” Hence, he decided to leave the meat market for a more romantic venue. He says, “The grocery business is a good business, but no one grows up saying, ‘I want to run a grocery store.’” At this stage in his life, “Do what you know, and do what you love,” is his motto. Shaun opened Pasquetti’s during the Bluffton Street Fair in 2014. He chose the restaurant’s name in honor of his niece, who always mispronounced the word “spaghetti” as a child. Pasquetti’s fills a void in Bluffton for this type of eatery at a reasonable price point. Entrée prices range from $8 for the Cappelini Fungo (Cappelini pasta tossed with mushrooms in a garlic butter sauce) to $25 for the Filet Mignon. You can find Pasquetti’s two blocks west of the courthouse in downtown Bluffton at the corner of Market Street and Marion Street. This eatery is open for lunch and dinner seven days a week, with later evening hours on Friday and Saturday. rom a young age, Staci Huey has been creatively motivated, continually using her artistic abilities in conjunction with her entrepreneurial spirit. “I’ve always wanted to open a store,” she says. “I grew up outside of Geneva in the country and went to South Adams. I’ve worked downtown since I was 16 years old. I graduated from high school in 2004.”

After high school, Staci attended IndianaPurdue University at Fort Wayne and obtained a Bachelor’s degree in interior design. “I’ve worked in different retail establishments, and I’ve gotten to know a lot of people downtown.” At one point, Staci sold her own paintings. She has actively pursued a variety of avenues to profit from her artistic talents.

“That’s definitely what my passion has been since I was younger. I’ve always been creative. I’ve always enjoyed creating things and being my own boss. Just two years ago, Staci and her good friend, Sherry, decided to go into business together. “It started in February of 2013,” Staci recalls, “and at first, we began making scarves for kids and adults out of our homes. “When we started, we were selling on Etsy, and then we went to the local farmer’s market down here [in Berne] and got established. Later on, we started doing shows and that sort of thing.” The pair decided to call their line of fashion accessories Nora Gray. Staci explains, “We were sitting together, and we were trying to come up with a name. “Nora was a name that I happened to like, and her son’s name is Grayson. So, the combination of the two just made the name. It was each of us, put together.” Since that time, Sherry left Nora Gray to pursue her own career. Despite this, Staci has honored the business’ name, as well as the spirit behind Nora Gray, and has continued expanding her hobby into a profession. Staci feels that the timing to open a brick-and-mortar shop is falling into place. Her store will open in downtown Berne this April. “I don’t have any kids yet, and it just feels like the right time. “I’ve always wanted to do something of my own; but just now, I’ve got the guts to do it. It’s the right time in my life, and that storefront was a good fit for what I’m doing now.”

Staci says she is very excited for the business to be growing and expanding. She finds her line of work extremely rewarding–she loves seeing customers enjoy her products. Located in the former Sprunger Shoes building, Staci’s shop has been remodeled to have a vintage feel, combined with some modern aspects. She plans to carry American-made products. “There are a couple sections that are going to make up Nora Gray. I’m actually going to do wholesale, as well. And, of course, the scarves and headwraps.” “My products are in some boutiques, as well,” Staci adds. You can find her Nora Gray accessories at Salon Vera Jolie in Decatur, Indiana, as well as Elegance on Main in Berne.

Staci explains that her favorite part of the job is picking out and working with fabrics, as she has an eye for design and color. And, of course, she enjoys being the one in charge.

Although Nora Gray is just now opening a physical location, it has experienced plenty of success. It was featured on MSN Living and has grown significantly.

“Rather than ordering one or two yards of fabric, I have to order fifteen,” Staci explains. The Nora Gray brand is wellknown, not only in the community, but also in variety of places that have been reached through Etsy. Staci hopes that the new storefront will attract a wider audience. She plans to offer products geared toward men, as well as a younger female crowd. “I want something really fun and unique for Berne.”

those who are interested in owning their own business. “My advice to them would be, don’t be scared.” Staci wants to show others, especially adolescent s , that you can be successful, regardless of your age or interests. “I want to see young entrepreneurs follow their dreams. I spent a number of years settling for what I had, rather pursuing what I knew, deep down, I truly loved to do, because I believed the stereotype that being creative doesn’t give you a good income. “However, in the past two months of simply owning my shop, I’ve truly realized how awesome it feels to pursue your real dream and how it absolutely does not feel like work for one minute.” Just a few of the items that will be available in the Nora Gray store include: restyled furniture, Miss Mustard Seeds Milk Paint, The Mason Shaker Line, Cinda B Bags, Nora Gray Scarves & Accessories (both adult & toddler), a variety of women’s accessories, including trendy jewelry and headbands, leather goods, hand-painted signs, and Hip & Trendy Baby Gear.

The new Nora Gray shop will sport a different logo than the Nora Gray line of accessories. Because the rabbit logo is associated specifically with her fabric products, Staci designed a separate but fitting logo for the store. Staci is glad to have a reliable support system in place as she takes this next step. Mike, her husband of 17 years, has helped with remodeling the store. Staci’s sister, Rachel Hirschy, owner of Simply Rachel Photography, takes photos for her on a regular basis. “My parents have always been supportive,” she adds. “No matter what stage you are at in life, take something from it and build a skill. ave you ever gone to a cute little boutique or shop, or even a craft festival, and seen some really creative uses of fabric? Some of the articles of clothing I’ve seen would even qualify as wearable art. And, if you’re like me, you begin to wonder about the creator of the piece. Where does the creative urge originate?

As a girl, Renee Goodwin Hartman would help her mother sew and cook at home. “She taught me a lot of the basics in sewing–curtains, drawstring bags, and pillows, mostly–as well as cooking and canning,” Renee says. “In junior high, we had to take home economics, which I was excited about

because I liked to cook. The first semester was cooking, and the second was sewing. “It was there I discovered my love for sewing.” She adds, “I did take home economics as an elective all four years of high school.” Several years Renee’s junior, Jenn Bolenbaugh was also learning to sew, but not in a classroom. “My grandmother taught me to sew, crochet, and bake,” Jenn shares. “She made vests, doll clothes, stuffed animals, blankets, and so on.” Never one for organized instruction, Jenn struck out on her own, allowing her own sense of color and design to guide her in choices of material and medium for her fabric projects. Fate intervened in the 90s when Renee and Jenn met. Jenn was a teenager who was friends with the children of Renee’s boyfriend. Renee’s house was “the collecting spot for the children,” and Jenn spent a lot of time in her company, becoming one of the family. “Through the years, we remained close,” Renee smiles. “We’re not related by blood, but by love, and are a huge part of each other’s families.”

“I don’t like to use patterns as much as I like to design on the fly. This allows for more creativity and one-of-a-kind items,” says Jenn.

Jenn is more of a free spirit, coming up with an idea and creating the finished product to match the image she sees in her head, without the aid of a paper pattern, a picture, or a drawing. “I learn a lot as I go.

Home Furnishings

Renee prefers to work from patterns, adding her own sparks of individuality in fabric choice and detailing. “As long as I have at least a picture or drawing of the piece, I can usually create it,” she affirms.

Today, Renee and Jenn work out of their homes, creating some very unique wearable art. Their styles of working remain different, yet complementary, as their lives have always been.

SMALL-TOWN FRIENDLY & EXCEPTIONAL PRICES

When Jenn suggested that maybe, just maybe, they could make some money from their shared sewing hobby, Renee made the decision to strike out together with Jenn. Thus was born Threds ‘n Things.

ILLSHIRE

Some years later, after Jenn had married and started her own family, Renee found herself at loose ends when the company she worked for closed its doors. Always searching for ways to add to the family income, Renee struck out in several different areas, areas that always involved her two loves: cooking and sewing.

Threds of fers several dif ferent varieties of fabric art. Renee makes purses and bags of all sorts and sizes, along with skirts, dresses, and aprons for both girls and women. One of her unique products is a skirt made from old pairs of blue jeans.

The inner seams of the pant legs are opened up, and then brightly-colored and patterned fabric pieces are sewn to the seam edges, creating a skirt. The skirt can then be cut to any length. Jenn specializes in patchwork pieces and tie-dye art. “Jenn can see color combinations that I just don’t get,” Renee says. “She can put colors and patterns together that just don’t seem to match to me and make something very beautiful!” Often, Jenn finds vintage material to repurpose for her patchwork and for other pieces of clothing. A family might have pieces of clothing, tablecloths, or other heirloom pieces that ordinarily would lay in a box or bag in an attic and slowly rot.

Jenn and Renee can take the fabric and recreate it into a usable item that family members are proud to display or wear. One of the difficulties of offering products for sale when you don’t have a physical storefront is how to display your work for potential customers. Through a serendipitous relationship with a local businesswoman, Renee and Jenn have begun to display their wares at Once I Was, a trendy little boutique in downtown Van Wert.

Vickie Schulte, proprietor of the store, helps many local artists and craftspeople by offering space in her store for their products.

14th Annual Trinity Ministries SOUTHERN GOSPEL EXPO Live in Concert

Threds 'n Things has been expanding its product line in recent months. Jenn’s children, Echo and Gauge, have also demonstrated an artistic bent. Echo helps her mother with tie-dying material, and Gauge has created his own line of handmade jewelry. A unique part of Threds’ services is what I call their “event sewing.” As another way of bringing their work before the public, Renee and Jenn work at various vendor events in Van Wert and Paulding Counties, including the Peony Festival craft show and the Apple Festival in Van Wert, and Paulding’s Flat Rock Festival.

The girls set up their sewing machines and fabric tables and proceed to create clothing and fabric products, sometimes on demand! What lies ahead for Threds? “We will continue to display our work at Once I Was, and we’ll continue working at the larger vendor shows in the area,” Jenn shares. “However, we’ll be branching out into online sales at our own Internet storefront in the future.” In the meantime, they continue to fire up their sewing machines and create their unique items from scratch, one at a time, from many different “threads and things.”

K

ristina Smiley of nearby Deerfield, Indiana is one of the hardworking handcrafters selling unique items on Etsy. Her primary business is known as Creative Endeavors, offering “creative crochet designs,” including fashionable, handmade hats, scarves, mittens, headbands, boot cuffs and more. The shop’s many pages are filled with photos of an attractive model displaying the Deerfield resident’s handiwork. Interestingly,

Kristina is the versatile model wearing the hats, scarves, footwear and other crocheted apparel. How did she get started? “Both of my grandmothers crocheted, and my mother knitted, crocheted and sewed. “An aunt who was a big part of my life also loved these crafts, so it was just natural for me to pick it up and grow to love crocheting and other fiber crafts,” she answers.

Greenfield Village in Michigan was a favorite family vacation site as she grew up. “I treasured going into the fiber mill and watching them spin the silk from the silkworms. I could watch them for hours,” Kristina recalls. “And it increased my passion for anything fiber.” Kristina initially opened her brick-and-mortar version of Creative Endeavors in Winchester, Indiana in 2003, where she created and sold her crafts and artwork. She later sold the shop so she could stay home with her children. After closing her store, Kristina sold her wares at farmer’s markets and various craft shows until a friend told her about Etsy. “I gave it a try in 2011, and I have had 391 sales of my crocheted articles since then. I sell them all over the world: France, Ireland, Australia, Scotland, Sweden, Germany, Spain, and Canada.” Interestingly, Kristina says a big percentage of her customers reside in the United Kingdom. “One customer contacted me and said, ‘I am a flamboyant person. I want a bold red, the boldest red you can make with this design.’ “She asked for something for her hair. When I sent her the boot cuffs, I made her a floral thing using the same stitch pattern and little gold hair buttons and great big, huge gaudy flowers and sent it to her for free. She was such a fun customer!” Pointing to one pair of gloves on her website, Kristina says, “These are the pair that started everything. Etsy put them on the front page of their web site several different times because

the photos are nice and clean and show the gloves’ clear, neutral colors. “Now, this pair,” she adds, pointing to another image, “was just featured on a blog called TravelFreaks.com, where the article listed the ‘top 5 things you need to have on a Winter Wonderland in Europe.’” Surprised and honored, she says, “These were on that list, along with big-name boots and bigname parkas!” Kristina’s newest Etsy venture is a shop called Wallflower Yarn, featuring yarn she has spun and dyed in a great variety of colors and textures. While the new web store is beginning to attract customers, she says, “You really have to have a head for business.” And she does have that skill. “I focus my attention on my target market; these are the people who recognize the value of a handmade article. “My five-year plan is to have an actual yarn shop where I can do classes. I’m looking to open a yarn shop in a nearby location.” Kristina uses an electric spinner to create her yarns. “The electric spinner has the same setup as a spinning wheel. It has a sewing machine motor instead of a spinning wheel to spin the bobbin. You can mix colors, fiber styles and sizes.” Usually, Kristina uses powdered dye, purchased online, but she has also used Kool-Aid and even white vinegar, or an eco-friendly acid dye, to set the colors. “I’ve washed and washed them, and the colors haven’t faded.”

dye it that way, or if I’m going to put it in the oven,” says the well-organized artist. “I get my base out, I’ll leave it in the hank form, and I’ll soak it for 30 minutes in the citric acid. That way, it also softens the fibers, and in 30 minutes, it’s ready for the dye pot, which is already mixed up with my coloring.” Not to be confused with a skein or ball of yarn, a hank is loosely-wound, then twisted a few times (see photo on a previous page). This makes shipping fairly easy. Some of Kristina’s dyed yarns are baked in the oven. She places a hank on parchment paper and then squirts it with small bottles of dye, creating unique color patterns. Kristina explains, “I bake it at about 275-degrees to set the colors. I use Woolite® as a conditioner when I first wash it.” Kristina dyes six hanks of yarn at a time, all resulting in slightly different shades of color. “The buyer gets the similarlooking hanks, along with instructions to go back and forth from one hank to another for a consistent look,” she says. Presently, Kristina’s children are actively involved in her business. Her 19-year old daughter does a lot of the photography for Kristina’s websites. Her 17-year-old son helps with the photos and even offers his advice. Shoppers have already begun buying yarn from the new Wallflower Yarn site, obviously recognizing the quality of Kristina’s handiwork.

Kelly now creates and sells her jewelry at Closet Update in Portland, Indiana. Kelly likes being there. “The owner of Closet Update, Kari Guntle, provides space for me and good business advice. I also have quite a few other stores that sell my jewelry, such as The Flower Nook and Evans’ Fine Jewelry in Portland, Sunshine Boutique in Fort Recovery, and Splurges in Greensboro, North Carolina. “Kari has been so good to me, allowing me workspace in the back, and also display areas to market my work,” says Kelly. “Eventually, sometime in the distant future, I’ll have my own storefront, but right now, I have the flexibility to be a mom to my little boys. Kelly explains, “My kids are most important to me, and I don’t want to give up my time with them. I want to watch them grow and learn and to help shape their personalities. “This business has allowed me to be flexible and do the things I need and not have a strict 40-hour schedule.”

UNDER NEW MANAGEMENT “Customers often see a specific piece of jewelry and want to customize it. So, I design and create that for them. Some pieces are made with the intent that the customer will personalize it. I’ll hand-stamp names or a design element the customer desires.” Kelly selects letter stamps from various fonts and sizes and, one at a time, holding the shaft vertically, carefully places a stamp on the metal. She taps the stamp with a quick double blow and views the results: the name a customer requested. “Handcrafted jewelry means that no two pieces will be the same.” Kelly is self-taught but says, “I’m also inspired by family and friends. My desire is that when a person purchases a piece of jewelry from me, I want it to be an inspiration to them—a reminder to live a simple life. That is the inspiration for Simply Kelly.” The most recent addition to Kelly’s marketing “toolbox” is a new website, www.SimplyKellyJewelry.com. The attractive web pages present a large inventory of her jewelry, along with photos, prices, and contact information. “My good friend Nicole Towell designed and created the website and handles all the social media sites, too. Slowly, we are beginning to reach more people,” says the hopeful jewelry maker. “I anticipate that the website will reach a larger population. “My customers are great,” she says. “It seems with each piece I’ve made, a story has been told. There is a reason the customer wants a piece of jewelry made. It’s a reminder of family and friends, and it’s either to celebrate life or share a moment of happiness.”

The gift of a personal piece of jewelry often touches emotions, and customers often have stories to tell. Kelly says, “Sometimes tears have been shed. It’s nice when a customer will call or email me and tell me how much it meant to them when they gave it to their mom or their grandma, and it made that person cry. “I’ve had mothers ask for a piece with words from a song they sang to their babies. Or, a saying that comes from a phrase frequently used in the family— ‘I love you to the moon and back,’ or, ‘I love you a bushel and a peck.’ “It is a lot of fun when people come in with an idea, and you get to hear their story—the reason they want that piece.” The most popular Simply Kelly pieces are personalized necklaces with children’s names on them. “Some designs have charms or glass beads. I create a necklace with a child’s name on it and add a Swarovski birthstone crystal,” she says. Laughing, she adds, “I once made a bracelet with 12 names on it!”

www.velocitymotorsofbluffton.com

Kelly’s mother, Kathy Hess, has begun to work with Kelly in the past year or so. “I’m blessed to have her working alongside me,” Kelly says with a grin. “Mom’s creativity has helped to inspire me. She is a great help in crafting jewelry. She has been specializing in leather key fobs, bracelets and watch bands.” Kelly says, “I have a lot of ideas, and it is fun to turn those ideas into items for sale.”

What’s more, you can feel free to let go of your child’s hand as you shop. In fact, Business Manager Jessie Myers (third generation Heller) plans to open a kid’s corner this season where kids can craft, color and play in the dirt while their parents shop. and says the goal is to make a trip to Heller Nursery a fun and enjoyable experience for the whole family. Heller Nursery has plenty to turn your visit into an adventure, including a peacock, a dog, a duck, a turkey and a cat. Jessie laughs, “You never know what you’re going to find out here. Some days it feels like a mini zoo!” Just another reason to bring the kids and enjoy the day. When you shop here, the Heller staff will make you feel like family because they are a family. Three generations over the past 69 years have kept this business thriving through the ups and downs of the ever-changing economic climate. What was started in 1946 as Bobby Heller raised and sold evergreens in his parent’s garden has expanded into an intricate growing operation. Today, Heller Nursery’s holdings include 11 greenhouses, covering well over an acre, and nearly 100 acres of fields, where nursery stock is grown. Bobby was just a teenager when he started the business, and he later chose to leave a fulltime job at the railroad to focus on the nursery. As years passed, Bobby’s son John joined

the business, and then later, John’s daughter Jessie came on board, as well. Jessie says the secret to Heller Nursery’s success over these years is in keeping the business in the family. “Each generation has their own talents and brings a new and unique contribution to the business.” For instance, her dad brought exceptional skills in landscape design, while Jessie’s talents lie in the business side, including keeping the company up-to-date with technology. Both Jessie and her father graduated from Purdue University with degrees in horticulture science and landscape management. They had the same advisor during their studies, and both received the Gilbert Award for High Achievement in Landscape Horticulture (the only father-daughter combo to ever win this award). Jessie also received the Allen Hammer Award and Scholarship from the Indiana Flower Growers Association for Excellence in Growing. Though Bobby passed several years ago, his wife Mary is still much a part of the day-to-day operations. She is involved in everything from potting plants to generating new ideas for the nursery. “She’s very active in the business, and I couldn’t do it without her,” says Jessie. Because of the expertise and care this family brings to the business, you can feel confident that you’re getting the best of the best plants at Heller Nursery. When asked about what sets their products apart, Jessie responds, “It’s a process, but we start as small as we can using seeds or plugs and grow all of our plants ourselves.”

The Heller staff pays special attention to each and every plant, and weeds out any bad starts. “We want all of our customers to be happy, so we’re not going to sell something that doesn’t grow well.” And, happy customers is what it’s all about at Heller Nursery. In fact, they will even help you with ideas for your flower beds and containers. Jessie recalls a time when a gentleman needed help with flower boxes. “He just handed me the boxes and said, ‘Fill them.’ “When I was done, a lady walked up and said, ‘Pick out all of those for me too.’” Jessie says that type of thing happens frequently, and helping customers pick plants is a favorite part of her job. “I may not remember a customer’s name, but I’ll likely remember what plant they bought, and this is a way we can connect.” Much like the gentleman with the flower boxes, when it comes to landscaping, many aren’t sure where

“Take a couple pictures and bring them in, and we can help you out. Build a little at a time instead of being overwhelmed.” And, if you’re looking for a reason to improve your landscape, studies reveal that growing plants can fill you with a sense of peace and satisfaction. Not to mention that improving your landscape can increase the value of your home.

Whatever you need to start your project, you’ll likely find it at Heller Nursery.
