THE ORCHARD TREE Family Restaurant

A Treasured Tradition in Family Dining Article and Photos by Dee Fisher

I

grew up in a small town. It was small enough that I can remember when fast food franchises entered the picture. Before their coming, the restaurants in town were nearly all small, usually family-run outfits specializing in some area of homestyle cooking. One place would have great pies; another had the best burgers; and so on. When my town caught up with the rest of the world and had its very own Mc-burgers,

some of those family places remained, but they became the hangouts of the local crowd, usually seniors and retirees. My mother always used to say that you could tell the good restaurants in a town by looking at the customers. The good restaurants, in Mom’s opinion, had lots of seniors seated and eating. Seniors, she said, chose establishments with good food and reasonable prices!

WVL November 2014 / 5

In the late 1970s, Ken and Chloe Esmonde started a new restaurant, The Orchard Tree, in the old Happy Humpty building on West Main Street in Van Wert. It was one of those “good” restaurants – plenty of home cooking at affordable prices. After 30-odd years, there are two restaurants (the other in Celina) that continue the tradition – “home-cooked

food at a reasonable price,” says Van Wert restaurant manager, Holli Hauter. The Esmonde family has long since sold the restaurants (to Lynn Whitaker and Steve Adam in Van Wert), but the tradition continues. In fact, The Orchard Tree still maintains some of the same daily specials

that began with the Happy Humpty franchise! “We feature a full buffet for lunch and dinner,” says Holli, “with a breakfast buffet on Saturday and Sunday mornings. Many of the items on our buffet are made from scratch, and each day features a variety of foods that appeal to many different tastes.” The buffet is one of their large draws at The Orchard Tree, especially on Friday evenings. Several different soups (four during the week and two on weekends) are featured on the daily buffet. One of the soups is always beef vegetable, which is cooked daily in the kitchen and allowed to simmer for hours to maintain the best flavor possible. You’ll very rarely find exactly the same soups on the buffet – the kitchen includes 70 different varieties in their cookbook! Homemade desserts are made daily in the kitchen, including a large variety of fruit and cream pies as well as baked cheesecake and several three layer cakes, all made from scratch. Some customer favorites include butterscotch, raisin, and black raspberry pie, along with the decadent turtle, Oreo, and M&M cheesecakes. If you prefer cakes, they have many kinds, including carrot, chocolate HoHo, and Almond Joy, just to name a few. They also offer muffins made from scratch! Some of the varieties include: sour cream cinnamon streusel, orangecranberry, blueberry, banana nut, and chocolate-chocolate chip.

concoctions, The Orchard Tree has a sandwich for nearly every taste. Dinners include lasagna, chicken, fish, veal parmesan, and even nicely trimmed steaks cooked to order. “Two of our most-ordered dinners are our all-you-can-eat fried chicken and all-you-can-eat fish specials on the weekends. Our chicken dinners are very popular with our customers,” Holli noted. Lunch at The Orchard Tree is a very economical choice. A variety of daily specials (usually a choice of three) are offered at under $6.00 each. Specials include an open-face beef manhattan sandwich with mashed potatoes, several different sandwiches with fries, and even lunch-sized dinners, depending on the day. Best of all, each daily special includes a refillable drink! For your next holiday celebration or special event, you may want to consider The Orchard Tree for the meal. They feature a grand buffet on Thanksgiving, Easter, and Mother’s Day, with seasonappropriate entrees, salads, and desserts. The Orchard Tree’s Facebook page features some great photos of delicious treats offered on other holidays, also, including St. Patrick’s Day, Valentine’s Day, and New Year’s Day. Let Your Friends menu, which includes egg dishes and breakfast steaks, as well as waffles, pancakes, and omelets. In recent years, the owners have embarked on a remodeling program, with all new seating and flooring. “We’re very proud of our new ceiling,” says Ms. Hauter. “It resembles the oldstyle tin ceilings in older stores. You can still see some of them in downtown Van Wert businesses. “Come out and see the new things we’ve done with an old idea!” The remodeling is nearly finished, and, when it is, there will be black and white framed photos of Van Wert’s past and current sights hung throughout the establishment. The locally owned American cuisine restaurant is truly a treasured tradition in Van Wert. “Having a place to come where the waitresses know you and what you like to eat is one of the best things we can offer to our customers!

len and Alice Manley, the founders of Manley Meats, have a food service history that is rich in tradition. From a very young age, Glen worked alongside his father, going farm to farm and butchering for customers. Years later, while stationed in Alaska, Glen worked part-time at a meat plant, cutting meat and delivering it to restaurants and other food service kitchens. Alice also worked at the same plant as a bookkeeper.

Glen and Alice returned to Indiana, and in 1962, they started their own business, offering butchering and processing of beef and pork only. They soon added a retail store, and the Manleys purchased their stock from local farms. In addition to the retail sales room, their facility also included a canning room, a large freezer, an office and storage space. Over time, the original building, measuring approximately 1,500 square feet, has changed a great deal. By 1973, volume in the business

meat business. They are carrying out the tradition of working hard to make Manley Meats the best in the processing and retail sale of meats in Indiana and Ohio. Today, some of the Manleys’ grandchildren are working alongside their parents, as well. The Manleys add, “We’ve had many other great employees working for us – now, and over the years. They have all just been so good and are greatly appreciated.” Manley Meats offers a full line of fresh and frozen retail meats. Along with beef and pork cuts, the store sells freezer chicken. And, the Manleys have just recently added a few new products: turkey bacon, fresh ground turkey, and fresh ground chicken.

The large meat cases at Manley Meats display a fresh line of meats cut daily. Manley’s deli cases present the shop’s own smoked meats, including summer sausage and bologna, and their own line of cold cuts. Manley’s also carries salads and cheeses, along with many varieties of their own beef and pork jerky. Customers may order custom gift boxes of any size, featuring canned meat, cheeseball, candy or nuts, noodles, jerky, summer sausage, and mustard or jelly. One of the biggest challenges many businesses face today, including Manley’s, is the ever-increasing cost of goods. Locally, the Manleys have observed the price of hamburger more than double in the last couple years, from $2.00 a pound to $4.50 a pound. Knowing that this presents a challenge for customers, Roger

When it comes to healthier food options, purchasing meat from a local butcher is often a good choice. At Manley Meats, they try to stick with products that are natural and free of hormones and antibiotics. So, when you think of Manley Meats you can be assured you are receiving a product that is both fresh and wholesome. During deer season, Manley Meats offers deer processing services for area hunters. One of the largest deer processers in the state, they have a separate building on the premises used only for deer processing. Manley’s produces approximately around 40,000 pounds of venison sausage a year. Nowadays, there are many who enjoy the hunt but cannot use all the meat. Manley Meats has a solution – the processor has teamed up with an organization known as Farmers and Hunters Feeding the Hungry (FHFH). Manley Meats processes deer meat and sends the extra to a local food bank, and FHFH pays for the processing. Manley Meats has won a number of state and national championships with their smoked products, cold cuts and jerky. Guests of the Van Wert Rib Festival have enjoyed BBQ ribs, brisket and more from Manley’s, which has been a regular competitor at the event in recent years. In fact, customers can purchase Manley’s award-winning BBQ ribs, hot off the grill, at the store every other Thursday afternoon. On alternating Thursdays, BBQ chicken halves are available. In the last few years, the Manleys have created a special order form for fundraising to help schools and local organizations. The Manleys enjoy taking an active role in the community and doing what they can to help others be successful. Currently, Manley Meats works with a local farmer who donates stock to

Manley’s also makes regular donations to fill backpacks with food for children to ensure they have adequate food over the weekends. For the busy holidays, Manley Meats is a good choice for your meats and cheeses. You can purchase smoked ham, roast, smoked turkey and cheese trays. Manley Meats also provides catering services, accommodating nearly any size group. They’ve catered reunions, family picnics, company parties and luncheons, church and school fundraising events, and weddings. Their catering menu includes premium choices, like BBQ ribs, brisket, and pork chops, along with less formal burgers, hot dogs, bratwursts, and sloppy Joes. Sides include a variety of potatoes, vegetables, and salads. For dessert, enjoy assorted pies or cheesecakes, sheet cake, fresh fruit, and more. Call Manley’s for more information on catering or to book your event. Manley Meats’ weekly specials are posted on their website and their Facebook page. THIENMAN’S Sports Bar & Grill A Fort Recovery Favorite for More than 15 Years Article and photos by Holly Wuebker

T

ouchdown!! At least, that’s what your first thoughts might be when walking through the front door of Thienman’s Sports Bar & Grill. It might be because of the signed football jerseys on the walls, the friendly talk or banter you might find, or the delicious food with homemade Thienman’s Sauce, which is a definite score. Either way, diners from

surrounding communities drive to this restaurant in Fort Recovery, Ohio to get the best food and service around. Owners Mike and Sue Thien started the business in 1997 and formally took ownership in February 1998. At the time, Mike felt the best plan was to work his existing job while they started a new business. He couldn’t have known that this plan would ultimately go awry.

WVL November 2014 / 17

After injuring his back while on the job, Mike fought in court against the very same company from which he had hoped to retire, but ultimately lost. But, the Thiens learned a lot from the experience, and the start-up venture they thought would serve as a back-up plan enabled the couple to move forward into new, full-time professions. Mike and Sue had transformed the restaurant, formerly known as

the Hawaiin Buckeye, after purchasing it from Danny Bechtol and his wife Molly, who was from Hawaii. The Thiens changed not only the name, but the entire atmosphere of the business. In November 1999, after having struggled financially through the legal dispute, the Mike and Sue considered selling the business. Fortunately for all, that’s precisely when

Potatoes, homemade soups, chili, hand-pattied burgers and freshly-diced vegetables are just a few of the tasty items offered at Thienman’s. The weekly lunch specials include: Mystery Meal Monday, meatloaf on Tuesday, 3-piece chicken meal on Wednesday, lasagna on Thursday, and half-pound cheeseburger meal on Friday. Thienman’s serves a variety of regular menu items, but a couple of its specialties include the hand-breaded Thienderloin and Thienfingers with “Thien” dipping sauce. The sauce is a secret family recipe

Following this incident, the Thiens decided to completely open up the backroom, which had no heat, air conditioning or lights then. The additional space provided more room for parties and additional seating during their busy times at lunch.

W

Still, restaurant ownership hasn’t always been smooth sailing for Mike and Sue. For instance, the business was robbed around the spring of 1999. The back door was completed torn off its hinges, money was taken from the register, and the restaurant was looted.

At the same time, many other establishments in the surrounding area were either facing terrible tragedies like fires, or they were closed for remodeling. Many local Mercer county residents began visiting Thienman’s, and while some disappeared when their former haunt re-opened, others continued to frequent the newer establishment. Sue began coming in daily to prepare lunch specials and other menu items.

ILLSHIRE

Thienman’s Sports Bar & Grill really started taking off. This was about the same time that the Fort Recovery High School boys basketball team qualified for state finals, and local crowds began visiting the restaurant after the games.

that only the Thiens know how to make. Employees have to leave the kitchen when the sauce is made, and it’s often prepared 5 gallons at a time so there’s enough for marinating chicken. With recent shifts in the economy, Mike and Sue have noticed a surprising change in the business. Where alcohol sales once generated most of their profits, it’s now the lunch and supper dining crowds that bring the most income. Even though Thienman’s has been known as a bar, they are more prominently featured as a family-style restaurant today. It is very much a family establishment. In fact, Mike and Sue have four daughters who have also put much time and hard work into the business. Jenna, Kelly, Holly and Trisha have each played an important role – and more extended family members have helped, too, either by working at the business or referring new employees. Two of the Thiens’ daughters, Jenna and Kelly, decided the restaurant should incorporate a Sunday breakfast buffet, and they have helped integrate many other new ideas, as well. What some may not know is that Thienman’s also caters at wedding receptions and other special events, both large and small. Partygoers can choose from Thienman’s entire menu or select a few basic items, such as homemade fried chicken and potatoes, and customize the menu they want. Weddings are an extra-special occasion, and couples who visit the bar on their wedding day are given a complimentary bottle of Asti sparkling wine to shake up and spray as they please. The Thiens have seen some amazing pictures from

Call (260) 692-6366 weddding photographers, and two neon lights have actually been broken by popping corks. Mike and Sue say they are “very fortunate, as far as their help,” because employees step up when help is needed, and it all seems to work out. It is a special treat for the Thiens to “see the kids that once worked at Thienman’s now picking up their own kids from the school bus or coming in for supper to reminisce.”

The Business You Can Trust - Since 1994 -

The Thien family draws its customers even closer with yearly slogan shirts and special events – they’ve hosted Cleveland Browns speakers such as Jamel White and Hanford Dixon. With some of the biggest Browns fans around, the business has, in years past, offered bus trips to football games for customers and friends. Thienman’s gets large crowds for Buckeye games, and they feature gameday specials with catchy names like “Wings & Yuengs.” The bar and grill hosts holiday events, including the annual Halloween party, Thanksgiving spoiler (night before Thanksgiving), Christmas party and St. Patty’s Day extravaganza. There is always something new and exciting going on at Thienman’s. So, for your next meal, party or wedding celebration, be sure to stop in at Thienman’s Sports Bar & Grill, where it’s not just about the food, but the entire experience.

DICK’S PIZZA PALACE Est. 1961

Portland’s First Pizzeria Sticking with Fresh Dough Article by Lori Lineman

S

ince 1961, Dick’s Pizza Palace has been serving up pizzas made with fresh ingredients to the residents of Portland, Indiana. The first pizzeria in Portland, Dicks Pizza Palace has been able to survive and thrive throughout the years, even with many different competitors coming to the Portland area. Dick and Jeannie Reinhart first opened Dick’s Pizza Palace in 1961. After Dick passed away,

Jeannie continued to operate the restaurant until 1987, when she decided to sell the business. At that time, Cheryl Geesaman and her sister had been working for Pizza King in Portland for ten years. When they heard Dick’s Pizza Palace was for sale, they considered purchasing the establishment. With encouragement from their father, the two sisters and their mother bought the popular pizzeria.

WVL November 2014 / 27

Cheryl’s sister has since retired from the business. But, customers may find her mother, who is now 81 years old, still helping around the business. The restaurant is housed in the same building the Reinharts first used. The equipment, including the pizza pans and ovens, are all

original to the business. There have been a few renovations to the restaurant, including the removal of a wall, but otherwise, the building is still mostly the same. When Cheryl purchased the restaurant, there were five tables, and over the years, they have added just two more tables to the dining room.

SAVE 15% The menu at Dicks Pizza Palace has always offered Italian-style selections. The menu has changed only slightly over time, with a few new pizza toppings added to the menu now and then. While the menu may not be extensive – offering mainly pizzas, subs and salads – only the best ingredients are used to create these items. When Cheryl and her family purchased the restaurant, they decided they would only use the best ingredients. They were determined not to serve a lackluster product in the restaurant. The pizzas at Dick’s are made with fresh dough, rather than frozen, and all the vegetables are hand-cut daily. Even after owning Dick’s Pizza Palace and sampling its menu for 27 years, Cheryl’s favorite menu item is the pizza. While she enjoys every item on the menu, on her day off, she says she still finds herself ordering a pizza. One of the most popular items on the menu is the French-fried breadsticks. On a Friday night, it is not unusual for the restaurant to serve over 100 orders of these breadsticks. Cheryl’s mother was actually the creator of these popular breadsticks. At other establishments, breadsticks are typically baked in an oven set at a low temperature. But, the ovens at Dick’s Pizza Palace are set at 700 degrees – much too hot for bread. Cheryl’s mother wondered what would happen if she put breadsticks in the fryer instead of baking them. She tried frying a breadstick and liked it. Since that day, the breadsticks have been a big seller at Dick’s Pizza Palace. Many customers compare these breadsticks, which are also coated in garlic butter, to a Johnny cake.

Cheryl believes the atmosphere of Dick’s Pizza Palace is one reason customers keep coming back. When she first purchased the business, the walls were paneled and did not have many decorations. The family decided to use a 1960s decorating theme, since the restaurant was established in that decade. Many customers have donated items to be displayed on the walls at Dick’s Pizza Palace. Cheryl enjoys finding and collecting 1960s memorabilia, as well as old items from Portland.

FRIENDS AND fAMILY ———

She often rotates the decorations on the walls. Over the years, Cheryl has collected so many pieces of memorabilia that she had to purchase a storage space to house all of the items that are not currently on display. Cheryl admits that national-brand pizzas are good, but her fresh ingredients are not the only thing that sets her pizza apart from the rest. As a small business owner, she has a larger stake in the success of the business over a franchise. Cheryl still uses some of the best quality ingredients, even though they have tripled in price over the years, because she only wants to produce the best quality food products. She has pride in the business she has worked so hard to make a success and makes sure this is reflected not only in the menu items, but the service customers receive, as well. Dick’s Pizza Palace has eight employees currently, but over the years, the restaurant has employed many more. Cheryl jokes that “everybody in Portland” has worked for Dick’s Pizza Palace. She says she’s had many excellent employees over the years, including her

current staff. Cheryl has formed many friendships with her customers, as well. Cheryl has also enjoyed being able to work with her children, nieces, and nephews over the years. Her family has also been willing to pitch in and help when needed, and this is what Cheryl most enjoys about working with family. Dick’s Pizza Palace also offers catering services. Since the restaurant does not open until 4 o’clock each afternoon, Cheryl and her staff are available most days to cater during non-business hours. While they do not usually rent out the restaurant, Cheryl says there are many places in the Portland area that are well-suited for parties and other group events. As the owner at Dick’s Pizza Palace, Cheryl loves everything about her job – even the challenges. In fact, overcoming such challenges and continuing to be successful in the business is something she looks forward to daily. In the future, Cheryl would like to expand the back room of the restaurant to add more seating for diners. She also would like to add a new oven in the kitchen.

Are You Concerned About Your

HEALTH CARE COSTS?

While owning a business means there are always projects and tasks to complete, Cheryl is confident the business will continue to be a landmark in the Portland area for many years to come.

ust three years ago, the government of the United States officially recognized Small Business Saturday – encouraging holiday shoppers to be intentional about supporting their local small businesses during the busiest retail season of the year.

Small Business Saturday falls on the Saturday after Thanksgiving and Black Friday. This year, the date is Saturday, November 29th. Since it is the year-round mission of Wabash Valley Living to promote local businesses, we thought we'd take the time to say "thanks" to those small businesses that have placed an advertisement in our publication this year. Please stop by and visit some of these businesses over the holiday season! Tell them you enjoy seeing their ads in Wabash Valley Living!

GROUNDS AND GRAINS Coffee Shop

Get a Fresh Start for a New Day Article by Lori Hoeppner

hen you are in the coffee business, you hear a lot of myths. Espresso is bitter. Bigger is better. More expensive coffee tastes better. Coffee drinkers are smarter, better-looking and happier than non-coffee drinkers...

Grounds and Grains is a family-owned and operated business, and this family pours its heart and soul into each cup served. Led by parents Nathan and LeAnn Gerber, daughters Joanna and Leah also play vital roles within the business.

Ok, that last one is true. You are one of these smarter, better-looking coffee drinkers when you visit Grounds and Grains located in Bluffton, Indiana.

Joanna takes on the tasks of concocting endless drink possibilities and inspiring the baristas. A fresh roast is a priority at Grounds and Grains, and roasted coffee beans are shipped to the shop

It is said that a good barista is not known for his speed but for the aromas, colors and flavors he achieves in a cup of coffee. At Grounds and Grains, each cup of freshly-brewed coffee

and can patiently guide you through the process of selecting the perfect coffee combinations. Occasionally, the shop hosts a Sampler Night, and with the purchase of a ticket, you have the opportunity to try a variety of drinks, opening your eyes to all of the possibilities. Now, you are probably wondering where the “grains” come into play. LeAnn’s passion at the shop is serving fresh pastries, breakfast quiches, wholesome soups, crisp salads and hearty sandwiches that have been made from scratch. So that customers don’t miss out on their favorite hot soup, Grounds and Grains produces a monthly soup calendar and posts it on the shop’s Facebook page. Popular lunch combinations and drinks of the week are available to make selections easier for those who are onthe-go. Amongst the most popular menu items are the cinnamon caramel rolls, homemade cookies and the chicken wild rice soup. There is also a nice variety of gluten-free choices.

LeAnn kneads and bakes the bread for the paninis herself. She grinds wheat by hand, blends it with fresh ingredients, and shapes the mixture into tasty granola bars. The shop’s homemade salad dressings are also among the many menu items made in-house. LeAnn says, “I love to serve, and just having the ability to talk with people and find out how their day is going is what keeps me motivated. I feel we inspire the community by serving.” As you can see, Grounds and Grains is much more than a coffee shop. Customers may also choose a healthy smoothie for a “fresh start to a new day” – the motto at Grounds and Grains. From a Pineapple Planet Smoothie, which consists of

Leah has taken her passion for handmade fair trade goods and offers beautifullycrafted handbags, native crafts and homemade cards for sale. Selling items from fair trade organizations gives Grounds and Grains the opportunity to give back. Fair trade organizations work with third world countries, helping them to develop a product that can be sold, returning a fair wage, and offering the opportunity for self-sufficiency. In the shop, there is a map where customers mark their hometown with a push pin, showing that Grounds and Grains have made connections with people from all over the world. The Gerber family finds they have created an environment that appeals to church groups and lunch-goers and that the atmosphere is fitting for informal meetings. In the background at this cozy shop, you hear instrumental hymns, which help to create a relaxing, peaceful environment. It is a place where you can take a break from your busy day. Wi-Fi service is available, as well. The Gerbers play a great part in helping their customers to get off to a “fresh start for a new day.” Grounds and Grains is open from 6:30 a.m. to 5 p.m. Monday through Friday and from 8:30 a.m. to 3 p.m. on Saturday.

It appears that chicken wings are no longer reserved only for the fans of football, and this is what Jim Weaver, founder of Wings, Etc., was counting on in 1994 when he opened the first location in South Bend, Indiana. Jim first gained

Most diners probably don’t realize that fewer than 50 years ago, the “wings were considered one of the least desirable cuts of chicken – a throwaway part often cooked into stock,” says Joseph Stromberg in his February 2013

Wings Etc., a family friendly grill and pub, features an assorted menu, including items like: fresh-never-frozen Jumbo Buffalo Wings, Wood-Smoked Baby Back Ribs, Premium Burgers, sandwiches, subs, wraps, flatbread, salads, kids’ meals and ice-cold beer. You can expect an informal atmosphere with good, old-fashioned vibes that will make you want to come in and stay awhile. Walking into Wings, Etc. Grill & Pub, you will feel at ease with the casual wood paneling and the friendly wait staff and bartenders. This is not your average sports bar. This is a full-service, sportsthemed restaurant with an ambience that screams “Welcome!” The reason you’ll visit Wings, Etc. and “love it” is because of “great food, great service and great atmosphere,” says founder Jim Weaver. What you’ll observe at Wings, Etc., besides the wide variety of sporting events splashed across large, wallmounted television screens, might include parents handing out quarters to their kids for the arcade-quality video games or brave diners accepting the restaurant’s “Wall of Flame Challenge.” This is where the craziest of customers who have few inhibitions attempt to eat 16 “Wall-Sauced” Jumbo Wings with NO beverage or other food. Wings, Etc.’s Wall Sauce is made in-house daily from pureed Habanero chilies. If a diner successfully completes the spicy challenge, they will be immortalized on the “Wall of Flame” And, the jawdropping experience will be burned into your memory, only to return with any trip back to Wings, Etc. So, you see, the visit to Wings, Etc. is not only about going out to eat; it’s also about making memories. These are the type of memories that your family and friends will treasure forever.
