sk nearly any woman – she’ll tell you that a decent hair cut and style are well worth the money. My mother, who was a nurse, told me many times that a female patient’s health would see an upswing when someone combed or brushed her hair for her. Nowadays, beauty salons have diversified into a one-stop grooming and fashion base for both men and women, and even children. Even the smallest town has at least one “beauty

parlor” and usually a few more smaller salons operating out of private residences. What is offered at each shop is limited only by the training and imagination of the owners and operators. In Convoy, one of the longer-lived beauty establishments is The Sophisti-Cut Styling Salon, located on West Tully Street, just to the west of State Route 49. Although the shop has been in operation for around 30 years,

new owners have recently entered the picture. In January, an energetic young couple, Tyler and Elizabeth (Liz) Gibson became the proud owners of The Sophisti-Cut. Since then, change and innovation have been the watchwords. Liz met Convoy native Tyler Gibson while attending Ball State University in Indiana

and married him in short order, moving with him back to Convoy. She had gotten her cosmetology licensing in Muncie, and so she began to look for a salon to practice her trade. Being from a small town herself, Liz liked the ambiance Convoy offers, so, besides looking at possibilities of the larger salons in local cities, she also began watching for business

opportunities right in town. “Then, it just all came together!” she says. “Diane Mann was selling her business, and we were able to take advantage of it. We took over The Sophisti-Cut in January 2014. I like living and working in a place where you don’t see your clients only when they come into the shop. You see them at basketball games, at the store - everywhere around town!” On their Facebook page, Liz posted, “We have created a relaxing atmosphere that allows our clients to escape from their daily stress and responsibilities while undergoing one of our fabulous services.” Some of those services are obvious; they offer haircuts and stylings for men, women, and children, along with hair coloring and highlights. However, Sophisti-Cuts is trying to go beyond the ordinary and the obvious with some new techniques and new twists on the standard. Liz notes, “All cosmetologists are required to pursue continuing education, but we try to do extra classes and keep up on current trends and technologies. Then, we can offer new opportunities for our customers to look fashionable and beautiful!” One of the new technologies Liz has introduced into the Convoy area is a specially certified hair styling technique called the Brazilian Blowout. This process smooths “fly-away” or “fuzzy” hair down without the use of harsh chemicals. In fact, this technique actually improves the health of the hair by creating a protective protein layer around the hair shaft to eliminate frizz and smooth the cuticle, lasting about 12 weeks. The Sophisti-Cut also offers complete manicure and pedicure services through stylist Amy Mengerink. She can keep clients’ nails well-groomed for a much

longer time than most ladies are used to with a technique known as Shellac manicure. This is a half polish, half gel formulation that, when applied by a certified manicurist, goes on quickly, dries within minutes under U/V light, and is guaranteed to last for about two to three weeks. Shellac polish creates a long-lasting, shiny finish that does not injure nail beds! It acts like a plastic coating, withstanding accidental nicks and scrapes, all the while using the customer’s natural nails. Liz especially enjoys working with brides and bridal parties. As the makeup and hair artist for the young ladies, Liz says she is “allowed to be more creative than usual.” She adds, “Best of all, I get to be a part of the bride’s special day!” Besides creating very intricate hairstyles for the attendants, Liz also uses a technique called airbrush makeup. She applies makeup with a special air tool, rather like airbrushing a design on a t-shirt. This gives the foundation full coverage and a flawless finish which lasts all day without caking or cracking. Despite that, the makeup feels very light and comes off with ordinary makeup remover. In addition to bridal parties, Liz uses airbrush makeup techniques in preparation for senior portraits and other special events where photography is involved. A rather unique service that The Sophisti-Cut offers is the Princess Spa Party, something every parent with a beautiful young princess should look into. Usually coupled with a birthday party, a Princess party involves not only hair stylings for each of the attendees,

but also manicures, pedicures, chocolate facials, and whatever else the little girls want in the way of fashion! Best of all, the party can be held at the shop or wherever the party is being held. Liz would like to extend this service also to adults, as a unique way of celebrating a birthday or other special day. atisfy a multitude of cravings at the newly-invented 224 Pub & Grill in Decatur, Indiana. Wrap your hands around a hearty gourmet burger meant to help soak up the bar’s vast range of craft beers. Once known in the community as Molly’s Place, the reinvented restaurant 224 Pub & Grill is adjacent to and services the Villa Lanes Bowling Center. According to Ryan

Squires, who recently acquired the restaurant and bowling alley, Villa Lanes saw some upgrades earlier this year, including brand-new Brunswick lanes, a four-lane private bowling suite, and a fully remodeled interior. Ryan felt it was important to take things one step further. Rather than trying to improve on the existing restaurant, Ryan wanted to create a new dining experience with its own identity. It became

“strikingly” clear to him that bowling, burgers, and beer were an ideal combination. So, the staff began experimenting with seasonings and toppings, seeking unique ideas to inspire their new menu, which would include gourmet stuffed burgers, traditional pub food and draft beer. The development of the menu came together rather seamlessly, Ryan says. “The main

focus is all fresh ingredients; nothing is frozen.” Determined to serve the "best burgers in town," Ryan and his culinary staff formulated a variety of "Char Crisp Burger Seasonings." 224 Pub & Grill's five Char Crisp flavorings would help keep the burger juicy inside while creating a crispy outer layer – as if the patty had been cooked on a charcoal grill.

Not only would diners be able to choose between the Char Crisp Seasonings – including All-American BBQ, Ginger Teriyaki, Hickory & Molasses, Java Buzz and Southwest Chipotle – but the restaurant would also offer selections of stuffed and signature burgers. Each burger would be served with French fries. And just as things were really heating up, the planning momentum slowed when it became evident that the beer menu would be the biggest challenge. Contacting numerous beer representatives to find out what the most popular beers were, Ryan dug deep to find rare and unique beers that he could bring to Decatur. He quickly learned that a lot of craft beers are in such high demand, it often requires a waiting list. And, his desire to carry a brand didn’t necessarily mean he could actually get it on tap. Through his unwavering determination and a solid relationship with vendors, Ryan was able to put together a broad spectrum of unique craft beers. In total, 224 Pub & Grill offers 12 beers on draft. Alongside the unique craft beers are several of the more familiar brands, including Bud Light, Coors Light, and Miller Lite. Generally, Ryan plans to keep three choices on-hand year-round – an imperial pale ale, a wheat beer and a cider.

The renovation of this Decatur business didn’t end with its remodeling, fresh name, and brand-new menu. One of the smallest changes that’s had the biggest impact, Ryan says, has been with the staffing. The staff has begun focusing in earnest on how they can offer a better product, better bowling, and most of all, good service. They are continually looking for ways to better serve the guest. Not only are 224 Pub & Grill and Villa Lanes Bowling Center good places to visit – they are great places to work, as well. “I get to go to work at a bowling center every day,” says Ryan. “Being around people, having fun, the entertainment...it’s a very rewarding experience. People came and had a good time and left with smiles on their faces, and I played a part in that.” Don’t worry about disrespecting the gourmet creations at 224 Pub & Grill just because you’re not nibbling at them with fine silverware and cloth napkin. These delectables are meant to be devoured. D

ee Gastineau, who resides in Piqua, Ohio, has recently brought her extensive ice cream-making experience to Berne, Indiana in the form of a brightly colored ice cream parlor, cleverly called DeeZertz, located on East Main Street. Dee was raised in Greenville, Ohio and attended Miami University in Oxford. She is a wife and mother of four and has harbored

a creative and inventive spirit her entire life. “I always enjoyed experimenting with spices and different flavors,” she says. “I had a friend who had an ice cream parlor, and he could not continue it because of his health. He asked me to take it over and keep it going, and so, I thought I’d try it.” This unfortunate happening turned into an outlet for Dee’s innovative side.

“My husband Pete and I were coming over here to Berne a couple days about once a month, just as a little get-away, so we learned to know a lot of the people.” After numerous suggestions that she open an ice cream shop in Berne, one of Dee’s friends called the Berne Chamber of Commerce and scheduled an appointment for Dee to meet with them before she returned to Ohio.

“I had sold the store in Ohio but was still making ice cream for them and a couple other places. So, for me, this was just a reopening of a retail store,” Dee explains. “The original store that I owned was called Suzie’s Big Dipper, and when I started making my own ice cream, I wanted a different name just to differentiate between the store and the

actual ice cream. And it’s good that I did, because I’m supplying other places, and we also serve my ice cream here.” The logo and name were both original ideas by Dee herself. “I had in mind the design that I wanted, and I hired a lady who actually made the digital version.” Dee’s ice cream parlor plans inched toward reality late last winter. “We started the first of February, preparing the building here and getting it painted and decorated the way it needed to be. Then, we began moving our equipment over. “We actually got everything moved over in about 45 days, but we still had a lot of painting and decorating to do. So, it took awhile. I already had the logo, so we used the colors of the logo, then, to paint the railings and all the furnishings.” May 4th was the grand opening date of DeeZertz Ice Cream Parlor. “We thought this was going to be a little retirement hobby, but it’s pretty much exploded,” says Dee. “I have 72 flavors, and I’ve been making a lot of different flavors to feel out the community...trying to figure out the ones they like, which ones are going to go the best. But, they’ve all gone over well. I haven’t been able to narrow it down or weed anything out. Customers like every one of them.” Dee prides herself in the quality of her product and the simplicity of her shop. “We’re satisfied with where we are and what we have. We have just ice cream and bottled water. We don’t have milkshakes or sundaes or anything like that. “But, the ice cream is gourmet, and with the ingredients and add-ins that are in it, you really don’t need a sundae or anything else to make it decadent. The ice cream itself is pretty decadent.”

Surprisingly, Dee’s ice cream-making process is fairly simple and efficient, and it only takes 20 minutes to make a five-gallon batch of ice cream. Dee explains, “I start with a mix of pasteurized cream and sugar. I put the mix in and add flavors. If it’s going to have nuts or fruit stirred in...candy...or whatever, I add that at the end after it’s already been made into ice cream. “The time-consuming part is getting things ready ahead of time.” Dee elaborates, “For instance, for our butter pecan ice cream, I roast and spice the pecans myself before we put them in the ice cream. So, the preparation ahead of time takes longer than actually making ice cream. “I also make my own fruit purées and other add-ins, so all of those take a lot of time. Quite often, I’m working on the pecans or picking up supplies – cups, cones, spoons, napkins, things like that. Mostly, when I’m not here, I’m preparing to come here.” Dee and Pete actually spend most of their time away from the ice cream parlor. “We only come over here about once a week,” Dee explains. “We still live in Ohio. So, when we come over here, one day is pretty much taken up with making ice cream and seeing if there’s anything that needs to be updated or done in the store here. On the second day, then, we wait on customers.” According to Dee, the distance between the shop and their home creates some difficulty. “Since we’re just new here, it’s challenging finding out what the town does for holidays and what they expect of their businesses. It’s a little bit of a challenge being in Ohio when

the business is over here – having somebody else actually run and work the store when we’re in Ohio. Keeping on top of supplies and what we need is a big task when we’re not here, but it’s gone pretty well.” Even when Dee is away from the shop, she says her mind is still there. “My favorite part is creating new ice cream flavors. I’m constantly thinking about it, wondering, How could I use that in an ice cream? Or, How could I use that to name an ice cream?” One of the flavors Dee has perfected arrives just in time for Halloween and the changing leaves of autumn. “We’re coming into pumpkin for the fall season. The pumpkin ice cream has actual pumpkin in it – and a lot spices to make it taste like pumpkin pie filling. “We’ll have some Christmas flavors around the holidays, too. I’m constantly dreaming up new flavors, so our ice cream varieties will continually change,” Dee explains. Dee credits the Berne Chamber of Commerce for helping her to launch the new business – and her friends, who helped build cabinets and shelves and paint the shop. “The people in the town were just really helpful, and everybody was so congenial and willing to help us. It just kind of all fell into place.”

As new restaurant owners, the Combses had much to learn about the business. Both are originally from Preble County, Ohio, where Tim was a processing engineer, and Shawnda

For the Combses, it wasn’t about building more wealth – they wanted “more of a lifestyle” change. The new undertaking was basically a family venture, where they could all share in the experience. Now, Tim and Shawnda can spend every day together, along with their 14-year old son, and they can take time away to visit their 21-year old daughter and 22-year old son.

Recovery schools to finish out the year. They had always lived in the country, so it was a little bit of an adjustment, but they love the community and were excited to see how “nice and very patient” those surrounding them were. Since Tim and Shawnda were completely new to the restaurant business, they started with a soft opening, offering a limited menu on weekends in July, to see what the response was and to familiarize employees with a routine. The Combses agreed that they must have some of the “greatest staff and best people in Fort Recovery,” because everything flowed smoothly, and the employees worked together well. Trusty Woods Bar & Restaurant’s opening date was August 1, 2014. Now, they are now open six days a week – Tuesday through Sunday. Tim and Shawnda are still working on formalizing their menu, and they enjoy taking suggestions from clients, so they are also continually making improvements to the business. They introduced alcohol to their menu, serving from their new handmade bar. A vast majority of the food at Trusty Woods Bar & Restaurant is homemade and cooked to order – an uncommon aspect of the business. Their delicious biscuits are baked fresh every morning, and the Angus hamburgers are purchased in bulk and aren’t formed into patties until right before they hit the grill. Homemade gravy, meatloaf, mashed potatoes (yes, even the potatoes are homemade) are just a few of the delicious treats diners can enjoy. Basically, Trusty Woods features “the heartier comfort foods” but also serves some dishes unique to the area. One unusual treat that seems to be extremely popular with Trusty Woods customers is their chicken and waffles. It’s a popular Southern dish, and with the combination of sweet and salty, it’s something many diners enjoy, so Tim and Shawnda like to have it on the menu everyday.

There is a spare room on the northwest side of the building, say Tim and Shawnda, and they would like to open a carryout pizza place here by the end of the year. They won’t serve just any type of pizza, though. The Combses plan on making Chicago-style, where one slice can feed a person, and everything is made from scratch with fresh ingredients. One of the best parts about the new restaurant is driving past the intersection and seeing a once empty building that has been found useful again. Now, it is a “viable, living and working building” that has been almost completely restored. A small window box behind the bar holds hand-carved pegs that went around the original block walls. Many years ago, someone spent time carving the pegs and installing them in the building, and they’ve lasted all these decades. The glass behind the bar is originally from 1947, and the Combses have exposed the original chimneys, keeping some of the history, while also updating for comfort. Tim and Shawnda are very generous when it comes to the company, and two things they want to do are “give back to the community” and “show that you can still start a business.” Even these days when times may be hard and business ventures are risky, there is usually a way to accomplish your dreams. Tim and Shawnda want Trusty Woods to become “established in the community” and be known as another “family restaurant” in the area. So, what’s the next venture for the Combses? Carryout is definitely on the menu, and they are hoping to expand into delivery to area businesses in Fort Recovery. Their ultimate desire is for their children to take over the family business one day.

Inside, the ceiling was lowered, and the walls were re-painted. Furthermore, changes to the interior have left room for growth. When asked where they would like to see the business in the next five years, Natasha says, “I am hoping we will be expanding to include bakery items, teas and coffee.” Looking to the future, she adds, “We are hoping for Bluffton to become a shopping hub...that when people come to Bluffton, they think shopping. We hope that more stores like ours will spring up in town. I think that it would benefit everyone who lives here if we could get more retail places like A Perfect Blend in Bluffton.” Bluffton is already abuzz about this newest addition to the town. ark Valentine had been dreaming of opening his own feed and supply store since 1996. That dream finally came true July 21, 2014, when Mark and his wife Maryann first opened the doors of Valentine Feed and Supply. While opening has not come without a few surprises along the way, finally accomplishing a long-time dream is worth the challenges. Born and raised in Portland, Indiana, Mark attended Indiana University after high school.

Careers took the family away from the area for two decades. Eight years ago, Mark and Maryann moved back to Portland. Mark quickly realized the need for a feed and supply store in the Portland area. He was driving some distance to other cities in order to purchase essential equipment and feed for livestock – and, his friends and family were doing the same. Mark also noticed there were not many shops nearby where pet owners could purchase pet food and supplies.

Customers may also purchase vet and livestock medications, show supplies, canning necessities, wild bird feeders, and deer supplies. In the future Mark would like Valentine Feed and Supply’s product lines to expand into lawn and garden supplies. Currently, due to space, they are unable to carry these items. He would also like to broaden their current offerings of show supplies. Mark would like to see more of these supplies in his store to better serve all of the showmen in the area. Valentine Feed and Supply has one full-time employee and two part-time employees. Mark and his staff have firsthand experience in raising livestock and other animals. When a customer walks into Valentine Feed and Supply, they are sure to find help from someone who is knowledgeable about animals. According to Mark, this is one of the major differences you will find when shopping at a locally-owned store – the expertise of the employees. While there are many chain stores that sell feed and supplies for animals, a consumer may find it hard to find a salesperson with knowledge of the animal. Mark and his employees are able to answer questions based on their experiences. The staff at Valentine Feed and Supply have raised horses, sheep, goats, rabbits, poultry, cattle, hogs, and dogs and cats. This experience is what sets them apart from many other establishments.

Opening a new business does not come without a few surprises, though. Mark says one of the biggest has been the amount of rabbit and poultry feed they have sold. He did not realize the number of residents in the area raising backyard chickens and flocks of laying hens. Fortunately, Mark has been able to meet the demand by ordering more feed. Valentine Feed and Supply is also an active supporter of the community. At the Jay County Fair this year, they donated several 4-H trophies, as well as shavings for the show arena. Valentine Feed and Supply has also served as a sponsor for the local Girl Scouts, Portland’s Fourth of July parade, and the St. Anthony dinner. Mark is pleased to be a member of the Rotary Club, Optimist Club, and the Jay County Chamber of Commerce. When Mark is not busy helping customers or attending meetings in the community, he enjoys showing beef cattle with his family. He raises cattle and horses on his farm. Valentine Feed and Supply is currently open Monday through Friday from 8 a.m. to 6 p.m. and from 8 a.m. to 12 p.m. on Saturdays. The shop hasn’t been in operation very long, but it has already filled a void in the community that was felt by livestock and pet owners alike. With a wide assortment of products, one is sure to find the supplies they need.

In March, Carrie became certified as an advanced nail technician. This additional certification arms her with the knowledge to practice higher standards of sterilization and the ability to work with clients who have special health concerns. This service is for girls 10 and under. I think it makes them feel special and grown-up. “They get the same treatment as an adult with the posh manis and pedis. The girls are always so excited to have their nails done.” While the Miss Violet services are her favorite, Carrie says acrylic nails are quickly becoming the most requested service. “Not many places offer the acrylic service anymore. It’s mostly the gel now, but some people just like the good, old-school acrylic nails. “I take pride in my posh manicures and pedicures. They are very relaxing, and it’s not a rushed service. I use fresh botanicals, fresh fruit and essential oils. I also incorporate my homemade, allnatural sugar scrubs and lotions, which are both sold in our boutique.” One of the things you should know about Simply Violet Nail Spa & Boutique is that the staff is creative, they love what they do, and it shows in their work.
