Welcome to Our Community Kitchens A Note from Outreach Coordinator, Lauren Fawcett

W

e are excited to announce the return of the quarterly cooking class schedule and a new on-line registration system! Registration will be much easier to navigate and you will find some new and wonderful features, such as seeing how many seats are available in classes, the ability to register using gift certificates, and more! Classes will no longer have separate prices for members versus non-members; instead, Co-op members will receive 20% off of classes. When you see the price of the class in the schedule, subtract 20% if you are a Co-op member and that is your price. While this is slightly less of a discount for some classes, we have had to do this for our new registration system. However, we think the new features will make it well worth it! We appreciate your understanding during this transition. When registering, members will enter their first and last names with their Co-op member number. Example: janedoe12345 (with no spaces). The 20% discount will automatically be applied since the system knows that you are a member. So easy! If you’d prefer to register by phone, just give me a call at (707) 443-6027 ext. 102 and be sure to mention your Co-op member number to receive the 20% discount. You can also register at Customer Service in either store location and recieve your member discount. Please let me know if you have any questions and I look forward to hearing your feedback on our new and improved registration system and quarterly schedule.

Register Online, by Phone, or at Customer Service To register online, visit www.northcoast.coop. If you are a Co-op member, be sure to enter your first and last name with your member number. Example: janedoe12345 (with no spaces). This will activate the 20% discount on all cooking classes and workshops. To register by phone, call our Outreach Coordinator at (707) 443-6027 ext. 102. You can also stop by either of the North Coast Co-op’s Customer Service counters to register. When registering by phone or at Customer Service, please be sure to give your Co-op member number to recieve the 20% discount. Please note that pre-registration and payment are required for all classes and workshops. Our Community Kitchen Cancellation Policy In order to receive a refund on classes and workshops for which you have registered, a notice of at least 3 days before your class date must be given. Refunds will be given in the form of Co-op Gift Cards or class credits. Our refund policy also applies to classes and workshops cancelled by the Co-op.

Grilling Techniques II Chef Jon Hoeschen $45 Increase your grilling know-how with this tantalizing menu. Chef Jon will share marinating tips and more for grilling poultry, fish and vegetables. Grilled Chicken Brochettes; Grilled Salmon with Grilled Romaine and Artichoke Tartar Sauce; Grilled Summer Squash and Eggplant; and a scrumptious dessert of Strawberry Shortcake.

This interactive class focuses on creating healthy & delicious recipes from scratch with ingredients on sale at the Co-op. Participants will have fun preparing and sampling the recipes in class. Chef Alex Begovic $45 This menu is rich with the bounty of the season. Summer Lettuce Salad with Blueberries, Almonds, Mint Chiffonade, Red Onions and Lime Vinaigrette; Green Minestrone Soup; Pissaladière (focaccia) with Heirloom Tomatoes, Niçoise Olives, Chevre and Fresh Basil; and Fresh Strawberry Tart.

Please note: Most cooking classes (in both Arcata & Eureka) are demonstration only, meaning that the instructor demonstrates the recipe(s) and students eat the food that is prepared (usually a full course meal). Classes with a hands-on icon allow for student involvement in the creation of a meal.

Fun with Sushi! Beginning & Intermediate Techniques

Summer Brunch on the Porch

Chef Eric Masaki $45 Are you ready to expand your Sushi skills? This class will briefly cover the basics of Sushi before focusing on intermediate to advanced techniques. The class will alternate between demonstration and hands-on work. Techniques include: tempura, curing fish for sushi, specialty topped rolls, nori alternatives, presentation, and recipes for sushi roll ingredients, such as spicy tuna and shrimp/ crab salad. Master Food Preserver Demo: Tomatoes MFP Instruction / Free Whether you’re a seasoned food preserver or new to the scene, join us for a fun and informative tomato packed session. Topics include choosing the right type of tomato for your recipe, water bath canning and safety procedures, the best way to freeze or dehydrate, approved recipe sources, and more. Tasty samples included.

Cooking with your CSA Box

Kirsten Lindquist $20 Summertime brings such bounty and your CSA Box is overflowing! Learn how to make easy preserves, quick pickles and more! Kirsten will share creative ways for preparing those veggies. The menu features: Zucchini Parmesan Medallions; Tomato Jam; Pickled Jalapenos; Salsa Verde with Corn Chips; and Phyllo Greens Pie. Class includes some hands-on. 7

Raw Food Juice Basics Dr. Pepper Hernandez $20 This basic juicing class provides a step-bystep introduction to the theory and practice of a living foods lifestyle through juicing. Learn blending and juicing methods, the basics of how to successfully combine foods, and the nutritional differences between raw and living foods. Pepper will discuss the cleansing and nourishing benefits of juicing and will help you to incorporate the practice into your lifestyle.

Health & Wellness: Herbal Infusions & Herb Infused Honey Bethany Staffieri $20 Learn methods and recipes for infusing herbs. The class will cover how to customize your own healing tea blends for health & wellness. Students will infuse honey (a time honored healing menstruum) with herbs for medicinal purposes. Hands-on and students will take home samples. Bethany is a trained and certified Western Herbalist.

Tofu Around the World

Kirsten Lindquist $20 Tofu is often found in Asian cuisines, but it’s malleable texture allows it to easily fit into other cuisines, such as Indian, Mexican and American comfort food. In this hands-on class learn how to best utilize tofu in a variety of preparations. The menu includes: Soyrizo Quesadillas with Salsa; BBQ Tofu Sliders; Cabbage Slaw with Tofu Tahini Dressing; and Lemon Squares.

Bethany Staffieri $20 Having an herbal first aid kit is like having your own apothecary at home. By learning how to prepare your own herbal medicine, you’ll be prepared to help treat the following: winter colds & flu, summer heat exhaustion, bug bites, sunburn and more. DIY Condiments

Kirsten Lindquist $20 Ever wonder where ketchup, mustard and mayonnaise came from before you could buy them ready made? Just like most food, homemade versions are delicious and only made with the ingredients you choose. Students will learn how to create the following: Classic French Aioli (garlic mayonnaise); Dijon Mustard; Spiced Ketchup; Chipotle in Adobo Mayonnaise; and Coriander Chutney. The class will enjoy a tasty meal incorporating the featured condiments.

Chocolate Avocado Chia Pudding made using chia seed from our bulk department

Ingredients 2 ripe avocados

Directions Combine all ingredients and blend with an immersion blender, food

¼ cup* honey or maple syrup

processor or blender until smooth and

(*use less or add more, to taste)

silky. You might need to stop blending

cup Cacao or Cocoa powder 1 teaspoon vanilla extract

½ teaspoon ground chia seeds

and mix with a spoon to make sure that everything is incorporated and then finish mixing together. Divide pudding among ramekins/cups and refrigerate for at least 30 minutes before serving (this allows the chia to thicken).

COOK &SAVE The North Coast Co-op’s Cook & Save Club hosts free monthly meetings to develop recipes that include items from our sales flyer. Meetings are free and recipes emphasize items from our economical and environmentally-friendly Bulk departments. At each meeting, class attendees make and test a few different recipes and then vote for their favorite. The winning recipe is published in the Co-op News, the North Coast Co-op’s free member newsletter. Join us for an upcoming meeting of Cook & Save Club!
